Aus der Region für die Region Engadin und ihre internationalen Gäste! Dieses Magazin wurde lokal produziert. Die Region Engadin war nicht nur Hintergrund für unsere Fotoaufnahmen, auch (fast) alle Agierenden und Mitwirkenden leben und arbeiten in der Region. Der Herausgeber Conradin Conrad bedankt sich bei allen, die an der Entstehung des Magazins beteiligt waren und die hohe Qualität erst möglich gemacht haben: Der grösste Dank gilt den Gästen, die das Engadin zu dem machen was es ist und unser Sortiment Winter für Winter annehmen und schätzen. Christine und Curdin haben den Skiservice 1976 gegründet und kontinuierlich aufgebaut. Heute sind wir stolz auf unsere Tradition, passen unsere Massnahmen aber stets den neuen Gegebenheiten an. Dabei orientieren wir uns sowohl an den Bedürfnissen und Wünschen unserer Gäste als auch an den Entwicklungen im Engadin. Gleichzeitig haben wir das Glück, unsere Vision mit anderen lokalen Unternehmen teilen zu dürfen. Allen gemeinsam ist die Ambition, die Identität der Destination Engadin zu wahren und dennoch authentisch weiterzuentwickeln. Jubiläum und wird als Geburtsstätte des Wintersports gehandelt. Ein Resultat dessen sind die grossen Athleten und Athletinnen die das Engadin hervorgebracht hat. Die Berge und der Schnee geben ihnen das ideale Trainingsterrain, aber um an die ersehnte Weltspitze zu gelangen, müssen sie viel Zeit investieren und hart an sich arbeiten. Dear friends, dear guests A warm welcome to the Engadin. It is a pleasure for us to present to you the new edition of our winter magazine. As you will recognise from the photo gallery, it was produced locally in cooperation with businesses, creatives and service providers in the region. Christine and Curdin founded the Skiservice in 1976 und have continued to build it up. While we are proud of our tradition today, we also adapt our activities to reflect the circumstances by orienting ourselves towards the needs and desires of our guests as well as towards the development of the Engadin. We are lucky to share this vision with other local businesses. Our common ambition is to preserve the identity and stimulate the authentic evolvement of the destination Engadin. This issue features stories of these ventures; how time catches up with their sustainable profile and how they are both traditional and future-oriented. The Engadin is characterised by winter sports and the strong tradition of sports-related tourism. The region celebrates its 150th anniversary in 2014/15 and is seen as the birth place of winter sports. The unique mountain landscape does not only attract winter sports enthusiasts from all across the globe; even locals are under its spell. As a result, the Engadin has fostered a number of elite athletes. The mountains and the snow give them excellent training grounds, but they also need to invest a considerable amount of time and hard work to reach the top of the world class. You can read more about our young talents in this issue. We are truly happy for their success, and we encourage and support them.

Ein Wochenende voller Action und Party. Los geht es freitagnachts mit einer FreestyleShow vor der Hossa Bar. Am Samstag steigt im Snowpark Corvatsch das Freeski World Cup Finale. Und am Sonntag gibt’s eine Halfpipe-Session. A weekend packed with action and partying. It all kicks off on Friday night with a Freestyle Show in front of the Hossa Bar. On Saturday, the Freeski World Cup final takes place at the Snow Park on the Corvatsch. And on Sunday, there is a halfpipe session. www.corvatsch.ch

Heliskiing in Kanada

Es war die Leidenschaft für den Skisport, die Curdin Conrad 1976 zum Gründer von Skiservice Corvatsch werden liess. Hat ein Unternehmen dieser Art doch den angenehmen Nebeneffekt, den Sport selbst leben zu dürfen. Verwöhnt von Pisten- und Wetterbedingungen im Engadin, gibt es dennoch Verlockungen, denen er regelmässig erliegt. Anbieter der spektakulären Tiefschnee-Touren ist der Heliskiing Pionier Canadian Mountain Holidays (kurz CMH), der elf Gebiete in British Columbia im Angebot hat. Die variantenreiche Landschaft bietet verschiedene Schwierigkeitsstufen und ist dadurch sowohl für Fortgeschrittene als auch für Neueinsteiger geeignet. Buchungen laufen über Knecht Reisen. Credits for Curdin Conrad’s turning into the founder of Skiservice Corvatsch are due to his passion for the skiing sport. An enterprise like this bears the pleasant allowance to practice a sporty lifestyle yourself. Even though he is spoilt by the conditions of the snow and the weather in the Engadin, there are some temptations he succumbs to frequently. Provider of the spectacular powder skiing tours is Canadian Mountain Holidays (briefly CMH), who has eleven first class heli-skiing areas in British Columbia on its list of destinations. Er ist seit 2003 im Unternehmen und weiss sowohl um die individuellen Bedürfnisse der Gäste als auch um die Herausforderungen der lokalen Gegebenheiten. In Reparatur und Montage bringt er Versiertheit und Erfahrung ein. Dass es Marcel vor 20 Jahren vom Bodensee ins Engadin gezogen hat, liegt an seiner Liebe zu den Bergen und zum Schnee. Er geniesst den Sport in der freien Natur vor Ort, aber auch im Ausland, wie etwa Helikopter Skiing in Kanada oder Rucksacktouren in Südamerika. Einen bleibenden Eindruck hinterliess die Begegnung mit Indios in Venezuela. Er spricht Deutsch, Englisch, Italienisch, Spanisch und Französisch.

Marcel is the expert in the skiing department. He joined the company in 2003 and knows the guests’ individual needs as well as the challenges represented by the local conditions. When it comes to repair and assembly he contributes with his versatility and experience. Marcels’ love for snow and the mountains brought him from lake Bodensee to the Engadin 20 years ago. He enjoys sports in the great outdoors of the Engadin, and he also likes sporting activities abroad such as helicopter skiing in Canada and backbacking in South America. The encounter with indigenous people in Venezuela has left a huge impression on him. He speaks German, English, Italian, Spanish and French.

