ell summer is upon us and there is something about the season that just makes us all feel in a good mood. It could be the sunshine, the chance to get out from being stuck indoors all winter long, or simply the opportunity to begin eating those crops we planted in early spring. Last month we covered Cancer and Diabetes and we were delighted by the positive feedback. If you missed that issue, then you need to be sure you get yourself a copy from our site. I wanted to say thank you to all our readers, advertisers and supporters. Dr. Lilli Link’s quote really drives home a strong point. It is that we are all ultimately responsible for our health and for choosing the path to keeping it. She also shows that there is really no point in trying to get someone whose mind is set to change. As I work with clients, I recognize the same pattern. Those who are willing to change make progress but those
with closed minds don’t. As a reader of this magazine, I know you are one of those people with an open mind and a will to be in good health. I congratulate you on that. This month our theme is food and the environment. This is a huge theme and could very easily fill volumes. Protecting Yourself from
Radiation Exposure

T
he impact the environment plays on our food supply when eating a high plant-based diet can be helpful or devastating. Fruits and vegetables rely completely on the environment for water, sun, warm weather, minerals and many other factors in order to grow into nutritious foods for us to consume. Unless you are growing your food in a greenhouse or using hydroponic methods, a slight change in the weather can destroy 8
plants overnight. Too much rain, a drought, freezing temperatures, etc. can be detrimental to plant life. I find it miraculous that our Creator allows a tiny seed to grow into strong, beautiful fruits, vegetables, nuts and seeds that we are able to eat. And these foods taste delicious too! is so much detail that goes into the growing process of these foods. But what happens when you are unable to control the environmental factors where these fruits, vegetables, nuts and seeds are grown? Recently, the world was literally shaken when an 8.9 earthquake devastated Japan, followed by a lethal tsunami that took the lives of thousands of people. It is now almost two months into the radiation leaks from the Fukushima Nuclear Plant in Japan, and efforts to contain radioactive emissions are underway. Officials claim that it could take years to cool the facility’s nuclear fuel, and the health risks posed by this radioactive contamination are well documented from other major nuclear disasters like the Chernobyl explosion in the Ukraine that happened in 1986. In 2006, the National Academies of Science issued a report that stated even low levels of radiation can cause human health problems, including cancer, immune disorders, or heart disease. Children are especially susceptible to the impact of exposure from radiation, especially from contaminated foods. This nuclear disaster in Japan is emitting radioactive materials into the air and also into the ocean through water seeping from the plant. Once in the environment, radioactive materials, like iodine and cesium, will spread and can be deposited directly on land or fall to the ground by rain. Eating contaminated fish from the ocean or fresh-water streams can also expose a person to the harmful effects of radiation. Volume 2 Issue 6 |

The government of Japan, the United States, and international nuclear authorities have downplayed the extent of this disaster and the harmful effects this radioactive material has on the public. The three agencies that monitor almost all of the food Americans eat—the Food and Drug Administration (FDA), United States Department of Agriculture (USDA) and National Organization and the National Oceanic Atmospheric Administration (NOAA)—have insisted that the food supply in the U.S. is safe and insist that their agencies are capable of keeping radiation out of the food should it become a problem. The U.S imported almost 150 million pounds of food from Japan in 2010, including crab, anchovies, 5 millions gallons of bottled water, soft drinks and other beverages containing water. But what if these agencies are not capable of keeping the radiation out of the food? What can you do to protect yourself from the radioactive fall-out? Honestly, there is not much we can do to protect ourselves from exposure to radioactive materials. I also believe that we are not to live in fear. Living in fear, and the stress induced by living in fear, can be more detrimental to our health than the actual radiation exposure! The answer then is to help your body heal and assist it in detoxifying after becoming exposed to high doses of radioactivity. If you believe that you are living in an area affected by radiation, there are a few simple steps you can do to help yourself eliminate these harmful materials from your body. And even if you are not exposed, I highly recommend using these helpful methods to assist in any detoxification or healing program. The first step is to immerse in a hot Epson Salt bath. This therapeutic bath will help pull heavy metals and toxins out of your skin. The skin is the major elimination organ of the body, and the salt assists in removing the harmful toxins internally. These baths are actually great to assist with any type of detoxfication! Just dissolve one pound of sea salt or rock salt and 1 pound of baking soda in a hot bath, and soak until the water becomes cool. Do not rinse off for at least 4-6 hours, leaving the salt to absorb into the body. These baths

