Two Bears Market Real American BBQ

On my continued search for great food here in Daegu, I was directed by a co-worker to try “Two Bears Market.” On the back side of Sueseong Lake (where the coffee shops are), make a left instead away from the lake, then go down about 100 meters, it will be on the right (see the map for a pin). Two Bears Market is the best Southern American BBQ in all of Korea.

Mr. Lee told us that “Two Bears Market” opened June 2015, by owner Do Hyoung Hwan. The owner, who was born in Daegu, went to America to make the menu. He lived with his friend and over the next two years, he visited famous BBQ stores like Dinosaur Bar-b-que and Dallas BBQ. He wanted to make a store about BBQ here in Daegu. He made the menu and recipes in New York

픈했으며 도형환씨가 운영하는 곳이라고 했다. 도 사장님은 대구

에서 태어나 메뉴를 만들기 위해 미국으로 갔다고 한다. 친구들 과 함께 2년간 살면서 Dinosaur Bar-b-que와 Dallas BBQ 같은 유명한 바비큐 식당에도 가보았다고 한다. 그리고 대구에 바바큐 식당을 열고 싶어했는데 프랑스에서 조리학교를 나온 친구와 함

께 뉴욕에서 메뉴와 레시피를 개발했다. 현재 그 친구와 함께 식 당 세 개를 운영하고 있다고 한다. 베이글 닥터스, 가츠라(일본

식), 그리고 투 베어스 마켓이다. 21년이 넘도록 요리를 하고 새 로운 메뉴를 개발한 것이다. 그의 첫번째 식당은 24살 때 열었고 많은 경험을 얻도록 해 주었다.

Two Bears is not a franchise, yet. Now, it is the only one in Korea. Do Hyoung Hwan knows that people in Daegu are very sensitive about taste and cost. He has traveled the world to find new items for the menu. That is why extra care goes into preparing the menu items. It takes two days of smoking and seasoning the meat, with a rub, in a building just two doors down. Meat is brought in from around the world. The baby back ribs are from Spain, the spare ribs and pulled pork are from the U.S., the brisket is from Australia, the shrimp is from Thailand, and the lobster is from Canada. The restaurant can hold over 100 people. Zione A Neapolitan Pizzeria in the Heart of Daegu

Tucked away down a backstreet you will find downtown a hidden gem of Daegu’s restaurant scene. It is an Italian Pizzeria known as ‘Zione’, which specialises in food from the pizza-mad city of Naples, Italy.

All of these dishes can be enhanced with one of the chef’s selected wines, which include a red Amarone della Valpolicella (Italy), Santero Pinot Chardonnay (Italy), or a Spumante Brut (France).

소개한다.이탈리아 피자 레스토랑인 ‘지오네’는 이탈리아의 나

자 가게로 바뀌었다. 상당한 크기의 오픈 키친과 식사 공간이 있

Tricky at first to find, this restaurant offers reasonably priced dishes that are a marvel to see and a delight to eat, once the compulsory food photographs have been taken.

처음 방문하면 찾기 조금 힘든 곳이지만, 지오네는 합리적인 가 격에 음식을 제공한다. 보기에 좋고 맛은 더 황홀하며, 한번쯤 의 무적으로 사진을 찍을 법한, 그런 음식이다.

Zione was once an old Korean house that has now been transformed into a bustling Neapolitan Pizzeria. It is a large restaurant, with a sizable open kitchen and a dining area, that has enough seating to cater to both larger groups and couples. The restaurant has an adjoining ornate patio-garden where you can sit and enjoy anything from Sorrento Style Lemon Chicken to Shrimp Risotto, or a Buffalo Cheese Margherita Pizza.

The ambience of the place is quite charming, with light pouring in through all directions and kind staff that will not leave you waiting. Zione is situated 50 meters west of the fire station in downtown, as you would go to Daegu’s famous bar street (대구 중구삼덕 1 가 26-3 지오 네).

Zione is a new addition to the restaurant scene, but has quickly become one of Daegu’s favourites, with many returning happy customers. Jatae, the owner and head chef, started his love affair with Neapolitan food sixteen years ago when he first visited Naples. He was inspired by their use of fresh

market ingredients, carefully sourced cheeses, and stone hearth baking, all of which he has incorporated into his restaurant.

구자태 오너쉐프는 6년 전 처음으로 나폴리를 방문했을 때 나폴 리 음식과 사랑에 빠졌다. 그 쉐프는 신선한 시장의 재료와 조심 스럽게 만든 치즈를 사용하는 것과 돌로 만든 오븐으로 굽는 것 등에 영감을 받았고, 이 모든 것을 그의 음식점에 적용시켰다.

