Well…in this edition you are in for an even bigger treat! Team H&N have road tested more new restaurants, some old favourites and some that have been off our radar for a while. There’s a culinary revolution in Leeds City Centre and we have been lucky enough to try out many of the new menu launches and restaurant openings, plus a few in more suburban locations, got to keep it balanced. Check out our Spice Trail, curry lovers this is for you! Coffee enthusiasts, we’ve got it covered, steak people, the juices will well and truly flow. The team at DVF have released a short film directed by Peter Lindergh that introduces us to this femme fatale character, personified by model and all round ‘girl squad’ member Karlie Kloss. Posing as a Bond-esque secret agent, we see her strutting through town demanding attention in a spotted blue silk jumpsuit and as nightfalls an all more playful ‘agent’ emerges in an allover lace shirt dress. It is this perfect balance between strengh and sexiness that the team at DVF have captured so perfectly. The tote is actually Dianne’s favorite piece in the collection as it really captures the essence of the entire campaign. It is completely genius as through the day it’s a beautiful and practical tote ideal for work, but transitions through to evening by simply zipping off the front pocket which doubles up as a sexy clutch bag. It’s this dual nature which makes the collection so versatile and what I especially love about the ‘Secret agent’ bag is that it comes in different colors and fabrics meaning you can buy a separate clutch and zip it on to any tote. Anything from bright red croc skin to glittering confetti tweed and snake skin, there are lots of options so you really can mix and match to personalize and make your own statement. One of the most stand out pieces from the collection has to be the power suit. However, don’t recoil in horror at the thought of an eighties shoulder padded number as this version is a sleek, modern update. It’s sharp and polished with strong clean lines and an impressive pop of cosmic cobalt blue makes it a total head turner. The luxurious satin look lapels and waistband really finish it off for me and add a touch of feminine glamour.

The strong masculine elements are beautifully contrasted when seen worn with a delicate chemise blouse underneath; again giving the ability to easily transition through to evening. My absolute favorites from ‘Seduction’ have to be the evening dresses. A mixture of different classic cocktail dress elements such as lace, crystals and beautifully feminine silhouettes make each dress unique and appealing in a different way. The all over red lace embellished chemise dress with black crystal studded collar and cuffs featured in the ‘Secret Agent’ film is vibrant and playful making it a real eye catcher. Where as the ‘Femme Fatale’ black wool and lace gown with long slim line silhouette and lace panels in the front and back make for a sexy, sophisticated number. I really wouldn’t be able to pick just one favorite as they really are all jaw dropingly stunning. Last, but by all means least the iconic wrap dress. In its 40th year down the runway, this DVF staple again does not fail to impress in anything from floral print to spots and silk fabric to knit. However, it is the sophisticated ivory wool and black lace version sported by Kendall Jenner on the catwalk which has to be the show stopper for me. Beautifully feminine and elegant but with a contrasting black lace panel on the reverse which brought a daring and seductive element. It is it’s simplicity and unassuming sexiness which makes it a strong winner; a true classic for years to come. The collection summed up in three words by Dianne herself is, ‘sexy, mysterious and alluring’. So if you effortlessly ooze these three elements then great, but if like me you need a bit of help then DVF should be your first port of call this Autumn.

CLEANSE

H&N EDITOR ANGELA RICHES ROAD TESTS THE C9 CLEANSE I would think that everyone has heard about Forever Living Aloe Vera products, and personally I have been using their Aloe Lips Lip Balm, Aloe Evershield Deodorant Stick and Aloe Gel Juice Drink for years. So when I wanted to find a really healthy way to cleanse my system and hopefully lose a bit of weight in the process I didn’t hesitate to try the Forever Living C9 nine day cleanse. Caroline Harris from Glow is also a Forever Living specialist and distributor so it made perfect sense to get the kit from her and have her expert guidance throughout to keep me focussed; and keep me focussed she did with daily hints and tips and messages of encouragement. Mental attitude towards taking on something like this is key; this is nine consecutive days out of your life where you need to be completely committed and focused and this is my C9 journey. Here’s how it works: you buy a pack containing various gels, tablets, powders and paraphernalia including a tape measure, as well as information about how to follow the programme. For the first two days of the programme (which are designed to ‘reset your body and mind’) you’re allowed tablets and aloe vera gel in the morning, a fibre pack which you mix with water mid-morning, more tablets and gel for lunch (this time accompanied by a Forever Lite Ultra shake), and more tablets and gel for dinner. Then some more aloe vera gel before you go to bed. No meals. No tea and coffee just water. I should point out that at every stage of the programme you’re allowed to eat the specified ‘free foods’ in moderation, which are listed in the pack. These include fruits and vegetables such as blueberries, apples, asparagus, lettuce and string beans. You can mix these things into your shakes or eat them on their own, and I found this really helped to keep the hunger pangs at bay. So that’s it for the first two days. After that (for the final seven days of the nine-day programme) you can also add in a 600-calorie meal for either lunch or dinner, and you’re allowed an extra shake a day, meaning you could have a shake for breakfast and lunch, then a meal at night and I have to admit that after 2 days on minimal food intake, once I started having an actual meal it tasted fantastic and also seemed like a huge amount of food! For example did you know that a Sunday dinner including a small Yorkshire pudding falls into the 600 calorie bracket?

DAY 1 AND 2

Expect to spend a lot of time feeling hungry. My top tip for day one is to keep distracted. It was easy for me as my days are absolutely packed, it’s once I finish in an evening that I struggle. I just had a couple of early night!

