talking points MAYOR RIDGEWAY DECLARES ‘EAGLE IS HOME’ By Pat Minkiewicz

Eagle Mayor Stan Ridgeway recently presented an upbeat State of the City Address and acknowledged the ongoing work of City Hall’s professional staff and City Council to develop Eagle as HOME: Healthy, Optimistic, Multi-Faceted Growth, and Economically Viable. Optimism is in high gear, as residents have noticed more housing subdivisions of single family homes are creeping westward at or near Floating Feather Road as far as Lanewood Road. Multi-faceted growth throughout the City is coming in the form of higher density housing choices and new commercial development. The large indoor Eagle Tennis Club in east Eagle at Hwy 44 seems to have inspired such development coming soon to that area. Case in point is higher density residential “village” housing whose residents will enjoy convenient access to Hwy 44 as well as to downtown Eagle. Village structures commonly are 2-story, placed close together, and feature no individual yards. Not to be outdone along Hwy 44, west Eagle will offer several approved apartment buildings providing rental accommodations on the south side of Hwy 44 near Linder Road. More apartment developments are waiting in the wings. For those aged 55+, a new full service senior independent living community of 146 units will be located adjacent to the southern

boundary of Merrill Park south of Hwy 44. Great access to Boise River and Greenbelt, too. Top that off with the existence of Assisted Living facilities in Eagle, and local housing soon will offer something for all ages. The mix of housing opportunities means future residents will have choices, and current residents may consider remaining in Eagle if downsizing becomes a need. Highly anticipated this year is construction of the approved extension of Plaza Drive (by Albertson’s) from 2nd Street all the way east to Iron Eagle Drive. The Extension will allow direct access to the Idaho Athletic Club, the Firehouse, and to all the existing commercial areas off Iron Eagle Drive and east State Street and beyond. The improved traffic flow will encourage new commercial development east of 2nd Street, and provide an alternate route for drivers. Good news: The traditional area for rodeo shows will remain. Of course, all new development means Eagle’s population will increase, as will traffic along Hwy 44, Eagle Road, and State Street downtown. Linder Road on the west will become an important alternate access to Chinden Blvd., as will the existing improved extension of Hwy 16 heading south at Hwy 44. And so it goes.

SPRING BRINGS PATIO DINING story by Pamela Kleibrink Thompson In all parts of the world, including Eagle, Idaho, sharing a meal with family and friends is an act of love and connection. Now with warmer weather, Eagle residents can enjoy the great outdoors at several restaurants.

bardenay

14 | www.eaglemagazine.com

Gaze on the Greenbelt or shimmering pond while you dine among flowering cascades of color on Bardenay’s spacious patio. The first restaurant in the United States to include an inrestaurant distillery in 2000, Bardenay’s cocktails are handcrafted with their own distilled vodka, rum, gin, and freshly squeezed citrus juices. Bardenay is destination dining for those who crave daily specials such as the spicy jalapeno cheddar soup on Tuesdays. Sip a Ginger Rum Cocktail made with Bardenay Ginger Spiced Rum, a dash of vanilla, triple sec, and fresh-pressed sweet and sour. House specialties include the Hagerman trout fillet, grilled with capers in a balsamic cream sauce, served with garlic mashed potatoes and seasonal vegetable or the charbroiled Atlantic salmon sandwich with mango-orange barbeque glaze and caramelized yellow onion on toasted artisan bread, accompanied with a sal-

ad. Spend a leisurely afternoon or summer evening on Bardenay’s wraparound patio, watching ducks glide by on the inlet while enjoying innovative northwestern cuisine created with organic local ingredients. Happy Hour menu 4 – 6pm every day of the week.

Chateau des Fleurs: Le Coq D’Or Are you craving traditional dishes from the Mediterranean, France, Italy, and beyond? At Le Coq d’Or these cuisines are brought to life by combining Northwestern meats with specialty imported ingredients and locally grown vegetables. “We have our own affiliate gardens where we’re growing herbs, vegetables, and fruit to reduce our carbon footprint and to celebrate the beauty of Idaho agriculture,” notes Roshan RoghaniIshaq, Vice President of Camille Beckman. A mansard roof and marble floors adorn the Chateau des Fleurs, home to Le Coq d’Or. Clay paints were used to achieve the rich, burgundy color adorning the walls. Authentic Hungarian Impressionists complement the artfully plated cuisine at the farm-to-table Provencal style restaurant.

A brick patio ringed by fleur-de-lis patterned wrought iron fencing reminiscent of a French chateau in the Loire is an inviting alternative to the elegant chandelier lit dining room. Enjoy a view of the landscaped grounds as you dine on the superlative Greek salad with cucumbers, tomatoes, feta cheese, red onions, and Kalamata olives tossed in the house dressing ($8 small, $14 large). Linger over the duck confit from executive chef David Williams, served with honey truffle sauce, roasted vegetables, and potatoes au gratin. The escargot maison appetizer ($16), will transport you back to northern France. Drenched in garlic butter flecked with parsley and thyme, the tender snails nestled in their nautilus-shaped

shells are a French favorite. Celebrate with carrot cake, made from carrots fresh from the gardens at Camille Beckman. Open for Lunch 11:30 am – 2 pm on Fridays and Saturdays, dinner Tuesday through Saturday from 5 - 9 pm. Bistro and Happy Hour Tuesday through Thursday from 4 - 6 pm.