Jatae’s dream started fourteen years ago with a restaurant called Little Italia, situated a stone’s throw away south from Debecmall and the stage, in the downtown Daegu area (대구 중구 공평동 45-1번지). Both restaurants boast an open kitchen and a light modern décor, which is reminiscent of an Italian bistro. 구쉐프의 꿈은 4년 전 , ‘리틀 이탈리아’라는 레스토랑으로 시작

되었다. 대구백화점과 그 앞의 광장을 기준으로 남쪽인데 매우

Little Italia is a cosy and personal restaurant, where the customers and Sanguk, the new chef and Jatae’s colleague, can communicate freely to find what the best dish is to tantalise your taste buds. Little Italia is a feature in the foreigner, acting, and musical communities, with patrons from numerous walks of life enjoying their time there.

So the horrendously humid Daegu summer has finally arrived and I (like many of you) constantly find myself exhausted by this weather. The combination of this humidity and zero wind is really draining, but what can we do to help regain some of that energy? I’ll let you in on a little and not very well kept secret in Korea…..eat Samgyetang.

Recently I was feeling particularly exhausted by this oppressive heat and decided to join some friends and visit a specialty Samgyetang restaurant in the natural medicine area located downtown. The menu only focused on Samgyetang and I chose the option that also included some mushrooms.

Samgyetang is a warm soup that contains a whole young chicken, garlic, rice, scallions and spices (including jujube and ginseng). It’s very popular in Korea to eat this dish on the three hottest days of summer (sambok 삼복), these days are referred to as Chobok (초 복), Jungbok (중복) and Malbok (말복). The first thing that grabs your attention with this soup is the chicken, even a small chicken looks pretty impressive stuffed into soup bowl. Another thing to be aware of is the bones, you are going to have to deconstruct your chicken to remove the bones in another plate. Five minutes of amateurish chopstick meat/bone removal later and I’ve worked hard enough to finally start eating this dish. Despite the sheer amount of meat in the soup I found the dish to taste quite light and refreshing. It wasn’t salty or heavy at all. The rice cooked inside the chicken added just enough carbs to help gently fill you up.

맛은 미묘하게 조화를 이뤘고, 상쾌한 느낌과 함께 대구의 날씨 를 즐거운 마음으로 받아들일 수 있게 해 주었다.

Soup • 1 young chicken (2 to 3 pounds) May substitute for 2 cornish game hens • 1 teaspoon sesame oil • 4 red dates (Chinese or Korean jujubes) • ginseng rootlets • 1/2 inch fresh ginger • 6 cloves fresh garlic • salt • pepper • 10 cups water Stuffing • 1/2 cup sweet rice • 8 ginko nuts, shelled • 2 fresh ginseng roots • 1/2 small white or yellow onion • 8 cloves fresh garlic • 8 red dates (Chinese or Korean jujubes) Garnish • 2 scallions or green/spring onion • 2 eggs -continued on p18-

• Remove and discard ginger, then add garlic, jujubes, and ginseng rootlets. Cook for an additional thirty minutes, adding water as needed to maintain 1/2 the original volume. • Add sesame oil five minutes before end of cooking. • Fine chop the scallions/green onions. Garnish each serving with egg strips and green onions. Serve hot, adding salt and pepper to taste.

닭 안에 넣을 것 • 찹쌀 1/2컵 • 은행 8개

• 인삼 2뿌리 • 양파 1/2개 • 마늘 8쪽 • 대추 8개

• 파 혹은 양파 2개 • 계란 2 개

INSTRUCTIONS • Put rice in a bowl and rinse until water runs clear. Cover with water and soak for 1/2 hour. Drain. • Clean poultry inside and out (use or discard gizzards and liver as you wish).Lightly salt (rub) both the inside and outside, and let stand for fifteen minutes. • Wash ginseng root then trim the rootlets (do not discard, save for soup). Cut into bite size pieces. • Slice onion, then cut slices in half. • Wash and thin slice the ginger. • Put all stuffing ingredients into the cavity (Divide stuffing evenly if using 2 game hens), and close flaps over the cavity (sew with thread or use a skewer). • Separate egg yolks from whites and place in separate small bowls. Lightly whip yolks together. Spread whipped yolks in frying pan and cook until lightly browned, flip and repeat with the other side. Remove from pan and cut into narrow strips. Repeat with whites. • Place poultry in a heavy pot and cover with water. Bring to a full boil over high heat, skimming oil and foam as needed. • Reduce heat to medium, add ginger slices, cover and cook for one hour.

사용하거나 버리면 된다. 안팎으로 소금으로 (문질러) 간을 하고, 15분 동안 그대로 둔다.

• 인삼은 씻고 작은 뿌리를 다듬는다(작은 뿌리를 버리지 말고 탕을 끓일 때 사용해라). 그리고 먹기 좋은 크기로 자른다.

• 양파를 슬라이스해서 썰고 반으로 자른다. • 생강을 씻고 얇게 저민다.

• 모든 재료들은 닭 안에 넣는다.(만약 닭을 두 마리 사용한다면 준비한 재료를 똑같이 반으로 나눠 넣으면 된다.)

