aisakhi 2019 seems special. After a gap of 72 years, Kartarpur and Dera Baba Nanak appear to be within sight of each other. Decades of ardas by the sangat seem to have been finally answered. However, the Kartarpur corridor talks had hardly begun, when a convoy of Indian forces was attacked in Jammu and Kashmir, killing 40 soldiers, and bringing the two nations on the brink of a war. The Indian media played hawkish nationalistic sentiments on the loop. The project started

looking farfetched and the fear of war loomed large, with Panjab being at the center of this conflict on both sides of the border. Even after de-escalation, cross border firing continues as always, regularly killing soldiers on both sides, most of whom are economically poor. Another time, another scene. A film named Kesari was released in India on March 21, 2019, based on the exemplary valor and sacrifice of 21 Sikhs from the 36th Sikh regiment of the British Army, in the Battle of Saragarhi (September 12, 1897),

against thousands of Pashtun Orakzai tribesmen, in the now NWFP, Pakistan. The episode is considered to be one of the greatest laststands. A primarily territorial battle between the British and the Pashtun tribes was softly projected as a contest between Sikhi and Islam, without explicitly saying so, like many other historical encounters of the Sikhs with the Muslim rulers. Undermining the autonomy of the Sikh politics, time and again Sikh history is milked to serve the current majoritarian political interests in the Indiansubcontinent. With their fading power, Sikhs have also lost their agency, and narrative. Glimpses of this malaise are visible in the diaspora also. Take for example the good intentioned
“We Are Sikhs� campaign by the National Sikh Campaign (NSC), a couple of years ago, arguing that Sikh values are American values, even after decades of US invasions of sovereign states, and the continuous profiling and killing of people of colour domestically. Contours of this racial politics have become even more pronounced with a war on immigrants. Thus, such campaigns unwittingly allow themselves to be coopted by the majoritarian politics. Turbans coloured red, white and blue start looking not so etched in Sikh values after all. These issues are deep down linked to the central question of:
What does the Khalsa stand for? What are the Khalsa ideals? Who does the Khalsa serve?

It is pertinent here to visit early Sikh tradition through Gurbani and history, and see what principles guided It.

Reliever; I sing infinitely many virtues of the Reliever. Pause. ‌ In the illusion of the other love, people make alliance. Searching for others’ fault, individual only feeds self-ego. As one sows, so does s/he reap. The alliance of servant Nanak is entirely the Reliever’s support, by which whole world is overcome. 5. Guru Ramdas Sahib, 366 Khalsa inaugurated at Anandpur was clearly rooted in this consciousness. The Khalsa character celebrated in the secondary text very much compliments
the Sabad in this regard. The lovers drenched in Divine devotion defined as Khalsa (p. 655) seamlessly compliments the individual drenched in self-taste as the epitome of Khalsa (Sarabloh Granth). Guided by this principle, Guru Nanak Sahib, at the outset, proclaimed association with the most oppressed class.

Among the lowest of the low caste, I am the lowliest of the absolutely low. Nanak seeks their company, why compete with the elite? Where the lowly are cared for, there is the glance of Your grace! one example. From here arose the celebrated tradition of contrasting the rebellious Divine lovers as Babe Ke (of the Baba Nanak) with Babar Ke (of the Babar), representing the ruling class.

Additionally, langar (community kitchen) had also started undermining the caste system that the brahmins very much rued. By the time of Guru Amardas Sahib, this resentment turned hostile, when the brahmins complained to Akbar about langar destroying caste purity and hierarchy, one of his courtiers, Birbal, himself being a brahmin celebrated by the current caste elites. The Sikh character of countering the ruling class in favour of the oppressed continually bothered the ruling elite. They were particularly incensed by the inauguration of Khalsa by Sahib Guru Gobind Singh. It is not without reason
that majority of the battles fought by the Guru were against the Rajput hill chiefs, who later joined forces with the Mughals to attack the Guru. Documenting the instructions of Sahib Guru Gobind Singh, Bhai Nand Lal (court poet of 10th Nanak) clearly marks the political character of Khalsa. He informs that Khalsa is the one who adorns arms, mounts steed, campaigns incessantly, protects the poor and annihilates the oppressor. Khalsa is also proclaimed as the sovereign rule of the Divine (Tankhahnama). This description of Khalsa being sovereign, principle centered, anti-establishment and pro-oppressed, assumes great significance, in the face of still prevailing abject poverty, extremely skewed power balance and caste oppression. Take for example regular killings of lower castes even today, just for riding a horse, which is considered to be a sign of power assertion and rebellion. In this context, wearing of arms and mounting horses by the Khalsa were not only considered symbols of defiance, but also sovereignty. As the right leaning politics gains currency globally, it is a good opportunity for us to reflect on the Guru’s call and question; as a part of Khalsa commonwealth, who do we serve and align with?

he celebrations of Vaisakhi are undoubtedly a visual feast. The strikingly exuberant colours, decorations and signs come together to create a meaningful sea of celebration infused with tradition, culture and community. The procession of Vaisakhi, celebrating the
birth of Khalsa community, is led by the Guru Granth Sahib ji, considered a living Guru. In fact, the chaur sahib, constructed from yak hair mounted on a wooden handle, is waved upon the Guru as a sign of respect and humility. The parade is led by the Panj Pyare, representing

VAISAKHI FEATURE One of the most prominent colours of Vaisakhi is saffron, or kesari. This shade of orange signifies courage, wisdom and deep bliss, often associated with sentiments of martyrdom as well. The kesari colour can usually be seen on the Nishan Sahib, which is the Sikh flag symbolizing freedom. the ‘five beloved ones’ that were initiated into the Khalsa. One of the most prominent colours of Vaisakhi is saffron, or kesari. This shade of orange signifies courage, wisdom and deep bliss, often associated with sentiments of martyrdom as well. The kesari colour can usually be seen on the Nishan Sahib, which is the Sikh flag symbolizing freedom; ‘nishan’ means stamp while sahib is added for respect. The flag can be found at all Sikh temples, or Gurdwaras, which literally translates