HATECKE’SCHE FLEISCHMANUFAKTUR IN SCUOL SCHÖNHEIT DER INSZENIERUNG www.hatecke.ch

Als Ludwig Hatecke 1930 im Engadin eine Metzgerei gründete, war er einer der ersten in der Region. Zuvor wurde direkt in den Hotels und bei den Bauern geschlachtet. Dieser Pioniergeist war auch seinen Nachkommen eigen. Es war nicht zuletzt die traditionelle Fertigung von Trockenfleisch, die die Fleischmanufaktur durch die Dekaden Teil der Engadiner Esskultur werden liess. Ludwig Hatecke, Enkel des Gründers, hat die Firmenphilosophie schliesslich in eine eigene Formensprache übersetzt. Sein Leitmotiv: Was gut ist, muss auch gut aussehen. Ludwig Hatecke übernahm das Unternehmen 1983 in dritter Generation. Es war zu einer Zeit als andere Metzgereien begonnen hatten, neben Fleisch noch eine Reihe von anderen Lebensmitteln anzubieten. Gegen den Trend entschied er bei seiner Kernkompetenz zu bleiben und ausschliesslich Fleisch anzubieten. „Das Hauptprodukt verliert im durchmischten Sortiment an Wertigkeit“, so sein Gedanke. In der Hatecke’schen Fleischmanufaktur wurden Handwerk und Ethik von jeher hochgehalten. Die Fertigung erfolgt ausschliesslich aus alpinem Rind und Wild aus der Region. Es ist ein Bekenntnis zu Nachhaltigkeit und eine Ablehnung industrieller Massentierhaltung zugleich. Die

gesamte Wertschöpfungskette wird in der Metzgerei in Scuol abgewickelt, wo die Tiere geschlachtet und verarbeitet werden und alles vom Tier verwertet wird. Entsprechend breit ist das Sortiment in den Geschäften, das von Kutteln und Kalbsbäckli über Fleischkäse bis hin zum Entrecôte reicht. Jedes Fleischstück wird mit viel Aufwand gereift und anschliessend sorgfältig präsentiert. Schon sein Vater legte grössten Wert auf die aufwändige Inszenierung im Schaufenster. An diesen Sinn für Ästhetik knüpfte Ludwig Hatecke vor 30 Jahren an und verlieh den Produkten mit neuen Formen und edlen Verpackungen den Wert, der ihm angemessen schien. Die Dreiecksgestalt, die er dem

Salsiz gibt und die rechteckige Form, in die er das Bündnerfleisch presst, sind mittlerweile ikonisch geworden. Mit rätoromanischen Bezeichnungen verankert er die Produkte klar in der regionalen Kultur. Als Nachfahre norddeutscher Einwanderer ist Ludwig Hatecke in Zernez geboren und aufgewachsen und fühlt sich der romanischen Kultur sehr verbunden. Gemeinsam mit seinem Freund, dem Architekten Beat Consoni entwickelte er die bauliche Formensprache zur Firmenphilosophie. Es entstand der revolutionäre Betonbau Center Augustin in Scuol und - anknüpfend an die einfachen Verkaufslokale der alten Zeit - ein einzigartig minimalistischer Raum. Das war 1984. Unmittelbar darauf folgte die Erbauung von Geschäft und Bistro in St. Moritz. 2011 wurde schliesslich die Metzgerei in Zernez erneuert. Heute werden die Produkte über vier eigene Geschäfte und ein Bistro angeboten. Wie die Ästhetik von den Gästen wahrgenommen wird, zeigt ein Kommentar zum Hatecke Bistro in St. Moritz in einem regionalen Online-Forum: »... ein echter Butcher Shop, obwohl es aussieht, wie ein Juwelier...« Folgend Ludwig Hatecke im Interview

UNTERNEHMENSKULTUR SICHTBAR MACHEN Was sagen Architektur und Präsentation über ihr Unternehmen? Die puristische Präsentation spiegelt unsere alpine Kultur und Tradition wider, die Art wie wir mit dem Lebensmittel umgehen, die Landschaft und nicht zuletzt mich selbst... Fleisch ist für mich das edelste aller Lebensmittel und wir sollten es mit dem grösstmöglichen Respekt behandeln und geniessen. Worum geht es Ihnen in der Wahrung traditioneller und ethischer Werte? Ich bin in Zernez aufgewachsen und habe dort die Schule besucht. Zernez bildet das Tor zum Schweizer Nationalpark. Auf den vielen Wanderungen im Nationalpark, wurde uns von den Lehrern vermittelt wie wichtig es ist Sorge für unsere Erde und unsere romanische Kultur zu tragen. Ich sage immer "terra sana, vivanda sana, vita sana". Inwiefern beeinflusst der Standort Engadin ihre Philosophie? Es ist die Qualität des alpinen Fleisches von Hirsch, Gemse, Reh, Kuh und Lamm aus der Region. Die Kühe grasen im

