Crossman Reserve Bushcare Group Crossman Reserve in Wallacia is a 15 hectare remnant of River Flat Eucalyptus Forest and Cumberland Plain Woodland along Jerry’s Creek and provides critical habitat for animals such as possums, gliders, lizards, frogs, microbats, birds and a huge variety of insects. A Powerful Owl, which is a threatened species, has recently been discovered there as well as the endangered Cumberland Plain Snail. Crossman Reserve was named after the Crossman family who lived in ‘Westbourne’ one of the old guest houses. It offered ‘superior accommodation’ with a ballroom and orchestra and was well known for its dances and splendid cooking. It cost £3 pounds 7 shillings and 6 pence a week or 8 shillings a day to stay. The reserve is representative of the bushland areas that were once widespread across Western Sydney and forms an important biodiversity connection between the Nepean River and the conservation area of Bents Basin. It has been overgrown with privet trees and other serious environmental weeds. Wallacia Progress Association, Mulgoa Landcare and Penrith Council have set up the Wallacia Bushcare group. A Federal Community Environment Program Grant through Angus Taylor MP has allowed a regeneration specialist to help. The hidden secrets of Crossman Reserve are slowly being revealed as the group reduces the weeds and the native vegetation can return, but EXTRA HELPERS are NEEDED. The Bushcare Group meet on the third Friday of the month from 9:00am to 12:00pm. Contact Beth Rowland at Penrith Council on 0400 416897 or just come along. All tools and morning tea are provided by Penrith Council Bushcare team and COVID safe rules are followed. No experience is needed. The entrance to the reserve is from Golfview Drive and Kadiera Close. The next dates booked, subject to confirmation, are 18th December 2020 and 15th January 2021. r

What could be more important? We build houses, buy cars, make friends, go on holidays often all in the pursuit of happiness. We even say it to our children, “I just want you to be happy.” The difficulty with happiness is that it can be taken away as quickly as it comes. For most of us, COVID has put a big hole in the things that would normally make us happy. Missed holidays, small weddings, difficulties at work and more stress everywhere. We want things to return to ‘normal’ so we can just feel better about the world. What could be more important than happiness? JOY! Joy is something more deep-seated than happiness. Happiness often depends on the things around us. Joy goes deeper and comes from knowing that despite the current situation, everything is OK and will be OK. This is what makes Christmas such an important time. Parts of Christmas make us happy: presents, holidays and family just to name a few. However, Christmas is about Jesus and the good news that we have a Saviour. He is the one who is able to bring each one of us true and lasting joy. As the shepherds were told that first Christmas, “I bring you good news that will cause great joy for all the people. This year has been like no other. First there were bushfires, that despite the efforts of so many brave firefighters, the fires just kept spreading. Then in answer to the prayers of many, the rain came, and the season of destruction was over. Then in parts of our state, flooding brought another destructive toll. Then came a worldwide pandemic, and it still weaves a murderous path. Self-isolation and social distancing have been important in stemming the spread of this disease, but it has brought with it, to our community, increased fear, loneliness, and people being isolated. Now Christmas approaches, a time for being around family and friends. Why not invite someone to share your family celebrations with you? For many of us, there is always too much food so why not share it with others. Have you thought about buying or making a gift, providing a helping hand for a neighbour or someone you know? Do you know someone who would be encouraged by your gift? We need to abide to all the required health protocols, but our concern for others should always be present, particularly during this difficult year. The first Christmas is the story of the birth of a baby, called Jesus. He is God’s Son. “For unto us a child is born, to us a son is given, and the government will be on his shoulders. And he will be called Wonderful Counsellor, Mighty God, Everlasting Father, Prince of Peace.” (Isaiah 9:6-7). Jesus came to earth for a purpose and we are that purpose. Jesus came to provide each of us with a way out from God’s judgement. Jesus stood in our place, for the forgiveness of our sins; sins can be big things like murder, or small things like not telling the truth; we all sin. Take time this Christmas to remember, that Jesus Christ loves you and that is why we celebrate this season.

