““I am Andrew Startin ” … and I’m a head doorman I’ve been at The Langham for about 10 months, but

before that I was an impersonator. I sent a video into The Footy Show when I was 19, impersonating Sam Newman, and won a competition. They put me on the show four more times that year and from that exposure I started to get inquiries from corporate people and sporting clubs about entertaining at their functions. I was doing Sam, Bruce McAvaney, Mike Sheahan, Gerard Whateley, Dennis Cometti. How did I end up in this job? I just thought I needed a bit of a change because it’s been a long time doing the same thing, being my own boss. I needed something that was going to closely resemble working with people and in front of people but it’s a little bit more intimate this time around, as opposed to being on a stage. The interview was stressful for me because I’ve been my own boss for 22 years. It’s the first interview I’ve ever had. I’ve had countless guests say, “geez, you look familiar”. I say, “Where do you reckon you might have seen me before?” Then some will come back after lunch, or the next day, and say, “I’ve got it, you’re the guy that does the impersonations”. My job is to be the guests’ first and last impression of the hotel. Every time I’m opening a car door and greeting a guest, that is something that flashes through my head. When people hear the title of doorman they think that I just stand there all day. It’s more than that. Running the driveway is a major part of my job. I’ve got to make sure it’s as clear as possible of traffic because it can get clogged up quite quickly. Not everybody will park their car where you would think they should park their car. It’s getting luggage out of taxis, out of hire cars – that’s my gym workout. Then there’s tagging the luggage and the valet dockets for guests’ vehicles. We do try to remember names and that’s a challenge because you’ve got to be 100 per cent certain. The last thing you want to do is call Mr Jones “Mr Smith”. I can’t name names, but we’ve had everyone from rock stars to entrepreneurs and tennis champions stay here. I’m a massive Queen fan. If Brian May stayed here, I’d probably lose it. ● ● langhamhotels.com

It’s a beautiful life Former model Megan Gale, who describes herself as vulnerable but tough, gains inspiration from her mother and two children for her next venture.

S

he made a name for herself as the face of David Jones in the 2000s and last walked the runway for designer Alex Perry at his Melbourne Fashion Festival show in 2011. But these days former model Megan Gale has other things on her mind – starting a new business, raising two young children and, for the past eight years, happily calling Melbourne home. “I haven’t considered myself a model for many years,” says Gale, who first walked for David Jones in 1995 and got her big break in Italy in 1999 with an advertisement for telco company Omnitel. “It is one of the many hats I have worn, but I have learnt to slow down and not try and do a million things at once,” she smiles. “For many years I was moving from one hotel to the other because that was what was required with my work; and now love nothing more than to stay put and feel more grounded.” Gale’s new ethical children’s skincare line, Mindful Life, is testament to her new modus operandi. Working from home is where she had the idea to start a new business five years ago. She also took inspiration from Elle Macpherson, who has become a successful businesswoman after years of modelling. In the past, Gale put her name to beauty products (L’Oreal) and started a swimwear line (Isola) but admits she never quite felt entirely fulfilled.

“I wanted to start a purpose-driven business,” says Gale, who also spent $20,000 to have her products dermatologically tested. “If it had my name on it, I had to dot the i’s and cross the t’s. “I didn’t just want a another baby brand to join the market. This is about encouraging families to be present with their children especially when it’s bath time. It’s not always possible, but it’s about not wishing this time away either.” Gale has two children with fiance and retired Carlton and Richmond AFL player Shaun Hampson; River, aged five, and Rosie, 20 months. She thanks her mother for encouraging her to “wake up and smell the roses” – advice that only really made sense once she became a mother herself. “Mum would always tell me to slow down, don’t wish your time away during a newborn phase. Before you know it they grow up. It’s advice that doesn’t really sink in when you’re sleep-deprived and just want them to sleep,” she says.

ale was born and raised in Perth and won a modelling competition at 18. It’s been 20 years since she went to Italy where she kick-started her career. “I had my five years of struggle,” she recalls of finding it hard to get work in Australia before moving to Europe. “I can thank the Italian job because after that

everyone back home wanted to know who I was. I didn’t get put on the cover of Vogue straight away, but I knew in my bones if I stuck to it, I’d eventually make it. You really need a lot of self-belief in this cutthroat industry.” For all her assertive mannerisms, there’s a vulnerability to Gale you perceive after spending time with her. Behind that huge smile, towering height and those wide eyes is someone who wants to let you in, but is on guard at the same time. “I’m a funny human,” she says. “I’m quite a sensitive and vulnerable soul, but at the same time I have a side of ‘just dust yourself off and keep going’. “I am tough because I have had to be in this business. I saw lots of people succeed around me before I found my own. It wasn’t easy. I’ve also been burned in business, been lied to, had my trust abused. It sets you up to tread carefully.” At their family home in Melbourne’s east, Gale is happiest when speaking about her kids. River likes to bring in leaves from the front garden and name each one of them with her, while Rosie happily throws a pile of dirt on the floor and runs back outside to get more. “The kids make me realise what’s really important,” Gale says. “They have put everything into perspective for me. I always say if they are healthy and thriving you are lucky.”

