A self-confessed feminist, Swara has carved an impressive niche for herself in the Hindi film industry with her memorable and powerpacked characters — in both art-house and commercial movies. By Shweta Kulkarni

napologetically fearless, the firebrand actress Swara Bhasker is no less of a phataka in reel life as well as real! While as a powerhouse performer, she has effortlessly walked from one diverse role to another on-screen, off-screen the gutsy gal never shieds away from speaking her mind when the need arises. Even if it means getting constantly subjected to trolls and haters on the internet. A self-confessed feminist, Swara has carved an impressive niche for herself in the Hindi film industry with her memorable and power-packed characters — in both art-house and commercial movies. From playing the unconventional friend – Payal to Kangana Ranaut’s character in the Tanu Weds Manu franchise to the determined household help Chanda of Nil Battey Sannata, who was willing to go to any length to educate her daughter… To the outspoken and
bold Sakshi of Veere Di Wedding, who seamlessly brought to the commercial screens the subject of women’s sexual desire, to portraying a smalltown dancer in Anaarkali of Aarah – Swara has portrayed each character unabashedly, giving the audience a glimpse of her versatility. Currently, gathering praises from all quarters for her recently released web-series – Flesh and Rasbhari, Swara is now all set to wow the audience yet again with another OTT serving - Bhaag Beanie Bhaag. As the festive season sets in, Darpan caught hold of the feisty actress amid her busy schedule to talk about the festival of lights, her fondest memories of Diwali, her journey to B-town and her upcoming projects. Excerpts from the interview:
The festival of lights is finally upon us, what is the significance of Diwali for you? Diwali's significance for me will always be a reminder that we can find light and happiness even in the darkest of times. The festival brings people together and there is always hope for a better future. Diwali is all about spending time with your family and loved ones, bingeing on delicacies, lighting up the house…
What do you like the most about the festival of lights? Diwali has always been such a special day for me and my family. More than anything, I think it is about making memories. The festivity, the food, the bonding and the joy Diwali brings, is something very close to my heart.

Like you mentioned, the festival of Diwali is about making memories, can you share your fondest memory of the festival? There are so many memories of Diwali that it is difficult to pick one over the other. But I think decorating the house every year with my family brings a strong sense of nostalgia for me.

How would you define your professional journey, from doing plays in Delhi to carving a remarkable niche for yourself in the entertainment industry? It has been fun and satisfying so far, but I have miles to go and so many more characters to explore. I have been very grateful that the audience has loved my work and that has only encouraged me to work harder and continue entertaining them as long as I can.
What has been the most defining moment of your career? I loved the response both Flesh and Rasbhari got! It goes on to say so much about the changing demand of the audience. They were two very different characters and I am very grateful to the audience for loving them and giving so much admiration!
Can you share a little bit about your upcoming show Bhaag Beanie Bhaag and elaborate on the character you play in the series? I play a stand-up comic in the show. There has never been a story on a female stand-

up comic and it has a very interesting sketch to it. I am sure that the audience will love this new angle to a female stand-up comic life.
You made your web debut in 2016, and now you have more web projects lined up‌ Are you enjoying being on the OTT space? Absolutely! It's a new kind of storytelling and has a lot of new things to offer. It is challenging and exciting at the same time and it gives a great deal of satisfaction to an actor.
The most defining moment of my career was playing Anaarkali of Aarah.
As a creative person, what are your strongest and weakest points? My strongest point is being able to connect emotionally with every character I play and my weakest point is lack of discipline.

Do a driving parade Since visiting friends and having parties can be difficult this year, the idea for the year is to get on a car parade. What is that? Remember how kids graduated this year? A significant religious festival in Indian culture, Diwali sees millions attend firework displays, prayers and celebratory events across the world on this day every autumn. Diwali is also celebrated in a big way by the diaspora in Britain, the USA, Canada, Australia, Bangladesh, Bhutan, Thailand, New Zealand, Tanzania, South Africa, Netherlands, Canada, and Ireland.