DAY 3

I had an energy surge on day 3 day three, my body felt really light and the bloat had completely gone but boy was I ready for my first shake of the day. I packed it with fruit from the free food list and it was amazingly filling. Another shake at lunchtime and the 600 calorie meal in the evening when I am at my hungriest worked wonders…didn’t even need to go to bed early to avoid temptation!

DAYS 4-7

The days were all fairly similar, I’m not one for counting calories every second, or letting it rule my life, but in terms of giving yourself a boost of confidence and realising double portions aren’t vital this was great. I had a surprising amount of energy all day and did not get the afternoon dip I normally do.

DAYS 8 AND 9

Ok, time to be really honest, these two days were tough. It was the weekend, and I am definitely a weekend binge eater and drinker! The saving grace was Sunday dinner with all of the trimmings, it really is surprising how much you can eat for 600 calories! My Forever Living contact Caroline, was fantastic – really supportive. She added me to the Facebook group so if I was struggling or needed some positive pushes through the hungry times I knew there were plenty of people feeling the same. After finishing the programme I had lost 10lbs and 13 inches and gone down a dress size! However, the most amazing result was the way I felt, the condition of my skin, hair and nails and through following the clean eating regime and moderate drinking I kept the weight off. I have the H&N Charity Ball on November 13th and I already have my next C9 ready to go to make sure I look and feel amazing on the night!

The first 2 days will probably challenge you the most; cutting out tea and coffee means you may get a headache, I had only a slight one which surprised me and Caroline’s daily support was invaluable. This just shows that when there’s support available you should take it! hnmagazine.co.uk | 13

A MOMENT WITH

MARIE SALAMAGNE Can you tell us about the brief from Jo Malone London? The first thing that Jo Malone London showed me was some incredibly vivid orientalist paintings from the nineteenth century. They wanted to create a fragrance that captured the bohemian spirit of adventure from the Victorians, who travelled the world collecting intriguing objects, to the vibrant hedonism of the sixties to the modern day bohemian. With Jo Malone London the process is always very immersive so I looked forward to really delving into the bohemian world.

Where did you look for inspiration? Jo Malone London took me on a journey to the home of the orientalist painter, Frederick Leighton. Leighton House is a hidden gem in Holland Park, London. It was built as an incredibly decadent showcase for his collection of more than 1,000 tiles collected in the Middle East and is filled with vibrant pattern. One of his paintings, Flaming June, was particularly inspiring. I liked the idea of travelling through the picture to discover the vivid colour, texture and atmosphere of the interiors and wanted to recreate these layers in the scent. From there we looked at places like Marrakesh and Tangiers which were bohemian havens in the sixties for people such as the Rolling Stones to literary characters like Sebastian Flyte in Brideshead Revisited. We were intrigued by figures like the London fashion designer Thea Porter, the society beauty Talitha Getty and the iconic Loulou de la Falaise with her bohemian style. Jo Malone London wanted to draw on this inspiration but also bring a sense of modernity to the scent. We looked at what the bohemian spirit means today from new bohemian fashion with its eclectic prints, colourful pattern and drapery to a love of travel off the beaten track.

What do you think is special and current about the new bohemian mindset? For me the new bohemian celebrates a state of mind without boundaries. They are free-thinkers who celebrate authenticity and intensity. A true sense of adventure is at the heart of the new bohemian spirit for me.

Mimosa & Cardamom is a floriental fragrance. How did you give it a Jo Malone London signature? When Jo Malone London told me they wanted a floriental fragrance to capture this bohemian story I knew straight away that they would be looking for a new approach. They wanted to bring a sense of modernity to the traditional construction and to give it a twist. The classic floriental is made with florals like orange blossom, jasmine or rose.

All are infused with an oriental richness and sophistication. They stand out because of their unique blend of warmth and sensuality. Jo Malone London wanted to update this idea with mimosa as the main ingredient which is innovative in itself. I was very inspired by this starting point. In fragrance history, mimosa had not been revisited for a long time so it was an intriguing challenge. I then wanted to create something bold and captivating around it. We chose the cool spice, cardamom, as it would add a new energy. I love its thrilling freshness and sparkling effect. We knew we had found an unusual yet perfect pairing; the vibration of the cardamom, an unexpected twist, with the sensual softness of mimosa. They are both radiant. Mimosa is the warm sun, cardamom the bright light.

Tell us about how you were inspired by Mimosa. Mimosa & Cardamom is infused with sensuality and much of this comes from the mimosa itself, an unusual powdery and honeyed floral that perfectly captures the bohemian character. I had a strong memory of the mimosa flower which made it even more exciting to work with. It has always reminded me of my childhood and winter weekends spent near the coast in the South of France. It was a joy to see these blooms again when Jo Malone London took me to see the mimosa growing in the Tanneron Mountains in Provence. It was a cold February day with bright blue skies. The scent and spectacle of the fluffy yellow flowers was unbelievable, mimosa is the golden sun of winter! I took some branches back from Tanneron with me and put them in my office so every day I could be inspired by the smell of the bright yellow pompoms. I chose to use a sumptuous absolute of Mimosa from the South of France, rich with a multifaceted character to capture the beauty of these flowers.

