On a trip to New York City recently, a local told me that the reason why celebrities love living there is because of apathy. People just don’t care to bother them for an autograph, or a photo, when they walk down the street. Australians are the same (I’ve seen Oscar winners dining on South Yarra’s Chapel Street while other patrons paid no mind). And so Hollywood actor Isabel Lucas (an understated starlet), who made her name in local soapies and has several Hollywood blockbusters to her name, is enjoying the inconspicuousness of living again in Australia. ““I am Scarlett McNab ” … and I’m an air traffic controller I work out of Melbourne Airport. I’m not in the tower, but in a compound on the other side of the domestic and international terminals. The airspace I control is actually in Western Australia. I control all the mining area north of Geraldton, and also the Indian Ocean about halfway to South Africa and down to Antarctica. Everyone thinks we’re the people on the ground who wave the sticks over our heads. But we’re not. Basically, we use two computer screens. Each aircraft is a representation on the screen, with a little label with their call sign, their speed and that kind of information. The planes flying over the ocean are basically all the Melbourne and Sydney, and sometimes Brisbane, outbounds to the Middle East and Asia. You can have up to 10 A380s trying to cross over this one point within about 10 minutes. It’s an arbitrary location, which is the boundary between our airspace and normally Colombo’s airspace. We need 10 minutes between the planes for them to be separated so you’re trying to play with levels to keep everyone separated. If multiple people are on the same level you tell one to go faster, one to go slower and make sure they maintain those speeds. I’d done half of a science degree, because I’ve always loved science, but decided I didn’t want to be a research scientist. I was looking for a job and this advertisement popped up. I thought, why not, I’ll give it a go. It didn’t occur to me I’d actually be any good at it. It depends on how your brain works, because there’s a lot of spatial recognition and problem solving, and being able to plan ahead. I’m not going to lie, the pay is quite good. But it’s a rotating roster, 24/7 – you work weekends and shift work and night shift. If I want annual leave, I have to apply about 14 months in advance. The only emergency I’ve had to deal with was a medical one, where the plane had to divert because of a passenger. I think it was an elderly person having breathing problems, but they ended up fine. Do I think about people’s lives being in my hands? Sometimes. If everything malfunctions, then yes, ultimately it’s down to me, but that doesn’t happen. An air traffic controller has never caused an accident in Australia, which is nice to know. ●

IN LIKE ISABEL Actress Isabel Lucas has moved from the bright lights of Los Angeles to coastal Australia, but she’s still in the spotlight.

ustralian actress Isabel Lucas hit the Hollywood big-time when she scored a debut film role alongside Ethan Hawke in Daybreakers in 2009. What followed was seven years of striking A-list gold in Transformers: Revenge of the Fallen with Shia LaBeouf and Red Dawn alongside Aussie heartthrob Chris Hemsworth. But after an almost decade-long run, she decided to move back to Byron Bay, reconnect with the hinterland and go back to the US when required for work. “There's something liberating about making that decision to come back,” says Lucas, 33, who is in Los Angeles auditioning at the time of this interview.

She sold her home in LA three years ago, and couch-surfs instead (hanging with actor friend and Looking for Alibrandi star Kick Gurry for the past month) and makes sure she takes evening acting classes to keep her creative juices flowing. “For me it's important to work and feel creatively nourished,” she says. “If I am in a place where I am connected with family and people I love, it will show through my work. I also find the work just keeps coming when I am in that space too.” So instead of trying to survive in a big city, she found a way to keep earthed in Australia and go back to the epicentre of cinema when need be. “I am totally committed to my career, but I like that feeling of being on the edge, it keeps it very real for me. I feel most alive,” she says. Her latest feature film, is in the biopic In Like Flynn. Directed by Russell Mulcahy, the movie maps the early life of Errol Flynn – an Australian war veteran and actor who also went to Hollywood to pursue acting. Shot on the Gold Coast, Lucas plays Rose, one of the many women whose hearts were broken by Tasmania-born Flynn. “I get to wear a red wig and play one of a few female characters who were heartbroken by him and his escapades,” explains Lucas. “I really enjoyed working alongside Thomas Cocquerel [Errol Flynn]. It's a beautiful period film with amazing costumes that were wonderful to wear.” Born in Melbourne, Lucas spent her childhood moving between Switzerland and Australia until her mid-teens. Her father Andrew, a biodynamic farmer and retired pilot, met his Swiss wife Beatrice (Isabel's mum) at a bus stop in France.
They wrote love letters to one another for 10 years before marrying to have two children. Isabel's sister Nini is two years older and works as an environmental lawyer. Once Beatrice moved to Australia, she started working with autistic children, taught dance therapy and completed her PhD in Aboriginal dance. But she never lost her connection to her native Switzerland, with Lucas schooling there at the age of seven and again at 15. She is fluent in German and French as a result. There was a stint in Kakadu from age nine and 10 (her dad worked for Kakadu Airlines) and she became good friends with an indigenous girl Natasha Neidjie – the granddaughter of the late Kakadu elder Big Bill Neidjie. “My best friend Natasha is a ranger now and showed me a lot of bush tucker and we'd go on these amazing walks back then,” she says. “I went back after 20 years just two years ago and it was amazing to go camping and reconnect with that period in my life.”

