“Everyone has a story of their Boxing Day, which makes it incredibly special.” That’s fast bowler Pat Cummins’ summary of how the Boxing Day Test at the MCG belongs to the fans, just as Melbourne Cup Day was gifted to the people of Victoria (as a public holiday), recognising its stature in our sporting folklore. Cummins understands that as special as it is for a player to wear the baggy green, it’s equally an occasion for the tens of thousands who make the journey to the MCG – an annual rite of passage. I spoke to Cummins as the summer of cricket heats up. ●

FIRST PERSON

““I am Dr Chris Moss ” … and I’m a plastic surgeon I was inspired to do medicine because of my

father, who was a general practitioner and the classic community doctor. I just loved seeing the passion that he had for medicine and caring for others, as well as how much his patients appreciated him. Unfortunately, he died when I was 15. He never told me to do medicine but I’d always been fascinated by the human body and how it worked. I specialise in facelift surgery and rhinoplasty. I decided to be a plastic surgeon when I was in medical school. I knew it was for me because it’s so creative. You’re able to restore people back to how they were. To me, there was nothing else in medicine that had that much impact. Your face is how you represent yourself, and so when you’re not confident with it it’s a continual drain. I started medical school when I was 16 and finished in 1987. I’d been put ahead twice in my classes, which is how I started university so young. I then did 10 years of training in my residency, plus a year of research in the anatomy of the face, so I also have a degree in anatomy. I have a parallel focus on having state-of-the-art surgical techniques to achieve natural results, as well as improving the skin of the face. If you improve the shape but there’s still a whole lot of wrinkles or lines, it impairs the results. I operate 20 hours a week, I’m in my rooms every week, and I have to confess that I work pretty much every weekend. I have my facial plastic surgery practice, the Liberty Belle Skin Centre (which is the lasers, skin tightening, Botox and filler injections), and Liberty Belle Rx, which completes the picture with high-performance skincare. My day really starts with an early night the night before. I joke that I live the life of a monk, but when I’m operating, everything has to be meticulous and precise. When you’re operating on somebody’s nose or their eyelids, every millimetre is vital. I don’t mind admitting I’ve always made sure that I’ve maintained things, and that starts with a healthy lifestyle and sun protection. I think it’s a part of health and wellbeing. ● ● chrismoss.com.au ● libertybelle.com.au/liberty-belle-rx

COVER STORY

Fast bowler Pat Cummins reflects on the summer sporting rites that bring Australians together.

P

laying a childhood game of “classic catches” in the crashing surf – a ritual for sun-kissed Australian kids – put fast bowler Pat Cummins in good stead to stare down the world’s toughest batsmen. Burning soft feet on searing concrete in the dash from the car park to the foreshore, and diving for the onslaught of balls from his four siblings, were the earliest tests of mettle for the Australian cricketer. Cummins approaches the home Test matches this summer – part of the inaugural Domain Test Series against India, starting at Adelaide Oval on December 6 – with the same verve as that boy on the beach. Last summer was the 25-year-old’s first home Test series. Stepping onto the verdant MCG for the Boxing Day Test, enveloped by a cauldron of up to 90,000 screaming fans, is a “spine-tingling” experience, Cummins says. And, with the typical humility of an athlete who wears the baggy green, he says it’s not just special for himself. “As a kid, our ritual was waking up on Boxing Day morning, having leftovers for breakfast and turning on the TV and all watching that first session of the Boxing Day Test,” Cummins says. “I remember, as a kid, that was the only time I would get nervous for the players – Boxing Day morning. To be out in the middle of it now is something else. “It is more than just a day, it’s also the days leading in – all the fans walking around the city, getting pumped up. For some attending the Boxing Day Test is a bucket-list item they have been wanting to tick off for 20 years, and for others it is their annual event. Everyone has a story of their Boxing Day, which makes it incredibly special.” Passion for the cricket team is embedded in Australians’ bone marrow. When John Howard was prime minister, he said his job ranked second in importance to the nation’s cricket captain. “Knowing you have 20-odd million people living and breathing the Australian cricket team is incredible, and at the same time it adds a bit of

pressure,” Cummins says. “It is something that we have become more and more conscious of – to not lose sight of how special it is to play for Australia, and how many people we are playing for and want to make proud. “It is probably the one sport in Australia that brings everyone together for six months of the year.” Cummins was born and raised in New South Wales, but is on the road for most of the year as a key member of the team’s explosive pace line-up. However, one of his passions is rooted in the comforts of home – property. Hand-in-hand with that love of real estate is Cummins’ new role as Domain’s first ambassador.