Diwali holds significance not only for Hindus but also for followers of Sikhism and Jainism. Sikhs celebrate it as Bandi Chhor Divas (Prisoner Release Day) to

commemorate the release of their sixth guru, Guru Hargobind along with 52 Rajput princes from Mughal Emperor Jahangir’s custody. Celebrations include lighting of candles at
gurdwaras, singing shabads (sacred songs) in praise of the Guru, langar (free meal served to visitors at community kitchens in gurdwaras), and bursting of fireworks. Jains celebrate it as the day when the 24th and last Jain Tirthankara Lord Mahavira, attained Moksha, that is, liberation of the soul. Lord Mahavira attained Moksha at Pawapuri in the Nalanda district of Bihar at the dawn of the Amavasya (new moon). The presence of many Gods on the occasion illuminated the darkness. The following night was pitch-black, so people light up their houses to symbolically keep the light of their Master’s knowledge alive. The five-day Festival of Lights coincides with the Hindu New Year. Dhanteras marks the beginning of the five-day festivities.

iwali is most commonly known as “The Festival of Lights” by people all across the globe, yet often the reasoning behind the significance of lights at this time of year is unknown by many. Various cultures and religions come together to celebrate this auspicious festival in their own unique ways, but the use of light is common to all, as it is considered to be a way to eradicate the world of darkness and despair. Let us now embark on a cultural journey, where Diwali serves a
different purpose and reason to celebrate this light festival. In the Sikh religion, Diwali marks the day the religion’s sixth guru, Guru Hargobind Singh Ji, and 52 other kings were released from prison. Guru Hargobind Ji was able to devise a clever scheme in which all 52 kings could grab hold of his cloak, in order to be freed, as ordered by the emperor who had imprisoned them. Once Sikhs learned of the incredible feat, the Golden Temple was lit up with many lights and candles to welcome them back, and that soon turned into a tradition still celebrated today. Each year, not just the Golden Temple is decorated in lights, but Sikh temples around the world do their part to bring in extra light on Diwali, and remember the auspicious day which signified freedom back in the year 1619. In the Hindu religion, Diwali surprisingly has more than just one purpose for celebrating it. In West Bengal, Odisha and Bangladesh, for instance, those who are avid worshippers of the goddess Durga celebrate Diwali as a way of welcoming Maa Kali, which is the goddess’ avatar. These festivities continue for three days, and people bring sculptures of the goddess Durga to their homes and nearby temples, where offerings of flowers, sweets, food and sacrificed animals are made. In West Bengal, these prayers and offerings are often made at night

In order to receive her blessings, along with good health and wealth for the year, families work hard to clean and decorate their homes in preparation for her arrival. or ‘diyas’, waiting for the goddess to arrive. Sweets are exchanged amongst families, and once prayers are offered, fireworks light up the night skies in every neighbourhood. Constellations and stars also have a significance in determining the timing of the Lakshmi Puja, so people look out for constellations such as Libra that night, which symbolizes balance and stability. In Trinidad, Diwali is celebrated for the longest
time – nine days! Since many Indians were forced to become slaves and move to Trinidad in the 19th century, Diwali marks a time they celebrate their independence and freedom. Diwali has also been turned into a national holiday in Trinidad, and is known as ‘Divali’, the celebration of good winning over evil, and spiritual darkness being eradicated. Thus, it is celebrated in nearly every household, and not just as a religious holiday. When we think of light, we automatically think of its brightness, and how it brings a sense of joy or comfort which makes us happy. Similarly, during Diwali, people light many candles, fireworks and lanterns to spread the feeling of joy they get when they celebrate the happy festivities of the occasion. As this tradition continues, take time to spend it with loved ones and also remember the deep historic roots which encourage us to bring more light into our world on this special day.

iwali, annually falling between mid-October to mid-November, is celebrated in many ways and by millions of people from all walks of life. It has its roots in drastically broad cultural and religious values.
Diwali is one of the most prominent holidays in Hinduism. It relates to the Hindu epic, Ramayana, which centers around Prince Rama, the avatar of Vishnu. Diwali celebrates the day of the return of the beloved Prince Rama from a 14year exile, after the defeat of the demon king Ravana. The people of Ayodhya lit up the streets with lamps and fireworks, welcoming their prince home. The day is also associated with

