Greetings DeBordieu Membership, Over the last couple of months, I have been able to watch the Clubhouse transform into something new and beautiful. As we approach the end of this project, I look forward to sharing all the exciting and fresh changes with you. As I write this, we are still working on a firm start date to transition lunch back to its Marsh Grille home. Chef Wilson and his team are working diligently to create lunch offerings that you have requested and will enjoy. Keep an eye out for our signature Chicken Philly Cheesesteak, along with additional light and healthy selections. We will be adding items like fresh quiche and house smoked chicken wings. As we wrap up Clubhouse renovations, I will communicate the opening date and hours of operation as soon as possible. I am also pleased to announce that we are opening the Gazebo early this year, as it looks like we will have many beautiful weekends ahead. The Gazebo will open Thursday March 3rd at 4:00 p.m. The operating hours through the early spring months will be Thursday and Friday 4:00 p.m. – 9:00 p.m. Saturday 12:00 – 9:00 p.m. and Sunday 12:00 p.m. – 6:00 p.m. Please keep in mind that these hours are all contingent on good weather. Tina “Sunshine” Parker will be leading the team at the Gazebo this year. Many of you know Sunshine from last year, and we all will enjoy seeing her smiling face out there again this year. We will not start Blue Heron food service until we get closer to season. We are working on some light bites for your enjoyment at the Gazebo during the interim. I would like to personally recognize Chef Akeem “Boochie” Wilson. He has shown true leadership and flexibility since stepping up as Interim Executive Chef. He has been gracious and quick to respond to the many changes that have been implemented over the last couple of months. He remains a solid leader for our Catering Department as we move into our busy wedding season. He is always looking for ways to bring fresh and local ingredients to our menus. I look forward to seeing what Chef Wilson will bring to you all as we move forward. I would like to wish everyone a safe, happy & healthy spring season. Scott A. DeBordieu’s Signature Shrimp Salad Ingredients 2 lbs. shrimp, peeled and deveined 2 quarts water 2 tbsp Old Bay ½ cup lemon juice 4 cups mayonnaise 2 tbsp Sambal chili paste, with seeds strained out (optional) 2 tbsp whole grain mustard 1 bunch cilantro, finely chopped 4 ribs celery, finely diced 1 red bell pepper, finely diced Salt & pepper Preparation 1. Add water, Old Bay, and ¼ cup lemon juice to a large pot and bring to a boil. 2. Place shrimp in a large bowl. Pour boiling liquid over the shrimp and allow to steep until fully cooked, or pink and firm. 3. Once cooked, remove the shrimp from the hot water and allow them to cool. Chop into bite size pieces. 4. Combine mayonnaise, sambal (if using), mustard, cilantro, and ¼ cup lemon juice. Season with salt and pepper to taste. 5. Mix shrimp, celery, and bell pepper in a large bowl. Add enough of the mayonnaise mixture to coat the shrimp evenly. Season with more salt and pepper, if necessary.

Lemon Berry Parfait Ingredients 2 large eggs 1 1/4 cups sugar 1/2 cup freshly squeezed lemon juice (strained) 4 tablespoons unsalted butter 2 teaspoons grated lemon zest. 1 cup whipping cream, chilled 5 cups of any berries you like. Preparation 1. Crack the eggs into a medium bowl, whisk. 2. Add the sugar and lemon juice to eggs and whisk until sugar is mostly dissolved. Set aside. 3. Melt your butter in the top of double boiler (glass or metal bowl on top of a pot filled almost halfway with boiling water). 4. Add the egg mixture into the butter and cook, stirring constantly, until smooth. This step is important, because if you do not stir constantly, it will scramble the egg. Make sure your curd is thick enough to coat the back of a wooden spoon. If you get any bits of cooked egg, pass the mixture through a fine sieve to remove. 5. Stir in the lemon zest, transfer into another bowl, let cool. 6. Pour the chilled whipping cream into the bowl of an electric mixer and beat until the cream holds firm peaks. Be sure the lemon mixture is completely cool; then, using a spatula, gently fold it into the whipped cream. 7. Once you have folded your cream into the lemon curd; you can now layer your parfait with any berries that you like!

