““I am Lana Wilkinson” … and I’m a fashion stylist I started in this business pretty much pre-social media. In the beginning, I wasn’t seen as a real stylist because my background is marketing and PR, but I’d been over to the US and saw an opportunity. I could see that there was a link between showing someone how to put an outfit together and then a company making a sale, but back then the idea of making a purchase on Instagram was unheard of. I became that conduit. Growing up, I was the girl who’d say to her mum, ‘I want play costumes’. I’d cut into mum’s old clothes and make them into dresses. Mum was very into fashion. She never walked out the door without being ‘done’, so I grew up that way too. Plus, my father is in dry-cleaning, so by the time I was 16 I could spot a stain like no one else and learnt about fabrics and what washes well. I studied public relations at RMIT, then a week after finishing that degree I got a job as a receptionist at Fox Footy Channel. I was always way more interested in what was going on in the green room. I’d wear certain things and the girls would ask where I got them, and they’d go off and buy them, which is where I first started to think, ‘Hang on a sec ...’ Next, I was working in fashion marketing at Westfield, which is where things really took off. In a corporate role you’ve got a budget, but often it doesn’t extend to stylists, so I’d do it and I loved it. But it was only when a girl I went to school with, who was the creative director of Mosman, said, ‘Lana, I notice on Facebook when you post outfits, people want to buy them. Do you have a blog?’ I didn’t have a one, but I had all these images of all the work that I’d done, so I sat up all night making a Tumblr blog. It’s still up there. I do like to have a bit of an edge to my outfits. I like structured clothing, and classic silhouettes. I’m very monochrome and neutral. I think that’s probably by virtue of my occupation, because I see so much colour. Right now, I’m loving a big puff sleeve – Dynasty vibes. R
oslyn Grundy, Victorian editor of Fairfax Media’s Good Food Guide, used to laugh at the idea that restaurant kitchens pinned mug shots of food reviewers like her on their walls – until someone sent her the evidence. “I’ve since had a couple more examples sent to me, so, yes, it does happen,” she says. “But I’m not often pictured in print, and I like it that way, because I really do prefer to review anonymously.” Stakes are high for restaurants vying for a place in Australia’s unofficial food bible, where chef’s hats (awarded to restaurants scoring 15 out of 20 and more) could mean thousands in revenue. “Some restaurants have actually not survived [losing a hat] and yet others have bounced back better than ever,” says 2019 chef of the year, Peter Gilmore, whose Sydney restaurant Quay has won three hats, 17 years in a row. He says publications such as the guide are crucial because online and social media commentary is rife. “It’s still really important to have professional critics. It gives the public a guide to where restaurants are, and where they sit. And [it gives] the industry a benchmark to work towards, as well.” But, who makes all those decisions about hats, scores and awards? How do they get made, and where is dining headed? December is when national guide editor Myffy Rigby and her teams in Sydney and Melbourne start thinking seriously about the next edition.
TIPPING A HAT The “online brain” (a Google spreadsheet) is updated, with restaurants that have opened, or closed, since the previous issue went to press. “That’s the biggest headache: the places that close or change hands right at the very last minute,” Rigby says. “In a way [the guide] is much like buying a computer – as soon as you’ve bought it, it’s out of date. It’s tough, but that’s why you need to look at the guide as a holistic reference point to the Australian dining industry.” Reviewing season starts in January, when reviewers (59 at last count – a mix of Fairfax journalists, long-time restaurant critics and other food enthusiasts) head out, booking under assumed names and nearly always a table for two (a friend makes for more fun and less suspicion). These days, smartphones allow them to take occasional discreet notes and images, but reviewing used to be more cloak and dagger, with notes scrawled furiously in toilet cubicles. Each reviewer is equipped with a handbook, with

