GIVE BACK WITH DULCERELLA CUSTOM CAKES AND GOURMET DESSERTS THIS HOLIDAY SEASON In the city of trees, Fall is an event. Leaves stroll the runway in their finest fading hues, then twirl to the ground in a dramatic bow. It is nature’s final high kick as the cold and dark of winter descend. I love nothing more than some hot tea, snugged into a cozy blanket on the couch, watching some jolly Brits politely battle it out on the British Baking Show. Jammied up with scone crumbs on my lap, I learned from Paul Hollywood and Prue Leith, that baking is an art. Sure, there is science behind it, knowing just how much yeast, baking powder or baking soda will affect the chemical reaction and rise of your creation. Yet it is the interplay of flavor, with the sweet design of delicately draped fondant and swiss meringue buttercream, that makes the cake the most delectable artform. Mihaela LeCedre of Dulcerella Custom Cakes and gourmet desserts is an artist indeed. From stunning tiered cakes with meticulously handcrafted fondant succulents, to gorgeous macarons towers, Dulcerella is the Treasure Valley’s lead cake boutique for a reason. In 2020, one of Dulcerella’s original designed cakes was featured in Rocky Mountain Bride Idaho magazine. Mihaela came to the United States eighteen years ago from Romania. “When I started my cake business, I wanted to bring with me a little part of my Roma-

nian background,” recalls Mihaela. ‘“Dulce” in Romanian, very similar with the Spanish, means “Sweet”, so that’s how I came up with the name.” A foodie from birth, Mihaela had a culinary blog where she posted over 200 recipes. “That’s how I tested many dessert recipes and I decided that I want to make beautiful cakes. I started learning how to decorate, and I can say it is a continuous process. I always like to learn new techniques and designs.” This holiday season Mihaela is using some Romanian inspiration in her Christmas ornament filled with macarons. “It makes the perfect gift for anyone from your teacher to your boss or grandma. I thought that old world flavors of chocolate and candied orange peel would fit perfectly for this,” explains Mihaela. For every ornament she sells, she will donate two dollars to Eagle food bank, along with Christmas cookies in the week before Christmas. The ornaments will be available by pre order at dulcerellacakes.com starting on November 30th. One of Mihaela favorite cakes was one she made this Spring with delicately draped rose fondant and a bright pop of dried flowers. The flowers were supposed to be on the first wedding cake of the season. ydia Maria Child penned the poem, Over the River and Through the Wood. Her trek across woodland and farmland rings familiar to the families of Eagle’s past. Though change has come and built Eagle into a city of nearly thirty thousand, the old town feel remains. The bright oranges, reds, and yellows in Merrill Park reflect the sunrise and sunsets that come so quickly this time of year. The leaves are crisp, crunching underfoot, as passers-by stroll with their warm jackets and scarves tied neatly to keep them warm. It’s Thanksgiving! It’s the season to sit comfortably and reflect upon those things that make each of our lives have meaning. Nancy and Alei Merrill cherished the once sleepy little town of Eagle. Nancy worked on the Merrill farm

when she met Galan Merrill. They married and moved into a little home next door and began raising their family. As the town began to grow into a city, Nancy knew that it was essential to maintain the feel of the country. The open spaces, the setbacks, the rerouted highway, are all there by design. They were included so that new residents are welcomed, and long-timers comforted, with that same sleepy feeling of home. Nancy was involved in much of the open-space preservation due to her time spent serving the Eagle community as a planner, a city councilwoman, and mayor. Eagle residents are able to enjoy her legacy of parks to play in and pathways to stroll on, especially during the display of color in early November. Alei speaks thankfully about the open space she had as a child in Eagle. Riding her horse around town was therapeutic: “I used to ride my horse through Eagle, I would go to Orville’s and say hi, get a snack, pick up a few things for my dad at Evans Lumberyard, and circle back along the riverbank to the farm. I would pass neighbors and friends along the way. There didn’t seem to be a sense of urgency or time.”

