Britain has plenty of venerable institutions, but none so tasty as Fish and Chips, which this year celebrates its 150th birthday. It’s a simple dish, usually a hunk of golden brown cod or haddock served with thickly cut strips of potatoes sprinkled with salt and vinegar. Despite that simplicity, the dish has become an icon of British culture. Winston Churchill called them “the good companions”. Michael Jackson liked them with mushy peas. For generations, fish and chips have fed millions of memories - eaten with greasy fingers on a seaside holiday, a pay-day treat at the end of the working week or a late-night supper on the way home from the pub. Everyone has their own preferences, and tastes vary from one part of the country to another. Cod or Haddock? Salt and vinegar? Pickled onion? Scraps? Like Morecambe and Wise or Wallace and Gromit, Fish and Chips are a classic double act - and yet they started life as solo performers. And their roots are not as British as you might think. The story of the humble chip goes back to the 17th Century to either Belgium or France, depending who you believe. Oddly enough, the chip may have been invented as a substitute for fish, rather than an accompaniment. When the rivers froze over and nothing could be caught, resourceful housewives
began cutting potatoes into fishy shapes and frying them as an alternative. Who first had the bright idea to marry fish with chips remains the subject of fierce controversy and we will probably never know for sure. However it came about, the marriage quickly caught on. What is it about fish and chips that make them the number one takeaway in the UK? Is it the wonderful aroma, their unrivalled flavour, the warm comforting feeling that they provide, or simply their natural golden good looks? Fish and chips from fish and chip shops are freshly prepared from natural products. Fillets of fish are covered in batter, fried until golden and served with freshly chipped potatoes. Fish and chips are a wholesome dish and lower in calories than many of their fast food rivals, have only 9.4 grams of fat per 100 grams, easily beating other takeaways – the average high street chain burger has 14.8 grams and Donor Kebab, pitta and salad have 16.2 grams! As part of the celebrations for the 150th birthday of fish and chips, Friday 25th June is ‘National Fish and Chip Day’ and fish and chip shops all over the country are holding special events to celebrate; ranging from organising picnics and street parties to balloon races and charity fundraising events.

The award winning Towngate Fisheries in Idle is celebrating fish and chips’ 150th birthday Towngate Fisheries in Idle, Bradford, is celebrating by selling Fish and Chips for only £1.50 all day on the 25th, with all the proceeds being donated to The Fishermen’s mission. The Fishermen’s Mission helps provide emergency and welfare support to Britain’s fishermen and their families. The staff at Towngate Fisheries will be dressing in Victorian costumes for the day and creating a party atmosphere, hoping to raise as much money as possible for this worthwhile cause. Mark Drummond, owner of Towngate Fisheries is the current training co-coordinator for the National Federation of Fish Friers, which represents about 8,500 fish and chip shop owners
in Britain. So it’s easy to see why his own fish and chips have won many awards! Mark has an excellent business record having owned businesses in the Bradford area for the past 18 years. He holds a five-star Seafish Quality Award and was Yorkshire Area Winner of the Seafish Fish and Chip Shop of the Year Competition in 2007/8. After all, there are fish and chips and then there are award-winning fish and chips! Treatment review by Angela Riches Of all the treatments I have had, reflexology was not one of them, so when I heard about local Reflexologist Helen Alred, I was keen to try it out and see what benefits were to be gained. As Helen works mobile, and I work very long hours, it was arranged for Helen to come to our office at the end of the working day to do the treatment. Helen arrived complete with a folding treatment chair, which has to one of the most comfortable things I have ever sat in, and everything she needed to carry out the treatment, all condensed into a very neat hold all! First of all Helen wanted to find out about my medical history and lifestyle and we went through a comprehensive questionnaire and then Helen explained to me what Reflexology is, what I could expect to experience and also what after effects and benefits I might have. Helen started with some general relaxation, followed by a precise thumb and
finger walking technique over every part of each foot in turn, toes (even the tips), soles and tops of my feet and ankles, applying pressure to every reflex area in turn. This was never ticklish, however at times I did feel very sleepy and even had to close my eyes for a ‘mini nap’ a couple of times, it was amazing how tender some of the points were and Helen explained which area of the body each point related to that was out of balance – correctly pointing out problems I am experiencing in my back and shoulders. Helen worked on these areas to relieve the issues and explained that I should drink lots of water to flush away the toxins released during the treatment, and that I would probably sleep very deeply that night...correct! I slept like a baby and felt so relaxed and refreshed the next day, it was amazing. Helen also called me the next nay to see how I was feeling, a great follow up service, and the whole experience was so rewarding that I will definitely be booking more treatments!