그리고 아래 구멍을 막는다. (실로 묶거나 꼬지를 꽂으면 된다.)

• 흰자와 노란자를 분리하고 각자 작은 그릇에 담는다. 노른자를 가볍게 풀고 약간 노릇해질 때까지 굽고 뒤집은 다음에 다시 노릇해질 때까지 굽는다. 그리고 가느다랗게 지단을 썬다. 흰자도 같은 과정으로 요리한다.

• 닭은 솥에 넣고 닭이 잠길 때까지 물을 붓는다. 센 불에 끓이고 필요하면 기름과 거품을 걷어낸다.

• 중불로 낮추고, 생각 슬라이스를 넣는다. 뚜껑을 덮고 한 시간 정도 끓인다

• 생강을 빼 내고 마늘, 대추, 인삼뿌리 등을 넣는다. 다시 30분 정도 끓이고 국물이 1/2이 되도록 물을 계속 보충해준다.

• 요리가 끝나가기 5분 전에 참기름을 첨가한다.

• 파/양파를 다진다. 계란 지단과 양파를 고명으로 그릇마다 올린 다. 뜨거울 때 내고, 기호에 따라 소금과 후추를 넣어도 된다.

Looking for something different to do in Daegu? Do you want a unique experience? How about visiting the new local raccoon cafe called Racoona Matata? That’s right; Korea has outdone itself once again. One of the many unique things about Korea are the many themed cafes that you can enjoy. So, what can you expect once you get there? 대구에서 뭔가 다른 것을 찾고 있는가? 독특한 경험을 해보고 싶 은가? 그렇다면 ‘라쿠나 마타타’라는 라쿤 카페를 가보는 것을 추

천한다. 그렇다. 한국을 그들만의 놀라운 일을 다시 해냈다. 한국

에 대한 수많은 독특한 것들 중 하나는 테마 카페들이 많다는 것 이다. 이 곳에 간다면 무엇을 할 수 있을까?

As you walk up the flight of stairs to the 2nd floor, you can’t help but notice the colorful animal paintings on the wall. Immediately after arriving, you can see where the raccoons are kept. As soon as you walk into the café, you are met by 2-3 curious but friendly dogs. The raccoons will be closely behind chasing them. If you look up around the café you will see the ceiling ramps that extend over the café. You have a wide range of drinks you can choose from. These drinks include Coffee, Tea, Ade, and Soda. However, if you are hungry, you can also order a light snack such as Tteokboki, but you might not be the only one who wants a quick bite if you know what I mean. 2층으로 올라가면 벽에 컬러풀한 동물 그림을 보게 될 것이다. 그

그러나 허기가 진다면 떡볶이와 같은 간단한 간식도 있다. 하지 만 카페에서 빨리 음식을 먹어버리려고 하는 사람은 혼자가 아닐 것이다. 이 말이 무슨 뜻인지 눈치채셨는가?

There are also a few rules you must follow while at the café. First, you should not pick the raccoons up by yourself. The raccoon I met was very playful but harmless. Second, you can pet them, but be gentle! Don’t grab their tails and remember, these are animals so if they feel threatened, they will defend themselves. Third, you can feed them! You can feed them by tossing the food in front of them, or if you are brave, you can let them take the food from your hand. However, once you look around the café, you will see that the employees will put a handful of food on the table for them to eat. Be patient, it gets very entertaining when the dogs try to steal some! The final rule is to wash your hands after petting them. There is also hand sanitizer for you to use as well. So, how do you get to Racoona Matata?

Racoona Matata is near Kyungpook National University’s North Gate entrance (KNU). You can get to KNU by bus or taxi. Unfortunately, there are no direct subway lines that will get you to KNU. However, you can take bus 706 from Banwaldong station across from Starbucks. The trip should take you about 30min and will drop you off at KNU North Gate. Once there, you will cross the street. There is a Baskins Robbins in front of you. You will go left and continue walking until you

The atmosphere was electric with hundreds of people flocking to what is the biggest night market in Korea. The Seomun night market is truly a night to experience everything from food to culture and performance. The seemingly endless line of food vendors creates a daunting task of trying to decide what to eat. After having done a full tour I decided to hit the longest lines with the promise of the best food at the end. 한국에서 가장 큰 야시장이 어떤 것인지 보기 위해 수백 명의 사

람들이 몰려든 열광의 현장이었다. 서문시장 야시장은 음식에서

부터 문화 및 공연까지 모든 것을 경험할 수 있는 그런 밤을 선사

했다. 음식 가판대의 끝이 없어 보이는 줄은 무엇을 먹을지 결정 하려는 일을 더 어렵게 만들었다. 무슨 음식이 있는 지 충분히 둘

러보고 가장 긴 줄 뒤에 서기로 마음 먹었다. 결국 긴 줄은 가장 맛있는 음식이라는 의미이니 말이다.

