Glorious Day Had at The Picnics An estimated 4,000 racegoers converged on the picturesque Fernhill Estate in Mulgoa last month for the second edition of the annual Fernhill Picnic Races which coincided for the first time with Caulfield Cup Day. The races were officially opened by Minister for Sport and Recreation, The Hon. Stuart Ayres MP, Federal Member for Lindsay, The Hon. Fiona Scott MP and Mayor of Penrith City, Clr Ross Fowler OAM. The six-race program was headlined by the $15,000 Fernhill Cup which was won by the Hawkesbury-trained eight-yearold gelding Colour Purple. His jockey, John Nisbet, had recently come out of retirement and was a popular winner on the day. continued ...Pg.7

Here we are at the pointy end of the year. For most, it’s a busy time of juggling numerous end of year events and commitments, all the while attempting to remain cool, calm and collected as the Festive Season approaches. Yes! The shopping centres become abuzz with people everywhere, frantically in search of the right gift for those near and dear. Workplaces strive to conclude the year that was, and families come together to celebrate special time with their loved ones. Christmas is a magical time of year, that brings with it love and laughter, memories of good times had and good times to come. It’s also a time to reflect on the year that was, and fond memories of those that have left us too soon. Art Exhibition in Mulgoa Mulgoa artist John Rice invites you to attend his 2014 exhibition and sale from 28th November to 7th December at his studio/gallery at 29 Fairlight Rd. This will be his eleventh solo exhibition. John has won many awards for his landscapes in oils painted in the traditional style. He will have around forty works on show as a result of painting trips to the Central West of NSW, the Flinders Ranges of South Australia and the NSW South Coast. Thank God for Garbos, Cleaners, Plumbers and Undertakers Do you ever thank God for our marvellous garbage collectors or those who manage our tips? What about praising God for your plumber, or those wonderful people who work at our sewerage treatment plants? How about a big cheer for our undertakers, mortuary workers, funeral homes, grave diggers and those who work at crematoriums? And let’s not forget those amazing hospital cleaners and nurses and doctors, who see us when we are sick, clean us and our messes up, and try and get us on the road to recovery. Like me, your probably think little of some of these important public health workers, until you need to. They do our more distasteful, yukky jobs, so that those of us with a weaker stomachs don’t have to. But what they do is much more important than that. Much of what they do stops us from getting sick in the first place. The Ebola crisis we all are hearing about in West Africa reminds us of the importance of our public infrastructure of sewers, waste removal, and the careful disposal of the human body after death. The Ebola virus is reportedly spread by direct contact with an infected human’s blood or bodily fluids, including sweat, or by contact with objects recently contaminated by an actively ill virus carrier. As I type this (20 October 2014), there have been almost 10,000 cases of Ebola and over 4,500 deaths. The World Health Organisation suspects the real number of cases is currently two and a half times that figure, and estimates that there may be 10,000 new cases per week by December. The mortality rate is reported at 70%. Over 230 health care workers, including high-profile doctors, have perished, making the problem worse. According to Wikipedia, no proven virus specific treatment yet exists, although there are experimental treatments and vaccines. (http://en.wikipedia.org/wiki/ Ebola_virus_epidemic_in_West_Africa) We dwell in the comparative isolation of Australia. Few of us understand the many political, social and public health factors that are making the epidemic worse. For all of our privileges and benefits, and for all our real scientific discoveries and modern technology, we are reminded how vulnerable human beings really are. The Ebola virus is so cruel because it is transmitted by physical contact, which is what a dying person most wants. Yet that touch can bring death to the ones they most love. This raises some perennial questions. Has God allowed this virus to occur? Yes. God is sovereign and in control of all things that happen in his world. So God says in Isaiah 45:7, ‘I form the light and create darkness, I bring prosperity and create disaster. I, the LORD, do all these things’. Because God is all powerful, we can pray to him through Jesus Christ, that God would destroy the virus, that he would be merciful to give scientists the discoveries they need to save human life, and that health workers would be kept safe. Is God unjust for sending this virus? No. God warned the human race that the wages of sin was death (Genesis 2:3; Romans 1:32). Now, we all eventually experience God’s just punishment of our sin in death (Romans 5:12, 18, 6:23; Hebrews 9:27). To some, God has sent Ebola. To others, God sends a myriad of other diseases, conditions and ailments. There are many ways to die, but in the end, death takes us all in the very way that God has decided (Psalm 139:16). Jesus Christ came to do more than bring us the justice we deserve.

