Calling all foodie aficionados, Chef’s Table Dining Series, part of Abu Dhabi Culinary Season, brought to you by the Department of Culture and Tourism – Abu Dhabi in collaboration with Dining & Nightlife Middle East is quickly becoming Abu Dhabi’s most talked about culinary event. International Delights At La Cantine Du Faubourg

I will be completely honest and say that in the past few years, I’ve had more average meals than amazing ones at La Cantine du Faubourg (although this has been balanced by several legendary events at the venue). Perhaps it was what I ordered, but I had never been wowed. Thus, when a friend invited me to dinner recently, I was reluctant to tag along but decided to be optimistic about the experience. The interior of La Cantine hasn’t changed since my first visit, and I still appreciate the large windows, touches of graffiti, and other unique elements. Guests will see the design even carries over to the menus. While some large restaurants can feel cavernous, La Cantine is divided into easily identifiable sections, including a bar, lounge, and dining area, such that each area feels cosy and purposeful. We’re seated in the dining room, as it’s still far too hot to enjoy the outdoor terrace. After settling at our table, I peruse the beverage menu. The list of beverages boasts some unique selections, and while most of the group is happy with their mocktails, I enjoy a mixed drink. Turning our attention to (what else?) food, the menu offers a variety of selections in both the starters and mains, such that there should be something for just about every palate. We begin with a Dubai classic, Burrata, served with Melon Charentais, Datterino Tomato, and as La Cantine’s holds up, the fresh elements go a long way

against the savouriness of the cheese. My favourite starter of the evening is the must-order Honey-Glazed Wagyu Short Ribs. Served with Pomelos, Spring Onion, and Coriander, the perfectly crispy outside is balanced by the right amount of sweetness and acid from the Pomelo. Also, of note is the dangerously easy to eat Spicy Beef Toast. I often find Beef Tartare lacking in texture, but these tiny toasts seem to be the perfect answer. The dish is a clear favourite with the rest of the table as well. For our starters with protein, there’s also the Yellowfin Tuna Ceviche, accompanied by Sesame, Avocado, and Sweet Onion Vinaigrette. Vegetarians and those looking for plant-based options should not worry. There are also a number of filling salads to round out our appetizers. We sample the Quinoa and Kale Salad, complete with Apple, Goji Berries, aged Parmesan Cheese and the Heirloom Tomato and Peach Salad, Basil and Candied Lemon, which was my personal favourite of the two. The venue also decides to send us Crudités with Artichoke Hummus, which is not officially on the menu. The fresh bites are beautifully presented and would be an excellent option for those looking for lighter fare. For the mains, we’re even more impressed. The biggest showstopper (and perhaps my favourite picture from the evening) is the Lemon Taglioni with Oscietra Caviar. September | 27

The dish is split five ways, and, given the generous amount of Caviar incorporated into the pasta, everyone is able to enjoy this simple, but full of flavour, pasta. Next, there seems to be a surge in octopus dishes in the city, and La Cantine has one of its own. Although I still believe The Artisan has the best octopus in the city, the Grilled Octopus with Ratte Potatoes and Yuzu Dressing, at La Cantine is certainly good competition. We’re still on seafood as we’re served the large portion of Walnut Crusted Chilean Sea Bass, Pumpkin, Quinoa, Parmesan Sauce, and one of the most Instagrammable options from the night, the Squid Ink Risotto, which arrives with Grilled Calamari, Tomato, Basil. For those looking for something not from the sea, the Corn-Fed Grilled Chicken Breast, Mozzarella, Tomato Concassé with Basil, is also a generous portion. The accompanying sides offer a decent balance to the main courses.

Lesson learned? Sometimes venues are worth a second or third chance. I’m so glad I revisited La Cantine du Faubourg and would make plans to drop in for lunch or dinner again soon. Beachside Dining At West 14th Steakhouse

Located on the trunk of the Palm Jumeirah, this hotel has somehow gone under our radar until now. We are interested to see what our evening at Dukes The Palm, a Royal Hideaway Hotel will entail. We head through the lobby and follow the continual signage to West 14th. While I previously believed the venue to be situated within the hotel, it is instead a five-minute walk and actually located near the beach. For those with mobility issues (or for when temperatures are too hot), simply ask the concierge to arrange for a buggy (as we did on our return). On arrival, we find more of a beach club than the traditional steakhouse I had been imagining. There is both indoor and outdoor seating, with views looking back onto the Marina. So, how is the food? Our waiter brings out a warm crusty loaf of bread, with butter, and my dining partner is all too happy to indulge. We review the menu, which seems to offer a range of appropriate dishes for American cuisine expectations. Although

