Blackened Chicken w/ Rosemary Cream Sauce Ingredients 4 (4 oz.) Chicken Breasts 2 oz. Blackening Seasoning 4 cloves Garlic, minced 2 oz. Olive Oil Salt and pepper to taste Garlic Rosemary Cream Sauce

Garlic Rosemary Cream Sauce Ingredients 12 cloves Garlic, roasted and minced 1 pint Heavy Cream ½ lb. Unsalted Butter ¼ cup Chicken Stock- Vegetable stock can be used in place of chicken stock for a vegetarian sauce. ¼ cup Parmesan Cheese, shredded ¼ cup Romano Cheese, shredded 2 oz. Boursin Cheese Cooked roux 3 sprigs fresh Rosemary Kosher salt and ground white peppercorns to taste Parmesan Crisps Preparation
Blackened Chicken Marinate chicken breast with oil, kosher salt, black pepper, blackening seasoning, and fresh garlic. Allow to marinate for 4 hours. Preheat oven to 350°F. Heat skillet or griddle over high heat and add oil. Add chicken to the skillet and brown on both sides. Place in pre-heated oven to allow chicken to finish cooking to 165°F. Garlic Rosemary Cream Sauce Place saucepan on a hot plate. Add minced garlic and cubed unsalted butter. Melt butter, then slowly whisk in heavy cream. Once combined, add chicken stock. Combine shredded cheeses in a bowl and slowly add cheese mixture and boursin cheese to the sauce, continuing to whisk constantly. Once cheese has melted into the sauce, allow to come to a subtle boil. Gradually whisk in cooked roux until desired consistency is reached. Add kosher salt and white pepper to taste. Add rosemary and allow too steep over low heat for 30 minutes. Remove rosemary and serve. Parmesan Crisps Preheat oven to 350°F. Place pan liner on baking pan. Lightly spray liner with pan spray. Grate 2 oz. Parmesan cheese and spread cheese over a small area of the pan, leaving small spaces between shreds. Bake for approximately 5 to 7 minutes or until golden brown (time may vary based on oven settings). After removing from oven, pull the pan liner off the hot pan and allow to cool. Once cheese has cooled, break into approximately 4x2” pieces. Use as garnish.
May is National Pet Month. Below is a sweet treat to make for your beloved furry family member. Homemade Peanut Butter Dog Treats Dog Treats 2 ½ Cups Whole Wheat Flour 1 Egg 1 Cup Peanut Butter 1 Cup Water 2 Tablespoons Honey Frosting 1/3 Cup Cornstarch 2 Tablespoons Peanut Butter 1 Tablespoon Honey 3-4 . Tablespoons Hot Water
Preparation Preheat the oven to 350F. In a large bowl combine flour and the egg. Add peanut butter, water, honey and stir until you have stiff dough. the dough becomes very firm and sticky. you may need to use your hands, or the paddle attachment on your mixer. On a lightly floured surface, roll out the dough about 1/2 inch thick and use a cookie cutter to make fun shapes. the treats barely spread and rise, so get creative with your shapes. Bake for 18-20 minutes, until golden. Once done, set aside to cool. (If you have smaller cookies, use less time, otherwise the bottom might burn.) To make frosting, combine the peanut butter and honey in a microwavable bowl, and heat in the microwave in 15 second increments, stirring in between, until melted. Add melted peanut butter mixture to cornstarch and stir until just combined. Slowly add in water 1 Tablespoon at a time until you have reached the consistency that you would like. For a thinner frosting, add more water. Add frosting to a piping bag and pipe designs on top of each dog treat. Frost treats with the peanut butter/honey mixture. Megan Churchill Pastry Chef

The production of dairy products contributes significantly to global emissions; making up roughly 4% of emissions per year. Although oat milk has higher calorie content than almond milk, it’s the more earth-friendly option. It takes about six times as much water as it does oat milk to produce a carton of almond milk. If you’re an advocate of the sustainable food movement, you should consider drinking oat milk instead of other alternatives. Did you know? Coconut milk may help reduce appetite, assist with weight loss, and improve blood cholesterol levels. Oat milk contains beta-glucan, which can help lower cholesterol and blood sugar levels. Almond milk is an excellent source of vitamin E, naturally containing 22% of the recommended daily vitamin E requirement in a 3.5-ounce portion. Managing Your Golf Game Often when someone wants to lower their scores, they think they need to start hitting it further or hole a few more putts. That helps, but an easier way to lower your scores is to simply manage your game better. Its possible to lower your scores by 3-5 shots without changing your swing but instead changing the way you think around the golf course. Below are a few tips to try the next time you are on the course and watch your scores drop!

Don’t always play the hero shot. If you find a tough spot, punch out, get the ball back in play and save a bogey rather than risk the big number. • Play your own game, and don’t try to do things you are not comfortable doing. If you hit a shot that starts left and comes back right, then play for that when you are setting up to hit your shot. • Putt first, chip second, pitch third on the green. Whenever possible keep the ball on the ground around the greens and your mistakes will not be as big. 1 - SERVING - Concentrate on getting your serve in each and every time, preferably in the back half of the service area. A serve that does not land in costs your team a chance to score a point. Remember a deep serve usually forces a short return. 2 - RETURNING - Return the serve as deep as possible (within 5 feet) of the baseline, aim down the middle when possible. A return that does not go in gives your opponent an easy point every time. A deep return keeps the servers back so the returning player can join their partner at the NZV line and await the servers all important third shot. 3 - THIRD SHOT - Drive a low shot down the middle or drop the ball in the kitchen and work your way to the NZV line to battle your opponent. The serving team is at such a disadvantage because they must let the return bounce while the returners pretty much get established at the NVZ line as soon as the return the serve. 4 - THINK LITTLE PICTURE - With so much going on and so many things to remember on the court, concentrate on the “little picture.” In other words, watch the ball carefully and track it with your eyes and paddle. This will ensure you will be ready to make the right shot when the ball is played in your direction. Until next time, happy pickling and keep smiling and having fun out there.

Dream Weddings at DeBordieu Club
We are so excited to have the Clubhouse renovation completed as wedding season is in full swing. The project has not only modernized and in the case of the Marsh Grille, enlarged, the event spaces but it has also created a space for the membership to gather when the Marsh Grille is in use for a private event which we are thrilled about. We also want to announce our 2nd wedding tasting for 2022. It will take place on Sunday, July 31, 2022. We are looking forward to seeing our couples and their families and tasting some great food to aid in the planning of their special day. Caroline & Kyle Penland 3/12/22 I cannot say enough good things about Caroline, Kyle and their families. Mother nature dealt them adversity and they knocked it out of the park with their understanding and generosity and they had a great wedding, maybe not the one their originally planned, but it was a beautiful and fun wedding that we will never forget. They had an intimate wedding in the Pavilion, followed by a grand reception in the Clubhouse. Their weekend was completed by a men’s lunch in the Marsh Grille on Friday as well as a Rehearsal Dinner in the Beach Club, a Welcome Party on the Oceanside Lawn and a morning-after-wedding brunch in the Pavilion.