to “door of the Guru,” illustrating that people from all faiths are welcome. This also relates to the selfless service principle, seva, the driving force behind the many free services, food and activities implemented during Vaisakhi celebrations. Navy blue, another popular colour, represents sensitivity and intuition,
alongside signifying war and service as it has traditionally been worn by Nihang Sikh warriors, especially as part of their turban; turbans are a symbol of identity, equality and preservation of the hair. Another article of clothing, the free-flowing, unisex chola, adorned by various gear-like additions, traces back to the freedom of movement for an always-ready warrior. This may be worn by those participating in Gatka, the Sikh martial arts – or by any person attending celebrations. Gold, the colour of Sri Harminder Sahib, commonly known as the Golden Temple, can also be a representation of happiness and healing. As a colour that is often related to feeling grounded,

black may come up, during Vaisakhi, as a depiction of resentment or protest against communal or political wrongs. On the other end, white denotes purity and peace, containing within it the entire colour spectrum. Although these colours encompass special meanings,

the holistic belief is that all colours are equal. Besides colours, a widespread symbol you may see is the khanda, made up of three distinct parts. The khanda itself, a double-edged sword, is a portrayal of one God. This meaning also coincides with that of Ik Onkar, made up of
the number ‘one’ and Punjabi alphabet, ‘urha’, meaning God. Secondly, the chakar is the round center; it indicates that God is without beginning or end, much like the Kara you may see on the wrists of many. Finally, the two kirpans on the side are a symbolization of righteousness, spiritual power and defense of the weak. With unique embodiments, each of these symbols bring with them a distinct purpose, history or meaning that is weaved into the fabric of Vaisakhi. As you soak in the celebration delights, embrace the ‘why’ behind what you see. As lifelong learners, it is always good to ask about what you’d like to know more about and educate others about what you do know.

T Repetition of God’s name, the naam, is the easiest and simplest form of meditation. It can be done sitting closed-eyed or while doing your daily activities; focusing and chanting Waheguru. 26
he world is going through a vast change and the rapid advancement of technology has made it challenging to find our neutral state of mind. Various methods through scientific, psychological and spiritual reasoning are collectively emphasizing meditation to assist in a holistic approach to human wholesomeness and balance. Simran is a form of meditation in which one partakes in the internal remembrance of God’s name.

Simran was emphasized by Guru Nanak Dev ji to aid one’s soul to merge with the vibration of Waheguru (God). Simran is an integral part of the Sikh way of life. Thus, it was labelled by Guru Nanak Dev ji as one of the three essential pillars of Sikhi, and throughout the Guru Granth Sahib, the importance of Simran is communicated in detail. “Meditating, meditating in remembrance, I have found peace.” (Sri Guru Granth Sahib ji Ang 202) Simran allows us to clear our minds, detach from the day to day events, release stress,

As described beautifully by Bhai Hari Nam Singh Khalsa, “Simran is the art of stillness.” He has been
meditating since his early 20s and continues to do so daily. It has impacted his life deeply, and the healing strength he has received from repeating the name of Waheguru has allowed him to serve the community and to teach people to use the advanced technology of Simran in their life. Additionally, Simran can be done in a congregation known as sangat by Sikhs. In a sangat, each participant will have their individual experience and as everyone

meditates and comes together, there is a thread that weaves through each person. This uniformed thread increases the magnitude of the power of Naam Simran. As such, being in a supporting network allows one to focus and flow in a wavelength and frequency that quantifies their personal experience. Those who have had the opportunity to meditate state that it allows them to relax and clear their minds. Scientific research also supports that meditation has been linked to mindful behaviour, emotional retention, increased concentration and working memory, increased empathy and reduction in stress. The Guru Granth Sahib states that Simran is
invaluable, not only does it aid you now in the present but beyond life. “Meditating on the Naam with a pure mind, the Door of Liberation is found,” Ang 33. We encourage you to incorporate Simran into your life and clean your slate and essentially start and move forward through each day. As soap and water cleanses the body, meditating will help cleanse the subconscious and internal mind; in turn, raising your inner vibration to experience and embrace the universal creator (Waheguru). Take the challenge to rise up to the occasion and leave behind past circumstances and focus on your present growth and inner beauty. In turn, spread your light upon others. One lit candle lighting another can light up an entire nation.

pril is a very important month for the South Asian community in general and Sikhs in particular. For Sikhs, it is a festive and holy celebration. In India, it is the beginning of the harvesting season. Before starting the season, people celebrate in various ways. According to the Punjabi calendar, the harvesting season begins in the month of Vaisakh. As such, the festival is named Vaisakhi.
For the Sikhs, Vaisakhi marks the birth of the Khalsa (the Pure One). Throughout the month of April, Vaisakhi and the birth of the Khalsa is being celebrated around the globe. The festival has become an integral part of many communities. However, for the Punjabi community, this festival has very special meaning. Punjabis are now wellestablished in more than 170 countries around the globe. Wherever they have

Dhanju Offering Dental Care To Those In Need
D
r. Harinder Dhanju, well-known dentist and active member of British Columbia Dental Association since 1998, believes that charity begins at home. Since the start of his dental profession, Dr. Dhanju always looked into his own neighbourhood and community to offer his services to those in need. “I saw a lot of people unable to afford procedures and suffering, so I started providing free services at my own clinic,”

shares Dr. Dhanju who soon realized that the need for cost-effective dental services was much bigger than he imagined.
This demand for dental care was tested in 2010, when Dr. Dhanju organized a small group of dedicated dentists and dental team members to provide free dental services in his Newton office. The response was overwhelming; over 350 people came in to receive dental care. This was an indication that there was a substantial need for oral health care among those who could not access it through conventional dental care settings. This realization encouraged Dr. Dhanju to found Pacific Oral Health Society (POHS) in 2013. Affiliated with University of British Columbia (UBC) Dentistry, POHS is dedicated to providing access to inexpensive oral and dental health care for lower income and vulnerable individuals and families in the Fraser Valley region. The nonprofit offers a full range of dental services including general and family dentistry; pedodontics (children’s dentistry); periodontics (gum treatment), endodontics (root canal) dental implants and
oral surgery. “Patients travel all the way from Hope, Chilliwack, Abbotsford, Richmond and Vancouver to seek dental services. We have grown from four to 22 support staff, along with over eight dentists,” says Dr. Dhanju proudly. Besides helping the disadvantaged, POHS offers foreign dental graduates various courses and a state of the art facility in which to practise in preparation for the National Dental Examining Board of Canada (NDEB) examinations. The Society also plays a vital role in educating and encouraging the younger generation about the dental profession. “We offer dental graduates and youngsters hands-on experience to understand what a dental profession entails,” explains Dr. Dhanju who is a Clinical Assistant Professor at UBC’s Dentistry faculty. Additionally, the facility delivers continuing
event where people can get a dental screening done free of cost. “In the past we have saved a few lives,” mentions Dr. Dhanju, “every year we shortlist 20 to 30 people who show signs of cancer in their mouth but they don’t even know it exists. It all began in 2013 when UK-based Amrit and Naroop were looking for a personal project that could differentiate them from other creatives and also reflect their Indian roots. One day, while in East London, they began to notice that long beards were becoming hugely popular with men of different races and ages.