Gale, who dated comedian and TV personality Andy Lee for four years before meeting Hampson in 2011, says she’s still perplexed at the media’s obsession with her private life. “Much was made of our age gap when Shaun and I got together, which I hated, because I felt like that was a bigger deal than the fact we were both happy and compatible,” Gale says. “We have an extraordinary level of communication, and that’s one of the most important aspects of a relationship. “I wouldn’t have been able to start this business without his support.” Gale’s father, Alan, died a few months after their son was born; a difficult time for her family. “It was horrible to see my dad deteriorate with a terminal disease, but we made the most of all that time we had left,” she says. “We also lost Shaun’s dad, Thomas, a month before River was born. Our mums went through a horrific time – deaths, births. It was so intense.” Gale was close to her father and, like him, spent a lot of time dwelling and sweating the small stuff in her 20s and 30s. “If my dad could talk to me now he would say, ‘let things go Megan, don’t hang onto things bothering you, it’s not worth it because life is too short’,” she says. “Embrace what you have and be thankful, be present. t’s not often that a Facebook message from a stranger results in the opportunity for a designer to have their work appear on the world’s stage, but that’s exactly how Melbourne’s Gwendolynne Burkin ended up working on Kate Miller-Heidke’s Eurovision performance. Burkin, best known for her bridal gowns, has long held an interest in costume and theatre but, when she was contacted by Miller-Heidke’s representatives less than a week before her Australia Decides show in February, she had to make a quick decision about whether she could design the top half of a dress that hadn’t come to fruition. The result was an unforgettable, other-worldly silver gown, the bejewelled bodice of which Burkin spent four days feverishly piecing together, subsisting on coffee and the goodwill of her partner. Fortunately, she had a little more time to pore over the details for Eurovision’s Tel Aviv shows

earlier this month, completing the dark, ethereal costumes for Miller-Heidke’s dancers, while MillerHeidke wore a Steven Khalil gown in Tel Aviv. In the end, it was a symbiotic meeting of minds. “Kate’s musical approach for the song Zero Gravity merges classic opera with pop and dance, which is in keeping with my visual eye that strongly

references the past and reinvents it in a modern context,” says Burkin. “It also allowed me to get away from being typecast and show people what I can do as a creative. And, seeing something I have created come to life in a theatrical setting is so exciting and way more fabulous than a standard march down a runway.” It’s hard to imagine designing such an integral costume for someone you’ve never met, but luckily, Miller-Heidke’s reaction was immediately positive. “At our first meeting, she was like a delicate doll with a delightful, gentle smile. She said that even if she had given me a timeline of three months, it would have surpassed her expectations.” Fellow Australia Decides contender Alfie Arcuri was one fan; backstage, he told Burkin he wanted to wear Miller-Heidke’s outfit to Mardi Gras. For Burkin – who has stepped away from platforms such as the Virgin Australia Melbourne Fashion Festival and is vocal about the need for

Australians to back local designers – the Eurovision spotlight also allowed her own voice to be heard. “I feel that small Melbourne female independent designers get overlooked a lot, even when they’re established. Most of the opportunities go to the male and Sydney-based designers, and then the media gets on the bandwagon of those ‘new kids’. “I have never felt much like I fit in in the fashion industry, and so one social media comment that really touched me was from a fan who said, ‘You are one of the most underrated Aussie fashion designers’. Another favourite was from someone who called me a ‘magical wonder woman’ because I really did feel like I was tapping into my inner super hero to get that done,” she says. Has more work come her way, as a direct result? “Well, I’m afraid that not everyone wants to wear a bejewelled bodice to work,” Burkin laughs. After the Eurovision dust has settled, that might change. ●

n the 1990s, Fiona Horne rocked hard as the enigmatic front woman of Sydney electro-rock band DEF FX, inspiring many women to take the stage in the era that delivered grunge and the Riot Grrrl movement. But she also inspired many women to explore modern witchcraft at a time when the topic was mostly taboo. It was the early ’90s, after all. At 52, she’s written a new book The Art of Witch (her 11th release) – a manifesto of sorts on her fascination

with witchcraft, looking at how it’s evolved and allowed her to grow. It’s also a DIY guide, if you like, that dispels the myths and stereotypes and opens up the mind to inspire all curious types to think outside the square they live in. It was through her autobiography The Naked Witch, released a few years ago, that Horne revealed her obsession with witchcraft began at five while growing up in Sydney. “As a kid playing in the bush, I knew the natural world was magical,” she says.