on a roll deli Boise has it’s very own New York City deli where you can enjoy a premium all-beef quarter pound hot dog, satisfying pastrami, or corned beef sandwich! When Geri and Tony Delia moved to Idaho, they had planned to retire, but they now own On a Roll Deli, which opened March 3, 2016. “We decided to open the deli because we discovered that even though we are getting older, we were still young enough that we needed something to do to keep us interested and busy. Eagle didn’t have anything like this and we felt it would be welcomed and a good fit,” says Geri. “We initially planned on being open only Monday through Friday to service the downtown Eagle working force and give them an additional option to all the other great food establishments Eagle has to offer. However, after the first days of operating, our Facebook page blew up with requests from locals to be open on the weekend and later than 2:00 pm, so we listened and changed our hours.” Starting May 1st, On a Roll Deli will have summer hours and will be open Tuesday through Saturday from 10:00 am to 6:00 pm. Breakfast is available on Saturdays during the summer until 2 pm. On a Roll Deli is on a roll and has applied for a beer and wine license. Geri is proud to report that On a Roll Deli

GRIT If you missed Mardi Gras in New Orleans, you can celebrate at Grit with a shrimp po’ boy (Cajun shrimp, shredded lettuce, tomato, and remoulade) and complete your meal with a beignet made with powdered sugar, lemon curd, and chocolate sauce. Grit offers traditional American cuisine with a unique Gulf Coast twist. The menu changes with the seasons as Grit sources many of its fresh ingredients from local farmers and producers. If you crave comfort food, try one of the chef’s specialties such as mac and cheese made with cheddar, smoked gouda, and Velveeta or try their version of the Cobb salad. Grit was nominated for best burger in the “Best of Treasure Valley” contest sponsored by the Idaho Statesman. Sample some of

was named the #1 New Restaurant Critic’s choice by Idaho Statesman in 2016 and has been featured in Scene several times. “Tony and I love the huge sandwiches at Katz Deli in New York City. They are famous for their pastrami, corned beef, brisket, and smoked turkey,” says Geri. “We’ve tried to put something on our menu that would appeal to everyone’s palate: we have quarter pounder all-beef hot dogs, 6 ounce hamburgers, fresh-cut french fries, hand-dipped onion rings, and not to forget our vegetarian friends we have a grilled veggie sandwich, black bean burger, and salads.” They also offer schnitzel and a hamburger with hand-ground beef. On a Roll doesn’t own a freezer. Everything is made fresh. Soups and salads are made from scratch daily. They use real brisket to make their pastrami, corned beef, and smoked brisket. The most popular items are the pastrami, brisket, and corned beef - a taste of New York in downtown Eagle! Check out the daily specials on their Facebook page each morning. AHI SUSHI Ahi Sushi is so much more than sushi! Starters include miso soup, yakitori (Japanese grilled chicken skewers), and baked mussels (a mixture of green lipped mussels, scallops, and crab topped with dynamite sauce, baked until golden brown and drizzled with eel sauce). Nigiri sushi, made of a small clump of rice with a piece of fish on top, is available, as are hand rolls and Ahi’s favorites with exotic names like Volcano, A-Bomb, and Firecracker. Welcome spring on a small patio, ringed by brick, facing State Street, with the Sunshine roll (crab and cucumber, topped with salmon and avocado drizzled with spicy garlic ponzu sauce and masago). Customize your meal with a bento box, which includes rice, salad, and miso soup. Selections include teriyaki chicken, kalua pork, teriyaki salmon, and katsu chicken. Side options include Cali rolls, spicy tuna rolls, egg

rolls, gyoza, or tempura vegetables. Tawnie Makua, co-owner of Ahi Sushi Bar with her husband Randy, reports that the two most popular items on the menu are the “A-bomb and the Damn Roll. Why? Because both rolls are topped off with our fresh made in-house basil habanero sauce. People go crazy for it! I personally love the stuffed ahi. It is a refreshing dish and I love the fresh tuna and spicy scallop combination.”

Happy Hour at Ahi Sushi Bar is 4:30 - 5:30 pm Monday through Friday with specials on handrolls and nigri as well as sake, wine, and beer. Lunch is served Monday through Friday 11:30 am - 2:30 pm. Dinner is Monday through Thursday 4:30 - 9:00 pm and Fridays and Saturdays until 9:30 p.m.

“In the summer months we get a lot of unique offerings like fresh uni, oysters, tuna, yellowfin, yellowtail, and jumbo scallops,” observes Makua. “We have a nice size patio that over the years has become more popular with our guests, possibly due to the growth of our now mature shade trees. It’s really mellow and inviting and an easy bike ride from anywhere in Eagle.” Ahi Sushi will celebrate their 10th anniversary in Eagle this August thanks to the support from General Manager Daniel Malic and the community.

Bella Aquila’s homemade cannoli are comprised of a cannoli shell dipped in chocolate and hazelnut and filled with ricotta, blackberry liqueur, and chocolate-infused mascarpone cream. Other desserts offered are tiramisu (espresso-mascarpone custard between layers of rum-soaked sponge cake and chocolate), bread budding (apple and raising bread pudding with a bourbon butter sauce), Grand Marnier cheesecake (fresh baked with candied orange slice and graham cracker

crust), and pecan turtle torte (pecan torte topped with chocolate ganache and chantilly cream). Bella Aquila’s outstanding wine selection has been recognized by Wine Spectator magazine. Happy hour is Monday through Saturday 4 – 6 pm and Sunday brunch. “We are incorporating more ‘in season’ and local products on our menu and nightly specials,” states Nicole Grasska, Assistant General Manager. “We are also introducing a warm mixed berry cobbler served with our house made Madagascar vanilla bean gelato and all of our desserts are made in-house. We also have live music on Thursday nights and Sunday mornings for brunch which will be on the patio, weather permitting.”