“This got us thinking. Clearly these men wanted to stand out from the crowd. They wanted their identity to be noticed. One of the many reasons Sikhs adopted a turban and beard was to also stand out. To be seen as followers of a different path,” recalls Naroop. The duo thought, “why not do a project that shows how modern Sikh wear their beards and also their turbans,

but photograph it in a way that reflects our Western photographic style.” Hence, the Sikh Project was born. Over a period of four years, Amit and Naroop photographed boxers, army captains, doctors, bikers, fashion stylists, musicians, temple volunteers, magicians and Sikhs from a host of other occupations. They sought out individuals – men, women and children – with inspiring stories to tell, as well as a unique approach to wearing their traditional articles of faith. They photographed 34 UK Sikhs and 36 US Sikhs and held exhibitions in London and New York. The portraits showcase the modern Sikh identity in all its beauty and diversity. “We chose the Sikh identity as the theme of the project as it is reflective of our heritage, however the message of the project is universal.

Taking the project to

America, there was definitely a more educational angle on it. Post 9/11, Sikhs were increasingly facing abuse by the negative portrayal of the turban and beard pushed on the public by the media. The project definitely played a part in trying to help correct this.” Eventually, the talented photographers decided to convert the exhibition into a book. “With exhibitions, the number of people that physically get to experience the portraits and the stories are limited. With a book however, there is no time limit of when and where you can see the images and the project can be shared with others,” shares Naroop.
Turbans and Tales contains 74 portraits with accompanying stories of the relationship each subject has with their identity. “We have also written a detailed opening chapter on the history of the turban, from its origins to how Sikhs eventually adopted it,” adds Amit. Amit and Naroop believe that the book is a simple reflection of the growth and social integration of the Sikh community. “With the variety of subjects we have in the book, it definitely shows that Sikhs are not limited in terms of what occupations they can pursue. We have magicians, police officers, creative directors, musicians, politicians, poets and more featured in the book. We’re not saying that things are perfect, and there is still a way to go before the prejudice Sikhs face totally disappears, but there has been significant progress. We started building the school the following year.” Atwal shares that he could be of help because of the endless support of his parents and family. “My parents helped with establishing the school and visit India every year and do seva at the school.” Since the last five years, Atwal has also been giving scholarship money to the other schools in the village. “We present the scholarship to the top three students excelling academically from grades 6 to 10. I want to encourage kids to study so that they can have a bright future,” says Atwal humbly.

The Surrey-based organization constructed and runs three home building sites for abandoned and orphan girls in Punjab – Unique Home in Jalandhar City, Jyoti Sarup Kanya Asra in Kharar and Prabh Aasra in Padiala. “Currently we have 135 girls at Jyoti Sarup Kanya Asra in Kharar,” mentions Makhan, who strives to provide a better quality of life for these girls and increase awareness of those suffering from gender discrimination. Through its work, the organization also intends to bring awareness to the injustices faced by women and

girls in local communities in the Lower Mainland and across Canada. Makhan defines seva as “giving precious moments of your life for the betterment of society. You contribute your time or money and anything that you can do for society. That is called seva according to Mamta Foundation and we are devoted towards it.” Monetary support helps provide education, better buildings, and necessities such as food and medicine to the three orphanages in India that Mamta Foundation supports. The organization holds an annual function aimed at raising both funds and awareness for their cause. The team also actively participates at the Vaisakhi parades in Vancouver and Surrey, where they reach out to the community and seek donations.

History

H Steven Purewal, author of Duty, Honour & Izzat, has taken it into his hands to stir change when it comes to recognizing the role of Punjabi solders in pivotal global events. 58
istory is an enabler of understanding – be it of people, policies or practices. However, the sources from which we gain access into the past are often subjective and subject to omission of specific facts. Founder of Indus Media Foundation Canada and community historian, Steven Purewal, has taken it into his hands to stir change when it comes to recognizing the role of Punjabi solders in pivotal global events. In April 2019, Purewal released his debut graphic novel, Duty, Honour & Izzat, presenting the Indo-Canadian community’s pioneer experience within the

It is a step towards teaching our children that they have every right to make a stake in Canadian society. That said, Purewal understands that children and youth are often repelled by books, which is why the graphic novel serves as an effective medium of communication. “There is actually a story that compels you to read on. After reading, it goes into your system and you absorb. At this point, kids ask questions, creating an opening for educators,” explains Purewal. From an educational standpoint, it is easy to blame a flawed education system and passively accept that Canada discriminates against non-European history.
Purewal does not just point out the problem, but offers a solution as the book is a platform containing history, dates and events – tools for teachers to create lessons. Sponsored by community members, the book is a community-based effort to take action and move beyond the rhetoric. When asked about his vision, Purewal’s plans are to engage and advocate the book’s use in the community and across the country. Evidently, the global community can only pave the way towards a better future by truly understanding the riches of our history.

The project also builds on the long-standing historical preservation efforts by Ted Sibia (a librarian at UC Davis) and Yuba City’s Punjabi American Heritage Society,” adds Dr. Ranganath who teaches courses on the history of the South Asian diaspora, South Asian film, and India. The students translated and transcribed
the interviews with the 24 women. “Although the lives of these young women differed in important respects from the elderly ladies, I was surprised by how much the students could relate to their elders’ life experiences,” shares Dr. Ranganath, “Younger women were still told by their parents growing up in the US that they would belong to their husband’s family’s one day. These young women were very proud of their Punjabi and Sikh heritage, but yet they yearned for greater gender equality within their families and communities.” Jutti Kasoori has received
an incredible response. Dr. Ranganath was particularly moved by a recent screening by the Sikh Women’s Organization of the Central Valley. “There is such a strong bond of sisterhood among the Sikh women in the Fresno area. Many of them cried as they watched the film, clearly identifying with the women’s stories.” The film will broadcast on KVIE PBS in northern California in mid-April for Vaisakhi and also nationally on PBS later in 2019. Dr. Ranganath hopes to share the film with international audiences in the future, as well as host screenings in Punjab.