As a twentysomething in a band, all she wanted was approval and to be seen as cool. “What I remember for that time is being on stage at the 1994 Big Day Out Sydney and ripping my top off and the audience taking their tops off with me. “I thought, if guys can do it why can’t we? It was sincere and in the moment but the newspapers at the time speculated if I was making a powerful political statement. In the early ’90s there wasn’t much awareness or support for women in music. It has grown a lot. If I had a role to play I am grateful.” ●

“I felt a sense of transformative empowerment in it. And then, as a kid, I saw shows like Bewitched and it gave me the idea I could do magic and make a difference in the world. “Albeit it was glamorised ... but it allowed me to see there was a practical skill to it, too.” The Art of Witch is designed to empower through magic – and if that sounds all hippy stardust to you, then Horne says you’re wrong. “I don’t do manipulative spells, but will guide people on a ritual as part of the spoken word tour,” she says. “My witchcraft is who and what I am and it informs every facet of my life.” Horne now lives in the Virgin Islands and works as a commercial pilot who primarily flies humanitarian aid missions to cyclone-affected islands. “I got my commercial licence in 2016 in LA and worked three jobs to save the money to go for it,” she says. She’s done aid missions to Haiti,

ust 10 years ago it was rare to see a female football broadcaster on television, but thankfully it’s now not the case. Sarah Olle is one of the young television presenters who is changing things up, as a co-host of Fox Footy’s Saturday Stretch alongside Dermott Brereton and Brad Johnson. “While females are still under-represented in our industry, there are a lot more women, especially on television now which is great,” Olle says. “At Fox, we have got Sarah Jones, Neroli Meadows and Kelli Underwood, who are all doing amazing things and are such great role models and mentors to me. “I’m pretty lucky that I’m in a workplace that is not just promoting women because they’re women, but promoting them because they deserve it and they are bloody good at their jobs.” Olle initially studied law but always had an interest in football journalism, reading the legendary Caroline Wilson, The Age’s fomer chief footy writer, growing up. “I always wanted to be a sports journalist when I

was really little, and when I finished school I got good marks and everyone told me I should do law, so I did that,” she says. “But after I finished the law degree I hated it and came out quite jaded from the whole experience, so I went to RMIT and did the postgraduate course there in journalism, and it went from there.” After starting with Fox Footy on air last year, it’s been a huge learning curve for Olle, and she is a star on the rise at the network. She says working with Brereton and Johnson has been an excellent learning experience for her. “It’s such a good gig because you sit there with the boys and watch the game and then you come on and talk about it,” she says. “I love sport, so I’ve hit the jackpot. “For me it is such a fun Saturday night because I’d be watching the footy anyway. “It couldn’t get any better.” ● SATURDAY STRETCH \ With Sarah Olle, Dermott Brereton and Brad Johnson, Saturday nights on Foxtel’s Fox Footy.

spent a fair bit of time in Malaysia this year, going back to my roots and thinking of old recipes to re-invent and test. One of the recipes that has been an all-time favourite of mine is ayam masak merah, which translates to red cooked chicken. It is a traditional Malay dish. Similar to a casserole, it is cooked using tomato puree and lots of aromats. I was in Malaysia over the Ramadan period and noticed this dish being sold at the various street markets for the locals to buy when they break their fast at sunset. The key to making this dish a standout is to make sure you use whole pieces of chicken with bones in. The bones gives the dish a lot of flavour. This dish is sold all across Malaysia in eateries ranging from roadside stalls to fine-dining restaurants. It’s usually eaten with tomato rice and a vegetable dish. �

Ayam masak merah (red cooked chicken) Ingredients (Serves 6) 1 whole chicken weighing around 1.5kgs, chopped into pieces Oil for frying 1 cinnamon stick 2 star anise 3 cardamom seeds 3 cloves 6 whole dried chillis 1 tin of tomato puree 1 tbsp chilli sauce 1 tbsp sugar Salt to taste Handful of frozen peas ∏ cup fried shallots (store-bought) For the paste 2 large red onions, roughly chopped 5 cloves of garlic, peeled 2∏ centimetres of ginger, roughly chopped 2∏ centimetres galangal, roughly chopped 3 lemongrass stalks, roughly chopped