Jesus came to bring us God’s mercy, forgiveness and grace that triumphs over the justice we deserve (John 1:17). By faith in Christ, each one of us can receive the forgiveness of sins we don’t deserve through his death on the cross (Romans 3:21-26; Acts 10:43; 1 John 1:8-2:2; 1 Peter 3:18). Will defeating Ebola win the war against death? No. Jesus has already done that, by his resurrection on the first Easter day. Jesus has defeated death and promises eternal life to all who trust in him (John 3:16; John 11:25-26; 1 Peter 1:3). Should we work to bring an end to the rampage of this virus? Yes. Jesus tells us we deserve death just as much as those who have already died at the hands of this virus (Acts 13:1-9). Undoubtedly, it is our common humanity that is driving the NGOs, who seem to be at the forefront of the response. The Apostle John tells us: ‘If anyone has material possessions and sees his brother in need but has no pity on him, how can the love of God be in him? Dear children, let us not love with words or tongue but with actions and in truth. (1 John 3:17-18 NIV). We should pray for our government to make right decisions, and think how we can all help as individuals. And don’t forget to thank the garbos, plumbers, cleaners, nurses, and undertakers! Luddenham Show

To be held on the 21st & 22nd of February this will mark the 111th show. The event, one of the biggest on the local calendar, will see thousands of people converge on the showgrounds over the weekend. The organizing committee are currently seeking volunteers to help over the weekend, along with lead up preparation. Over the wide range of activities you are sure to find the area that fits your interests. From stewarding livestock or helping in the pavilion to the kitchen or general helper & maintenance workers, as the old saying goes “Many hands make light work.” Furthermore if you are a talented entertainer or give community interest displays such as reptile or small animal shows the show boasts a busy stage in the centre of the public area that runs throughout the weekend. This would be a great way for any aspiring performers to get their name out into the public. Just ask Anja Nissen the winner of this years ‘The Voice Australia‘, Luddenham show was one of the first places Anja performed in public before hitting national fame. Pastor’s Corner Life is so busy, that many of us have no time to stop and consider what sort of person we want to be; and what direction we want our lives to go in. So often it takes a tragedy of some sort, the loss of a loved one, an unexpected change in our career or other circumstances, for each of to take stock of our lives. Joseph Medlicott Scriven was born in Dublin, Ireland in 1820. At the age of twenty five he left his native Ireland and migrated to Canada. It is said that there were two main reasons for him leaving his native land of Ireland; the first was that he was estranged from his family, as he had been influenced by the Plymouth Brethren; the second was the accidental drowning of his fiancée, on the evening before their wedding. Joseph upon arriving in Canada began a different lifestyle, becoming the local school teacher, dedicating himself to his students and the community. He took the Sermon on the Mount literally, and would share his limited possessions, sharing his clothing and never refused to help anyone. He became known as the Good Samaritan, throughout the area of Port Hope, Canada. Ten years after leaving Ireland his mother was seriously ill, and Scriven unable to return home, wrote her a poem. Reminding her that Jesus was her friend. At the age of sixty six Scriven, just like his fiancée accidentally drowned. His poem however lives on today; Charles C. Converse

Equally as popular was legendary radio and television broadcaster Ray Hadley who was perched atop a temporary tower calling the action of the races. Picnic Race Day ambassador (former State of Origin Star and Penrith Holden Cup Coach) Trent Barrett was joined by Penrith Panthers Jamie Soward, Kevin Kingston and Jamal Idris who spent the day greeting delighted fans. In the Luv My Bag Fashions on the Field Competition, a well-qualified panel of judges selected 10 finalists from a very well-dressed crowd. The day’s eventual winner was Chloe Bailey of Regentville who wore a floral A-line dress and stunning pastel pink headpiece. Runners-up were the 1950s inspired Deahna Bracken from Mount Annan and Fay Stevens of Marrickville. Fernhill’s fashionistas were not the only winners on the day. Dianne Smith of Penrith won a five night trip to Hamilton Island, while Stephen Barrington of Springwood scored a corporate box for eight of his friends at an upcoming Twenty20 International at ANZ Stadium. “Saturday was a very fitting encore to the inaugural picnic meeting last year,” said Mrs Brenda Tripp, Owner and CEO of Fernhill Estate. “I’d like to thank everyone who visited Fernhill on Saturday and made the event the success that it was. “We are confident that the Fernhill Picnics will continue to grow and that this is a day that the whole community looks forward to each year.”