Silverdale resident and Emu Plains JRLFC player Matilda Vella has had a once in a lifetime experience, interviewing St George Illawarra Dragon’s NRLW star Jessica Sergis, as part of the Cadbury Get In The Game Women In Sport promotion. The national advertising campaign is featured online, supporting the next generation of women in sport. The first instalment of a four-part series features Matilda and Jessica and was also aired at the NRLW Grand Final at ANZ Stadium in Homebush recently. “It was a great opportunity to meet and train with one of the top NRLW players in the country, especially getting to know Jessica and finding out what it takes to be an athlete at her level” said Matilda to the Mulgoa Valley Gazette. Matilda auditioned for the part, before being chosen shortly before filming. The busy schedule involved eight hours of shooting, where she met Jessica at Kogarah Juniors fields to have a training run together, before moving onto Jubilee Stadium. It was there that Matilda interviewed Jessica, allowing her the opportunity to find out why she inspires so many women in sport. “It’s important for girls to have role models in sport to look up to, especially with women being unrepresented in professional league for so long. As mentioned by Cadbury, we want to inspire the next generation of women in sport and show all girls that no matter who you are, you can push past barriers and get in the game” said Joanne Vella, Matilda’s mother. Matilda’s club, Emu Plains JRLFC are committed to the growth and development of girl’s rugby league. They hope to continue their success of 2020 into next season and beyond. Real Christmas Trees Are Back! After a devastating year of drought comes some positive news with Glenmore Christmas Tree Farm back in 2020, producing and selling Christmas trees once again to the local community this month. The popular local farm has been providing homes with trees for over 20 years and their return is sure to bring some cheer for the festive season. “We have been growing Christmas trees for 25 years now. At times over the years, we have had thousands for sale. But, in recent times we have been susceptible to drought and bushfires. We did not open last year because of the drought. This year we are back, and we have a few hundred trees to sell” said Mark Ford of Glenmore Christmas Tree Farm to the Mulgoa Valley Gazette. Glenmore Christmas Tree Farm opens on Saturday 5th of December. They will be opened from 9:00am till 5:00pm on weekends, until sold out. Stands for trees will also be available to purchase. The cost of the Christmas trees will be $80. This is regardless of size. “Our customers love the smell of real Christmas trees. There is nothing like it. Entries Now Open for the Wollondilly Christmas Lights Competition

Following a long tradition in Wollondilly, Council is pleased to announce that entries for the 2020 Christmas Lights Competition are now open. Established in 1998, the Christmas Lights Competition has been held annually for more than twenty years, with residents from right across the Shire lighting up their homes and businesses to embrace the Christmas spirit. Mayor Robert Khan said, “2020 has been an unforgettable year for all of us. This is the perfect opportunity to take some time out to enjoy decorating your house and preparing for the holiday season”. Wollondilly residents can enter the Christmas Lights Competition by completing the entry form on Council’s website. Entries close on 4 December and judging will take place from 7 December to 13 December. The award presentation for

the competition winners will be held on 17 December. Further details about the venue will be available on Council’s website and Facebook page. The Elves Have Landed!

Millions of elves around the world have descended on their new homes for the next month. Whilst there, they will live on the shelves of families, having daily adventures with fun and a little mischief. Importantly, their job is to report back to Santa who has been naughty and nice. The Ciampi household is one family who have welcomed back William the Elf. “Our Elf is named William and he was given his name by our son Beau. William has been visiting Beau since he was 2 and he’s now 6, so 4 years now. We’ve heard whispers that William’s naughty brother is coming to visit us this year too” said Olivia Ciampi. This year’s adventures began a little bit different for William the Elf. Due to COVID-19, he arrived in a quarantine bubble, where he will stay for a week. Once he has completed his quarantine, he will only be allowed to travel from the North Pole to home at night, ensuring he stays COVID safe. William has been cheeky over the last few years. He managed to get a hold of Beau’s underwear before throwing them all over the Christmas tree! Beau’s superheroes took control of the situation the next night by taping William to the window when he tried to sneak one of his chocolates. “Every morning, Beau leaps out of bed and runs through the house to find where William has settled himself. His favourites are the messy pranks, including when he spilt flour on the floor and made flour angels. Beau talks to him about how his day was. He’s even apologised to William for some naughty behaviour to make sure that Santa got the message” laughed Olivia. Christmas is also a time for family traditions. The Ciampi’s enjoy nights looking at the local Christmas light displays together, watching Christmas Carols and of course, the music. “We have Michael Buble on repeat everywhere we go for December” ended Olivia. r

