““I am Scott Bosman ” … and I’m a corporate pilot I was 14 when I saw an F-111 fighter bomber fly very low and very fast through Port Phillip Bay Heads. I looked up and thought, “I absolutely want to do that”. I liked the technicality of it and appreciated the training of the pilot. My first solo flight was at 16 with the Scouts at Moorabbin Airport in their two-seat Cessna. On the airstrip, the instructor stepped out and said I’d have to do one lap by myself, and then land. I did that and loved it. I was accepted into the air force after my second year of an aviation degree at Swinburne, and on my 21st birthday I graduated as a junior officer. I spent 15 years in the air force. I completed pilot training, did four months in the Middle East in the air operations centre, and fighter jet training in
formation with three other Hawks at a cruise speed of 600km/h. The most challenging run was during a night flight. We were so close to thunderstorms, veins of static electricity crisscrossed the canopy. I was also a pilot for the VIP squadron in Canberra, and flew politicians within Australia and to the South Pacific. I flew Denmark’s Princess Mary to Broken Hill; my last passenger was former Governor-General Quentin Bryce. I became a corporate pilot in 2014. First, for a wealthy individual in Western Australia, and for the past three years, for a company that flies out of Essendon Airport. I fly several times a month, and three to four times a year I pilot longer trips. In July, another captain and I flew the owner’s family to Europe for a month.

I love the responsibility of piloting a plane worth upwards of $US55 million ($81.3 million). I know I am handling a very expensive piece of equipment and ultimately, it’s down to me to get it right. We visit the simulator in Montreal annually, where the aircraft I fly is made. We endure situations like engine failure, electrical problems and smoke in the cockpit. We also have to undertake detailed medicals. Flying is not difficult. If it were, it would be problematic. Landing is still the most challenging. Low visibility, strong wind or a wet runway, mean you sometimes need to call on nearly all your skills. I am probably not a great passenger to travel with. I’ll be like, “What’s that noise? Why are they doing that?” ●

a team to raise an AFL footballer. Star Marcus Bontempelli gives thanks.
A
s a youngster, Brownlow Medal contender Marcus Bontempelli spent countless hours kicking the footy at his Eltham home, imagining an elite career; the dream felt so real, he'd even commentate as he played in the backyard. Bontempelli’s three sisters were more mad about horse show The Saddle Club than Sherrins, but there was a passion for footy elsewhere in the bloodline, via their cousin, St Kilda champion Nick Dal Santo. “I spent a lot of time outside as the girls were interested in whatever they were interested in, so I was always outside kicking the footy on my own,” Bontempelli, 23, says. “I would be in the backyard virtually as soon as I would get home from school. I'd throw my bag down and then be outside until dinner. “I would be kicking the footy or playing basketball just to keep myself amused – I never had control of the TV remote. “He [Nick] got drafted in 2001 and I was born in ’95, which meant I was about six or seven at that point. “Once Nick got drafted I took an even greater love and interest in the game, and followed him and looked up to him as a role model. “I think from that day forward I wanted to do what Nick was doing." Now one of the league’s supreme midfielders and an All Australian, Bontempelli says while his sisters were busy together, he would spend hours alone outside with the footy, commentating to himself and visualising what it would be like to win a premiership at the MCG.

Remarkably, just a few years later, that's exactly what Bontempelli did. He was instrumental in the Western Bulldogs winning the AFL grand final in 2016, when he was 20. That same year he polled 20 votes in the Brownlow (accompanied to the ceremony by his mother Geraldine). Bontempelli was last week voted the player of the year by AFL’s coaches (the first Bulldog to win the accolade since it started 16 years ago), which has confirmed him as a hot favourite for the game’s highest individual honour at this year’s Brownlow count on September 23. The Dogs’ premiership was extra special considering what the club had endured two years before, with Brendan McCartney resigning as senior coach and captain Ryan Griffen moving to Greater Western Sydney. It was a time of upheaval at the proud club. However, Bontempelli says he and his teammates embraced the change and what it felt like to be the underdog.

Looking across the ground Bontempelli recounted, with a smile, just how important the club was to him growing up, and the long nights of training. “I remember being out here after training until the lights virtually went off, that was my thing,” he says. “On a Thursday night they would put on a barbecue and we’d be out here after training trying to kick some bombs from the 50-metre mark.” Bontempelli says he was lucky to be in such a strong junior team, and puts a lot of his professional success down to his foundation with the Panthers. “I think one of the big reasons why I fell in love with the game as a kid was because of the footy club, and because of the people who ran it, and the friends I made during that time,” he says. “I never felt I was on my own trying to achieve the dream. I’m incredibly grateful to the club for creating such a positive environment.”