Can you tell us more about the Mimosa absolute? I worked with a 100% natural mimosa extract, sourced from Provence. The young branches are harvested by hand and the extraction is carried out immediately within two to three hours on fresh flowers in Grasse and Tourrettes. The flowers harvested in the Tanneron are traditionally processed: primary solvent extraction to produce the concrete, then a secondary extraction with alcohol to obtain the absolute. 1Kg of absolute is obtained with 500Kg of Mimosa. Mimosa is a symbol of elegance, simplicity, tenderness and friendship. Behind its apparent fragility, the flower captures a strong feminine energy. Mimosa absolute is the ultimate reference for green and floral, powdery longlasting notes. A slight woody and honeyed note differentiates it from other origins.

H&N’s Angela Riches road tests the House of Beauty Biosurface Peel Treatment.... The House of Beauty, owned and run by Joanne Myers, is well known in the area as a salon of excellence for Dermalogica and always one of the first to introduce the latest Dermalogica treatments and products. So when I heard that the Dermalogica BioSurface Peel was now on the menu, I wanted to be one of the first to try it. There’s a very loud buzz about the BioSurface Peel and although I have always looked after my skin, there’s only so much a person can do to help stop the clock! Many chemical peels today are too tough on skin - so tough, they can damage living cells and cause adverse side effects. All chemical peels work by removing the outer layers of the skin. The depth of the peeling is determined by the chemical agent used and the concentration, among other factors. Following a chemical peel, the deeper layers of the skin will respond by regenerating new skin and by increasing the production of collagen. The result is a look that’s smoother and more youthful. Joanne told me BioSurface Peel is unlike any other professional treatment on the market. It delivers visible results without the adverse side effects of aggressive chemical peels. This intense treatment requires rigorous training and practice with Dermalogica before the professional skin therapist is allowed perform the peel on clients so I felt in safe hands.

UNWANTED HAIR?

As this is an advanced treatment a consultation and patch test are required at least 24 hours before your first treatment. A course of treatments is best, with a minimum of 3, but ideally 6, at regular intervals. Joanne advised me on the best treatment for me to achieve my desired results. There are important pre-peel preparations and post treatment instructions, which were discussed with me prior to commencing the course. I chose to start with a course of 3 at 2 weekly intervals, each increasing in intensity. I wasn’t sure what to expect but feared a face like Freddy Krueger might be inevitable for a while after! I couldn’t have been more wrong. The worst I experienced was a mild tingling during the treatment, this did intensify as each treatment got stronger, however was easy to cope with and Joanne monitored me throughout. After the third treatment I had a slight sensitivity for a couple of days but nothing more as the after care products you are provided with each time are superbly moisturising and protective against the elements; let’s face it life must go on so I didn’t want any ‘down time’. I can’t believe the difference in my skin after only three initial treatments. After the first I noticed a deep pore cleaning effect, after 3 fine lines around my eyes are much fainter and my skin texture looks much more youthful. I am so pleased, it’s the best skin rejuvenating process I have ever experienced and I have booked a further 3 to achieve maximum results in time for Christmas!

Over 2000 hairdressers from across the globe descended on The Aria Resort in Las Vegas for TIGI World Release 2015. SKI FIT EVENT Winter brings with it poor travel conditions, freezing weather and the promise of winter sports for those who like to ski or snowboard. Often the cold weather can aggravate conditions such as arthritis as well as slippery conditions increasing the risk of injury. This November we're celebrating our love of winter sports and helping you prepare to enjoy them to the fullest! Before You Hit The Slopes Skiing is physically demanding and it is therefore important that you have a good baseline fitness order to participate safely and prevent injury. Fatigue can be a common cause of injury so doing 6-12 weeks of preparation including cardiovascular exercise, strength and conditioning work will be beneficial. Your fitness manager can design a programme just for you. Pre Existing Injuries Get any niggling injuries seen to before you travel. If you have received treatment for an injury or even had surgery, you need to be realistic about how well recoeverd you are and how much you can do whilst on holiday. Your on-site physiotherapist can be a great source of infomation for you. Equipment Good quality equipment is vital. If you're a regular on the slopes, invest in your own boots to give you individual, fitted support. If you're new, ensure your hired boots fit you comfotable. Don't be shy if the ones you have aren't right - swap them if they are causing you blister or cramp. Stay Active Keep moving as much as possible during the cold months to prevent that stiff feeling, particularly in your knees. Regular movement will help to lubricate and nourish your joints. If youre heading out into the cold for a brisk walk or jog, break a light sweat first then stretch to help maintain mobility and reduce the risk of injury. Aim to wear full length running leggings to keep your muscles warm. 22 | WE ARE HERE & NOW

Wrap Up Warm A scarf and woolly hat are winter essentials to prevent both neck and back pain, often caused by tensing in the chill. Have a pair of mittens to hand (they're better at keeping your circulation flowing than gloves). Avoid Slips & Trips It's common to see injuries caused by falling during the winter. Often, particularly for women, these are cause by inappropriate footwear. Slips on icy surfaces can cuase more serious accidents like fractures and sprains. Preventing Injury Skiing is s fun sport, but if you are fearful or scared, your risk of injury will increase. If you are new to skiing, have a few lessons before you hit the slopes to increase your confidence and ability. Remember to pace yourself, do not overdo it. If you feel tired then take a break and always remember to have a good breakfast on the morning you ski as well as remembering to rehydrate regularly. Adequate clothing is essential! ST MORITZ MORE TO THE MOUNTAINS THAN SKIING!

