But would I be so wrong if I said that Tina Arena’s Chains was the biggest Australian banger of the mid-1990s? ““I am Leigh Steven ” … and I restore vintage surfboards I discovered surfing when I was in high school

in Tasmania in the 1950s. I came across the very first Australian surf magazine in a newsagency, opened up the front page and said, “I’m doing that”. Surfing was just fantastic. The more you surfed, the better you got. The better you got, the more you demanded of your boards. There weren’t any imported boards in Hobart, so I had to make my own. I was the first commercial manufacturer in Tasmania. When I first started, the boards were made out of balsa wood or hollow plywood – foam hadn’t been introduced into Australia at that time. I’ve probably made 15,000-18,000 boards in my life. I’ve been shaping for 58 years. I’ve been contracted to shape in South Africa a couple of times, and I was contracted by (late Australian

surfing champion) Midget Farrelly in Sydney, who was a good mate of mine. I moved to Torquay about 15 years ago. Because I was involved in surfboard manufacturing, I used to come over and watch the Bells Beach contest every Easter. It felt like home. In the past few years, I’ve been inundated with requests for surfboard restorations. Now everyone around the planet has finally realised that surfing’s got a fantastic history, and everyone’s a collector. You might get a beginner collector in Victoria who wants to have an example of each of the famous Victorian brands, for instance. Most of the boards that come to me are wrecked, broken in half, stored under a house for 50 years. You can bring them back to beautiful. Having made them all those years, I can rebuild them, primarily

as wall sculptures. Collectors don’t want to hide the damage. Any damage on a collectable board is part of the history of the board, so you just restore it and leave the damage visible. They still look beautiful, even with their battle scars. It’s only one every couple of weeks – it’s laidback. I enjoy it because I’m part of the history, I understand where surfboard design came from, I understand the construction techniques of 60-plus years ago. I haven’t been surfing for the last decade, because I had heart surgery and bowel cancer. I miss it. It’s a huge hole in my life, but I live it through my two sons. They’re very good surfers. I’m making myself a big-enough board to, maybe, get back into it. We’re talking over 11 feet. That’s big. It might give me time to get up and go again, that’s the plan. ●

E

very night when Tina Arena hits the stage as Eva Peron in the classic Andrew Lloyd Webber and Tim Rice musical Evita, there is a moment where she gets the shivers. It’s singing that classic song Don’t Cry For Me Argentina, with its soaring melody and big notes. “It still gives me goose bumps,” Arena, 51, told Domain Review. “It’s a powerful melody which evokes complete vulnerability. It’s majestic. “I never tire of the wonderful opening melody, where those strings take the lead and it just sweeps you away. It’s magical. I never tire of it, and the audience seem to genuinely respond.” Ever since 1974 – when she was aged eight – audiences have been responding to Tina Arena in a big way. She famously got her start on Young Talent Time and, while there have been some tough times along the road, she has barely been out of the spotlight. Most of her life she has been making hit records, including her last English-speaking album Eleven, which was released in 2015 to critical acclaim. While the album struggled to get commercial radio airplay, Arena fans will tell you it was one of her best – full of slick pop songs that really should have been the top of the charts. Growing up in the Melbourne suburb of Keilor East with parents Giuseppe and Franca, Filippina (then

Even back then when she was beginning on Y Young Talent Time, she had a love of musical theatre, which has been a big part of her career on and off for decades. “Even as a very little girl, somehow I knew that I would perform in musical theatre as I have both here in Australian and in the UK,” Arena says. “The beauty of theatre ... is the exchange between the artists and the audience. It’s instant and hugely rewarding. I do also really enjoy working in a company, and this company of Evita is simply stunning.” After years based in France with her partner of 18 years, Vincent Mancini, Arena moved back to Australia a few years ago to settle in the inner suburbs of Melbourne. Her son, Gabriel, is now in high school and after living in Fitzroy, the family moved to Toorak last year, buying a property for $5.7 million. There is always something special for Arena about performing at home in Melbourne, so the return of Evita to town – playing at the Arts Centre’s State Theatre – is something she is looking forward to. At any Melbourne Tina Arena concert, she is always surrounded by family and friends, school mums and old work colleagues, and the official grand opening of Evita in Melbourne

on Sunday, December 9, will be no different. Arena breezes into her dressing room before every show and is relaxed – most days, that is. “If it’s a full moon, then I tend to be twitchy, otherwise it’s usually fairly chilled,” she says. “I’m so lucky to work with people that have wonderfully wicked senses of humour. “It’s definitely been a relief when you're playing Eva Peron. “Contrasting the intensity with laughter is vital.” Evita has already played a successful season in Sydney at the