Stephanie is thankful for her family and that her two daughters stayed close. Every year they gather for their traditional Thanksgiving dinner. Though the festivities have grown with marriages and grandchildren, they still feel the same sense of tradition. She said, “It doesn’t feel like the holidays unless we spend it together.” Lacy (Benedetto) Hahn described a family tradition of great food and family coming together. Thanksgiving is the kick-off for her family’s Christmas. Shortly after Thanksgiving, they head up to the mountains to find their special tree. Lacy is grateful for growing up in a community where open spaces are maintained to reflect the Eagle of earlier days. She said, “I am thankful every day that I am able to raise my children in the same environment, same small town feeling that I was raised with. [I remember] the annual fall carnival that [Eagle Hills Elementary] would hold where families and teachers gather to celebrate the new school year playing games, winning prizes, and sharing donated sweet treats. It felt like you knew everyone, and despite our differences, we were all part of a big community family, just happy to be in each other’s presence.”

It was so close to Eagle road you almost ran it over when you came to the stop sign.” Pat is thankful that through all of Eagle’s growth, the city has maintained the beautiful landscaping. Joe Palmer is thankful for the sleepy little town in which he grew up. He remembers everyone caring for each other. He recalls an unforgettable memory: “Every year, the volunteer fire department held an auction to fundraise for their burnout fund. Everyone in town was there. The citizens would bid on items [higher than] their actual value. The entire community was incredibly supportive of the cause, because we were ultimately supporting each other.” Together, these families paint a picture of a small town that took care of them, and each other, as it grew into what it is today. They spoke of the city and their love of the nostalgic old buildings. Orville Jackson’s was a vital stomping ground, and though it has changed, the facade remains. They all want to see the historic downtown preserved, just like their open spaces. ¢

Nancy Merrill said, “We should all be thankful for where we live and how we were raised. Thankful for those you love who gather around you. We’re all people. We all have something to give. It’s time to start giving back.” 32

Grace is a young fifteen-year-old girl located in Eagle, Idaho. She has dreams far beyond the average teen. She plans to one day have her very own animal farm, with all the farm animals one can think of! Grace recently moved to Eagle, Idaho in July 2020 and has loved exploring all that Eagle has to offer. Grace has always loved animals, but farm animals are her cup of tea. Just like most

of us, Grace was stuck inside all day bored during the pandemic. One hot summer day in late July she decided to bike around town and explore for any new exciting things she hadn’t seen yet. As she was biking, the strong aroma of hay caught her attention. She stopped her bike and saw a cow staring right at her. Grace felt as if the cow was posing for her, so she walked up to him and


snapped a photo. She couldn’t stop taking photos of the cow because he just seemed so happy. At that moment, she knew her true passion was farm animals and photography. By combining both the things she loved it flourished into an idea to start taking photos of farm animals while she’s biking around town. Her goal is to always find a new animal everyday and capture their very essence. Grace said the animals come right up to her when she goes up to the fences, and that’s her favorite part. Her main goal is to try and take photos of the animal’s individual personality. In Grace’s eyes, all animals have their own unique personality and her photos represent that. Grace’s favorite animals so far are goats, ducks, and cows. Her love for new animals grows every day. After all, they’re all so photogenic so it’s hard to pick just one favorite! ¢ @ruff_meow_moo

SEASON OF SAFETY The Eagle Police Department’s Fraud Detective and Traffic Enforcement Officers Want You to Stay Safe During the Holidays BY LIZA LONG