whom symbolize the victory of good over evil. Diwali, or more commonly called Bandi Chhor Divas in Sikhism, is celebrated for similar circumstances as Diwali for Hinduism. The day marks the release of the sixth guru, Guru Hargobind Ji, from the Gwalior Fort prison, along
Lakshmi, the wife of Vishnu and the goddess of wealth and prosperity. Several customs such as cleansing of the home, Lakshmi puja, and setting up plates of sweets for the goddess are often followed. Hindus of eastern India may associate the day with the goddess Durga, while others in northern India might associate it with Krishna, both of

with 52 other newly freed kings, by the Mughal emperor Jahangir. However, what many may not know is that the importance of Diwali for Sikhism actually goes further back. The third guru, Guru Amar Das Ji, had built a well in Goindwal with 84 steps, a famous place of pilgrimage even now, and invited Sikhs to bathe there on Vaisakhi and Diwali. Moreover, Diwali also relates to two other key events in Sikh history; it is the day of the founding of the city of Amritsar, and Bhai Mani Singh’s martyrdom was brought on by a failure to pay a fine imposed in 1738 for celebrating Diwali, and his refusal to convert to Islam. Several deities in the Vajrayana Buddhism are worshipped and Lakshmi is also offered prayers. In Jainism, Diwali is observed for ‘Mahavira Nirvana Divas’, in remembrance of the physical death of Mahavira. There are some similar practices to Hinduism in which the customs include the lighting of deva and praying to Lakshmi. The focus, however, remains on Mahavira. According to Jainism, the tradition of the lighting of the lamps began at the passing of Mahavira. The 18 kings who had gathered started the practice in remembrance.
Diwali has another, more westernized definition as well; the Festival of Lights, which aptly captures the hope and goodwill attached to the many interpretations. Additionally, despite these different interpretations, Diwali is centered on a very fundamental concept of the victory of good over evil. There is a common theme of righteousness and of overcoming the darkness in whatever form it might take in our lives. Diwali helps remind those who celebrate it, that despite their differences, they share a respect for a strong moral code, that resonates across cultures.

he festival of lights aka Diwali aka one of the most celebrated festivals in India is fast approaching. But 2020 has put a full stop on all the celebrations, and so we have to come up with new ways to enjoy the festivities. If one was to go by the mythological texts then Diwali is all about good taking over the bad, and with that hope we will be embracing the festivities this year, albeit a little differently. Add salt, chaat masala, remaining fresh coriander, green chillies, cooked potatoes and crushed fried papad. Mix well. • Stuff the potato shells generously with the cottage cheese mixture. Put the stuffed potatoes into the yogurt marinade and mix well with a light hand. Leave to marinate for about thirty minutes. • Preheat the oven to 180ºC/350ºF/Gas Mark 4. Grease a baking tray. • Arrange the stuffed potatoes on the baking tray and bake for 15 to 20 minutes. Serve hot.

• 1 inch cinnamon stick • 1 medium onion, sliced • 8 garlic cloves, chopped For spinach covering: • 1 inch piece ginger, • 2 small bunches (500 grams) chopped fresh spinach leaves, blanched, • 1 tsp turmeric powder drained and pureed • 5 medium tomatoes, halved • 2 tbsps butter • ½ tbsp red chilli powder • 1 tbsp caraway seeds • Salt to taste • 5 garlic cloves, chopped • 1/3 cup butter • 1 inch ginger piece, chopped • ¼ cup broken cashewnuts • 2 tsps green chilli paste • 1½ tbsps dried fenugreek • 1 tsp cardamom powder leaves (kasoori methi) • 1 tsp coriander powder • ½ tbsp green cardamom • 3 tbsps cashewnut powder powder • Salt to taste • 8 tbsps roasted chana powder • 1 tsp honey • Cornflour for dusting
For kofta : • ½ cup grated cottage cheese (paneer) • ¼ tbsp green cardamom powder • ¼ tbsp white pepper powder • Salt to taste • ¼ tbsp cornflour • Oil for deep frying
For gravy : • ¼ cup oil • ½ tsp caraway seeds • 2 cloves • 2 black cardamoms • 10 green cardamoms
• For the kofta filling, mix together the cottage cheese, cardamom powder, white pepper powder, salt and cornflour and mix well. Divide into eight equal portions and roll into balls. Keep them in the refrigerator till required. • For the gravy, heat the oil in a deep non-stick pan. Add the caraway seeds, cloves, black cardamoms, green cardamoms, cinnamon, onion, garlic, ginger and turmeric powder and sauté for five to seven minutes. • Add the tomatoes, red chilli powder, salt and one cup water and cook, stirring for five minutes. Add the butter, cashewnuts, dried fenugreek leaves, green cardamom powder and honey and mix well. Let the gravy simmer for 10 to 15 minutes on medium heat. Set aside to cool. Grind and strain the gravy into a bowl and discard the residue.
• To make the koftas, heat sufficient oil in a kadai. Divide the spinach mixture into eight equal portions. Preparation • In a vessel take the leftover mithai, add milk and blend well. • Now for assembling, take a tall glass. Drop in the mithai pieces in. Top it up with flavoured sev and pour in the rose syrup. • Now pour in the prepared mithai milk. Add a layer of sabja seeds over it. Sprinkle sliced almonds and pistachios. • Drizzle rose syrup on top

