It’s time for the Green to grow up and the Green team have put an unfathomable amount of love and time into growing this the 332nd issue. In fact, making this Green was a lot like birthing a baby!

There were years of planning and preparation. Lots of ideas and so much excitement, at the prospect of what we wanted to offer our readers. The long, long, long, painful birth, was followed by pure joy and pride when the Green was finally delivered to you.

This new look Green still has at its heart, the desire to connect people and showcase our stunning hinterland. And it’s still the contributions by our remarkable locals that will continue to make the Green so unique and well read. This issue should feel familiar with similar content, but presented with a fresh format. But now that we’re going monthly and have a Marketing & Distribution manager joining the team, we’re able to cover more of the hinterland, as well as give our articles and photos room to breathe.

We hope you’ll enjoy taking your time reading this Green – and go back to articles and photos that interest you. That you’ll show and share the Green with family, friends and visitors. And that you’ll feel connected and proud of this beautiful hinterland community and its people.

Growing up in the hinterland

We may have all found ourselves in the Noosa Hinterland for different reasons, but the motivation for us living here has a common thread. It’s a beautiful, safe place in the country. Creative people from all walks of life, from all over the world, who value diversity and community, as well as a love of the arts and the land, live here. And with its connection to nature, wonderful schools and affordable properties, it’s an incredible place to raise children too.

As screens become ever more present in our worlds and that of our children, parents look to giving their kids more time spent outdoors and a connection with nature for physical and mental wellbeing.

In March 2011, Planet Ark commissioned an independent study to investigate childhood interaction with nature and how this interaction is changing. The research revealed that one in 10 Aussie kids play outside once a week or less.

But does living here in country towns really impact on the way kids engage with nature? The

Green spoke to three hinterland mothers, about why they settled in this pocket of green and what it offers their children.

a small, conscious community surrounded by forest and mountains and an ocean we could swim in all year round, with four growing seasons, good soil and high rainfall so we could exercise our permaculture muscles.

How do children benefit from spending time outdoors?

There are a range of psychophysiological benefits.

Some of the main benefits I notice within the Natureweavers’ tribe include: improved

concentration; increased resilience; better able to manage stress; decreased anxiety and increased positive mood; able to assess and manage risk; better able to think divergently and critically assess; increased creativity and imagination; increased connection to the environment. Children who spend time outdoors know they can climb trees like monkeys, cross log bridges like panthers, and chill in hammocks (that they tied up themselves) like sloths.

CO M M U N I T Y You teach children about nature - why are you so passionate about it?

My background is in environmental advocacy and, prior to starting Natureweavers, I spent 14 years working in the NGO sector attempting to orient adults towards more environmentally sustainable ways of working and living.

When my husband Cam and I had children, I quickly realised that we humans are born with this relationship in our hearts and minds and bodies – a kind of foundational empathy for nature – and I became interested in how and why and when we lose this foundation as we become adults, and what the implications were for environmental sustainability.

My research uncovered that environmental stewardship in

adulthood is directly related to children’s time spent outdoors, playing freely, alongside an adult mentor. David Sobel said, “If we want children to flourish, to become truly empowered, let us allow them to love the earth before we ask them to save it.”

More recently, as my own children move through adolescence, I see them change from a largely outdoor life to a more indoor one. I want to ensure that their relationship with nature remains. There is a transition from the lovely, inner-world loneliness of early childhood to the externally focused, social world of peers.

There is a separation from parents that is inevitable and appropriate. Their social world grows and becomes more important than spending a Cont’d overleaf

Why do you like raising kids here?

We moved our family five years ago for the safe, friendly environment and open spaces to roam. sunset by the sea with mum, or climbing the poinciana with dad. But these natural, human developmental processes don’t negate the need for a relationship with nature. How are you finding raising your four kids here?