It was a pretty special time." The other place Bontempelli spent hours of his youth was at the Eltham Panthers Junior Footy Club, just down the road from his family home. On the eve of the AFL finals series, he visited the oval at Eltham Central Park for Domain Review.
His siblings Olivia, Alanna and Sienna may have left their brother to his own devices while nurturing that big dream, but they are all incredibly supportive of his career. Their parents Carlo and Geraldine are also always by his side. “I've got a really close family and they support me through everything,” he says. “I'm lucky my mum and dad come to a lot of the games, and they try to travel and are probably there for almost 90 per cent of my games. “I'm really lucky, and the girls
“It’s so great for girls out there who now have a pathway.” With his profile and superstar status, Bontempelli has attracted commercial interests outside of football; one of those roles is as a friend of Mercedes-Benz Melbourne Vans. “It’s a great car to drive around in,” he says of his Mercedes-Benz X-Class ute. “It’s incredibly versatile but it’s a big car too. Tracing a father’s footsteps LAST MONTH
A
s a child, Juliet Rieden always knew there was something different about her family, particularly her father, John. She knew he was smuggled out of Czechoslovakia as eight-year-old on the eve of the Second World War by his fearful parents but, like many men of his generation, he was reluctant to talk about his past. It wasn’t until her visit in 2016 to Prague’s Pinkas Synagogue that Rieden’s many childhood questions were answered, when she saw name after name of her father’s relatives listed as Holocaust victims on the synagogue’s walls. Family curiosity and a burning journalistic instinct kicked in, as she set off on an 18-month investigation. Rieden, the editor-at-large at the The Australian Women’s Weekly, travels across Eastern Europe and England to trace the fates of her relatives from the moment Hitler’s Nazis occupied Czechoslovakia. The full horror of the extermination of the Jews is brought home as Rieden recounts how her father’s family had their possessions confiscated and were then herded like cattle into crowded freight trains for one-way trips to concentration camps. This meticulously researched book produces more than a few twists and turns as Rieden scours the globe for any surviving relatives. She also develops a new understanding of her late dad; the “immense courage and resilience” of that eight-year-old separated from his parents. The Writing on the Wall gives the reader an insight onto the worst of human nature. It is also a story of hope, kindness and love. ●

Sausage rolls, but you won’t hit a snag

T
ucked underneath Bristol Temple Meads railway station in England is Hart’s Bakery. The whiff of freshly baked sourdough, flaky buttery croissants, delectable pasties and mouth-watering cakes is definitely worth missing your train for. I was told they had the best sausage rolls I’ll ever have and blimey they were. The pork and jalapeno sausage rolls were amazing but the vegetarian sausage rolls made with mushrooms, barley and rye blew me away. I thought it was clever and have created a recipe of my own inspired by the ones I had at Hart’s. I love the idea of using olives and pine nuts, which gives them a great texture. If you want to make them vegan, opt for a vegan puff pastry. If you feel extra adventurous, mix the spices up. Use some sumac or cayenne pepper and have a play on flavours. Only thing is ... I would double the recipe because they are that good. Freeze them for a rainy day. ● Instagram: @diana.chan.au
Ingredients (Makes 12) 100g pearl barley 1 brown onion, finely diced 2 celery sticks, diced 1 tbsp olive oil 500g button mushrooms, chopped 2 garlic cloves, peeled and minced (optional) 2 tbsp Dijon mustard 1 tbsp smoked paprika, extra for sprinkling ∏ tbsp dried thyme leaves 50g panko bread crumbs (or substitute with normal bread crumbs) 50g pine nuts 40g black pitted olives, chopped 20g fresh flat-leaf parsley, chopped Juice of half a lemon 1 sheet ready rolled puff pastry (depending on the brand, may need two sheets) Olive oil for brushing Salt and pepper to taste 1 egg beaten, for brushing Tomato chutney, for serving Method ■ Cook the pearl barley in plenty of water until tender (about 30 minutes), drain and leave to cool. ■ Fry the onion and celery in olive oil for 10 to 15 minutes until softened in a large pan. ■ Add in the chopped mushrooms and minced garlic. Fry for a few more minutes until

