The cuisine is authentically based on Mexican domestic recipes and is inspired by Mexico’s caring and loving moms.
Copala is the name of a restaurant located in Dubai’s metropolitan area. The Mexicanos named it the finest Mexican restaurant in Dubai. It appears that the proprietors of this restaurant, who are native Mexicans, genuinely intended to convey the flavor and spice of their homeland to the Middle East.
Many of us believe that Mexico is famous for its burritos, nachos, and tortillas, but this is incorrect, according to Chef Adan Morales Naranjo, Head Chef and Co-owner of Copala. Burritos and other similar foods are a part of Mexican culture; however, they are not the highlight of ‘Real Mexican’ cuisine.
The fundamental distinction between Copala and other restos is that it is operated by genuine Mexicans, from the owner to the workers. All the foods they offer result from their enthusiasm and love for culture. For Chef Adan, introducing Copala to Dubai is more about helping a fellow Mexican who has lived in the emirate for many years and misses the homegrown cuisine.
Copala was created in mid-October 2021 by a dream team that lives by a passionate daring to be different while remaining faithful to its roots and history. It tells the genuine tale of Mexico, which is only available in Dubai. Copala was founded by three of the proudest Mexicans in Dubai, Chef Adan, Mercedes, and Alberto, who met in Dubai and finally became friends.
The interior design is flawless. That is how the location and ambiance of Copala Resto may be described. It is intended to feel like home and is highly Instagrammable. In terms of the attractiveness of the place, a blend of modern yet colorful and traditional Mexico is nicely done. The seats and tables are excellent because they show the authenticity and hues of Mexico.
This is a must-see for everyone interested in experiencing the vibes of Latin culture. The location’s music is played in Spanish, making it more vivid and sensory. If you want to fulfill all of your senses, go in the evening, about seven or eight o’clock.
Lights are perfect to create an effect on each food served.
Copala, unlike other restaurants, only provides a limit of 25 dishes on its menu. The rationale behind this is to make clients feel at ease. And on October 18, they will present a new range of cuisine inspired by the notion of Mexican home cooking. Because the food’s flavor and components are mainly from Mexico, the taste will always be exquisite.
Trying the best of the most excellent food, the appetizers are exceptionally delicious, especially the Molotes, a banana plantain croquet loaded with refried beans and housemade requeson and topped with the legendary mole sauce. Guacamole, a Mexican avocado Hass, fresh tomato, coriander, onion, lime, and serrano chile, eaten with crispy totopos, is unique. All are fresh and guaranteed to
have an excellent salt and pepper flavor combo.
The Tulancinguenas are loaded hard-shell tacos with turkey breast, yellow cheese, lettuce, cotija cheese, and salsa verde. This is one of their best starting tacos, wonderfully seasoned with just the right amount of meat within the tacos that people of all ages can appreciate. But keep in mind that it has a spicy flavor that is tolerable.
Let us review the main dish, served hot and has the nicest presentation. At first glance, it will appear to be just another meatball in town, but once you taste it, you will understand how Mexican mothers prepare exquisite dinners for their families. This main course is known as Albondigas Al Chipotle, a traditional Mexican mother dish including the distinctive meatball stew with chipotle sauce and served with spring rice and tortillas. By the way, Mexicans do not wash their rice, which adds taste.
And, of course, the postres (dessert), the Grandma’s flan, a handmade flan served with Cajeta or goal milk caramel and red fruits and berries, is a must-try. What’s great about this dish is that the sweetness is just enough to tickle your taste receptors. Unlike other flans in town, this one is sweet and loaded with caramel.

