Journey Through India At Shamiana

Shamiana, the renowned and much-loved restaurant at Taj Jumeirah Lakes Towers, hailing from the iconic Taj Mahal Palace in Mumbai, unveils its monthly themed thali set-menus. Paying homage to four distinct regions of India, under the culinary direction of award-winning Executive Chef Sonu Koithara, his brigade of specialty culinarians have brought elaborate dishes to life, whilst preserving the past, using authentic ingredients and age-old home-style cooking techniques.

Shamiana diners can now savour the heart and soul of India through each course of the masterfully curated menu, especially poignant during a time where it is not so easy to travel to India to get that ‘taste of home.’ During the month of September guests were invited to traversing through the mustard fields of Punjab, this October Shamiana diners can journey through the states of Tamil Nadu and Kerala from Southern India, moving East to experience the regional cuisine of West Bengal in November, and winding up with a re-creation of the Mughal Empire in December, with each region being highlighted monthly. Available daily for lunch and dinner, this culinary journey is priced at AED 100 for the vegetarian thali and AED 125 for the nonvegetarian thali with the option to upgrade to the house beverage package at an additional AED 150 per person. Hutong, the contemporary Northern Chinese restaurant and bar located in DIFC, is excited to introduce its new Dim Sum Brunch with free-flow dim sum and free-flow beverages every weekend, perfect for the season and ideal to enjoy in Hutong’s outdoor garden terrace. Hutong’s dim sum is well known around the world for its innovative take on the classic Chinese dim sum dish. Hutong’s chefs bring together new, and sometimes Western ingredients and flavours in the delicate dim sum parcels that are perfect for sharing and presented beautifully at the table. At the Dim Sum Brunch guests have an amazing choice of fifteen dishes and can opt to try as many as they like. Stars on the menu include the delicate but indulgent Wild Mushroom and Truffle Bao, beautifully crafted to look like real Mushrooms; the Suan Cai Yu Crispy Dumpling, a black crunchy outer filled delicious Salted Fish and Pickled Cabbage; the Tea Smoked Egg Foie Gras, Seared Foie Gras and Coddled Egg infused with Osmanthus Tea Leaves; and the Hutong Dan Dan Noodles, a classic Sichuan dish served in a Spicy Minced Lamb, Sesame and Peanut Broth. Tonight, we are visiting Toro Toro located at Grosvenor House Dubai. One of the leading South American concepts in Dubai, Toro Toro boasts unique interiors incorporating, uber-chic leather furniture, fresh foliage, tribal Latin patterns, palm tree print and dark walls, with a golden back-lit wall highlighting the open kitchen. The restaurant, part of Chef Richard Sandoval’s portfolio, who over the past 18 years, has evolved from a chef-restaurateur to a culinary consultant, television personality, cookbook author and brand ambassador. Chef Sandoval takes a “made from scratch” approach to introducing Latin cuisine to the world. His style is to combine authentic Latin ingredients with international flavours and inventive techniques to create one-of-a-kind concepts and cuisines that include modern and coastal Mexican, Latin-Asian, Peruvian and Pan-Latin. The restaurant is partitioned into three areas, the main dining area, the private dining area and the lounge, which is situated upstairs, above the restaurant. We take a seat in the main dining area next to the window which allows us views of the marina. Our waitress who originates from Colombia herself is our perfect guide through the menu, and we are happy to hear her recommendations, and the pride in which she speaks about the cuisine at Toro Toro. To begin we select the classic Smoked Guacamole which is served with a side of Tortilla Chips. From the cold starters we debate between the Beef Tiradito and the Tuna Ceviche Nikkei, eventually we order the Tuna Ceviche Nikkei, which is made up of Soy, Semane Oil, Spring Onion, Chilli Chimichurri and White Radish. We thoroughly enjoy this dish, the Tuna is light, and the flavours perfectly compliment the fish. From the hot starters we stumble upon our dish of the month, Crispy Prawns, now, I know what you’re thinking, but we promise you these are not your average Crispy Prawns. Panko Breaded succulent Prawns are layered in a thick Red Chilli, Melcocha Sauce with Arugula and Mango. Cutting into the plump Prawns the bronzed batter cracks under our knife, the sweet Melcocha Sauce paired with the Mango is sublime. A must order dish when visiting Toro Toro.