Opera House, and to begin with, getting used to the gruelling show schedule of up to eight shows a week was a challenge for Arena. “To be honest, it is a shock to the system in the beginning,” she says. “But, we train our body and mind during the rehearsal period, and then the muscle memory goes into automatic pilot. “I do love a routine, I must admit.” It helps that Arena loves the music of Evita, and its story about Eva Peron, the legendary wife of Argentinian president Juan Peron, who ascended poverty to become a figure of influence and power.

“It will break your heart and it makes you smile,” she says. “The score does many things, it’s lyrically genius that’s for sure. I would say that it is a perfectly balanced rock opera, it’s definitely a favourite of mine.” Arena has had a long association with co-creator Andrew Lloyd Webber. She sang at Webber’s 50th birthday 20 years ago in London, part of a concert that was broadcast across the UK. Evita producer David Ian believes Arena has as much star quality as previous superstars that have played Eva Peron on stage and in film – Elaine Paige in London’s West End, Patti LuPone on Broadway, and Madonna in the Oscar and Golden Globe-winning 1996 movie, directed by Alan Parker. “Eva was the star of her generation, and that is what had to be found,” he says of the lead role in Evita. “Phenomenal presence, phenomenal vocals, and phenomenal star appeal. “That is what we have got in Tina.” After Evita finishes its Melbourne run early next year, Arena intends to have a well-earnt break, but she says she has “exciting” plans for 2019. Interestingly, McGoff doesn’t just look to culinary inspiration when concocting T2’s brews. “I look more globally, so, when I’m looking at development and innovation, I’m looking at beauty brands, ice-cream, chefs, what our team is drinking.

Join the tea party A tisane revolution has taken place in Melbourne’s coffee heartland.

W

hen T2 opened its first shop on Brunswick Street in 1996, it was the sole tea purveyor amid a sea of dedicated coffee vendors. Some queried the wisdom of founders Maryanne Shearer and Jan O’Connor at the time, but the company has expanded exponentially and secured the beverage’s position as a serious coffee rival in a town renowned for its love of a cup of joe. Now with stores worldwide – including in New Zealand, Singapore, London, New York and opening shortly on the US west coast – T2 has permanently expanded our tea horizons. At the time of its inception, a cuppa in Melbourne was a very different proposition. “Back then it was very stuffy, old-world tea,” says Michelle McGoff, T2’s sommelier and developer. “Nothing really exciting was going on in tea, so the idea was to reset people’s expectations.” With a range spanning everything from rare traditional teas (like Pai Mu Tan white tea) through to exotic herbal tisanes (such as the limited

Anything, you name it, it all goes into the mix.” Of course, with her sommelier training and years of experience, McGoff has also mastered the perfect cup of tea, saying it starts with the quality of the water. “Use really nice water,” she says. “You can get as fanatical as you want with what water you use and what minerals are in there, or not. “Generally, at home I filter my water through a Brita filter, although Melbourne tap water is actually pretty good.” She says that reboiling the kettle is a no-no. “It de-oxygenates the water. Only put the right amount of water in the kettle.” Then there’s water temperature. While tea aficionados are now on top of steeping teas at different temperatures (for instance, never put boiling water on green tea), McGoff has another pro tip. “Even if you’re making it in a cup, but especially if you’re making it in pot, always heat the cup or pot first,” she says. She also urges against stewed tea. “A lot of people say that they like really strong tea and brew it for seven minutes. “But then you’re not actually drinking really strong tea, you’re drinking over-brewed tea. What you could do is maybe put two scoops in the pot instead of one, and only brew it for four minutes or five minutes max.” ●

emographics are always fun, and cafes are like living pie charts. At Lenny, a spunky corner haunt four blocks from the beach, its statistical breakdown might read: diners wearing sports jackets at brunch 5 per cent, designer dog owners 39 per cent, LWL (ladies who lunch) 16 per cent, kids scoffing cheese toasties and awesome iced chocolates 13 per cent, millennials on a morning date 7 per cent, mums in activewear 19 per cent, and diners with unbrushed hair wearing black – one per cent. Lenny is the work of Christina Higgins (front of house) and Stephen Svensen (executive chef), a follow-on from their much-loved Moby cafe in Armadale. She was a catering manager at Ottolenghi’s London cafe in Spitalfields, he was her brother’s best mate and chef at Richmond’s Pillar of Salt. “I knew I wanted to open a cafe,” Higgins says, “and we just fell into it.”