Arming myself with a plate of Vietnamese spring rolls I took my place at the longest queue in the market. Insert classic cliché: it was worth the wait. The Indonesian stir-fry noodles were bursting with flavor and yet carefully balanced at the same time. Next I began to make slow but steady progress in the line for deepfried ice cream. These foods are only a snippet of the huge variety on offer. And while being able to sample

such a wide assortment of foods and flavors is incredible, the best part of this experience is that you are able to watch the creative process of cooking unfold before you. 베트남 스프링롤을 들고 시장에서 가장 긴 거리에 자리를

Having fully satisfied all my cravings I decided that it was time to head home but the live hip-hop show, which had just begun on the center stage, made me turn right back around. A crowd soon gathered and with it the atmosphere completely changed - it felt as though I had been transported

to a live concert. There were special guest performances including a Korean-American who, unsurprisingly, was very well received. If big crowds of people dancing and jamming to hip-hop aren’t your thing then a quick walk to the end of the market will find you musical buskers playing some more classical pop. 먹고 싶은 음식을 실컷 먹고 나서 집에 가려고 했지만 메인 무대

If the hustle and bustle of the night market becomes too much or you are just looking to explore further you can simply step into the traditional Seomun market. Here you will find all the ajumma’s and ajusshi’s who are escaping the rush of the night market. You can of course indulge in more traditional Korean food options and perhaps do some late night shopping – this would be a good time to stock up on Korea’s famously cute, character socks.

Perhaps the best part of this market, especially if you’re a traveller on a budget, is that entrance to the market is free. This leaves all your spending money for the numerous food stalls or to donate to a talented busker. There is something on offer for everyone which makes it the ideal spot to enjoy with a group of friends. So if you are trying to decide what to do on a hot summer night in Daegu, head to the Seomun night market and cool down with some fresh sugar cane juice, shaved ice or some deep fried ice cream. 야시장에서 가장 좋은 부분은, 특히 당신이 적은 예산으로

Chimac One of Daegu’s Best Festivals Returns this July

Almost a year ago, I wrote a review of Daegu’s Chimac festival and I’m very excited to see what they have in store for us this year. I’m a huge fan of Korean fried chicken and am a big supporter (haha) of the local craft beer scene - this festival is one of my favorites and I’m already planning to go at least twice! 약 1년 전, 필자는 대구의 치맥축제에 대한 리뷰를 썼다. 그리고

올해, 이 축제에서 관람객을 위해 준비한 다양한 것을 다시 즐길 수 있다는 생각에 매우 들떠 있다. 필자는 한국 후라이드 치킨을

가 가장 좋아하는 축제 중 하나이며 벌써 적어도 2번은 가보겠다 고 계획을 세웠다.

올해의 치맥축제는 7월 27일부터 31일까지 열리며 두류공원 야

구장에서 메인 무대가 열린다. 하지만 축제는 대구 시내의 여러 곳과 공원 전 구역에 걸쳐서 열린다.(입장료 무료)

The word Chimac comes from combining ‘chicken’ and ‘macju’ (the Korean word for beer). There will be over 100 chicken and beer vendors this year, including several craft beer stalls. Last year, I was able to try craft beers from KaBrew, Trevier, Craftworks, Hand and Malt Brewing, Platinum, Weizenhaus and Whasoo. 치맥이라는 말은 치킨과 맥주가 합쳐져서 만들어졌다. 이번에는

100개가 넘는 치킨과 맥주 가판대가 설치될 것이며 여기에는 수 제 맥주 판매대도 포함되어 있다. 작년에는 카브루, 트레비어, 크

Just like last year, there will be numerous performances at various locations in Duryu park, ranging from traditional music, to K-Pop, Jazz, and the ever-so-popular EDM party:

The Premium Zone will be located at Duryu Baseball Stadium again, and it will be the main stage for the aforementioned EDM and K-Pop parties - this area is also where I found the best chicken last year. The 2.28 Parking lot will be the primary location for jazz and pop, while the Outdoor Concert Hall will host the Family Zone, where visitors can experience wind instrument and folk music performances. Festival organizers are even opening a ‘Cool Summer Cool Party’ at Duryu swimming pool, as part of this year’s festivities. 두류 야구장에는 프리미엄 존이 다시 설치될 예정인데 앞서 언급

Bali An Unforgettable Experience

I still recall roughly around this time last year, sitting in my apartment in Korea and pondering which tropical destination I should venture to for my summer vacation. One of the best things about living in Korea is the ease of access to Southeast and East Asian countries due to their geographical proximities. I wanted to pick a special country that would be memorable for a lifetime, and that turned out to be Bali Island in Indonesia. It was a place I could only dream about years before, a place so far from my home country in Canada, but much more accessible by a 6-10 hour flight from Seoul, depending on the amount of layovers in between.

