In troubled times, TV shows in which the whole family can sit down to watch are so treasured. Enter the rebooted Seachange, on Channel Nine. It’s the series that made now Hollywood star David Wenham (Diver Dan) a heartthrob, and in magistrate Laura Gibson, played beautifully by Sigrid Thornton, showed a strong woman could still express her fragility. The show coined the real estate phrase “sea change”, for city-slickers seeking peace and quiet, even if Laura encountered hiccups on the way to that nirvana. ““I am Glenn Watson” … and I’m a butcher at Rockpool Bar & Grill I never thought in my wildest dreams I’d be
working in a restaurant as a butcher. It is pretty unusual. There’s three of us full-time in Australia and we’re all within the Rockpool Dining Group. Because this is a steak restaurant, the best way to do that is have your own butcher – do everything in-house. Basically I deal directly with the producers and then we dry age all our own meat, so it’s minimum 50 to 60 days drying. With dry ageing, the flavour’s so much better. I’ve been here at the Melbourne restaurant for almost 11 years; before that I was in butcher shops. I started off as a clean-up kid when I was 13, after school and on Saturday mornings. Mum sent me up to the local butcher shop to get some mince and I
saw the ad on the window. I loved it from day one. You could muck around and earn good money, and it was fun. It still is. I ended up finding an apprenticeship when I was 15 and left school. I started off in a butcher’s shop and halfway through my apprenticeship I changed to a family-run Italian small goods company. I enjoyed making salami and prosciutto, all that sort of stuff. We’re talking in the early ’80s. For an Anglo-Saxon kid to be sitting down at lunch eating prosciutto at 15 and 16, it wasn’t the norm. I’ve worked in kosher butchers; I’ve worked at David Jones. I’ve picked the jobs I wanted because I wanted to learn as much as I could in my trade, and this is the pinnacle of a butcher’s job.

To start my week off, I’ll make sausages and start preparing. I’ll look to see what functions are on, to make sure we’ve got enough stock. The spring racing carnival’s coming up and because we dry age we’ve got to plan in advance. This job isn’t for everyone. It’s physical. You’re lifting and cutting. Some people think you get everything out of a box, but you don’t, we have to process it. We get over a tonne of wagyu each month, and that’s just the wagyu. We have anywhere from $90,000 to $120,000 of beef ageing at any one time, and at the end of the day I’m responsible for that. ● ● rockpoolbarandgrill.com.au

any of us struggle to know we want to do with our lives, but Sigrid Thornton knew she wanted to be an actor at a very young age. Growing up in Brisbane, acting was always in her blood. “I wanted to be an actor probably from about the age of seven,” she says. “It’s a very hard thing to define exactly what drives a seven-year-old to such a calling, but it chose me, really. “I started doing acting workshops from that very early age and it wasn’t something that I really thought about, it was something I just wanted to do and it gave me pleasure and made me feel happy.” It’s been 40 years since Thornton had her first major role in a drama series, appearing in 30 episodes of the classic Australian drama Prisoner in 1979. She didn’t celebrate the achievement because, in reality, at the age of 60 she feels like she has been acting most of her life. “I didn’t have a party or anything, as I have been acting since I was a child,” she says of the milestone. “I have had the good fortune of having an enduring career.” Thornton loves being an actor today as much as she did when she started out. “I love it in a more clearly defined, concentrated kind of way now,” she says. “I love the actual process of being in the zone and making a performance work. That’s a rather hard thing to describe, it is a Zen kind of state that actors talk about. It’s a very fulfilling place to be.” Ever since that role on Prisoner she has barely left our screens – big or small. Whether it is winning hearts in the The Man From Snowy River or most recently a gritty role in Wentworth, she excels at everything she does. Thornton is back again in Seachange, reprising
Sigrid Thornton is back in Pearl Bay as the much-missed TV series Seachange returns.
A change of heart her role of the much loved magistrate Laura Gibson, this time on Channel Nine. The original series of Seachange finished to much public outcry in 2000 after three years on the ABC. It has taken almost 20 years to get the fictional town of Pearl Bay back on the map again. On this renewed occasion, Seachange wasn’t filmed in the Victorian town of Barwon Heads. Instead, it was shot in the just-as-pretty spot of Brunswick Heads in northern NSW. And this time around, Thornton is not only starring in the lead role, but is also a producer. “I have been working seven days a week, so I feel like I could probably sleep for month to make up for it,” she says. If you had have asked Thornton a couple of years ago if Seachange would ever come back, she would have probably said no. “I hadn’t dreamed of it returning,” Sigrid says of the Seachange reboot. “I hadn’t imagined that this would ever happen, really. So I’ve been very keen to take it one step at a time and not have any particular expectations, because it’s a long time later and this woman, although very much in the same spirit, she has had a lot of life experiences. “It has been an extraordinary experience bringing her back.”