Well balanced - we are far from city yet still have everything we need. Its safe and so much to explore naturally. We can’t stand indoor play centres and amusement parks or crowds, we’d much prefer our kids grow

up rolling through the grass, alongside animals and with space to stretch their legs and get creative and dirty.

There are so many pros to living here; fresh air, open fields, space to watch the moon rise and sun set, wildlife, not far to amazing beaches. Plus, it’s affordable and there’s a very supportive community. Cons to living here?

There’s just one - when family visit they stay for way too long – Ha ha, kidding!... am I though?

We moved to Eerwah Vale nine and a half years ago from Moy Pocket (near Kenilworth). The property on Eumundi Kenilworth Rd was up for lease and this 10

There’s lots of room to play and heaps of things to do outside like; biking, kayaking, swimming and fishing on the dam, tree climbing, making cubbies with sticks, camping, campfires and camp oven dinners – you don’t have to go anywhere to entertain the children! Plus, there’s plenty of space to grow produce to eat and our boys know where our food comes milk comes from a cow and eggs from a chicken!

When did you move to the hinterland?

Living on a working dairy farm teaches good work ethics and allows them to have more experiences. They’ve all helped with the running of the farm since a very early age. On the holidays they will be up at 3.45am to bring in the cows and do other jobs such as feeding baby calves, filling up grain buckets, helping with milking, hosing out and fixing fences. As they get older they learn to drive the tractor and do paddock work.

This is simply not true. All teachers have the same basic training, all schools get funding - some more than others. Yes, the education may be delivered in a different environment, but it depends on the team of teachers and their leader and the connections with parents and the community and many times that is better in regional areas.

We feel they are having an amazing upbringing and hope they appreciate what the land has given them when they are adults. The boys have only lived in the country so don’t know anything else. We have family in outer Brisbane and when we visit we notice how busy the traffic is and how close the houses are to each other. The boys do struggle with soft voices and confined spaces.

We do have neighbours but they are a paddock or two away. The boys will walk the paddocks for a playdate and vice versa. All their friends love coming here as there is always an adventure to be had. They have 200 acres to explore here and it is an amazing natural playground right on their doorstep. We feel very blessed to be living on this beautiful farm.

Our kids grew up in Sydney. We had a Kombi and went camping most weekends and holidays.

We moved here in 1992 because in 1989 my husband took our son on a surfing safari. They arrived in Noosa and told me to get on a plane and buy a holiday house. I did that and had the worst house on the best street not far from the Sheraton. We moved up permanently three years later for my health.

There’s the concern that children don’t get a good education in the country?

As a Grandma can you see the benefits of country living?

The schools are relaxed and friendly. The grounds are lovely, functional and engaging. The air is fresh. There is a diversity of people who live here for the same reasons. There are many things to do outside; from the beach, lakes and rivers to walking trails. There is room for animals, horse and bike riding, climbing, flying and everything in between. There is room to grow trees and build gardens, to explore abundant wildlife and interact, follow the seasons, see the water on the roof go to the garden, feel the gentle coolness under a transpiring tree, hear the birds and the fall of water, lay awake listening to the choir of frogs and at night see the stars.

Local Government elections are held every four years. The next council elections will be held on Saturday 28 March.

I strongly support greater transparency and increased community consultation in council. Council needs to achieve a sustainable environmentally focused development that supports the divisions projected population growth, employment and infrastructure needs across the whole division.

Previous career: Air Force Where do you live: I’ve lived on the coast for 22 years. In 2005, I settled in Coolum and in 2011 my family moved to Peregian Beach.

Why are you running? There are many examples that show council operate from a top-down approach, including too many closed meetings, bad management of the PFAS, overly dense development approvals resulting in traffic burdens and increased parking fines, poor consultation on projects impacting communities such as the flight paths and refusal to investigate roadside collections.

Community upwards listening is urgently needed.