St Moritz is also a haven for adrenaline junkies. The fantastically eccentric, but totally serious, members-only St Moritz Tobogganing Club is home to the world-famous Cresta Run, a 1.2km-long natural toboggan track that men hurl themselves down head first at speed, lying flat on sleds. It has been going strong since 1884, when it was conceived by Brits as a way to amuse themselves during winter holidays to the resort. An all-male preserve, women wanting to get their thrills need to head over to the Olympic Bob Run, the world’s oldest bob track. There, both men and women can ride passenger in a four-man bob (with a professional pilot at the front and his brake-man at the back) at speeds of around 135km per hour down a 1700m track with 14 turns – absolutely terrifying, as you invert round high corners held in only by G-force, it’s worth it for the adrenaline rush at the end of the run! A more modern adventure sport is kite skiing, which was developed by explorers in the noughties as a wind-assisted way to reach the South Pole much faster than walking, skiing or dog sledding. On skis or a board, participants are attached to a small-ish kite that harnesses the wind as it whips along the Engadine valley and propels them across frozen Lake Silvaplana – it might look easy, but don’t be fooled. All these adrenaline-pumping activities can be booked through the Kulm Hotel St Moritz (www.kulm.com), the legendary luxury hotel where winter tourism is said to have begun with a bet in 1864, when the then owner, Johannes Badrutt, promised the last departing summer guests a free stay from December to the following spring, if their winter holiday in St Moritz was not as sunny and as enjoyable as it had been over the summer. Tanned and full of enthusiasm, the British guests returned home in the spring of 1865 and spread the word about their fantastic trip, laying the foundations for winter tourism. Prior to that, holidaying in the Alps had been all about rest and recuperation in the summer months, with Brits spending extended periods taking the waters in St Moritz – the thermal baths are still there to visit – and elsewhere. Today, winter spa holidays are just as popular as summer ones. The Kulm Hotel St Moritz’s sister property Grand Hotel Kronenhof (www.kronenhof.com) in


the tranquil mountain village of Pontresina, just five miles from St Moritz, offers the perfect spot for “getting away from it all” and has a week-long “Holistic Life Retreat” packed with yoga classes and massages in January and March 2016. Guests looking for a strict “New Year, New You” detox break should head to the fivestar Adler Balance (www.adler-balance.com/en/), located in the idyllic mountain setting of Val Gardena, part of the Italian Dolomites, where the programme is based on the internationally recognised Mayr method, which follows four principles, namely protection (through rest), cleansing, training and supplementation, which restore inner balance to the body leaving guests feeling completely rejuvenated. Built with natural materials such as wood and slate according to the principles of organic architecture, Adler Balance guests are thoroughly quizzed and tested on arrival by a doctor, before a personal programme (of weight loss or stress reduction, for example) is prescribed to meet individual needs. Adler Dolomiti, meanwhile, is perfect for families, as it is home to the AKI Kids’ Club, where younger children can be looked after all day long and participate in ski school, as well as two guided ski trips per day, of differing difficulty, so families with teenagers can split into those who want to do blacks and those who prefer wide gentle reds (for which the Dolomites is famous).

There is even a daily guided winter walk or snowshoe hike for those who don’t ski or maybe have reached a certain age where they are nervous of falling while skiing and breaking a bone or two. Just don’t make the mistake of thinking it will be easier than skiing, snow shoe hiking in deep virgin snow uphill builds up quite a sweat! An alternative winter trip to the Alps for families is to Adelboden in Switzerland’s Bernese Oberland. This little-known resort is a picture-perfect traditional-looking resort, packed to the rafters with old-fashioned wooden chalets. Every March it organises an “Igloo Festival” on Engstligenalp at which teams of enthusiastic “builders” from around the world gather to create a masterpiece – or simply somewhere to spend the night! You don’t have to be a professional builder to take part: friendly advice is on tap from experts at the Alpine School, while shovels and snow saws, essential tools of the trade, are supplied. All participants need to have in spades are a fierce work ethic, patience and good humour. It’s always popular with families, as it offers the chance to drag everyone away from their computer screens and bond in the great outdoors, while enjoying the chance of a lifetime: to sleep in an igloo you’ve made yourself! The setting on Engstligenalp couldn’t be more dramatic – the biggest plateau in the western Swiss Alps provides a panoramic, almost lunar, backdrop to the Festival “village” of igloos – and also provides other forms of entertainment once the hard work is complete. There’s a chance to ride on a dog sled, snow tube down steep slopes and warm up afterwards in a huge igloo, where fondue and hot drinks are served to guests seated on furs on wooden benches. And, should your igloo building skills not be quite up to scratch, there’s always a chance to retreat to the comfort of the only Mr & Mrs Smith hotel in Switzerland, The Cambrian (www.thecambrianadelboden.com). For those who love white fluffy snow, winter is the best time of year. While others mourn the loss of summer sun, many look to the ski season to dust off skis and snowboards and make it to fresh untouched pistes and beautiful mountain landscapes. Skiing in France retains its place in the hearts of most European skiers and remains the most popular European winter destination. MAKING AN INFORMED CHOICE

PAINT YOUR OWN PICTURE It would be fair to say that making a decision about which independent school to select for your children’s education is one of the biggest emotional “purchases” any parent will ever make. Reputation, school car park chatter and “dinner party talk” may have coloured your picture of a particular school before the search begins, and that decision is further complicated by the plethora of glossy information that is available to you from the very moment you begin looking. Inevitably, you will then find that much of the marketing material says just about the same thing but in a slightly different way. So – How to progress? 1. Set aside any preconceptions garnered over the years and draw up a short list of possible schools that you believe may suit the particular nature of each of your children. (Beware - these schools may differ for each child..but so be it.) Then determine to get under the skin of the school! 2. Visit the school’s Open Mornings. Inevitably, these are events that will show you the school in its best clothes, and they should impress, but you can gather so much more from these days by taking the opportunity to talk to the students, observe their interactions with staff and get a feel for their enthusiasm and sense of enjoyment of what they are doing.

