Las quince letras es uno de los favoritos de la gastronomía étniico Méndez Sosa desde 1992, un lugar sin pretensiones, pero eso sí, un lugar de autenticidad, donde disfrutas comer como acostumbra un oaxaqueño, por ello, es el favorito de tanto locales, nacionales y extranjeros.

Celia es una cocinera oaxaqueña con una gran trayectoria en el ámbito gastronómico de la cocina mexicana, la que abraza con pasión y entrega, ha sido una de las más grandes promotoras y exponentes de la cocina oaxaqueña, además de ser una fiel y constan-te defensora de los sabores de Oaxaca, ha trabajado a favor de la gastronomía nacional apoyando a las coci-neras tradiciones, junto con Adriana Aguilar Escobar otra mujer que trabaja arduamente por su tierra natal que es Oaxaca.

Según la creencia, se dice que las trompas adoptan la forma de una T, simbolizando lágrimas que brotan del ojo y representando tanto la lluvia como la fertilidad. La cultura maya se destaca por su espiritualidad y su conexión con el cosmos y el universo.

Guiados por un Sac´bé (camino blanco), participaremos en un ritual simbólico para establecer una conexión con la madre naturaleza a través de la selva. En el camino, encon-traremos un altar maya que ha sido edificado como un lugar sagrado por nuestro sacerdote, quien será nuestro guía es-piritual durante esta ceremonia.

La forma que no sucumbe a la tendencia contemporánea es más el espíritu y la actitud de la búsqueda intrépida de los sueños pertenecientes al poder de los tiempos.

Chaozhou lleva el nombre del significado de “en Chaozhou, la marea corresponde”, y las olas ilimitadas en el último piso del Hotel Chaozhou son el poder transformador dotado de las ventajas geográficas naturales de Chaozhou, y es la existencia más cómoda del Hotel Chaozhou. Cada vez que se pone el sol, el resplandor del sol poniente proyecta el reflejo de la ciudad en el agua, se sienta contra una barandilla con amigos, bebe un poco borracho y la luz de la luna brilla sobre los hombros de los viajeros.

Hacer una salida espiritual en el tiempo y el espacio entre el pasado y el presente tiene la frescura de estar en otros lugares, y también hay símbolos culturales urbanos que son tranquilos e indiferentes en la memoria.

Chaozhou Kung Fu Tea es la estrella más brillante del arte del té chino. Fue desarrollado en base al método de beber “té suelto” en las dinastías Tang y Song. Thedesign thinking of the trendy hotel is more about the integration and collision of brand and traditional culture, and follows the laws of urban development, using space as the carrier to extend more connection meanings with familiar scenes, cultures and spirits. The form that does not succumb to the contemporary trend is more of the spirit and attitude of the fearless pursuit of dreams belonging to the power of the times.

Chaozhou is named after the meaning of “in Chaozhou, the tide reciprocates”, and the boundless waves on the top floor of Chaozhou Hotel are the transforming power endowed by Chaozhou’s natural geographical advantages, and it is the most comfortable existence of Chaozhou Hotel. Whenever the sun goes down, the afterglow of the setting sun casts the reflection of the city in the water, sits against a railing with friends, drinks a little drunk, and the moonlight shines on the shoulders of travelers.

The all-day dining restaurant on the eighth floor uses localized traditional materials, combined with the neon light and shadow of the sky, to create a cool visual experience. When the night falls in the city, the three-sided panoramic floorto-ceiling windows reflect the outline of the city. In the rich and changing space, it is always full of vitality.

In the intoxicating music, a glass of Dry Martini overlooks this thousand-year-old ancient city. duda de que la característica más importante del Caribe Mexicano, lo que atrae más la mirada de las personas y detona sus sueños de vacacionar en la playa, es el azul turquesa del mar. Yo recuerdo, en mi adolescencia, durante mi primera visita a Cancún, que la vista del mar, desde un corredor del hotel, era realmente asombrosa. Resultaba imposible alejar la vista de uno de los colores más intensos que uno puede experimentar en la vida. Desde el aire, o navegando en su superficie, e incluso bajo ella, el mar Caribe, azul y transparente, es en verdad fascinante, ello sin mencionar la diversidad de vida y colores de sus arrecifes coralinos.