What do you stand for? Prioritising rate payer funds for better roads, footpaths, infrastructure and roadside collections. Ensuring development is sustainable and in line with the town planning scheme. Open meetings. Protecting and enhancing our natural assets and supporting industries that provide well paid jobs with career opportunities. As a mother, military veteran and educated professional who lives and breathes my daily life throughout Division 9, I will be a strong voice for the change that is desperately needed.

A letter to the community I have been the councillor for Division 9 for the last eight years (two terms) and I will not be running for council in 2020, essentially this is due to family health challenges which requires more of my time at home. After the election I will be seeking a parttime or consultancy role on the Sunshine Coast.

In terms of highlights, I have been very proud of my role in helping deliver the major projects such as the Solar Farm, the new Sunshine Coast Airport Runway, the Maroochydore City Centre/Smart City and the International Broadband Submarine Cable.

Additionally, I have equally loved the challenge of my Economic Development and Innovation portfolio and the huge team effort needed to help transform the region’s economy into one that is more diverse, high-value and growth oriented.

From a community perspective, it has and will continue to be an enormous privilege working with those amazing community volunteers to assist in the provision of frontline services that is so essential to our community. In my first term it was an honour to serve a large part of the Eumundi community although this changed due to a boundary realignment for my second term.

Where do you live? I live in Nambour. I moved here 18 years ago with my wife Karen to raise our family.

Why are you running?

I want the people to have a strong, authentic voice within council to direct funding to the Hinterland towns and lead revitalisation in Nambour. My 20-year career working in the disability sector has taught me how to advocate, negotiate and create positive change at senior management level.

Above all I stand for community; I will represent the best interests of the majority of residents in my decisions. With planning applications, I will support development that is socially and environmentally responsible. I will also seek to strengthen the creative arts in my Division and support initiatives that promote physical and mental health.

I endorse the push for transparent governance; council meetings should be public and all councillors fully accountable to the people who voted for them.

I will be ‘pulling up stumps’ in March on my political career, not that I really and truly want to. The decision has been largely made by my wife (Lesley), after standing steadfast by me over the last eight years as a Sunshine Coast Councillor and four years previous to that, as a Councillor within the Maroochy Shire Council. My role of Councillor relied very heavily on the unequivocal commitment of my wife and family, due to the fact that I saw my role as a 24/7 commitment to the residents of Division 10 and indeed the entire Sunshine Coast community.

I absolutely loved serving the community and that’s not to say there hasn’t been arduous moments, because there certainly has been, but all in all, I derived a great deal of pleasure and satisfaction out of the job and can genuinely look back with a true sense of accomplishment with actions I performed and people I have helped.

Division 10, whilst having approximately the same number of constituents as the other divisions is by far the greatest in size and I believe it has the largest number of individual towns/centres. I took pride in making sure that I looked after all their individual requirements and aspirations.

So whilst, I got the Terraces done for Eumundi, the Heritage Tram for Nambour, the Designer Dunny for Kenilworth, new playgrounds and paths for the Mapleton LillyPonds, no one specific project takes pride of place in my memory! What I can tell you unequivocally though, is I got the most satisfaction out of helping people and listening to their plight and working out an amicable solution for them!

I will dearly miss the personal interaction with all the individual community groups and the personal contact with a vast array of constituents.

Finally, I wish whoever is elected by the residents of Division 10 as their Councillor in March, all the very, very best and offer my congratulations to them and if I can be bold enough to relay a couple of well known phrases which they might consider! The first phrase is, “Only fools and children criticise unfinished work!”, and the second is, “You only get out of life, what you’re prepared to put in!”

It wasn’t that long ago that our emergency service personnel were on the front line, defending local homes and property, including hundreds of hectares of vegetation and wildlife.

So just prior to Christmas, it was great to partner with the Imperial Hotel to make a special delivery to our local emergency service personnel. Armed

with cases of beer, the token of appreciation for our local police, firies and SES was warmly received.

Many of these front line heroes are volunteers, and I was pleased to see the State Government has followed the lead of other states and territories to ensure our volunteer firefighters and SES workers are eligible for compensation as part of the Federal Government’s Volunteer Firefighters Compensation Package.