Swimming Lessons Can Save Lives No matter whether it’s fresh, salt or chlorinated water, each aquatic option presents a potential risk to a family’s wellbeing, if basic swimming skills and water safety practices aren’t taken seriously. “Learning, and knowing how to swim, is the most wonderful gift any parent can offer their child. Not only can these skills help save lives, it can holistically assist children with their overall development,� said Keryn Daley, from Dive In Swim Academy, in Penrith. However, accidental childhood drowning claims the greatest number of young lives than any other tragedy. Between 1 July 2013 and 30 June 2014, 20 children between the ages of zero and four years, drowned in Australia; 70 per cent of these drowning deaths occurred in pools. Leading learn-to-swim authority, Swim Australia, suggest children as young as four months can start swimming lessons; enough time to allow a medical history to develop, the infant’s immune system to strengthen, and bonding to occur with the primary caretaker. “After four months, lessons in a gentle and developmentally appropriate program can, and should be started right away,� said Swim Australia CEO, Ross Gage. By three years of age, children who have kept up their swimming lessons from a young age, should be able to perform certain life saving skills, such as:

• Returning to the wall if they should fall in, • Climbing out from a pool ledge, • Swimming up to five metres, • Kicking with a kick board,

• Using basic arm stroke movements; and • Possessing a general understanding of water safety rules, like – ‘never to go swimming without an adult’.

This month, it’s all about the older children, those over 6 years of age. Some parents get scared of their children’s strong emotions. They try to dampen them down, or they dismiss them, encourage or bribe the child into feeling something else, jolly them up, redirect them, or even rescue them. Have a think about which emotions your parents didn’t cope with well when you were a kid growing up – anger, sadness, curiosity, fear, joy, shame (humiliation). When reflecting on this with parents, they have said to me “my parents didn’t cope with any of the so-called ‘negative feelings’, if I got sad, scared, or angry they would tell me to go to my room and come out when I was happy”. Now these parents find that they have difficulties in helping their own children process the same feelings because they have never been shown how. They also have difficulties accepting that these feelings are OK within themselves, and this leads to shame and self-loathing, which then leads to all sorts of dysfunctional ways of coping such as emotional eating, retail therapy, drinking, smoking, depression, or anxiety. All feelings are OK (yes, even anger). Feelings are a normal part of being human. It’s what we do with our feelings that counts! In my work with children, I always encourage them to locate the particular feeling in their body. This is based on neuroscience (which I don’t have enough space here to go into in detail). If a child can become adept at picking up cues from their body that they are getting overwhelmed they can calm themselves quicker. It’s like an early warning system. Support the child to locate where he feels the anger in his body. The answers I have heard from kids range from the feet (to run), the fists (to get ready to fight), the heart, the tummy, and the head. It’s the same process for adults and many of the parents I have worked with say they feel it in their chest. Here are the steps to calming down for older children… 1. Ask yourself “How does my body feel?” 2. Try to calm down by: - taking three deep breaths (inhale through the nose, breathe deep down into the belly, and exhale through the nose); - counting backwards slowly; - think calming thoughts; - talk yourself through it (examples – I can do it, I can get through this, calming down will make me feel and think better). Some of the children I have worked with say they got so angry at times that they had to use all of the above strategies. Some said they had to count down from 100. Some said they went to their ‘happy place’ to think calming thoughts. Some said that three deep breaths was just not enough. I encourage the child to think about the incident later and ask herself – why was I angry, what did I do, what did and didn’t work, what could I have done differently. I also encourage the child to praise herself for the things she did well. When kids have big emotions, parents try to reason with them or lecture them. They ask them why they are like that, what happened, they tell them to calm down without guiding them through the calming down process. Neuroscience is showing us that when humans are in a heightened state emotionally, the logical and rational part of the brain shuts down. There is no point trying to reason with a child in the height of an emotion, it’s like trying to read Shakespeare to a dog – it doesn’t make any sense! They need to calm down first.

The End Of The Line For The Train Shed The Train Shed, with Rides on Thomas the Tank Engine and Friends, has sadly closed. Apple and Blueberry Tarts Capable Cooks • Time 1 Hour • Serves 4