aisakhi is celebrated as New Year’s day, a harvest celebration by farmers and for religious purposes annually. An added reason for the Sikh community is that on this day in 1699 Guru Gobind Singh, the 10th Sikh Guru, laid the foundation of the Khalsa Panth or soldier-saints. Guru Gobind Singh, addressing a crowd of thousands at Anandpur Sahib, asked for volunteers prepared to die for the cause of religion. One by one five men stepped forward. Instead of taking their lives, the Guru baptized them.

n March 29, the University Of Fraser Valley’s South Asian Studies Institute (SASI) launched the ‘We Are Hockey’, a curated exhibition that will be available until February 2020 in the Sikh Heritage Museum, at the Gur Sikh Temple in Abbotsford. ‘We Are Hockey’ highlights historic racism and persistent racially-motivated
inequitable representation within public representation in the game of ice hockey. The exhibit is a vibrant counter-narrative to the commonly held assumption that ice hockey is a ‘whites only’ sport. The idea of the exhibit was born when Dr. Courtney Szto approached the SASI with her research findings regarding the troubling erasure of the history of people of colour in Canadian 2019 VAISAKHI

Dr. Szto’s PhD research then helped shape the idea into the creation of an exhibit, to challenge the notions of racial perspectives on hockey and bring the history of people of colour in the sport to the forefront. These unsung heroes have played major roles in the history of hockey; the evocative exhibit showcases a personal and collective journey of Canadian hockey centered on the experiences of athletes of colour. Satwinder Kaur Bains, director of SASI and an associate professor with multiple published articles, hopes that “people come and broaden their horizons and understand that this is an iconic sport, but it has its dark history as well, and they understand

a year long. All throughout, the SASI received tremendous community support from the City, sponsors, schools, media and the Khalsa Diwan Society in Abbotsford. ‘We Are Hockey’ also includes historic timelines and wall biographies that highlight men and women of colour who have impacted the sport. The exhibit will also have a prominent Hockey Night in Canada Punjabi (HNIC) feature with the HNIC desk installed, where exhibition visitors can sit and get the feel of being a hockey presenter or take pictures at. In fact, HNIC Punjabi hosts Harnarayan Singh and Randip Janda, who are popularly known to have brought Punjabi language and culture to leaguewide attention, were keynote speakers at the event launch.

Cumin Roast
Potatoes By Chef Anjali Pathak
T
hese are roasties with a difference. If you have any left-over spice pastes rolling around in your cupboards, then this is perfect for using them up and adding some extra flavour to that all-time favourite. One of the best parts of a roast dinner is the potatoes, especially if they are crispy on the outside and fluffy on the inside. Every Sunday my mother would make these using one of our spice pastes but if you don’t have any at hand, then here is a paste you can easily make up yourself.
Preparation
Serves 4 Prep time: 5 minutes Cook time: 45 minutes
Ingredients • 900 g (2 lb) roasting potatoes, any will do, cut into large bite size pieces • 1 tbsp cumin seeds • 2 tsp coriander seeds • ½ tsp black peppercorns • 2 dried red chillies • 2 fat garlic cloves • Good pinch of sea salt • 4 tbsp oil, rapeseed or light olive oil is great

• Preheat the oven to 200°C/400°F/gas 6 and boil the potatoes in cold water for 20 minutes or until soft. • In the meantime make a spice paste. Coarsely crush the cumin, coriander, black pepper and chillies in a pestle and mortar. Add the garlic and a good pinch of sea salt and pound. Add half the oil to make a paste. • Drain the potatoes in a colander and chuff them up so the edges can go really crispy in the oven. • Put a large roasting tray (enough so the potatoes will sit in one

hajias will always hold a special place in my heart. When my grandparents moved to the UK in the 1950s they had to do whatever they could to survive. They were incredibly poor so they did anything to provide for my dad and his siblings to keep themselves afloat. My grandmother did what she loved, which was cooking. Her Indian samosas, bhajias and traditional desserts gained national fame and from these humble beginnings Patak’s was born. My granny loved being in the kitchen and she taught me more about Gujarati cooking than I could ever thank her for. This is not one of her recipes but more of a modern spin on an old classic. I learnt some tricks when I was a cookery teacher at a culinary school in London like grating the veggies on a cheese grater, rather
than chopping them. I wish I’d thought of that myself but I didn’t, so thanks Recipease for all the little shortcuts I now cherish. Serves 4 (makes around 12) Prep time: 10 minutes Cook time: 5 minutes
Ingredients • Vegetable oil for frying (you won’t need more than 1 lt) • 2 carrots • 1 large red onion • 3 cm root ginger • Good handful of spinach, roughly chopped • 1 red chilli, finely chopped • 2 tbsp fresh coriander, roughly chopped • 1 tsp cumin seeds • 1 tsp turmeric • 1 tsp garam masala • ½ tsp hing/asafoetida (optional)
• Pour the oil into a large deep-lipped frying pan so it comes two centimetres up the sides. Gently heat it whilst you make the bhajias. If you are using a deep fat fryer, then set it to 180°C. • Grate the carrots, onion and root ginger using a cheese grater. Transfer them to a large bowl and add the rest of the ingredients. Scrunch all of the mixture together to release the moisture from the veggies. This will help it bind, but you can add a few tablespoons of water if you need to. You want it to be dropping consistency. • Test a little of the mixture to see if the oil is hot enough. It should sink and swim. Deep-fry the bhajias, in batches if you need to, until they are golden brown. Use around a tablespoon of the mixture and shape it into a ball before flattening it a little. This allows them to cook all the way through so you don’t end up with a doughy centre. You will need to flip them a few times to get an even colour. Drain on absorbent paper. • Serve with your favourite chutney.
My Secret:
Gram flour is chickpea flour and can be found in most supermarkets. It is gluten-free and used widely in Indian cooking, but if you don’t have any, then you can use some plain flour instead. Just add a little more turmeric to give the bhajias a good colour.

utabbal or baba ghanoush is a Levantine dish made from cooked aubergines and tahini. Traditionally baba ghanoush doesn’t contain tahini, where as Mutabbal does, but I like to add some to mine. The key to great flavour is in the way you cook your aubergines and I prefer to blacken mine, either on an open flame, or in the oven. It adds a wonderful smoky flavour to this delicious dip.