Have you ever wondered what a credit freeze is and why you may need one? Do you have questions about Idaho’s new hands-free cell phone law? What do you need to know about winter driving conditions? Eagle Police Department fraud detective Brendan Kirkpatrick STEP Deputy Joe Richardson both have some ideas about what you can do to stay safe this winter. The Best Defense Is a Good Offense Eagle’s explosive growth in the last five years highlighted the police department’s need for a detective who focused specifically

on fraud and identity theft. With 25 years of law enforcement experience, eight of these in fraud, Detective Brendan Kirkpatrick was the perfect choice. Ironically, Detective Kirkpatrick notes that the positive qualities that bring so many people to our community unfortunately also attract scam artists who prey on people’s goodwill. Some of the more common scams that Detective Kirkpatrick sees involve unsolicited phone calls requesting payment in gift cards. “They may call you and tell you there’s a warrant out for your arrest in Texas and ask you to send them $1,500 in Target gift cards,” he told me, stressing that this type of request should always be a red flag. “Do not ever send gift cards,” he said. “Gift cards are just that something you buy your niece or your cousin. A real agency like the IRS or Social Security Administration will never ask you to pay fines in gift cards.” People are on their computers more because of the pandemic, and this increased computer time leads to a rise in fraud. “Computer crimes take place throughout the year, but during the holiday season, we are in the spirit of giving,” Detective Kirkpatrick notes. “Be aware of fake charities who ask you for donations.” “Don’t click on suspicious or unsolicited emails or attachments,” he adds. “Don’t ever give your computer access to anyone. It’s your computer—and potentially your identity.” Detective Kirkpatrick recommends that people take a few minutes to freeze their credit accounts, and he’s worked with the department to create educational materials to help people protect their credit before they encounter a problem. “A major part of my work is education,” he says. “If you’re a victim of identity theft, it can take you several months to get your life back. It’s an emotional thing—you have all these bills, you don’t know where they came from, and it can feel overwhelming. If you ever get an email or phone call soliciting for anything, and you are not sure, call us. We are here any time you need us and we will help you take care of this.” Engaged Driving Is Safe Driving As Eagle grows, so does our traffic. Deputy Joe Richardson is part of a two-officer STEP team dedicated exclusively to Eagle’s traffic issues. With his partner Deputy Jeremy Seibert and a pair of new motorcycles, the team handles everything from neighborhood speeding concerns to stop sign running to safe driving in school zones.


Many residents may be concerned about the new hands-free cell phone law that went into effect on July 1, 2020. According to the National Highway Traffic Safety Administration, 2,841 people were killed and more than 400,000 were injured in 2018 in accidents where distracted driving was a factor, and cell phone use is one of the major causes of distraction. During the first six months of Idaho’s implementation, officers have focused on giving drivers warnings and educating them about safe driving. Citations of $75 for first offenses will start to be issues on January 1, 2021. Deputy Richardson says that he’s seen good cell phone behavior from drivers in our community overall, but he stresses that distracted driving does not start and end with cell phone use. “We’ve seen everything you can imagine,” he told me. “People putting on makeup, dogs walking across laps and blocking the view, even some people changing their clothes in the driver’s seat.” Richardson notes that he and his partner focus on the concept of “engaged driving,” where drivers are paying full attention to the road. A more serious concern for Eagle drivers is the number of flashing yellow left-turn signals on high-speed roads like Highway 44 and Highway 55, both major thruways in our community. “When you hear about the most horrific accidents, there’s often a flashing yellow light involved,” Deputy Richardson told me, giving the tragic example of a 2017 double fatality accident when two Eagle High School students were killed trying to turn from Highway 44 onto Park Lane. “At high speeds, those few seconds can be deadly. When in doubt, wait for the solid green arrow.” Officer Richardson also noted that winter weather leads to an increased risk of accidents. “Drivers need to adjust to the road conditions,” he said. “Make sure your tires are properly inflated and that you know how to use 4-wheel drive on winter roads.” He notes that following too close is the biggest reason for winter accidents. “Leave a bigger space cushion between you and the next car. Slow down; don’t be inpatient, and be engaged and focused,” he advised. ¢

We’ve all had a problem with pests at some point. From a pesky seagull ravaging your patio dining area to a hoard of Starlings devouring your garden harvest, we’ve all been there. Or maybe it’s just a family of foraging squirrels digging holes in the yard or tearing the stuffing out of your lawn chairs. Whatever the case may be, they just simply aren’t afraid of us. While we frantically shout and jump, waving our arms wildly, it seems that no matter how “scary” we make ourselves, they just aren’t afraid of us. Or at least not too afraid to return the next day. But there is one thing that all squirrels and Starlings and seagulls are afraid of: hawks. With a bit of creative ingenuity, Alyssa Ervin has been able to create a business model out of this one reality: small birds and mammals are without a doubt, undeniably, terrified of a hawk on the hunt.