RICE A contemporary Asian restaurant, owned by Fon Tavijaroen, Rice has created a delectable menu of inspired dishes by fusing flavors from the Far East. Gorge yourself on gorgeous sushi prepared by Rice’s sushi chef, Samike (“Mike”) Jumpathong, who worked for nearly 5 years at high-end sushi and Japanese restaurants in Bangkok, Thailand, one of the world’s food centers. Sushi is not the only exquisite item offered at Rice. Nominated Best Asian Restaurant in the Best of Treasure Valley by the Idaho Statesman, Rice’s offerings include Korean bulgogi beef, Indian chicken makhani, as well as Chinese kung pao. The menu reflects a wide selection including Vietnamese Pho Noodles--sliced beef and Asian meat balls served on top of steamed soft rice noodle in beef broth, cilantro, onions, and bean sprouts; Thai Basil fried rice with stir-fried bell peppers, onions, zucchini, mushrooms, bamboo shoots, and basil served with white jasmine or brown rice with choices including shrimp, chicken, tofu, or mixed vegetables; and Tokyo Teriyaki: a choice of meat served with teriyaki sauce on white jasmine or brown rice, accompanied with cabbage and tomato. Head chef Lek Kongjaruentrakul has worked in many high-end restaurants in Phuket, Thailand. His touch of creativity and professionalism infuses the flavorful food at Rice. Rice won the Best of Boise from Boise weekly for the Best Martini,

the Lemon Basil martini, 4 years in a row, 2013-2016. The key is Rice uses fresh juice and real fruit to mix their cocktails. Boise Weekly readers voted bar manager Major Ludwig best bartender twice (2013 and 2014). He won second place in 2015 and 2016 for his artful innovations.

Plein Air in

Plain Sight

It’s almost summer and color is blooming everywhere. Mother Nature will inspire more than 50 artists who will paint, draw, and sketch the natural landscape at the 3rd Annual Eagle Plein Air Festival & Competition. Historic Eagle, Idaho will be host to both budding artists as well as those with more experience from June 8 through June 10. “Plein air painting was made popular by French impressionists like Monet,” shares Meg Glasgow, owner of the Gallery at Finer Frames and founder of the Eagle Plein Air Festival. “The term ‘en plein air’ actually means to paint outdoors. This unique art form is a challenge for the artists due to ever-changing conditions. Light moves with the clouds. Shadows constantly change. There is a special talent to it.” Glasgow explains the origins of the Eagle Plein Air Festival & Competition: “Our purpose for the Festival is to provide the Treasure Valley an arts experience like no other. This is the only event of its kind in southern Idaho. Our partnerships with artists, local businesses, and performing arts groups attract many out-ofarea artists and festival goers to see Eagle’s unique culture.” When the festival began in 2014 there were 30 artists. Glasgow expects to have twice as many this year. The 2017 Eagle Plein Air Festival & Competition is a festival, exhibition, and competition open to professional and non-professional artists of all skill levels. Attendees can watch a demonstration, take a painting lesson, and speak with the artists. At the end of the Festival, the public can view and purchase these unique visions of Eagle at the Festival Exhibition and painters: rolling foothills, barns, river front, and more. To kick off the festivities, 3 Horse Ranch Winery will be the site of the Art in the Vines event on Thursday June 8 from 6 pm-9 pm. Enjoy something new this year, an outdoor jazz concert by the Van Paepeghem Sextet in the beautiful vineyards at 3 Horse Ranch. Enjoy wine tasting and music while watching dozens of painters in the vineyards as they compete in a 2 hour quick draw event. Pioneering winegrowers Martha and Gary Cunningham began planting Rhone and Bordeaux vines of noble origin on the remote hillsides of the Sawtooth Range north of Boise, Idaho in the 1990s. The vast, historic ranch is now home to 3 Horse Ranch Vineyards, Idaho’s largest family-owned winery. Experience the remarkable vineyards and wines from America’s newest and most fascinating winegrowing frontier, the Eagle Foothills District of the Snake River Valley Appellation in Eagle, Idaho. Purchase a tasty treat from Kanak Attack Catering. Beer, wine, and water will also be available for purchase. A portion of art and wine sales will benefit the

Idaho Jazz Society scholarship program. Go early, the tasting room is open from noon - 6 pm. The Quick Draw painting event begins at 6:30 pm, and the concert starts at 7 pm. Some seating under the shade tent is available. Feel free to bring your own blanket and chairs. Please no outside food or beverages. $25/ person includes the concert, wine tasting, and a festival souvenir wine glass. The 545-acre Eagle Island State Park, a mile west of downtown Eagle, will be the location for Friday’s Paint Out. Bordered by the north and south channels of the Boise River, the park features a popular swimming beach, grassy area and more than five miles of trails surrounded by abandoned outbuildings perfect for capturing on canvas. On Friday evening artists will paint by street lamps and the light of the full June moon during the Nocturnal Paint Out. On Saturday, June 10 watch for artists in downtown Eagle and at the Eagle Saturday Market from 8 am-2 pm at the State Street Paint Out. All along State Street, artists will be painting out in the open air, “en plein air.” In downtown Eagle from 3 pm-5 pm artists will participate in the quick draw competition. Have fun watching the competition painters from start to finish in four square blocks around Heritage Park. Follow the paintings across the street to the gallery where the art will be auctioned off at 5:30pm. A portion of the proceeds will benefit Treasure Valley Artists’ Alliance. The Festival Awards Show and Sale on Saturday from 5 pm-8 pm, at The Gallery at Finer Frames, is sure to be festive. Artists from the Plein Air Painters of Idaho will be painting live in the gallery and answering questions from 4 pm - 6 pm. Celebrate the work and meet the artists, enjoy refreshments, and purchase your own original painting. Vote for your favorite paintings, with “Audience Choice” winners in the categories of Best Oil, Best Water Media, and Best Dry Media. Outstanding paintings in best oil, best