the mushrooms release their juices. Stir in the Dijon mustard, smoked paprika, thyme, salt and pepper and the cooked pearl barley. Cook on a medium to high heat for five to 10 minutes, or until all the liquid has evaporated. Allow to cool slightly, then place in a food processor and pulse until roughly blended, leaving some texture. Mix in the bread crumbs, pine nuts, chopped olives and parsley and lemon juice. Add more salt and pepper to taste. Leave in the fridge to chill. Divide the mix and roll into two long sausages the length of the puff pastry. Place the sausages in the freezer for an hour until solid, but not fully frozen. Preheat the oven to 200C. Line a large baking tray with baking parchment. Cut the sheet of puff pastry in half down the length. Roll each piece out to make them slightly wider so they will be wide enough to cover the sausage rolls with overlap. Roll up pastry to enclose the filling, finishing seam side down. Brush top of log with egg mixture. Cut into 12 pieces. Place pieces, seam side down on prepared tray, about 2cm apart. Repeat with remaining mince mixture. Brush the rolls with olive oil egg wash and sprinkle with paprika. Bake for 25-30 minutes or until golden. Eat when warm with some tomato chutney. ●

movement towards mindfulness is on the menu at a growing number of Victorian metro and regional hatted restaurants. For Oakridge Wines’ executive chef Matt Stone, seasonal produce is a way of life at his restaurant in the Yarra Valley. The emphasis is on farm-to-plate vegetables while most of the other ingredients are sourced within a two-hour drive of the winery. “We run a Yarra Valley cuisine and focus on products that come uniquely from our area. It totally makes sense to show what the region has to offer and people expect that more than ever these days,” Stone says. There’s no seafood on the menu at Oakridge given its distance from a coastline, but there are plenty of garden veggies and animals sourced from small farms including lamb, pigs and cows. It’s about staying in tune with the season in which food is harvested, and keeping that carbon footprint to a minimum.

In the heart of Melbourne, the Langham Hotel’s Melba Restaurant is showcasing local produce as the new luxury when it comes to dining in. With its Season’s Harvest menu, diners can indulge in the best of Melbourne produce – think heirloom tomatoes and roasted fennel, bok choy and broccolini and the best coastal seafood (Mornington Peninsula calamari, Mount Martha black mussels). Victorian high country pork belly and Milawa free-range chickens also find their way to the CBD. The Langham Melbourne’s director of food and beverage Anthony Ross says Season’s Harvest is ongoing and has expanded to in-room dining. A new concept, Premium Harvest, has also been launched at the restaurant, with the emphasis on Victorian produce and some added perks. “ Premium Harvest includes additional dishes served to the table as well as seating with specially designed crockery and local flowers,” Ross says. “We’ve added a herb garden and our new executive pastry chef, Elaine Young, is a berry

hicago-born and raised tattoo artist David Allen has a growing client list of women keen to cover their mastectomy scars, helping them take back some of the control that cancer took away from them in the first place. The former graphic designer became a tattoo artist at 27, and has collaborated with GHD in a new ink sleeve design to raise money for the National Breast Cancer Foundation. He only uses black ink to tattoo over mastectomy scars and says
women should wait at least a year after surgery before considering it and slightly longer for skin that’s had radiation treatment. “The first mastectomy tattoo I did was many years ago, it was so overwhelming I ended up taking a break,” says Allen who is in Australia to promote the new collaboration and conduct workshops. “The emotional weight was so heavy, I wanted to wrap my head around what I was doing a lot more. “Nowadays, I do one or two women

a month and it’s about sitting down and talking with these women … for a few hours. We get to know one another. They know my story and I get to know more about theirs.” Allen got his first tattoo at 18, much to his mother’s disapproval, and now has two full sleeves rolling down his arms filled with religious motifs including works by the Italian masters such as Gian Lorenzo Bernini and Antonio Canova. So why does he use only black ink on breast cancer survivors? “We don’t know what’s in the colour inks and I’d rather be safe,” he says. “Black ink also comes out easier with laser if anyone is considering having it removed.” For the new GHD campaign, Allen teams with mother-of-three cancer survivor Grace Lombardo. They were part of a short film made a few years ago called Grace – a documentary that plots how a soccer mum got the courage to get her first tattoo over
her double mastectomy scars, trusting only Allen for the journey. “When you get a tattoo of this nature there’s something really bonding in that moment,” says Lombardo of her experience. “Not only is the ink permanent, but there’s a connection I felt with David. He is like therapy in a way. I am usually slow to make choices, but after reading an article about him I was convinced I needed to do this.” The design on the straightener was inspired by a $400 flower arrangement he purchased while thinking of a print he’d like to use. There’s also a nod to the ink on his left hand in the artwork. “If I can help women feel a sense of strength through getting mastectomy tattoos then that’s great,” Allen says. “There’s a sense of freedom and letting go that comes from them and from within me as well.” ● ● ghdhair.com/au/pink

Of course, I love seeing the amazing physical changes that happen during this period, but it is so much more than that. It is also so much more than eight weeks. It is about proving to yourself just what you are capable of when you have discipline, consistency and a plan. You might not have weight to lose or you might already be on top of your health and nutrition game but this doesn’t mean you can’t get involved.
Your goal doesn’t have to be weight-oriented but it does have to be SMART (specific, measurable, achievable, realistic and timely).
SET A GOAL \ Kick sugar for eight weeks. Sign up for a fun run in two months’ time. Say no to booze. Walk every day. Ditch the soft drink. Cut back on late-night snacks. Try a new class every week. Read two books.