We take a short break between our courses to explore the restaurant. The private dining room is one of my favourites to date, located in an active beverage cellar, this room has an elegant note to its design. Upstairs the lounge is (safely) busy with guests enjoying a few beverages to Latino tunes. Moving onto our main course, from the signature menu I opt for the Seared Salmon with Chaufa Quinoa and my dining companion selects the 300g US Prime Beef Tenderloin. Accompanying our mains this evening are the Sweet Potato Fries and the Amarillo Mash Potato. Let’s talk about the Salmon, as requested the Salmon has been cooked thoroughly, the associated sauce does give the dish a slight spicy tang, not too much that it diverts from the Chaufa Quinoa, which described simply, is a traditional Chinese wok style fried rice, but in this instance with a Quinoa twist. Personally, whilst I enjoy the Salmon to my personal preference, I prefer the Amarillo Mash Potato with the Salmon, in comparison to the Quinoa. The 300g US Prime Beef Tenderloin is a stunning cut of meat, served on top of a bed of thickly cut Potatoes and presented on a sizzler skillet, you’ll hear it before you see it. Our knife glides through the Tenderloin, to taste it has a light smoky grill aroma, and even through it is cooked well done (as requested) chef manages to retain the cuts moister. This is enjoyed with the side of Sweet Potato Fries, and sweet they are, we forget to ask the team how the Sweet Potato Fries have been prepared as we are curious to

learn about their extra sweet taste, this is however balanced with the Chipotle Aioli. The dessert menus features classics like Chocolate Fondant Cake, Fruit Platter and Tres Leches Cake. We do skip dessert, but we don’t feel like we missed out as the rest of our dining experience couldn’t have been anymore enjoyable. Toro Toro surprised us, we arrived a little unsure of what we would find, but what we did discover is a diverse range of South American cuisine reinvented with modern elements. I would even go as far as saying this was my favourite dining experience of the month. The staff are authentic and speak about the menu from a place of knowledge and understanding, the atmosphere is vibrant with Latino tunes in the background and the food like the culture it originates from is fun, adventurous and colourful. Until the 15th October 2020 Mare Mare will be participating in Abu Dhabi’s citywide campaign, Chef’s Table Dining Series - From Dunes to Oceans, which highlights Abu Dhabi’s best restaurants and most talented chefs. Commenting on the inspiration behind his unique Chef’s Table menu, this is what Chef Simone had to say, ‘Emirati cuisine often heavily features fresh fish and seafood, the same as Italian cuisine. I have incorporated locally sourced Seabass and Oysters on to my Chef’s Table menu, cooked traditionally and served with classic Italian elements.” Having grown up in Abruzzo, Italy, since the young age of 13, Chef Simone knew he was going to be a chef. At the age of 17 he was recognised as one of the top three young chefs in Italy by the National Federation of Chefs and became a qualified sommelier the following year. An international career followed, cooking in the Caribbean, Miami and the Middle East. -Chef Simone has a philosophy of customer-centric adaptiveness – taking inspiration purely from what his diners want to see on their plates. Onto our dining experience. We enter Mare Mare and are warmly welcomed by the team, the restaurant is (safely) bustling with guests and it is refreshing to see. We select one of the cosy booths perched to the side of the restaurant. Not that we ever need a reason to visit Mare Mare (the food is some of the best Italian food you will find in Abu Dhabi) but today we are here to try Mare Mare’s Chef’s Table menu. Before any of the food is served Chef Simone comes to the table to welcome us and explain the menu structure for the evening. This is one of the main highlights of a Chef’s Table experience, interacting with the chef. We begin our 5 course culinary journey. From the crudi bar, we both select the Gambero di Mazara, a Mazara Prawn elegantly plated and presented with fine Truffle shavings, a delightful start. Next, for our second course, the carpaccio section. I order the Carpaccio di Polipo, Octopus Carpaccio, whilst my dining companion selects the Carpaccio di Barbabietola, a Beetroot Carpaccio. Worth noting is that the Chef’s Table menu does feature a range of vegetarian and non-vegetarian options. Getting back to our dining experience, the finely cut Octopus is delectable, you can taste the freshness. The Beetroot Carpaccio arrives with an element of theatre, as it is revealed from October | 23


