Greetings DeBordieu Membership, As we enter into a new year, we also enter into a new direction with the food and beverage outlets here at DeBordieu Club. I am very excited to be a part of the transitions with the updates and expansions to the Clubhouse and The Beach Club. With the recent departure of the Executive Chef, this will be the most important role we fill as we move forward. We have had a lot of feedback regarding the direction you would like to see our food and beverage offerings become. We will be meticulous and thorough in this search to ensure we find the best candidate for the Club. In the interim, Executive Sous Chef Akeem “Boochie” Wilson will be leading our culinary team. Along with him, Junior Sous Chef Harrison Moran will continue to lead the team at The Beach Club during this time. I am confident we will continue to evolve and create the dining experiences you enjoy. I look forward to the coming year and all of the great things we will accomplish. Southern Hopping John’s Ingredients ½ pound Bacon (or ham hock, cut into small pieces) 2 teaspoons Bacon Drippings 1Vidalia Onion (chopped) 5 stalks Celery (chopped) 3 cloves Garlic (minced) 2 cups Heirloom Fresh Black-Eyed Peas 4 cups Chicken Stock (or water, add more water if needed) 0.12 teaspoon Cayenne Pepper 1 tablespoon Kosher Salt ½ teaspoon Pepper 3 cups Steamed White Rice add Scallions (for garnish
Preparation DIRECTIONS 1.Soak black-eyed peas in cold water for 24-36 hours. Occasionally remove the scum that rises to the top of the water. Rinse halfway through the 24 hours, add more water to the pot, and repeat. Drain peas. (If you don’t have time to soak your peas, place them in a pot and bring to a boil. Turn off the heat once it reaches a boil and let the peas stand for 1 hour. Drain and use recipe.) 2.If you’re using bacon, place bacon in a large pot over medium heat until bacon is crisp. Remove all but about 3 tablespoons of bacon drippings but leave the bacon in the pan. If you are using a ham hock, heat bacon drippings in a pot. Add celery and 1 cup of onions to the pan/pot and sauté until soft (about 4 minutes). Add garlic and cook 2 minutes more. 3.Place black-eyed peas, chicken stock, cayenne pepper, salt, and pepper into the pan. If you are using a ham hock, place it in the pot with the vegetables. Bring to a boil, and then lower to simmer for about 45 minutes to an hour, or until peas are creamy and tender. Stir occasionally. If the liquid evaporates, add more water. 4. . Meanwhile, cook the rice. 5.Once the peas are done, remove the ham hock, pull any meat off the bone, and place the meat into the collards if you’re serving with collards (which I highly suggest). Adjust seasonings and top with scallions. Serve over rice.
Pan Seared Thick Cut Ribeye Steaks with Green Peppercorn Sauce Ingredients 2 T Olive Oil 2 Shallots diced 2 cloves Garlic, peeled & smashed 3 Sprigs fresh Thyme 1 Cup of Brandy 1 box of Favorite Beef Stock 2 Cups of Heavy Cream 1 T Dijon Mustard ½ C Green Peppercorns in brine, drained, reserve brine Preparation DIRECTIONS Peppercorn sauce is a French culinary cream sauce prepared with reduced cream & green peppercorns, with the beautiful notes of Cognac in the background. This is a classic steak sauce, with minimal ingredients, guaranteed to wow your guests. Bring your Ribeye steaks to room temperature & coat with fresh black pepper and kosher salt on both sides. Sear in a very hot pan with olive oil. Remove steak to a baking pan and finish in oven until desired temperature, 110 for Medium Rare. Now for the sauce. Take the same pan you seared your steaks in, add shallots, garlic, & thyme; sauté for 1 to 2 minutes, (do not burn your garlic!) then, off heat, add brandy & flambe using a long kitchen match. After flame dies down, return to the heat, add beef stock and reduce by about half. Strain out solids, then add 2 cups heavy cream & mustard. Reduce by half again, then shut off heat & add green peppercorns. Taste for seasoning. If you need a little more flavor, add a teaspoon of reserved brine. Don’t forget to let your steaks rest for a few minutes before diving in. Enjoy!
My Favorite Oyster Pan Roast (Just Like the “Oyster Bar” in Grand Central Station) I like to serve this with grilled bread or toast points Ingredients •2 tablespoons unsalted butter, plus more as needed •12 oysters, shucked and liquor reserved •1 tablespoon finely minced shallot •1/3 cup (80 ml) dry white wine •1 tablespoon Worcestershire sauce • . 2 teaspoons Tabasco sauce •2 tablespoons chili sauce (like Heinz) •1/2 cup (120 ml) heavy cream •Salt, to taste Preparation In a sauté pan over medium-high heat, melt 1 tablespoon of the butter. Add the oysters and sauté until the oysters begin to plump up on both sides and are halfway cooked, about 2 minutes each side. Pull the oysters out of the pan and set aside. Using the same pan and adding more butter if needed, sweat the shallot until translucent, about 5 minutes. Add the white wine and stir to deglaze the pan. Simmer to reduce the liquid by half, about 2 minutes. Add the oyster liquor, Worcestershire sauce, Tabasco, chili sauce, and cream. Bring to a simmer and let the sauce reduce by half, about 5 minutes. Add the oysters to the sauce and remove the pan from the heat (the oysters will finish cooking in the hot sauce). Stir in the remaining 1 tablespoon butter and season with salt and pepper to taste. Serve right away.
Hazelnut mousse Ingredients •3/4 cup Cream cheese, softened •1 teaspoon vanilla extract •3/4 cup Nutella •1.5 cups heavy cream Preparation In a large mixing bowl, beat the cream cheese with an electric mixer until smooth. Add the vanilla and beat again. Then add the Nutella and beat for 30 seconds or so, scraping down the sides occasionally, until the mixture is combined. In a separate bowl, beat the heavy cream until thick and whipped. Fold the whip cream into Nutella mixture until the mixture is creamy. This will make enough for about 4 servings. Let chill in the fridge for 3-4 hours before serving. You can always add extra whip cream on top or fresh berries once chilled! Enjoy!