ucas never planned a career in acting, but after a successful three years playing Tasha in the soap-opera Home & Away between 2003 and 2006, quietly went on her way to woo Hollywood. The petite blonde star scored roles on the TV series Emerald City and MacGyver, which added to her reputation as being both hard-working and committed to the craft. She won a Logie Award for Best New Talent in 2004 and later a Young Hollywood Award (Star of Tomorrow) in 2011. While back in the US, she also went to New York to work on a short film with French filmmaker
Thibaut Buccellato, the man behind The Space Between Us. When it comes to her private life, Lucas is careful about sharing details. But that's what is appealing about her too. Even though she once dated Chris Hemsworth and singer Angus Stone – and also counts actor Leonardo DiCaprio as a friend– she prefers to avoid questions of the heart, putting her radiant energy into conversations about the environment instead. For example, she was one of a handful of artists, actors and musicians chosen to attend an environmental trip to Heron Island Research Station to learn about climate change and its impact on the Great Barrier Reef. “Being at Heron Island expanded my awareness about climate change issues and the urgency for us to step up now,” Lucas says. “I love the quote ‘be the change you want to see' – you can apply it to relationships, friendships or the environment.” “Stepping up yourself gives others permission to be a bit more honest and vulnerable and we can all empower one another that way.” The former face of Melbourne Spring Fashion Week is also a brand ambassador for eco-skincare line Sante by ENJO and supports the Climate Council and Citizens of the Great Barrier Reef. She's one of many celebrities, including Cate Blanchett, Natalie Portman and Sam Worthington, pushing the green envelope by urging Aussies to take a stand, to reduce plastic consumption, consider animal rights and live more sustainably. “I am passionate about getting environmental conversations started,” she says. “But I don't want to come across as a preacher or that I know everything, because I don't, but we can all learn by listening.” ●

hen counter-culture music icon Neneh Cherry began working on her fifth studio album Broken Politics, it was more than a reflection of global issues such as racism and sexism – she proved the personal is also political in her quest to navigate menopause without losing sight of her self-esteem. “I had a few difficult years from the age of 51 to now,” says the 54-year-old singer who moved from Sweden to London at 16, embracing punk, living in squats and finding her musical feet. “I was really battling with myself. I have always been anti-ageist and never believed in that crap, but I struggled with the psyche of feeling redundant and not sexy any more. “My kids had grown up and moved out of home and, while we’re all still a family, I felt everything I had done with that centre focus was suddenly shifting.” The daughter of Sierra Leone-born musician Ahmadu Jah and the stepdaughter of jazz trumpeter Don Cherry, Cherry became a musical force in the ’80s and ’90s with hits such as Buffalo Stance and Manchild. Almost 30 years since releasing her chart-topping debut album Raw Sushi, Cherry has remained a vital source of inspiration – her genre-bending style clinging to beats, pop and occasional rap. “Those decades were incredibly good to me,” Cherry says. “When I put out Raw Sushi in 1989 I had no idea what would happen next.” But going back into a studio to make her latest album, with husband and long-time collaborator Cameron McEvoy (of Massive Attack fame), she had to find her place again in the cluttered world of music releases. ““Broken Politics is about bringing pieces from my lifeline to the forefront,” Cherry says. “It’s connected to the music I grew up on and has elements of me in there. Songwriting is always challenging – for me, I tend to get anxious, insecure and worry if anything will come out,” she says.