Bali is special, not only because it is a stereotypical “fun in the sun” destination as advertised on glossy magazines of gorgeous beaches stretching out for miles, but for its rich culture in the performances, artworks, and can I just say Babi Guling (roasted pork) is one of the best cuisines I have ever tasted? On our first day in Bali, me and 2 other friends explored the cultural capital “Ubud”, where Julia Robert’s “Eat Pray Love” was filmed. It was everything I had imagined and more. Seeing the lush rice terraces and taking a tour of coffee plantations made me feel like I was on an exotic film set. Our private driver, whom only charged 500,000 rupiah (roughly 45,000 won) for 12 hours a day, showed us various scenic spots, with our last stop ending at the “Tanah Lot Temple” to watch the sunset. We happened to catch the flight of bats at dusk, flying over the crashing waves, which set the mood for one of the most ethereal moments I have ever experienced. Tanah Lot Temple is built on a giant rock, literally surrounded by ocean waves all around. 발리는 특별하다. 반질거리는 잡지 지면에 광고된 수십km 넘 게 펼쳐진 해변처럼 전형적인 “태양 아래의 휴식” 의 대명사라 는 것 이 외에도 몸으로 즐길 거리와 예술이 넘쳐나고, 바비 걸링 을(구운 돼지고기)를 평생 먹어본 음식 중 최고라고 해도 될는지

모르겠다. 발리에서 보낸 첫 날, 필자와 두 명의 친구들은 예술의 수도하고 하는 “우붓”을 돌아보았는데, 이 곳은 줄리아 로버츠가 “먹고, 기도하고, 사랑하라”를 촬영한 곳이다. 내가 상상했던 것

과 그 이상의 것들이 있는 곳이었다. 푸르게 펼쳐진 테라스 논을

보고, 커피 농장 투어를 하자 마치 어느 이국적인 영화 세트장에 들어와 있는 듯 한 기분이었다. 하루에 12시간 동안 50만 루피아

(대략 4만5천원 정도)를 주고 고용한 개인 운전사는 다양한 그림

과 같은 풍경을 보여 주었고, 마지막으로는 일몰을 보기 위해 “따 나 롯 사원”으로 갔다. 땅거미가 질 무렵에 박쥐들이 날아가는 것 을 볼 수 있었는데 박쥐들은 부서지는 파도 위를 날아갔다. 그리

고 그 때의 파도는 그 동안 겪어봤던 최고의 순간들과 같은 분위 기를 연출해 주었다. 따나롯 사원은 거대한 바위 위에 지어져 있

고, 말 그대로 바다의 파도에 둘러싸여 있다. 여행자들은 기념품 과 음식을 파는 야시장을 둘러볼 수 있고, 아니면 사원을 걸어 다 니며 시간을 보낼 수도 있다.

Another extremely memorable location was the “Uluwatu Temple”, easily accessible by car, but remember to come early for the sunset as the road is plugged with traffic of other tourists trying to catch this sunset! I have seen many sunsets over the course of my life, but none has been as spectacular as the Uluwatu sunset. That clique phrase “it took my breath way”, described me taking a few silent moments by myself to take in the whole view. The roaring waves crashing against a giant cliff, on top of the endless horizon of the Indian Ocean seeming to stretch to the end of earth, was one of the most beautiful things I have ever seen. Located inside the temple is also the famous Bali “Kecak Dance” performance, which we paid 150,000 rupiah (roughly 10,000 won) to see. The show is held everyday at sunset time, which is 6:00pm. It was an intriguing and spectacular show of traditional Balinese dancing, chants, and fire performances. At end the day, me and my friends enjoyed a savory seafood dinner right on Jimbaran beach. Tourists get to choose the seafood of their choice, and have it freshly grilled for them while they sit down and enjoy live music by the beach. It was the best dining experience of my life!

평생 잊지 못할 또 다른 장소는 “ 울루와투 사원”이었다. 차로 쉽 게 갈 수 있지만 일몰을 보러 오는 다른 여행객들의 차 때문에 도

로가 엄청 막히니 일몰을 보려면 일찍 가야 한다. 이제껏 수 많은 일몰을 보았지만 울루와투의 일몰만한 것은 없었다. “숨이 멎는

듯 했다” 라는 식상한 표현이 그 몇 분 간의 조용한 침묵의 순간

동안 전체 풍경을 바라보는 필자를 표현하는 가장 알맞은 말이었 다. 지구의 끝까지 펼쳐져 있는 듯한 인도양의 끝없는 수평선 위 에서. 으르렁거리는 파도가 거대한 절벽에 부딪히는 장면은 이

세상의 가장 아름다운 것 중 하나였다. 사원 내부에는 발리의 유

명한 “케칵춤”을 볼 수 있었는데, 15만 루피아(약 1만원)을 내고

Towards the end of our Bali trip, we hit up the infamous “Potato Head Beach Club” due to excellent reviews, which is located in Seminyak Beach. It is easily walkable from the beach side as it sits right above the waters, or from the opposite end from the Seminyak shopping street. We ended up spending half a day in there, lounging in the sun and enjoying laughs and drinks in the infinity pool, which was complete with a built-in bar where tourists can purchase drinks while in the water. The infinity pool, built a few feet from the shoreline of Seminyak beach gave me the illusion that I was floating above the waters. I really recommend spending some time checking out Bali’s various beach clubs- a few others are “Ku De Ta” and “W Bar”. Remember to go early in the day to reserve a good spot!