Top off your weekend with a visit to the Idaho Botanical Garden, the picturesque location for a special invitational paint out during the popular Savor Idaho event hosted by the Idaho Wine Commission, on Sunday, June 11 from 9 am - 5 pm. Artwork will be available for purchase at the Finer Frames booth during the event from 2 pm – 5 pm. A portion of art sales will benefit the Idaho Wine Education Scholarship Fund. fter a long winter, the incredible beauty of spring has a way of stimulating our senses and propelling us into the garden. However, with so many gardening possibilities in our sunny climate (USDA plant hardiness, zone 6), it is easy to go from motivated to overwhelmed. Instead, just keep calm and plant something! Whether you are creating your first garden or expanding your growing talents, the best way to start is to prioritize your plans. This might sound difficult when thinking of the entire outdoor space but here are some suggestions that can help. First, grow what you love! Local nurseries are stocked this time of year and the nighttime temps are warm enough for tender or even tropical plants, so you will have a great selection to choose from. However, don’t let the grand mass of plants available bamboozle you into buying more than you can handle. This brings us to the second tip, start small you can always add more. Third, be realistic about the time you have available to care for your garden. Plants, whether edibles or ornamentals, do take a little time to maintain, so keeping the garden simple will make sure it doesn’t go from enjoyment to stress. Want more ideas to channel your garden fever? Seneca Hull, President of Franz Witte, speaks to us about new trends in gardening that are ideal for beginning gardeners. “More and more people are decorating their outdoor spaces, creating lovely, restful spots, be it on a patio, porch, entry, or within the front, side, or back yard,” Hull said. “Container gardening | www.eaglemagazine.com 22really has increased due to this trend and the best selection of pottery in

Story by Andrea Niederer Photos by Andrea Niederer & Madeline George Nursery

different colors, shapes, and sizes can be found now. Planting a container is quick and easy and definitely a great way to add something delightful to any area of your home. This year, we are carrying pots that are made to “snap on” a rail or fence, providing yet another way people can add plant beauty to their living space.” For folks just giving gardening a try, raised beds are a great option,” says Kecia Carlson of Madeline George Design Nursery. “Soil issues are less challenging since you are starting with prepared and well draining soils and you can try your hand at everything from annuals, edibles, herbs, perennials, dwarf flowering shrubs, and even succulents in this form of gardening. Watering is important in any method of growing and in our climate, watering needs change due to our range of temperatures. Get a bit of coaching from a local nursery to set you on the right path and enjoy the experience of growing something beautiful! Indeed, container gardening is a great starting place! There are lots of plants suitable for containers and no hard rules when it comes to design. Depending on preferences, you can create something based purely on luscious color or texture, or perhaps instead, a pot full of edibles. You really can’t beat an heirloom tomato salad dressed with fresh herbs, eaten the same day the goodies are picked! Or, mixed veggies, herbs, and flowers create a multi-functional container! Kathy Ellensohn, owner of Old Valley Farms agrees, “Gardening should be about fun. If something strikes your fancy, give it a go! We at Old Valley are very good counselors to get you off to the right start.” Ellensohn points to another growing trend and that has more emphasis being placed on the attractiveness of a plant’s foliage. A beautiful leaf pattern or unexpected color increases the plant’s appeal throughout the year, even when it is out of bloom. New plant introductions are being bred to offer more interesting foliage attributes, such as variegated leaves and unusual colors, moving beyond that of green. “Selecting a spring or summer flowering shrub with an exceptional leaf that changes color in fall is a great way to appease your current mood and have lasting beauty the rest of the season,” Ellensohn said. “Many new shrub varieties have been bred to stay compact and do not require as much pruning as older varieties. These selections can be used in small garden spaces and also grow well in containers, for a season or two, and can then be moved to the permanent landscape.”

So go ahead indulge those garden aspirations by digging in and planting something special that can be enjoyed the rest of the season or for years to come. When finished, be sure to spend a few mindful moments each day enjoying the fruits of your labor. Getting a daily dose of vitamin D is not only good for your health but also good for the health of the garden, for observing changes early on is the best way to head off any insect or watering issues before they impact your plants.

Delivering Love, Laughter, and Lasting Mementos Treasure Valley Art Parties Cultivates Creativity and Partners With Soda Stop

T

he first things you’re likely to notice about Andy Morris are her striking auburn hair and bright smile; she’s got colorful tattoos on her forearms, wears little to no makeup, and is given to laughter. And while she may be all of about five-foot-three, this wife, art teacher, and mom of two fills up a room when she gets to talking about her life’s passion. She moved to the Boise area last fall with the dream of growing roots, establishing community, and helping others cultivate their creativity. Just this year, she turned her dream into a reality with her brand new startup: Treasure Valley Art Parties. Her vision was to create a business focused on bringing people together in a comfortable setting to do something unique and fun. The goal of the evening is for each guest to tap into their own unique creativity while enjoying the company of friends. While guided through the painting step-by-step, with supplies provided by Andy, guests are encouraged to exercise as much creative freedom as they’d like, from the colors on their palette, to the design on their canvas.

a creative and symbolic way of reinforcing the idea of two becoming one, and it was just really special to be a part of their evening.” Andy keeps a collection of pieces to use as options for paint parties, and allows the guests to peruse her work ahead of time to select which piece (or pieces) they like best. “I’m always playing with new ideas, and I’m also more than happy to design new artwork if a hostess has something specific in mind.” Which she did again several weeks ago for a church group event. The theme of the evening was women growing together, and Andy fashioned silhouettes of three willowy women, arms outstretched to the heavens, which entwine like tree branches. “I love sharing my passion for creativity with others, and what I want more than anything is for people to be together, laugh, and love what they take home.”