Good Friend’s Charity: Good Friends Gather to Celebrate the Season of Giving
Here in DeBordieu, our blessings are abundant - a beautiful community surrounded by pristine nature, beautiful homes and gracious neighbors. We have much for which to be thankful. But not all of our neighbors live in such abundance. Many Georgetown County residents live paycheck-to-paycheck. One unforeseen medical expense, car repair or other financial hiccup could forever negatively impact the lives of these individuals and their families. That is where Good Friends of Georgetown County steps in to help.
The Local Sheriff ’s Department Children in Crisis: On Thursday, December 16th, our membership put together a fabulous luncheon in support of the Local Sheriff ’s Departments, Children in Crisis. This charity collects stuffed animals that first responders give to comfort children in need when responding to a scene. The event was a huge success! We would like to take the time to thank all those who made this event possible!
Since 2001, a group of local women has gotten together each December to celebrate the spirit of giving at the annual Good Friends Holiday Luncheon, the group’s primary fundraiser. COVID has curtailed our traditional gathering the last two years but has not hindered our spirit! Rather than gathering en masse at the DeBordieu Clubhouse, DeBordieu ladies and ladies from the surrounding area hosted smaller luncheons, drop-ins, drive-bys and cocktail parties to ensure our ambitious goal of $100,000 was met. We are thrilled to report our goal was achieved! Todate, 2021 has been our most successful fundraising year. Good Friends of Georgetown County is a registered non-profit. 100% of donations are distributed back to Georgetown County residents who find themselves in temporary financial hardship and qualify for a one-time, urgent need gift. All recipients are screened for eligibility, as they generally do not qualify for state or federal assistance programs. Money is never given to the recipient; rather, it is paid directly to satisfy the need of each recipient. DeBordieu is a community filled with an abundance of friendship, beauty and generosity. Our wants are few and our blessings are many. Good Friends captures the spirit of those blessings and shares them to make Georgetown County a better place for all who live here. Good Friend’s Charity: The Good Friend’s Charity was founded by a group of women who wanted to help provide a financial safety net for individuals in need living paycheck to paycheck. The founders as well as many volunteers participate in luncheons, holiday drop-ins, Santa drive-thru’s, cocktail hours, etc to help give back to those in need. This year they helped contribute to the Local Sheriff ’s Departments, Children in Crisis by hosting a stuffed animal drive featuring Santa and his Elves here at the Clubhouse. Together the Luncheon and Drive collected over 200 stuffed animals for children in need. Thank you to all those who took the time to either volunteer or donate! No contribution goes unnoticed.