Since 2000 the world has changed dramatically, but Thornton still believes there is a place for a nice drama like Seachange, amid so much doom and gloom. “Storytelling has changed enormously since Seachange was made and there are many more complex stories out there to be listened to, viewed and heard,” she says. “So it’s a different world. “But I still think that Seachange is even more relevant, perhaps more than ever because the world is in need of a soothing influence. “It’s a story that talks about connections between people and the loving connection between people “ The new Seachange also sees the return of John Howard as Bob Jelly, Kerry Armstrong playing his wife Heather, and Kevin Harrington in the role of Kevin Findley. Brooke Satchwell joins the cast as Miranda Gibson, Laura’s daughter. It was a joy for Thornton to bring Laura Gibson back to life, with all her quirks. “I think Laura is an unusual central figure,” Thornton says. “She’s not your traditional heroine. “She is neurotic, damaged, a bit obsessive compulsive and controlling, but she is constantly looking to redeem herself and her heart is in the right place. “She’s constantly looking to improve herself and the lives of those around her.” Based in Melbourne with her husband Tom Burstall, Thornton is looking forward to some quiet time now that the first series, of hopefully many, has been completed. “I got back home on Sunday night and my suitcases are still spilling out and unpacked because I’ve had such a busy time since I got home,” she says. “I’m looking forward to getting my act back together.” ● SEACHANGE \ On Channel Nine, Tuesdays at 8.40pm.

Parent trap Asher Keddie confronts a modern problem.
T
he first time Asher Keddie worked with Richard Roxburgh was in 2010 in the telemovie Hawke, where he played the late Bob Hawke and she his mistress and then wife, Blanche d’Alpuget. So when the chance came together to work with Roxburgh again in the new SBS drama The Hunting, Keddie didn’t hesitate to say yes. Hunting “Since filming Hawke we’ve been really good friends and that doesn’t happen very often, where you are able to continue friendships after finishing jobs,” she says. “It was such a nice opportunity to work together again, because we really did have such a great time playing Bob and Blanche. “We also both discussed the fact that neither of us had played this kind of character before, and we thought if we were going to do it, we would do it together. We had a fantastic time.” In The Hunting Keddie and Roxburgh play Simone and Nick Luke, who are dealing with a sexting fallout involving their son Andy. The subject matter – the impact of revenge porn on families, teenagers and society as well as toxic masculinity – was also one of the reasons Keddie signed on to film the series.
“There are so many good things being written at the moment, and The Hunting was one of them because it’s looking at issues that are really timely for all of us,” she says. “The show is written so well and it was a challenge. The subject matter was something I didn’t understand and I thought it was good to explore. “It was difficult and really consuming, I have to say, but because I had such a great acting partner in Rox [Roxburgh] it felt very safe, very relaxed and we were able to kind of navigate out of that territory that was uncomfortable.”

