But there’s plenty of things fans don’t yet know about Jessica Simpson, and that’s why her new memoir Open Book is so powerful – with the star lifting the lid for the first time on her struggles with addiction and trauma. In extracts from her book – which will hit shelves on February 4 – the 39-year-old opens up about turning to alcohol and prescription medication to cope with the sexual abuse she suffered as a child. ‘I was killing myself with all the drinking and pills,’ Jessica admits in her memoir. The abuse started when she was just six years old, while sharing a bed with the daughter of a family friend.

‘It would start with tickling my back and then go into things that were extremely uncomfortable,’ she writes. ‘[I would] just stop eating,’ she explains. This game-changing tech comes in at a key part of the leather tanning process to utilise the moisture that already exists in the hides, with a result that is indistinguishable from traditionally tanned leather. “DriTan is just the first step in our ambitious scheme to make the entire leather manufacturing process waterfree,” says Thomas Gøgsig, head of applied research at ECCO. “Our starting point came down to one fundamental question: how can we tan in a world of increasing water scarcity?” The history of tanning goes back 10,000 years, and it was thought to be impossible without the use of water. Now, DriTan saves huge amounts of it: 20 litres per hide, which is equal to 25 million litres of water saved annually, which is enough to keep more than 9000 people hydrated for one year. DriTan is the result of five years of research and development, plus a “strong cocktail of science, know-how and traditional craft”, says Gøgsig. “You don’t need to invest in new equipment; you don’t have to look for new chemicals. You just use what is already available, only in a different way. Tanning is a very old and traditional industry, so people tend to forget to ask whether it can be done differently.” Form, function and sustainability practices? or many Australians, getting their first hangover is a rite of passage. And as the years roll by, it’s likely to be one of many to come. Yet for all of the headaches, booze bloat, cringe-worthy recollections (not to mention a serious burnout of cash), we keep telling ourselves the all too familiar cycle is worth it in the name of fun. But that attitude is slowly changing. Whether it’s taking a booze-free challenge, going fully teetotal or simply cutting back to a smaller number of drinks a week, a growing number of people are embracing a more sober curious way of living. While social pressure to drink can still be an issue, the rise of non-alcoholic beverages, support tools like the Daybreak app and books such as Ruby Warrington’s Sober Curious are reminding people they don’t have to do it alone. What are some of the main reasons people are drinking less? The obvious ones such as driving and pregnancy will always be relevant, but these days it could just be the pursuit of a health or fitness objective, or taking part in something like Dry July. It could even simply be just to avoid a hangover when there’s an important meeting the next day – we’ve all been there! It’s more about being able to choose and have the freedom to stay social, but have your drink, your way. Are most people going totally alcoholfree or simply reducing their intake? Both. Some people are cutting it out altogether or just for a specific period. People are even having

a ‘wedge drink’ when they go out – alternating between an alcoholic and a non-alcoholic drink through the night. Any tips for going alcohol-free? The best way to succeed is not to change your life just because you’re not having alcohol in your drink. Plan a few nights when you don’t have to drink, and if you normally enjoy a G&T when you go out, you can just make it a Lyre’s non-alcoholic G&T. Or start small by swapping out one of the spirits in your drink to make a low alcohol version. No-one will know unless you tell them. Do you think there’s less pressure to drink when you go out? list goes on of things that you probably don’t want to manifest. A gentle approach to guiding your thoughts and emotions is the best solution. Make the journey out of your head and into your heart. PRETTY DAMN GOOD BURGER INGREDIENTS
•¼ cup dried onion flakes •1 tsp salt •1 tsp pepper •¼ tsp onion powder •¼ tsp parsley flakes •¼ tsp paprika •⅛ tsp celery seed •900g ground beef (80 per cent lean
and 20 per cent fat) •1 packed cup kale or spinach leaves, finely chopped •½ cup breadcrumbs
•1 egg •1 tbsp Worcestershire sauce •1 tbsp Bragg’s Liquid Aminos •Canola or vegetable oil •8 brioche hamburger buns or
12 slider buns, sliced in half •Vegies and condiments for serving
METHOD
1 Preheat your grill to high heat. Brush the grates with oil to keep the burgers from sticking. In a small bowl, combine the onion flakes, salt, pepper, onion powder, parsley flakes, celery seed, and paprika. Set aside. 2 In a large bowl, combine the beef, kale or spinach, breadcrumbs, egg, Worcestershire sauce, and Liquid Aminos. Use your hands to mix
until just combined – don’t overmix or you’ll end up with tough burgers. If making large burgers, shape the meat into 8 patties, about 2cm thick. If making sliders, form the meat into 12 patties, about 5cm wide and 2cm thick. Grill the large patties for about 5 minutes, flip, then another 3 minutes for medium. For sliders, cook for 4 minutes, flip and cook for another 4-6 minutes for medium. Cook longer if you prefer them more well done. Transfer the burgers to a platter and cover with foil. 3 Lay the buns cutside down on the grill and toast until grill marks have just formed, about 1 minute. 4 Layer up the buns with a patty and your toppings of choice. Serve ‘em while they’re hot!