Paceman Pat Cummins in full flight, delivering a thunderbolt down the wicket for Australia.

GETTY IMAGES

Cummins describes the team and its support structure as a “big cricket family that travels the world together” – staff, players and their relatives. Cummins speaks of the other core Test team bowlers – Josh Hazlewood, Mitchell Starc and Nathan Lyon – with the same respect and affection he might of his own siblings. “The bowlers are tight and always are,” Cummins says. “Josh is cool, calm and collected all of the time. Nothing is ever stressful or a worry. Starcy is good fun because he sometimes gets a little bit grumpy. “Nath Lyon is always nervous; he is the most experienced of us, taking over 300 Test wickets, but

before every over he bowls he is biting his fingernails. I hope I am a bit light-hearted.” Cummins makes a point to share that joy with fans. He is a founding contributor to the website Players Voice, capturing a personal perspective on life in sport, which he says is sometimes not divulged by professional athletes who may have their guard up at press conferences. “Players Voice approached me about doing some stories and offered the unique idea of telling a story exactly as we wanted to tell it, with more insight beyond the normal articles,” he says. “I can tell stories I never thought of telling, and I love reading about the other athletes as well.”

C

ummins says readers have reached out to share their similar experiences of some of the candid topics he’s written about. One of his columns discussed his mother’s breast cancer fight and, as one of five children, how important family has been in influencing his character. “Our weekends revolved around sports even when we were on holidays – at the beach, playing cricket or kicking a footy,” he says. “How it has probably shaped me as a person, and how that leads into me as a cricketer, is that being part of a big family keeps you fairly grounded – you can’t get too ahead of yourself before one of your siblings pulls you back in line. “I was the competitive child trying to stick it to my brothers, and that has probably come into my cricket a little bit – trying to have a crack, and not taking myself too seriously. “In a big family everything is pretty relaxed, you are never the one with all the attention, it is always shared around, and you go through a lot of things together. I hope that is a similar way to how my teammates see me. “One of the biggest things about playing for Australia is that it is never just about you – you go back to grade cricket and the whole club is behind you, and your parents, siblings, aunties, uncles and cousins. “Everyone rides the wave with you.” ●

f you’re not sure what to expect when you walk into design store Criteria, entering comes as a surprise. Located down a graffiti-peppered street in Cremorne, one is greeted by an unusual, curated collection of furniture that you can’t always identify. Is that a lamp? (No, it’s a side table.) Is the curiously shaped wooden chair for sale? (Of course, but expect to splash out with four figures.) Criteria, the brainchild of American transplant Rachael Fry, prides itself on the eclectic, the hardto-get and the investment pieces. Just don’t expect budget shopping. Says Fry: “The cheapest thing we have here is a bottle opener for $150. The most expensive? Um ...” You’d better not ask. Fry is the first to admit that if you’re comparison shopping for a new dining table, hers is probably not the store for you. Their range of designers includes Baxter (Italy), De La Espada (Portugal) and the work of local design studio Broached Collections. “We’re a showroom and a gallery, representing both production work and edition work,” she says. “But we’re really a space to inspire and show progressive work, and it’s through the lens of contemporary American and European design. We bring it together through the idea that our pieces

Invest in the eclectic should be sculptural by nature and have integrity in materiality and concept.” Among the store’s stars, Manhattan-based Gabriel Hendifar and Jeremy Anderson, of Apparatus, shine brightly. In Australia last month to launch their latest collection, they are good representatives of Criteria’s approach to design. Metal finishes are done by hand; they also use unusual materials, such as horse hair. One of Fry’s favourite memories, since opening Criteria’s four-and-a-half years ago, centres upon one of their products. “A woman purchased an Apparatus light from me for her 40th birthday, and she’d obviously thought long and hard about what she wanted. When she hung it, she rang me and started crying, because she said it was so beautiful and she felt so lucky she had it. I don’t take for granted that I’m facilitating this; it made my year.” For Apparatus’ Hendifar, the joy is shared. “In Melbourne, there’s a design-savvy audience