Her performance in The Hunting has won wide critical acclaim, something that happens every time Keddie steps in front of camera. At 44, she is one of Australia’s most loved actors. For seven seasons she played the role of obstetrician Nina Proudman in Offspring Offspring, which broke fans’ hearts when it finished on air in 2017. Since then Keddie has starred in the Australian movie Swinging Safari opposite Guy Pearce and Kylie Minogue (which was written and directed by Stephan Elliott, of Priscilla Queen of the Desert fame), and the acclaimed The Cry for the ABC. She recently filmed a part in the upcoming ABC drama Stateless, a six-part series about immigration that is the pet project of Oscar-winning actor Cate Blanchett. Based in Melbourne with her husband, artist Vincent Fantauzzo, the pair have four-year-old son Valentino and she has a stepson Luca, 10. This multipronged, family affair is a one-stop gastronomic wonderland, embracing all dining and drinking bases in its sprawling heritage development. “People come in a bit bamboozled because it’s such a big building and there’s eye candy everywhere,” general manager Anthony Mussara says. For low-fi drinks he directs them upstairs to rooftop bar Johnny’s Green Room. There’s a private dining room in the subterranean cellar (ask for the back-vintage barolos), a high-end bottle shop championing independent makers and internationals, and made-from-scratch gelato at

Have a tipple at Agostino, a luxe 50-seat wine bar with a northern Italian menu, while the all-day Espresso Bar-slash-deli-slash-grocer is one sexy package, channelling a market-style vibe with multiple counters and fancy Italian foodstuffs. “We want people to come and buy eggs, and milk and ham and cheese,” Mussara says, “It’s not meant to be elitist.” Nosing around the curated shelves creates a shopping haze, inspiring Italian earth-mother visions of suddenly being able to whip up some ricotta cannelloni for dinner. Salumi sings its siren song from the deli counter – sheer thin slices of pepper-studded mortadella, DOP-accredited Italian
prosciuttos – and check out the sunken marble fridge full of magnificently stinky cheeses. Fresh and filled pastas are ready to take home. Enticing tubs of nduja (spicy, spreadable salami) and glossy green and black olives sit alongside freshly baked sourdough. Be warned: it’s difficult to stop adding just-one-more-thing to your stash. It’s been a hard renovation road for Melbourne’s oldest grocer (established in 1884) and Mussara says the four-year shutdown has customers exclaiming, “It’s about time!” They see King and Godfree as theirs, and it’s great the corner is alive again. Dr Marty’s crumpets are a snacky brekkie option, to be spread with whipped, cinnamon-dusted

don’t skip the bacon, egg and salsa rossa panino. It’s telling of Italian cooking, in which the ingredients are the heroes. ●
ricotta, fresh lemon to squeeze on top, and an amazing, deeply flavourful honey. A baguette filled with seasonal frittata is a ripper morning kick-start; right now, expect mushrooms with rapa (a winter green) and taleggio. Brunch segues into pastas, classic pork and veal meatballs, roasted lemon chicken, and hearty salads – perhaps a wild rice and quinoa number tumbled with barberries and broccoli. The essence of Italian food is, of course, its simplicity, and here, ingredients are the heroes. It’s been worth the wait for King and Godfree, which is settling back into its high-profile corner like it’s always been here. Maybe, because it has. ●

If you’re anything like me and are considering hibernating for the rest of this winter, you might want to dust off your mum’s pressure cooker or consider investing in a brand new one. The humble pressure cooker is only a few hundred years old and despite perhaps a small trace of PTSD from the whistling steam of the pressure cooker in most of my childhood memories, in recent years it has made a comeback.
Since then, it has become one of the most-used bits of my kitchen kit and has revolutionised my weeknight menu – and it can do the same for you. Pressure cookers are designed to basically do all the work for you, saving you time, energy and money while always ensuring happy dinner guests (or in my case, children). It’s common for even the most experienced cooks to be intimidated by pressure cookers, but knowledge is power. These versatile machines can make everything from curries, to risotto and braised meat in under an hour.
Have you ever heard the saying, “it’s best to buy the worst house on the best street”? We’re going apply it to cooking food in a pressure cooker. Start with a good butcher. Instead
of buying the best cut of meat, buy a secondary cut like a cheek or shin (you’ll get all the great flavour of a premium piece of beef, but not with the exorbitant cost of a primary cut). Next is what you do with that cut.