•8 x 15cm wholewheat
or corn tortillas •Extra virgin olive oil •Kosher salt, to taste •3½ cups store-bought green tomatillo salsa (for green) or 2 ½ cups store-bought enchilada sauce plus 1 cup canned diced tomatoes (for red) •2-3 cups shredded chicken (optional) •1 cup shredded queso fresco •Unsalted butter, for cooking eggs (optional) •6-8 large eggs (1 per person) •½ cup sliced radishes, for serving •1 avocado, sliced, for serving •2 tbsp chopped fresh coriander, for serving •1 lime cut into wedges, for serving •Sour cream, for serving •Hot sauce, for serving
METHOD
1 Preheat the oven to 205°C. 2 Cut the tortillas into chip-sized triangles, about 8 per tortilla. Lightly coat 2 large baking sheets with oil and scatter chips on sheet. Drizzle them with a bit more oil, sprinkle with salt and toss to coat. Arrange chips so they’re in a single layer and don’t
overlap. 3 Bake chips for 10-12 minutes, flipping halfway through and watching to make sure they don’t burn. They should be golden brown and crisp. Remove chips and set aside. Keep the oven on and decrease the heat to 175°C. 4 Combine chips in a large sided sheet pan or a cast-iron skillet. Pour salsa or enchilada sauce plus tomatoes over the top and give everything a toss so chips are well coated. Spread chicken over the top and sprinkle cheese. Bake for 10-15 minutes until sauce is warmed through and cheese is melty. Feel free to finish under the grill for about 20 seconds to get the cheese browned and bubbly. 5 Meanwhile, whisk eggs in a bowl and season with a pinch of salt and pepper. Add 1 tbsp olive oil to a large non-stick or cast-iron skillet over high heat. When the oil begins to shimmer, pour the eggs into the pan and slowly stir with a spatula. When the eggs begin to set, reduce heat to low and continue stirring until the eggs are just set and fluffy, about 2 minutes. 6 To serve, remove the pan from the oven and top sauce with eggs, sliced avocado and radishes, plus coriander. Serve with lime wedges, sour cream and hot sauce.

ROASTED CHICKEN WITH ROOT VEGETABLES INGREDIENTS
•1 x 1.5-1.8kg chicken •1 medium sweet potato •1 medium turnip, swede, large parsnip or other root vegetable •Olive oil •Kosher salt, to taste •Black pepper, to taste

1 Take the chicken out of the fridge 1 hour before cooking. 2 Preheat oven to 205°C. 3 Cut the sweet potato and the root vegetable into 2.5cm pieces. Scatter them on the bottom of a cast-iron skillet or roasting pan, and toss with
just enough olive oil to coat and a generous pinch of salt. 4 Pat the chicken dry with a paper towel. Season with salt and pepper and set the breast side up on top of the vegies. Roast for 20 minutes, then turn the chicken breast side down. Roast for another 20 minutes. Turn the bird breast side up once more and roast for a final 20 minutes. It should be golden brown and fully cooked, with an internal temperature of 75°C, and the vegies should be caramelised and tender. Let the chicken rest for 10-5 minutes before carving. 51

This secluded series of stunning waterfalls and swimming holes in tropical Far North Queensland is hidden in a beautiful rainforest. It’s 14 kilometres outside of Cairns, but there’s no public transport, so it can only be accessed by car. Like most swimming holes, it’s unmanned by lifeguards, so don’t go alone – and do stick to signposted areas.
Forged between two dormant volcanos, Little Blue Lake can be found at Mount Schank, 15 minutes from Mount Gambier. It’s a natural water-filled sinkhole with stairs and a floating pontoon installed to improve p public safety. enée Zellweger is nothing if not versatile. The 50-year-old actress (yes, really!) has wowed on screen in a huge variety of roles across her three-decade career, including, of course, playing Chicago’s crim Roxie Hart and the loveable Bridget Jones. But after taking a six-year break from acting, Renée returned to screens – in 2016 with Bridget Jones’ Baby – and hasn’t stopped working since. In 2019, her starring role in Judy won the actress critical acclaim – and now the role has made Renée the hot favourite to win this year’s Best Actress Academy Award. She’s already bagged a Golden Globe, a Critics’ Choice Award and a
British Independent Film Award for the part. ‘This was a really big experience,’ Renée says. ‘I feel like I really found my voice in this.’ In the role, the actress portrays troubled movie queen Judy Garland. ‘I’ve always been a fan,’ Renée says of the actress, who famously starred in The Wizard of Oz – and battled depression, alcoholism and substance abuse issues. ‘She’s an icon.’ You play a screen legend in Judy. When did you know you wanted to be an actress? I was in college and I was on the set of a film that a student was making. There were RENÉE maybe four or five