I was all about shifting in new spaces this time.” Produced by Kieran Hebden (Four Tet), there’s a quieter and more reflective tone to Broken Politics despite its heavy title. “Kieran is a big fan of my work and that of my late dad’s [Don Cherry] and we have a mutual respect for one another. He was great to work with. “When my husband and I gave him these songs we told him we wanted there to be space for peace. I felt sonically that Kieran managed to open the door in this new room. This is not a rejection of the last album [[Blank Project, 2014], it’s just the next move.” Her protest songs are a reminder to society to not turn a blind eye to events around the world. “I felt like it was time to cross this bridge again.
You can’t ignore racism, fascism, women’s issues, gender, race, starvation, abortion and we can’t pretend everything is going to be all right any more.” Songs like Shot Gun Shack – which takes its name from popular buildings found in the deep south of the US, especially New Orleans, from the end of the Civil War to the 1920s – is about gun culture. It’s about “the notion of war zones and the tragedies that guns bring there”, she says. But there is hope. “I feel the younger generations are becoming active and know they actually can make a difference. They refuse to lay down and swallow shit,” she says. “I chose to be a conscious person and don’t always do and say the right thing or have the answer. I am turning Rubik’s cubes every day, but I am getting the conversation started and not afraid to share my thoughts.” ●

tephanie Alexander occupies a special place in Australia’s food landscape. If you don’t have “the bible” (aka The Cook’s Companion) on your bookshelf, someone you know does, and for the past 17 years her Kitchen Garden Foundation has equipped children with the skills to grow, harvest, prepare and share seasonal produce. Today nearly 10 per cent of Australian schools with a primary curriculum have adopted the kitchen garden program, but it’s been left behind come secondary school – until now. “A lot of primary school students transition to secondary school and they really miss their kitchen garden program,” Alexander says. “Parents, students and teachers have all put their hands up in different ways and said they’d like to see the kitchen garden program in secondary schools as well.” Encouraged by the kitchen garden community, the Stephanie Alexander Kitchen Garden Foundation, in partnership with AstraZeneca Australia, has announced the development of a curriculum-integrated kitchen garden model for secondary schools. The new program comes off the back of a startling national survey commissioned by the partnership, which investigated the food habits of secondary school students and their parents. More than 67 per cent of 1000 parents across Australia, surveyed by PureProfile, admitted that their children could do better when it comes to healthy food and lifestyle knowledge, and almost 43 per cent believed that poor food choices come from a lack of education in secondary school. The one in four Aussie children who are obese or overweight have a 25 to 50 per cent chance of becoming obese in adulthood. This figure jumps as high as 78 per cent for older adolescents. A secondary-school kitchen garden program which integrates literacy and numeracy skills is a logical solution. “It’s wonderful to be modelled positively at home, but we certainly can’t assume that it’s happening,” Alexander says. “In many cases, children aren’t being positively modelled at home, and that’s why they [have] bad food habits and a limited palate.” The three-year pilot program involves three Victorian secondary schools: Narre Warren South P-12 College, Numurkah Secondary College and Western Heights College. More will join next year. Feedback from teachers, students and parents will
Food for thought determine what resources The Stephanie Alexander Kitchen Garden Foundation provides to help implement the program. “Those resources make teachers thrilled; they hang on our necks and say, ‘This makes it all so much more meaningful’, and it makes it fun,” Alexander says. “I just want to make sure that in among the messages about nutrition is also enjoyment and freshness and pleasure.” While the pilot program is underway, parents can help children form good food habits over the school holidays. Start by putting a copy of Alexander’s new book – The Cook’s Apprentice‚ which Alexander describes
as “an essential teaching cookbook for the younger cook who’s just starting out” – under the Christmas tree. Alexander also encourages families to involve their kids when cooking. “The best thing of all is to have somebody there who shares your enthusiasm,” she says. “If you’ve got a grandma or mother or uncle who’s interested in cooking, that’s the best way for kids to get encouraged and assisted by someone they love.” Success also builds confidence, so remember to congratulate your children when they cook. If all else fails, invest in a hand-cranked pasta machine. “It wins them over every time,” Alexander says. “I’ve never met a seven or eight-year-old who isn’t completely entranced by one.” ●