underneath a cloud of smoke, which infuses the dish and works in harmony with the velvety cheese. By our third course we start to pace ourselves, not an easy task given the food is so good. The Zuppa di Pomodoro, Roasted Tomato Soup has a chunky tangy base, dispersed by a creamy cheese that melts into the soup. We take a small break to ensure we have ample space to enjoy our coming dishes. The service so far has been very attentive but not intrusive, a fine balance but one the team at Mare Mare have nicely mastered. Chef Simone has been visiting our table throughout our Chef’s Table experience, introducing dishes and explaining the creativity behind them. The fourth course offers three types of pasta. I opt for the Risotto alle Melanzane, a Smoked Eggplant Risotto, the thick Risotto offers a rich velvety sauce with soft but slightly al dente grains. My dining companion selects the Chitarrina al Ragu di Agnello, a Homemade Spaghetti with a Lamb Ragu. The Lamb Ragu is a blend of fine succulent meaty cuts mixed in a dense sauce, the portion is very generous. 24 | Dining and Nightlife Middle East

We opt to share dessert, and each enjoy a sample of Tiramisu and Baba au Rhum, a superb end to a marvellous Chef’s Table dining experience. Tonight we are visiting Taikun, located at Vida Downtown. If it is your first time visiting just look out for the large #Taikun lit sign (you cannot miss it). Parking is straightforward with valet situated outside the restaurant, for those that wish to self-park, the option is available with underground parking leading to a well situated staircase, conveniently located just opposite the restaurant.

From the raw menu we select the Tuna Taco with Spiced Tuna, Ponzu, Coriander and Sriracha. Served as three bite sized tacos, the portion is enough for two. The flavours keep this dish light and fresh, with just the subtlest hint of spice.

Miso Black Cod, perhaps one of the most served dishes (after Burrata) in Dubai. Taikun offers a delicious option, opting to use just enough miso, chef lets the black cod’s texture take centre stage, plus extra points for the presentation. The Spicy Marinated Lamb Chops are the highlight of the evening, served with a White Onion Puree, Cherry Tomato and Sakura Cress. Perfectly cooked, just enough spice, the meat falls off the bone and melts in our mouth. Although the Chocolate Fondant is extremely tempting, we opt to skip dessert. However, we have made a mental note of a few dishes we will be going back to try, the Whole Canadian Lobster, Avocado Teriyaki, Sushi Platter (purely for Instagram) and yes, the Chocolate Fondant.

We would certainly revisit Taikun, with temperatures dropping and the terrace now open, we can picture ourselves enjoying a few beverages with a selection of Taikun’s delightful sushi. As we enter the spa, we are warmly greeted by the team. After a short consultation we decide to both try one of the signature treatments, the Sultan’s Massage. This 60-minute treatment promises to help us unwind with a thoroughly indulgent massage fit for royalty. Starting with cleaning and purifying of the feet we then proceed to our treatment. This soothing and deeply healing treatment carefully stretches muscles and relieves pressure points. The lingering scent of aromatic elixirs cleanses our body and mind. Admittedly this was the first time since the start of the pandemic that we were able to enjoy a spa treatment. I must highlight that the spa (and the entire hotel, room included) is immaculately clean.