Alexandra McRobert, a Canadian national who has lived in the UAE since 2015, is the person to listen to when it comes to mental health topics. She is the founder of The Mindful Life Practice, an International Online Sober Yoga Community in Dubai.
Alexandra taught first grade in an international private school in Abu Dhabi. She became obsessed with parties, brunches, and ladies’ nights during that period. When she became sober in 2019, she pursued her dream of working full-time in yoga and mindfulness.
She founded Mindful Life Practice, an online business in Dubai that helps women attain sobriety via yoga, meditation, community, and counseling. The program runs online for 30-Day Sober Girls Yoga Challenges, in which women abstain from alcohol for 30 days. Aside from being an entrepreneur, she is also a yoga instructor who leads retreats worldwide.
This effort she launched will help every woman stay on track and maintain a healthy mind and body. In the face of so much work-related stress, Alexandra’s program empowers every woman in society.
Alexandra worked as a grade three teacher at a private school in Kuwait before starting her own online business. She enjoyed being a teacher and the content of lesson preparation and teaching subjects made her more responsible to handle properly the management inside the classroom.
“What I love about the work I do running my own business is that, in many ways, I am still a teacher - teaching yoga courses and sobriety programs to women worldwide. I get to take the best parts of my teaching job and continue doing them and let go of the aspects that were less suited for me,” Alexandra added.
She has been a yoga enthusiast since discovering it for the first time in 2010. When she was battling with her mental health, she loved how it soothed and quieted her thoughts.
She said, “I wanted to share that benefit with others, which is why I became a yoga teacher. In 2019 when I quit drinking, yoga was a huge tool and benefit to myself during that journey.”

When questioned about her life after work, she told Dubai Vibes Magazine that she had a unique existence because she works online most of the time, teaching yoga courses and holding meetings for people from all over the world. She enjoys the freedom and flexibility to travel and work from home and works unconventional hours.
“Since my work is so focused on helping and connecting with others, I like to prioritize taking care of myself in my downtime! I practice yoga, walk on the beach, go for spinning classes, and try out different spots for healthy food around the city,” Alexandra said.
According to Alexandra, one of the most difficult challenges she has faced is the freedom and flexibility of her work: developing a common framework and routine that works for her.
She went on to say that while she was a teacher, having a 9-5 job provided her with a steady framework. It took her a long time to re-establish healthy habits as an internet business.
Furthermore, the most challenging issue for her in 2019 was quitting drinking. Her life, she reasoned, focused around partying and that it wouldn’t be the same without it—that she would be less fun or dull.
“I discovered once I finally quit that my life is so much happier and healthier sober. With the clarity in being sober, I was able to see that I wasn’t truly doing what I wanted to with my life - and transform my entire life, creating a new career for myself,” she realized.
She added, “With all the money I saved on partying, I was able to put it towards building my business and bettering myself. If you are considering releasing habits that are holding you back, like consuming alcohol, my advice is to give it a try! My life improved so much once I got sober that I will never go back again.”
Finally, her ambition is to promote and normalize sobriety. Living a sober life may be enjoyable and meaningful in a culture that glorifies partying. She dreams that when she ultimately starts a family and has children, they will grow up in a society where being sober is calm and normal, and she hopes to contribute to that goal.