Sommer auf den Almwiesen in 2000 Meter Seehöhe. Sie fressen Gras, alpine Kräuter und trinken frisches Quellwasser. Das ergibt ein schmackhaftes Fleisch, das sehr viel gesunde Fettsäure enthält. Was hat Ihre Premiumprodukte Bündnerfleisch und Salsiz – so berühmt gemacht? Wir schlachten die Kühe und Lämmer in unserer "bacharia" und verarbeiten sie sofort. Die Verarbeitung des noch schlachtwarmen Fleisches, ergibt einen besonders guten Geschmack. Die Schlegelstücke, die für das Bündnerfleisch vorgesehen sind, werden dann gesalzen und anschliessend drei Wochen hindurch jeden zweiten Tag wie Champagnerflaschen gewendet, um eine gleichmässige Durchsalzung zu erreichen. Abschliessend werden sie mit Quellwasser abgewaschen und zum Reifen an die Luft gehängt. Vier Monate lang werden diese Stücke dann jede zweite Woche für 48 Stunden in eine Holzpresse mit ganz wenig Gewicht gepresst, damit sie die typische Form des Bündnerfleisches annehmen. ÜBER LUDWIG HATECKE Der Unternehmer in dritter Genera tion arbeitet gemeinsam mit Frau Simone im Unternehmen. Der 22-jährige Sohn David will das Unternehmen mit dem Engagement und der Philosophie seines Vaters fortführen. Er hat eine Kochlehre absolviert und anschliessend ein Praktikum als Metzger in Zürich. Später war er ½ Jahr in Amerika um die Sprache und die Kultur kennenzulernen. Vor zwei Jahren trat er ins Unternehmen ein. Derzeit ist er mit der Leitung von Bistro und Shop in St. Moritz betraut und bereitet die Gründung einer Dependance in der Züricher Bahnhofstrasse vor. Wenn es seine Zeit zulässt, arbeitet auch der zweite Sohn Noah im Betrieb mit. Er besucht derzeit noch das Lyceum Alpinum in Zuoz. Was Hatecke über das Engadin hinaus bekannt gemacht hat, sind seine Trockenfleischspezialitäten. Die Produkte sind in ausgewählten Fachgeschäften in der Schweiz und im Online-Shop erhältlich. Im Laboratori dal Gust in seiner Fleischmanufaktur in Scuol kann das Fleisch mit dem passenden Wein gekostet werden. Ludwig Hatecke opened a butchery in the Engadin in 1930 as one of the first in the region. Before this, slaughtering took place on-site in hotels and at the farmers'. This pioneering spirit has also characterised his successors. Not least the traditional processing of dried meat has grown part of the Engadin cuisine throughout the decades. Ludwig Hatecke, the founder's grandson, has even expressed the company philosophy in design terms: His key concept: What tastes good must also look good. Ludwig Hatecke, representing the third generation, took over the business in 1983. At that time, other butchers had just begun offering meat as well as a range of other groceries. Going against the trend, he decided to stick to his core competence and offer meat exclusively. "The main product loses its significance amongst a mixed range of goods", was his thought. Craft and ethics have always been held in high regard in the Hatecke meat factory. Only alpine beef and game from the region are processed. It is both a commitment to sustainability and a rejection of intensive livestock farming. All stages of the supply chain are executed in the butchery in Scuol, where slaughtering takes place and the entire animal is utilised. The product line is accordingly wide in the shops, arraying from chitterlings and calf's cheeks via meat loaf to entrecôte. Each piece of meat is methodically matured and afterwards carefully packaged. Even Hatecke's father attached great importance to meticulously staging the shop window. Thirty years ago, Ludwig Hatecke, tying in with this sense of aesthetics, bestowed the products with new designs and noble packaging, apt to their value. The triangular shape that he gives the Salsiz, a dried sausage, and the square that embraces the air-dried Bündner meat, have become iconic. Rhaetian labelling roots the products firmly in the re-

gional culture. As descendant of immigrants from Northern Germany, Ludwig Hatecke was born and raised in Zernez and is strongly attached to the Rhaeto-Romanic culture. Together with his friend, architect Beat Consoni, he developed a structural design concept to go with the company philosophy. The revolutionary concrete construction Center Augustin was raised in Scuol and – adjacent to the basic salesroom from olden days – a one-of-a-kind minimalistic room. That was in 1984. Shortly thereafter was the shop and the bistro in St. Moritz built. And finally, 2011 saw a modernisation of the butchery in Zernez. Today the products are offered in their four shops as well as in the bistro. A comment about Hatecke Bistro in St. Moritz on the regional online forum shows how the guests perceive the aesthetics: "... a proper butcher's shop, even though it looks like a jeweller's". Ludwig Hatecke in a subsequent interview:

and drink fresh spring water. That results in tasty meat which contains healthy fatty acids. Why have your premium products – the air-dried Bündner meat and the dried sausage Salsiz – become so famous? We slaughter the cows and lambs in our "bacharia" and start the processing immediately. Processing the meat while still warm brings out a particularly good flavour. The legs used for the Bündner meat are then salted before they every two days for the next three weeks are turned over like bottles of champagne. This is to ensure an even layer of saltiness. Finally, they are rinsed in spring water and left hanging for maturation. Over the next four months, the legs get to spend 48 hours every two weeks in a wood press with very little weight. This is how they get the characteristic shape of the Bündner meat. Thank you for the conversation.

What does the architecture and presentation say about your business? The purist presentation mirrors our alpine culture and tradition, the way we handle foodstuff, the landscape and also, not to forget, myself... Meat is for me the most precious food, and we ought to treat it and enjoy it with the utmost respect.

The third generation businessman works together with his wife Simone. Their 22-year-old son David plans to run the business with the same commitment as his father, following the same philosophy. He is trained as a chef and completed an apprenticeship as a butcher in Zürich before going to America for half a year to learn the language and culture. He joined the business two years ago. He is now in charge of the bistro and shop in St. Moritz and is preparing the opening of a branch in the Bahnhofstrasse in Zürich. Also the second son, Noah, works in the business when time allows it. He is still a student at the Lyceum Alpinum in Zuoz. Hatecke's dried meat products have made him renowned beyond the borders of the Engadin. The products are available in selected shops across Switzerland and in his online-shop. His meat factory in Scuol also includes a 'Laboratori dal Gust' where the produce can be tasted accompanied by a matching wine. The "Academia da Charn Alpina", which Hatecke runs in Scuol and St. Moritz, introduces the guests to the Alpine meat processing.

How do you observe the traditions and ethical values? I grew up in Zernez and went to school there. Zernez is the gate to the Swiss national park. During the many hikes in the national park, our teachers told us how we are obliged to care for our planet and our Romanic culture. I use to say "terra sana, vivanda sana, vita sana". To what extent does the location, the Engadin, influence your philosophy? It is the very quality of the alpine meat from red deer, alpine goat antelope, roe deer, cattle and lamb in the region. The cows graze on alpine meadows 2000 metres above sea level in summer. They eat grass, alpine herbs

Supervisor Lukas has been in the company since 2001. It is thanks to him that the computer network in all of the 13 branches always works optimally. Beside his knowledge of software he is a great communicator and demonstrates this as branch manager in St. Moritz and in interacting with the guests. Lukas was a handball player in his younger years, this perhaps ascribed to his hometown Basel. NORA ENGELS MAGIE DES ALPHORNS