This evening our dining destination is Amala, Jumeirah Zabeel Saray’s Indian restaurant. Named after the luxurious Maharaja Express in Indian, Amala Express takes diners on a journey of various states of Indian, unlocking each states herbs, spices, and recipes. We are presented with a few Papadums and Chutneys. Starters arrive and I have selected the Kanpuri Barkat ki Chaat, Baby Spinach Fritters, Lentil Dumplings, Chickpeas, Tamarind Sauce and Sweet Yogurt, the portion is large and easily shared by two. As recommended by the team my dining companion selects the Tandoori Boneless Chicken Thigh marinated in spices and yogurt. This dish is sensational the chicken melts away to reveal an array of flavours. For mains I opt for the Dal Makhani, and my dining companion opts for the Butter Chicken, two of the most popular dishes on the menu. The Butter Chicken is delightful, rich, creamy with a slight tang, it’s no wonder it’s a bestseller.

With their recently refurbished patio, it’s a slightly new version of La Petite Maison Restaurant and Bar in DIFC that greets me when I stop in for a recent lunch with friends. With pleasant temperatures returning to Dubai, discerning diners and other long-time guests searching for an upscale al fresco experience will be pleased to book tables on the refurbished terrace. Inside, the staff greet me, and after going through the proper security protocols, I’m shown to my table (already set with fresh tomato, olive oil, and a chic branded sanitizer, natch). If dining during lunch, guests have their choice of choosing from the more value-driven set menus, including the La Petit Menu, AED 135, which includes one starter and one main course, or the Le Grand Menu, AED 180, which offers two starters, one main course, and one scoop of ice cream, or, of course, a la carte, as we choose to do. The meals above can also be expanded to include a carafe of selected beverage for an additional price.

There are only a few places in Dubai that serve excellent Escargots de Bourgogne, and LPM is one of them. It’s a treat to indulge in, and I have almost mastered the skill to remove the garlicky snails from their shells without accidentally flicking butter across the table. We are also presented with Calamars Frits, Deep Fried Baby Squids, which are perfectly crispy and entirely moreish. For other starters, we receive a Dubai classic, Burrata Et Tomates, Burrata with Tomatoes and Basil. Finally, we are served an easy Green Lentil Salad, Salad de Lentilles Vertes, which offers a nice balance to the other starters.

Mains are another beautiful affair, including Filet de Daurade au Citron, Sea Bream Fillet in Papilloteau Citron, which is first presented as the whole fish, directly from the kitchen, cooked in parchment and served with Confit Lemon, Cherry Tomatoes, Capers, Sweet Pepper, and Olives. First, so we can admire for the ‘gram, but also to enjoy the deep aromas of lemon and olive oil. This will certainly not be the last time I order this dish, and the slight and subtle sweetness of the orange glaze contrasts beautifully with the savory notes of the perfectly cooked duck. We also receive several equally delicious sides, and it is worth noting that these little details are not overlooked. There are few places in town I can think of where I absolutely recommend leaving room for dessert, and LPM is probably at the top of the list. We are served a trio of my favorites, Warm Chocolate Mousse, Cheesecake, and the Pain Perdu. As far as sweets go, I must admit I like them all equally, and I think our approach to enjoy a bit of everything is the correct one. Served up with a selection of coffee and mint tea, the meal ends with distinctive branded LPM chocolates, another small detail I appreciate.

Pioneers of Japanese cuisine in Spain, 99 Sushi Bar & Restaurant opened its doors outside of Spain for the first time in the UAE in Abu Dhabi in 2017 at The Galleria on Al Maryah Island and now extends the portfolio to Dubai. Already revered in the region for its Abu Dhabi location success, the restaurant has created a loyal fan base of VVIPs, celebrities and elite socialites who return time after time to indulge and relish in fresh Japanese culinary customs. Having officially opened its doors just last month we made our way to 99 Sushi Bar & Restaurant’s new location at the opulent Address Hotel, Downtown. Already having dined at their Abu Dhabi restaurant we are eager to see if 99 Sushi is able to replicate its success in Dubai. Once you arrive at the Address Hotel, Downtown you can either opt for valet service or self-parking. Getting to 99 Sushi is straight forward, from the hotel entrance take a short walk down the stairway which will lead you to the restaurant. The restaurants décor is in keeping with the brand standards, luxurious golds and black, with touches of red velvet. The restaurant is partitioned into four areas, a small bar for pre-dinner drinks, a private dining room, the main dining room, where you will also find the sushi bar and the outdoor terrace,

