To all Club Members, DeBordieu Club’s Annual Meeting was held on Saturday, March 26th. Club President Donny McElveen presided. Members Nelson Conger, Fred Jackson, Sharon Roach and Peter Welsh were elected to serve a three-year term After the Members meeting, DeBordieu Club’s Board of Governors held it annual organizational meeting. The following slate of officers for the upcoming year was elected: Robert Oliver, President Bob Reid, Vice President Fred Jackson, Treasurer Peter Welsh, Secretary Additionally, Jenny Johnson was named to serve on the Executive Committee with the above-named officers. As part of the organizational meeting Committee Chairs are nominated and approved by the Board. The following Committee Chairs were approved at the meeting: Finance- Fred Jackson Golf- Nelson Conger Greens- Bob Reid House- Jenny Johnson Legal- Jane Ellzey Pools- Lourdes Beard Membership- Peggy Dellasega Tennis/Fitness- Sharon Roach Property- Greg Dykes At the meeting Tom Davis informed the Board that he was resigning his Board Seat due to commitments that he has for the upcoming year. Tom was scheduled to Chair the Long Range Planning Committee. With his resignation the Board will appoint another member to take Tom’s position. Tom has been a valued Board member having been Chair of the Finance Committee for the last three years. His wisdom and counsel will be missed by the Board. Finally, the Board established an Ad-Hoc Committee to oversee the renovation of the Beach Club. Peter Welsh has agreed to head this Committee. Peter’s experience in development and project management will ensure that the project is completed on time and within budget. I am honored to serve as the Club’s president and I look forward to best serving the interests of all of the membership. Please use and enjoy our Club often. I look forward to seeing you at the Club. Mini Shrimp Cornets
Coconut Macaroons
Ingredients 1 TBLS unsalted butter ¼ c finely chopped onion 1-pound large shrimp peeled, deveined, and coarsely chopped 2 TBLS Dry Sherry 1 TBLS Chopped Tarragon ½ TSP Salt ¼ TSP Freshly Ground Pepper 1 Pk Frozen Puffy Pastry thawed (1 Sheet 17.3 oz) All Purpose Flour for Dusting 1 Large egg 1 TBLS Milk
Ingredients 14 oz bag sweetened flaked coconut ¾ cup sweetened condensed milk (see note below on measurement) 1 teaspoon vanilla extract 2 large eggs whites 1/4 teaspoon salt ½ cup melted semi-sweet chocolate
Preparation 1. Put oven racks in upper and lower thirds of oven and preheat oven to 400°F. Line 2 large baking sheets with parchment paper. 2. Heat butter in an 8-inch skillet over moderately low heat until foam subsides, then cook onion, stirring occasionally, until softened but not browned, about 2 minutes. Transfer to a bowl to cool. 3. When onion is cool, add shrimp, Sherry, tarragon, salt, and pepper and stir until combined well. 4. Roll out 1 sheet of pastry on a lightly floured surface into a 12-inch square. Cut into thirds in one direction, then into fourths in the other direction to make 12 (3- by 4-inch) rectangles. Cut each rectangle in half diagonally to form 2 triangles. Place 1 triangle on a work surface with longest edge nearest you, then put 1 teaspoon shrimp filling in center of triangle. Bring bottom corner of shortest side up to top point, then wrap remaining corner around resulting cone. Pinch to seal, then transfer to a lined baking sheet. Form more cornets in same manner, then repeat with remaining sheet of pastry. Chill first sheet of cornets, loosely covered, while making second. 5. Whisk together egg and milk and lightly brush some of egg wash over top of pastries. 6. Bake in upper and lower thirds of oven, switching position of sheets halfway through baking, until golden, 18 to 20 minutes total. 7. Cool cornets on sheets on racks 5 minutes, then gently loosen from parchment with a spatula. Serve warm.
Preparation 1. Preheat the oven to 325°F. Line two baking sheets with parchment paper. 2. Mix the coconut, sweetened condensed milk and vanilla extract in medium size bowl. Set aside. 3. Use an electric mixer with the whisk attachment beat the egg whites and salt until stiff peaks form. Fold the egg whites into the coconut mixture. 4. Use a small ice cream scoop, form a tablespoon size mound of the mixture on the prepared baking sheets, spacing about 1 inch apart. 5. Bake for 20-23 min. I like to rotate my pans in the oven every five minutes, so they bake evenly. Once they are golden brown around the edges they are finished! 6. Once cooled, use your melted chocolate to drizzle on top. 7. Enjoy!!

St. Patrick’s Day
What a lovely time we had celebrating St. Patrick’s Day! We featured Greg Van Allen as our live entertainment for the evening and had some scrumptious traditional Irish dishes. Be on the lookout for club events happening this Spring!
Birds of Prey We had a wonderful time with Mr. Stephen Schabel, the Director of Education at the Avian Conservation Center. He, alongside his feathered friends, gave us an exciting evening filled with new knowledge and a better understanding of the wildlife we have from here all the way to South America. It truly was a fascinating event! Fun Fact: The Barred Owl has a very distinct pattern in its call. If you are ever walking through the woods and hear “who cooks for you” that is the sweet sound of a Barred Owl.

3 Great Drills for Putting Gate Drill – Place two tees in the ground slightly wider apart than the head of your putter and 3 or 4 feet from the hole. Place a towel on the ground under your feet so you don’t wear out the green. Simply hit putts swinging the putter through the gate created by the tees.

Lag/Towel Drill – Place a towel 6 inches behind a hole. Practice 15, 25, and 35 foot putts trying to hole the putt and/or leave the ball on the towel behind the hole. Try up and downhill putts and gain a feel for always rolling the ball the appropriate distance past the hole.

Katie Long We are so excited to introduce Katie Long as our new Banquet Manager here at DeBordieu Club. Katie was born and raised in Long Island, New York, but spent her summers in Pawleys Island. She has lived along the coast of the Carolina’s since 2006, and has been in the catering industry for fifteen years Katie has spent the last six years doing special events and Gala’s with MOSAIC Catering & Events in Charleston, SC and Richmond, VA. She’s a beach girl at heart with three passions. She enjoys gardening, volleyball, and her fur baby, Willow. Katie is excited to be joining our growing banquets and club events team here at DeBordieu Club.