of us who were on her cast and crew and she needed some actors and I… got the bug. I didn’t understand why this felt very important to me, but I couldn’t wait for the next opportunity to act. Then, not long afterwards, you landed a part in a horror film… Yes, I was in The Return of the Texas Chainsaw Massacre [in 1995] with Matthew McConaughey – and not long after that he moved to Los Angeles. At the time, I wanted to stay [at home] in Texas. I was getting some work but there wasn’t a lot of film that came to town, so my opportunity to grow as an artist was a little stifled. But eventually I realised I would need to go where there were more opportunities.
How often do people say to you, Renée split with country ‘You had me at hello’? singer Doyle Bramhall II Not enough! I don’t go out much (left) in May 2019 after so, you know, it would be weird if seven years together. She’s I heard it a lot. How did Jerry Maguire and the three Bridget Jones movies change your life? I guess in ways I didn’t really see at the time. After I was cast in Jerry Maguire [alongside Tom Cruise], it was announced in Variety mag the very next day and that’s when I knew it was kind of a big deal. My brother went out to buy the mag and came back with a whole stack – so sweet. I could cry just thinking about it even now. Then Bridget. I’ve done three Bridget films and I think she’s been so special to me because, you know, what’s not to love about a woman who has so

I think we can all relate to a person who is imperfect but still has triumphs because that’s the truth in life. How did you prepare for that role? I worked as an intern at Picador Publishing in London – the firm that published Helen Fielding’s Bridget Jones books. I wanted to work for a publisher to understand what Bridget did workwise, so they pretended I was the cousin of the editor there so the nepotism made sense! And we pretended I’d been studying in America for 10 years, which explained my weird accent at the time. Is it true you’d gone to the bathroom when you won a Golden Globe for Nurse Betty in 2001? Yes! I was in the bathroom at the time. This was in the early days and [being at awards shows] was a whole new experience for me. You’ve already received some awards for Judy. What else have you gained or learnt from that role? Yes! It’s a part that seems to have really touched people. I learnt a lot about myself through playing Judy. She had courage, tenacity and the ability to just carry on. Doing this role was a really big experience for me. Were you a fan of Judy and did you ever dream of playing her one day? It never occurred to me that it would be a good idea or that it would be something that someone would propose. I don’t

consider myself a performer like she was nor do I consider myself a singer like her. But I was always a fan. Judy was a trailblazer in every respect. She went toe to toe with guys on television, she spoke her mind and she was a true original. You’re back on screen after a six-year hiatus from acting. Why did you take that time away? There were a lot of reasons I needed to step away. The first was that it was pretty obvious to me I needed to stop. The schedule had caught up with me and I wasn’t taking care of myself. I was really exhausted. There’s never a good time to step away from creative opportunities but I needed to be ignored. Was it always a conscious decision for you to keep your private life out of the spotlight? It’s not difficult. You don’t talk about it; you don’t post it. I like to keep it zipped. It isn’t easy being an actor who disappears when you have no mystery. I always think a little mystery never hurt a girl!

leven seasons in, and My Kitchen Rules is having a refresh. ‘It’s five teams of ex-competitors lead by Manu versus my five teams of untried fans,’ explains Colin. ‘I hate to lose and there’s no way I want to lose to Manu!’ Pete Evans also returns as an impartial judge. ‘Make no mistake, this year it’s war between me and Manu,’ adds Colin, 45. How do you feel about the new format of MKR? I honestly think this season of MKR is the one I’ve enjoyed doing the most. I’ve already seen all the episodes, and it’s very rare for me to sit down and watch it all the way through, but this time I’ve watched two or more episodes in a row! It’s a lot funnier, too. I knew I would say it’s great, but the new format has definitely given the show a whole new