Es war der Klang, der Nora Engels in seinen Bann zog und nicht mehr los liess, die Magie der natürlichen Töne, die ganz weit in die Landschaft hinausgehen. Mit 24 Jahren ist sie eine der jüngsten Alphornspielerinnen in der Schweiz. Als gelernte Schreinerin kann sie es nicht nur spielen, sondern auch bauen. Denn je sorgfältiger die Herstellung, desto besser der Klang. Nora Engels hat drei Brüder. Typische Mädchensachen hat sie nie gemacht. In ihrer Kindheit war sie viel in der freien Natur und hat gern gesungen. Es ergab sich, dass sie die Dinge, die sie in ihrer Kindheit gern gemacht hat, später weiterverfolgen und verbinden konnte. Ihre erste Faszination war das Schnitzen von Skulpturen aus Wurzelholz. Ihr Vater hatte es ihr beigebracht. Er war es auch, der ihr später vorschlug, das Schreinerhandwerk zu erlernen. Die Probewoche war anstrengend, aber machte sie gleichzeitig so glücklich, dass ihr die Entscheidung für die Lehre leicht fiel. Von Kindesbeinen an sportlich, hatte sie die nötige Kraft und Ausdauer. Das Engadin ist keine typische Alphornregion. So sollte es bis 2011 dauern, bis sie erstmals eines hörte. Es war beim Schwimmen am Stazersee. Nora: «Die Klänge haben mich verfolgt und nicht mehr losgelassen.»Von da an traf sie immer wieder auf Alphornspieler und je mehr sie darüber

hörte, desto grösser wurde der Wunsch es auch zu lernen. Bis sie eines Tages Ruth - eine der wenigen Spielerinnen im Engadin - bat, ihr Unterricht zu geben. Ruth war begeistert von Nora, die Talent und Ausdauer mitbrachte. Nach einem halben Jahr konnte sie schon die zweite Stimme spielen und nach einem Jahr die erste. «Die Technik kommt vom Zwerchfell,» erklärt Nora, «man stösst die Luft mit kleinen Mundbewegungen ins Horn.» Als eine Art lange Holztrompete ohne Klappen, Züge oder Ventile, können auf dem Alphorn nur Naturtöne gespielt werden. Aber es gibt unzählige Stücke von Komponisten, die ausschliesslich für das Alphorn komponieren. Nora mag klassische und moderne Stücke, aber am liebsten spielt sie frei aus der Seele, was gerade so kommt. Das Alphorn klingt in der Natur besser, darum spielt Nora oft in den Bergen. Ihr Alphorn besteht aus drei Teilen; zerlegt lässt es sich leicht transportieren. Mit einem befreunde

ten Alphornspieler ist sie schon im Schnee auf den Muottas Muragl gestapft, um auf 2456 m zu spielen. Je nach Wetterbedingungen sind die Töne dort auf eine Entfernung von bis zu 15 km zu hören. Wie beim Spielen kommt es auch beim Bau auf Wille und Ausdauer an. Nora hat schon fünf Alphörner gebaut. Ihr grosser Traum ist es eine eigene Schreinerei zu haben und sich ganz auf den Bau von Alphörnern zu konzentrieren. «Wenn ich es gut machen will, dann muss ich Erfahrungen sammeln, experimentieren und mich in Details vertiefen. Das braucht Zeit und Geld.» Bis es soweit ist, wird sie noch Nebenjobs machen, wie etwa Bike Guide. Wer Nora kennt, weiss, dass sie auch auf dem Mountainbike gut ist.

NORA ENGELS THE MAGIC OF THE ALPHORN

It was the sound that captivated Nora Engels and hasn’t released her ever since – the magic of the natural tunes flowing through the landscape. At the age of 24, Nora Engels is one of the youngest alphorn players in Switzerland. However, she doesn’t only play the instrument, she can also craft it. As an educated artisan, she knows that the more thorough production results in a better sound. Nora Engels has three brothers, she has never done typically girlish activities. As a child she spent a lot of time in the nature and enjoyed singing. Fortunately, she could pursue and combine the things she liked later on. Her first fascination was the carving of wooden sculptures out of roots. She was taught sculpturing by her father, who also encouraged her to pursue the craftsman profession. She didn’t have to struggle with the decision making, as, despite the stress during the test week, the joy was prevailing. Also thanks to the sportiness since her childhood, she had the required strength. The alphorn is not typically associated with the Engadin. At least it was not until 2011, when she heard an alphorn there for the first time. It happened when she was swimming in the lake Stazersee. Nora: “The sounds were haunting me and never letting go.” Since then she constantly ran into alp-

horn players and the more she heard about the alphorn, the more she wished to learn playing it. One day she met Ruth, one of the few alphorn players in the Engadin, and asked her for a lesson. Ruth was impressed by Nora, as she seemed not only gifted, but also had the strength for it. After six months Nora could already play the second voice and after the first year, she played first voice. “The method relies on the diaphragm,” explains Nora, “one has to blow the air into the horn using small mouth movements.” As the alphorn is a kind of long trumpet made of wood, without flaps, slides, valves, one can only play natural tunes on it. There are, however, a great number of pieces by authors who compose exclusively for the alphorn. Nora likes classical and modern pieces, but mostly she enjoys playing freely from the soul, whatever comes straight out. The alphorn sounds better when played in nature; therefore, Nora often plays

in the mountains. Her alphorn consists of three parts and, when demounted, it is easy to transport. She and a friend of hers, went up to the Muottas Muragl even through the snow, in order to play on 2456 m. The tunes can be heard from a distance of up to 15 km, depending on the weather conditions. Like the playing of the instrument, its crafting also depends on the will and the strength of the person. Nora has already built five alphorns. Her big dream is to own a manufactory and to exclusively concentrate on the making of alphorns. “If I want to do it well, I have to gather experience, experiment, and go into detail. That requires time and money.” Until she achieves it, she needs to undertake additional jobs, as, for example, bike guide. Anyone who knows Nora, knows that she has excellent skills on the mountain bike as well.