instructions on everything from how to order (look for indicative dishes rather than one-off specials) to what to do if their cover is blown (watch how surrounding tables are treated). Restaurants are marked out of 20: 10 for food, five for service, three for atmosphere and two for “X-factor”. In July, the last of 500-odd reviews are filed and edited by Rigby before the looming deadline in late July or early August. At only 160 words, the reviews must be snappy, useful, factual and entertaining. Cliches are not on (but the odd pun is tolerated), and Rigby has a growing (and amusing) bannedwords list, which includes “mouth-watering”, “crispy” (“crisp” is OK) and “funky” (“a room is not funky, but dry-roasted shrimp paste can be”, the list explains). July is also when the senior review team – Grundy, Gemima Cody and Ardyn Bernoth in Melbourne and Rigby, Callan Boys, Terry Durack and Jill Dupleix in Sydney – meets via video conference to thrash out any contentious scores,
particularly any that have changed significantly from previous years, along with finalising chef’s hats. Another meeting a few weeks later dishes out the awards. Meetings can last up to seven hours. The process is designed to ensure restaurants are scored to a similar benchmark across the country. “And if there are any queries – if we’re saying, ‘Hang on, I’m not sure that’s worth a hat’, or we’re dropping a hat – we’ll send someone back to revisit the restaurant,” Grundy says. Senior reviewers went interstate this year in a move designed to deploy fresh taste buds to the established Sydney and Melbourne dining scenes and to encourage consistency across the country. On top of her regular reviews, Age restaurant critic Gemima Cody ate her way through Tasmania, Byron Bay, Noosa and Brisbane, visiting 30 restaurants in 19 days. Such concentrated eating can take a toll on reviewers’ bodies, she says, only half-joking. At times she would “crawl in through

the door, lie face down weeping in a corner, not wanting to talk to anyone”. The reviews provides a snapshot of dining trends. Cody says money has been a key: serious dollars have been invested in some restaurants (Point Leo Estate), and many diners will pay for whole, stuffed crabs, caviar and expensive wagyu. There’s been an explosion of “peasant food” dishes such as cacio e pepe (pasta, cheese and pepper). Terry Durack has noticed chefs ageing whole fish (Saint Peter and Momofuku Seiobo), sea urchin (on toasties, house-made crumpets, pasta and more) and the further rise of vegan and vegetarian cooking (Smith and Daughters in Melbourne and Alibi in Sydney). For now, though, the guide’s reviewers can rest until January swings around again. Or, even better, maybe it’s time to sign up to that jazz aerobics class they’ve always been talking about. ●

Serves 8-10 1 hour 45 minutes 150g stale rustic bread 50ml Prosecco Olive oil 1 lemon 4 cloves of garlic 1 dried red chilli 1 bunch of fresh mint (30g) 4 anchovy fillets in oil, from sustainable sources 1 tablespoon baby capers in brine 1 large butterflied leg of lamb, boned but shank bone left in (2.5kg)

his is a wonderful way to flavour and enjoy a leg of lamb. In the pictures you’ll see I cooked two the oldfashioned way over fire, and of course you’re welcome to do the same if you can, but I’ve written this recipe for roasting in a standard oven. Get some lovely local lamb from your butcher and get them to bone it, too. ●
Method ■ Preheat the oven to 200ºC. Tear the bread into rough 2cm chunks and place in a food processor, then pour over the Prosecco, drizzle with 1 tablespoon of oil, finely grate in the lemon zest and squeeze in the juice. Season generously with sea salt and black pepper, then leave to soak for 10 minutes. Peel the garlic and roughly chop with the chilli, pick the mint leaves, and add to the processor with the anchovies and capers. Pulse into crumbs, then taste and season to perfection, if needed. ■

Lay the lamb leg on a board, skin side down. Massage all over with a pinch of salt and pepper, then spoon over the stuffing in an even layer. Roll up the leg meat to seal the
filling inside, then tie at regular intervals with six lengths of string to make sure the stuffing is secure. Place straight on to the bars of the oven, with a tray underneath
to catch the juices. Roast for 1 hour 10 minutes, or until the lamb is golden, yet still blushing and pink in the middle (cook for a further 10 to 15 minutes if you prefer your lamb well done). Rest for 5 minutes, while you simmer the tray of drippings on a medium heat with a little water, stirring to pick up any nice sticky bits. Slice the lamb and spoon over the tray juices. Beautiful served with roast potatoes and seasonal veg – or I love it stuffed into a sandwich. ●

here are many upsides to living in a city fond of cocktails. Cocktail-savvy cities keep bartenders on their toes, lifting standards for everyone. Then there’s the expectation that every bar will have some kind of cocktail offering and, when it comes to restaurant bars, the raised expectation that the cocktails will match the standards of the cuisine. Capitano, a new American-Italian joint by the team from Fitzroy’s Bar Liberty, successfully meets all expectations. Even those who have never experienced a New York-style Italian restaurant firsthand will get the idea at Capitano. The softly lit, timber-heavy, terrazzo-floored room has an excellent bar. Backed by a line of arched mirrors, it has a Scorsese-movie feel to it, like it’s been serving wise guys for

