Whether it is a place setting, execution of a golf event or the preparation of our tennis court surfaces, we set and follow a standard that our Members come to expect and appreciate. At a recent employee kick-off meeting we adopted a new acronym, W.A.G.! In addition to welcoming our Members H.O.M.E., we strive to WAG every time we encounter a Member, with a Warm Welcome, by Anticipating & Asking what we can do for you and by offering a Grateful
Goodbye. It might sound silly, but it is an integral part of our customer service standard. There are 143 employees at the Club, from 18 countries and 13 states, waiting to WAG for you!

Can’t find your glasses? Eyeglasses, sweaters, and miscellaneous items are kept at the Front Desk. Lost & found items will be held for 60 days then donated.
Can’t find your keys? It’s late, valet is gone and you need your keys? Keys are left at the main bar in the dining room. Just ask the bartender!
Dress Code in the Dining Room For normal dining hours we request country club casual attire. Jeans are acceptable, men’s hats should be removed and shoes are required!
Unspent F&B Minimums Food & Beverage minimums must be met by the end of the year. Your unspent minimum is available on your monthly statements and will be billed to your account at the end of the year unless it is spent.

Join your friends at the Club for an evening that transports you back to the roaring 1920’s Gatsby era of rum runners, social clubs and flappers and includes a glamorous dinner by Chef Udo. The dice will be rolling all night at the casino tables, while you foxtrot, waltz and tango the night away. Meet the Chefs Behind the Meals! I T WA S A L O N G S U M M E R I N
the Clubhouse as staff and Members alike patiently awaited the opening of the newly renovated kitchen. Although not everyone can truly appreciate the difference our new kitchen has made, the chefs certainly can! Executive Chef Udo Mueller is undoubtedly the happiest and most appreciative. We thought our Members would enjoy knowing the “ingredients” that make up our top chefs: . . . Originally from Germany, Chef Udo grew up in a region renowned for its delectable melding of French and German cuisines. Udo got his bachelor degree in his hometown of Baden-Baden, served in the military as a cook, then left to fine tune his craft in restaurants and private clubs. His first Executive Chef position was at the Newstead Hotel in Bermuda, then at the Left Bank Restaurant in Fort Lauderdale. He and a partner owned the Bistro Double U at Galt Ocean Mile before Udo moved on to the Boca Raton Resort & Club as an Executive Chef at the Boca Country Club. He has won several awards and in July 2000, was the featured chef at the James Beard House in New York City. Udo has happily cooked for the Members at Coral Ridge Country Club since 2005. During this time, he got his Certified Executive Certification through the American Culinary Federation and currently
serves on several boards. For over 25 years he annually serves on Navy Day during fleet week as one of the guest chefs on the ships. Udo obviously enjoys his life as a chef. “Being a chef is an excellent career choice if you love thinking outside the box and interacting with people from different cultures. But ultimately it is the joy of seeing satisfied customers.” However, Udo reminds us that as much as he loves to cook, there is also life after cooking! Udo is constantly training physically and competing in triathlons, an ironman and lots of smaller races. Any chance he gets he is spearfishing or lobster diving with his kids or watching Fußball . . . Vito Griseta, our Sous Chef for more than 11 years, grew up in Chicago and graduated from Le Cordon Bleu College of Culinary Arts. He completed his externship under Chef Dirk Flannigan at Meritage Café in Chicago’s Bucktown neighborhood. Vito moved to South Florida in 2002 to work at the Boca Raton Resort & Club where he met Chef Udo, who persuaded him to join the kitchen at CRCC. Vito left to be Chef di Cucina at the very popular, upscale Ristorante Bova in Boca Raton for two years until he returned to Coral Ridge as Sous Chef in 2009. Cooking has always been a family tradition for Vito. His father was a chef from Bari, Italy and owned a banquet hall and his uncle Vito owned pizzerias where “we used

to spend a lot of time as kids.” Our family was always cooking and was always around food. My mother, who is Irish, is a great cook and was, and still is, always cooking! So, I guess you can say it is in my blood. “I’ve always been an artistic person,” Vito admits. He went to college for sound engineering and is a self-taught guitar player. He and his twin brother played in original bands writing their own music in Chicago for 17 years. When asked what he enjoys most about cooking, he explains, “it’s all about creating and the satisfaction that comes with seeing someone appreciate and receive joy from what has been created.” . . . Our newest addition, Banquet Chef, Jacob Anguiano, is a native Floridian from Boynton Beach. He graduated from Johnson and Wales University with a Bachelor’s degree in Culinary Arts and Food Service Management. Before joining CRCC he worked in private catering, at hotels, from fine dining to fast casual and even for Walt Disney World. Jacob’s passion for the culinary arts started at home cooking for his family and grew from there. “I loved how good food could always bring us all together.” He enjoys the freedom cooking gives you to “create, discover new flavors, new techniques and the drive to constantly improve. It inspires. However, in order to meet and exceed our Member’s expectations, it takes an entire kitchen! Our chefs are quick to give credit to their support team of cooks and stewards: Elicet and Simon (having cooked at CRCC for over 10 years), Prophete, Noel, Sergo, Merinos, Bienne, Jason, Reynold, Niclaude, Paul and John. If you would like to meet our chefs or tour the new kitchen, just ask. We would love to schedule you in!