Is breakfast and or an evening meal available should they need to stay on at school or should it be convenient to arrive early? 7. Is my son or daughter going to be known by all members of staff? Consider the school’s size and fit. Are my son or daughter’s horizons going to be broadened by the people and the opportunity at this school? 8. Most importantly, involve your son or daughter in as much of the process as possible. It needs to be a shared journey to a final decision. Include them in every step as you build up the picture of where you envisage them being equipped to face the challenges of life.

3. Visit and tour the school on a normal school day. Ask yourself questions about what is going on around you. How does the school “feel”? Peer through classroom windows – are pupils engaged and involved? As pupils and staff move about the school, is there a sense of purpose?

Of course there are so many other questions one could ask or focus on and any good school should be happy to spend time in helping you make the right choice. The key to beginning and completing this journey to a decision is to set any prejudice aside and begin painting your own picture of a school that you believe fits around the individual that is your son or daughter. Once complete, paint your child in, comfortable that you have done all you can to help secure their future in the right environment.

The focus behind our new roastery is to push our quality boundaries further than ever before. By rigorously cupping, tasting and testing as many samples from as many green coffee suppliers as possible and only selecting the best lots we have ensured that we have greens that have fantastic potential as roasted coffee. These coffees have been selected for their great flavour profiles- sweetness, clarity and complexity being the prized attributes we were looking for. For each new coffee we have in, they are sample roasted in a variety of ways to ensure the best taste profile before they are allowed to be sold, and even then following roasts will be sampled to ensure the cup quality is maintained. The roasting process is all done by hand – a labour of love which allows us to have full control over the roast. This helps us to pull out and refine fantastic flavours and nuances from the raw materials, building a profile that is unique to the coffee’s origins and terroir - be it a Red bourbon from a Rwandan cooperative grown at 1800 metres above sea level or a naturally processed Acaia varietal from an estate in Brazil grown at 1000 metres above sea level, we seek to reveal that coffee’s individual character.

CHICKEN CHASSEUR This is an old school dish that has fallen out of fashion, but who cares about that? It should be on every restaurant menu as it tastes so good. And it can easly be made at home. The vital thing is to use fresh tarragon, it tastes miles better than dried. INGREDIENTS (Serves 4) 1.5kg whole chicken, jointed into 8 sea salt, black and white pepper 1 tbsp plain flour 2 tbsp olive oil

 110g smoked streaky bacon lardons 125g shallots, thickly sliced 150g chestnut mushrooms 2 tbsp tomato purée
 175ml white wine 400ml chicken stock METHOD Season the chicken with salt and pepper then toss in the flour to coat. Heat a large sauté pan until hot, add the oil, a knob of the butter and half the chicken pieces and fry skin side down for three or four minutes until golden. Turn and fry on the other side for another one or two minutes, then remove from the pan.

Repeat with another knob of butter and the remaining chicken. Add another knob of butter and the bacon and fry until golden brown, then add the shallots, mushrooms and tomato purée and fry for another couple of minutes. Roughly chop the remaining tarragon. Add the tomatoes, parsley and tarragon to the pan, then check the seasoning and adjust it if needed. Serve each person with two pieces of chicken, with the sauce spooned over and a dollop of mashed potato.

I had my first experience in a kitchen at the tender age of 15 when I worked as a kitchen porter in a restaurant, right then I knew this was my future. I had always loved cooking and being in and around the kitchen, I knew it was my passion and what I wanted to do. I left school at 16 and started my apprenticeship at Beeties Restaurant, Saltaire, where I gained my qualifications, advanced in knowledge and cut my teeth for kitchen life. I then went to work at Hollins Hall Hotel in Baildon, where I started as a commis chef but quickly worked my way up to chef de partie. This was a natural progression into fine dining and large scale functions. After 3 years at Hollins Hall, I took a job at Moyles in Hebden Bridge as a Senior Chef de Partie. This was my platform to develop skills in fine dining, in the 2AA rosette restaurant. This is also where I experienced my first taste of management in aiding the development of the younger chefs to the required level. My next step was onto Crathorne Hall in Yarm. I went there as a young junior sous chef with the knowledge and experience I had gained from my previous jobs and acquired the opportunity to be more involved in the development of other chefs. This is where I had my first real taste of freedom for creativity in the kitchen

as I developed my own dishes. I was promoted to senior sous chef after a year and spent the next 18 months honing the my management skills as well as overseeing the junior chefs. After a very useful and productive time at Crathorne, I was approached for the Head Chef Job at the Moody Cow. Although I am still a young chef, I relished the opportunity to run my own kitchen in my local area. Being able to run my own kitchen team and having fantastic local produce to work with, has really opened my eyes to how much I actually love hospitality.