Cassie Destino, a 46-year-old American working at Fertility Doula and Founder of IVF Support UAE, has made the desire to have a child a reality in the UAE. Her purpose is to assist women in comprehending and preparing for parenting.
“After a lengthy and difficult journey with infertility, I found a new passion in helping other women navigate the path to parenthood,” she said.
Cassie grew up in the vast state of Los Angeles, California, in the United States. She graduated her masters from the London Film School in the United Kingdom. Her first love was filmed, and she worked in it for many years before her husband’s career took them to the United Arab Emirates.
Her training as a producer and the abilities required to establish a film school has proven appropriate for running a small, independent company as a doula and liaison to IVF facilities.
Although the professions are vastly diverse and far apart, passion brings them together and gives an excellent chance to make a difference, primarily when it benefits others.
Before forging her path in Dubai, she spent years working in the television industry in Los Angeles for a cable network. At the outset of her work, she was a personal assistant to a director.
“That was super fun because I got to see almost every aspect of bringing a film from conception to the big screen,” Cassie shared.
Aside from that, she spent two years assisting a friend in launching a soda firm and retail store in San Francisco. That was unusual, but it was a lot of fun, and she learned a lot about an industry she had no
knowledge of or prior experience with.
Having excellent work currently helps her adore herself more. She can potentially make a significant impact in the lives of the women she works with via her employment. She assisted them in creating something incredibly complex, terrifying, overwhelming, more understandable, and controllable.
“I often get feedback from my clients that they feel much better after speaking to me, which is incredibly satisfying. Helping someone to become a parent is one of the most rewarding things I can imagine doing,” she said.
Cassie says that one of the most challenging aspects of her job is having to continually compartmentalize her thoughts and feelings about what she does. Her
clients, by definition, come to her in a time of crisis and despair in their lives, and she is frequently called upon to relive her own experiences with infertility during her therapy. Her brain is filled with daily sad and unpleasant tales, and it might be tough to carry all that sadness.
Having lived in the UAE for eight years, Cassie has spent six years in Dubai. Having worked for pleasure in Dubai has allowed her to find a niche that she could fill and has allowed her to work for happiness.
She says, “I don’t think I would have had the same opportunities I have had here in the other cities I have lived in. I have met some extraordinary people here and made some lifelong friends. It’s a beautiful, cosmopolitan city, and I love being a part of it.”
When Dubai Vibes Magazine asked her which section of Dubai she liked most, she responded Jumeirah Beach Residence (JBR) was the greatest. She lived in JBR for several years while her children were newborns, which was their ideal environment. Friends surrounded them, and there was always something new to do, which always kept her interested.
Cassie loved being able to go out for a coffee or a meal, and having a nice view of the beach felt unique. She added, “We just loved living there and were sad to move when the kids got older, and we needed more space and closer to their school.”
Her life after work is casual since her job requires her to be on call at all times. But she may exercise, go to spin classes, accompany her children to their activities, or take a stroll around one of the local malls.
Finally, her family desires to live where they choose and on their terms. She wants to live in a thriving neighborhood where they may interact with others and visit friends and relatives frequently. She desired to live comfortably, entertain, attend a decent school, and have meaningful employment that paid the bills.

For Baymammet Sarybekov, commonly known as Bayma Bay, one of Dubai’s most popular content creators and social media influencers, his amusing and relevant videos on Instagram and TikTok have artistically brought delight to many expats in the UAE.
Bayma is from Turkmenistan, a wonderful nation with significant archaeological sites and stunning mountain landscapes. No wonder his personality suited Turkmens’ hospitable culture. He has always been a clever and intelligent person who entertains and delights others.
His quest began 14 years ago in Krasnovodsk, his hometown. At the time, Bayma was noticed by Darkroom Posse, a group of innovative rappers and dancers. He was notable at the time for his diversified free-style dancing to HipHop tunes by members of this group and foreign performers.
Bayma is such a fascinating and ambitious man that he never let opportunities pass him by without taking advantage of them. Back in 2008, he left his nation for the first time for the sake of his education, and he quickly lit the entire globe on fire.

Emma studied supply chain management in London following 9/11. All firms froze recruiting, making it hard to find work. Eventually, she became an estate agent, where she began her profession.
She spends most of her time marketing real estate software in the United Kingdom. She was a strong performer and sometimes the only girl on the squad. This experience inspired her to become concerned about gender parity.
“A patriarchy and men’s network dominated the real estate market in the UK. I don’t think things have changed that much,” she said.
She also stated that she has been bullied, dismissed, and even tossed out of a client’s office for being “just a dumb lady!” ‘What do women understand about real estate?’
Emma has made it my life’s job to assist women’s development as leaders with fair and equal opportunities due to her experiences. She never wanted any other girl to go through what she had, especially the next generation.
Her career highlight, she says, was becoming
the Founder of her company WILD. She founded WILD from the ground up, having previously built a smaller women’s network for a vast multinational organization.
“I had the knowledge and expertise to do something large-scale. I wanted to create a community of likeminded women who could come together and share knowledge and expertise whilst having fun along the way,” Emma added.
Her organization is a feminist movement dedicated to gender equality. It aims to disrupt the status quo and assist women in various ways. She launched WILD in 2018 and is preparing to launch WILD Riyad in November and WILD Qatar in the first quarter of 2023. It is a self-funded initiative that she is delighted to have started.
Providing support to women who want to transform is something Emma enjoys. In her work, she often works with introverted women who lack confidence and come to her for help in overcoming their fears and becoming strong leaders.
She said, “At the end of the coaching, I have had women say to me that I have changed their life. This makes my heart full, and I remind them that they changed their life; I merely gave them the tools to do so.”
Regarding challenges, she has found it difficult to shift from the corporate world to becoming an entrepreneur. It’s not easy, but she’s learning a lot.
“I have had many setbacks during my career. Each time I have learned a lot about myself. I always say
that there is beauty in ‘rock bottom.’ I have lost my job, had a breakdown, a near-fatal car accident, and overcome some severe chronic illnesses,” she shared.
She feels that everyone should have a coach. It assisted her in being able to develop WILD at an exponential rate.
When asked about her ultimate goal, she told Dubai Vibes Magazine that she wants to introduce WILD to nine additional countries over the next five years. Diving into the unknown is a daunting endeavor. She is taking a leap of faith and mustering enormous bravery.