Well, finally the plans for Luddenham’s future have been released and at the time of going to print we all still have lots of unanswered questions. My family have lived in Luddenham since 1850 and no one would have ever thought that Luddenham could change so much. Here are a few highlights from the plan: The Agribusiness precinct draws upon the agricultural and horticultural history of the area, continuing to provide food security and supplying Sydney and export markets. Luddenham Village sits high on the ridgeline, at the core of the Precinct, and acts as an Agribusiness village that is fully connected to local, district and regional centres by transportation and parkland networks. The Agribusiness Urban Design Framework Plan is structured in response to its unique topography, the predominant north south ridgeline traced by the Old Northern Road and shadowed by the Northern Road with creek-lines originating at the head of the broad valleys. Luddenham Village will support the growth of the broader Aerotropolis as well as the Agribusiness Precinct. It is already home to several businesses, agricultural land, and residences. The Village is to be become a destination for local, regional, national and international visitors to celebrate the merging of the rich history of Western Sydney, with its future position on the global stage due to the construction of the Airport. Luddenham Village is to emerge as a tourist and cultural hub for the Aerotropolis, celebrating and being anchored by the rich cultural heritage and elevated visitors of Western Sydney, whilst servicing employees within the Agribusiness precinct. It is to become a destination for food and arts, providing opportunities for social and cultural engagement. The Village is to recognise key sites that anchor movement corridors in a

highly pedestrianized environment. Cultural wayfinding will guide visitors as they navigate through the Village. The Village is to remain compact but will be a distinctive centre that protects and enhances its heritage sites. New and emerging technologies will be embraced alongside design excellence and appropriate development while maintaining the Village’s character, amenity, and lifestyle. Have your say on the draft precinct plans. They are now on exhibition for community and stakeholder feedback until 18 December. During November, Luddenham Rural Fire Service were pleased to host RFS Inspector Scott Deller at the Fire Station for the presentation of the Premier’s Bushfire Emergency Citation. Each firefighter received a blue commemorative cap, citation badge and certificate with a letter. Wonderful recognition for the outstanding commitment given to the NSW community during the 2019/20 bushfire season. Certainly, well deserved! Have you finished your Christmas shopping? Haven’t started? Got a few bits and pieces? A Dad said to me recently that he was getting so stressed about Christmas. He’s a single Dad raising three boys and he can’t afford much. I asked him what his stress was achieving and he said that he wasn’t getting much joy from life. I asked what his kids really needed, and he replied “a Dad that’s not stressed and that is there for them”. Kids need a parent that is present to their needs every day, not a parent that has a sack load of presents on Christmas Day. Sometimes parents think that buying expensive “educational” toys make their children do better academically. Children don’t need stuff, they need you. Research has shown that children learn more in social interaction with caring, interested, and more knowledgeable others. The more that parents talk with (not talk at) their children the better they do socially, emotionally, and academically. So your child will learn more from sitting down with you with a world atlas poster that cost you $1, and exploring and chatting about what you both see and know, than she will from the electronic world globe toy that cost you 120 bucks. Those plastic toys will cause more mess and stress, and will sooner or later end up in landfill, but the gift of your time and energy with your children will last a lifetime. I’ve seen this little poem doing the rounds. It is such a simple, lovely thing… • “Something they want • Something they need • Something to wear, and • Something to read.” The “something they need” could be a bit tricky. They might think they need the latest electronic thing-a-ma-jig. Or you may think you need to give it to them to prove your love for them. Ask yourself if the “gift” is going to create connection or disconnection? So many parents I speak to regret purchasing the electronic thing that has caused their child to become more isolated and withdrawn and then had the battle over having to place limits on it. Wishing you much joy and connection this holiday season. r