What started as a family hobby has now flourished into a successful business for Alyssa and her colleagues. “When I was 12, my dad bought me a book about falconry. I had no idea there was an entire sport revolving around what I loved to do. At age 19 I got my falconry license and my first falconry bird, a Red Tailed Hawk. Training the bird came naturally to me, but the harder part was finding good fields to hunt,” Alyssa explained, excitedly. How did The Hawk Proz get its start? “When I started in the falconry world, I was hired on part time to fly Harris Hawks at landfills. I worked for them in Southern California flying Harris Hawks to keep the pest gulls out. Eventually I got hired on a little closer to home and that’s where The Hawk Proz was born. I had been working for another company chasing gulls and pigeons from a mall while I was pregnant. I took leave to have my baby and by the time I came back to work, the mall had fired the original company and were asking to hire me directly. So a business was created and I had my first contract just like that. Word got around and now we have served over 40 properties in California. I am looking forward to branching out in Idaho, my focus will be keeping pest birds out of agriculture—like vineyards and other crops.” How does The Hawk Proz work? “The birds are paired with falconer and a list of contracts assigned to them. Each month they take their birds to their contracts. They release their hawk or falcon and patrol the property. They set a perimeter by rewarding the bird when it stays nearby. The pest birds who once felt safe in such a bustling urban environment where predators are leery to go are now feeling uneasy and looking to rehome. It’s simple—nature versus nature. No nets, spikes, noise makers, just all natural.” ¢

’TIS THE SEASON TO ORGANIZE THE TOYS Tackle Those Playrooms Before Santa Comes As a professional organizer, I would say that playrooms are one of my favorite spaces to tackle. Sure, there is typically a lot of sorting but in the end you can make some fun style choices and really bring the space to life. A couple of notes before I get into the actual organization process. I know a lot of pro organizers would say to involve your kids on this project. In my experience that is a good way to never get it done! Kids tend to get excited about things that have been lying dormant in the bottom of the toy box. My second note is to tackle this project (like any organization project) first thing in the morning or whenever you find you have the most energy. The first step is to sort everything into categories. If you have a space that is jam packed then you can break this step into parts. For example, that may look like sorting all the art and craft supplies and dealing with those first. Once you have everything sorted then comes the edit. Low hanging fruit would be broken toys, then any “disposable” toys (i.e. anything from McDonalds), anything with missing pieces, etc. Next, toys your kids have grown out of or lost interest in. I’m always about a good edit but also keep in mind once the toys are organized in an accessible way you may find that your kids play with things they haven’t in a long time. Now for a little space planning. Do you have adequate shelving? If not, I would consider adding some furniture. I have been leaning toward more grown up furniture that can stay in the space for the long haul. Now onto containing what’s left. I love to use clear in a kid’s playroom wherever I can. If they can see it, they are more likely to play with it! When containing, remember you will be labeling everything so try not to combine categories of toys together. I like to have one or two “Misc.Toys” bins at the end. Place your toy containers into zones if possible. I like to create zones for “Arts and Crafts”, “Imaginary Play”, “Make and Build”, etc. Lastly, label, label, label! Even if your kiddos can’t quite read, find a fun way to label the bins. Labeling is important because it shows the kid’s where to find things and also where to put them back. Good luck and happy organizing! We are the designers of our world, the creators of business, and the foundation of the future. And a big part of that future is going to be built through graphic design. According to the Bureau of Labor Statistics in 2016, the demand for graphic designers would increase by nearly 13% by 2020. And that prediction is in large part due to the industry’s prominent domination in marketing, communications, and entrepreneurship over the last decade. So it’s no wonder that Heim Design Studios has seen such great success since their inception. “We hit the ground running!” says Matt Heim, owner and founder of Heim Design Studios. Hailing from San Diego, Matt, his wife and sons are proud Idahoans since 2006. “I am very blessed and grateful for the work that I get to do, and the family that I have been given,” he continued. Matt started his business in the Treasure Valley in 2019 and has been busy with projects ever since. “My formal training is in graphic design and corporate branding; I graduated from The Art Institute in San Diego, just before moving to Idaho. But when my in-laws moved to join us in Star in 2007, with their international custom furniture business, I became the in-house graphics department for them. The family business name is John Ralph Furniture, based in Eagle, and we supply high-quantity custom furniture to the resort and hotel market, from our