are harmless yet recommended by a number of doctors to assist in the detoxification after exposure to nuclear testing, nuclear accidents, and leaks from nuclear power plants, which can be found in our air, food, and water. The next step is to start consuming spirulina and other algae and seaweeds, like kelp and dulse, because they contain high amounts of compounds that strip the body of radioactive metals and protect against radiation damage. The presence of iodine and an overabundance of minerals and vitamins in these algae and seaweeds promote healing and a healthy immune system. The benefits of these seaweeds after a nuclear disaster, like Fukushimo, is becoming common knowledge, and supplies are now limited. I recently visited Hippocrates Health Institute in West Palm Beach, Florida, and noticed that the employees were asked to not consume dulse from the lunch and dinner buffet because the kitchen’s supply was low and they were unable to order more because companies were selling out quickly. The chef wanted to ensure that the guests were able to eat the dulse first because it is packed with nutrients that assist the body in healing. Other seaweeds like wakame, mozuku, hijiki, nori and kombu are beneficial as well and should be consumed regularly. Another algae that is important is chlorella. Chlorella builds the immune system, detoxifies heavy metals, normalizes blood sugar and 10
blood pressure, balances the body’s pH, fights cancer, and helps detoxify the liver, bowel, and bloodstream because of its high chlorophyll content. Chlorella and other algae are also abundant in beta-carotene, which is known to prevent cancer and fight cancer in high doses. Edible clays are another great substance to assist in radiation detoxification, as well as taking clay baths. Toxic gases, chemicals, mold, heavy metals and other toxins are drawn into the pores of the clay, absorbing wastes including radioactive contaminants. Zeolite clay, for instance, uses positive ionic charges to attract heavy metals, binding them and excreting them from the body. Bentonite clay is commonly used in colon cleansing routines because it can absorb heavy metals and contaminants in the intestines. Though it is advised to not ingest bentonite clays on a frequent basis because of the high aluminum content. Green clays are also beneficial. Optimum results can be achieved by just soaking in a warm-water, clay bath for only 20 minutes! Consuming other chlorophyll rich foods like wheatgrass, barley greens and e-3 live, a liquid algae, is also highly recommended. These suggestions are only a few ways to help you cleanse and heal from any exposure to toxic chemicals, including radiation. Mock Cheesy Marinated Kale Salad Preparation Level: Beginner Category: Salad Equipment Required: Knife, Vitamix
The Core Salad 1 bunch organic curly kale 1/2 cup sweet cherry tomatoes (cut into half ) 1/4 cup organic red onion (thinly slice)
The Marinate Sauce 2 cups organic sunflower seeds (hulled) 1/2 organic sweet red pepper 1/2 tsp organic Italian seasoning 1/2 tsp organic turmeric powder 1/2 tsp organic lemon juice 1 tbsp maple syrup or raw agave nectar 34

Kale or borecole is a form of cabbage (Brassica oleracea Acephala Group). The colour may be green or purple. The central leaves of Kale do not form a head. It is considered to be closer to wild cabbage than most domesticated forms. Kale is considered to be highly nutritious and anti-inflammatory. June Humour of my favourite greens, full of vitamins and enriched with minerals. It is also been reported as a good cancer fighting food. It also helps relieve constipation, arthritis pain and bladder problems.
Preparation Wash the kale leaves then separate the stem and kale leaves. Set aside all the kale leaves in a large bowl. Prepare the thinly sliced onions and tomato halves in the bowl with your kale leaves. In high speed Vitamix blender add all the ingredients for the marinate and blend until very smooth. Then pour the sauce into the prepared kale leaves, sweet cherry tomatoes, red onion. Thoroughly mix the ingredients well and set aside for 20 minutes to soak in the flavour. Scoop out the marinated kale salad onto a nice serving plate. Enjoy!