from a master stock to the classic French technique of red wine and mushrooms. Red wine, chicken stock, bay leaves, thyme and pine mushroom are my personal concoction of choice. Pro tip: mushrooms are super important as they act as a filter and clean out the actual cooking liquor, ensuring we’re left with a beautiful sauce as an end result. I’m as short of time as anyone else, and traditionally these cuts of meat would take around six to nine hours to cook to achieve a tender result. Cue the pressure cooker. Speed isn’t the only advantage of pressure cookers; they also preserve nutrients and vitamins. By cooking foods for
shorter lengths of time, pressure cookers preserve the nutrients better. The extra high heat used in pressure cooking promotes caramelisation and browning on the food. The pressure cooking will open the pores of the meat and enable flavour to be fully absorbed, bringing out the depth and complex flavours of the meat. ental health in canines is as important as their physical health. Research confirms that dogs have the capacity to experience a range of emotions including sadness, happiness, anxiety and fear. Even jealousy has been observed in dogs, as well as anger and frustration. Life for a dog can be incredibly difficult in this world, and as a result, many dogs suffer from poor mental health. About 40 per cent of dogs are diagnosed with an anxiety disorder, and 10 per cent of dogs are currently treated for anxiety with medication, a University of Finland study found. In my career, anxiety is the most common cause of unwanted dog behaviour.

From chewing up the furniture, to howling in the backyard, escaping, showing aggression and even inappropriate elimination, unwanted dog behaviour is usually an expression of the dog’s mental state. But there are times in which your dog’s distress may be more subtle. Yawing in unfamiliar environments, becoming itchy without obvious cause, shaking their whole body in times of duress and even showing the white out of the corner of their eye are all discrete signals that your dog needs you to step up for their wellbeing. It is important to identify what may cause your pup to feel stressed out and any sign of distress should be acted on as an opportunity to keep your dog safe and calm. If you need to give your dog space, then move them away and allow them to relax. It is critical that owners do not force their dog to have experiences that are anxiety provoking. New situations can also be an opportunity to teach your dog that many experiences result in positive outcomes.
For example, if your dog is unsure of a new environment, allow them to explore at a distance and reward their optimistic and calm signals with high value food, praise and even play. When you pair a new experience with something your dog loves, they will learn to associate the two. This is what we call Pavlovian conditioning. It is a great tool for dog owners, who want to help their dogs overcome fears and phobias in life. Think about your dog’s mental health and look for the signs. Perhaps your dog is trying to tell you something. Now it’s your turn to respond. With any training, never push your dog’s limits. Always work within their comfort zone. I
t’s four weeks before the inevitable mad rush to get into shape and lose a few kilos, as that summer body urgency kicks in. Trust me, I’ve witnessed this firsthand with hundreds of clients for the past two decades. It’s happening. So with this in mind you have a choice. Here are my top five tips for things to do in the next 28 days to give yourself a springboard to keep yourself ahead. BECOME A MORNING PERSON \ As the sun comes up earlier and the days get warmer this adjustment will get easier.
Push yourself to get into a good morning routine now and it will be much, much easier to sustain once spring hits. You’ve heard the terms 5am club and 6am club – join them! Get up, get moving, start your day and I promise you’ll never look back. DRINK THREE LITRES OF WATER A DAY \ I know this seems like a lot and yes, while your body adapts you may be racing to the bathroom constantly, but your body will adapt fast and the benefits are huge. Dehydration often rears its head as hunger, so not only are you less likely to eat unnecessarily, you will enjoy better concentration and a more metabolically efficient body when you sip enough H2O. To make sure this happens, set an alarm on your phone four times a day with a drinking reminder until those good habits start forming.