STALLA COSTA LEBEN MIT PFERDEN www.stalla-costa.ch

Carolin und Diego Costa-Engelhorn haben ihre Fuhrhalterei und Landwirtschaft von Luigi Costa 2013 übernommen und führen den Betrieb seither unter dem Namen Stalla Costa weiter. Es war ihnen ein Anliegen die Zukunft des Familienbetriebs zu sichern. Die beiden sind unternehmerisch tätig und ihr neuer Nebenberuf auf dem 30 Hektar Grundstück erlaubt ihnen ein Leben mit Pferden nach den Regeln der Natur. Diego stammt aus einer Familie, die knapp 100 Jahre Tradition in Baugewerbe und Fuhrhalterei respektive Landwirtschaft hat. Den Grundstein legte sein Urgrossvater, der in jungen Jahren vom Puschlav nach Pontresina kam und den Transport mit Maultieren aufnahm. Diego arbeitete schon als Schüler in den Sommerferien im Familienunternehmen und fühlte sich den Pferden von jeher verbunden. In seinem Berufsleben von eigenen unternehmerischen Aktivitäten vereinnahmt, kam er später durch seine Frau Carolin zur Beschäftigung mit den Pferden zurück. Die beiden strebten einen eigenen Stall an und Diego absolvierte die landwirtschaftliche Diplomausbildung. Das Diplom ist in der Schweiz Voraussetzung für den Erwerb eines landwirtschaftlichen Grundstückes.

Als sich Grossonkel Luigi 65-jährig aus der Landwirtschaft zurückziehen wollte, brauchte es eine Nachfolge und es war naheliegend, Carolin und Diego zu fragen. Die Entscheidung für die Übernahme fiel nicht über Nacht, war den beiden aber schliesslich Anliegen und Freude. Um dem aktuellen Tierschutzgesetz gerecht zu werden, musste die Stellplatzfläche pro Tier im Stall verdoppelt und die Zahl der Pferde von 26 auf 13 reduziert werden. Notwendige Konsequenz war die Einstellung des Omnibusbetriebs seitens der Stalla Costa und die Konzentration der Fuhrtätigkeit auf Privat- und Gesellschaftsfahrten. Carolin und Diego renovierten den Betrieb und stellten auf Bio um. Neue Kutschen und Geschirre wurden angeschafft und Pferde ergänzt. Zunächst erhalten die beiden

noch Unterstützung seitens der Familie. Diegos Bruder Marino hat sich eine Auszeit genommen, um ihnen in der Zeit der Übernahme zu helfen. Ausserdem bleibt ihnen Grossonkel Luigi mit seiner Erfahrung und Arbeitskraft noch eine Zeit lang erhalten. Kerngeschäft sind nach wie vor die täglichen Fahrten ins malerische Val Roseg. Die Route führt von Pontresina über 7 km und 250 m Höhenmeter zu einem Landgasthof am Roseggletscher. Die Fahrten werden im Sommer mit der Kutsche und im Winter mit dem Schlitten gemacht. Weitere Destinationen wie z.B. der Stazersee sind nach Absprache möglich. Neben der Fuhrhalterei bieten Carolin und Diego auch Reitunterricht an und vermitteln eine der Natur des Pferdes gerecht werdende Pferd-/MenschBeziehung; orientiert an Pat Parelli’s “Natural Horse-Man-Ship“, die nicht repressive Dynamik sondern Kommunikation, Verstehen, Körpersprache und Psychologie einsetzt. Curdin Conrad wünscht Carolin und Diego viel Erfolg. Auch seine Vorfahren waren Fuhrhalter und er ist den Pferden nach wie vor sehr verbunden.

Carolin and Diego Costa-Engelhorn took over the carriage transportation and agribusiness from Luigi Costa in 2013 and since then manage the enterprise under the name Stalla Costa. Their aim was to secure the future of the family business. Carolin and Diego both manage their own businesses and their new side job, on a plot of 30 hectare, allows them to live with horses, following the laws of nature. Diego comes from a family that has a 100 years tradition of administration in fields like the building industry and transport by means of a carriage. The foundation stone was laid by his great-grandfather, who came in his early life from Puschlav to Pontresina and founded a company providing mule transport. Since his school years, Diego started working in the family business during summer holidays and felt a strong bond with the horses. However, Diego’s professional life and his business activities occupied him completely and only later, through his wife Carolin, he came to pursue dealing with horses again. Both of them wanted to have their own stable. Therefore, Diego got a degree in agricultural business. The diploma is a requirement to acquire land for agribusiness in Switzerland. When great-uncle Luigi, 65 years old, wanted to step back from the agricultural

business, someone had to succeed him and it was natural to ask Carolin and Diego. The decision for the takeover wasn’t made over night, but it definitely was to them not only a personal matter but a welcome opportunity. In order to be pursuant to the Protection of Animals Act, the space per animal in the barn had to be doubled and the number of horses had to be reduced from 26 to 13. Subsequently Stalla Costa had to cease omnibus business and concentrate on private transportation services, including special occasions. Carolin and Diego renovated the enterprise and focused on biological land use. New carriages and harnesses were acquired, as well as more horses. In the beginning they received help from the family, Diego’s brother Marino took some time off to help them during the takeover. Additionally, they continue to have great-uncle Luigi for some more time, who can give them a hand considering his experience.

The core of the business is, as earlier, comprised by the everyday excursions to Val Roseg. The route goes from Pontresina 7 km through the valley and climbs up 250 metres of altitude to a traditional restaurant in Val Roseg. The excursions are carried out with a carriage in summer and with a sleigh in winter. Other destinations like the Lake Stazersee, for example, can be requested as well. Aside from their transportation business, Carolin and Diego also offer riding lessons and mediate a horse-person-relationship, proper for the horses’ nature, oriented to Pat Parelli’s “Natural Horse-Man-Ship”, which advocates communication, understanding, body language, psychology, and not repressive dynamic. Curdin Conrad wishes success to Carolin and Diego. His ancestors also were in the same business and he feels connected to the horses like before.