Ingredients • 1 cup gram flour
• ¼ tsp black pepper powder • ¼ tsp turmeric powder • 1 tsp red chili powder • ½ tsp garam masala powder • A pinch of asafoetida (hing) • Salt, to taste • 1 tbsp ginger juice • 1 tbsp oil for kneading + for deep frying
Khara Sev Preparation • In a mixing bowl combine all of the gram flour, pepper powder, turmeric powder, red chili powder, garam masala powder, asafoetida and salt. Mix well. • Heat one tablespoon of oil and add it to the gram flour mixture. Mix till you get a crumbly texture. Add ginger juice and water to make a soft dough (it will be sticky, so grease your hands). • Heat oil in a kadai for deepfrying.
• Grease the sev mould. Stuff a portion of dough in the mould and hold it above the kadai and start pressing it so the sev directly goes into the hot oil. • Press it in the circular motion and when it is enough cut with scissors. Fry till golden brown and crisp in texture. Remove with perforated spoon and drain excess oil. Repeat with the remaining dough. • When it cools down crack the sev in small pieces and serve or store in an airtight container.

Ingredients
• 40 g baby spinach, really roughly chopped • 50 g gram flour • 1 tbs cornflour • 1/3 tsp salt • 3/4 tsp coriander powder • ½ tsp chaat masala • 1/8 tsp turmeric powder • 1/8 tsp red chilli powder or to taste • A good pinch of carom seeds (leave out if you don’t have any)
• Sev or pomegranate seeds to garnish (optional)
Preparation • Mix together the dry ingredients for the spinach. Add in four teaspoons of water and stir well to mix. Add the spinach and stir well to mix. It will be a bit gloopy.
• Heat a large wok or karahi with 3-4” oil. When the oil is hot around 180 °C, take walnut size balls with your hands and To serve: flatten so they are about 1-1½ • 150 ml Greek-style plain cm thick. • 1 tsp rose syrup • 2 ½ tbs vegetable oil • 550 g chestnut mushrooms, cleaned and finely chopped • 1 small-medium red onion, finely chopped • 1 rounded tsp fresh black pepper or to taste • 6 fat garlic cloves, finely chopped • 1 ½ tsp cornflour, mixed into a slurry with 50 ml water 25 ml dark soy sauce • 12 g finely chopped ginger • 3 tsp white or red wine vinegar • Small fistful of fresh chopped coriander • 2 small spring onions, chopped • 4 tbs finely chopped green pepper
• 4 ½-5 ½ tbs cold water

• Make the filling first. Heat the oil in a small medium sized non-stick saucepan. Add the onion and some salt and fry until soft and colouring at the edges. Add the ginger and garlic and cook for 40-50 seconds or until the garlic is cooked through. • Add the mushrooms and soya sauce and cook until the mushrooms release water and then it dries up. Add the vinegar, black pepper and cornflour slurry and cook for three to four minutes or until there is no more moisture in

Taking one at a time roll into 2 ½-3” diameter circles using a little extra flour. • To make the momos, I place the wrapper in my left hand and spoon in 1½ teaspoon of the filling (around 15 g) in the middle. • Then making sure the filling stays away from the edge, with my right hand I seal the tops together, making little pleated folds along the way and then make sure the edges are properly sealed. You basically need to enclose the filling in the dough without any tears; you can do it any way which feels easy. • Oil the surface of your steamer or some greaseproof paper. Arrange the momos on the oiled surface as you make them leaving some space between them as they expand a little. Cover and steam on a rolling boil for 11-13 minutes. • Serve hot with the spicy tomato chutney or some simple soya sauce in which you have sliced some green chillies and added some finely chopped ginger.