there are a variety of cuts of beef available, a few more cuts would be great to see. For starters, there are plenty of tempting choices (we bypass both the Burrata, as well as the Crab Cakes), and even though I know I am having steak as the main course, I still order the Steak Tartare. We also decide to split the West 14th Caesar. The Steak Tartare is prepared tableside, which we love. Although the lighting is a bit dark, so we can’t see all the finer details, all the elements are there, including a silky egg yolk. The dish is served with a relatively generous side salad (unexpected, but lovely in a starter). Across the table, my dining partner devours the Caesar Salad, which is served correctly (i.e., with white anchovies). We also like the addition of the hard-boiled egg with a soft centre. Both dishes are filling and could technically be split between two people (although we choose not to). We always enjoy steak, and West 14th doesn’t disappoint. we instead decide on USDA Prime Grain Fed Rib Eye, 250g. We like the variety of sauces offered, and I’m happy with my BÊarnaise, while my dining partner enjoys Garlic Butter. Between us, our steaks come with a side dish, and we split the difference -Wagyu Fat Chips and Grilled Veggies. Our steak is a generous cut and cooked to our preferred medium-rare perfection. The Wagyu Fat Chips are one of the best in the city and reach the right balance of crispiness and soft texture in the middle. I would happily order them again.

For dessert, we are spoiled for choice, and my American palate is delighted with the options. My dining partner opts for the Warm Chocolate Pudding, which takes an extra bit of time to cook, but is well worth the wait. Many Dubai residents are already familiar with the popular 3 Fils, one of our favourite locally grown restaurants, located in Jumeirah 1. Directly next door to 3 Fils is the new(ish) sister restaurant, BRIX Dessert Bar, which offers contemporary dessert concepts. BRIX serves modern desserts, handcrafted chocolates and truffles, homemade ice creams, and a tasting menu that changes seasonally. We are invited to experience BRIX Desserts and for our visit, we are tempted by the tasting menu, which comes paired with beverages. The intimate interior of BRIX is done in cool marble tones, with a small glass case showcasing some of what the restaurant has to offer at the front. We are politely instructed to sit at the counter, which, much like any restaurant, allows us to watch the chefs work their magic. Personally, I love being so close to everything. There is also a larger table for bigger groups at the back of the restaurant, and I would imagine that some outdoor seating would be available in cooler months. To start the experience, after first checking for any food allergies, we are first given a palate cleanser, mixed fresh in front of us, entitled ‘Liquid’ which includes a pearl of Earl Grey Tea, floating in a semi-sweet liquid. Given Dubai’s pervasive summer heat, it is a welcome (and unique) start to the meal.

Our next course is entitled ‘Smell’ and has a bit of fancy technique involved, including an olfactory element that I do not want to spoil. The delicate Guava, Coconut, and Coffee combination is a lighter start than you might imagine, and the course is accompanied by a Japanese touch beverage, our second favourite, of the drinks we try. Following ‘Smell’ is ‘Grain,’ which features flavours of Semolina, Gooseberry, and Almond. The course is accompanied by our favourite paired beverage of the day, the ‘Clean Colada.’ A tropical treat. The dessert is heavy on textures, and we enjoy the mix. We are asked if we would prefer a break between the next course, but we’re so excited that we request to continue, and I’m so glad we do, as the next dish is our favourite. As much as I’ve dined out, I’ve tried many classic flavour combinations. While I recognize some things were meant to go together, however, for the first time in a long time, we try something unique. For the ‘Fat’ course, you wouldn’t think Mascarpone, Olive, and Wakame would work so well together, but the unbelievably perfect creamy blend of the dish ensures it. Even for someone who doesn’t typically love olives (me), I would still happily see this dish at any restaurant. It kind of defies classification, and I would encourage you to seek it out. ‘Fat’ is accompanied by a drink of Lacto Plum and Tomato, which cuts through some of the umami of the dish. Next up is the uniquely named ‘Chlorophyll,’ which is a combination of Apple, Gunpowder, Celery, and Pea. Of all the dishes we try, this is the one that doesn’t work for me. While many of the ingredients are independently interesting, collectively, it’s not something I would personally seek out again. Something about the textures and tastes doesn’t appeal to my palate. Fortunately, the chef and his team take our (hopefully) constructive comments with patience. Obviously, food is subjective, and this combo might be a favourite for someone else. We finish the meal with ‘C’est La Vie,’ which consists of 65% Chocolate, Honey, and Truffle (yes, this is Dubai after all). For those chocolate lovers out there, this is the dish you have been waiting for. However, it doesn’t read as overly sweet as you might imagine and is a beautiful conclusion to the tasting menu. It is accompanied by the ‘Coffee in Mind,’ which finishes with a slight bitterness. Overall, we are pleasantly full. As a final treat, the team gifts us with a small box of lighter than air macarons, in a sample of different flavours.