Las fotografías más emblemáticas de Cancún son aquellas que resaltan su arquitectura enmarcada por ese azul espectacular producto de la combinación de varios factores delicadamente balanceados: el fondo blanco de arena calcárea, en un mar relativamente poco profundo, y con aguas cristalinas gracias a la ausencia natural de nutrientes que inhibe el crecimiento de algas y microorganismos.

Es lógico que un lugar con estas características idílicas sea elegido como el principal destino turístico de México. Sin embargo, resulta también paradójico que la manera como lo hemos desarrollado ha ido alterando, y hasta destruyendo los rasgos paradisíacos del oriente de la península de Yucatán. Y ello, sin una necesidad o justificación real. La construcción de infraestructura en la playa, así como la sustitución de la vegetación natural de la duna costera por palapas y cocoteros, ha ocasionado que perdiéramos esas amplísimas playas que eran la envidia del mundo entero.

Más recientemente, el cambio climático y la contaminación de los océanos han producido un fenómeno novedoso e inquietante: la llegada de grandes cantidades de sargazo a nuestras costas, trayendo consigo grandes impactos que ya todos conocemos. Sin embargo hay uno del que se habla poco. En varios puntos y por ciertos períodos de tiempo, cada año perdemos el color azul turquesa del mar, nuestro emblema como destino turístico caribeño por las altas concentraciones de algas tanto vivas como en descomposición. Si continúan aumentando las temperaturas oceánicas y el ser humano persiste en su costumbre de arrojar, sin control, fertilizantes y materia orgánica a los ríos y al mar, es muy probable que la llegada de sargazo sea cada vez mayor y que nuestro tesoro color turquesa esté cada vez en mayor riesgo. Ello nos debería llevar a la reflexión para convertir a Quintana Roo, uno de los primeros sitios más seriamente afectados por el cambio climático, a convertirse en un paladín nacional y global a favor del medio ambiente. Para que eso ocurra, los sectores públicos y privados podrían enfocar políticas e inversiones en tratar las aguas residuales, restaurar y preservar la vegetación de las dunas playeras y los manglares, y aprovechar industrialmente al sargazo.

Así, Quintana Roo tendría la autoridad moral para construir alianzas con las grandes empresas del mundo y colaborar por un turismo bajo en carbono, liderar iniciativas globales para reducir las causas del crecimiento excesivo de sargazo, e impulsar una promoción turística basada en la sustentabilidad. Todo ello no solo favorecería nuestros propios intereses económicos sino que nos haría mucho más competitivos

ante mercados mundiales cada vez más orientados al cuidado ambiental.

Lo que aquí se plantea implica cambios de paradigmas turísticos y económicos, salir de un círculo confortable producto del éxito quintanarroense como campeones del turismo global. Sin embargo, otros países lo han logrado. Existen muchas herramientas como las que ofrece Amigos de Sian

Ka’an en su página de Internet para desarrollar buenas prácticas ambientales en la construcción y operación de hoteles, en el uso de cenotes y actividades ecoturísticas, en el manejo de las aguas residuales, y el impulso de energías limpias. Hacer las cosa de manera diferente implica aprendizajes, mayores esfuerzos y reorientación de recursos, pero el azul turquesa de nuestro hermoso Caribe Mexicano y los grandes beneficios que nos representa, bien lo valen.

Thereis no doubt that the most important characteristic of the Mexican Caribbean, what most attracts people’s eyes and triggers their dreams of vacationing on the beach, is the turquoise blue of the sea. I remember, in my adolescence, during my first visit to Cancun, that the view of the sea, from a corridor of the hotel, was truly amazing. It was impossible to take your eyes off one of the most intense colors one can experience in life. From the air, or sailing on its surface, and even under it, the blue and transparent Caribbean Sea is truly fascinating, not to mention the diversity of life and colors of its coral reefs. The most emblematic photographs of Cancun are those that highlight its architecture framed by that spectacular blue product of the combination of several delicately balanced factors: the white background of calcareous sand, in a relatively shallow sea, and with crystal clear waters thanks to the natural absence of nutrients that inhibits the growth of algae and microorganisms. It is logical that a place with these idyllic characteristics is chosen as the main tourist destination in Mexico. However, it is also paradoxical that the way we have developed it has been altering, and even destroying, the paradisiacal features of the eastern Yucatan peninsula. And this, without a real need or justification. The construction of infrastructure on the beach, as well as the replacement of the natural vegetation of the coastal dune with palapas and coconut palms, has caused us to lose those very wide beaches that were the envy of the entire world.

