In August 1998, the American Cheese Society established National Goat Cheese Month to promote the benefits o f cooking with goat cheese. August was chosen because young goat cheeses are at their peak, made from milk produced in spring when goats consume fresh vegetation. Goat cheese production dates back to around 5000 BC, spreading from the Mediterranean to Eastern Europe, Africa, Southwest Asia, and India. Early American settlers also brought goats with them.

This passionate man devoted 10 years of his life to developing a recipe that Fromagerie Guilloteau still uses today in the French countryside. In 1981, he made his first cheese using a unique approach to cheese making that filtered the milk and kept the best it had to offer! The cheese features a unique thin rind, a unique taste and a melting texture.
The cheese-making savoir-faire has remained the same: that of Mr. Guilloteau. His knowledge has been passed on by Fromagerie Guilloteau cheese makers for over 40 years now Fromagerie Guilloteau uses only fresh milk from local French farms that is never more than 24 to 72 hours old, adding even more value (and flavor!)

INGREDIENTS:
Grits:
• 4 cups water (whole milk or chicken broth)
• 1 cup stone ground grits
• 3 tbsp butter
• 2 cups shredded Big John’s Cajun Cheese
• Salt and Pepper to taste
Shrimp:
• 1 pound shrimp (peeled and deveined)
• 6 slices bacon. diced
• 4 tsp lemon juice
• 2 tbsp chopped parsley
• 1 cup thinly sliced scallions
• 1 large clove garlic. minced
• 2 cups multi colored grape or cherry tomatoes
• 1 tbsp butter
• Shredded Iceberg lettuce
DIRECTIONS:
1. Bring your water (or milk/stock if using) to a boil.
2. Stir in grits and cook until liquid is completely absorbed,
3. Remove from heat and stir in cheese and butter.
4. Fry the bacon in a large skillet over until browned.
5. Remove bacon and chop. Remove most of the excess fat.
6. Keep some fat in the pan and add your tomatoes to blister
7. Remove tomatoes from heat.
8. Add some of the reserved bacon fat,cook shrimp until pink.
9. Add the lemon juice, chopped bacon, parsley, scallions, garlic tomatoes and sauté.
10. Be sure to keep the pan moving to prevent garlic from burning. This should take 2-3 minutes.
11. Add the butter to form a sauce and let thicken enough to coat the other ingredients.
12. Serve the grits in a bowl with the shrimp mixture on top.
13. Enjoy with a beer of your choice.