냈다. 인피니티풀에는 물속에서 관광객들이 술을 마실 수 있 도록 빌트인 바가 있었다. 그리고 셍미냑 해변의 해안가에서 조금 떨어져서 만들어져 있고 마치 물위에 떠있는 듯한 착각 을 하게 했다. 발리에 가서 다양한 비치 클럽에 한 번쯤 가보

길 권한다. 다른 유명한 클럽 “쿠 데 타”와 “W 바” 등이 있다. 일찍 가서 좋은 자리를 맡아라.

Overall, my experience in Bali was truly unforgettable. The amount of views I took in, spectacular sunsets I enjoyed, and wild monkeys I had the chance to photograph up close in the “Monkey Forest”, gave me the perfect mix of the summer vacation vibes was looking for. There are so much more things to do beyond checking out Bali’s beaches, and I promise you that even though Bali is a bit far compared to other Southeast Asian tourist spots, the memories you take back with you will be inked in your mind for years to come! I strongly recommend considering Bali as a vacation while in South Korea, as flying with Air Asia from Seoul or Busan is relatively cheap if booked early, as they are a low budget airline. A Weekend in Japan Part 2 24hr in Osaka

Last month, I shared an article about my trip to Kyoto over the Chuseok holidays. It was a lovely few days in the city, but we had a couple more things we wanted to accomplish before leaving Japan. We left Kyoto in the early afternoon, and it didn’t take long before we found ourselves in the middle of Osaka. With a little help from a local citizen, we located our hotel, dropped our bags off at the front desk, and set off to tick a few more things off our to-do list.

First and foremost - food! We immediately grabbed some takoyaki from a local vendor and headed off to find the glorious Kuromon Ichiba Market. We got turned around a couple times before Google Maps found us, but we eventually arrived at the market in time for a late-lunch. While there, we sampled some Kobe beef, medium fatty tuna, and tempura fish. The food was absolutely fantastic! The market is an excellent place to sample some of Japan’s popular foods without having to order (and pay for) full dishes.

등을 시식했다. 음식은 전부 매우 맛있었다! 구로바 시장은 일본 에서 인기있는 음식을 정식으로 돈 주고 많이 사먹지 않아도 다 양하게 맛볼 수있는 최고의 장소이다!

Once we had our fill, we headed off to Osaka Castle. We chose to take a taxi to the Castle as we were all starting to drag our feet. It was gorgeous - definitely a must-see while you are in Osaka! We didn’t pay to go in, but got a few snacks (some more takoyaki), relaxed in the sun, and enjoyed the scenery.

배가 좀 채워지자 오사카성으로 발걸음을 했다. 발이 점점 무거 워져서 성까지 택시를 타고 가기로 했다. 성을 매우 멋진 곳이었 다. 오사카에 간다면 반드시 봐야하는 곳이었다! 내부를 보러 들 어가지는 않고 대신에 간식을 좀 더 사고(타코야끼를 좀 더 사고), 햇빛 아래 느긋하게 있으며 풍경을 즐겼다.

After visiting the castle the castle, we checked in to the hotel and headed to Dotonbori to visit Don Quijote before dinner. We met up with some friends and went on the hunt for Okonomiyaki. It was my first time eating it and I was really happy with what I ordered (beef and acorn jelly). -continued on p40-

전에 돈키호테에 가기 위해 도톤보리로 향했다. 몇 명의 친구들 과 만나서 오코노미야끼를 먹으러 갔다. 처음으로 먹었는데 내가

주문한 음식에(쇠고기와 도토리묵이 들어간 오코노미야끼) 정말 만족했다.

The next morning, we headed to Osaka Airport bright and early and did some shopping before catching our flight home. Looking back on our trip, I’d definitely go back to Japan on a long weekend, but do only one city; two was just way too much. Many of my friends said that I would fall in love with Japan and they were right-I can’t wait to go back for Chuseok this year!

How To Cook Korean Pumpkin Make Your Own Vegan Pumpkin Latte

Here in Korea a pumpkin is called a hobak (pronounced hobawk). They are different from their western cousins in that the outside is green and the texture when cooked is a bit more pasty and slightly drier, as opposed to stringy and juicy. They are kind of like sugar pumpkins back home but… less sweet. It doesn’t sound like I’m selling you on them much but they really are delicious and so versatile! Koreans typically use them in savoury dishes but they work well both ways and can easily replace (orange?) pumpkin in recipes. Best of all, hobak come in all different sizes which means if you’re like me, and have a tiny fridge and freezer, it is super convenient to buy smaller pumpkins that you can cook and freeze easily. Yippee!