More recently, climate change and ocean pollution have produced a new and disturbing phenomenon: the arrival of large amounts of sargassum on our coasts, bringing with it great impacts that we are all familiar with. However, there is one that is rarely talked about. At various points and for certain periods of time, each year we lose the turquoise blue color of the sea, our emblem as a Caribbean tourist destination due to the high concentrations of both living and decomposing algae.

If ocean temperatures continue to rise and human beings persist in their habit of throwing fertilizers and organic matter into rivers and the sea without control, it is very likely that the arrival of sargassum will increase and that our turquoise treasure will be increasingly at risk. This should lead us to reflect on converting Quintana Roo, one of the first places most seriously affected by climate change, to become a national and global champion in favor of the environment. For that to happen, the public and private sectors could focus policies and investments on treating wastewater, restoring and preserving the vegetation of beach dunes and mangroves, and industrially exploiting sargassum. Thus, Quintana Roo would have the moral authority to build alliances with the world’s large companies and collaborate for low-carbon tourism, lead global initiatives to reduce the causes of excessive sargassum growth, and promote tourism promotion based on sustainability. All of this would not only favor our own economic interests, but would also make us much more competitive in world markets that are increasingly oriented towards environmental care.

What is proposed here implies changes in tourism and economic paradigms, leaving a comfortable circle as a result of the success of Quintana Roo as champions of global tourism. However, other countries have succeeded. There are many tools such as those offered by Friends of Sian Ka’an on its website to develop good environmental practices in the construction and operation of hotels, in the use of cenotes and ecotourism activities, in the management of wastewater, and the promotion of clean energy. Doing things differently implies learning, greater efforts and redirection of resources, but the turquoise blue of our beautiful Mexican Caribbean and the great benefits it represents are well worth it.

Donde tardaba mas, fue en los lugares, en donde tiempo atrás los biólogos del parque marino habían sembrado corales de diferentes especies y comprobaba su estado de salud y su crecimiento, por la cara que tenia puedo asegurar que estaba sorprendida de la belleza del lugar y su estado de conservación y yo feliz de aprender de la mujer que mas sabe de los océanos en todo el mundo. En todo momento la doctora Silvia estaba acompañada de Alejandro o de alguno de nosotros pues queríamos aprender de ella

A REEF CALLED CUEVONES

In the Bay of Mujeres and around Cancun and Isla Mujeres there are endless extraordinary reefs for snorkeling or diving, in each of them we can find schools of fish. But there is one that in 1997 was severely damaged by a cruise ship and since it is a very small reef, the government decided to close it to the public and have it as a laboratory, therefore activities of any kind are prohibited. Thanks to the good will of the director of the Costa Occidental Park of Isla Mujeres, Punta Cancún and Punta Nizuk, a science teacher José Arturo Gonzales Gonzales, we were able to obtain a special permit to go and verify the state of the place. On this occasion the lady of the oceans came with us, the biologist Silvia Earl who had come from California at the invitation of the president of the Saving Our Shark Foundation.

All together we went to the Cuevones reef, guided by my son Rodrigo and his supervised by the biologist Roberto Ibarra, we began our dive. From the beginning we found a great variety of colored fish that opened up in our path, the more we advanced, the more fish we found of different sizes and shapes, what caught my attention the most was seeing how a lady of more than 80 years moved and enjoyed being underwater, observing each organism, no matter how small, with unusual care and respect.