We asked Matt what some of his favorite projects thus far and his was very grateful to have the opportunity to create designs for the Ronald McDonald House. “The giant entry wall art at the Ronald McDonald House is a special design project, not only for what it represents for the community here in Idaho, but as a designer and artist, allowed me to work locally with wonderful businesses and people from our area; something that is very fulfilling and not easy to experience within the international hospitality market. Matt would also like to give a shout out to WoodLab in Eagle who helps with his custom designs and fabrications. ¢

Winter is well on its way, which means for many of us, it’s time to cuddle up indoors with a good book and a nice crockpot meal. But it’s important to maintain our sense of adventure and stay active, even when the weather is cooling down. Fortunately for us Idahoans, recreation doesn’t stop in the summertime! There are hundreds of winter destinations with year-round cabins and plowed snowshoe and cross country (Nordic) ski trails! Grab the family, your cold weather gear, and check out these great winter spots! Ponderosa State Park – McCall, Idaho Located just a couple hours outside of Eagle and nestled around the shores of Payette Lake, Ponderosa State Park has year-round deluxe cabins that are perfect for a cool-weather retreat! These cabins come with a full-size refrigerator, stove/oven, microwave, and dishwasher. The kitchens also include: cookware, bakeware, dinnerware, utensils, cups, coffee maker, toaster, and so much more. The bedrooms and bathrooms come stocked with blankets, sheets, and towels. While the cabins are a great way to relax and recharge in a beautiful mountain setting, Ponderosa State Park also offers several trails of varying levels of difficulty that are groomed in the winter for snowshoeing and Nordic skiing. Grooming will begin once the snow begins to fly! Winter trail maps are available online as well.

Lake Cascade State Park – Cascade, Idaho The yurts at Lake Cascade State Park make for great winter lodging options! Each yurt has a cook table, a dining table, and folding chairs, a two burner Coleman cook stove and two Coleman lanterns. Renters need to supply their own propane canisters. It is recommend that guests bring one canister for each appliance per day. The lanterns must have the short canisters, not the tall ones. (A stove with both burners on will burn for 1 to 4.5 hours on one canister; a lantern on full will burn 7 hours.) Plastic mattress covers are available upon request. Similar to Ponderosa, there are groomed snowshoe and Nordic ski trails around the park for those looking to stretch their legs. Winter trail maps are available on their website. If you are looking to drive a little further outside the Treasure Valley, Castle Rocks State Park in Almo, Idaho is another great winter recreation destination and their Glamping Yurt, complete with kingsized bed, microwave, dining table, refrigerator and outdoor grill is fantastic way to warm up your toes after a day exploring the many trails and beautiful rock-faces at this huge park! Please note, updates are being made to reservation system; reservations will be accepted starting December 1, 2020. Always be prepared when planning outdoor, winter adventures! Bring plenty of warm clothes, layer appropriately, and of course, bring water and snacks! See you on the trails! ¢