which boasts uninterrupted views of the iconic Burj Khalifa. With temperatures still cooling and conscious that we will be eating a few raw dishes we opt for a seat in the main dining area. We begin with the CapuMiso Soup, Fermented Soy Seaweed, Truffle, Leek and Tofu Foam. The thick and creamy foam is delightful and an ingenious twist on this classic dish, we enjoy the foam before reaching the Miso Soup. Staying within the starters we share the King Crab Au Gratin with Wasabi, Tobiko and Yuzu Mayonnaise. Perhaps everyone’s favourite crustacean its refreshing to see the use of King Crab, as a protein it is much lighter in texture and flavour making the Gratin not as heavy as traditional versions. From the tartar options we select the Spicy Tuna Tartar, a bestseller the team inform us. The Spicy Tuna Tartar is served with Wakame Seaweed and Shoestring Chips in Kimuchi Sauce. Upon our first bite it becomes obvious why this dish is a bestseller; it is bursting with flavour. The contrast of the fatty Tuna with the slight sourness of the Kimuchi Sauce and the crispiness of the Shoestring Chips is remarkable. On that note let me state that 99 Sushi undoubtedly serves the best Bluefin Tuna in the UAE, think I’m over exaggerating? Try it for yourself.

We take a break and decide to go outside and admire the terrace. The terrace, in the cooler months will be ideal for a few beverages and some light bites from the menu. Plus, we are sure that the uninterrupted views of the Burj Khalifa will attract residents and visitors alike. Returning to our table, just in time for our next course to arrive. Presented before us is the Lobster Maki and the Soft Shell Crab Roll, each portion is served as 8 pieces. The Lobster Maki doesn’t shy away from its generous helping of Lobster, a slight smoky taste, this dish is made to be shared. Alternatively, the Soft Shell Crab is much lighter in taste and texture, we enjoy the crispy Crab beside the fresh Avocado. To conclude we select the Salmon Flambe with Lime and Spicy Mayonnaise and the Toro Flambe with Tomato Puree from the warm nigiri sushi options, ideal if you would like something a little bit different than the traditional raw sushi.

In our opinion 99 Sushi is the best Japanese in Abu Dhabi and quite possibly in Dubai, time will tell. 99 Sushi exudes style and sophistication and makes for the perfect date night destination. Enjoy a divine dining experience, and conclude your evening with beverages on the terrace, under the twinkling lights of the Burj Khalifa. The team at Namak are eager to recommend dishes and so far, we have enjoyed their suggestions. Moving onto the mains my dining companion opts for the Black Cod, the grilled fish comes with Laksa Pulao and Malvani Kokum Curry. Flaking perfectly off the fork, this is another must order dish. I have a choice of two dishes from the Chef’s Table menu, either the Paneer Kibbeh Koftas in a robust Masala Curry or the Sumac Dal Makhani with Picked Onion, both are served with Berry Pilau, with Arabic Raisins, Brown Onion and Pine Nuts. My waitress suggests she reduces the portion size so I can try both dishes, I happily oblige. The Dal is enjoyable, but I am so happy the waitress convinced me to try both as I would not have ordered the Paneer Kibbeh Koftas, and it turns out to be my preferred dish of the evening. We share the Berry Pilau and the three types of bread between us. Chef has done extremely well to fuse Indian and Arabic cuisine to create a unique Chef’s Table dining experience, even the bread (Harissa and Garlic Naan) has been reinvented.