With students returning to school this month, don’t forget to slow down in school zones.

During drop off and pick up periods from; 7am-9am and 2pm-4pm, the speed limit in school zones is reduced to 40km.

And don’t forget, harsh new penalties kick in from 1 February for motorists caught using their mobile phones while driving, with fines increased to $1000, and the loss of up to four demerit points.

Tips when applying for jobs

If you are in the market at any stage of your career, you may find this information worth considering when applying for a job in writing.

The resumé LinkedIn and other online platforms are going to replace the traditional resume or CV, however for now your CV is still important. So when you sit down to write your CV consider the following: • Write a generic CV and customise it for each specific job you apply for.

• If you are applying for a job online understand a human or an algorithm (software) may be reading it.

• A human normally will make a decision about your CV within 15/30 seconds or less…. yes really. Therefore, make sure you make your key point first and bold things you think your employer may think are significant.

• Make sure you read the job carefully and include the specific words and skills, the employers ask for in the ad.

This is particularly important if an algorithm is reading it.

• Get your CV checked for spelling errors. It’s hard to review your own work.

• A maximum of two pages unless otherwise requested.

Sell yourself on paper and in person Ask yourself why you are the best person for the job before you start and sell it. Sometimes you may have self-doubt. So, does 40% of the population. Put the doubts aside and sell yourself.

The major opportunity to sell yourself is your introductory letter.

Three solid paragraphs can

be a good rule of thumb for a routine CV. Make sure you include key words that are used in the ad. For example, if they say managerial, team or computer skills use those key words.

If one is not requested, have an introductory paragraph at the beginning of your CV. There is a lot of competition out there so get on the front foot.

Even in the technological age, many jobs are obtained through networks and relationships • Depending on the job, you may want to contact the company or the person to get further information before customising your CV. • Provide referees on request.

You may want specific references for different jobs.

• You have more contacts than you think. Use them.

Additional studies • In this age when lifelong learning is important, demonstrate you are learning or have learnt something recently. It could be as simple as obtaining a driver’s licence or studying something of interest.

• People applying for their first job are often teenagers who are getting some extra cash and very wisely getting some work experience.

Demonstrating you have work experience almost doubles your opportunity.

Be resilient and manage expectations Sometimes it is very disappointing when people don’t respond, or you get a oneline note saying they received your CV and that’s it. Believe me you are not alone. You have to think like a fisherman; The more bait’s in the water the more likely you are to get a catch.

With rolling hills and hot, balmy days (thanks to humidity from the recent rain) one of our favourite ways to spend an afternoon with friends, here in the hinterland, is on a deck, or under a canopy of trees, relaxing with a sundowner in hand. Combine that with a drive through rolling green hills (also thanks to the recent rain) and you’ve got yourself unequivocally the best brewery trail in Queensland and one of the best worldwide.

2017 was a big year for beer lovers when two of our favourite Noosa hinterland towns decided what they really needed was a brewery!

The Imperial Hotel reopened Eumundi Brewery (there was a brewery on site in the 80’s and 90’s) with one of the best brewers in the biz, Chris Sheehan (head brewer at Malt & Shovel and Byron Bay Brewing) at the helm. From the very first brew Eumundi Brewery was an all class operation and the beer was coffered quickly. Canning of the Eumundi Pale Ale and Lager has meant these popular brews are infiltrating pubs, restaurants and bottle shops across the Sunshine Coast. But Chris also offers small batch craft beers inspired by the seasons and local flavours, that are only available at the Imperial. With its leafy beer garden, regular brewery tours on Wednesdays and Saturdays, live music and country town hospitality, it’s hard not to lose a whole

When rumours started circling that Jason and Sharon Fox were opening a brewery and restaurant in Cooroy, people started licking their chops in anticipation. This dynamic duo (behind hotspots like Whisky Boy and Jimmy Fox) have the Midas Touch when it comes to creating establishments full of great flavours and incredible atmosphere, and Copperhead delivers both. We hinterlanders no longer have to head to the bright, white lights of Noosa for a night out, Copperhead is our favourite excuse for putting on some classy threads (eg: wearing shoes, a button up shirt and a bit of lippy). beer that you wouldn’t normally drink - our sours are a perfect example.”