A
s spring approaches, our field workers are busy picking purple sprouting broccoli (psb) for the veg boxes. They’re picking through a field once a week to keep on top of the crop, but will step this up as we go into April, when psb becomes desperate to go to seed. We’ll need to give up in late April, so intend to make the most of psb while it’s here. 30 years ago, exotic-looking psb was the standard, widely available broccoli, before the meteoric rise of green (calabrese) broccoli. But over the last few years, psb has enjoyed a revival and is one of the few ‘trendy’ vegetables that really lives up to the hype. A good source of folic acid, calcium, fibre, vitamin A, iron and packed with vitamin C, psb is a great choice healthwise. It’s also easy to cook; simply boil, steam or stir fry. The secret is to avoid the flower becoming mushy before the stem is tender. Try bunching it loosely with a rubber band and standing it upright in an inch of boiling water, asparagus-style. And don’t just eat the flowers and stems, the leaf is tasty too. Leave on the broccoli spear for cooking, or experiment by using it as an alternative green, wilted
down into stews, soups and curries. So find some psb and try out Jane Baxter’s new recipes this month. Look out for these and more in her upcoming Riverford cook book, hitting the shops this spring.
psb with anchovies by Jane Baxter Instructions: Cook the psb in salted boiling water for 5 mins. Meanwhile, chop the anchovy fillets. Heat the oil in a pan and cook the garlic and chilli for 1 min. Before the garlic browns, add the anchovies, remove from the heat and mash with a wooden spoon until they have almost completely disintegrated. Drain the psb and add to the anchovy pan. Serves 4 500g psb, trimmed 5-6 anchovy fillets 2 tbsp olive oil 2 garlic cloves, thinly sliced ½ red chilli, seeded and chopped
psb with mustard and tarragon hollandaise by Jane Baxter Instructions: Blanch the psb for a few minutes until just cooked. Refresh in cold water. To make the hollandaise, melt the butter slowly in a pan, then remove from the heat. Whisk the egg yolks with the lemon juice and cayenne in a bowl over a pan of simmering water until thick. Add the melted butter a little at a time until it has all been incorporated. Stir in the mustard and herbs and adjust the seasoning. Heat a griddle pan (or barbecue) until very hot and griddle the broccoli, turning until slightly charred. Arrange on a serving dish and drizzle over the hollandaise.
Serves 4 400g psb For the hollandaise: 250g unsalted butter 3 egg yolks juice of one lemon pinch cayenne pepper 1 dsp grain mustard 1 tsp tarragon, chopped 1 tsp chives, chopped
spicy psb pasta sauce by Jane Baxter Instructions: Toss the breadcrumbs in 2 tsp olive oil and spread on a baking tray. Bake in a hot oven for about 5 mins until golden. Warm 2 tbsp olive oil in a shallow pan and add the psb and cauliflower. Stir and leave to cook until the edges brown slightly. Season and stir gently. Soak, rinse and dry the capers then roughly chop and add to the vegetables. Stir carefully. Once the psb and cauliflower are just tender, add a drizzle of olive oil and scatter with the chopped anchovy, garlic, fennel seeds and chilli flakes. Toss well to mix. Cook for 2 more mins and add the parsley and olives. Sprinkle with the toasted breadcrumbs and serve with pasta.