A
small house can be charming when you’re a loved-up couple happy to share a loo and a lounge room, but when you start a family, living in close quarters can be challenging. Moving is always an option, but so many of us fall in love with where we live. Perhaps we have the world’s best neighbours, the world’s best coffee down the street or a brilliantly short commute to work. “The cost of moving is kind of dead money,” says Sherbrooke Design and Construction director and owner Rob Drechsel. “You could put that money towards upgrading the home you live in.” Sherbrooke helps Melbourne families re-invent their homes, either by renovating their existing dwelling or knocking it down to build anew. “As the family dynamics change, kids grow up, quite often people need more space,” Drechsel says. “Sometimes clients have been in their home for 10 years and it’s just a little bit weathered and tired. They might think about moving but they’ve become entrenched where they are. They’ve got good neighbours, they live in a good suburb with good schools and they tend to want to stay put.” Sherbrooke’s clients include families who want to add an extra bedroom, a second living room or music room as the kids get older. With 30 years in the industry, Drechsel says he’s witnessed the shift from separate kitchens and dining rooms to more open-plan living, and from single living spaces to multiple zones that might include a rumpus room, study or parents’ retreat. “House sizes have become bigger, and as the values of property increase, people are doing larger extensions,” he says. Instead of modernising period homes, clients are now keen to retain the unique character of their dwelling and add a modern extension to the rear. For houses that are “well and truly past their use-by date”, Drechsel says a knock-down rebuild

Building a new way of learning
T
here were squeals of delight when year 7 and 8 students at Methodist Ladies’ College got their first proper look inside the school’s new learning centre. The purpose-built centre opened in term 3 and is the key learning space for more than 500 students. It includes 24 configurable learning spaces as well as state-of-the-art indoor and outdoor learning and recreational spaces. The modern and sustainably focused design is the first stage of MLC’s master plan for the Kew campus. The learning centre has been planned for several years with staff and students having significant input into the new building. Cathie Ireland, head of Junior Secondary School, says the centre is an ideal way to help year 7 and 8 students transition from primary school to secondary school. “Developmentally, the move to secondary school can be a difficult time. Girls are reaching adolescence and they will be making new friendships, which is fantastic but can be challenging. They’re moving to a new school with new teachers and new subjects and have a different structure to their day – so there are many changes,” says Ireland. “Having the year 7s and 8s in one place is helpful from a wellbeing perspective as the younger girls can learn from the year 8s about navigating that first year of secondary school.” The vision for the centre is to create flexible and interesting spaces that inspire student learning. Its design formed part of a University of Melbourne research project called Plans to Pedagogy, about the significant impacts of spaces on learning. The centre is flooded with natural light and has distinct classrooms that lead to shared learning spaces. “You can have a group of girls working in the classroom and another group working around a table in the shared space. We have outdoor learning spaces, too, with some classrooms leading on to a terrace or balcony area,” says Ireland. Within the classroom, students can stand or sit at a high table or desk, sit at a more traditional desk, or work at whiteboard tables that are multipurpose, doubling as both desks and whiteboards. There are

also breakout spaces. “We expect the girls to speak to their teachers about how and where they learn best,” says Ireland. “The classroom furniture is moveable so each lesson can be set up in a different configuration to enhance learning, and we are encouraging students and teachers to experiment. We set up a model classroom and trialled furniture to find the most comfortable designs and a great deal of thought has gone in to deciding what is in the classrooms and the building more generally.” The top floor of the learning centre features a green room, video-conferencing facility and a rooftop garden where girls can learn or relax at recess and lunchtime. “Soundfields with wireless connectivity have been
integrated throughout the whole building,” Ireland explains. “This enables a reduction of background noise to allow for more focused learning.” The centre embraces sustainability with solar panels, lights on motion sensors and a three-bin recycling system to reduce and recycle rubbish. Weeks after the opening of the building, students and teachers alike are thrilled with their new home. “I like walking around and seeing girls using the different spaces. For example, there is some tiered seating built under a stairwell and that’s become a popular spot for girls to socialise or to sit and read,” says Ireland. “The girls have certainly taken ownership of the space – and that was always the intention.” ● SARAH MARINOS

The Wurundjeri people have an excellent word for “modern” or “new”, according to Bunce’s Language of the Aborigines of the Colony of Victoria (1859): Tooronga!