Cornering the market

It’s a preppy, pastel-themed spot with a seriously magnificent corner position, flooded with natural light, fully exploited with brolly-shaded outdoor seating and a bench-seat window. Wicker-style chairs and blondwoods lend a beachy vibe, adding to the white, breezy fit-out that’s minimalist and fresh, like the food. “Albert Park is a different crowd to Armadale. It’s more health conscious,” Higgins says. “They’re all about the bliss balls and cold brew, lots of salads.” Loads of the Moby menu faves have come beachside, including the soft Sriracha chilliscramblers, smashed avo with feta and a poached egg, nutrient-dense black quinoa superfood salad, and slow-braised duck leg waffle. Check the specials: vermicelli Thai salad with coconut creamy noodles and tender pieces of poached free-range chicken from Peter Bouchier is

super tasty, given oomph with green paw paw, pickled red cabbage, Sriracha, fried shallots and crunchy peanuts. If solids seem too, well, solid, go for the Mr Lenny, a whiz-bang, meal-in-a-glass concoction of banana, cacao, peanut butter, almond milk and honey. Add a double shot of Five Senses coffee, and you’re good to go. Some days, service can seem a little vague. The staff are a lovely, friendly bunch, but initially waiting 10 minutes for a menu and water, and different staff asking the same questions or turning up with incorrect orders, were slight issues. The coffee is a bespoke blend of Brazilian and Ethiopian beans. Higgins is a soy and almond drinker and says the caramelly house blend has “less acidity”, which works well “with all three milks”, including cow’s. Likelihood of going back to Lenny? 95 per cent. ●

Dessert is coming up roses

S

traw traw wberries berries and cream is a match made in heaven. As I do not have a sweet tooth, I think this dessert is the perfect balance of tartness, creaminess and sweetness. The inspiration for this dish came from a challenge I did in MasterChef Australia. It was in ‘‘sweet week’’ and the challenge was to design a dish inspired by flowers and the garden. Janice Wong from 2am Dessert Bar in Singapore, who was the guest chef, had designed an edible art installation for us to be inspired by. I instantly thought of roses for this challenge. I absolutely love roses and used rose water in my ice-cream. Here I’ve used some rose petals but if you can get some rose water, try adding a few drops to the consomme. Be careful not to add too much as it can be quite overpowering and it’s an acquired taste. If you aren’t a fan of sponge cake, you can also substitute shortbread cookies. I hope you get to wow your guests with this eye-catching dessert. ●

Strawberries and Cream Ingredients (Serves 4) Sponge cake 6 room-temperature eggs ½ tsp vanilla extract or 1 vanilla bean pod 1 cup caster sugar 1 cup plain flour ½ tsp baking powder Strawberry consomme 3 punnets of strawberries (use frozen as substitute) ¾ cups caster sugar Champagne macerated strawberries 1 punnet of strawberries, cut into 3mm slices 300ml Champagne or sparkling wine ¼ cup caster sugar Garnish Vanilla ice-cream (store bought) Freeze dried strawberries (optional) Rose petals Method ■ Make the sponge cake in advance. Preheat oven to 180C and line a 22cm cake tin. ■ Using a stand mixer, add eggs, vanilla extract and whisk. Gradually add in the sugar until a light, fluffy mixture is achieved. This should take approximately four mins. ■ In a mixing bowl, add in the plain flour and baking powder and mix through. Using a fine sieve,

add in the flour mixture a third at a time using a spatula folding through gently using a figure 8 motion to incorporate the flour without knocking out too much air. Continue until all the flour is mixed through. ■ Pour the cake batter into the lined cake tin and place it in the middle of the oven. Bake for 25-30 minutes. ■ Remove from oven, allow to cool then flip it out onto a cooling rack. Set aside for later. ■ For the strawberry consomme, place a pot of water on medium heat. Dice the strawberries and place it into a metal or glass bowl, sprinkle over the caster sugar, and cover tightly with cling film. Let it simmer for 30-40 minutes. Remove the bowl and pass it through a sieve lined with a muslin cloth. Use a piece of Chux if you haven’t got any muslin cloths. Set the liquid aside until ready to serve. ■ For the champagne strawberries, mix all the ingredients into a mixing bowl and let it sit for 15 minutes in the fridge. Drain when ready to use. ■ To assemble, using a 8cm cookie cutter, cut out a circle of the sponge cake and place it right in the middle of the serving dish. Place the macerated strawberries all around the cake. Top with a scoop of good quality vanilla ice-cream. ■ Pour the strawberry consomme around the cake and garnish the top with freeze-dried strawberries and rose petals. ●

