THE DISH: Chef Eddie Matney, Forest Highlands Golf Club COLORFUL, CREATIVE AND COMMITTED. Those are just a few of the effusive words one might use to describe Eddie Matney, a culinary pro who’s “melting pot” theory — one that embraces local and global influences in the kitchen (and in life) is enthusiastically embracing his new role as Executive Chef at Flagstaff’s Forest Highlands. We checked in with Chef Matney to see what’s cooking in the high country. FGP: The folks at Forest Highlands searched high and low to find an Executive Chef that would “fit the culture of the Club and possess the right leadership and skill set to enhance the culinary experience for their members.” Why were you the perfect fit? EM: The truth is it was a fluke. In 2017 I agreed to help out. One week turned into three and a half months. We all had a great time and it was clear it was a good fit for everyone. The members were craving this kind of change and ready for innovative food. They were familiar with me and my restaurants and my work after so many years in the Valley.
EM: I take everything I do personally. And everyone on the team is excited and passionate about what we are doing. We will do our best to run things as efficiently as possible because that means we’ll have the resources to do even more. We see the members on a regular basis and they are great about providing feedback and we really appreciate that. We love hearing that the meatloaf reminded them of an old recipe of their grandmother’s because dining is not just about eating food but about creating great memories.
FGP: How will your “dynamic energy and renowned culinary style” be evident at the club?

EM: If you think about it, the members of a top notch club like Forest Highlands have worked hard and been successful in their lives and many, if not most, have eaten in outstanding restaurants, not just in AZ but around the world. Why should they settle for less in an environment where they have chosen to spend a lot of their personal time?
EM: So much! We have great relationships with some outstanding suppliers. We’ll have access to some terrific seafood from Hawaii, large lobsters and clams from the East Coast and some great produce and herbs from our own garden. I don’t want to spoil the surprises that are in the works.
The Club has given me a lot of freedom to do what I want to do and I think the members will continue to enthusiastically embrace and encourage that. FGP: How will this club experience be different from your long history in the restaurant business?