The venue can be your home, a coffee shop, or even a gazebo at a neighborhood park. Andy has collaborated with local businesses to introduce public painting events, and currently has ties with Soda Stop in Meridian should a group decide they’d like to dine out while they paint. Andy’s largest event thus far was an art party at Still Water Hollow, a popular location in Nampa for weddings and receptions. Twenty-two couples who had a special connection to the lovely venue came out and created both artwork and memories. Andy designed a custom landscape of Still Water Hollow, which featured an iconic bridge arching over a pond toward a steepled chapel. The scene was split between two canvases that together formed a complete picture. “It was

ow does a person build a business and enrich a community at the same time? Ask Zach Mason, owner of H20 Idaho. He says, “I took my passion for rafting and turned it into a company.” And, as far as the community, Zach chose Riggins, Idaho. To that end, he set up shop along the Salmon River and began to create a “family-like” operation that includes his guides, his clients, and his community. He wants the Treasure Valley to know there are “more rivers than just the Payette” and they are all different. H20 employs seven full-time guides that are certified in CPR and First Aid, and Leave No Trace. Some have certificates in Wilderness First Aid and EMT courses. “I have the best guides on the river. We are a big family ourselves,” Zach says. “We pride ourselves on customer service.” H20 trips include half-day to multi-day, whitewater to fishing, or they will create just about anything you can imagine. You may want to start your day with meditation and yoga in the morning, and again, under the stars at night, with a raft trip sandwiched in the middle. Or, maybe a corporate team-building adventure suits your needs? How about a high school reunion? A birthday celebration? An anniversary? H20 also specializes in creative culinary skills to complement your adventure with steaks and seafood as regular fare. In fact, they won second place in the Dutch Oven Cook-Off in Riggins last year! When asked about his favorite trips, Zach describes a half-day trip that consisted of a group of adults with special needs and

28 | www.eaglemagazine.com

remembers their faces lit up as they experienced the outdoors in a new way. His favorite multi-day trip involved a group of teenagers. He recalls them transforming from being “the top of a head and a forehead” to fully animated, interacting faces. With a degree in Parks and Recreation - Outdoor Recreational Leadership, Zach enjoys just watching his groups “mesh.” He also dedicates himself to his career as a full-time firefighter and paramedic in Meridian. Zach’s personal passions include fishing and skiing, but his love for family seems to drive his vision. Zach and his wife Jessica have two children. He says, “I wanted to have a good rafting company so I can give it to them.” Zach’s enthusiasm for rafting is unmistakable. He elaborates on his vision for growth by saying, “The big thing is we are working together with other outfitters.” He describes the “old school mentality” as “this is a pie and everybody gets a piece,” but today he says, it’s really “a sheet cake.” There are plenty of rivers to explore. He beckons, “Come up to Riggins and go rafting.” Zach sums up the river experience by quoting the Greek philosopher, Heraclitus. “No man ever steps in the same river twice, for it’s not the same river and he’s not the same man.”

Parkour is Alive and Well in Boise

“Movement is Life. This is How We Choose to Live.”

T

he MYTH Parkour Gym is opening as the first dedicated Parkour training space in Idaho. Owners Nicholas Domeny and Justin Daniel are creating a community where people of all ages and abilities can learn the art of movement. Parkour is one of the fastest growing sports in the world and you may have seen it in action movies, television commercials, or at your local parks and playgrounds. Parkour is the activity or sport to move freely and rapidly through an area, typically an urban environment, by negotiating obstacles using the body’s ability to run, jump, climb, crawl, swing, and more. To be able to do this efficiently, the practice focuses on developing agility, coordination, balance, spatial awareness, practical strength and endurance, precision, and the ability to solve problems efficiently and effectively. Athletes learn to overcome obstacles and find solutions to the problems presented to them. MYTH coowner, Justin Daniel attests that by training in Parkour, the positive effects of overcoming obstacles trickle into day-to-day scenarios, helping build confidence and competence over time. Cofounder Nicholas Domeny (Boise High ‘09) is a Drill Sergeant in the United States

Army. He has been training in the art of parkour for 12 years and has been integral in growing the sport in the Boise area since the early 2000’s. Justin Daniel (Timberline ‘09), co-founder of MYTH Parkour, served in the United States Army for 7 years. He has been training in Parkour for 8 years and has been helping grow the Boise parkour community since the late 2000’s. MYTH also has multiple qualified instructors; Gary Brusse, Keat Soel, Bryan Roberts, and Rickie Roberts, all of whom have competed at the international level with the World Freerunning Parkour Federation. Rickie Roberts took home first place in the Young Pro’s Division in 2016, and second place in 2017. MYTH Parkour provides beginner, intermediate, and advanced Parkour and movement training in a safe, fun, and friendly environment. MYTH offers skill levelbased classes, adult-only classes, womenonly classes, private coaching, and open gym. They regularly hold competitive and noncompetitive events and jams. The gym features a large AirTrick mat, a warp wall, vault obstacles, bars, a weight training area, an Xbox room, and more. In the near future, they plan on hosting Fire Fridays where live music, fire-dancing, and local food trucks will all come together to celebrate what it means to be a community.