For dessert we again opt to share my Chef’s Table course, the Roohafza Lukma with Saffron Cream and Pistachio Crumble. Namak celebrates the flavours of Indian cuisine paired with bold plating, tasteful gourmet combinations and diverse cooking techniques from around the world. Guests are invited to enjoy bespoke Indian food with global footprints at an inspired kitchen by the celebrity Chef Kunal Kapur. Portions are more than generous, and the price is reasonable, especially considering the quality of the food being served. Already boasting one of the most pictured restaurant entrances in the whole of Dubai, Akira Back at W Dubai – The Palm doesn’t just make for a great Instagram picture, the cuisine here is fun, adventurous, dynamic and a clear representation of Michelin star chef Akira Back himself. Before we venture on to our dining experience, lets address the man whose name is on the door, Akira Back. Chef Akira Back is famed for his sense of adventure, culinary creativity, and eponymous blend of Japanese fare with Korean essence. From having been awarded a Michelin star for his restaurant, Dosa, TV appearances on Iron Chef to breathtaking expansion plans, Akira Back is one of the hottest names in the culinary landscape today. We are excited to be visiting his restaurant Akira Back at W Dubai – The Palm today. We enter the restaurant, taking the compulsory selfie at the restaurants entrance, before sitting at a table next to the window. It’s a clear night so we can enjoy the city views. The restaurants décor is cool with dark grey tones, exposed red pipes, and back lit walls. The restaurant offers two private dining rooms, a host of cosy booths, a large sushi bar and an outdoor terrace. We start to browse the menu when Chef de Cuisine Giovanni Ledon comes over to our table. Having worked with Akira for years, Chef Giovanni gives us an introduction to the dishes and suggests that we opt for the Greatest Hits menu, a compilation of Akira’s signature dishes. A quick chat about our food preferences and we are set to begin. Worth mentioning is that the restaurant also offers a full vegan menu, around 25 dishes in total from cold, hot, salad, main to dessert. Our first dish arrives, and it’s the famous Tuna Pizza, Umami Aioli, Micro Shiso and White Truffle Oil. It’s love at first bite, the crisp base, the creaminess, and the beautiful fattiness of the tuna are spectacular. The next dish is equally as enjoyable, the Creamy Spinach Salad with Spinach, Roasted Sesame Dressing and Rayu, be sure to give this dish a good mix to blend all the flavours. From the cold section of the menu chef puts together a tasting of four of the bestselling dishes, Tuna Tataki, Hirame Carpaccio, Jeju Domi and the Salmon Tiradito. Nicely presented in a long ice box the delicate fish has been exquisitely plated to make each dish pop with colour. To taste, selecting a favourite is difficult, the Tuna again October | 49


offers that fatty creaminess contrasted with the Pickled Wasabi, whilst the Hirame offers a blend of textures with its Crispy Shallots, the Jeju is light and zesty with hints of Red Sorrel and the Salmon contrasts sweet Peach with bitter Yuja Lemon. Exploring the vegan menu our next dish is the Vegan AB Tacos, using Beyond Bulgogi (Beyond Meat is a Vegan meat alternative), Onion and Roasted Tomato Ponzu. Another great dish and I even convince my meat eating dining companion to finally try Beyond meat. Moving onto the Miso Black Cod and the Giant Red Prawns (served as 3 pieces). The Miso Black Cod is generously layered in a thick Miso sauce, breaking down the flavour is the infused foam, we would highly suggest ordering this dish.

The Giant Red Prawns cooked on the Robata grill extend a succulent smoky flavour, and we enjoy the accompanying Roasted Corn. From the signature rolls we try the Cow-Wow, a Braised Short Rib with Asian Slaw and the Red Dragon a Shrimp Tempura, Crab Mix, Avocado, Lemon Maguro and Eel Sauce. The Red Dragon has the slight edge of the two, a personal preference but we prefer the flavours. Finally, we conclude with the Seared Greenland Halibut, 48 Hours Wagyu Short Rib, and the Truffle Rice Clay Pot. With the Halibut and the Wagyu both cooked to perfection this is a superb ending to a great dining experience. Unsurprisingly after eating our way through most of the menu we opt to skip dessert.


Would we return? Yes, without a shadow of a doubt, the food is excellent, the service is warm and friendly, prices are reasonable, especially considering the quality, quantity, and brand. This versatile venue is great for a romantic evening tucked away in a cosy booth, a get together with friends on the outdoor terrace or an intimate family dinner in one of the private dining rooms. We tried the Greatest Hits menu which is a tasting menu of all Akira Back’s bestselling dishes, the prices to the right side are reflective of those same dishes but in full portions taken from the a la carte menu.