Preparation • Blacken the aubergines carefully poking holes in the skin and roasting in a preheated oven (200°C/400°F/gas 6) for 30 minutes, before turning the grill on high and charring the
skin on all sides. Instead you can blacken them directly over a flame until the skin blisters and start to flake. Allow the aubergines to cool before carefully removing the flesh and discarding the blackened skin. • Place the soft smoky aubergine in a bowl and mash it with the back of a fork. • Add the Extra Virgin Olive Oil, garlic, tahini, lime juice, mint and salt and mash together. Taste and adjust the seasoning if required. • Serve drizzled with more Extra Virgin Olive Oil and sprinkled with pomegranate seeds.

love greens. This recipe has become a firm favourite as the flavours liven up even the most boring vegetables. I love the deep earthy flavour in mustard greens but you can use any greens you like. The central core on some of the outer leaves can be rather woody, so just cut them out.
Ingredients • 400 g (14 oz) mustard greens, cut into large bite size pieces • 1 tbsp oil, I like rapeseed oil or light olive oil • 1 tbsp butter • 2 tsp black mustard seeds • 2 spring onions, finely sliced • 1 red chilli, seeds removed, finely sliced • 2 cloves garlic, finely sliced • Good pinch of salt and black pepper
Preparation • Blanch the mustard greens in boiling water for a few minutes before draining and running them under cold water to keep their colour. • Gently heat the oil and butter in a large pan and stir in the remaining ingredients. • Once the seeds start to sizzle, add the mustard greens and cook for a few minutes until steaming and wilted.

A
pple Tarte Tatin is on my foodie bucket list. It tops my list of favourite dishes of all time. The best I’ve ever tried is at a Michelinstarred restaurant in London called Galvin. I return time after time just for the escargots and the tarte tatin. They really are the best and I can’t help but smile every time I visit, as I know what delights are in store for me. I am using store bought puff pastry for this as it’s easier but feel free to make your own puff pastry if you like.
Ingredients • 200 g (7 oz) sugar • ¼ tsp cinnamon powder • 8 green cardamom pods, bruised in a pestle and mortar • 3 granny smith apples, peeled and cored and cut into 1 cm thick slices/wedges • ½ lemon • 100 g (3½ oz) chilled unsalted butter, cut into cubes plus extra for greasing trays • Pinch of freshly grated nutmeg • 300 g (10½ oz) store bought puff pastry, rolled to a few mm thick • Thick cream or ice cream, for serving
Makes 8 minis or 1 large if you prefer (feeding 6 people) Prep time: 10 minutes Cook time: 30 minutes
Preparation • Preheat the oven to 200°C/ 400°F/Gas 6. • Make the caramel for the apples by gently heating the sugar with the cinnamon and cardamom in a large frying pan. If you are making a large tarte tatin make sure your frying pan is oven-proof.
• Whilst the sugar is melting, rub the apples with some lemon juice to stop them from browning. • This bit is important – as the sugar melts it will start to turn golden brown. Don’t let it turn too dark or your caramel will be bitter. As soon as it is ready, turn down the heat and carefully beat in the chilled cubed butter. Place the apple slices in the pan whilst you get your puff pastry ready. • Generously grease a muffin tray (or cupcake tray) with butter. Use a cutter slightly larger than the size of the holes to cut out the puff pastry. Prick it a few times with a fork (this will stop it puffing up too much in the oven). • Once the apples have been steeping in the caramel for a few minutes, turn off the heat and carefully transfer them to the muffin tray, filling them two-third full. Spoon over a little extra caramel (be generous) and sprinkle over the nutmeg. Pop a pastry disc on top and carefully tuck the sides in so the apples are fully covered and snug in the tin. • Bake in the oven for 20 minutes or until the pastry is golden brown. Remove from the oven and leave to cool for a few minutes before carefully popping a plate on top of the tin and turning it all upside down so the tarte tatin releases itself from the pan. • The pastry should be at the bottom with the sticky spiced caramelised apples on top. You may need to tap the base of the tray to help them come out of the tin. • Spoon over a little extra caramel from the pan if you think it needs it, and serve with a good dollop of ice cold thick cream or ice cream. It’s heavenly!

ruit crumble is the ultimate comfort food and fond memories come flooding back every time I eat it. All too often there is never enough fruit and the crumble isn’t crunchy enough, so I’ve remedied it and this is my recipe for a sweet crumble loaded with sweet sticky apples topped with lots of crunchy nutty crumble.
Ingredients • ½ apple, I like braeburn, peeled, cored and cut into bite size pieces • Zest of 1 orange • Good squeeze of orange juice • 1 tbsp brown sugar • 20 g butter, cold and cut into small cubes • 40 g plain flour • 2 tsps oats (optional) • Good pinch of cinnamon powder (optional) • Few pistachios and hazelnuts, roughly chopped, or your fave nuts
Preparation • Preheat the oven to 200°C/400°F/gas 6. In an oven-proof dish/large ramekin, mix the apples with the orange zest, orange juice and half the sugar. • Make the crumble topping by rubbing the butter into the flour using your fingertips. When it resembles breadcrumbs stir in the oats (if using), cinnamon (if using), nuts and the remaining sugar. Sprinkle it evenly over the fruit and pop in the oven for 30 minutes. • I’m not a fan of custard so I serve mine with ice cold cream or ice cream, but do as you please.

tul Kochhar rose to fame as one the first Indian chefs to win a coveted Michelin star. The Indian born, British-based chef, restaurateur and television personality started his career in 1993, at the prestigious Oberoi hotel group in India. Working as a sous chef and supervising a team of 18, Kochhar was credited with significantly raising standards in the kitchen. This led to his move to renowned Hilton chef Bernard Kunig’s restaurant in 1994. Building on his fine-dining experience, later that year Kochhar made the move to London to open Tamarind restaurant. Kochhar’s timesaving tip: I buy well-scrubbed small new potatoes when cooking this dish, so all I have to do is quarter them. If your potatoes are larger, however, cut the potatoes into one centimetre dice so they cook quickly.