who have a real hunger for our products. Whenever we launch a new collection, our first orders come from Australia. Maybe it’s because of the distance – it’s harder to get things here – or maybe as an audience, Australians are more comfortable to order online from an afar. They’re early adopters.” For Fry, who had an art direction background when she moved to Melbourne with her Australian husband and now six-year-old daughter (they since had a son, now two), her adopted city has proved to be an unexpected mix of cutting-edge approach and newly acquired comfort. (For instance, the first thing she does when she arrives back here from abroad is head to a cafe for a hit of coffee culture.) The one way she’d like to sway Melbourne dwellers? “I would love to see more use of colour and taking more risks, and move away from safe and grey and beige. Have some fun.” ● ● criteriacollection.com.au

knew it so well, and other bits I had no idea. Then I did it once or twice, and everything came back.” Since it began in 2005, Jersey Boys has become a musical phenomenon around the world, including in Australia. Despite much of the audience already having seen the show, it doesn’t matter; they still come back for more. Why is this? “I think you can put it down to the fact the music is timeless, and the fact that it is a true story helps,” Toft says. Sitting with the four new cast members of the show in a Melbourne cafe after a long day on the road, they bounce off each other like they could actually be in their own boy band. That rapport comes from performing sometimes up to eight shows a week, a gruelling song-and-

dance spectacular. “When we go out on stage, we get to pretend to be in this group with massive hits, and we kind of live that,” MacDonald, who plays Tommy DeVito, says. “We kind of have a shared experience anyway, so we take that with the guys on stage. It’s a really bonding experience.” Frankie Valli and the Four Seasons began in 1960 after a few false starts and different names. They have some of the most loved and well-played hits on radio in history, including their version of I’ve Got You Under My Skin, and original works Sherry and Can’t Take My Eyes Off You. Valli’s unique and distinctive voice is not an easy one for any professional singer to replicate. Gonzalez, who plays Valli, didn’t just walk on stage sounding like the American superstar.

“It took a lot of one-on-one time with our musical director,” he says. “He really helped me, told me how to create that nasal sound. It’s really quite intense. Frankie has three voices, I think. “He has his falsetto side, then the kind of nasal younger side, and as it gets older he develops his voice and it becomes a lot thicker. “So, it’s definitely a challenge to keep up with the vocal stamina throughout the show.” For the fourth member of the cast Thomas McGuane, who plays Bob Gaudio. This is his first major role after studying at the prestigious Victorian College of the Arts. What a dream first professional role it is. “It feels incredible,” he says. “I thoroughly enjoy the show, its historical accuracy. “The fact that we are playing real people is one of my favourite parts to it, and it’s just amazing music to sing every night.” ●

ith Christmas around the corner, I thought gin-infused oysters would make the perfect entree for Christmas lunch with your loved ones. With little preparation and washing up, these work a treat for the host. Sometimes, preparing the family lunch is less enjoyable because of the preparation and washing up. I like to do as much in advance as possible so I can sit with my guests and enjoy the day. Sydney rock oysters are my favourite because of their golden colour, creaminess, tasty brine and beautiful after-taste. I’ve to paired them with some gin – one of my favourite drinks, especially on a sunny day. But, have a play with other botanicals or herbs. In this recipe, I’ve used thyme but rosemary or parsley will work well, too. Other spirits or aperitifs that can be used are Pernod or vodka. Pair the Pernod with some tarragon, and you’re on a winner. I like serving the oysters with a crisp glass of Bollinger Special Cuvee, but it also pairs beautifully with a glass of Chablis. ●

Gin, cucumber, lime & pepper granita oysters Ingredients (Serves 6) ½ cup sugar 2 tablespoons fresh thyme Grated zest of 2 limes 2 Lebanese cucumbers 1 tsp freshly ground black pepper 1 cup water ¾ cup freshly squeezed lime juice ¾ cup gin ¼ teaspoon salt 2 dozen oysters Micro chervil for garnish

Method Place sugar, thyme, zest and cucumbers in a blender and blend until smooth. Transfer mixture to a medium bowl and add pepper, water, lime juice, gin, and salt and whisk to combine. Let mixture stand up to 10 minutes until sugar and salt have dissolved. Stir occasionally. ■ Pour mixture into a 22-centimetre square metal baking pan and place it in the freezer. Stir mixture, pulling a fork back and forth through it, every 45 minutes or so for four hours or until frozen. The mixture will become fluffy and icy. ■ Shuck oysters and serve with small scoops of granita spooned on top. Garnish with some micro chervil. ■ To serve, place on a platter with rock salt. MICHAEL HARDEN

t wasn't that long ago that flavours, spices and seasoning from many Asian cuisines were considered incompatible with wine. Thank Bacchus we live in more enlightened times. We are now fully aware that wine can be as perfect a match with almost any food (except, perhaps, artichokes) as beer or cocktails, as long as there’s someone in charge who knows what they’re doing. Brad Hammond is a man who knows what he's doing. Hammond is the food and beverage manager at the Hotel Windsor and at current Melbourne “it” restaurant, Sunda. Hammond travelled through South-East Asia with Sunda chef Khanh Nguyen before compiling the restaurant's drinks list, sampling the flavours Nguyen was intending to incorporate in his dishes.