Tipple from the Big Apple generations. The smell of excellent pizza helps. Capitano’s cocktail list is compact and thematically spot-on, with the classics given an Italian riff that leans to the savoury and bitter. The list starts with a couple of versions of spritz, then moves to aperitivo-style drinks perfectly matched to the surroundings. The Fantastico (try ordering that without feeling and sounding enthusiastic) is a thoroughly satisfying mix of gin, chamomile amontillado and tonic, served over lots of ice in a highball glass. Then there’s Capitano’s version of a Negroni, given a twist with the addition of saffron and nutmeg, and an olive-oil gin martini, where the gin has been fat washed with the oil, giving the drink a subtle, but distinctively savoury background olive flavour. Capitano’s wine list is also worthy of attention. It sticks with the Italian theme, with all the wine either Italian or Australian and made with Italian varietals. Textural Moondarra friulano from Gippsland shares the list with a floral pavana made from Dott in Heathcote and gorgeously juicy sangiovese from Tuscan maker Bibi Graetz. Capitano’s pizza, made with 60-hour-cured dough, has a bready but wonderfully light base, and is the go-to snack here. The entry-level tomato and cheese version, which can be customised with the likes of pickled chilli and fennel salami, is great pals with both the fresh, medium-bodied reds on the list and the cocktails. Its tomato pie comes with lots of garlic, marjoram and Sicilian anchovies. Capitano covers familiar territory for Carlton. But a strong team, great cocktails and admirable pizza make it pretty fresh, too. ●
Signature drink There are those who curl their lip at the idea of a customised Negroni but Capitano’s version, with its floral, spicy notes of saffron and cinnamon, enhances rather than overwhelms the traditional gin-Camparirosso triumvirate. PAIR IT WITH … Quality pizza with satisfying levels of char, or housemade focaccia with a side of garlic butter. ●

he won her first Grammy at 28, counted Frank Sinatra as a close friend and rallied Elton John, Stevie Wonder and Gladys Knight to record That’s What Friends Are For to raise money for AIDS research in 1985. At 77, American singer Dionne Warwick is a mighty force and second to the late Aretha Franklin as the most-charted female vocalist of all time. That’s 56 singles in the Billboard Top 100 charts between 1962 and 1998. Long before she won her first Grammy, she was nominated for one at the age of 24 for the hit single Walk on By in 1964. Raised in a church-going, musical family in Orange, New Jersey, Warwick still lives by the gospel and counts her blessings to still be able to tour the world. She doesn’t have time for vocal warm-ups, does her own hair and make-up and takes eldest son David Elliott (he plays drums in her band) on the road. Her younger son, Damon Elliott, is an awardwinning producer. She has witnessed the rise of free love in the ’60s, ’70s disco and ’80s pop, happily reinventing herself along the way.
From beehives to cropped hairdos, she’s made a career singing songs written by Burt Bacharach, Hal David and Carole Bayer Sager. “I come from a family of singers, so it was inevitable I’d become one, too,” Warwick says. “My family was my first musical heroes. “But then came Lena Horne, Ella Fitzgerald, Marlene Dietrich, Sammy Davies Jnr and Frank Sinatra. I was everybody’s baby and they moulded me into the singer I went on to become.” Singing a duet with Frank Sinatra on Solid Gold in 1986 is a career highlight. “Frank Sinatra was like my surrogate dad,” she says. “Frank and Sammy Davis Jnr took me under their wing. I referred to Frank as poppy. He was always there for me. We also have the same birthday of December 12.” When That’s What Friends Are For was released as a charity single it raised $US3 million for AIDS research and prevention. “Recording that song was a special moment because it included a few dear friends, first of all, but, more importantly, the song raised a social consciousness and got people thinking about others