FOOD FACTS Dark chocolate has huge health benefits Chocolate was first seen in bar form around 1910. Dark chocolate is made from the roasted beans of the cacao tree and has many health benefits. From improving bad cholesterol to lowering blood pressure, helping to reduce stress, and improving vision, it’s definitely worth eating a square or two a day. A study by Harvard also found that drinking two cups of hot chocolate a day prevented memory decline. Drink up! Raspberries are a member of the rose family As are cherries, apricots, plums, pears, apples, quinces, peaches, strawberries, and blackberries. These types of fruits typically have flowers with five equal petals arranged around a central core. Unlike many other fruit snacks, once picked, unripe raspberries do not ripen. Broccoli contains more protein than steak Besides the usual nutrition one gets from eating their greens, broccoli has a great deal of protein. Calorie for calorie, there is more protein in broccoli than steak. And it doesn’t come with all those saturated and trans fats or cholesterol, so you can get all the protein you need with a significantly lower risk of cardiovascular disease with this healthy food. UMMER CAMPS

Dear Club Members, We cannot wait to welcome you to Camp DeBordieu for Summer 2022! We are thrilled to be partnering with KE Camps to provide your children with the highest quality summer camp experience possible. KE Camps operates summer camps at private country clubs nationwide. While large in scope with over 170 camps in 35 states, KE Camps is a familyowned operation. The KE Camps team (all of whom are “camp people” themselves!) is dedicated to infusing the warmth and spirit of a traditional summer camp experience into the club setting. They look forward to passing on their love and passion for camp to your family this summer! Camp DeBordieu will offer children ages 5 to 12 the opportunity to experience a variety of exciting and innovative programs within the familiar, safe, and beautiful grounds of our club. The small group size will provide a feeling of family for every camper. Each week’s activity schedule will include a combination of Arts & Crafts, Fun with Foods, STEM Activities, Team Building, Super Science, Group Games, Wacky Wednesday and Friday Funday theme days, and Thankful Thursday community service projects. In addition, campers will participate in golf and tennis each week with the club’s pros and will also enjoy a free swim period daily. KE Camps is committed to providing a dynamic camp schedule, where campers will participate in a combination of athletic, creative, and educational activities – all while thriving in a supportive and encouraging environment. Beyond the activities offered, the inclusive atmosphere of camp allows each child to grow in confidence, independence, and social skills, implemented through the KE Camps’ Value System of SMILE. Enrollment is flexible, so campers may enroll for as many weekly sessions as they’d like. Enrollment is currently open to Club Members and Non-Members, providing the perfect opportunity to bring a friend to camp! KE Camps prides themselves on hiring a staff team with a strong passion for working with children in a camp setting. It is the goal of the camp director and counselors to make every camper feel welcome, successful, and cared for every day. With an average staff to camper ratio of 1:6, you can be confident your child is fully supervised by a team of qualified and adult professionals, all of whom will have undergone an extensive interview and training process. Reminders About Proper Golf Course Care

As the winter season begins to wind down, it is an important time to be reminded of proper course care as grasses begin to come out of dormancy. Below you will find proper practices to preserve the health of the turf on the golf course, and other practices that will ensure all golfers play an equally conditioned golf course from round to round. The Professional Staff thanks you in advance for your commitment to these course care practices! Please fix your ball marks on the green. We still see way too many ball marks on the greens. It is proper etiquette, and we want the best experience for all to enjoy.

Please sand your divots on the course. Again, it is proper etiquette and important for leveling the turf especially when the grass is beginning to come out of dormancy. Tips for properly entering and exiting the bunkers. Please enter the bunker from the low side for safety reasons then rake behind you to easily capture all your footprints as you exit the bunker. Always leave the rake on the low side of the bunker. Preserving the turf on the Practice Tee

Sand Bottles are provided on both sides of the golf cart. Refills are located by #10 tee and by the restrooms on holes #5, and #15. Carts must remain outside of all waste areas. Carts must remain on the paths on all Par 3’s. Carts must return to the cart path at the cart arrows in all fairways. Carts may enter the fairway after passing all the teeing areas.

There are very few points won from the pickleball serve since the ball must be served in an underhand motion with the paddle below the wrist striking the ball at or below the waist. Due to the nature of the service motion, it is difficult to create enough pace to result in a “winner” or an “ace.” Instead, here’s a few service pointers to help your game improve in consistency: Make sure the serve goes in. Sometimes easier said than done……. Afterall, it’s an uncontested shot to your opponent to start the point. Take your time, follow through and put the ball in play in the designated service area for your opponent to return. Rarely will you gain a competitive advantage by serving so hard your opponent cannot return it. Concentrate on getting the ball in every time. When you serve the ball out or into the net you’ve just denied your team a chance at winning an all-important point. The same idea applies to the return of service: Make sure the return goes into play in your opponent’s court. Like the serve, it’s an uncontested shot. Remember your opponent must let it bounce before playing it back to you. Missing the return of service results in your opponent getting an easy point every time. Concentrate and plan exactly where you intend for your return to go.