Where it took longer was in the places where, long ago, the biologists of the marine park had planted corals of different species and checked their state of health and their growth. From the look on her face I can assure you that she was surprised by the beauty of the place and its state of conservation and I am happy to learn from the woman who knows the most about the oceans in the world. At all times, Dr. Silvia was accompanied by Alejandro or one of us because we wanted to learn from her.

It only remains for me to thank Jaime Gonzales and the Saving Our Shark México team for accompanying us to witness that man, when he sets his mind, can do incredible things.

Tuve la oportunidad única de vivir esta experiencia de cerca con la prestigiosa casa de alta costura Christian Dior. Para mi sorpresa DIOR presentaría su colección CRUISE 2024 en México. Y forme parte del equipo para los ajustes de la colección.

El inicio fue realmente excepcional, la atmósfera era cautivadora y misteriosa. Me encontré en un impresionante taller rodeado de talentosos diseñadores, sastres y costureras de México, Europa y África. Fue emocionante presenciar el proceso de creación de estos diseños.

Presenciar el casting de modelos hasta la selección de indumentaria fue asombroso. Trajeron 2000 prendas para la colección la cual tuve acceso y pude observar cuidadosamente como solo eligieron 160 para el gran desfile. Fue como estar en un sueño, quería probármelo todo.

El sueño no acabo ahí; me toco vestir a celebridades cantantes, actrices, modelos luciendo el vestuario de DIOR. Fue extraordinario ver de cerca una colección de moda con un mensaje tan poderoso como lo hizo Maria Grazia Chiuri con un desfile lleno de simbolismos, con modelos mexicanas portando prendas inspiradoras en el arte de Frida Kahlo y una fusión de técnicas de indumentaria y textiles mexicanos. La emoción que experimente no puede ser plenamente descrita con palabras. El equipo de DIOR nos sorprendió gratamente al regalarnos a cada uno de los miembros del ateiler de México unas máquinas de coser que utilizaremos con mucho honor, este gesto fue el broche de oro para culminar esta experiencia inolvidable.

Ihad the unique opportunity to experience this up close with the prestigious haute couture house, Christian Dior. To my surprise, DIOR would present its CRUISE 2024 collection in Mexico, and I was part of the team responsible for the collection’s adjustments.

The beginning was truly exceptional; the atmosphere was captivating and mysterious. I found myself in an impressive workshop surrounded by talented designers, tailors, and seamstresses from Mexico, Europe, and Africa. It was thrilling to witness the process of creating these designs. From witnessing the model casting to the selection of garments, it was astounding. They brought 2000 pieces for the collection, which I had access to, and I carefully observed how they chose only 160 for the grand runway show. It felt like being in a dream; I wanted to try on everything.

The dream didn’t end there; I had the opportunity to dress celebrities - singers, actresses, and models - in DIOR’s wardrobe. It was extraordinary to see a fashion collection up close with such a powerful message, as Maria Grazia Chiuri did with a runway show full of symbolism, with Mexican models wearing inspiring garments inspired by the art of Frida Kahlo and a fusion of Mexican clothing and textile techniques.

The excitement I experienced cannot be fully described in words. The DIOR team pleasantly surprised us by giving each member of the Mexico atelier sewing machines that we will use with great honor. This gesture was the perfect ending to this unforgettable experience.

De acuerdo con el calendario maya “Haab” que sigue puntualmente el ciclo de la tierra en relación al sol, los astrónomos mayas determinaron que para ellos, el ciclo del año no iniciaba en enero, a diferencia del calendario gregoriano que rige nuestros ciclos y que heredamos de la cultura romana; los mayas medían el tiempo calculando hasta 18 ciclos vinculados por los movimientos de las principales luminarias de nuestro sistema (Luna y Sol), así como por los tránsitos planetarios de Venus y la ubicación de constelaciones como las Pléyades.

De acuerdo a este cálculo, el 26 de julio de cada año, daba inicio a un nuevo ciclo y a una nueva personalidad que caracterizaba al nuevo año y que era identificado con su propio glifo o códice que este año 2023 corresponde al MAGO BLANCO / WAAY y Codices Mayas le rinde tributo a nuestra manera siempre original .