• Preheat the oven to 425°F. Place the potatoes on a baking sheet and bake for 45 minutes, or until they can easily be pierced with a fork. Let the potatoes cool until they can be handled. • Without cutting all the way through to the bottom, slice each potato into four sections. Use your hands to push down and pull apart the four sections, like a blooming flower. Sprinkle a pinch of salt on top of each potato, followed by one tablespoon of the sour cream. Evenly divide the

T
he quinoa grains turn soft and silky, adding a hint of nuttiness to the kheer. They also do an even better job than rice of soaking up the cardamom flavor. Start to finish, this takes about as long as an episode of TV to make, so now you have something to do while you stir! Kheer can be eaten warm or cold, but I like it straight out of the fridge, as it has more thickness and body when chilled.
Ingredients • ½ gallon (2 quarts) whole milk • ½ cup dry (uncooked) white quinoa, rinsed and drained • ½ cup granulated sugar • Seeds from 5 green cardamom pods, crushed into a powder, or 1¼ teaspoons ground cardamom (freshly ground is best) • 2 tbsps roughly chopped unsalted pistachios, for garnish
• Evenly coat the bottom of a large pot or Dutch oven with two tablespoons water (this will prevent the milk from sticking to the bottom of the pot). Pour the milk into the pot and bring it to a boil over high heat. Watch the milk very closely — as soon as you start to see bubbles forming, reduce the heat to low (otherwise, the milk will boil over!). • Add the quinoa. Increase the heat to medium and cook, stirring continuously, for 15 minutes, then increase the heat to medium-high and cook, stirring continuously, for 30 to 35 minutes more, until the milk resembles heavy cream (it should be thick enough to coat the back of a spoon) and the quinoa is fully cooked. Don’t worry if there still seems to be a lot of milk left — it’ll soak into the quinoa as the kheer cools. • Stir in the sugar and cardamom and let the kheer cool to room temperature. Transfer to a bowl, cover with plastic wrap, and refrigerate overnight or for up to 12 hours — it should resemble a loose rice pudding. • 2 tbsps poppy seeds, soaked in water for 2-3 hours • 1 tbsp mustard oil • ½ tsp nigella seeds (kalunji) • A pinch of turmeric powder • 2-3 green chilies, cut lengthwise • 1 large potato, cut into cubes •1 small ridged gourd, cut lengthwise into 2-inch long pieces • 1 tsp salt • ½ tsp cumin powder

Preparation • Drain the poppy seeds and grind them to make a fine paste. • Put the oil in a pan on moderate heat. When hot, add the nigella seeds, turmeric powder, green chilies and poppy paste. Sauté for a few moments, till fragrant. • Add the potato and sauté, till half cooked. Stir in the gourd and simmer till the potatoes and gourd are three-quarters cooked. • Add the salt and cook till the vegetables are tender.

Ingredients • 2 tbsps ghee
•400 gms khoya/mawa, crumbled • 1 cup condensed milk • 1 tsp green cardamom powder
• Return one half of the khoya to the same pan and add the saffron along with the milk it was soaked in. Cook on low heat, stirring continuously till the mixture comes together. Remove from heat and set aside.
• Line a square mould with enough cling film • 8-10 saffron strands, to hang over the sides soaked in 2 tbsp warm milk of the mould. vocados are slightly high in fat but their fibre content helps in burning fat too. They are known as Mother Nature’s moisturisers and help reduce signs of aging, regulate blood sugar and promote eye health.
Ingredients • 4 ripe avocados • ½ cup fresh mint leaves • 3 green chillies, seeded & chopped • 2 tsps salt • 1 tsp freshly ground black pepper • ¼ cup vegetable stock •1 cup whipping cream •2 tbsps lime juice
For the garnish • Tortilla Chips
Preparation • Cut the avocados and discard the seeds. Scoop the flesh into a food processor. Add the mint leaves, green chillies, salt, pepper and stock and blend, till smooth. Press the purée through a strainer into a bowl to remove all lumps. •Stir in the cream and lime juice and adjust seasoning. Keep in the refrigerator to chill. This is a vegetarian appetizer made from black-eyed peas
Ingredients • 2 cups black-eyed peas • 7 ½ cups water, divided • ½ cup diced onion • 2 tsps green chili puree • 1 tsp garlic puree • 1 ¼ tsp salt • ¼ tsp turmeric • 1 cup chopped coriander • Canola oil for deep frying
Preparation • In a large bowl, add the black-eyed peas and seven cups of water and let soak overnight. Strain the water

