COOK’S CORNER Banana Crumble Cake – my version!

This is a firm favourite of my family. It can be served just with your coffee break, after dinner dessert, for breakfast, lunch or anyime. It is absolutely delicious!

Recipe 6oz Self-raising flour 6oz Golden caster sugar 6oz Unsalted butter 3 Eggs 50g Walnut pieces 75g Dark chopped chocolate 4 Bananas – very ripe 1 Packet crumble mix (cheats option) 200g approximately – some like more crumble mix than others 2 Tablespoons of brown sugar for the top
Method Mix the flour, sugar, melted butter and eggs in a bowl. Add the walnut pieces and chocolate. Mix into the cake mixture. Then peel bananas, mash them lightly and add to the cake mixture.

Mix all together. I put the mixture in a lightly greased loaf tin, as opposed to a round cake tin, as this is my version. It’s a bit of a different banana bread. Cover the top with the crumble mixture. Then cover lightly with brown sugar to caramelise. Cook in the oven at 180 degrees for approximately 50 minutes. Check with a skewer or knife to see if it is cooked. The skewer should come out cleanly.
