W
HEN a story about the Dolphin Coast Landfill Management operation appeared in the North Coast Courier a few weeks ago it caught my attention. The article was fairly light on detail but it covered a tour of the facility by some prominent opinion shapers in the community like my friend Cobus Oelofse, CEO of the Ilembe Chamber of commerce. By all accounts the delegation was thoroughly impressed by the landfill site and the company that manages it. This was interesting, but hardly the stuff that makes for a riveting read when there are real social, economic and political issues begging for media attention here.
But it began to make sense in the light of a horror story that played out over several years at Shongweni. This was the saga of toxic gases and other pollutants that significantly affected property values not to mention the health and wellbeing of local inhabitants of the area. Due in no small measure to a massive amount of community activism, the operations at the Shongweni landfill site were suspended by the Department of Environmental Affairs in April by order of court with the suggestion from community activists there, that the problem matter be relocated to somewhere like KwaDukuza. Could it be that in a gauche kind of Bell Pottinger–style spin we were being primed to accept the arrival of the toxic waste that had created so much fuss down the road? Being considered naïve in these matters, we might have been subjected to even more editorial wonder of this kind had the issue not raised an eyebrow or two. There was, according to the article in question, an entire
series of exciting local landfill stories planned for subsequent issues. When I raised my concerns along these lines in our previous issue of Life & Style, it prompted a considerable measure of public reaction leading to a revelation in a subsequent issue of the Courier that we had indeed become the recipients of the toxic waste that had caused so much fuss down the road. And we are now receiving regular deliveries. I received a lengthy missive from Di Jones of the Dolphin Coast Conservancy circularised to her membership to “mitigate the sense of panic” that she intimated we had been partially responsible for causing in this regard. One line in her letter struck me as particularly interesting: “I think we should be thankful to have a landfill that lives up to the best standards in the world.” I have a huge amount of respect for Di and her conservancy interests but I think that she may have missed the point here. The modern lifestyle sadly generates copious quantities of waste. This needs to be responsibly managed and to this effect, having a well operated local landfill site close by is indeed a win. But domestic refuse and organic waste is hardly likely to cause the extreme reactions seen in Shongweni. The hazardous waste dumped there, and now arriving here, is much more toxic in every respect. Tankered in from distant mining operations and similar dangerous compound producing industries, this is a lethal cocktail the likes of which we have not seen here before. Di says that the DCLM site is world class, but so was SAA, the SABC, The Natal Parks Board and Eskom until fairly recently. It’s when things change, as they have a tendency to do here, that they can go awry.

We have a Constitution that is considered to be one of the best in the world and yet… our country is in the grip of economic recession driven by political chicanery at the highest level. This all points to the potential for things to fall apart rather spectacularly if incorrectly managed and even the best organisations have been known to falter under circumstances often beyond their control. There are vast tracts of wasteland in our country more suited to accommodating a hazardous waste operation of this nature and I believe the decision to allow DCLM to accept this toxic brew so close to some of the country’s most valuable real estate and densely populated coastal settlements was not in our collective best interest. No matter how one chooses to spin it, I cannot see the benefit of this side their operation to the vast majority of people who live here. On the contrary – I believe it has the potential to cause the same drama as we have seen unfolding down the road and should this occur, the results will be devastating for the continued growth of the region. If you have invested in a lifestyle here, you need to protect it now. Lobby your ward councillor for answers…and if you don’t like them, demand a better deal. After all, this is what you are paying for.

ASHTON COLLEGE SWIMMING IN THE SPOTLIGHT Joe Erasmus – Ashton College
W
ITH the increasing number of parents who wish to ensure that their children are water safe, the Learn to Swim wing (fondly referred to as our Sailies), under the banner of Ashton Swimming Academy (Sails) has grown. Coaches Liz Armitage, Sam Nyschenns and Taryn Machen coach this little group from the age of 5, and these lessons are all available to the broader community. Our special Grace Wing students who are on the autism spectrum are introduced to the water by Coach Sam and Bruce Curtis, all who are Swim SA trained Learn to Swim coaches.
Even though competitive participation in galas only start in Grade 3, the Foundation Phase swimmers participate in fun galas, and squad training in the early morning sessions continues throughout the year in the heated pool. Many of these swimmers are affiliated to the Ashton Swimming Academy. As they progress to the next phase, Coach Garry Jackson – Swimming Academy Head Coach and the Ashton swimming team coach, takes over. From this age swimmers can compete in the annual KZN gala program, qualifying them for Regionals and Nationals, ultimately giving them the opportunity to be recognised and awarded school colours. Garry has had tremendous success as Ashton’s head coach, and the Senior College won the A League D & D Co-ed Gala as well as placing a close second in 2015 and 3rd in 2017.06.23