TONI „HANG LOOSE!“ Er ist der Filialleiter im Store Silvaplana und filialübergreifend für den Bereich SkiLanglauf verantwortlich. Toni zählt zu den Locals. Er kommt aus Silvaplana und war 1984 der zweite Mitarbeiter bei Skiservice Corvatsch. Wann immer ein Zeitzeuge gebraucht wird, ist Toni gefragt. In seiner Freizeit zeigt er sich als Bon vivant. Neben sportlichen Aktivitäten wie Skilaufen und Surfen, nimmt er sich auch Zeit zum Kochen und Lesen. Entspannung findet er bei Sonnenbad und Bloody Mary. So sehr Toni dem Engadin verbunden ist – nach seiner Pensionierung möchte er eine Strandbar aufmachen... Er spricht Rätoromanisch, Deutsch, Englisch, Italienisch, Französisch und Spanisch.

Der grosse Traum der vier Biathletinnen aus dem Engadin hat sich erfüllt: Die drei Gasparin Schwestern sind gemeinsam mit Irene Cadurisch bei der Olympia-Biathlon-Staffel in Sochi angetreten. Damit haben sie bewiesen, dass sie gegenwärtig die vier besten Schweizer Biathletinnen sind. Am Ende wurde ihr kühner Traum noch übertroffen: Selina Gasparin hat in der Königsdisziplin Einzellauf die erste Olympia Silbermedaille für den Schweizer Damen-Biathlon geholt! Zielte die Aufmerksamkeit der Medien zuvor noch auf die aussergewöhnliche sportliche Leidenschaft der Athletinnen, so gilt diese seit Sochi 2014 klar ihren Erfolgen. Die Flut von Presseberichten hat bewirkt, dass die Biathletinnen auf der Strasse von Passanten erkannt werden, besonders Selina. Die 30-Jährige hat in Norwegen Sport- und Bewegungswissenschaften studiert und war 2004 die erste Dame im Schweizer Biathlon. In der vergangenen Saison schrieb sie die Geschichte im Schweizer Damen Biathlon fort. Sie errang im Vorfeld der Olympiade die ersten zwei Weltcup-Siege einer Schweizer Biathletin und holte dann in Sochi die Silbermedaille in der Königsdisziplin Einzellauf über 15 Kilometer. Die erfolgreichste Saison ihrer Karriere ging mit Platz 11 im Weltcup Gesamtklassement zu Ende.

In der Zeit vor Selina war der Schweizer Biathlonsport eine männliche Domäne. Das liegt nicht zuletzt daran, dass beim Wettkampf auf Langlaufskiern eine Waffe involviert ist. Es gilt zwei sich gewissermassen widerstrebende Disziplinen zu vereinbaren - Ausdauer im Langlauf und Präzision am Schiessstand. Die Wurzeln des Sports werden in einer archaischen Form der Jagd in nördlichen Regionen verankert. Referenz ist eine Höhlenmalerei in Norwegen, die einen Mann zeigt, der auf Skiern mit Pfeil und Bogen einem Wild hinterher jagt. Elisa Gasparin: „Die Leute wissen jetzt, was Biathlon ist.“ Zurück im heimatlichen Engadin freute sich das Olympia-Staffel-Team nicht

nur über die Steigerung der eigenen Bekanntheit, sondern auch über die Publicity, die dem Schweizer Damen-Biathlon durch ihren Erfolg in Sochi zuteil wurde. Elisa: „Die Leute wissen jetzt, was Biathlon ist.“ Aber auf den Lorbeeren ausruhen, das kommt für die ehrgeizigen Athletinnen nicht in Frage. Sie stehen seit frühester Kindheit auf den Langlaufskiern und haben den Erfolg vorrangig ihrer Beharrlichkeit und Eigen initiative zu verdanken. Das Engadin bietet zwar sommers wie winters die Landschaft und den Schnee für das Training, akzeptable Bedingungen für das Trockentraining haben sie sich allerdings erst selbst geschaffen. Sie nutzen das Militärgelände in S-chanf, wo sie kleine Strassen zum Rollskifahren vorfinden. Einen Schiessstand haben sie sich selbst gebaut. Dass er nicht den neuesten Standards

entspricht, versuchen sie mit ihrem Können zu kompensieren... Nach der Rückkehr aus Sochi gründeten sie das Trainingsteam Gasparin Sisters, dem auch Irene Cadurisch, die Mitstreiterin aus der Olympia-Staffel, angehört. Das eigene Team ermöglicht ihnen unter anderem das Sommertraining im Engadin, das sie aufgrund der Höhenlage und der landschaftlichen Bedingungen sehr schätzen. Gleichzeitig geniessen sie den Aufenthalt in der Heimat auch als Ausgleich zum Winter, in dem sie ständig auf Reisen sind. Die Organisation des Teams sei zwar aufwändig, habe sich bisher aber gelohnt, so Elisa. Die Vier treten in allen Biathlondisziplinen an: Einzellauf, Sprint, Verfolgung, Massenstart, Staffel, gemischte Staffel und Mannschaftswettkampf. Stärken und Schwächen von Biathleten sind weniger in Disziplinen als in den Faktoren Ausdauer und Präzision zu messen. Während in Einzellauf und Sprint jeder zugelassen ist, geht es in Verfolgung, Massenstart, Staffel und gemischter Staffel zunehmend um Qualifikation.

VERTEIDIGUNG UND AUFSTIEG Der zurückliegende Winter 2013/14 hat die vier Biathletinnen schon im Vorfeld der Olympiade zu Hochleistungen angespornt. Elisa Gasparin verteidigte ihren Platz im A-Kader. Sochi war „ein Riesenerlebnis“, das mit einem Diplom für sie begann und mit einer Silbermedaille für Selina endete. Die 22-Jährige Elisa hat die Handelsmittelschule und später eine Ausbildung als Fitnessinstruktorin absolviert, konnte ihre Berufe neben dem Spitzensport allerdings kaum ausüben. Seit kurzem hat sie eine 50%-Anstellung im Grenzwachtcorps. Ein Privileg das gleichzeitig auch ihrer 20-jährigen Schwester