AQUATICS Baby & Me Class First Saturday of the Month, 9 - 9:45 am Join us for a beginner level group class with both the parent and child in the water. This class is designed to help children ages 6 - 18 months become comfortable in the water so that they are willing and ready to swim. $10 Member, $12 Guest. Call the Pool to sign up.
Favorite food: I love to eat and cook pasta from something as simple as Spaghetti Aglio e Olio with plenty of black pepper and Pecorino cheese to Orecchiette with Sausage and Rapini. For the holidays: Linguini with a Lobster Ragu on Christmas. As a kid: A very light fish soup that my dad would make when it was cold. He would cook a whole cleaned merluzzi in water, olive oil, garlic, and a few San Marzano tomatoes. He would take the meat off the bones and flake it into the broth, add small pasta shells and garnish with parsley and Pecorino Romano cheese. It was perfect...even with the fish eyeballs floating around in it! JACOB
Favorite food: Traditional Japanese ramen. The combination of rich broth, thick chewy noodles, pork, egg, and seaweed is truly delicious. For the holidays: pot roast, meat, potatoes, veggies the whole nine yards As a kid: Without a doubt, mac and cheese! Tender macaroni and velvety cheese sauce, it is hard to resist. I still make it as an adult, too.
Watercise Mondays, Wednesdays & Fridays, 9 - 10 am This class is for participants of all ages and ability levels. You will tone your body and increase cardiovascular function and flexibility with minimal impact to your joints. Flotation belts, noodles and aqua weights are provided. You are welcome to bring water shoes and resistance gloves. $8 Member, $10 Guest. Call the Pool to sign up.

everyone! We have a great line-up of events and activities planned for you over the next several months. The ever popular Junior Holiday Camps return in December followed by a line-up of Championship events. You may see several new faces in the Golf Department, as we have added staff members to assist you. We had two fantastic opening days for both MGA and WGA. The WGA will be crowning the season’s top players of 2018 during the awards luncheon on January 8. January also marks the start of the President’s Cup Championship Matches. The Club will host the 87th Women’s Amateur Doherty Championship January 21 - 25 (format change) with practice rounds beginning the preceding weekend. Limited tee times will be available during the week; however reciprocal courses will be secured for Member play.
After School Golf Wednesdays, 4 - 5:30 pm (4 week sessions) January 2, 9, 16, 23 February 6, 13, 20, 27 Juniors ages 5 to 15 of all skill levels are encouraged to join us on Wednesdays beginning January 2. Clubs provided upon request. $220 Member; $260 guest, per 4-week session, space is limited

Golf Course Etiquette Cart Traffic: Fairways Only! Excessive cart traffic has a detrimental effect on the quality of playing surfaces. By eliminating cart traffic in the rough, we are able to optimize the appearance of the rough during the over-seeding transition periods in the fall and spring. We ask that you please: • Enter and exit fairways by using the coquina shell paths near tee boxes and greens. • Drive carts and use pull carts in the fairways during play; please do not drive in any other areas of the course. • Help us spread the word! WGA 21st Annual Rally for the Cure Tuesday, February 12, 8:45 am shotgun followed by a luncheon, raffle & awards presentation 18-hole scramble format. Gross and net event open to all female Members (not just golf Members). No green fee charges. Entry fees are donated to the Susan G. Komen Foundation for Breast Cancer Research. Last year’s event raised over $10,000 bringing the total dollars raised by the CRCC ladies to over $120,000 in the last 20 years! Members can sponsor a tee sign for $25 and donations for the raffle. The 87th Women’s Amateur Championship & 34th Senior Women’s Amateur Championship begins this week featuring eighty of some of the best players in the state, country, and abroad. With past winners that include six World Golf Hall of Famers and a number of players who have gone on to successful professional careers, the Ione D. Jones/Doherty Women’s Amateur Championship is one of the country’s most storied tournaments for upand-coming golfers. After all, it means a lot to win an event whose champions include “golf greats” such as Patty Berg, JoAnne Carner, Babe Zaharias and Marlene Stewart Streit, as well as pros such as Natalie Gulbis, Michelle McGann, Vicki Goetze, Charley Hull and Lexi Thompson. Embraced by the club for the past 64 years, this match-play event pays tribute to the late Ione D. Jones, who was a large contributor of junior and women’s golf in South Florida for many years. We are excited and proud to continue its rich tradition in hosting this prestigious event. The event is one of the longest-running tournaments in the country. The USGA awards points for the Women’s Amateur Championship Division. The Defending Champions are Fort Lauderdale’s Meghan Stasi (Women’s Amateur Championship) and Fort Myers Lisa Schlesinger (Senior Flight). Members interested in providing housing or volunteering as a Spotter, Starter, Scoreboard Operator, or Marker, please contact Scott Fox.

Women’s All Team Holiday Round Robin Friday, December 14, 9 am This complimentary annual event brings all of our women team players and subs together for a social round robin to celebrate the upcoming holidays. Play begins at 9 am and is followed by a buffet luncheon on the terrace. Players are encouraged to dress in holiday attire. Welcome New Teaching Professional Randy Kenyon! Coach Randy grew up in rural, southern Michigan studying photography and culinary arts and working in restaurant management. After working in New Jersey and then North Carolina in the IT staffing industry, he and his wife Kerrilynn moved to south Florida in 2000 where they started their own IT Coach Randy staffing company. Randy began his tennis coaching career in 2007 when he began assisting professional juniors with agility, speed, endurance and strength training at the Chris Hunt Tennis Academy. In 2016 he began working at Pompano Tennis Center. While working there he helped all levels of youth and adults improve their tennis skills, managed league team development and created and managed group programs and clinics. We are excited to have such a wellrounded instructor. Please welcome Randy when you see him! ➤