Students to Get Extra Support Due to Remote Learning Disruptions This year has certainly been an interesting year for education across the globe. Here in Australia, the impact of COVID-19 has varied from state to state, with the full extent of impact not yet being realised. Last month, the NSW Premier, Gladys Berejiklian, announced a plan to implement additional support within schools by offering the COVID Intensive Learning Support Program for students who have fallen behind due to remote learning. The NSW Department of Education will assist schools to identify students requiring this support and employ a selection of teachers to execute the program, which is set to be culminating in the form of intensive small group instruction within the school setting. The teachers will be selected from submitted expressions of interest and encompass a range of educational backgrounds and current work statuses; including casual teachers who were impacted by a lack of work during remote learning. Minister for Education, Sarah Mitchell explained, “We know that learning for many students stagnated during the pandemic and tuition in small groups will help re-engage students in their schooling�. Whilst it is encouraging that the far-reaching impact of remote learning practices on vulnerable children is recognised, it will be interesting to see how equitable this program is in its availability to those who need it the most and how that will inevitably be determined. Either way, any support and additional funding for the education system in order to support the learning of our future generations is a welcome announcement. Ian Thorpe Visits Wollondilly Australian swimming champion Ian Thorpe joined Wollondilly Council and locals last month at the Wollondilly Leisure Centre to welcome the installation of a new pool hoist, which will provide greater accessibility to the pool. Ian Thorpe inspected the new hoist with Wollondilly Mayor Robert Khan while he was visiting the Centre for the launch of the swimming season. Council recently installed the pelican pool hoist and upgraded the aqua wheelchair thanks to a $20,000 grant from Uniting Ability Links. The need for access upgrades had been highlighted by community member, Mary Martin. Ian Thorpe also spent time taking questions from young squad members and swimmers at the pool - a great inspiration for our aspiring Wollondilly swimmers! v

Soaking & Sprouting – Increases Zinc Availability For Strong Knee Cartilage Soaking and sprouting are two very simple methods that can help you to remove a considerable portion of the antinutrients in foods. Both can significantly improve a food’s nutrient value for humans. These two simple steps are left out of food production processes and at-home cooking procedures. So, food-zinc remains unavailable for strong knee cartilage. Soaking grains, beans, nuts & seeds (seeds from now-on) ‘before cooking is recommended by scientists. Soaking simply means covering the seeds with cold water in a bowl, soaking 1218 hours. The process is simple, the benefits significant. Soaking pigeon-peas, for 6-18 hours reduces lectins by 38-50%, tannins by 13-25% and protease inhibitors by 28-30%. Discarding soaking water before cooking furth reduces antinutrients, with loss of some polyphenol antioxidants. If seeds are then cooked antinutrient contents reduce further. Studies show ‘soaking for 12h’ then ‘boiling for 80min’ is most effective for antinutrient removal and toxicants. Sprouting takes only slightly more time. Start off by soaking seeds as above, them discard soak-water, and rinse seeds thoroughly with clean water. Spin-off residual water and allow seeds to sit (dry, out of direct sunlight) in a bowl for a further 12 hours. Depending on the type of seed this ‘sitting-rinsing’ process is repeated 2-4 times, & sprouts develop. Sprouting reduces phytate by 37-81%; trypsin inhibitor significantly; lectins by 96%; increases vitamin C, B2, B3, and available protein; and dramatically increases protein digestibility. Sprouting also degrades galacto-oligosaccharides in seeds.

Galacto-oligosaccharides cannot be digested by humans and so pass undigested into the large intestine where they are broken down by our gut bacteria. Thus galacto-oligosaccharides in small amounts are prebiotics with health benefits, but above 20g/day they are the ingredient in legumes that can cause intestinal gas, bloating, stomach-cramps, and diarrhoea. Fermentation is an even better method for removing antinutrient factors from seeds. Antinutrient content of fermented seed flour is very low compared with germinated and roasted seed flour. Soaking/Sprouting and fermentation can be combined, together with cooking for an additive reduction in antinutrient content and an increase in nutrient availability of foods processed this way. We’ll look at fermentation next edition.

Due to the Coronavirus crisis, Santa will be wearing a mask underneath his beard. We usually have a staff member taking the photograph of your pet with Santa, however to minimize the number of people in the room, we will require you to take your own photograph using your phone/camera, or with our camera where we can print off the photo for you. Only 1 client per pet will be allowed in the room at one time. Santa will be photographed with pets only. For a $10 cash donation, your Santa photo is presented in a Christmas card, with all proceeds donated to the Guide Dogs NSW.