한국의 호박은 “호박”이라고 발음한다. 서양의 호박과는 좀 다른

데 밖은 초록색이고 요리했을 때의 질갑은 좀 더 으깬 듯한 느낌

에 더 건조한 편이다. 섬유질이 많고 즙이 좀 있는 것과는 반대로 말이다. 우리나라에서 흔히 보던 슈가 펌프킨과 좀 비슷하지만

덜 달다. 이 한국 호박을 그다지 추천하지 않는 듯한 느낌이 들 수 도 있다. 하지만 한국 호박은 정말 맛있고 다양한 요리에 사용할

수 있다. 한국인들은 보통 짭짤한 음식에 호박을 사용하는데 어 떤 식의 요리에도 사용하고 레시피에서 (주황색?) 서양 호박을 대

체할 수 있다. 가장 좋은 점은 여러분이 원하는 대로 다양한 크기 의 호박이 있다는 것이다. 즉 호박을 좋아하고 작은 냉장고를 가 지고 있다면 더 작은 크기의 호박을 사서 쉽게 얼릴 수도 있는 것 이다.

Here is my method for preparing them to use in your favourite recipes ^^

1. Wash your pumpkin and start by making 5 or 6 cuts

starting about an inch or so from the stem outward. Make sure you’re cutting downward through the rind! This will make 5 or 6 wedges

2. Now, cut around the stem at a slant and remove it. 3. Now simply break apart your pumpkin, scoop out the seeds and cut into 2 inch pieces.

4. Coat roasting pan with a few teaspoons of grapeseed oil (or any mild flavoured oil) and roast your pumpkin! If you are using a toaster oven (like me and many others in Korea) set your oven to the highest temperature.

5. Roast until the pumpkin is soft and you can pierce

each piece through easily with a fork. For me this takes about 20 minutes.

6. Let pumpkin cool on the roasting pan and scoop out

into a blender or food processor (discarding the green rind.) Process for a couple of minutes until smooth. I prefer my pumpkin to still taste like fresh pumpkin and so I don’t like processing it to the point that it’s too smooth and similar to the canned product. You can of course mash with a fork or potato masher but for the sake of pure laziness I prefer to use my processor.

3. 호박을 웨지 조각으로 분리하고 씨를 발라낸 후 웨지 조각을 5cm 정도로 잘라낸다.

4. 후라이팬에 포도씨유(약한 풍미를 가진 어떤 다른 기름도

괜찮다.)를 조금 두르고 호박을 굽는다. (필자나 한국의 다른 많은 외국인들처럼)토스트 오븐을 사용해도 된다. 가장 높은 온도에 맞춰서 사용해라.

5. 호박이 말랑해질 때까지 굽고 포크로 찍었을 때 부드럽게

들어갈 정도로 되어야 한다. 이 정도로 될 때까지 필요했던 시간은 20분이었다.

6. 후라이팬에서 호박을 식히고 블렌더나 분쇄기에 넣는다.

Now that we have fresh pureed pumpkin let’s use it! Pumpkin lattes are almost impossible to find in Korea. Starbucks here doesn’t include them in their seasonal menu but the homemade version is far more delicious anyway so I encourage you to make your own! 이제 신선한 호박 퓨레가 만들어졌으니 사용해 보자. 호박 라떼 는 한국에서 찾아보기가 거의 불가능하다. 한국 스타벅스의 시즌 메뉴에도 없지만 집에서 만드는 것이 어쨌든 훨씬 더 맛있다. 그 래서 직접 만들어 보기를 권한다.

This latte is topped with homemade coconut whipped cream, which you should assemble before you make your latte. There are many recipes out there for this, but I’ll share with you what I like to do! First you need to chill your can of coconut milk overnight in the fridge. Of the brands I’ve tried here, this one is my favourite. (photo 7)

Once chilled, scoop out the hard cream into a large bowl. Add the powdered sugar and vanilla. The vanilla is essential to change the flavour of the cream so don’t exclude it! It’s best to use beaters to mix the cream but a whisk works fine too. Just mix until there are no clumps. You won’t get stiff peaks but coconut milk behaves differently from regular cream anyway and we don’t need peak-y cream for our lattes! (photo 8)

Set aside cream in the fridge. It will thicken more as it cools. 냉장고에 크림을 둔다. 더 차가워질수록 크림은 더 단단해 진다.

