Martha and Gary Cunningham, proprietors of 3 Horse Ranch Vineyards and Winery, are familiar to many local wine enthusiasts for both their wines and the winery’s memorable setting north of Eagle. Since they acquired the 1,600 acre property in 1998, the Cunninghams have successfully navigated the challenges inherent to the wineindustry—they now operate the largest family-owned winery in Idaho. Eventually, family drew Travis and his wife to Idaho, and he is excited to leverage his culinary and operations experience at 3 Horse Ranch. “I’ve circled all the way around,” he says on the phone while prepping the day’s cuisine. Travis is pleased to be in an environment in which he creates menu items based on what is sourced locally: “Rather than taking a year to add a new item, at the winery we can do it in a day.” Everhart’s enthusiasm for the work and his team is matched by his enthusiasm for the winery’s legacy and spirit of “creativity and flexibility”. A few days later, Travis provides me a tour of the new facility where he acknowledges the work of Head Winemaker Corey Sprott is still of a mystery to him—and a great learning opportunity! What is not a mystery for Travis, though, is the limitless opportunities to create meaningful experiences for the winery’s customers. The new grounds with their vistas provide one pallet for Travis and his team. A less obvious pallet includes the Fermentation Hall and Barrel Room themselves which will double as event space and soon include member-focused food and

Like Travis Everhart, Marc Grubert and Jeff Badigian of Eagle’s Spring Creek Brewing Company were raised in Fresno. They met in 1976, became elementary school friends, graduated high school and then lost touch. It was not until 2008 when a mutual friend reunited them, when they learned both were recent transplants to Idaho. Their friendship quickly rekindled. Spring Creek Brewing Company is the product of that friendship and, importantly, Jeff’s experience as a homebrewer. “I first brewed beer with my friend Jim Byron who was also our first investor at Spring Creek Brewing. The first beer that I made was a cream ale…I shared it with my friends and neighbors and they really seemed to enjoy it. I think that was probably when I decided that I really liked the process and science behind brewing.” In 2017, during a backyard barbeque, Jeff and Marc brainstormed an idea to open a brewery and that night began years of planning, fundraising, and building. The result is a new 6000 square foot brewery and restaurant in Eagle’s Avimor community. The location made sense for three big reasons: the growing neighborhood had limited beer or dining options, it is a natural launch point for hikers and bikers into the Avimor Trail System, and its proximity to Highway 55 traffic is excellent. Besides its location, Marc explains that a few other facts might not be obvious: “Our sunsets from the patio are world class and we’re less than 10 minutes from downtown Eagle. It feels like you’ve escaped to Scotland for a pint.” After three years working to make their dream a reality, Marc and Jeff scheduled to open in March 2020. Covid-19 interrupted their plans and forced them to drastically adjust their business plan. Only in August were they able to have a limited opening. While it impacted their cash flow, the circumstances provided a silver lining as they learned important lessons

about their products and customers.

The experience was both gut-wrenching and rewarding. “The kindness and generosity of human beings should not be underestimated, and people genuinely are hoping you succeed,” says Marc. Jeff points out how other local brewers supported their work and “cooperation between breweries” is excellent and synergistic. Slowly at first, their business grew as more people become aware of the brewery. The Avimor neighborhood has been incredibly supportive, to be sure. More surprising are the customers finding their way from Eagle, Meridian, Boise—and Horseshoe Bend! Originally envisioned as a “pizza and beer” experience, Marc and Jeff instead expanded the menu to broaden its appeal and are “laser-focused on high-quality beer and craft food.” As Marc says, “We brew and create dishes to style but aren’t afraid to present a twist on traditional expectations.” Like 3 Horse Ranch, Spring Creek Brewing Company is focused on local suppliers to build a local experience while paying homage to the community and its heritage. Despite the challenges mounted by the pandemic, Spring Creek Brewing continues to make up ground each month. Both founders are quick to smile and are optimistic even as they acknowledge hard lessons learned: “We are still good friends and this experience gives you faith in the human spirit.”

PADDLE BOARDING

Pack your paddleboards and tubes and head to Crouch for a great outdoor adventure! Put in at the Tie Creek Campground and float for an hour into Crouch and head to Two River Grill for dinner. There are five campgrounds in the area to book.

HOT SPRINGS

The canyon along the South Fork is scenic bliss—rushing whitewater and a scaling canyon of expansive forest. Drive through Crouch and run into a mecca of hot springs: Pine Flats, Kirkham, Warm Springs, and Bonneville. Watch out for the skinny dippers at Bonneville and be sure to bring plenty of water.