Ingredients

• 2 Tbsp Icing Sugar • 250g Granita Biscuits • 1 Golden Delicious Apple • 125g Butter, Melted, Cooled • 1/3 Cup Frozen Blueberries • 3/4 Cup Sour Cream • 1 Egg Method 1. Place biscuits into a food processor and process to fine crumbs. Transfer to a bowl. Add butter and stir until well combined. 2. Spoon mixture (reserving 2 tablespoons for topping), into 4 fluted, 11cm x 2cm-deep, loose-bottom tart pans. Press crumb mixture into base and sides of pans. Place in fridge for 20 minutes. 3. Place sour cream, egg and icing sugar into a small bowl. Whisk until well combined. Spoon into prepared pans. 4. Cut apple into quarters, remove core and slice thinly. Arrange apple slices and blueberries over custard mixture. Sprinkle with reserved crumb mixture. Bake for 25 to 30 minutes or until custard is set. Ingredients • 1 Tbsp Peanut Oil • 2 Tbsp Soy Sauce • 2 Tbsp Oyster Sauce • 1 Tsp Sesame Oil • 500g Chicken Mince • 3 Shallots, Thinly Sliced • 1 Tsp Finely Grated Ginger • 2 Cloves Garlic, Crushed • 4 Medium Button Mushrooms, Finely Chopped

• 220g Can Bamboo Shoots, Drained, Finely Chopped • 220g Can Water Chestnuts, Drained, Finely Chopped • 1/2 Cup (30g) Fried Noodles • 10 Small Iceberg Lettuce Leaves, Washed, Dried, Trimmed • 1 Tbsp Sesame Seeds • 2 Tbsp Crushed Peanuts

Method 1. Combine sesame oil, soy and oyster sauce in small jug or bowl. 2. Heat a wok over high heat until hot. Add peanut oil, then chicken. Stir-fry for 3-4 minutes, breaking up mince, until the mince is just cooked through. 3. Reserve 1/3 of the shallots for garnish. Add remaining shallots, ginger, garlic, mushrooms, shoots and chestnuts to mince. Stir-fry for 2 minutes. 4. Add combined sesame oil sauce, stirring until heated through and sauce thickens slightly. Stir through noodles. 5. Divide mince mixture evenly among lettuce cups. Use only quality local fruit and pre-soak for at least a week in Brandy or Rum. This will help to deliver rich flavour and remove sharpness of some of the citrus fruits used.

The calico cloth used to dress the pudding needs to be large enough to be able to tie tightly together; you can always trim it after the pudding has been tied and about to go into the pot. Don’t be shy with the tie!

To prevent this beautiful mixture from sticking to the calico, soak the cloth overnight and ensure the cloth is wet with a generous coating of flour before filling it.

To avoid mould from growing, once the pudding is prepared, hang in a low-humidity, cool-dry area. The flavours will mature and form a rich, flavoursome pudding for the whole family to enjoy.

Fixing Chronic Lower Back Pain Most people have had lower back pain at some time. Often it disappears after mild anti inflammatory medication, rest, or massage, but sometimes it doesn’t. Chronic (long lasting) back pain at best can be annoying, at worst constant & debilitating. Often pain radiates into the buttock or legs (sciatica), sometimes with strange tingling or even loss of feeling down an affected leg. This type of chronic back problem can stop you working, playing , sleeping, eating, thinking, and leave you frustrated when you can’t resolve it. There are many initial causes of chronic back pain but (in most instances) one major factor sustains the cycle of pain. Here’s how it happens: Often after simple overuse or other injury the back muscles in the affected area shorten (lock in) and literally swell with toxin-filled fluids that have leaked from injured cells. This causes the muscles & nerves in the affected area to become inflamed and painful, the swelling reduces blood & lymph flow and this sustains the cycle of inflammation & pain. Exercise may relieve pain, but can sometimes also worsen the problem. In most instances the solution lies in: • Removing the inflammatory build-up in back muscles • Lengthening muscles This allows muscle function & spine position to normalise. In this way a technique such as ‘Muscle Elongation Therapy’ often relieves back pain completely, even in many long standing cases.

Penrith City Council is considering a development proposal that would see the subdivi sion of the historic Fernhill Estate. Of particular concern to local residents is that the proposal would destroy the precious heritage of the Fernhill Estate and the surroun ding area in the Mulgoa Valley. A recent residents’ survey indicate d overwhelming opposition to the subdivision and residents are calling on Penrith Council to ensure that its first obligation is to listen to the community. The Mulgoa Progress Associat ion (MPA) were scheduled to attend a special com munity meeting to discuss the proposal and its impact on the local area if it is approved by council, at time of print. Greens NSW MP and Spokesperso n for Planning David Shoebridge said: “The Fernhill Estate has a rich history that needs to be protected and preserved for future generations. “What is being proposed appears to be a clear abuse of heritage provisions that, instead of protecting the site from over development, are bein g used to facilitate it. “Council must listen to the Mulgoa community who have made clear they are overwh elmingly opposed to the proposed subdivision of the Fernhill Estate.� Mr Shoebridge said.