What I personally love most is the team environment in which all of these desserts are created. Guests can see first-hand the skills and techniques executed by a well-run kitchen. Furthermore, there is honestly nothing like this experience in Dubai. While the price point per person, AED 300, might seem a little steep, I would challenge any guest to find a similar bespoke tasting menu in the city or perhaps even the UAE. The Artisan Delivers Approachable Fine Dining

We were delighted with the news that The Artisan was moving to a more central location at the Waldorf Astoria DIFC. We initially visited The Artisan in January 2018. Even though I’ve eaten a lot of food since then, the stand out dishes I remember (even now) are the octopus, and the pate (I know we wanted to order seconds, and I was delighted to see it on the menu at the new restaurant). But that was 2018, and it’s now 2020. The restaurant was originally supposed to open in the spring of this year, but, well, we were all busy staying safe at home. To bridge the gap, and keep his team working, managing partner Firas Fawas opened a pizza delivery business from The Artisan kitchen. Delivering high-quality (and delicious) pizzas, I had the opportunity to sample a few at home and thought the move was an excellent pivot in an uncertain market. For those interested, the pizza menu is still available during certain times of the day on various delivery platforms (and, of course, for dine-in customers). As we pull up to the Waldorf Astoria DIFC, I’m curious to see what the new interior looks like. The previous version was one of my favourites with its understated luxury, and the latest iteration is even more intimate, equally sophisticated, and an excellent fit for the upmarket address. Even better? With room for under 50 patrons, this is how I feel the future of dining should be in Dubai.

As we sit down, my dining partner and I review both the drinks menu, which proves a bit unnecessary, as the bartender joins us and asks our preferences. The list of beverages (including a robust selection of mocktails) is impressive. We decide to order one of the signature mixers, the Sorrento, which has highlights of Lemon Juice, Sugar Syrup, Fresh Mandarin, and Basil Leaves. Furthermore, we’re impressed with how the entire drinks menu is priced. The selection of food at The Artisan is somewhat streamlined, and we actually prefer when restaurants focus on quality over quantity. To start, we’re brought an assortment of freshly baked bread. The accompanying olive oil is well above average, and my dining partner, who has spent considerable time in Italy, is impressed with the offer. After chatting with our waiter, we decide on a trio of starters, including the must-order Polpo Croccate, Patate E Fagiolini Verde, which features an excellent slowly cooked Octopus, served with Lemon-Flavored Potato Cream Green Beans, Taggiasca Olive Sauce, Purple Potato Confit, and Garlic Flavoured Panko. To satisfy our veggie craving, we also receive the La Rapa Rossa, a Sweet and Sour Beetroot Carpaccio, Caramelized Walnuts, Buffalo Ricotta, Green Apple, and Rocket Salad. Tonight we are dining at Saadiyat Rotana Resort and Villas signature restaurant, Turtle Bay Bar and Grill. This pool front restaurant offers guests the opportunity to sit indoors amongst the cool, cosy interiors and enjoy views of the open kitchen or outdoors on the deck next to the spanning pool. With the weather starting to get cooler we take the opportunity to sit outside on the deck. Turtle Bay Bar and Grill serves a selection of surf, turf and grilled delicacies however the menu also boasts a range of splendid ceviches and chilled seafood options. During the day guests are invited to relax and enjoy the views whilst in casual attire, come the evening the restaurant is transformed, the menu becomes more upscale, with mouth-watering grills and locally-caught fish amongst the star dishes. To start, from the salads menu we select the Poached Lobster Salad and Herb Crème Fraiche with Asparagus, Edamame, Peas

and Leeks alongside the Crispy Baby Calamari, from the starters menu, which comes with a helping of Turtle Bay Bar and Grill’s House Dips and Lime. Both dishes taste sensational, the Crispy Baby Calamari offers just enough crispiness to the bite whilst the Poached Lobster Salad and Herb Crème Fraiche, our clear favourite, is well presented, each of the ingredients perfectly compliments the other, a light but tasteful dish. For our mains my dining companion select the Surf and Turf, which comes with Black Angus Tenderloin, Lobster and Sunchoke Chips, the steak is served as ordered, medium-well. I opt for the Scottish Salmon which is available from the Catch Of The Day menu. The Tenderloin is thick and juicy, this cut offers very little fat, exactly how we like our steak. The Scottish Salmon tastes fantastic but what really impresses me is the bespoke way I can order my Salmon, I opt for baked throughout and flash pan seared for a few minutes, to ensure a crispy skin. For the Salmon I select the Lemon and Parsley Butter sauce, whilst It’s not very often that we find a restaurant that is able to deliver high quality seafoods and steaks under one roof, usually we find for the Steak my dining companion selects the Béarnaise. If you haven’t visited Herb and Roasted Garlic Mushrooms, AED 30 Grilled Asparagus, AED 30 Saadiyat Rotana Resort and Villas they have a range of dining Sauces, AED 20 venues which we would also recommend, such as Si Ristorante Italiano and Bar, a great Italian, Hamilton’s Gastropub, perfect for a Raspberries and Lemon Creamy Brûlée, AED 40 quick bite and a few beverages, and not to forget Saadiyat Rotana Saadiyat Rotana Resort and Villas, Abu Dhabi, +971 2 697 0000 Resort and Villas popular brunch held at Sim Sim every Friday. To conclude our dining experience, we are at odds if we should order the Caramelized Banana with Mango and Ginger (a favourite dessert that we always order) or try something new. Eventually we decide to try something new and select the Raspberries and Lemon Creamy Brûlée. We opt to share the dessert between us. Light, sweet with a hint of zest, the Raspberries and Lemon Creamy Brûlée offers the sweetest end to our dining experience.
