As far as the fish smoking equipment is concerned, high demands on technology are to be met in due consideration of economical requirements. EMF, exclusive agency for Ness smokehouses, offers this advanced type of equipment with incorporated Circo Smoke system速 which stands for economic and at the same time environmental-friendly operation.

F R EE Z ING For fish processing EMF delivers highprecision machinery and equipment only, e.g. defrosting systems, intermediate and final stores, conveyor systems for small cuts and portioning or band saws, as well as portion cutters to cut pieces of an exact weight, tumblers and injectors for marinading as well as machines for the packaging of the products on ice and complete freezer systems.

All machines supplied by EMF are in accordance with the latest EU hygiene directives and the current technical standards which are applicable for the respective building site. You can therefore rely on acquiring a perfectly processed, high quality product.

For the production of salted or marinaded fish we supply you with injectors and vacuum tumblers as well as with the appropriate mixing and filter technology. Various injectors are available ensuring optimal injection results of the highest quality. Another element of our scope of supply: systems for brine production also suitable to mix in additives. The models offered are generally adapted to the respective injector. As they can be delivered with a cooling jacket, you get a constantly high brine quality while keeping the microbiological load on

an optimally low level. In addition to this, it is possible to separate suspended particles by means of filter systems to ensure even spreading of the brine over all of the injection needles.

This technologically important section of the production chain has a significant impact on the overall quality, the outward appearance and the shelf-life of the product. Moreover, smoke gives a very special taste to the products and creates a unique flavour. EMF delivers thermal systems for hot and cold smoking, drying, cooling, and for climatic smoking and maturing. As far as the systems for smoke generation are concerned, you can opt for friction, smoulder smoke, and liquid smoke generators. The systems ensure continuous production and minimal thermal loss. Furthermore, they work as closed systems, i. e. additional cost, for example for afterburning systems, catalyzers, or air washers will not be incurred. The bodies of the systems are made of high-grade steel and hermetically welded. This closed concept provides optimal utilization of the smoke and is energy efficient, with small quantities of wastewater and a low degree of pollution of the smoke tubes.

Depending on their application, our vacuum tumblers are offered and delivered with or without cooling jacket. In this way you always get optimal results while your product is treated with care. Scale ice machine

Regardless of the method, i. e. hot smoking or traditional cold smoking - with Ness smoking systems you have defined and standardized conditions of maturing and drying. This is consistent with using a safe high quality product.

C i r c o - s m ok e ® A n d c i r c o - dry- S yst e m ® Ness, the only manufacturer of smoking and drying systems for fish, presents a new generation of UNIGAR smokehouses with incorporated Circo Dry system® for all models, even for the one-trolley smoking chambers.

The advantages of the systems are:

Reduction of up to 50 % of the time required for drying and smoking of all products. Saving of energy in nearly all stages of processing by outstandingly effective process conduct and owing to the Circo Smoke system®. Reduction of the weight losses by optimized programming and exact moisture control. Even drying and smoking of horizontally placed and hanging products by optimal air flow inside the chamber by means of incorporated air deflectors and a changeover flap allowing to direct an horizontal air current alternately from left to right around the products on the smoking trolley. During the air drying or smoking process the systems operate without being in contact with the atmosphere. It is only for some minutes of the process that the system is in contact with the atmosphere; this reduces odour nuisance to a minimum. No inappropriate or polluted outside air is applied, and the units can be operated using the same programme for one product regardless of the season. Up to 24 plants can be connected to the NESSview system for process visualization, documentation in accordance with HACCP, and programme management.

• These smokehouses allow the even processing of vertically suspended fish like trout, mackerel, herring etc. and horizontally placed products like salmon. Optimized air flow conditions inside the system and the Circo Dry system® provide the appropriate degree of dehumidification as a part of the processing air outside the system. A specially designed dehumidifier allows the circulating air to adapt perfectly to the desired degree of humidity and to the required temperature.

Well-known products are fish fingers and fish burgers, but also complete ready-toserve fish meals with rice and vegetables.

CAN S You want to produce fish cans? EMF has the corresponding lines. Regardless if the fish is canned as raw, fried, steamed, or smoked product, or if with sauce, brine, oil, or any mixture of vegetables - all varieties are possible.

Depending on the desired capacity, the product, and the packaging we design your canning plant from the inception of the raw product up to final packaging of the cans in cartons or on trays. Of course the traditional round or non-round can made of tin or aluminium is not the only receptacle that is appropriate. In addition, and depending on the product, jars with twist-off caps or advanced packages as stand-up pouches (DoyPack) can be processed as well.

Primarily, the purpose of packaging is to protect fresh products, salads, and convenience products. These products need to be delivered from the manufacturer to the consumer without deterioration caused by microorganisms, mechanical impact, or climatic conditions. Secondly, packaging serves as a visual presentation of the goods on the shelf and consequently, for sales promotion. EMF supplies the equipment to package the product no matter which packaging system is intended, for any application, and for various product quantities.

Regardless if you wish to operate vacuum packaging machines*, systems to shrink vacuum pouches, stretch film packaging units, tray sealers or deep-draw packaging machines - with one of our manual or automatic labelling or pricing systems added you have the choice among a multitude of options for various applications. All machines are designed to deliver optimal performance in daily practice; they are compatible with peripheral devices such as slicers, metal detectors, carton processing equipment. We have the right machine for any application. * It is acknowledged that it is also possible to use inert gas (MAP) for some types of packages to preserve the quality of the product and to prolong shelf life.

The scales offered by EMF are designed especially for the food plant industry and meet all the requirements for operating in damp areas. Naturally, all weighing machines are compatible with existing computer systems, i.e. data management and can be altered in accordance with your individual needs. Complying with hygiene rules is an essential component of quality management in food production.

In addition to the main equipment required for the production process EMF also delivers all related items.

Therefore, devices for personal hygiene, for cleaning and disinfecting of appliances, equipment and containers as well as for the cleaning of production areas are absolutely necessary.

These include tables, pallets, transport containers, smoking and feeding trolleys for lifting and tilting units, cooking moulds, transportation equipment, labour protection equipment as well as workwear and hygienic clothing. Some of these products are manufactured in our own manufacturing plant in Barth.

EMF provides the right equipment for any application and any size of plant. Our large scope of supply includes mobile cleaning devices as well as highly efficient stationary cleaning and disinfecting units. Laboratory equipment for the examination of samples taken for checking the achieved cleaning and disinfection results are also part of our delivery programme.