ou’d have to be a real grinch to resist the merry, mood-lifting appeal of a freshly cut bouquet of blooms. Whether lush, fragrant, colourful or subdued, floral arrangements add joie de vivre to any space. But flowers, like anything in the design world, are subject to trends. “Flowers are fashion accessories now,” says Michael Pavlou, owner of South Melbourne Market’s Azalea stall. “They are used in high-end fashion shoots, runways and installations. Designers are continually pushing the boundaries of what’s popular.” Social media sites have made it possible for florists – and their customers – to draw inspiration from around the world. “Instagram has totally changed the flower industry,” Pavlou says. “Now we can see what everyone else is doing.” Domain Review asked Pavlou and fellow Melbourne florist, North St Botanical’s Emily Bradbury, what’s trending in flora.

Grand flora

Several high-profile florists experimenting with geometric arrangements have started using more sculptural blooms, such as orchids. In April, The New York Times heralded the return of the once-maligned anthurium, a waxy, structured flower popular in the 1980s. “It’s a kind of minimal design style,” says Pavlou. “It’s really simple – one stem of a particular flower and a lot of negative space. “In the past, it’s been big, lush and full, but it can now be quite minimal.” Pavlou says this trend was most probably inspired by the resurgence of 20th-century interior design styles, such as Bauhaus and Memphis. “Certain flowers have become popular because they work well in this context,” he says.

But only in the past few years have Australians rediscovered a love for the local flora. “I was blown away by natives and everyone else didn’t like them,” Bradbury says. “Now, all of a sudden, I can’t get them at any of my wholesalers because they’re so popular.” Bradbury says natives are a great choice for the home because they dry out instead of wilt. “They last two weeks, then you can put them in an empty vase on your mantle and they still look nice.” Melburnians are interested in anything sustainable and local, an attitude that contributes to the popularity of natives, Bradbury says. She adds that when buying flowers, even non-natives, always buy when they are in season. “If we’re going to keep our industry alive, we can’t

keep getting all our roses from Kenya and Ecuador,” she says. “If you see peonies when they’re not in season, it’s because they’re being flown in.” THE BIG BLOOMERS

Bradbury says larger, commercial growers in Australia are starting to take their cues from florists, whose customers ask for the North American and European varieties they see on Instagram, such as dahlias and peonies, loved for their fullness and colour variety. “Dahlias have an amazing colour range and so many different varieties,” she says. “They’re not long-lasting, but they just brighten a room.” Pavlou says his customers come in all year round asking for peonies. “Their popularity just seems to grow,” he says. “They do what people expect a flower to do – open up. There’s an element of surprise from when they’re in bud to when they open up, big and beautiful.” ●

Horse power The ancient pursuit of polo has been given a 21st century makeover for a new generation.

T

he sport of polo was invented 2500 years ago in Persia as an army training exercise, but has been revolutionised in the past 14 years by an innovative Australian couple. Janek Gazecki and Natalie Decorte are partners in life and business. Gazecki developed the code of urban polo, staging events around the country that are as much about the love of horses and the thrill of an expert tailshot as they are about the social scene and the champagne. He and Decorte have since nurtured the concept to become the largest national polo series in the world, Polo in the City. Urban polo is played on a smaller field to get spectators up close to every flying divot, swish of the athletes’ mallets and rippling horse muscle. Gazecki says the sport’s top players have the precision of a golfer with the strength and agility to control a horse galloping at 60km/h. The result is a thrilling combination of elegance and power. Gazecki was working as a top lawyer in Sydney, and himself a polo player, when he conceived urban polo and Polo in the City, and launched the Urban Polo Association (which he now runs with Decorte).