Now on to the lattes! Heat your almond milk over med-low heat, whisking continuously. To get a foam going, tilt your pot and whisk just above your burner. I find the most effective way to get a good foam is to whisk up and down. Once warm, add the cinnamon and nutmeg. Continue to whisk for 1-2 minutes and once a decent foam has started, add your pumpkin and maple syrup. Now whisk like crazy and foam it up! Increase the heat slightly to get more foam. Continue to whisk for another 1-2 minutes until the mixture has foamed up to your liking and starts to gently boil.

Pour your coffee or espresso in a mug and add vanilla. Holding back the foam at first with a spoon, pour the latte over the coffee. Now scoop on the foam and add a few dollops of coconut whipped cream and a pinch of nutmeg. The end result is a creamy and satisfying latte that is delicious without the coffee too (ha) so you can make it both ways to drink any time of day or night. Enjoy! Think of this artsy street as the “Insa-dong” of Daegu. As you walk along, you’ll see art galleries, studios and antique shops. The late Kim Kwang-suk, a famous Korean folk singer-songwriter who was popular in the 1980s, is still admired by many Korean music lovers today. You can definitely feel the love for the late artist as you stroll down the 350 meter long street that was designed to remember and honor him. The walls of this street are plastered with murals of Kim and you can hear his music faintly playing as you stroll along. On the weekends, you can visit a flea market here and there are also several famous restaurants in the area such as Daehan News, Two Bbul, Pic&iq (picnic), Percent, Barazi, Gajok and Laura’s Mill. 73


Seomun Market Area Established in the Goryeo Dynasty, Seomun market was one of the three major markets during the Joseon dynasty. After the Korean War, a large linen and cotton wholesale and retail market was created. The textile industry is the traditional industry of Daegu. Seomun market is a lively place for locals and tourists alike that truly showcases an original part of Daegu culture. You can find an assortment of food as well as affordable, well-made market goods. Convenient Facilities Parking building The eight story parking ramp is located between Dong-san shopping district and sector two. There are two entrances and the ramp can hold 660 cars. It costs 500 won to park for 30 minutes with a 250 won charge for each additional ten minutes of parking. You can pay at an automated machine on the first floor. Credit cards and transportation cards are accepted. Parking lot There are two sections that hold up to 350 cars. It can hold 60 cars in the Dongsan shopping district and 50 cars in the basement of each of the five additional sectors. ATM You can find them at various places around Seomun market. There is also one located on the first floor of the parking ramp. Information Center It is located right next to the entrance of the parking ramp. You will see a sign that says, “Information Center”. Inside, you can collect all the information you need about tourist destinations in Daegu as well as more information about Seomun Market.

Transportation Subway (Sinnam Station of Green Line) To find “Yangmal alley (socks alley),” take subway line two to Sinnam station and take exit number one. Right after you exit, look for an alley on your right. Yangmal alley merges with a main road. Dongsan Shopping District You can find dishes and flatware in the basement. On the first floor, you can find baby goods, children’s clothing and many more household items. On the second floor and above, you’ll find cute clothing for a reasonable price.

District Five It’s located at the outer corner of Seomun market but is always packed with people. On the first floor, you’ll see shoppers buying dishes either for commercial use or for their own homes. The second floor sells clothing.

Distrcit One The first floor sells linen and silk fabrics, and the second floor sells Korean made clothing and luxury bedding. This spot is visited by Koreans of all ages taking a look at the colorful, luxurious fabrics.

AJin Shopping District This place is ideal for artists and designers, “Home-Fashion” crafts and it sells hand-made clothing. Along the streets of this district, you can find various tools and materials such as buttons, feathers, ribbons, zippers and laces. “Mending Street” is lined up and down with sewing machines and seamstresses and tailors who have been sewing for over ten years – another special feature of the Jin Shopping District.

District Two This building burned down in 2005 but was recently rebuilt and revived with a brand new facility. In the basement, you can grab a bite to eat. They sell things like strawberry cakes, pork belly, Jajangmyeon, Mon-na-ni Tteok-bokki and grilled bulgogi. The first floor is retail and clothing and the third and fourth floors sell fabric. This spot is always popular for Daegu locals, but receives an influx of foreign shoppers in October buying fabric for Halloween costumes. District Four District four is a general store. On the first floor, you will find a random mix of tuxedos, garments, crafts and traditional Korean souvenirs. You can buy silk fabrics and bedding on the second floor.

Myungpoom Plaza Myungpoom Plaza is a fashion center located in Seomun market. The first floor sells jewelry, accessories, imported goods, shoes, dishes and baby goods. The second and third floors sell underwear and women’s clothing. This is a one-stop shop plaza with a little bit of everything Dried Sea Food District The dried sea food district of Seomun Market sells dried fruits, nuts and (of course) an uncountable amount of dried sea food. In fact, 60 to 70 percent of all dried foods sold in Daegu are sold here. An added bonus is that you can buy the goods for about 20 or 30 percent cheaper here than you can at the market. To get here, walk past the arched structure and you will see it on your left.