rather than themselves,” Warwick says. “It’s about being a human and connecting with those who needed the most help at the time. “The mid-80s was a very frightening time for AIDS. Nobody knew what it was and, in the first few years, nobody knew how it was contracted. So, having this song reaching that many people and pulling at the heartstrings was a huge milestone. The recognition for the song and the cause behind it was a win-win.” Warwick, who be in Melbourne in November for a national tour, will also squeeze in a Birdcage appearance at Flemington for the Melbourne Cup, as a guest of the Victoria Racing Club. “Love connects people,” she says. “Whether I sing a song about unrequited love, getting over a love affair or entering a new one, everyone can relate. ’m told by art gallery owner Aran that in 2012 Footscray had only one local cafe and just a few passers-by. Now, the area surrounding tram route 82 is thriving, with a growing spread of cafes, bars and other lifestyle flourishes. Newcomer, Mr West, brings the efficiency of the modern day to the bottle shop and bar on Nicholson Street Mall. Downstairs, you can choose between any of the 500 craft beers and wines, then take them upstairs to the bar to go with their cheese and charcuterie boards. But, if it’s takeaway you had in mind, you can order Uber Eats, or BYO any food straight to the bar itself. In fact, it’s encouraged. Although, while it is five o’clock somewhere, for more daytime dining I walk over the road to Rudimentary for their wagyu cheeseburger. TRAVEL \ PARIS Paris is, surprisingly, a polarising city. Some Australian travellers say it’s cliched and dirty, others argue that’s part of its charm, but there’s no denying the history, architectural pedigree and style that emulates from the French capital. Even a brief weekend visit to Paris is worthwhile, but don’t be amazed if it leaves you wanting more.

Montmartre is home to Moulin Rouge and SacréCoeur Basilica. You can easily spend a day or two here viewing the city from outside Sacré-Coeur and travel the steep cobblestone streets. Nearby Pigalle, once the red-light district, is gaining traction thanks in part to the Duperré basketball court. The court has been painted purple, orange and blue in a marketing collaboration between local label Pigalle and Nike. It’s a controversial opinion, but given you’re likely to wait in a long queue only for a glimpse of the Mona Lisa, visits to the widely popular Musée du Louvre or Musée d’Orsay are best saved for a fortnight trip where you have time to spare. Another destination requiring an entire day is the Palace of Versailles, which can be reached by train from Paris in about in hour. If you are heading there in peak holiday season, expect to wait up to three hours in line before stepping inside the palace. However, the gardens are arguably the most impressive part of Versailles, and there is rarely a line to solely enter them – even on the busiest days of the year. They’re also free to visit during low season (November to late March). ●

While it’s an awesome time of year, it can wreak havoc on your goals (and your waistline). The good news is you don’t have to completely sacrifice your social life and become a hermit if you want to see results. Here are a few simple ways you can stay on track and still enjoy yourself this silly season. MAKE YOURSELF ACCOUNTABLE \ Write down your goals for the social season, put them on the fridge, tell your friends, partner and family. When you tell those around you what you’re setting out to do, you’re more likely to stick to your guns (and politely pass up the party pies that are being passed around).

If you’re going to an event with a friend, ask them to help you stay on track. If you’re going solo, why not schedule in a workout with a friend for the next morning? You’re more likely to head home early and get some sleep if you know you’ve got to be up early for a workout. PICK YOUR POISON WISELY \ Did you know
that your favourite espresso martini has the same amount of calories as a Mars Bar? While they may taste delicious, cocktails are packed full of sugar and calories, so they definitely shouldn’t be your drink of choice when you’re trying to stay on track to reaching your goals. If you’re going to have a couple of drinks, stick to clear spirits with sparkling or mineral water and make sure you always stay hydrated by alternating each drink with some good old water.
ALWAYS COME PREPARED \ This is something I
always tell my 28ers – never arrive to an event on an empty stomach. You’re way more likely to overdo it on the canapes if you’re absolutely starving – be sure to have a small, balanced meal or light protein snack before you go to avoid inhaling the first fried-food platter that comes your way. Nowadays, there are more and more healthy options at events and social gatherings, so, if you are planning on eating a bit there, my advice is to assess your options. Take a look at everything on offer (before you go for the first mini-burgers you see) and make an educated choice for something fresh and avoid the fried stuff.