The debut match was in 2005 in Sydney’s Centennial Park, and it is now an annual fivecapital city circuit, contributing $1 million to the growth of the sport over of the past decade. The first Polo in the City days for the summer kicked off last month. The Melbourne event, Land Rover Polo in the City, is on December 1 at Albert Park Lake, with marquees and a party to rival Flemington’s Birdcage on Melbourne Cup Day. Just as the thoroughbred racing industry has so successfully done, Decorte and Gazecki are passionate about positioning polo as not just for the rich and famous. “In Australia, the custodians of the sport are farmers, but in England, it is played by royalty and the elite – but some of the world’s best players are farmers,” Gazecki says. “We have said this a sport for everyone, so we have reinvented the sport for everyone.” The old rules and format have been tweaked for a fast-paced, close-quarters experience. The compact field allows spectators to experience the speed and skill of the players, and keep sight of the ball. “You can feel the thunder of the hooves,” Gazecki says.

After the match, the players attend the hospitality tents so fans can learn more about the sport straight from the “horse’s mouth”. The Urban Polo Association also supports grassroots polo schools that teach horse lovers how to play, and provides scholarships to emerging players. “These people are introduced to polo through us for the very first time, and a number of them will go on to learn to play,” Gazecki says. Fittingly, Gazecki and Decorte met a Polo in the City game. Decorte, a former dancer for the Royal Ballet and Australian Ballet and a model, was working for a premium jewellery brand at the event, and became acquainted with Gazecki. They are now married with a young family. Decorte is also the editor of The Polo Project magazine, profiling players and exploring fashion and equine-inspired design. “It’s a snapshot into the polo lifestyle,” she says. “What we aim to do is inform people who are interested in the lifestyle and the sport about what goes on behind the scenes.” ● LAND ROVER POLO IN THE CITY \ Albert Park, Saturday December 1 ● polointhecity.com

At 31, Kathleen Sakadjian was a fit AFL club physio when she was diagnosed with breast cancer.

s you’d expect, it came as a shock when Melbourne Football Club physio Kathleen Sakadjian was diagnosed with breast cancer in April, 2017. For a start, at 31, she was young to have the disease (statistically, breast cancer is rare in women under the age of 40), she had no family history of it, was super fit and only just married. Looking back, Sakadjian can identify some markers of the disease leading up to her diagnoses, including some radical weight loss. “I thought that it was just because I was exercising and trying to lose weight for the wedding,” she says. “At the time I was thinking, ‘Oh, it’s great’, and I didn't really put it down to too much. I’d also been getting a bit tired and fatigued, but again, I just thought it was because I was working heaps and trying to organise a wedding.” The crunch came when a few months later Sakadjian found a lump on the side of her breast when she was in the shower. “Again, I probably didn’t think too much of it, but I texted the doctor at the Melbourne Football Club, who’s a good friend,

and I was like, ‘I’ve found this lump, what do you reckon?’,” she says. “He was like, ‘It’s probably nothing but let's go get an ultrasound’. It just all went from there.” As it turned out, Sakadjian had an oestrogenreceptive cancer, which had spread to her lymph nodes, requiring chemotherapy, hormone treatment and a double mastectomy. Happily, Sakadjian is now out the other side of treatment and her surgeon has given her the thumbs up. She’s also had time to reflect upon some of the factors that kept her buoyed throughout, starting with the importance of surrounding herself with an upbeat posse. “My husband is Little Mr Positive,” she says. “He’d be like, ‘Look how much you’ve done so far and how

well you’re doing’. He was always focused on the positive outcomes. It’s really good to have someone like that by your side.” Celebrating the small wins was another part of Sakadjian’s strategy. Although Sakadjian had been warned that treatment would knock her around, she worked throughout. “Doing the things that people said I might not be able to do almost turned it into a bit of a challenge,” she says. Shared stories also helped. “Hearing about other people who’d been through it, come out the other side and were doing well really gave me hope. Those stories were like gold.” Finally, exercise, which is a proven key factor for keeping breast-cancer recurrence at bay, continues

to sit high on Sakadjian’s list of priorities. “I always exercised in the past but now it takes on a different meaning,” she explains. “It’s not just about losing weight or getting fit. To me, it’s almost like taking medicine.” On top of her regular training, Sakadjian has added running to her regime in preparation for the Carman’s Women’s Fun Run in Melbourne on December 2, which raises money for the Breast Cancer Network Australia. “That I’m healthy and well enough to to get out there and run five kilometres again will be a bit of a celebration.” ● ● carmanswomensfunrun.com.au