ere’s another variation of the curry house favourite, gobi aloo. This is from the coastal region of Bengal, and you might never have had this classic combination with pickling spices and final finish of fresh ginger. I think this makes a great vegetarian main course, served with parathas and rice, but it’s also good served alongside just about any roast meat, adding a bit of spice to a traditional Sunday lunch.
Ingredients
• 12 well-scrubbed small new potatoes (see tip) • 2 thin short green chillies • 2 garlic cloves • 2 tbsps mustard oil • 1¼ tsps panch phoron • 2 tsps ground coriander • ½ tsp red chilli powder, or to taste • ½ tsp ground turmeric • 425 ml water • ½ head of cauliflower, about 400 g • 1 lemon • 2 cm piece of fresh ginger • Fresh coriander leaves • Sea salt
Preparation • Quarter the new potatoes lengthways. Remove the stalks from the green chillies, if necessary, then halve the chillies lengthways. Peel and thinly slice the garlic cloves.
• Heat the mustard oil over a medium-high heat in the pan. Add the garlic and stir around to flavour the oil – it doesn’t need to colour. Add the green chillies and the panch phoron and stir until the seeds crackle. • Add the potatoes, ground coriander, chilli powder and turmeric. Season with salt and stir for 30 seconds to cook the spices so that the potatoes get coated. Watch closely so that the spices do not burn. • Stir in the water and bring to a boil. Lower the heat to medium, cover the pan and leave the potatoes to bubble for 12 minutes, or until they are three-quarters cooked. • Meanwhile, cut the cauliflower into small bite-sized florets, discarding the outer leaves and core. Squeeze one tablespoon of lemon juice. Peel and finely chop the ginger. Rinse and chop enough coriander to make about one and half tablespoons. Set all these ingredients aside separately. • When the potatoes are almost cooked, stir in the cauliflower florets and cook over a high heat for six minutes, stirring occasionally, until the potatoes and cauliflower are both tender, but the cauliflower is still holding its shape. • Stir in the lemon juice, one tablespoon of the ginger and one tablespoon of the chopped coriander, and adjust the seasoning with salt, if necessary. Sprinkle with the remaining ginger and coriander just before serving. 2019 VAISAKHI

It gives you all the wonderful onion flavour without having to spend the time peeling, chopping and then cooking the onion. I always have this in the fridge.

his very simple curry made with frozen mixed vegetables is typical of food from Kolhapur, Maharashtra, in that it is very hot and spicy. I serve this with parathas. Normally spices are toasted over a high heat to activate their natural oils and make them aromatic. Here and in other recipes that contain desiccated coconut I’ve specified to use a low heat. Always stir constantly and watch closely so that the coconut does not burn.

Ingredients • 2 tbsps vegetable oil • 2 tbsps onion paste • 1 tsp garlic paste • 250 g frozen mixed vegetables • 2 heaped tbsps Greek-style yogurt • 350 ml water • Sea salt
For the Kolhapuri spice powder:
• 2 large dried red chillies • 6 cloves • 1 cinnamon stick • A small blade of mace • 4 tbsps desiccated coconut • 1 tbsp coriander seeds • ¼ tsp black cumin seeds, or use ordinary • ¼ tsp black peppercorns
• First make the spice powder. Put the dried chillies into the dry non-stick pan over a low heat. Add the cloves, cinnamon, mace, coconut, coriander and black cumin seeds and peppercorns, and stir until they are aromatic and the coconut is lightly toasted. Watch closely so the chillies and coconut do not burn before the spices are toasted. Tip the mixture into the spice grinder and grind until a fine powder forms. Set aside. • Heat the vegetable oil over a medium-high heat in the sauté pan. Add the onion paste and garlic paste and stir them into the oil for 30 seconds. Add the spice powder and stir for a further 30 seconds. Watch closely so that the spices do not burn. • Add the frozen vegetables, season with salt and continue stirring until the vegetables start to thaw. Stir in the yogurt, then add the water, stirring to incorporate all the ingredients. Leave to simmer, stirring occasionally, for eight to 10 minutes until the gravy thickens slightly. The gravy will be quite thin at first, but it thickens as it simmers because the coconut in the spice powder absorbs the liquid. Adjust the seasoning with salt, if necessary.

Marinate the aubergine and pardon chilli in pickle paste, honey, lemon juice, salt, mustard paste and set it aside for six to eight hours. • Cook the aubergine and pardon chilli in an oven or tandoor at 165 degree C for 10 minutes and serve it with peanut chutney, pickled onions and micro herbs.

hef Kochhar’s delightful combination blends Western and Indian desserts together. The dessert is best served when the brûlée is firm.
Ingredients For the gulab jamun: • 9 tbsp milk powder • 3½ tbsp all-purpose flour • 1 tbsp rava/semolina/sooji • 1 tsp ghee • 1 tbsp ghee for greasing • 2 tbsp milk (use more as needed)

• ¾ tbsp lemon juice • 1 large pinch baking soda • Ghee for deep frying
For the sugar syrup: • 1½ cups sugar • 1½ cup water • 4 pods cardamom • 1 tsp rose water • Bit of lemon juice
For the brûlée:
• 1 lt whipping cream • 500 ml milk • 500 ml double cream • 430 g egg yolk • 280 g sugar • 8 ml vanilla essence
For the sugar syrup: • In a wide pan, take one cup of sugar. To that add one cup of water and get to a boil. Then simmer for four minutes till the sugar syrup turns slightly sticky. Now add cardamom powder, add lemon juice to stop the crystallization process. Cover and keep aside.
For the gulab jamun:
• In a large mixing bowl, take milk powder. To that add all-purpose flour and rava, then add a pinch of baking soda. Also add ghee, lemon juice and crumble well. • Slowly add milk little by little and knead well. Knead to a smooth and soft dough. Make small balls, greasing ghee to hands. Make sure there are no cracks on balls. • Heat the ghee on a low flame and when the ghee is moderately hot, fry the jamuns. Fry the balls on a low flame, stirring in between, until they turn golden brown. • Immediately, drop the hot jamuns into hot sugar syrup. Cover the lid and rest for two hours. The jamuns should double in size.
For the brûlée: • Heat the oven to 120 degree C fan 2. • Pour the whipping cream, double cream, milk and vanilla essence in a pan, and keep it aside. • Mix egg yolk and caster sugar in a mixing bowl and whisk for one minute until pale in colour and a bit fluffy. • Put the pan with the cream on medium heat and bring almost to the boil. As soon as you see the bubbles around the edges, take the pan off the heat. • Pour the hot cream into the beaten egg yolk, whisk as you do so. • Set a fine sieve over a large wide jug or bowl and pour the hot mixture through to strain it to void any lumps.
• Using a big spoon, scoop off all the pale foam that is sitting on the top of the liquid and discard it. Give the mixture a stir. • Pour in enough hot water into the roasting tin to rise about one and a half centimetres, up the side of the ramekins. • Pour the hot cream into the ramekins so that you fill them three-fourth. Place the gulab jamun in this and bake it for 30-35 minutes until the mixture is softly set. • To check, gently sway the roasting tin and if the crème brûlée are ready they will wobble a bit like jelly in the middle. Don’t let them get too firm. • Lift the ramekins out of the roasting tin with oven gloves and set them on a wire rack to cool for a couple of minutes
only, then put in the fridge to cool completely. This can be done overnight without affecting the texture. • When ready to serve, wipe round the top edge of the dishes, sprinkle one and half teaspoon of caster sugar over each ramekin and spread it out with the back of a spoon to completely cover. • Spray with a little water using a fine spray to just dampen the sugar – then use a blow torch to caramelize it. Hold the flame just above the sugar and keep moving it round and round until caramelized. • Serve when the brûlée is firm, or within an hour or two.