Pumpkin and honey bread

Ingredients 1 x 500g piece pumpkin ½ cup extra-virgin olive oil 185g wholemeal flour 75g plain flour 1 teaspoon baking powder ½ teaspoon bicarbonate of soda ¾ teaspoon salt 1 teaspoon ground cinnamon 1 teaspoon freshly grated nutmeg ¼ teaspoon ground cloves ¼ teaspoon ground ginger ½ cup honey 2 large eggs 1 heaped tablespoon pepitas or sunflower seeds

his delicious loaf goes very well at morning or afternoon tea, buttered or not, and has been made and enjoyed by many students in the Stephanie Alexander Kitchen Garden Foundation program. The texture is somewhere between a spice cake and gingerbread but with definite pumpkin character. The advice to be “careful not to overmix” means that you should stop mixing as soon as you can’t see the ingredient you have just added (in this case, the flour). Mixing flour with liquids activates the gluten proteins that give baked goods their structure. This is just what you want when making yeast-based breads, but you do not want the gluten to develop when making yeast-free cakes, muffins and quick breads as it will make the product tough or unpleasantly chewy. ●
Method ■ Remove the seeds from the pumpkin and cut away the skin if it is present – put the broadest side flat on your cutting board, and cut away from your hand. Cut the pumpkin into 1 cm cubes. You should have 200g trimmed pumpkin. ■ Place a wok over medium heat and pour in water to come one-third up the sides. Sit a bamboo steamer basket over the water with its lid in place. Wait for the water to come to a boil and for the steam to rise through the slits in the basket. Carefully arrange the pumpkin in a single layer and steam, covered, for 10 minutes, then check. If tender when tested with a skewer, transfer the pumpkin to a plate. If not, steam for another few minutes and test again. ■ Tip the pumpkin into a food processor and whizz to form a smooth puree, or mash it with a potato masher. Measure out 1 cup puree (keep any extra for another use). ■ Preheat the oven to 180˚C (160˚C fan-forced). Grease a 12cm x 20cm loaf tin with a little of the oil. ■ Sift the flours, baking powder, bicarbonate of soda, salt and spices with a coarse sieve into a large bowl (it needs to be coarse to allow the bran in the wholemeal flour to pass through). ■ In another large bowl, whisk the 1 cup pumpkin puree and the rest of the oil with the honey and eggs. ■ Add the flour mixture to the pumpkin mixture and mix gently to combine. Be careful not to overmix as the bread might toughen. ■ Pour the mixture into the prepared tin. Sprinkle with pepitas or sunflower seeds. Bake for 40-45 minutes, until a skewer inserted in the centre of the bread comes out clean. ■ Cool the loaf still in its tin on a wire rack for 10 minutes, then turn it out. Cool completely before slicing. ●

Pastry 250g plain flour, plus extra for dusting 50g icing sugar, plus extra for dusting 75ml olive oil 75ml Greco di Tufo white wine ½ teaspoon vanilla bean paste Filling 5 large lemons 500g quality ricotta cheese 150g caster sugar 2 large free-range eggs

To make the pastry, put the flour and icing sugar into a large bowl with a good pinch of sea salt. Make a well in the middle, then add the oil, wine and vanilla paste. Use a fork to whip up the wet mixture, gradually bringing the flour in from the outside until it comes together as a ball of dough. Tip on to a lightly floured surface and knead for just a couple of minutes, then wrap in clingfilm and place in the fridge for 30 minutes. On a flour-dusted surface, roll out the pastry to about 3mm thick. Loosely roll it up around the rolling pin and unroll it over a 25cm loose-bottomed tart tin, easing and pushing it carefully into the sides.
Trim off any excess, patch up any holes, then prick the base with a fork, cover with clingfilm, and chill in the freezer for 1 hour 30 minutes. Preheat the oven to 180ºC. When the time’s up, bake the pastry case blind for 25 minutes, or until lightly golden. Meanwhile, finely grate the zest of 1 lemon and put aside. Squeeze all the lemons to give you 150ml of juice, then whisk with the rest of the filling ingredients until smooth, by hand or in a food processor. Pour into the tart case and bake for 30 minutes, dusting with icing sugar and sprinkling over the lemon zest for the last 5 minutes. Transfer to a wire rack to cool – it will have a slight wobble, but will set as it cools. Dust with extra icing sugar, then slice and serve. ●