FISHING

Discover the beauty of Lake Walcott State Park. A 65-acre park nestled on the shores of Lake Walcott, which boasts 11,000 acres of surface area. Anglers of all skill levels will love the plentiful large and smallmouth bass, rainbow trout, and yellow perch. It also has plenty of shade on land with a great disc golf course. Bonus points for finding the secret hot springs where you can hunt arrowheads.

MOUNTAIN BIKING

Trail Creek in Sun Valley is beautiful. The long stretch of easy trail is canopied with shade as you glide up and down through pines and aspens. A good solid workout before you head back to town for dinner. Life is good!

HIKING

Past Trail Creek is a forty-five-minute drive through Galena Summit to Redfish Lake. Take the boat trip tour across lake and hike the Lily Pad trail to the waterfall. A scenic surrounding like Lord of the Rings, minus the CGI effects.

BACKPACKING

Elevated bliss. The stint to Alice Lake is a steady climb of 11 miles—a journey you’ll find fulfilling with towering mountain peaks and clear glacier water. All the essentials needed for camping overnight are required. Fishing in the morning and evening is promising and the deer are present. Black bears have been sighted in the area so come prepared!

Eagle author, Mike Beiriger, hails from Kansas City where he

attended the University of Kansas for English and TV/film Journalism. But shortly after school, Mike dropped everything and headed to Los Angeles with aspirations in the film and music recording industry.

This rock n’ roll-driven life choice turned out to be a great success and he spent the next several decades as a sound engineer, recording for bands like Heart, Cheap Trick, and Queen. Mike accumulated six gold and platinum records as well as two Emmys during his career. But as the story often goes, it was time for a change and Mike decided to dive back to his roots and try his hand in the world of writing. Since he began writing again, just ten years ago, he has published seven novels, further proving his enviable levels of drive and determination. “My wife, Mary, has been both my muse and greatest source of encouragement,” Mike shared with us. The focus of his novels is centered around historical fiction, which

requires a lot of research to get going but allows him to get creative with stories he is already interested in. “I like this genre because the history is already written, so you don’t have to reimagine the endings.”

stories of Polish families while their town is under Nazi occupation. So much more than just a traditional holocaust tale, Doblina paints an intimate picture of life in such a war-torn world. Because the series follows the lives of multiple characters, Mike is able to unravel the very fabrics of reality that we all cling to and open his readers’ eyes to an existence that many have never, and will never, experience. Design, engineering, fabrication, production, installation and LED lighting were the main tasks to accomplish. A select team of Eagle-based artisans collaborated with the goal of completing it in time for the 2021 Spring Parade of Homes. With a tight deadline, emails and prototypes began. While walking among the wood slabs with David Gosse, they mentioned that their home would feature a floating circular staircase framed by a large picture window. Their staircase concept was also an allusion to the awe-inspiring waters of Yosemite Falls and the “river of life” and healing trees as depicted in Revelation 22:1-2. “Then the angel showed me the river of the water of life, as clear as crystal, flowing from the throne of God and of the Lamb down the middle of the great street of the city. On each side of the river stood the tree of life, bearing twelve crops of fruit, yielding its fruit every month. And the leaves of the tree are for the healing of the nations.” Mindi turned to David and commented simply about how cool it would be if Woodlab could create the stair treads emulating a waterfall. An idea was born, and for the next hour, they sat together and dreamed up the first-of-its-kind, epoxy-filled, circular and floating waterfall stair to include special effects lighting that could mimic flowing water. Staring at a recent delivery of a “bunk” of six 14-foot premium, 3 inch thick, local black walnut slabs from a single tree, David Gosse and the Rosers envisioned all the parts coming together.

The WoodLab team prepared the slabs for tread fabrication. Using Matt Heim’s design renderings, Anthony Holzapple mapped out and cut the pie-shaped treads using his Laguna CnC machine. The tread “blanks” were then precisely back-cut at 45 degree angles to create the 4” waterfall “face” of the tread with the growth rings perfectly mated to the top of the tread. This painstaking work ensured that not only the river visually flowed from top to bottom without interruption but so did the wood! To allow for lighting, Anthony handroutered channels into the epoxy, CnC’d wiring channels under each tread and created custom