Ingredients • 125 g Jerusalem artichoke • 500 g artichoke • 30 ml tamarind chutney • 50 ml tomato chutney • 50 ml mint chutney • 50 g straw-fried potatoes • Micro cress for garnish • 50 ml sweet yogurt • 150 g pakoda batter
For the tamarind chutney: • 200 g seedless tamarind • 30 g whole garam masala • 80 g jaggery • 10 g dried red chilli To prepare: Boil everything together till thick consistency, blend it and strain it and cool it down.
For the tomato chutney: • 120 g shallots • 20 g channa dal • 10 g curry leaves • 255 g tomato • 20 g chilli powder • Salt as required • 20 g tamarind pulp • 55 ml oil To prepare: Heat oil in the pan, add channa dal, curry leaves, and shallots. Sauté it well on a small flame till shallots are cooked. Add chilli powder, salt, tamarind and cook it well. Lastly, add fine chopped tomatoes and cook further. Once it is cooked, cool it down, adjust the taste and later on make a fine paste in blender.
For the mint chutney: • 55 g mint

• 110 g coriander leaves • 10 g garlic • 10 g ginger • 15 g green chilli • 25 g yogurt • Lemon juice to taste • Salt to taste To prepare: Put all the above ingredients except lemon juice and yogurt in the blender and blend to a smooth paste. Then add yogurt and lemon juice and check the seasoning for taste.
For the sweet yogurt: • 110 g Greek yogurt • 25 g icing sugar • 40 ml milk To prepare: Add everything and whisk it to a smooth paste.
Preparation • Peel and cook the Jerusalem artichoke and artichoke and keep it aside. • Make pakoda batter by mixing gram flour, sparkling water, salt, chilli powder, turmeric powder, ginger-garlic paste to a thick consistency. Deep-fry the artichoke with pakoda batter and keep it side. • Make all the chutneys. Then assemble all the chutneys and rest the fried artichoke on a plate and garnish with microherbs and chaat masala.

very year, Sikhs all over the world celebrate Vaisakhi as the creation of the Khalsa. The Khalsa was a way to bring Sikhs together and become defenders of freedom in the quest to fight oppression. This was the

The Revival Sikh Heritage Month BC By Indervir Kaur
Sikh Heritage Month acknowledges the contributions and aspirations of Sikh Canadians while creating a greater understanding for the rich, unique and distinctive heritage of Sikhi. It aims to highlight contemporary talent in the Sikh community, creating a united artistic front for Sikhs.
I
n the month of April, the Sikh community will gather to celebrate Vaisakhi – formation of the Khalsa panth. During this time, Sikhs will be able to fully embrace their culture and heritage. By collaborating to provide space and opportunity to bring together all members of the Sikh diaspora, the Sikh Students’ Associations (SSA) of the University of British Columbia and Simon Fraser University aim to bridge the gap between modernity and heritage by hosting events throughout the month of April in honour of Sikh Heritage Month. Sikh Heritage Month (SHM) acknowledges the
contributions and aspirations of Sikh Canadians while creating a greater understanding for the rich, unique and distinctive heritage of Sikhi. SHM aims to highlight contemporary talent in the Sikh community, creating a united artistic front for Sikhs. The whole community comes together to express their culture through various mediums, including but not limited to, art exhibitions, workshops, and spoken word performances. SSA’s art exhibition – The Revival, featured the work of local artists, poets, musicians and authors, and was held March 3031. The Revival focused on how local Sikh-Canadian artists explore and reflect on their identities and seeks to bridge the gap between diasporic audiences and the classical Sikh arts. The event aspired to allow artists to showcase their work, while they explore different media and celebrate the growing Sikh arts community. Art by local artists were on display and up for auction. Historian and playwright Paneet Singh and Milan Singh will host “Histories, Mysteries and Mischief: A Walking Tour of Kitsilano” describing an era when sawmills and Sikh homes lined False Creek, and Sikh-Canadians faced key struggles such as retaining the right to vote, immigration reform, and labour unrest. Human rights advocacy group, the World Sikh Organization (WSO), hosts “KaursVote” to encourage the political participation of Sikh women at the local and national level. will host a #MeToo discussion. A Finale Gala on April 26 at Aria Banquet Hall will close off the month with a kirtan (poetry sung to music) on April 28. SHM allows the community to collaborate to preserve Sikh Heritage. Through partnered events, organizations and institutions work alongside SHM to provide space and resources to explore Sikhi. This year, SHM has partnered with: Sikh Research Institution, WSO, Guru Nanak Academy, Akaal Khalsa, Muskaan Foundation Canada, The Nameless Collective Podcast, and Gobind Sarvar. The partnered events allow the community to explore not only the history and heritage but also the accomplishments of those who have reached professional careers while keeping intact their Sikh values and principles. Public awareness videos will also roll out over digital platforms that are designed to educate and raise awareness of the diversity that exists within

the Sikh community, especially among those who chose to be visible Sikhs and wear the articles of the Sikh faith. The Sikh-Canadian community has a long and proud history since the first Sikh immigrants set foot on Canadian soil. From facing the hardships of being first-generation immigrants to making significant contributions to the growth and prosperity of the country, Canadian-Sikhs have created a dignified identity in Canada. Despite these sacrifices and contributions, Sikh-Canadian history is not often mentioned.