On Sunday, December 5th the DeBordieu Home and Garden Club hosted their annual Holiday Dinner. This year's beneficiary was The Children's Recovery Center - a child advocacy center serving Georgetown and Horry Counties' youngest victims of abuse & neglect. The Children's Recovery Center proudly provides their services free of charge. A huge thank you to all of those who participated! The event was a huge success!

Fairway Bunker Shots Struggling to hit fairway bunker shots? If you’re standing over a fairway bunker shot thinking: ‘Pick the ball out of the sand,’ you’re already setting yourself up for trouble. You should ALWAYS hit the ball and then the sand when you’re hitting out of a fairway bunker. To get that good contact you should do these four things: 1. Play the ball back in your stance. Moving the ball back in your stance pushes the low point of your swing back, so the first thing you’ll contact on your downswing is the ball, not the sand. 2. Dig your feet in. To hit a good fairway bunker shot, you must be stable. Digging your feet in creates a more stable base for your swing.

3. Choke up on your iron. Pay attention to how far you dug your feet into the sand, because you’ll want to choke down on your iron the same amount. This move will keep you from chunking it.

4. Balance your weight. Balance your weight 50/50 on each foot or even slightly more on your front foot. This goes back to digging your feet in: starting with your weight evenly distributed between your two feet will help keep you stable. Don’t let your weight transfer to your back foot during your back swing instead

Tip from the Pro - Forehand 1. The take back - Great unit turn that gets your racket back all the way behind the player before the player starts the forward swing. Having a full body turn will make this process easier. It’s not just the arm that moves back, the full body movement is key. The left arm across the body will help ensure the turn and not taking the racquet back too far.

2. Contact point - Keep the racket facing your target at contact. Keep the palm and the racquet face pointing away from the body through the whole swing. Racquet face or the palm should not face the body at any time.

3. Correct finish - Smooth continuing motion all the way above the shoulder. To generate a good follow through you must make sure to stay relaxed and smooth. Do not stop your arm, keep your body relaxed and let go. Finish your swing with a high elbow pointed towards the target. This will make it easier to rotate your wrist to apply top spin. Let the rotation of the body and the racquet take the load and release.
DEBORDIEU PICKLEBALL UPDATE The DeBordieu Ladies Holiday Classic Pickleball Tournament was held December 11, 2021.
Four (4) teams participated in the event held in unseasonably but very welcome warm 70 degree plus weather. First, the teams completed a round robin tournament consisting of 3 games for seeding in the semi-finals. Then the teams played it out to determine the champion and second and third places. The competition and skill level were great with many close games. The camaraderie and good sportsmanship enjoyed by all was great to see. Congratulations to our winners Debbie Young and Jacquie Champion and all who competed in DeBordieu’s first official pickleball tournament. Final results were as follows: FIRST PLACE: Debbie Young / Jacquie Champion (overall record 5 – 0) SECOND PLACE: Ann Predieri / Lourdes Beard (2 – 3)

With the addition of the 2 new stand-alone courts in 2019, the courts have been super busy with activities and reservations. On holiday weekends especially, all 4 pickleball courts are busy from early in the morning well through mid-afternoon. There are several opportunities for open play during one of the 4 weekly mixers as well as some organized group efforts for the competitive ladies and men. Keep an eye out for new offerings and tournaments in 2022. For the colder months of January and February, we’ll be having monthly introductory classes for new players as well as Skills and Drills practices for both the 2.5/3.0 level and the 3.0+ level. Keep an eye out for these classes as they offer drills and instruction to help take your game to the next level not to mention they’re a great workout and a lot of fun. Hope to see you all on the courts soon!