from the black-eyed peas and rinse, removing all water. • Place the black-eyed peas in a blender or food processor with one-fourth cup of water and all remaining ingredients except the coriander and oil. Puree, adding an additional onefourth cup of water if needed. • After the mixture is blended, place in a mixing bowl. Add the coriander and stir to combine. • In a pot, heat oil over medium heat. Take two tablespoons of the blackeyed pea mixture and form a ball in your hand. Flatten slightly to form a small patty.

Ingredients • 1 tbsp (8 g) shelled raw pistachios • 2½ cups water • 1 cup chopped beets

If you want to seriously impress, this appetizer is the one to make. The rosette shape is created with a handheld rosette waffle iron.
• 1 cup gram flour • ¼ cup chopped coriander • 1 egg • 1 tsp salt • ½ tsp garlic puree • Canola oil for frying
Preparation • In a saucepan, bring two cups of water to a boil. Add the beets to the saucepan and cook for about 20 minutes or until the beets are tender. Remove from heat and let the beets and water cool.
• Place the cooled beets and water from the saucepan into a blender. Add half a cup of cold water to the blender and puree. • In a mixing bowl, combine the gram flour, coriander, egg, salt, garlic puree, and pureed beet mixture. • In a small pot, heat oil over medium to high heat. Place the waffle iron into the pot to heat for one minute.
• Holding the handle of the waffle iron, dip the iron into the batter, ensuring it does not go above the edges. Hold it in the pot of oil for about 30-50 seconds or until the batter is cooked. • If the rosette is detached from the waffle iron, remove it and place on a paper towel–lined tray to absorb the excess oil. If it did not detach, remove the rosette by gently prying it off with the tip of a knife and place on the tray.

Ingredients • 1 cup corn kernels • Salt to taste • ¼ tsp red chili powder • ½ tsp chaat masala • 1 tbsp olive oil
Preparation Heat a deep non-stick pan. Place corn kernels in a bowl. Add olive oil and mix well and put into the hot pan. Add salt and red chili powder and mix. Cover and let the corn splutter and pop. When all the corn has popped, sprinkle chaat masala and toss.

• 4 gms red chili powder
• 3 medium potatoes, boiled, peeled & shredded
• 6 gms paprika
• 84 gms panko (bread crumbs) • 1 tsp red chili powder

Preparation For the Black Eye Pea Croquettes: • Soak black-eyed peas overnight. Boil them until tender and cool the next day. In a robot coupe, pulse peas, peppers, onion, jalapeno, ginger garlic and lemon. Remove and mix in the bread crumbs with the spices. Portion 1.5 oz balls with a disher and coat each piece with breadcrumbs. Deep-fry at 350 degrees until golden brown, for approximately 3 minutes.
For the Byadagi Aioli: • Combine all ingredients and blend thoroughly.
For the Jaipur Slaw: • Combine red cabbage, carrot, mint and cilantro. Season with salt, dress ala minute with lemon dressing.

Preparation • Toast the pistachios, almonds and cashews in a small non-stick skillet over medium heat for four minutes. Pour into a bowl to cool. W
hen I was younger my grandma would bring me a Fudgsicle when she would pick me up from school during the summer. We’d walk home hand in hand enjoying our frozen treats. When she got older, she moved to India and whenever I would visit her, she would give me money to sneak away and pick up an ice cream for us from the corner store. Our little secret inspired this kulfi recipe, which uses the traditional method of boiling full-fat milk down until it is thick and creamy.