Garry has been instrumental in taking his swimmers to the top of their game, and was selected to accompany the 2022 Project Commonwealth team to Ireland next month. Jival Bodlall, a Form 3 student at Ashton is a member of this team. “Although most of the members of the Ashton Swimming Academy are our own students, it is a privately run club open to the wider comminity and training includes the services of local Biokineticist, Maritza van der Westhuizen,” said Mr Joe Erasmus Managing Director of Ashton International Colleges.

FEEL GOOD STORIES AND IDE FOOD FOR THOUGHT: OMEGA 3'S FOR THE DEVELOPING BRAIN STEPHANIE WILLS - LIFESTYLE HEALTH
D
id you know that the most rapid brain growth occurs during the first year of life, with baby’s brain tripling in size by their first birthday!? During this stage, the brain uses sixty percent of the total energy consumed by the infant. Fats are a major component of the brain cell membrane and the myelin sheath around each nerve. So, it makes sense that getting enough of the right kind of fat, can greatly affect brain development and performance. In fact, during the first year, around fifty percent of an infant’s daily calories should come from fat. Which is why Mother Nature cleverly ensured that the nutritional composition of breast milk is also fifty percent fat.
Another point of interest is that different species provide different types of fat in their milk, specific to the needs of that animal. E.g. cow's milk is high in saturated fat (which helps the calf grow rapidly) but low in brain-building fats (they don't need to do much thinking to survive!) In contrast, highly developed brains are important to human beings, so human milk is low in body-building saturated fats and rich in brain-building fats, such as the fatty acid DHA (docosahexaenoic acid), an omega 3 fatty acid. Omega-3 Fats
Omega-3 fats are polyunsaturated fatty acids commonly referred to as essential fats because they are required nutrients for brain and body function. The body can't manufacture its own omega-3 fatty acids, so these essential fats must be eaten. The three major types of omega 3 are alphalinolenic acid or ALA, eicosapentaenoic acid or EPA and docosahexaenoic acid or DHA. EPA and DHA are the omega-3s that the brain and body actually use. ALA must be converted by the body into EPA and DHA. Health Benefits of Omega-3 Fats for Children Omega-3 fats are abundant in brain cells, nerve synapses, visual receptors, adrenal glands and sex glands and thus are vital to a child’s normal growth and development. Omega-3 fats are critical to keeping a child's brain and body in biochemical balance and providing children with the building blocks for a strong immune system. DHA is considered the most important omega-3 for the growing brain while EPA is considered vital for immune system health.

The ability to pay for things with a debit card or your smartphone instead of having to carry around cash (or something to barter) is sort of miraculous. For nearly the whole of human history, and in many parts of the world still, economies have been built on the premise of physical mediums of exchange. If Visa’s innovation chief, Jim McCarthy has his way, Visa itself may soon become invisible. “The magic of Uber and Amazon, they made payment kind of disappear,”
McCarthy said at the 2017 Wired Business Conference in New York last week. Naturally, McCarthy wants Visa to stay at the centre of the payments ecosystem, even as the consumer-side of paying for stuff becomes less visible. And to do that, he says, Visa has focused on making it easier for tech companies like Apple and Samsung to tap into Visa’s services.
As an example, when you use something like Apple Pay or Samsung Pay, the software actually creates a unique card number for each of your devices. So if you have an iPhone, a Samsung Gear watch, and a debit card, each one of those has a unique card number tied back to your bank account. If one of your accounts is compromised, new numbers can be created for the devices
in the background without you ever having to know about it Eventually, that that could mean the end of having to manually change your credit card number with every different service every time you get a new card. To make all that work, the payment apps actually have to communicate with Visa’s servers to generate and process card numbers. It’s not hard to imagine more radical scenarios, like the ability to simply walk into a store, take what you want, and leave without having to worry about the entire payment process. When that finally happens, Visa wants to be there, making all the hard parts of sending and receiving money around the world look easy.