Aita zuteil wurde. Diese startet noch für die Juniormannschaft und stieg dank ihrer Podestplätze im IBU-Cup vom C- ins B-Kader auf. Nach der Matura im Frühjahr hat Aita jetzt ein Fernstudium in Wirtschaft begonnen. Das Fernstudium wählte sie, um weiter im Engadin trainieren zu können. Mit der Anstellung beim Grenzwachtcorps folgen Aita und Elisa dem Beispiel ihrer Trainings teamkolleginnen Selina Gasparin und Irene Cadurisch, die jeweils 100%-Anstellungen haben. Bei ihrem gemeinsamen Arbeitgeber zählt Trainingszeit als Arbeitszeit und das ermöglicht ihnen nahezu volle Konzentration auf den Spitzensport. Irene Cadurisch machte mit zwei Weltcup-Platzierungen unter den Top 30 den grössten Sprung und schaffte es vom C- gleich ins A-Swiss Ski Kader. Die 22-Jährige steht schon seit ihrer Kindheit auf Langlaufskiern. Bis zum Einstieg in den Biathlon war sie sehr vielseitig sportlich aktiv. So hat sie schon ihren Schulweg vom Bergbauernhof ins Tal am liebsten auf Skiern absolviert. U.a. hat sie auch klassisches Ballett gemacht. Das erklärt vielleicht die Anmut ihrer Luftsprünge... Der Kaderaufstieg der Biathletinnen bedeutet nicht nur den Start in einer höheren Liga, sondern bringt auch verbesserte Trainingsbedingungen mit sich. So stehen ihnen mittlerweile schon drei Wochen pro Monat im Trainingslager Realp oder im Ausland zu und sie haben einen höheren Anspruch auf Ausrüstung und Patronen. Die laufende Saison müssen sie allerdings ohne ihre Teamkollegin Selina absolvieren. Nach der erfolgreichsten Saison ihrer Laufbahn nimmt sie sich jetzt erstmals eine Auszeit. Die 30-Jährige erwartet ihr erstes Kind... Im Winter 2015/16 will sie wieder starten.

THE WINNING FOUR LADIES OLYMPICS BIATHLON RELAY SWITZERLAND Irene Cadurisch, Aita, Elisa & Selina Gasparin

The dream of the four female biathletes from the Engadin came true: Together with Irene Cadurisch, the three Gasparin sisters took on the Olympic biathlon relay in Sochi and proved that they are the best four Swiss biathletes at present. Their bold ambition was even eclipsed: Selina Gasparin won the Swiss Ladies Biathlon their first ever silver in the prestigious individual discipline. If our athletes' extraordinary sporting passion thrust them into the limelight before the games, their Sochi 2014 success surged media interest. Following the flood of press reports, passersby recognise them, and Selina in particular. The 30-year-old studied movement and sport sciences in Norway. In 2004 she became the first female member of Swiss Biathlon. Last season she rewrote the history of Swiss Ladies Biathlon. In the run-up to the Olympics she secured the first two world cup victories of any Swiss female biathlete. Then she picked up a silver medal in the acclaimed 15 kilometre individual run in Sochi. The most successful season of her career ended with ranking 11th in the world cup total. Swiss Biathlon was male territory before Selina's era. This is not least due to the competition involving a weapon in addition to the cross-country skiing. To some measure, two antagonistic disciplines are to be reconciled; stamina in the trail and precision at the shooting range. The sport is rooted in the archaic hunting forms found in northern regions. Serving as a reference, a cave painting in Norway portrays a man on skis chasing game with bow and arrow.

They have built a shooting stand themselves and try to let their skills compensate for the provisions not being state of the art. After their return from Sochi they formed the Gasparin Sisters training team, to which also Irene Cadurisch, their fellow combatant from the Olympic relay, belongs. Having their own team allows them to hold their summer training in the Engadin, which they greatly appreciate for its altitude and landscape features. Moreover, they enjoy spending time at home to weigh up for the extensive travelling during winter. Organising the team is laborious but has paid off so far, according to Elisa. The four compete in all biathlon disciplines: individual, sprint, pursuit, mass start, relay, mixed relay and team. The biathletes' strengths and weaknesses are gauged against the respective disciplines to a lesser degree than against their stamina and precision. While everyone can enter the individual and sprint, the pursuit, mass start, relay and mixed relay are increasingly based on qualifications.

Ever since childhood they have been skiing; their success owing to their own initiative and perseverance. While the Engadin pro

The winter season of 2013/14 spurred the four biathletes' high performance already at the run-up to the Olympics. Elisa Gasparin defended her spot in the A-squad. Sochi was "a massive experience" which began with a diploma for herself and ended with a silver medal for Selina. 22-year-old Elisa is a trade school graduate and has later qualified as a fitness instructor. But she has next to no time for her professions alongside doing her

sport at elite level. Recently she got a 50% post with the border guard corps; a privilege also granted her 20-year-old sister Aita. She is still in the junior team and advanced from the C- to the B-squad thanks to her podium positions in the IBU Cup. Following her school-leaving examination in spring, she has now started a distance learning programme in economy. She chose the distance format to be able to continue training in the Engadin. With their appointments at the border guard corps, Aita and Elisa follow the lead of their training colleagues Selina Gasparin and Irene Cadurisch, who both have full-time positions. For their employer the time they spend on training counts as working hours. This allows them to concentrate nearly fully on the elite sport. With two world cup standings among the top 30, Irene Cadurisch has made the biggest leap of them all, straight from the Csquad to the Swiss Ski A-squad. The 22-yearold has cross-country skied since she was a little girl. Until she joined biathlon she was very versatile in her sports. She preferred skiing on her way to school in the valley from the mountain farm. Among other activities, she also used to dance classical ballet. Perhaps this explains her graceful capers. The squad advancement does not only mean starting in a higher league; it also means better training conditions. Thus they can train three weeks per month at the training centre Realp or abroad, and they are entitled to better equipment and more cartridges. However, they will have to go through the current season without their teammate Selina. After the most successful season in her career, she is taking her first time-out. The 30-year-old is expecting her first child...She will return for the winter season 2015/16.

Gegenwärtig sucht sie die Herausforderung im Freeskiing. Vorläufige Höhepunkte ihrer Reiselust waren ausgedehnte Aufenthalte in Neuseeland und in Australien. Sie spricht Deutsch, Rätoromanisch, Italienisch und Englisch.