PHOTOS BY JIM PETERSON The instructors at MYTH aim to guide athletes to develop their natural abilities and talents so that they can move uniquely to their physical makeup and just slightly beyond their comfort zone. They foster the celebration of every win while guiding improvement areas when athlethes may have missed the mark. MYTH Parkour emphasizes that Parkour is not just a practice of functional fitness, it’s a practice of an organic, holistic type of fitness. This type of movement encourages their students to challenge their mind and bodies in a free and flow-state type of training - the way the human form is meant to move. The founders of MYTH worked with Parkour Visions and the Seattle firm, GGLO to design two connected outdoor Parkour areas at Rhode’s Park in downtown Boise. This state-of-the-art outdoor Parkour park is the second and largest purpose-built park in the United States. MYTH Parkour will be celebrating their opening alongside hosting the Boise Parkour Park Grand Opening May 5-7.

Business is Strong at Super Strong Fitness Get fit with SuperSlow Protocol

J

eff Kempthorne is happy to tell you how his fitness studio’s slow-motion approach to strength training can benefit almost anyone – if you can catch him for a few minutes.

In usually rapid succession, clients come to his Super Strong Fitness studio on Iron Eagle Drive for 20-minute workouts. Demand for the sessions is strong enough to prompt him to consider increasing studio availability and adding trainers soon. Meanwhile, he is taking note of how recent developments in his business align with trends in physical fitness and in the Eagle community. Kempthorne said recently that in the year and a half since he acquired the now nearly 12-year old Eagle business, Super Strong Fitness almost doubled its client headcount. The diverse group of devotees to the virtually sweat-free workouts includes businesspeople on the go, retirees looking to improve their golf games, new mothers looking to add strength while losing baby weight, assorted parents with limited time to get away, and youth athletes. “My clients range from 13 to 88 years old,” he said. “The slow-motion approach to strength training, pioneered in the

34 | www.eaglemagazine.com

early 1980s, can help the practitioner work muscles in a more targeted and efficient way and in turn optimize recovery between workouts,” said Kempthorne. It also provides a noteworthy contrast to some physical moves people make in everyday life. “You pick up a suitcase, pull it and then throw it onto a bed or into a car trunk. You lift the weight, but acceleration and momentum are helping you,” he said. “You are not using your muscles to the full extent. And that (action) puts in jeopardy joints and ligaments while potentially adding strain.” Kempthorne spends considerable time and effort studying the SuperSlow protocol that Ken Hutchins developed in the early 1980s. In the Eagle studio and in California, Kempthorne has worked with Adam Zickerman, a trainer and best-selling author who is a well-known proponent of the protocol. “By correctly following this training process, Super Strong Fitness clients – who select from among 10 medical-grade machines – aim to position their muscles to safely do nearly all of the work, directly and without the aid of acceleration and momentum,” Kempthorne said. The targeted approach reduces injury risk but places a premium on post-workout recovery, which is why clients can’t come in more than twice per week. Clients also benefit from

the accountability of the one-on-one sessions, priced to compete well with other physical trainers in the Boise area. Kempthorne, 36, married and with a young son under a year old, got into physical training after finding out his mother had started a weight lifting regimen. From his parents, Patricia and Dirk Kempthorne (former Boise mayor, U.S. senator, Idaho governor and U.S. Interior secretary), he learned lessons he has since applied in business. These include believing in what you are doing, working hard, and realizing other people are affected.

We are pes-wies! “Payroll. The Easy Way.” Star Wars fans and pes-wies owners keep the mood light in their business

PHOTOS BY JIM PETERSON

A

s you step into the office, Star Wars movie characters of eye-popping proportions spectacularly greet you, daring you to believe that the payroll and tax administration business can be fun! The doorway presence of Darth Vader, a Stormtrooper, and the towering Jar Jar Binks sure hasn’t slowed progress at Pes-Wies (styled peswies), which has doubled its clientele since moving to Eagle five-plus years ago. “It lightens the mood,” said Darcy Proctor, who co-owns the business with twin sister Marcy Brown. “It can get stressful here on heavy paydays, so having the casual atmosphere really lightens the load.” Their business is run with the same enthusiasm that they pursue their nearly lifelong love of the movie franchise. Marcy and Darcy met Mark Hamill, who played major character Luke Skywalker, and watched Star Wars creator George Lucas up close after they camped in line prior to a big event. They even visited private Skywalker Ranch in northern California. The sisters have even traveled to Las Vegas to watch the new Rogue One: A Star Wars Story. Marcy and Darcy, born in 1975, two years before the first Star Wars film came out, have memorabilia for their homes and cars. In their office on South Rivershore Lane, they have six movie-release posters and various three-dimensional figures.

