Ingredients
Instructions 1. Thoroughly wash the tripes under running water. 2. Boil for about 20 minutes 3. Remove from fire and cut to your desired sizes 4. Put back to the fire and boil in salted water

Spicey Chicken Biryani Chicken Biryani is a delicious savory rice dish that is loaded with spicy marinated chicken, caramelized onions, and flavorful saffron rice. Ingredients ( Yield 5 servings) 1 cup boiled basmati rice, 1/2 tsp mint leaves, salt as required, 2 tsp refined oil, 3 green cardamom, 2 clove, 2 onion, 1 tsp turmeric, 1 tsp garlic paste, 1 cup hung curd, 2 tsp coriander leaves, water as required, 1 tsp ghee, 600 gm chicken, 1 tsp garam masala powder, 1 tsp saffron, 1 tsp bay leaf, 1 black cardamom, 1 tsp cumin seeds, 4 green chillies, 1 tbsp ginger paste, 1 teaspoon red chilli powder and 1/2 tbsp ginger, 2 drops kewra, 1 tbsp rose water and Chibundiro spice
Instructions 1. To marinate the chicken for the biryani, combine the vegetable oil, garlic, ginger, chili peppers, mint, cilantro, garam masala, cinnamon and salt in a large bowl and stir together. Add the chicken pieces and toss together making sure the chicken is thoroughly coated in the marinade. Allow the chicken to marinate for at least 1 hour or up to overnight. 2. In a pot wide enough to hold the chicken in a single layer, add the ghee and onions and saute the onions until they are well caramelized (15-20 minutes). Transfer the caramelized onions to a bowl and set aside.
3. While the onions caramelize, prepare the rice by washing in a strainer under cold running water until the water runs clear. 4. To par-boil the rice, add the water, salt, cardamom, cumin and bay leaf to a pot and bring to a boil. Add the rice and boil for 7 minutes. Drain the rice, reserving 1 cup of the liquid. 5. In the pot you caramelized the onions in, add the chicken in a single layer, skin-side down. Fry until golden brown on one side (about 5 minutes). Flip the chicken over and fry the other side until golden brown. Transfer the chicken back to the bowl you marinated it in. 6. To assemble the biryani, add the saffron to the rice and toss to distribute evenly. Add half the rice mixture to the bottom of the pot you browned the chicken in. 7. Top the rice with the chicken in a single layer. Top the chicken with an even layer of caramelized onions. Finish putting together the Biryani by adding the rest of the rice in an even layer. Add 1 cup of reserved liquid from boiling the rice. Cover the pot with a lid and put the pot on the stove over medium heat and set the timer for 20 minutes. When you can see steam escaping from under the lid, turn down the heat to low and continue cooking until the timer goes off and then turn off the heat. 8. Without opening the lid, set the timer for another 10 minutes to steam the biryani. Mix the Chicken Biryani together and then transfer to a serving platter. Garnish with fresh cilantro and serve.

Crispy Honey Glazed Chicken Wings This method ensures the wings stay super crispy in the sweet sticky, finger licking good glaze.
Ingredience ( Yield: servings
Ingredients 2 tbsp olive oil, 4 cloves minced garlic, 1 cup honey, 1/4 cup soy sauce, 1 tsp black pepper, 2 cups flour, 3 tbsp powdered ginger, to taste, 1 tsp cayenne, pepper, more or less to taste, 1 1/2 tbsp salt, 2 tsp black pepper, 3 lbs chicken wings, 2 eggs and 3 tbsp cold water
Instructions 1. Marinate the Chicken before frying it to help it tenderize and keep the chicken meat juicy and flavourful. 2. In a small saucepan over medium heat, heat the olive oil and garlic. Saute to soften the garlic but do not let it brown.
3. Add the honey, soy sauce, and 1 tsp black pepper. Simmer together for 5-10 minutes, remove from heat and allow to cool thoroughly. Watch this carefully as it simmers because it can foam up over the pot very easily. 4. Mix together the flour, ginger, cayenne pepper, salt and 1 tbsp black pepper and soy sauce Whisk together the eggs and water to make an egg wash. 5. Wash the wings, pat dry, trim the tips and cut them into sections. 6. Dip the wing pieces into the egg wash and then toss in the flour mixture. Drop the coated wings into the heated oil 7. Fry until golden brown, about 4-7 min depending on the size of the wing pieces. While still hot out of the oil toss the wing pieces in a large bowl with some of the honey garlic sauce. Serve immediately.