Makes 6 to 10 servings, depending on the size of the mold
Ingredients • 4 cups (960 ml) whole milk • ¾ cup (180 ml) heavy cream • 2/3 cup (115 g) high-quality milk chocolate morsels • ¼ tsp salt • ½ tsp ground cinnamon • ¼ cup (40 g) roasted unsalted almonds, finely chopped Photo courtesy of Hetal Vasavada
• Add the milk, heavy cream, chocolate, salt and cinnamon into a heavy-bottom saucepan over medium-high heat. Stir continuously until the milk comes to a boil, about six minutes. Simmer on low heat for 30 minutes, stirring often. Make sure to keep an eye on the milk as it might overflow. • Add the chopped almonds and simmer for an additional five minutes. The mixture should be thick enough to coat the back of a spoon. Pour the mixture into ice pop molds and freeze for at least five hours. Set the kulfi out on the counter for five minutes before unmolding. Note: To make a no-mess, no-drip version for your kids, use a block of Abuelita Mexican chocolate instead of regular chocolate. It contains carrageenan, a thickener made from seaweed, which prevents the kulfi from dripping all over the place!

• 1½ cups + 3 tbsp mawa/khoya • ¼ cup chenna • 2 oranges, sliced • ¼ cup orange marmalade • 1 cup sugar • 2-3 cloves • 1 inch of cinnamon • A pinch of saffron • ¼ tsp soda bicarbonate • 3 tbsp refined flour • ¼ tsp green cardamom powder • Rice bran oil to deep-fry

• Grate one and a half cups of khoya and chenna into a deep mixing bowl and mix well. Add soda bicarbonate, refined flour, green cardamom powder, and little water to make a soft dough. Cover and rest. • To make the stuffing, grate the remaining khoya into another bowl, add orange marmalade and mix well. Divide this mixture into 16 equal portions. • Divide the dough into 16 equal portions and shape them into balls. Flatten each ball on your palm, place one portion of khoya-orange marmalade mixture in the center, bring in the edges together and press lightly to seal. Shape them into smooth balls.

Ingredients • 1 cup leftover cooked basmati rice • ¾ cup leftover dal • 1 yellow or red bell pepper, finely chopped • ¼ cup green peas • 2 carrots, peeled and finely chopped • 1 tsp garlic, crushed • 1 tsp ginger, crushed • 2 tsp cumin seeds

• 1 tsp red chilli powder • ½ tsp cumin powder • ½ tsp turmeric powder • ¼ tsp garam masala powder • ½ cup breadcrumbs + to roll • Salt to taste • Black pepper powder to taste • Rice bran oil to deep-fry • Chaat masala to sprinkle • A few leaves of lettuce • ½ cup tomato salsa
Preparation • Put rice, dal, bell pepper, green peas, carrots, crushed garlic, crushed ginger, cumin seeds, red chilli powder, cumin powder, turmeric powder, garam
masala powder, half cup breadcrumbs, salt, and black pepper powder in a large mixing bowl and mix well. • With dampened hands divide the mixture into 15 equal golf-sized balls. Roll each ball in breadcrumbs and shake off excess. Keep them on a plate and in a refrigerator for half an hour. • Heat sufficient rice bran oil in a deep pan, gently slide in the arancini (balls) and deep-fry till crisp and golden brown. Drain on an absorbent paper. • Place lettuce leaves on a serving plate, place the arancini over them, sprinkle some chaat masala and serve hot with tomato salsa.

Ingredients • 1 cup grated dark chocolate • 1½ cups refined flour • 4 tbsps + 1 tsp castor sugar • 2 tbsps ghee
• Combine chocolate and pistachio in a bowl. Mix well and add one tsp castor sugar and mix well. • Divide the dough into eight equal portions and roll out into medium size rotis. Cut the rotis into halves.

• 15 gm coriander, finely chopped • 5 gm green chillies • 5 gm ginger • 4 garlic pods • 5 gm turmeric powder
• 5 gm curry leaves, finely chopped
• 10 gm red chilli powder
• 50 gm onion, finely chopped
• Oil for deep frying
• Salt to taste
• Meanwhile, heat oil for deep frying in a kadai. Add all the remaining ingredients along with the ginger-garlic-green chilli paste to the oats mixture and mix well. • If required you can add little hot water, the consistency of the mixture should be like onion pakoda mixture. • Drop the mixture in or shape them into small balls and drop them into hot oil on medium heat. Fry the fritters till golden brown. • Serve them hot or warm with tomato ketchup/chutney.