Blow-up versions of the Darth Vader and R2-D2 characters are added for Halloween, followed by a Star Wars-themed Christmas tree. “The office is kind of an extension of us personally, so it makes us happy,” Marcy said. “Also, it breaks the ice and makes people feel comfortable.” She and Darcy, who both studied at Idaho State University, formed what’s now pes-wies – a name that combines Western Idaho Employee Services with broader initial incarnation Professional Employee Services – in 2001 after working in retail. The business aspires to save time and costs for clients ranging from Mom-and-Pop stores and local service providers to corporations. Originally, the business operated on Fairview Avenue briefly before moving to Lakeharbor Lane, both in Boise, and then to Eagle. An up-and-down workflow tied to client payroll cycles and tax reporting deadlines characterizes the business. A light, fun atmosphere keeps the owners and their four employees on track whether they are in the midst of hectic days with many tasks due immediately or preparing for the next highvolume day, the sisters said. Recently, the business has added offerings such as online tools for employees. With Eagle’s growth and accessibility

as a community, referrals have been strong, and pes-wies marketing efforts have been well received. As a result, pes-wies has grown its staff following several years of significant growth. Many new clients are experiencing their own growth as well, creating in an increase in their administrative requirements, which pes-wies excels at. As for the entrepreneurial twins and their private Star Wars experience, their Skywalker Ranch visit materialized in the late 2000s. The Skywalker Sound finance and operations director, whose brother had noticed the sisters’ Star Wars collectibles shortly after buying the office building where they were based, led them on a personal tour of the ranch. “We got to see them mixing sound for one of the Pirates of the Caribbean films, and we got to see the conference room where George Lucas does a lot of interviews,” Darcy said. Marcy said she held an Academy Award the studio earned for another film’s sound work. It was at a Star Wars celebration in Indianapolis where they had front-row seats to see Lucas speak, and where Hamill struck up a conversation with them after noticing they were twins.

Meet Treasure Valley’s Own, Entrepreneur Ron Despain Keeping Our Trash Bins Clean and Our Environment Safe

D

esiring a break from the corporate world, Ron Despain, an active member of the manufacturing engineering community for over 25 years, was seeking a new business opportunity. “It was time for a change,” Ron said. Turns out, the answer was right under his nose! Each day last summer, Ron would walk by his garbage bin. “I knew I should take the time to clean it out – it smelled and had some type of liquid goo in the bottom of it,” he said. Realizing that the smell indicated that bacteria and germs were present, Ron started to consider disease concerns such as E. coli and salmonella. “After I cleaned it, it would just get dirty and smelly again, and I didn’t look forward to the dirty water splashing back at me!” After some research, Ron discovered that an automated system existed to address this issue, and his business, Fresh Bins, was born. Ron Despain and his family have lived in Eagle for the past 19 years. “We love Idaho and we love our community, where we have met many wonderful people.” Finding a solution that

40 |www.eaglemagazine.com

was self-contained, 100% environmentally friendly with results removing 99.9% of bacteria and germs was important for him and his community.

Typically, when people clean out their garbage bins, they often use cold water and add many cleaning agents to kill bacteria. Afterwards, the wastewater is dumped somewhere, usually out on the lawn, in the driveway, or down the gutter. The Fresh Bins solution solves this problem by being self-contained, with all the wastewater collected and disposed of in an approved facility. “This machine not only cleans them, it sanitizes them by using high pressure, 190 degree heated water. It uses approximately 2 gallons of water per bin, reducing the amount of valuable resource in each cleaning.” At the end of the process, the bins are clean and deodorized, leaving them smelling fresh again.

Single, monthly, bi-monthly, or even quarterly cleaning services are available. Home visits are scheduled to coincide with your trash pickup day, and bins (two at a time) are lifted into the hopper curbside. If you’re interested in learning more about Ron and Fresh Bins, his website is freshbincleaning.com and the home page displays video of the simple, effective process. Fresh Bins leaves your home, neighborhood, and our community a healthier and better place.

SOME FAQ’S ON FRESH BINS Why should I have my trash bin cleaned? Of course doing it yourself is always a chore. When it is done, there is a lot of wasted water and harmful detergents used. Also, it has really not been sanitized effectively to remove the germs. We not only clean your bin, we disinfect, sanitize, and deodorize. How often should I have my bins serviced? The industry has found that Monthly service is the most effective in keeping the bins sanitized and deodorized, in the most efficient manner. Waiting too long will allow the germs to buildup and grime to set in again. How long will it take for my bins to be cleaned from the time I sign up for the service? Your bin should be cleaned within 10 days of subscribing to our service. From that point, your bin will be cleaned on a regular basis. Learn more at freshbincleaning.com 208.576.4662

THE PERKS OF LIFE Serving Coffee, Fine Food, and Compassion

H

ot coffee, fresh food, and social empathy are among Heather Andrade’s offerings at The Perks of Life coffee and baked goods shop in Eagle. That empathy comes from her desire to help those in the community who may be struggling to make ends meet. “A couple of years ago I adopted a ‘pay what you choose’ system,” she said, which lasted over a year. She says she wanted anybody “to be welcome to get a cup of coffee even if they can’t afford it.” That program evolved into a “pay it forward” program, where people can buy someone else a cup and a delicious pastry or sandwich. Anyone can donate toward it, and anyone can take from it. Either way, The Perks of Life lives up to its name. Andrade is primarily the baker, focusing on made-from-scratch fresh pastries. Scones, muffins, and cookies are baked fresh daily. You can also choose breakfast burritos and quiche to perk up your day. “We rotate our quiche, and always have a couple, and sometimes a third or fourth on the menu,” she said. “We do our own granola and we try to keep it simple. We’re big on quality and we’re picky eaters. We like good food!”

Andrade’s personal favorite is far from the ordinary. She calls it “The Tornado,” and it features ham, brie, jalapenos, green apple, seasonal preserves, and mayo on grilled country white bread. It’s the “perfect combination of sweet and spicy, it’s all over the place,” she says. Perks also offers Reubens, BLTs and tuna melts along with The Greenbelt, featuring sprouts, cucumber, tomato, red onion, and avocado, with provolone cheese and basil mayo. Salads include Cobb, chef, and spinach. Andrade uses local ingredients whenever possible or available. Come summer, she’ll be buying fresh produce from local organic growers. For the Reuben sandwiches, Andrade announced that “soon, we’re going to start making our own sauerkraut.” As summer approaches, a new salad and more fresh sandwiches are also in the works. Perks rotates its beers, with seven brews on tap, mainly from the Northwest. They offer local bottled wines as well.