SLOW COOKED BABY BACK RIBS, CITRUS SLAW FOR THE RIBS 4 racks baby back ribs 300g English mustard 4 tbsp blackened Cajun spice 2 tbsp smoked paprika 2 tbsp Chinese 5 spice 200g demerara sugar 150g softened salted butter 200ml apple juice

FOR THE SLAW 1 small white cabbage 1 white onion 4 carrots 2 lemons & 2 limes 50g coriander Mayonnaise to bind

1. Take a teaspoon carefully remove the cinue from the underside of the ribs. 2. Mix the mustard, Cajun spice , five spice and paprika together 3. Rub the mustard mix heavily on both sides of the ribs 4. Lay out 4 sheets of tin foil, rub the tin foil with the butter sprinkle on a layer of sugar, place the ribs in the foil with the top facing down, pour over 50ml of apple juice and wrap up tightly. 5. Pre heat the oven to 180 & place the ribs in a tray to cook on 180 for 3 ½ hours

6. Remove from foil 7. Add a thin layer of homemade BBQ sauce to glaze the ribs 8. Leave under the grill for 30-50 seconds to finish the ribs

SLAW 1. Finely slice the cabbage and onion, grate the carrot then add to cabbage mix. 2. Zest both the lemons and limes into the mix 3. Bind the cabbage mix with mayonnaise 4. Finely chop the coriander and fold into the slaw mix

TOWNGATE FISHERIES Towngate Fisheries in Idle was first bought by present owner, Mark Drummond in 1997. Situated at the top of the High Street in a splendid 19th century building, it was a reasonably busy shop, but only open very short hours. Mark ran the shop until 2002 and in 2005 he bought it back again (for less than half the price but with considerably less than half the trade remaining). The shop was in very poor condition and the frying range was past repairing, so Mark installed a new Dutch state of the art high efficiency range and had the kitchen area refurbished; money well spent as trade grew rapidly. However, despite the building looking big from the outside they were always very short of space, so in 2010 Mark refurbished the customer area to help speed up service, but with trade still on the increase space very quickly became limited again so this year Mark decided it was time to make the shop open plan. “My 3 pan frying range was still in good condition, but I really needed extra frying capacity at peak times. I considered refurbishing around the existing range, but thought it best to change everything at once. Having visited the Florigo Frying Range factory near Amsterdam last year I had been very impressed with their build quality and advances in design in the last 10 years, so I ordered a new 4 pan range that we managed to fit into our very limited space. I commissioned Elite shop-fitters from Leeds to design and undertake the refurbishment, removing the middle wall to make one large space. I wanted to keep our classic black and white design, but also wanted it to look different, so I chose white and black “brick” 56 | WE ARE HERE & NOW

tiles. The work was all completed and we re-opened in under 3 weeks despite a few minor hiccups and me requesting extra work to be done such as replacing our windows and front door, and as we are in a conservation area these all had to be made in wood. With just a few finishing touches such as the black granite surfaces, to be completed in the days after we reopened.” Mark told us. They re-opened on a Friday and were extremely busy and it was immediately clear that the shop would be so much easier to work in with everything easily to hand, although the first few days the team were getting used to the new controls for the frying range and new layout. Since re-opening, many customers have commented how much bigger the shop looks. It is certainly much easier to work in when busy and at their busiest times and although they still have a queue, customers are served much faster. Towngate Fisheries is now open every Sunday from 4.15pm to 8pm and this is proving very popular with customers; and to celebrate their refurbishment and also the fact that this year they have again been awarded the National Federation of Fish Friers Fish & Chip Quality Award for the 10th year running, they have produced Towngate Fisheries souvenir mugs filled with Towngate Fisheries rock sweets. These are now available to buy in the shop for only £2.50, with all the proceeds being donated to the Fishermen’s Mission, a charity that supports UK fishermen and their families for which Towngates have raised well over £4000 in the last 5 years. “We are very proud that this is the 10th consecutive year we have held this prestigious award that only around 250 of the 10,000 plus fish & chip shops in the UK hold!” It’s easy to see why people are prepared to queue at Towngates for possibly the best fish and chips for miles around…see you there!

If the answer is no, then you aren’t really saving any money! 4 Whilst some supermarket ranges are getting better, there is no substitute for a specialist wine shop with knowledgeable staff. We have some great independents in Yorkshire, run by people who know their range inside out, and can advise you on what would suit your taste. 5 The tax, bottling costs and transport costs are broadly the same on all bottles (and equals around £3 in total). If your wine costs £5 then only around £2 will have been spent on the wine itself, if you buy an £8 bottle then around £5 will have been spent on the liquid- easy to see which is better value! 6 Some of the best value wine is being made in southern Europe at the moment. Italy (especially Puglia and Sicily), Spain (in places like Jumilla and Priorat) and France (I recommend

8 House wine in a restaurant is often some of the worst value on the list- with the biggest mark up in price. Even just moving down to the mid-priced section usually represents much better value. Southern Italy is always a good option on a restaurant list- their wines are food friendly and often well-priced. 9 Champagne is not just for Christmas! This fascinating and delicious drink is too often forgotten throughout the year and is dominated by a few big brand names. It’s not expensive when compared to an evening in the pub, so stay in one night and try a bottle of small producer Champers- you won’t regret it! GAUCHO LEEDS, showcasing modern argentine glamour Hidden away in the heart of the city’s financial district, sophistication and opulence border on decadence at Gaucho Leeds. It’s a meat lover’s paradise offering a boutique dining experience showcasing modern Argentine glamour. From the uber cool cocktails expertly created by the resident mixologist, to the vast knowledge of the waiters and waitresses in the restaurant, the service here is slick beyond belief and that is down to something rather unique; The Gaucho Academy where every member of the team has to go through rigorous training and achieve such high levels of competencies and knowledge before they are allowed to work on the ‘shop floor’, that there are regularly head hunting attempts by other restaurants! Dining at Gaucho may be one of the more expensive eating experiences you will have, but one thing’s for sure…it will also be one of the best! The setting is dimly lit bordello, the decor is leather, hide and crystal, and the experience is the food, the wine and most importantly the passion and the ‘spirit to serve’. Gaucho believes that every guest should experience a little bit of Argentinian life, well a little bit is definitely not enough, you will be left wanting more and more. If you would like to experience Gaucho but have a limited budget then the 2 course lunch or Sunday lunch at £23 and the 3 course option at £26 are perfect. The menu gives a great choice selection and even suggest some good wines to accompany your lunch. However, on our visit we started with gin cocktails, it just had to be done and we left the choices up to the mixologist and my goodness they were good! The menu is extensive and even though all of the different cuts are brought to your table and eloquently explained, there’s a lot to take in and we decided that the easiest way to experience as many cuts as possible