he traditional Zulu wedding is called umabo. When a Zulu girl informs her father that she’s ready to get married, her father arranges a ceremony to inform the public about her availability. Once the bride has found her mane, the negotiations for her cattle for lobola can begin.
SETTING THE WEDDING DATE
The wedding process starts off with ilobola, which is arguably the most important aspect of the wedding and marriage. This is when the groom’s family and the bride’s family meet officially to discuss the groom’s intentions for his bride and how much he is willing to offer the family for their daughter. Lobola is a way for the groom to show his appreciation for how the family has raised the woman he wants to marry. It’s his way of saying thank you and it’s also compensation for the bride’s father. The groom acknowledges that he is taking her away from her family; some may say it’s an apology. Lobola is meant to benefit both families as the money obtained from lobola is also used by the bride when she has to buy gifts for the groom and his family. So there is reciprocity as far as money is concerned.
WEDDING PREPARATIONS
The bride’s family will slaughter a goat after the ancestors have been told that she is getting married. The goat is used in a ceremony known as umncamo in order for the ancestors to protect the daughter. The groom’s

TRADITIONAL WEDDING ATTIRE
The bride prepares for the ceremony by tying bags of dancing pebbles onto her ankles. Her veil is made of beads. Her knees and elbows are adorned with fringes of oxtail. She also wears a goat-hair necklace and an isidwaba which is a leather skirt. She wears isicwaya which covers her breasts and throughout the ceremony, the bride will carry a small
knife to symbolise her virginity. The groom wears attire to cover the hair, shoulders, buttocks, ankles, chest and wrists. After the ceremony the bride is expected to stay with the groom’s family.
MODERN TRADITIONAL WEDDING CEREMONY
Modern Zulu brides have a ‘white wedding’ as well as umabo. What often
happens is that the ‘white wedding’ will happen in the morning, while the traditional ceremony will occur later in the day or whenever the couple is financially ready. In most cases people prefer to have the white wedding before the traditional one. The families will have a singing battle between them to determine who the bride belongs to. Umakhoti ngowethu is often sung by the groom’s family. The song describes that the bride belongs to the groom’s family

and that the bride will cook and clean for the family and that they welcome her to do so. When the bride arrives at the groom’s family’s house, she has to walk around the house. This is for her to be introduced to the ancestors of the groom. This is done, preferably, in the bride’s white wedding dress. The bride then changes into her traditional wedding attire. Gifts from the bride are given to the groom’s family according to a list drawn up by the groom’s family. She will then give her groom his gift. Some brides have put a modern spin on things by presenting the groom with a foot spa and washing his feet in front of the attendees. Traditionally the bride’s family was not allowed to attend umabo however this has now changed as the bride’s family is now expected to attend. Modern brides now negotiate with the groom’s family on the duration of their stay at the groom’s family’s house. The modern wedding depends a lot on the financial and other circumstances of both families and things can vary accordingly. In most cases, Zulus try very hard to stick to the traditional part such as ilobola (which is paid by the groom), umembheso (done by the groom›s family for the bride’s family including the bride according to the list) and umabo (by the bride’s family for the groom’s family including the groom) - they usually do not compromise on these.
Yuliya Vakhrusheva and Byron Kraemer met in Dubai where they became a couple. When they decided to get married, they chose to return to Byron’s home town, Ballito, for the wedding. Byrons Mother, Sharon, organized an intimate affair at Zimbali Country club on the 9th of June. Yuliya’s sister was her Maid of Honor and Byron’s brother was his Best Man. It was a wonderful occasion and they will repeat the exercise back in Dubai for Yuliya’s parents to attend – this might set a new trend. Ingredients:
Chicken OR Paneer: 7 Chicken breasts or the equivalent in weight with Paneer ½ Cup plain yogurt 1 T Turmeric powder
Sauce:
2 Onion - sliced 5 T Butter 2 T Cumin seeds 1T Fennel seeds 5 Cloves finely chopped/ grated garlic 3 Thumb size pieces of ginger grated 3 T Medium curry powder 2 Tins crushed tomato 4 T Garlic and ginger masala 1 ½ T salt 1 – 2 T Chilli flakes (depending on your heat tolerance) 2 Tins Coconut cream Juice of 1 lemon ½ bunch fresh Coriander to garnish
Method:
1. Chop your chicken or paneer into bite sized chunks and marinate with the yogurt and turmeric for 2 hours or over night 2. Gently fry the onions, fennel seeds and cumin seeds in the butter, allow to soften but do not brown 3. Add your crushed/ grated garlic and fry for another 5 minutes 4. Add your curry powder and fry for a further 3-4 minutes 5. Add your tins of tomato, masala, salt and chilli flakes 6. Cook for 10 minutes on high 7. Pour your sauce mixture into a blender and blitz until smooth 8. Pour blitzed sauce mixture back into the pot, add the coconut cream and allow to simmer for 30 minutes 9. Add the lemon juice and chicken or paneer and cook for approximately 20 minutes 10. Top with coriander and serve with naan breads, rice and your favorite curry sambals (Tip: make this the day before as the flavors intensify if left in the fridge over night)