fit and counter-sunk steel mounting plates for each side of each tread. 34 custom designs for each segment of work. WoodLab then poured the 17 treads, creating a gradient effect in blue: lighter to darker as you go up the stairs. To top off the project, an additional slab went through a similar production process for the upper landing, setting the stage as the “headwaters” for the stairs. Install was a collaboration between WoodLab and Holzapple, with Holzapple’s 30 years of construction experience leading the way. Finally, Michael Hofer, assistant Sam Reinheart, Holzapple, Josh Human, Tim Jorgensen and Gosse spent 2 full days and a night installing the LED lighting and treads. Michael utilized the latest in LED technology for this project. Chosen for their intensity and ability to handle the entire spectrum of color, each individual light can be custom programmed thus creating different light shows for the owners, from a softly lit river flow to a multi-colored light extravaganza. The capstone for this project is a 320 pound sliding barn door that enters into the upper living area. Two local sister Catalpa slabs were bookended and hand-scribed together with the inspiration verse lasered-in by Holzapple. Steve and Mindi were thrilled to watch as so many local artisans heavily flexed their artistic expertise and collaborated to make their vision a reality. The end result is now complete as a functional work of art, the first of its kind in the world: a solid black walnut and eco-friendly resin floating spiral river staircase, internally lit with a computer programmed LED system to emulate a flowing river and waterfall. As we emerge from 2020’s lockdowns and distancing, it is projects like this that shed some light on the talent of the local builders and makers within our community. These projects sometimes find their genesis in the simplest of questions but that question then allows true artisans to envision something bigger and bolder and allows them to create true beauty. Standing beside each other, these artisans, along with the Roser’s chose to take a risk on a never before done idea to create a beautiful piece that will daily bear witness to their talents. The tree-lined banks of the Boise River rest in the backyard of the Roser’s home. The staircase brings those outdoors in creating a seamless transition. The Biblical verses reflect what this project represented, healing for our community to emerge from 2020 in the use of our individual giftings to bring joy to each other. These stairs emulate what is the bigger picture for Steve and Mindi and influences how they live: an “upward” path toward an era beyond this one.

When I browsed the racks in their beautifully lit store, enhanced by Colleen’s original painted murals, a yellow floral printed dress with a tiered skirt caught my eye. “That’s the frolicking dress,” Mindy said. “Doesn’t it just make you want to frolic?” At $70, it seemed like an easy outfit update for early summer. I also noticed the super-soft yoga leggings, shorts, and sports bras in solids and fun prints at about half the price of a certain popular yoga store. Juniper and Blue rotates their stock about every two-three weeks, so there’s always something new.

Thirteen-year-old Makella Bergeson devotes

herself to dance. She remembers being drawn to it in her earliest memories. “I’ve loved it since day one,” Makella says. Her mother, Jennifer Bergeson, recalls:

She loved music as a baby and would rock back and forth to the beat, waving her hands and kicking her feet. When she was a toddler, she would dance around the house to music. As she got older, she would dress-up, sing, and dance to Disney songs. At only three years old, Makella was enrolled in dance. It started a trajectory that would lead her to today. She is a student at Idaho Fine Arts Academy in the dance program. She already has much dance history behind her, studying every style from ballet to contemporary, tap, jazz, hip-hop, and beyond. She has danced for arts’ sake and danced for competition. Makella’s teacher at Idaho Fine Arts Academy, Rachel Swenson, encourages her students to create and do something tangible with dance. She said, “Theatrical Dance is ephemeral; here for one night of performing and then gone.” So she found a solution to hold on to the performance. Rachel introduced her students to dance filmmaking in school. As part of their curriculum,

together, and they also do a solo project of their own making. Makella chose a dance that was close to her heart. Makella’s sister, Jordan, studied dance throughout her life too. She is older than Makella, and she took on the project, along with Makella, to choreograph a dance to the song by Disclosure and Lorde, called “Magnets.” The film, Magnets, is set in Downtown Boise. Some shots are on a leafy street in the fall. You may recognize the Capitol building downtown. Even an empty parking garage becomes art when Makella expresses herself in dance freely on the pavement of a utilitarian canvas without onlookers interrupting the moody flow. She takes to the middle of a street where the sun glows behind her, making a magnificent frame of light to wrap itself around Makella’s movements. Rachel Swenson encouraged Makella to submit the finished product to film festivals. Makella submitted her film to two festivals, and both of them selected her film, Magnets, to be screened. One local festival, Idaho Screendance, was co-founded by Rachel in order (in part) to give students a platform to showcase their talents to more than just a reoccurring audience of family and friends. The second film festival was Utah Dance Film Festival. Makella said this about seeing her film on the big screen, “I enjoyed my experience watching my film. It was fun and interesting to see my film with all of the other wonderful films.” Makella plans to continue dancing lessons, and making dance film. When asked if she would do anything different next time, she said she would do more planning for the film ahead of time. She wants to encourage others to make dance film, and to experience the creative processes that are involved in filmmaking. She said:

EXPLORING THE OWYHEES OUR LADY, QUEEN OF HEAVEN CHURCH

Idaho entrepreneur, Brent Stanger, along with his son and friend headed out to the Owyhees on a mission to find a good camping spot. But like so many adventures, they found something they would have never expected. “It looked like something from the old west,” Brent shared. “There were some other collapsing structures but next to them was this really interesting-looking old building.” By happy accident, Brent and the boys had stumbled upon the Our Lady, Queen of Heaven Roman Catholic Church. Built in 1883, the structure originally served as the General Store for the small ranching town of Oreana, Idaho, which is about 60 miles outside Boise. It was also the town’s post office. After several decades, the building fell into disrepair and was later renovated by the Catholic Church. Built out of impressively thick stone, the overall structure of the building remained firmly intact. But in the early 60s, the Catholic Church replaced the roof, constructed a belfry, and added several other Gothic features to the building’s architecture. BY JOHN HAND FOR MOST OF US, THE PHRASE “ITALIAN BAKERY” WARMS THE SENSES. IN THE CASE OF ADRIAN AND ROBYN KUTCH, THE OWNERS OF EAGLE’S NEW BELLA BISCOTTERIA ARTISAN ITALIAN BAKERY, THE STORY IS A BIT MORE COMPLICATED.

BISCOTTI FOR ALL NEWLY RETIRED COUPLE ENTERS THE FOOD INDUSTRY WITH RAVE REVIEWS In Adrian’s case, the story began before he was born when his Italian mother and Ukrainian father founded a San Francisco Bay Area bakery, a family business which survived several decades. Adrian worked for a French pastry chef at Stanford University before starting his own construction business. Robyn, meanwhile, instinctively loved to bake from childhood. After a career as a court reporter and paralegal, she eventually became office manager of Adrian’s business. One important benefit of working together was the flexibility to raise their son, Kristoffer, until he went to college in Texas. A year later, during Kristoffer’s sophomore year, Robyn and Adrian chose to retire and relocate. They knew what they wanted in their new home: four seasons, a small-town vibe, near an airport, quality medical care—and Trader Joe’s! A former employee and good friend invited them to visit Eagle. They checked their wish list and were quickly hooked. Once in Idaho, they knew their decision was a good one. They missed their family, friends and Bay Area sports, but new friendships quickly developed. Robyn was overwhelmed how the community seemed so “relaxed and happy and welcomed us with open arms.” But the Italian bakery? “It started with the biscotti,” they say. After their recipes received excellent feedback from friends, Robyn and Adrian wondered if there might be a business opportunity. A good friend encouraged them to enroll in the University of Idaho Food Technology Program. They then built their business plan. Like other new businesses scheduled to open in 2020, Robyn and Adrian were forced to adapt. Adrian completed much of the remodel work in their building at 190 W. State St. The couple opened their doors in November with a “soft opening.” It was a little overwhelming during the holidays, but they found their stride. Bella Biscotteria is an “Artisan Italian Bakery” based on the best traditions of Adrian’s family bakery and the famous “San Francisco Tradition” best exemplified by Liguria Bakery in the city’s North Beach. The Kutch philosophy focuses on “artisan by hand” products that are all made in their bakery. “You can tell the difference,” say Adrian and Robyn, because only the best ingredients are used. It started with biscotti, of course, but the menu includes other Italian favorites including butter cookies, cannolis, and focaccia breads. It also pays homage to Kristoffer’s adopted state of Texas with kolaches—a Central European tradition—which are sweet pastries with a circle of cream cheese and a fruit center. To maintain their high-quality standards, Bella Biscotteria is open three days a week—Thursday, Friday and Saturday, from 9am to 3pm. Pre-ordering via their website or by phone is highly recommended. Their focaccia bread is also served at Olive & Vyne and Dude De Walt Cellars in Eagle. Despite the challenges of 2020, the Kutch family remains confident their Italian bakery has found the right location and the right community. “We are doing this for love,” says Robyn and it appears their new Eagle friends share the sentiment.”