W
hen the folks behind Future Future, a new modern Japanese joint on Swan Street, Richmond, approached Shaun Byrne about their cocktail list, they had a specific brief – Japanese-inspired drinks, made with Australian and Japanese ingredients that would match their food and could be batched (made ahead in quantity) so they could be served quickly. Byrne, whose strong Melbourne bar pedigree includes an eight-year stint at Gin Palace, now has a drinks consultancy company called Good Measure that allows him a prime view of the trends washing over the booze scene. Batching cocktails, he believes, is going to become more common. “It’s not just about making drinks faster,” he says. “Batching means that your drinks are more consistent and that staff can spend more
time serving the customer rather than mixing ingredients behind the bar.” The drinks he designed for Future Future certainly arrive quickly and take a light, thirstquenching approach that plays happily with the modern Japanese dishes designed by ex-Kappo chef Atsushi Kawakami. The venue also follow another popular approach by putting a theme-appropriate spin on classic cocktails. It’s not surprising to see a Future Future Spritz on the drinks list. It’s a successful version of the classic Italian aperitivo drink that eschews the standard sparkling wine element for a yuzu-flavoured soda, to which gin, vermouth and a house-made apple and rhubarb syrup are added. It’s a refreshing, fruitforward drink with an attractive, acidic citrus element that teams perfectly with dishes like the

Then there’s the excellent Fuji Sour, with Suntory whisky infused with Fuji apples mixed with some
pinot gris, yuzu-flavoured sake and a tiny dash of maple syrup. The menu provides plenty of good snackage, flexible enough to be eaten as a quick bite or the full-meal shebang. There are several good donburi options and a panko-crumbed prawn roll that vies with the katsu for must-order status. A good place to add to future reconnaissances in Richmond. ●

deep love of the ocean has inspired the pared-back aesthetic of this yoga studio by the beach. Kylie Dorotic and Alicia McKimm, the duo behind interior design firm GOLDEN, drew on the culture and aesthetic of coastal locations such as Canggu in Bali to create a soothing, minimal interior with a strong focus on local artisans and makers. “We were inspired by the client's connection to the ocean, love of surfing and desire to create an

The entrance to the studio is characterised by its focus on natural materials: polished concrete (discovered when the original carpet was ripped up, then polished and resealed), chocolate-coloured timber joinery and a sisal-lined ceiling. “The ocean and the coast informed our materials and colour palettes and drove the sensory experience we were striving to create,” McKimm says. “This was achieved largely through texture rather than colour. As one example, the sisal carpet uniquely applied to the entrance ceiling sets the tone for further textural exploration. Moving into the space, visitors discover white textured
render, warm timber veneer and hardwood beams. “These elements effortlessly work together, subtly creating a calming mood, rather than being literal symbols of the ocean.” The space is dominated by a table of carved limestone by Scottish-born stonemason and sculptor Steve Clark, founder of local art and furniture studio Den-Holm. The handcrafted pendant lights, constructed using white mesh fabric on a transparent backing, are from another local designer, Coco Flip, while the timber stools are sourced from Melbourne-based Pop & Scott. Contrasting with the restrained mood in the rest of the studio, the bathroom features a large expanse of pink Karaman marble from Turkey, brass fixtures and walnut details. ●

Lift those knees
T
o someone who has never had knee issues, it is amazing how often I hear from people who have avoided starting an exercise program because they have “bad knees”. I think it’s important to acknowledge that bad knees could mean several things, and, in many cases, a proper diagnosis and physio-prescribed rehab are needed. However, what I am discovering upon deeper questioning, is that people with bad knees often are talking about deep squats and lunges causing discomfort, so here are five moves to help strengthen and stabilise without the pain. WALL SITS \ These are an awesome way to put your
glutes, quads, hamstrings and core to work, while building strength in your legs in areas critical to supporting your knees and joints.
Just keep your knees bent at a 90-degree angle and hold with your back resting against a wall. Hold a plate or another kind of added weight if you’re up for a challenge. Sounds simple – but totally deadly. HIP RAISES WITH RESISTANCE BANDS \
Grab some resistance bands to fire up your glutes with hip raises. Lying on the ground, place the resistance band just above your knees. With your feet firmly on the floor and knees bent, open your arms to support your body on the ground and lift and lower your hips in the air. HALF-SQUATS WITH RESISTANCE BANDS \ Get that good burn going while gently strengthening your knees with half-squats. Standing with your feet shoulder width apart,