Asian staples such as crab, curry, coconut, chilli and coriander were all on the list, as well as indigenous Australian ingredients such as finger lime, anise myrtle and bush tomato. The food is remarkable (the roti bread with Vegemite curry has deservedly become something of a cult dish, and Ngyuen's modern take on otak-otak is a must-eat) but presented some challenges when it came to the drinks. “I quickly realised that I would be looking at the lighter more aromatic varieties and styles, but the wine also had to have some texture and funk so that it would hold its own against lots of spice or dried shrimp,” he says. He mentions the skinsy Amrit pinot gris from Mornington Peninsula winery Avani as a great example of the kind of wine that works beautifully with South-East Asian cuisines. The cocktails at Sunda are also worth attention. They lean to the thirst-quenching side, and are great friends with the food here. The Wake in Fright mixes Davidson plum puree with a local amaro by Okar, 666 vodka and lemon, stirred down over ice. It’s a gorgeously balanced, interesting drink. Same goes for the Sunda Sling that has Melbourne Gin Company gin mixing it up with Dom Benedictine, Andaliman pepper syrup, lemon juice and soda. The slightly citric pepper is the drink’s masterstroke. Sunda’s been getting accolades for its food, and so it should. The drinks list is also worthy of some special attention. ●

Signature drink The four cocktails at Sunda are all worth a try, but the Sunda Sling catches the eye, not just because of the name and the use of a rare Indonesian pepper (andaliman) but because it’s batched in different barrels so the flavour profile changes slightly depending on what the barrel contained previously. PAIR IT WITH … Raw scallops with cucumber and andaliman pepper that you wrap in a betel leaf and eat with your fingers. ●

Just dropped Larrikin Gin Scoundrel London Dry, $80 Local gin lovers are like pigs in the proverbial at the moment, with small distilleries putting out some great examples all over the country. This one comes from Kilderkin Distillery in Ballarat, and is an excellent version of a classic London Dry gin. It’s juniper and citrus forward with some added depth from coriander seed, aniseed and cardamom. There are three others in the Larrikin range – an Australian (now with added lilly pilly and pepperberry), a hefty and delicious Navy Strength and one barrel aged in bourbon and whisky barrels. ●

earing seagulls chatter makes it sound like summer holidays, or at least a leisurely weekend by the seaside. But it’s just another Tuesday in Albert Park Village, off tram route 1. Situated opposite Beaconsfield Parade and the waters of Port Phillip Bay, Victoria Avenue starts with a spread of restaurants lying dormant for the night to come, although it’s just a short amble up to where a lively hub of activity reveals itself. Dogs are resting outside cafes, looking as laid-back as a Saturday, and a hole-in-the-wall coffee spot (which proves to be the newly opened Snow White Bakery) complements the seaside village charm. Stop by for a salted-caramel brownie and a warm-up fireside, before continuing your lazy weekday stroll. Here in Albert Park, stores convincingly masquerade as quaint houses. Only at second glance

is it realised most are shops and cafes. Studio Kingfisher, a handcrafted jewellery store, is easy to miss with its white picket fence, but it would be a shame if you did. Along with their small selection of jewellery and accessories, you can attend classes where you can learn the craft yourself. There is also wellness cafe Projuice, which appears as an envy-worthy two-storey family home, but instead turns out to be a vegetarian and vegan food space, also offering health workshops. There are many home-like spots here, including the Avenue Bookstore in the thick of the village. Without the regular rumble of trams, it is easy to forget it’s Melbourne at all. To finish the day on a beachy note (disregarding any sort of wind with a chill factor), have an icecream and a walk on the sand. Such a holiday. ●

Stark scenery In contrast to Mexico’s luscious jungles, Baja California is mostly semi-arid with a Mediterranean-like climate, and the coastline is rugged and unforgiving, but entirely

beguiling. Though the main beach stretching between the two towns has strong rips and is generally best avoided, there are secluded swimming beaches that can be reached by boat or on foot. The famous arch of Cabo San Lucas is on every postcard you pick up, but you’ll still want to take a photo of it. At low tide, a couple of small beaches can be enjoyed beneath its towering formations, but get an early boat to avoid the crowds.