was to choose a sampler starter each and share everything. So we chose the Cerviche Sampler; Equadorian ceviche, salmon ceviche and scallop tiraditos and the Chorizo Sausage; Argentinian chorizo, a combination of pork and beef, confit peppers and pickled red onion. Oh my lord, totally amazing. For mains we each chose a Tasting Plate; three of the tenderest cuts tender flank marinated in garlic, parsley and olive oil; succulent marbled skirt, marinated in ají molido, smoked garlic, parsley and olive oil and top of the rib-eye. We had a peppercorn sauce and a béarnaise sauce, chips cooked in beef dripping and a summer salad with soft herbs. If by now you are not salivating then Gaucho is definitely not the restaurant for you! However, for us more serious carnivores this is a dream dining experience. We desperately wanted dessert and after a well-earned rest we shared the Dessert Sampler of chocolate ganache cake, Dulce de leche cheesecake and tropical fruit. Our wine of choice was a rather lovely Tempranillo, again suggested by our waitress and again absolutely perfect. There’s so much more to the ‘Gaucho Experience’, as we found out; Gaucho Leeds can accommodate up to 20 people for private dining, 16 people for a conference, breakfast or even a dinner and show and believe me this is one dining experience you will want to share with family and friends, so your first visit will definitely be the first of many! grappolo ristorante pizzeria, little italy in horsforth... Offering a real taste of the Med, Grappolo is an inviting restaurant with buckets of charm and authenticity. Whether you are visiting for a mid week tea, a romantic rendezvous, or a large celebration, Grappolo are sure to provide the perfect backdrop for your occasion. Italian restaurants are renowned for their welcome, their enthusiasm and if there’s an element of exhibitionism and theatre, even better. Horsforth is an area with quite a few restaurants and one that was getting quite a lot of air time in conversations we were having was Grappolo on New Road Side. We love Italian food and so a bit of a fight within the team ensued to see who would check Grappolo out. I’m afraid I had to pull rank as Italian is one of my favourite dining experiences, I just love the noise, excitement and banter. I was pleased to find plenty of free parking, there’s road side parking and also a car park at the rear of the restaurant. Grappolo has a prominent road side location, is easy to find and looks really inviting. Inside we received the welcome I was hoping for; outstretched arms and a booming “Helloooo and welcome!”. It just makes me smile and look forward to the whole experience, service is so important and this was looking great. Inside, the restaurant is larger than I expected, modern and stylish, there was a section set up for smaller numbers and another areas by the bar which was set up for three large parties. We were shown to a table for two, drinks order taken and left with menus to peruse. We chose a bottle of house red which arrived swiftly with some amazingly fresh bread. That’s another thing I like about dining Italian style, everything arrives quickly and you can tell it’s a well-oiled machine that never fails

to impress, even as the restaurant filled up with diners and the three large parties, no one broke into a sweat and the atmosphere became more lively and exciting. Starters chosen, we placed our order for Coppa Di Gambretti, a cocktail of peeled prawns on a bed of crispy lettuce topped with marie rose sauce and Pate Di Fegatini Di Pollo, a special home-made chicken liver pate served with toasted bread and cranberry marmalade. Both arrived looking pretty as a picture and tasting even better than they looked. Portion sizes were good and I was pleased they were not too large as for our main courses we ordered Spaghetti Ai Frutti Di Mare, spaghetti tossed with mixed sea food in a spicy tomato sauce and a Grilled Sirloin Steak with onion rings, grilled mushrooms and tomatoes. The main courses were beautifully cooked, full of flavour and really well presented. Our waiter was attentive, funny (we love the cheeky banter) and absolutely nothing was too much trouble. Could it get any better? Well, the only way to top off this meal was with a dessert we always choose when eating Italian and it’s one we always share; banana split! It’s a good job we were sharing, it was huge! But not a morsel was left on the plate, in fact not a morsel was left on any plate throughout the whole meal and to rate the whole experience? Fantastico! What a revelation, how have we missed Grappolo in the past? One thing’s for sure – now we have discovered it we will be added to their ever growing list of regulars and we hope you will too. Reviewed by Angela Riches September 2015

STOCKDALES OF YORKSHIRE, A WELCOME ADDITION TO THE CITY They opened their doors in September this year for the first time, however their story goes back decades. Bringing together a deep understanding of agriculture & food service to deliver a memorable dining experience - Stockdales certainly has staying power.