Her sister Amber Allen makes all the homemade soups, potato salad, and sides. “She’s amazing,” Andrade said. “I leave the cooking to her. It’s really nice to have fresh soup and potato salad with different options all the time.”

And beyond the wonderful food is The Perks’ philosophy: “Our vision is to create a space for everyone from all walks of life, to connect in a warm, comfortable environment,” she said. “We believe that some of our deepest needs are for connection, community, and contribution.”

One of those recently offered was her own unique creation: an Italian sausage kale soup.

And a great breakfast or lunch.

For lunch, choose from nearly a dozen sandwich combinations, including customer favorite “The Barnyard.” It comes with turkey, bacon, provolone cheese, avocado, tomato, red onion, and sprouts with your choice of ranch or bleu cheese dressing.

backpacking cooking tips

John Horejs

by Stephen Weston Go Fresh Fresh herbs like basil, rosemary, and parsley can last for days in your pack. Layer herbs between paper towels and store in a Ziploc™ bag. Add to your meal a basil leaf for a refreshing taste. Get Cheese Stock up on high-quality hard cheeses like Parmesan or Romano, which can go un-refrigerated for extended periods of time. Brie does well on the trail and you can eat with crackers or spread over pancakes for a savory breakfast Trust the Pros If you don’t have the tools to dehydrate your own meals, or don’t trust your cooking to keep you satisfied, try jazzing up ready-made meals. Re-package boxed pastas with additional freeze-dried veggies and salami for a reliable and delicious dinner. Real Eggs Organic eggs from pastured chickens are safe at room temperature for a few days. Invest in a three dollar egg carrier and forget about powdered egg omelets. Just make sure you trust the farm where the eggs are coming from, some organic sources are still susceptible to salmonella. Indulge Do you secretly love packaged moon pies and Kit-Kats? Pack ‘em. You’ll be thankful for old favorites out on the trail. Just make sure to balance treats with high protein, whole-grain meals to avoid burning out.

PHOTOS JIM PETERSON

Modern Bohemian Dream Catcher Artist Risking it All to Pursue a Dream

H

ave you ever wondered what would happen if you took a chance, a seemingly crazy chance, to put your stable job on hold and follow your passion? Stephanie Swendall, a 2002 Eagle High School graduate, did just that. She worked at a secure accounting job, but her creative style and passion for DIY kept a-calling so she took the leap and turned that passion into BohemianBlush, a thriving and rewarding business. “Growing up, we would often visit my grandparent’s cabin in Cascade. They had a treehouse where my cousins and I would play all day. We would make baskets from pine needles and wild flower crowns. It was such a neat place to nurture our creativity and use lots of imagination. Both my mom and grandmother are very creative, we all love having family craft nights. I find it really fulfilling to create things myself, to take an idea and see it come to form.” Stephanie has a passion designing inspirational, peaceful, and textured wall hangings with elements of nature in a modern bohemian style. While getting a bit burnt out at her corporate accounting job, she wanted to see where her love and passion for all things handmade could take her. She began experimenting with leather sandals, bookmarks, and home decor. When she started making her unique bohemian style dream catchers, her business began to get real exciting. She initially shared her creations with family and friends and was encouraged by their positive reactions to open an online shop. In 2013, Stephanie

46 | www.eaglemagazine.com

created her Etsy store, BohemianBlush, and anxiously awaited the reactions of the market. One evening, while watching television with her family, she heard the “ka-ching” phone notification that she had made her first sale on the popular online platform. And one by one, the orders began rolling in. Her customers love the simple elegance of her products. Clients make purchases for gifts, special occasions, and for their own children. Within a year of that first sale, Stephanie was able to quit her accounting job and pursue this creative venture full time. She turned a room in her house into an efficient, organized home art studio where she designs and creates each product with care and intention. Dream catchers have been a part of Native American culture for generations. It is believed that the dream catcher protects the sleeping individual from negative dreams by catching them in

the web and releasing them at first sunlight, while allowing the good dreams to pass through the center and glide down the feathers to the sleeping dreamer. Her one-of-a-kind dream catchers are very popular with expecting moms, for nurseries, and also with young girls. They are fun, whimsical, and bring comfort to both parents and babies. BohemianBlush currently specializes in made-to-order, customized dream catchers, baby mobiles, Bohemian wedding decor, home decor, barefoot sandals, and leather works. This business has allowed Stephanie to create meaningful relationships with her clients; she often experiences return clients and has received strong local support. Stephanie’s favorite materials are ones she can buy locally; she uses leather, feathers, paint, gold thread, yarn, wood, faux fur, beads, wool, and fringe to create her boho style. The dream catcher’s prices range from $12.50 for the minis and up to $200 for 19 inch hoops, with the average prices being around $40. Her Etsy store offers 30 different designs to choose from and each unique piece will be handmade to order in her Eagle home art studio. You can see more of Stephanie’s work in her online Etsy store, at local and regional crafting events (like the Holiday House Boutique), and soon in local shops and Saturday markets. She also plans on hosting local workshops for those that want to learn how to weave their own dream catchers. Follow Stephanie on Instagram to see more of her beautiful work: @thedreamstop Also go visit her Etsy shop: etsy.com/shop/bohemianblush QuarterPageVertical-Eagle.pdf 1 10/22/2014 11:12:32 AM