Little ways to achieve big results

T

here’s no denying that weight loss doesn’t come easily to everyone. It takes hard work and discipline – and this is what makes it so rewarding. But the thing is, weight loss doesn’t have to be as challenging as what most people think. It doesn’t have to mean turning your life upside down and putting in 110 per cent effort to get results. On my 28 program, we take a much more sustainable approach by introducing smaller changes over time that teach you the healthiest habits for long-term, sustainable success. Here are four easy steps you can take that don’t require a huge amount of effort but can make a big difference to your health and weight loss. UP YOUR VEGGIE COUNT \ If you’re looking to

clean up your diet, then increasing your veggie intake should be your number one priority. If you aim to make at least half of each meal consist of vegetables, by the time you add some protein, healthy fats and a small amount of complex carbohydrates, there isn’t a lot of room in your diet for much else. Don’t just stop at meals either. If you’re aiming to get in as many vegetables as you can, then using snacks to do this is an awesome idea. Try veggie sticks with dip, savoury muffins, green smoothies or whip up some mini-frittatas to up your veggie count. DOUBLE UP \ When I’m cooking a healthy but

freezer-friendly meal, I always double the quantities to stash in the freezer for when I’m low on time. You would be surprised how many meals you cook

are freezer-friendly (curries, bolognese, soup or meatballs are a few of my favourites) and when you’re trying to stick to a healthy routine the time it saves you is an absolute no-brainer. Remember, good habits are about convenience, and when things aren’t convenient we make poor choices. Double up so that you always stay one step ahead. CUT YOUR COOKING TIME \ With so many busy people on my program, and as a busy person myself, I understand that in reality not everyone has time to cook their meals from scratch. That’s why using pre-cooked grains, canned legumes and frozen veggies is incredibly useful to help cut cooking time while ensuring you stick to a health routine. Frozen veggies in particular are actually very nutritious, as freezing is equivalent to snap-locking the nutrients in, when compared with veggies that may have travelled many miles and lost a lot of their nutritional value before they get to you.

DITCH THE DRINK \ If soft drinks, juices, energy

drinks, alcohol or multiple coffees a day are your thing then a simple but effective healthy change to make is to swap some of these for water. My tip is to start small and build your way up rather than going completely cold turkey. If you drink two soft drinks and two coffees a day then just pick one to replace with water for two weeks. The following two weeks swap a second drink to water and so on until you are drinking mainly water, or, in an ideal world, only water. Herbal tea is another good option you can use to replace soft drinks, juices, energy drinks, alcohol or coffee as they add to your hydration for the day, plus have plenty of other benefits. There you have it. Four lazy, but effective, changes that you can make to your routine. They may seem small but trust me – implementing these into your life can help you see big results over time. ● ● 28bysamwood.com

This wonderfully luxurious, newly built home adopts a brutalist-inspired design sheltering a north-facing backyard with a decked barbecue area, pool and lawn. Both the front door and internal double garage lead to an entryway where an architectural white staircase is framed by double-height glass panels. On either side of this entry is the study and the main bedroom with a walk-in wardrobe and en suite containing a free-standing contemporary bath and marble double vanity. The floor wraps around to a defined lounge room with an integrated gas fireplace and pool outlook before extending to the open-plan living, dining and kitchen area. Carrara marble and black matte fixtures feature in the minimal kitchen along with Miele appliances, an integrated fridge-freezer and a wine fridge. A butler’s pantry conceals another sink and additional preparation space. The entire north side of the living domain is framed by fullheight and width glass doors that slide open to the deck, creating a seamless connection between indoors and out. This partially covered deck overlooks the lawn and includes a Weber barbecue integrated into a concrete bench. A gym and powder room facing the solar and gas heated pool can be directly accessed from the backyard or alternatively via the remote double garage. Treehouse meets Bauhaus in this fascinating property, designed by Anatol Kagan and built at the top of the court in 1959, where three levels of incomparable grooviness culminate in a roof terrace with a view of the city. Though renovated in parts, the updates harmonise with history; the dining area’s Issey Miyake pendant, for example, is a friend to the original Sputnik chandelier over the stairs. The ground floor has a “living-library-piano room”, study, laundry and bedroom with en suite. Upstairs, the living-dining room has a cocktail bar and opens north to a terrace.