Raw Foods Health Session At Scarborough Church By Jenny Berkeley, RN, Health Educator
I
t was a warm and sunny Saturday in Toronto which was wonderful for the health presentation to be given at the Nazareth Gospel Temple church. I was invited to a special function the congregation was having as the health speaker. This predominantly black congregation of Christians in Scarborough were very receptive of the message of health and eating more raw foods in their diet. Some of the participants in the day’s event left at the end of the morning session but those who stayed for my session in the afternoon were Volume 2 Issue 6 |

doubly blessed. I began with a little bit of a talk about my personal health challenge and how I discovered the raw foods movement. Next we went into some of the scriptural reasons for sickness within the congregation of believers. I helped to make the connection between the spiritual implications of eating foods that are factory farmed without humanity or dignity towards the animals that God created. Following this, we went into a raw food demonstration where I explained the types of equipment used in the kitchen
of the health minded. We then had a chance to do a couple of easy recipes. Yummy, the selection I prepared was a hit among the participants. Some even had seconds. This was a fun, healthy and tasty two hour session which everyone enjoyed. Those who participated gained a lot of information to help them on their health quest. I want to thank the Nazareth Gospel Temple church for inviting me out and wish the group good health in their journey. Remember, good health is your birthright, keeping it is your choice.

Inspiration Victoria Boutenko The inspirational person I have selected for this issue is Victoria Boutenko. She is a person who is not only a health advocate but also demonstrated a mothers loves that surpasses any limitation of a disease. Her story is about when she came to America from the Ukraine. She, her husband, and her two children were so amazed by supermarkets in America especially since food was such a scarcity in the Ukraine following the collapse of communism. She and her husband believed that since the food is in the supermarket, it must be good for the customer. Victoria was determined to try everything in the grocery and she did. She gained a tremendous amount of weight and was severely obese. Her family also had the benefits of trying all the varieties of cakes, candies, sweets, cereals, and all the other processed foods in the grocery. After doing this for some time her entire family became sick with different diseases. Her daughter has terrible asthma and was frequently having breathing difficulties. Victoria was obese and suffered with the diseases that accom42
pany that condition. The tipping point was when she was told her son had diabetes and would require insulin injections for the rest of his life. Victoria’s motherly instinct kicked in to protect her son. She had seen the impact of diabetes on another family member who died. Victoria’s memory of that experience was that it was very unpleasant and she didn’t want that life sentence for her son. She looked high and low for an answer. She would stop people on the street and ask them if they knew anything about health. People must have thought she was crazy but she was persistent. Her mother’s love refused to let her quit. Finally one day she found someone who looked like an angelic being, a woman who was glow-
ing and radiant with health. She offered the woman a cup of coffee to talk about health. The woman told her she will tell her about health but the woman did not eat the foods Victoria ate. Victoria was curious. As it turns out, the woman was probably the only raw-foodist in the city at the time. She had found the proverbial needle in the haystack. Her family all switched to the raw foods lifestyle. Her children no longer had their illnesses. Her daughter’s asthma was cured. Her son’s diabetes was cured. Her husband also received numerous benefits and Victoria herself lost a massive amount of weight and reversed many of her conditions. She went on to write numerous books on the lifestyle, teach lectures in her community and transform her world. All this because of the unstoppable love of a mother to find a better way for her child’s sickness. Mothers can change the world and Victoria Boutenko is my inspirational pick this month.