hey are the golden rules of cooking, from continuously stirring risotto to soaking onions to avoid tears.
But kitchen tips passed down the generations are in danger of being debunked by know-all scientists who have examined the chemistry behind them. It turns out that your risotto will be perfectly creamy if you just stir it for a couple of minutes at the end, while peeling and soaking an onion will do nothing to protect your eyes when chopping it. Not only that but a piping hot tray is not essential for Yorkshire puddings and a small pan of boiling pasta is just as good as a large one. New Scientist magazine investigated 16 kitchen shibboleths, to test if they were correct, and consulted food scientists too. It states: ‘Home cooks can learn a lot from science, especially when it comes to knowing which bits of kitchen folklore are worth swallowing.’ The article may shed some light on the debate over whether to store tomatoes in the fridge or on the worktop, citing an opinion from Trevor Suslow and Marita Cantwell at the University of California, Davis, that the ideal temperature for firm, ripe tomatoes is 7 to 10C. Unfortunately a refrigerator or a kitchen do not fall within that range, but the best compromise may be to keep them in the warmer parts of the refrigerator, on the top shelf or near the door. Eggs do not need to be refrigerated in 90 per cent of cases, as hens are now vaccinated against salmonella. However leftovers, despite most people’s beliefs, can go straight in the fridge unless you have a piping hot vat of soup. The risk of raising the temperature

Many cooks will have learned to sear meat first to lock in the juices, but the New Scientist says a cold steak takes longer to sear, with the heat contracting its muscle fibres and forcing heat out. On risotto, it quotes Dr Matt Hartings, who teaches chemistry of cooking at the American University in Washington and states: ‘If you control your ingredients just right from the outset, a no-stir method should give you the creaminess that you’re looking for.’ Chef Kenji Lopez-Alt, author of The Food Lab: Better Home Cooking Through Science, points out that most of the starch which thickens risotto comes from fine particles on the grains’ surface so that it is the addition of stock, not stirring, which mostly affects its release. A better tip for creaminess, apparently, is to wash the rice beforehand. On Yorkshire puddings, US chef Lopez-Alt has the bravery to challenge the received wisdom on a British classic. His advice is that the pan does not have to be piping hot before the batter goes in, which makes little difference for small puddings in a muffin tin. It is better to let them rest after being cooked, and, despite what your mother said, it doesn’t matter if you open the oven door while they are cooking. The magazine says peeling and soaking an onion for 10 minutes for chopping won’t affect the volatile chemical which makes chefs cry as it is on the inside and exposed by chopping. Providing new cooking tips, it advises fresh eggs for perfect poached eggs and rubbing spices onto meat instead of marinating it.

On the Consumer Watch front, I have managed to sort several issues out where there has simply been a misunderstanding. However some of the more complicated queries – especially those bordering on the legal side – I have suggested that the complainants go straight to the Consumer Council – KZN Consumer Complaints Hotline number: 0800 333 667 which is a free service to the public. OR they go to the SMALL CLAIMS COURT in Stanger. This is particularly with regards to money that needs to be claimed back – if it is a small amount. Contact them on 032 551 1201. The only payment involved is the fee payable to the Sheriff – depending on how far he has to travel to serve. PERSONAL SAFETY – is on the forefront of our minds in South Africa, and we cannot afford to be complacent. Whether it’s a matter of keeping our banking details safe by not making passwords visible, to checking that we have securely locked our vehicles by trying the handles once we have clicked the remotes. But what if you are in an emergency situation? Calling the local police station is not always an option, and waking up your family in the middle of the night to let them know that you need help is also not always a viable option. Several companies have come on board with some fantastic personal safety apps that can be downloaded onto your Smart phones. When you’re in a difficult situation, you simply press the panic button on your phones app. Make sure that you keep the app open when you’re travelling so it takes a matter of seconds before you press the button. The response is almost immediate. The fee for most of these apps is in the region of R50.00 a month, which is very reasonable, considering the fact that the services included Paramedics, SAPS and Metro Police Support, your local neighbourhood watch and your Armed Response company. Another option is a rather non descript looking bracelet that you wear on your watch arm. If you are being mugged, you simply press the button on the bracelet to alert an armed response team.
