Apple Cider Moscow Mule Ingredients 2 ounces of vodka (or gin) 5 ounces of ginger beer 2 ounces of apple cider splash of lime juice ground cinnamon apple slices (for garnish) cinnamon sticks (for garnish) 1 Solid Copper Mug w/ice Directions: Squeeze the lime into the solid copper mug Fill mug with ice and pour 2 oz vodka (or gin) over ice Pour 5 oz ginger beer Pour 2 oz apple cider Sprinkle cinnamon over ice Stir and Enjoy! For garnish, add an apple slice and a cinnamon stick.

Chocolate Blackberry Pistchio Tart

Ingredients Pastry 200 g cake flour 25 g cocoa powder 50 g icing sugar 150 g butter 3 XL egg yolks 1 tsp vanilla paste or essence Filling 1 tbs lemon juice 1 tbs cornflour 350 g blackberries 1 tbs lemon juice 60 g sugar To Garnish 50 g pistachio nuts, shelled & lightly toasted

Directions Sift the flour, cocoa powder and icing sugar together into a large mixing bowl. Using your fingertips, rub in the butter until the mixture resembles breadcrumbs. Make a well in the centre and add the egg yolks and vanilla. Mix together to make a smooth dough. Turn the pastry out onto a lightly floured surface and

gather together into a ball. Cover with clingfilm and chill for at least 30 minutes before using Preheat the oven to 180’C Roll out pastry to 3mm thick and line a 23cm round tart case. Rest in the fridge to firm and prevent shrinkage. Blind bake at 180’C until golden and cooked through. While the tart case is baking, make the blackberry filling. Put the first tablespoon of lemon juice and cornflour into a large saucepan and stir to blend. Add the blackberries, the second tablespoon of lemon juice and the sugar. Heat gently to dissolve the sugar then simmer for 1015 minutes until it forms a chunky compote. Leave to cool. Remove the tart case from oven and leave in the tin to cool. Once cooled, remove from the tin and place on a serving dish. Top with the blackberry mixture, sprinkle with pistachios and serve with double thick cream.

Blackberry Ombre Sparkler Ingredients 1 1 1 4 1

cup fresh blackberries cup sugar cup water sprigs fresh rosemary bottle champagne

Instructions In a small saucepan, combine blackberries, sugar, and water. Bring to a boil on high heat, and then reduce to a simmer and let cook for approximately 15-17 minutes. The blackberries will become soft and bright in color and a pinkish purple syrup will form. Making sure it cooks down enough is essential to keeping the ombre effect. Take off of the heat and drain the blackberries, keeping the syrup in a separate bowl. Set both aside and allow to cool. Once blackberries and simple syrup are cooled, spoon about 4 tablespoons of syrup into the bottom of each champagne flute (this recipe makes 4 drinks) Top with champagne. Garnish with fresh blackberries or the cooked blackberries, and a sprig of rosemary. Cheers! Page 25


Ingredients: 1 box white cake mix, plus ingredients on back of box, **replace the water with champagne 2 sticks of butter, room temperature 1/2 cup vegetable shortening 4-6 tbsp champagne 4-5 cups powdered sugar gold sprinkles homemade gold sparklers (gold wire and gold tinsel), for decoration Directions: Preheat the oven according to the directions of the package. Line a muffin pan with muffin liners. Prepare and bake the cake mix according to the directions on the package, however substitute the water for champagne, so if your box calls for 2/3 cup water use 2/3 cup champagne. Divide the batter evenly among the muffins cups. Bake according to the suggested time - roughly 20-25 minutes. Remove the cupcakes and place them on a cooling rack to cool. When the cupcakes are cooled, prepare the frosting. In a mixing bowl, combine the butter and vegetable shortening and beat using an electric mixer until smooth, 1-2 minutes. Add in the champagne, starting with less and adding more for stronger flavor if desired. Begin to add the powdered sugar, about 1 cup at a time, mixing by hand first, then with the electric mixer. Continue adding powdered sugar until the frosting tastes good to you. Place the frosting in a large piping bag fit with a 1m piping tip. Push the buttercream down into the bag. Pipe the buttercream onto the cupcakes, starting in the center of the cupcake, swirling out, and then swirling back into the center, progressively stacking the frosting as you get to the center. Top with gold sprinkles and gold sparklers.