VANESSA KASPER SWISS SKI ROOKIE

Vanessa Kasper ist im Frühjahr 2014 in das C-Kader von Swiss Ski aufgestiegen. Der 17-Jährigen aus Celerina wird grosses Talent bescheinigt und eine grosse Zukunft prognostiziert - speziell in ihrer Paradedisziplin Riesenslalom. Sie selbst freut sich auf die neue Herausforderung, denn Skifahren ist ihre Leidenschaft! Im Winter 2012/13 hat Vanessa die Aufnahme ins C-Kader noch knapp verpasst. Aber so schnell gibt die ehrgeizige Athletin nicht auf. Im vergangenen Winter hat es dann geklappt. Sie gewann an den Schweizer Junioren Meisterschaften Gold im Riesenslalom und erreichte in der Gesamtwertung Rang drei hinter zwei Weltcup erprobten Kolleginnen aus den älteren Jahrgängen. Insgesamt fuhr sie 35 FIS- und 1 EuropacupRennen neben den Schweizer Meisterschaften und stand zehnmal am Podest. Vor dem Aufstieg ins Swiss Ski Kader war Vanessa im Nationalen Leistungszentrum Ost. Der neue Karriereabschnitt wird sie fordern und motivieren. Aber sie ist zuversichtlich, sich rasch darauf einstellen zu können. Schliesslich bietet ihr Swiss Ski eine gute Organisation und eine höhere Trainingsfrequenz.

Vanessa ist schon vor vier Saisonen auf FIS-Niveau aufgestiegen und fährt seither nicht mehr nur nationale, sondern auch internationale Rennen. Unter anderem war sie Teilnehmerin der Jugendolympiade 2012/13 in Rumänien. In der kommenden Saison will die Ski-Athletin im FIS–Ranking aufsteigen. Umso mehr als dies mit der Zeit schwieriger wird. Zitat: „Da muss dann alles passen, die Pistenverhältnisse, das Wetter...“ Ausserdem will sie nach Möglichkeit Europacup fahren. Zugelassen werden nur die besten FIS-Läuferinnen. Das bedeutet, dass die Konkurrenz grösser ist. Seit Herbst besucht Vanessa die sechste Klasse des Skigymnasium Davos. In 1 ½ Jahren wird sie maturieren. Wegen der ausgedehnten Trainingseinheiten dauert die Schule ein Jahr länger als herkömmliche

Schultypen. Später möchte sie auf jeden Fall studieren, vielleicht Veterinärmedizin oder Schauspiel... Da sie von Kindesbeinen an im Skigeschehen war, hat sie fast alle ihre Freunde stets um sich. Ausserdem geniesst sie den vollen Rückhalt und das Verständnis ihrer Eltern. Ihr Vater war erfolgreicher Coach des Langlauf Nationalteams und leitet seit 1990 die Langlaufschule Celerina. Ihre Mutter ist Skilehrerin. Das erklärt auch, warum Vanessas Begeisterung für das Skifahren schon früh begonnen hat. Sie ist mit zwei Jahren das erste Mal auf den Skiern gestanden und war morgens die Erste in der Skischule und abends die Letzte. Skirennen haben ihr schon damals Spass gemacht. Vanessa: „Ich bin ein Wettkampftyp und kann die volle Leistung erst im Wettkampf abrufen. Im Training kann ich das nicht.“ Conradin Conrad ist stolz, mit Vanessa Kasper ein ausserordentliches Talent im Team Skiservice Corvatsch zu haben. Er ist früher selbst Skirennen gefahren und heute ist es ihm ein Anliegen, junge, regionale Sporttalente zu ermutigen und zu unterstützen.

Vanessa Kasper moved up to the C-squad of Swiss Ski last spring. The seventeen-year-old from Celerina is said to have a great talent and a promising future, especially when it comes to her specialty-event giant slalom. She herself is passionate about skiing and is just looking forward to this new challenge! In the winter of 2012/13, Vanessa Kasper closely missed the promotion to the C-squad. But the ambitious athlete would not give it up so easy. Last winter it worked out. She won gold in the discipline giant slalom at the Swiss junior masterships. In the overall standings, she finished third in class behind the experienced world cup racers of the older age groups. Overall, she competed in 35 FIS-races and one European cup race, additionally to the Swiss championships and has stepped up to the podium on ten occasions. Before Vanessa moved up to the Csquad of Swiss Ski, she was a member of the training center east. The new stage in her career will be both demanding and motivating at the same time. But she is confident of adapting herself to this quickly. Finally, Swiss Ski provides a well organised schedule and more frequent training. Vanessa has moved up to FIS-Niveau four seasons ago and since then she lines up

in both national and international races. In 2012/13 she took part in the youth Olympics in Romania. In the upcoming season, the ski athlete wants to move up in the FIS-stand, all the more, as it becomes increasingly difficult over time. Quote: „Everything has to fit perfectly, the slope conditions, the weather....“ Eventually, she also wants to compete in the European cup races. However, only the best FIS-athletes will be admitted. This means a stiffer competition. Since autumn Vanessa visits the sixth class of the ski gymnasium in Davos. In one and a half years she will take the final exam. Due to the extensive training hours the school runs one year longer than common school types. She definitely wants to go to University later and study something like veterinary medicine or drama... As she pursues skiing from early childhood, almost all of her friends are constantly around her.

Furthermore, her parents provide great encouragement and understandig. Her father was a prosperous coach at the ski langlauf national team and since 1990 he is head of the ski langlauf school in Celerina. Her mother is a ski instructor. It is also due to this fact that Vanessa started to feel enthusiastic about skiing at an early age. She was only two years old when she first tried skiing. In her ski school time, she was the first to come in the morning and the last to leave in the evening. Soon after she started competing in races, her fighting spirit awoke. Vanessa: „I am very competitive - I develop my best potential in the competition - better than throughout the whole training.“ Conradin Conrad is proud to have the extraordinary talented Vanessa Kasper in his team Skiservice Corvatsch. He himself used to be a ski racer earlier and today it is a personal matter to him to encourage and support young sport talents in the region.