As someone who regularly dines out, and who often chooses steak from the menu, I was most excited to visit the brand new Stockdales of Yorkshire, who have taken residence in what was Sam’s Chophouse on South Parade, adding to the already impressive list of fine restaurants in that part of the city. I needed to see what all the fuss was about, so when bosses said they were taking me - who was I to decline? The restaurant is beautiful, very classy and almost understated - but not quite. The reception area is welcoming and the staff made us feel a million dollars from the moment we arrived. Making ourselves at home we perused the wine menu, from which we chose a chardonnay. We pushed the boat out a little with our choice of wines, however, there are plenty of options and you also order by the carafe - I haven’t seen that available anywhere in years. Onto the food! Developed with Michelin-star chef, Anthony Flinn, alongside head chef Jonathon Elvin, the menu is concise, however, I prefer it this way, too much choice overwhelms me. There are a range of ‘snacks’ at the top of the menu, I had already decided I had to try the fondue but then I had already decided I had to try the steak tartare - what is a girl to do? Thats right, order both! We all shared the selection of bread and Ivy’s vintage fondue, and it was very tasty. As a cheese lover, I probably could have gone stronger on the cheddar, but thats just personal taste and the dish was beautiful as it was. Next came the fillet steak tartare with ‘Unami’ yolk and sourdough toast. The flavours were divine and I didn’t want it to end, the salt of the yolk perfectly complimenting the sharper dressing on the sublime beef - I would order this dish all day long and frankly never tire of it. However

my fellow diner - the lady boss herself, offered me a taste of her Potted Chicken Liver Parfait which was just as flavoursome and served in very generous portion with damson jam. Starters down, Malbec ordered and I am waiting with baited breath for the main event... Josper cooked Wagyu sirloin - 10oz of absolute steak perfection. I have never, ever ordered a sirloin steak. If there is no fillet on the menu, I’m out. I don’t like chewy and I don’t like marbling (normally), I know, I see all of your eyes rolling, it is personal and I understand there are more flavoursome cuts that fillet, so on this occasion I bowed to the greater knowledge of my dining partners and opted for the sirloin. I can’t really rave about it enough, my knife glided through it like butter and the flavour was something else. The best steak I have had in recent times and it was a sirloin - I couldn’t believe it. All the meat served here is locally sourced from the Yorkshire Dales and they say it’s not just about the pleasure of the eating, but the culmination of the perfect Yorkshire process; the welfare of the animal, the care of the farmer, the diligence of the preparation, and, of course, the skill of the chef. Well the chef was certainly skilled, Stockdales is a wonderful addition to the city centre and I wouldn’t hesitate to return. If you are not a meat lover, there are other options, but ultimately this is a fine dining steak house serving up carnivorous cuisine in beautiful surroundings. NB. Sunday lunch is my next port of call here, Wagyu beef topside for just £13 served with beer and bone marrow gravy, a Yorkshire pudding, dripping roast potatoes, seasonal greens, honey glazed root veg and cauliflower gratin, sounds like heaven to me! The Old Glen House

The Old Glen House on Baildon Moor - what a find... Rustic wooden beams, wood burning stove crackling away in winter, a vast beer garden for those hazy summer days, a great range of cask beers, good wines and amazing home cooked food. What more could one want from a traditional pub?

There are so many reasons to visit The Old Glen House country pub on Baildon Moor and we discovered so many of them when we recently reviewed them for a meal one evening in late summer. A really welcoming country pub situated on idyllic Baildon Moor, The Old Glen House is a fantastically traditional place frequented by walkers, cyclists, locals and even visitors who see it as a destination place to dine. Its reputation for great gastro pub food is spreading far and wide and it’s because here at H&N we were constantly told we should visit that we decided to do just that!

the pate. For mains we selected Belly Pork with crushed new potatoes, braised cabbage and apple compote and Beef Steak and Ale Pie, diced beef braised in Black Sheep Ale topped with a suet crust and served with seasonal vegetables…yum!

We visited one early evening in late summer and when we arrived there were lots of walkers and cyclists with dogs taking advantage of the beer garden and the last of the sun. It was such a lovely atmosphere and we sat outside for a short while with a drink before settling inside to look at the menu. We were impressed by the relaxed atmosphere, the warmth of the welcome and the menu; we were looking forward to checking out the culinary skills of owner and Chef Ed.

We tried the house red with our meal which was really good and easy drinking and unfortunately, even after a good rest we were unable to fit in a pudding. This was such a shame as I love a good pud and the ones at The Old Glen House looked really good. So this is another reason to take the dog on our next visit; I need to work up a much larger appetite and make sure I fit all three course in.

For our starters we chose the Homemade Pate with toasted brioche and cranberry chutney and the Black Pudding Stack with pancetta, poached egg and apple compote. We always try each other’s to see who made the better choice and in this case it was impossible to decide! My pate was creamy, light and so tasty, made perfect by the accompanying toasted rich brioche and cranberry chutney and the black pudding dish was just gorgeous, although a fair size for a starter and I think it would have curbed my appetite for my main course, so I was pleased I chose 72 | WE ARE HERE & NOW

Once again pretty faultless and obviously homemade; no perfectly formed crust on this pie just superb flavours and good wholesome food. My belly pork was cooked to perfection and the pie was scrumptious with vegetables cooked just how we like them, with a bit of crunch. The portion sizes are very generous but I guess that’s because of the many walkers and cyclists building up large appetites, next time I will take the dog for a long walk on the moor and work up a good hunger!

Another thing we learned on our visit was that there are lots of other things going on at The Old Glen House, Steak Nights where you can have two steaks with all the trimmings plus a bottle of wine for only £25 a couple. Then there’s the regular charity shopping nights and a fantastic bonfire and fireworks display with pie and peas, homemade stew, toffee apples and sweets on the 7th November.