From the University of East London, he earned a Master of Science degree in Positive Psychology and Coaching Psychology. “At my current work at Swiss International Scientific
School, I develop wellbeing workshops to help students increase levels of health and happiness. I also work with individual students to help them increase motivation, engagement, and resilience through coaching and mentoring,” Mark said.
There is no higher feeling for him than having students realize how talented and unique they are and then seeing them go out and pursue their aspirations.
Working with people all day from Monday to Friday, whether they be kids, parents, or teachers, was one of Mark’s daily challenges in his career. But that is what he enjoys most about his job, and he must also be aware of his energy levels. To fight this, he tries to get enough sleep each night and switches off entirely on weekends. This type of mantra would undoubtedly help to calm his thoughts after a long week of work.
He would love to have a family someday when asked about his plans. He and his girlfriend would see themselves in Dubai for at least the next five years, and who knows how much longer after that. Other dreams include buying a small cottage in Ireland, completely renovating it, and living in France for a year.
“If I could push for one more thing in the world, it would be that we equip our young people with larger skillset during their time in school. I would love to see educational organizations place a greater emphasis on students’ wellbeing to counter the rising cases of anxiety we are witnessing among teenagers in today’s world,” Mark shared.

That was an early morning flight; it came in at around 6:20 am, and no soon as I arrived, I got a call for a job opening as an assistant engineer for the Ministry of Defense, and I had to attend the interview at 10 am. I agreed to go for the interview and passed, and I was asked to come on the 12th for the second interview. I was selected and asked to start work on 15th December 1989. Everything happened so suddenly, after a couple of months working, I was asked to attend to a technical issue at the Palace of His Highness Sheikh Mohammed bin Obaid Thani Al Maktoum, who was at that time the Deputy Minister of Defense,” Dunstan shared.
After Dunstan resolved the issue, His Highness requested that he be transferred to work directly for him. Since then, he has been involved in several multi-million dollar projects while demonstrating his capability. He has been the Managing Director for His Highness Private Office since 2005, overseeing all real estate properties, engineering, and all other matters.
Although luckily enough, in his job, he also encountered problems, and the challenges Dustan faced throughout his life made him stronger and bolder. He always trusts God, and his faith is more vital than swords.
After God, family is the essential aspect of existence. Despite his demanding and hectic schedule, he makes every effort to spend time with his family.
When questioned about his problems and how he overcame them, he stated that being an Asian in a position like his was not easy. He had to deal with many issues, and his faith was the only thing that kept him going.
In his words, “I always ask our Lord Jesus to take control of whatever my situation am in, and He has never let me down; therefore, I would say that He is the answer to all our success if we let Him in with real Faith, He will bring the answer to you, sometimes it takes a little longer, but it is not because of GOD but because of your faith, and my boss who is always there when I need him..”
As a result of Dunstan’s faith, he has reached this point. His prayers and hard work were answered through his dedication, patience, and passion for what he does.
His ultimate goal is to provide a good education for his children, as this is the only inheritance that cannot be taken away from them. He hopes to teach his children to be compassionate to others and help others whenever possible while making friends rather than enemies wherever they go.
One of his ambitions is to retire and provide a magnificent house for his wife and children in the Philippines or Sri Lanka, as well as a secure future.