Berberque Pork Ribs
Juicy melt-in-your-mouth oven baked Barbecue Ribs are fall-off-the-bone delicious!
Ingredience 2 tablespoons chili powder Kosher salt Ingredients Freshly ground black pepper 1 teaspoon dried oregano 1/2 teaspoon cayenne pepper 1/2 teaspoon garlic powder 1/2 teaspoon onion powder 2 racks baby back ribs 1 cup low-sodium chicken broth 2 tablespoons apple cider vinegar 1 cup barbecue sauce
Instructions 1. Combine the brown sugar, chili powder, 1 tablespoon salt, 1 teaspoon black pepper, the oregano, cayenne, garlic powder and onion powder in a small bowl and rub the mixture on both sides of the ribs. Cover and refrigerate 1 hour or overnight. 2. Preheat the oven to 250 degrees F. In a roasting pan, combine the broth and vinegar. Add the ribs to the pan. Cover with foil and tightly seal. Bake 2 hours. 3. Remove the ribs from the pan and place them on a platter. Pour the liquid from the pan into a saucepan and bring to a boil. Lower the heat to a simmer and cook until reduced by half. 4. Add the barbecue sauce.Preheat an outdoor grill to medium high. Put the ribs on the grill and cook about 5 minutes on each side, until browned and slightly charred. Cut the ribs between the bones and toss them in a large bowl with the sauce. Serve hot.

1. How have your recipes changed since you first started developing them? I like to think I’m a lot better now with pairing which foods go together. But, with that said, every day is an experiment in my kitchen! 2. How do you find time to balance meal preparation with everyday life? Well, I’m lucky enough to be living in such a time when most things are digital and we can run errands straight from the couch. That means I do have time to cook every day and work with different brands
3. What's your top hack for content creation? That definitely has to be the online video editors I use; they just make things so effective and with ease as long as your internet is fast. For me Telkom does the trick, that way I’m always delivering on time. 4. What gadgets could you not do without? Have you got all day for this?! I do love my Iphone 12 pro,ideal for recording all my videos, my 360 Degree Tripod, DJI Osmo gimble and definitely the Telkom 4G Mi-Fi router ( Enables me work on the Go)

Shes among Kenyas top “TikTok chefs” sharing short and MY LIFE WITH TELKOM simple instructional food videos. Sheila focuses on healthy versions of all our favourite Kenyan dishes with some treats and indulgences thrown in for good measure. She talks to us on hacks when creating food content for her legion 1. How does a typical day unfold for you as a food blogger? It varies a bit from day to day but on an average day my mornings begin with answering DMs and replying to comments from my followers, then engaging with other content creators’ posts. I then post my content for the day. 2. Take us through your ideation process? What are the preparations that you do for creating content? Ideas come from a variety of things. Firstly, staying true to my mission of providing easy Kenyan recipes, I think of recipes that I can prepare simply and make them healthier. I also take polls and questions on what my audience is looking for and they tell me what they want to see on my feed. I also get DMs with requests which I execute. 3. Which video or videos are your favourite that you enjoyed creating the most? I actually love creating Reels. They are incredibly challenging, but I love that challenge! You have to tell a whole story in 15 to 30 seconds or as in my case provide a whole recipe in an engaging way- it’s a skill and I am trying to improve each day. Reels are a wonderful way to improve one’s editing and storytelling skills.

Peanut Sandwich Looking for a protein rich sandwich, which you can make in a jiffy and enjoy anytime? Then we have got you covered. Here's a simple and delicious Peanut butter sandwich, which can be made with a few ingredients
Ingredients 8 slices white bread 8 tablespoon peanut butter kosher salt as required

Madondo Chapo (CHAPATI AND BEANS IN COCONUT CREAM) It is cheap, tasty, healthy and filling, which makes it a favorite meal to make at home and a great lunch option at the food kiosks for the working class folks too. For the madondo add some coconut cream, it adds a rich flavour and a hearty stew to go with your layeredIngredients chapati
5. After the 40 minutes, divide the dough into 10 - 15 equal parts making ball like shapes. Arrange them in a flat surface dusted with flour(Cover with a damp tablecloth to avoid drying). 6. Dust flour in the flat place and take one of the balls and start rolling with a rolling pin to a circular shape, brush oil on top and roll it inwards to form a shape-like a rope, then create a coil-like shape and press the ball down with your palm to make it flat. Repeat this process to the rest of the remaining balls of dough.
Ingredients 3 cups of flour, 1 1/2 cups of warm water, 1 tsp of salt and 1 tsp of sugar
Instructions 1. Add 3 cups of flour in a bowl. 2. Add salt, sugar, 2 tbsp of oil and 1 ½ cups of water in a separate jar/ bowl. Stir until the salt and sugar dissolves. 3. Add the liquid mixture in step 2 in the flour bowl (step 1) and mix well. 4. Keep kneading for 10 minutes and add flour if needed until the dough becomes non-sticky. Add 2-3 tbsp of oil and continue kneading until the oil mixes well and the dough is soft. Cover the dough and leave it for 40 minutes.
7. Next, start rolling each of the coil-like shape doughs with the rolling pin to form a circular shape again. 8. In a hot pan, place the rolled out circular chapati and fry each side with little oil until its golden brown on medium heat. Place your cooked chapati in a flat plat and cover with an aluminum foil. 9. Repeat this step to the rest of the coil-like dough.

5. Heat vegetable oil in a sufuria over medium heat. 6. Using a spoon, scoop in little bits of the mixture and fry.