Method Blend all the ingredients for the paste into a fine consistency and set aside. ■ Place enough oil in a wok or deep fry pan and bring to medium heat. Rub salt all over the pieces of chicken and shallow fry the chicken for about 10 minutes. Remove from oil, and set aside. ■ Using about 2 tbsp of the leftover oil, still over medium heat, fry off the spices, dried chillies and blended paste for about 3 minutes or until fragrant. ■ Add in one cup of water, tomato puree, chilli sauce and sugar. Combine thoroughly. ■ Add in the fried chicken, frozen peas and fried shallots. Let it simmer over low heat for another 10 minutes. ■ Garnish with some herbs and serve with rice. ● ■

D

esigning and building your dream home is a serious commitment, and it can be difficult to understand the design intention from blueprints and artist impressions. The dynamic field of virtual reality is one solution to this problem, allowing clients to immerse themselves in their designs in a manner previously thought impossible. “What sets virtual reality apart is that it allows everybody to get onto the same page, together,” says James Winder, managing director of Immersive VR. Winder launched the business after he was unhappy with the visualisation options available to him when he was designing his own home. “I spoke to many architects, and they all say clients struggle to visualise plans. It just seemed like a really large issue, so we thought, ‘how can we solve this?’ ” The result is an interactive, lifelike virtual reality experience and lets the client move through the space – a major improvement over traditional visualisation techniques. “With VR you can walk into your home. Mark and his wife are currently renovating their house and have used Immersive VR because he struggles to visualise blueprints. “It might as well be written in hieroglyphics,” he says. The couple visited Immersive VR’s Surrey Hills studio and met with Winder for a full walk-through of their plans.

But if we had known about this service from the get-go, it would have made life a lot easier.” Using Immersive VR to visualise their design meant they got a better feel for the space, Mark says. “You get different views from the room, including what we’re going to look out onto in our gardens. That never comes to life when you’re just looking at some plans.” The couple hopes the experience will help save

A

traditional afternoon tea that is an ode to all things English and French is shaping the unique new menu at the Crown Conservatory. Created by world-renowned executive pastry chef Paul Thieblemont, who works at the Mandarin Oriental in London’s Hyde Park, the high tea gets a subtle tweak, a modern reinvention and takes a bow to tradition all in the name of getting more people interested in taking time out to have a cuppa and good conversation. Thieblemont, who knew he wanted to bake from the age of six, says his approach at Crown is to avoid the sickly sweet for the conscious-minded who still have a soft spot for dessert. “I’ve noticed that desserts have become heavier and too sweet, so I’ve followed quite a simple approach with the aim to reduce the sweetness of my creations and desserts and focus more on using lighter-flavoured decorations,” Thieblemont says. “Instead I have introduced sweetness through fruits and toppings, modernising the flavours of my cakes while still keeping the beautiful colours.” Thieblemont adds two new desserts for the occasion – the Pear and Oryola and the Braeburns Finger. He has also modernised an old-school recipe: the Battenberg cake (a light sponge covered in jam and marzipan). “The Battenberg may look simple but it’s actually one of the hardest recipes to master,” he explains of a remake he crafted last Christmas. “The thin layers of strawberry and soft vanilla sponge can be difficult to piece together.” Thieblemont is no stranger to Melbourne having

worked at A La Folie patisserie in South Yarra in 2013. He describes his time here as a careerturning point. “I was so impressed by the city and the breadth of multicultural food offerings from European to Asian that it truly helped me understand my full potential when cooking,” he says. His Crown afternoon tea delights in flavours from traditional English to French expression. “Melbourne can expect to sample desserts that bring in a hint of British heritage with a French twist that throws back to my upbringing,” says Thieblemont of his debut at Crown. “These desserts have not yet been served anywhere in Australia and they’ll add an extra splash of colour to the already elevated offering at Crown Conservatory.” Guests can expect to sample his famous Yorkshire tart, which he created especially for the Mandarin Oriental in London. “I created this dessert as I wanted to work with the incredible rhubarb from Yorkshire,” he says. “The vegetable offers a rich taste and the flavours and colour still amaze me.”

And for those eager to sample a newbie, the Pear and Oryola is a must for avant-garde taste buds. “It offers a nice balance between the flavour and crunch of the Weiss Oryola chocolate [chocolate with hazelnut from Italy] and the pear,” Thieblemont says. For those keen on a slice of summer in autumn and winter there’s the Plum Bakewell Slice – a traditional English cake filled with summer fruit. Here Thieblemont drizzles orange over a gingerbread biscuit and finishes it with a sweet plum jelly. Thieblemont, whose favourite dessert is pear tart and cinnamon ice-cream, says the best advice he received while training as a pastry chef was to take it one step at a time. “Master the basics and avoid taking any shortcuts when cooking,” he says. “From an early age I was told to study hard at culinary school and always look to grow and expand my culinary knowledge. “This has resonated with me throughout my whole career and, even today, I’ll never take any shortcuts in the kitchen.” ●