Pitched to the modern grease monkey, it’s where biker cool and denim punks come together for the ultimate fashion makeover to make a ride all the more, well, fashionable. And Peck is the perfect fit for the gig – she’s got biker chic down pat and is the ideal pin-up for its female ambassador role. From MTV host to studying to become a sommelier, she’s proof you can have your cake and eat it, too. The tall blonde, now 30, first came to our attention as a 15-year-old contestant on the TV show Search for a Supermodel, signed to Vivien’s modelling soon after and then landed racing ambassador roles with Myer in 2014 and 2015. She was a regular face in the Birdcage at Flemington over the years, and appeared again this month as a “friend” of Mumm champagne. She’s obsessed with motorbikes, loves adventure sport and you can find her on race tracks or behind the wheel of rally cars as part of her day job. Away from the media spotlight, she’s busy getting around on her BMW R nineT Urban G/S.

Firing on all cylinders Motorbike-loving model Kate Peck finds her perfect fit. “I’ve always been into riding motorcycles,” says Peck, who was born in Canada, raised in Cairns and moved to Melbourne at the age of four before relocating to Sydney for work. She’s even been on riding trips abroad with her dad and stepmother – from South Africa to Sri Lanka and Mexico. “It was my dad who got me into motor sports and riding bikes,” she says. “It’s a love I’ve had ever since I was a young girl. To land a gig as a motor sport presenter and be doing it three years on is my ultimate dream job.” But when it comes to riding gear, Peck says the choices haven’t always been great. More than just a partnership for the sake of exchange, she says joining Saint CC made sense because the brand appealed to her style.

“It’s always been a battle for women, more so than men, when it comes to find cool protective clothing you can wear,” says Peck. “Riding gear for women has always been superbly ugly, adorned with too many diamantes, and when Saint CC approached me it felt like a godsend.” Saint worshippers include Hollywood’s Ewan McGregor and Eric Bana, who are regular customers of the denim and workwear range. There’s unbreakable denim with a protective safety feature – you get a four-second fabric protection when you slide off your bike – and they’re doing what few have in the denim space. Peck says she hopes to attract more women to the sport via her TV role. “There’s not a lot of mentors to look up to the

motor sporting world,” she says. “Women are pushing boundaries in these industries and people are paying attention to our valued opinions – it’s about intelligence, strategy and creativity. “There’s no reason women can’t be engineers, mechanics or a motorbike rider. It’s important young girls feel they can do anything.” Away from sport, she’s got a passion for wine. “You’d really impress me with a bottle of Savaterre or a Giaconda chardonnay,” she smiles. “I do enjoy learning about wine. ARCHITECTURE Unique design heritage meets sporting history.

or architect Rodney Eggleston, the restoration of a 20th century Melbourne warehouse is a labour of love that combines his own family history and Australian sporting folklore. The original building – a tribute to Japanese brutalism, a subset of the brutalist architectural movement of the 1950s to 1960s – was designed in 1972 by Eggleston Macdonald, the architecture firm founded by his great-grandfather, Alec Eggleston. The imposing structure in Abbotsford Street, North Melbourne, was constructed for Australian football legends Ron Barassi and the late Wes Lofts as a headquarters for their packaging business. With its simple, block-like forms

and raw concrete construction characteristic of the brutalist style, the work of his great-grandfather's firm on the project had always impressed Eggleston junior. But it was only through an unexpected twist of fate that his story ended up intertwining with the building. Eggleston – who, along with his partner Anne-Laure Cavigneaux, had by this time established his own firm, March Studio, in a small art deco building just down the road – dropped by the site one day to check an off-form concrete detail. (Off-form concrete refers to a construction process where the material retains an imprint of the formwork, or the mould into which it

is poured, on its surface – often the knots and graining of timber boards.) “I drove up there and saw the For Sale sign, and started having conniptions and getting the sweats,” he says. “I knew the building would be bulldozed; it’s a trend throughout the area.” Teaming up with construction company CBD Contracting, who had partnered with March Studio on several previous projects, Eggleston managed to buy the building. Together, the two businesses set about transforming the architectural gem into a shared office space –

while retaining as much of its original character as possible. Lofts’ meeting room, built with its own bar at his instruction, is still painted in the navy blue of his beloved Carlton Football Club, just as it was in the time when the star fullback strode the corridors. In the open space at the back of the building – formerly the workshop where the packaging was made – Eggleston has created a mural based on the clashing colours and graphic patters that camouflaged the “dazzle ships” of the two world wars. Skylights were also installed to flood the area with natural light. ●