DON’T SKIMP ON SLEEP \ Too often we
forget to prioritise it, but sleep should never be underestimated when you’re trying to reach your health and fitness goals. We need adequate sleep to give us enough energy to tackle our busy lives and to bring the best of
ourselves to our work and relationships. You’re also much less likely to hit snooze on your morning workout if you’re well rested and have had enough sleep. Give priority to getting enough ZZZs each night, and don’t be afraid to have a nap if you’ve had a late one. ASK YOURSELF IF IT’S WORTH IT \ At the end
of the day, this time of year is packed full of social events and, let’s be honest, by the end of it they can get pretty repetitive. Ask yourself, is it a truly special occasion or just another stock-standard night out? Some events are worth going all out and enjoying yourself, and others just simply aren’t worth your time. So, pick and choose wisely – and remember, as long as you enjoy yourself on a night out here and there and jump back into your healthy routine the next morning, there’s no need to worry about undoing all your hard work. ● ● 28bysamwood.com

S
onja Latimer joined Mentone Grammar School in 2016 and is a year 4 classroom teacher. Sienna Lyons is one of her students and they have worked together to support Sienna’s passion for sport, performing arts and public speaking. Sonja has also been Sienna’s loyal advocate in ensuring she gets any help she needs to achieve her full potential in the classroom.
I do a lot of different things at school and I love acting, singing and dancing. One of my best moments this year was going to the principal’s office to be told that I was performing arts captain for the prep to year 4s. Later that week at assembly I got my badge. As captain, I introduce performances at whole school assemblies and instrumental concerts. I taught myself to sing and I’m head of the Eblana Singers at school. I help the music teacher with warm-ups and I hand out the music. This year I got the lead role as Joseph in Joseph and the Technicolour Dreamcoat, too, for our chapel presentation. I like sports and I’m in the snow sports team so we go to Mount Buller to race against other schools. I do ski cross and GS where you ski on a course around the flags. I’ve been skiing since I was three and it’s a lot of fun, although when you compete there are a lot of people watching so there’s some pressure. I play basketball for the Old Mentonians, which is part of the school, and I started a girl’s football group at lunchtime. I bring a ball, so the girls can play footy on the oval. I like this school because the teachers always help you. I’m not the best at maths but Ms Latimer helps me. She puts me in a smaller group so I get more time to ask questions. If I am struggling I always feel safe to ask her for help. She makes funny jokes and when she tries to draw pictures on the board – that’s pretty funny, too! Miss Latimer’s a good teacher because she doesn’t push you too hard but she doesn’t make it too easy – she always knows your just right point.

SONJA SAYS ... I had a 20-year career in sales management before teaching. I always wanted to teach but I studied a bachelor of business in international trade. I never lost my desire to teach so, a few years ago, I decided it was time. I did my teaching rounds at Mentone Grammar and liked the values of the schools and the way the school is run. I always wanted to work here. Being with the year 4s is wonderful because they are sponges and we can stretch and challenge their thinking skills. They have so many ideas. I have a group of children who are the same age but, to me, they’re individuals. I get to know what makes each of them tick and differentiate the learning so each child learns at what Sienna calls the “just right” point. They learn at their level, feel safe to make mistakes and learn from each other.

Sienna is a tactile learner – when she does maths she has physical things in her hands so the numbers make more sense to her. Earlier this year she felt she wasn’t making the progress she wanted with her times tables and I told her that only practice would help. She’s practised and she’s made progress. Sienna is very focused on what she needs to learn. She’s resilient and always has a beautiful smile. She’s very articulate so can express what she needs to work on. Watching Sienna perform in Joseph was a standout for me and so was the performing art concert earlier this year. She had a moment on stage as she introduced the performers when she began to stutter. But instead of walking away, we had a moment of eye contact and a smile and she recomposed herself and continued beautifully. That was special – I was very proud of her. ● SARAH MARINOS