It is therefore at a risk of being lost or forgotten. SHM provides the community as a whole with an opportunity to recognize all those who have worked tirelessly to contribute to Canada. “Being a Canadian and a Sikh, I feel immense happiness with April being the Sikh Heritage Month. Sikh values of hard work, truth, love, respect, fairness, caring and sharing are similar to Canadian values. Events like these promote better understanding between humans of different faiths and cultures,” says Dr. Pargat Singh Bhurji. Along with the community, SHM will celebrate and educate future generations about Sikh culture and contributions by Sikh-Canadians. By highlighting the important and crucial roles that Sikhs have played and continue to play in the country’s development, SHM will foster pride within the Sikh community. It is our hope that Bill C-376 officially recognizes SHM throughout Canada to ensure that Sikh culture continues to thrive in Canadian culture. We hope to see the wider community join us to celebrate the accomplishments and build a relation through the sharing of recognition and appreciation of Sikh heritage.

he Vaisakhi Nagar Kirtan is a well-known public event held in April in Surrey and Vancouver each year, which celebrates the birth of Khalsa, or the Sikh community. It is also commonly known as the Vaisakhi parade where a large assembly of religious floats are organized to travel on a route around the city. Vaisakhi holds great importance among the entire South Asian community, as it represents the Spring harvest season. Vaisakhi also has a rich history which represents many

sentiments in the Sikh religion, including sacrifice, selflessness, courage and hope. It is a day to celebrate the Sikh New Year, and thus the community puts on a united front to show their devotion on the auspicious day. To celebrate, a full day of festivities is planned, which includes religious hymns being sung on nearly every float, martial arts performances, celebration booths and stages, and abundant food being served for free in pop-up tents throughout the route. Many members of the South Asian community dedicate their day to either serving the public by having a food stall of their own, volunteering their time to traffic control and clean-up, or

Although this is something to be incredibly proud of, there has been concern of how many of those people truly understand the importance of Vaisakhi, and how this event represents history

ensuring the event is a safe place for everyone. As a historically religious event, it is important for us as a community to recognize the sentiments and value that this event holds for the believers of the religion, which seems to be overshadowed at times by the other appealing factors associated with Vaisakhi. The true focus of Vaisakhi has shifted towards other aspects which also hold value, but perhaps divert our attention away from the main purpose. For example, many people are more concerned with the perfect outfit they need to pick out for the day, or how they can turn the event into a marketing strategy that ultimately benefits them. While these are valid in their own respect, they should not be taking over the core reason of why Vaisakhi exists. In our excitement, it is easy to want to contribute in our own ways, but as a community we need to take a step back to truly appreciate the tradition and historic value by giving it its own significance. As a multicultural nation, I feel that the greatest way to appreciate our diversity is to learn about the importance these culturally specific events hold for their respective communities. If we give importance and respect to their uniqueness, we will better understand the way these traditions create meaning and foster unity among others. This year, I would like to encourage you all to take a moment to think of Vaisakhi as not just a celebration, but a commitment to displaying culture and religion in a way that is inclusive, accepting and representative of the diversity that makes Canada so special.

We will be celebrating the 320th birthday of the formation of the Order of Khalsa this year. Our first nine Guru ji’s shaped us to being a human of the highest character and morality with qualities a saintly person possesses; it was the 10th Master who brought in the qualities to being a saint, soldier and scholar. Several months prior to the Vaisakhi of 1699, Guru Gobind Rai, our 10th Guru, invited followers from all over India to come to Anandpur Sahib. Many came as a sign of respect while some came out of curiosity. On that Vaisakhi day, Guru ji addressed the congregation with the most stirring oration on his divine mission of restoring their faith and preserving dharma (righteousness). After his inspirational discourse, Guru ji flashed his sword naked and asked “Is there any one among you who is prepared to die for righteousness?” This caused 2019 VAISAKHI

great turmoil and confusion. Some left while others began to look at each other in amazement. It was a crowd of 80,000 people. A brave Sikh from Lahore, Daya Ram, stood up and offered his head to the Master. The Guru took him to a tent near by, after some time he came out alone with a blood-dripping sword. The Guru then asked for another head. Dharam Das was the one to obey the order. This act did not end there. Soon three more, Mohkam Chand,

Guru Gobind Rai then stood in front of these Panj Pyare asking for him to be baptized, hence changing his name from Gobind Rai to Gobind Singh. “Waho Waho Gobind Singh Ji Apey Gur Chela Apey Gur Chela.” This created equality, democracy, common place of worship, common external appearance with bhakti and shakti. The creation of Khalsa starts with the founder of Sikhism, Guru Nanak Dev ji, who also says “Jo To Prem Khelan Ka Chaao Sir Dhar Tali Gali Meri Aao.” If you
want to walk on the path of love then put your head on our palm and walk towards me (Remove one’s ego). It took 240 years through the 10th Guru ji to create the perfect image of saint, soldier and scholar called Khalsa. Guru ji prescribed Rehat Maryada, the Code of Conduct. “Rehni Rahe Soi Sikh Mera, Oh Sahib Mein Us Ka Chera.” In Surrey and Vancouver, Sikhs are blessed to have the yearly Nagar Kirtan where hundreds of thousands attend as devotees. This is Guru ji’s mehar.

Sikh Gurus
T
he word ‘Guru’ in Sanskrit means teacher, religious person or saint. However, in Sikhism, ‘Guru’ refers to the descent of divine guidance to humankind provided by the ten enlightened masters. These ten Sikh Gurus founded the religion, starting in 1469 with Guru Nanak and ending with Guru Gobind Singh in 1708. After that, it refers to the Sikh Holy Scriptures as Guru Granth Sahib. The Gurus are widely regarded as the embodiment of one guiding light which passed from one Guru to the next, and which now resides in the Holy Scriptures. The order of the ten enlightened Gurus is as follows:
Guru Nanak Dev (1469 to 1539) Founder of Sikh faith; apostle of peace, unity and true infinite; possessed divinity and religious authority; first Guru of modern thinkers in India; created Langar, free kitchen, for all people; teachings are in the Guru Granth Sahib; his philosophies and teachings were enlightened for his time, he criticized the social, political and religious injustices; advocated for equality between men and women; instructed disciples to face and tackle oppression, he knew this couldn’t be accomplished in his lifetime, so he appointed the practice of successors to lead Sikhs in their spiritual mission