Naturally, this includes pasta, cheese and wine. Take your time to explore Mercato di Porta Palazzo, a large farmers’ market. With any leftover time, sit back in Piazza San Carlo with an espresso or wander the porticoed boulevard of Via Po. ●

How to make good food choices

I

f you have no control around food, read this. When you first start your health journey, you may find it hard to steer clear of temptation and stick to your guns when it comes to making good food choices. You may even find it laughable when people who are farther along their journey tell you that they honestly prefer healthy foods but, I promise you, that will eventually be you, too. I know it can seem like the mental battle to resist the Cadbury or put down the Pringles will never end, but, before you know it, the cravings will be gone and your tastebuds will have adapted to all the good stuff. There’s no denying that discipline can play a huge part in healthy eating. The good news is that as you go farther in your healthy lifestyle, it becomes easier to choose the healthy option and simply say no. This isn’t going to happen overnight, so if you’re

feeling a little stuck and struggling to make the right choices, here are some tips that may help you on your way. REMOVE TEMPTATIONS FROM THE HOUSE \

You want to eventually get to the point where you can treat yourself to a scoop of ice-cream without finishing the entire tub. I know that for some people, practising self-control simply isn’t possible in the beginning. As you strengthen your assertiveness muscle and know when and how to stop, balance will come and you won’t risk overdoing it. However, until you get to this point, sometimes it’s easiest to simply remove temptation. Remove the junk food, processed crap, alcohol or whatever it is that sets you back, and you will be less tempted to indulge in your vices.

People gravitated to the east side of town for great theatre, cosmopolitan eateries and designer shopping, leaving the west side to offices and industrial buildings. The Paris End, or the east side of Collins Street, is still famed for housing the flagship stores of luxury brands such as Chanel and Louis Vuitton. But new developments, restaurants and bars emerging west of Elizabeth Street are helping restore balance to the CBD grid. Melbourne’s onceforgotten West End seems to be on the up. West side residents, workers and visitors already prize the area for its easy access to some of the city’s best attractions. They can walk or tram north to bustling Queen Victoria Market for fresh produce and market buys. Or they can head south to Crown Casino and Southbank’s famed dining strip for dinner at some of Melbourne’s big-name restaurants, such as Neil Perry’s Rockpool Bar & Grill or Dinner by Heston Blumenthal. There’s plenty of public transport, including Southern Cross Station, where you can access regional train lines and the SkyBus to Melbourne Airport. The West End is also home to a growing number of bars and cafes catering to locals and clued-in tourists. There’s Higher Ground, for example, an innovative cafe housed in an old power station, or State of Grace, the restaurant and wine bar that recently hopped from Collins Street to an old Melbourne Steamship Co. building on King Street. “It’s a really interesting location,” says Craig Baudin, a director at Fender Katsalidis, the awardwinning architecture firm behind Flinders Bank, a mixed-use development slated for the corner of Flinders and Spencer Streets. “It’s been a quiet and forgotten corner of the city for a long time,” he says. “But now it has the potential to be a lively neighbourhood which connects the CBD grid to Southbank and the Docklands.” Baudin says the Flinders Bank precinct, which will include hotel, retail and residential offerings, is poised to bring even more life and activity to the West End. Situated on the site of the former Melbourne Convention Centre, Flinders Bank will comprise three towers, including a retail hub and Australia’s first St Regis hotel. There will be 168 five-star hotel rooms, 650 apartments and resort-style amenities

for hotel guests and residents. “The central idea of Flinders Bank is to create a new urban neighbourhood in Melbourne’s West End, a part of the city that has enormous potential and which is currently being transformed by new development and new life.” The architectural inspiration for the development was the curve of the Yarra River, which is reflected in the cascading facade of the St Regis Hotel tower. Residents will only have to cross Spencer Street to get to a public green space, Batman Park, on the north bank of the river. The buildings themselves have views up the centre line of the Yarra, looking toward the MCG. “The Yarra forms a kind of valley within the city, with buildings stepping up in height on either side. This allows for an amazing outlook up the Yarra, and an outlook that will never be built out,” Baudin says.

A significant part of the development will be an open-air retail plaza on Siddeley Street, opposite the St Regis lobby. The plaza will serve as a “beating heart” for the whole precinct, Baudin says, thanks to its combination of residential, office, retail and hotel space. “It will create an amazing mixture of activity at different times of the day.