“People’s first impression is, ‘I’m not sure about that’, but after they finish the beer they say, ‘actually I really enjoyed that!’ which is the point of a tasting!”

Jason’s ‘Must Try’ beer is Copperhead’s Irish Red. “Our very first beer brewed, it has remained one of our biggest sellers, the toasted barley gives it a distinctive rich, red colour and caramel notes”.

Since the grand openings of the Eumundi Brewery and Copperhead, craft beer lovers have watched in glee as more breweries pop up all over the hinterland (check out our map on p.20).

One of our favourite country drives is heading out along the Eumundi Kenilworth Rd for lunch at the Kenilworth Hotel. Since Steve and Di Conway began their microbrewery in 2019 (officially it’s not open!) there’s an even bigger incentive for a mini road trip! The brews have been flowing so fast they’re

Di shared their secret to success is brewing quality, craft beer onsite and matching it with great atmosphere to, “sit and chill – and good glassware!” Di explained Kenilworth Hotel’s stand out beer this summer has been the Dry Hopped Ale. Beer lovers want… “to try new flavours - they are more appealing than the normal mass produced,” she enthused.

“We have been brewing on a small scale and will be up and running by end of February,” Di promises.

Brewery tour guide Bob shared his pick for the ‘Untapped Hinterland Brewery’ is new kid on the hill Terrella Brewing in North Arm. “Terella seems to be giving it a red, hot go with good beer and the venue is coming along nicely,” he shared.

Their standout beer is Terella’s brown honey ale,” Bob raved.

With eight craft breweries only a short drive from each other, through picturesque countryside (and another four on offer a little further away), you may want to devote a couple of weekends to hinterland brewery touring. The country drive has never tasted so good!

The 2020 calendar of exhibitions is set to engage and stimulate the senses with a wide variety of creative and innovative works.

Wan’din’in Art Space is a multipurpose community space for meetings, workshops, arts and heritage exhibitions. The word Wan’din’in means a gathering of people in the local indigenous Kabi Kabi language.

Starting off the year is A Fresh Look, the inspired artwork of Don Violi. His exhibition stems from his love and fascination of the local landscape. Dom said, “the changing colours and light on the mountains and trees provide a constant inspiration for my work.”

Roger Callen will then present an exhibition of work aptly named Intersections, where he takes a closer look at the massive disconnect we find ourselves in, with nature and people’s relentless destruction of it.

These tiny worlds with their intricate patterns and textures offer limitless inspiration.

C U LT U R E Cont’d from pg 24 Next will be Beyond the Muse an exciting collaboration by three artists challenging the idea that art is inanimate. The aim of this collection of acrylic artworks is to channel positive energy through to the viewer.

To follow is Weather Patterns, a thought-provoking exhibition

by Susan Neuvonen. Weather influences our moods, our daily activities, what we wear and is broadcast to us after every news bulletin. Recently, severe weather events associated with climate change have begun to influence Susan’s work.

Responding to the Locals in August is an artistic undertaking

by Noosa Pengari Steiner School year 11 art class. The students will interact with their local community through inquiry and visual exploration, which will include visits to Discover Eumundi (DE) to delve into the heritage collection for inspiration. Using this research and observation they will create a body of artwork in a variety of mediums, to display in Wan’din’in. In creating their project, the students will also gain valuable skills in art exhibition setup, curation, and promotion.

To round off the year DE will present the Eumundi Houses Project in a three month exhibition. In 1998 a Street Survey was done of the streets of Eumundi, with photos taken of the front of houses and business houses. All these houses and new houses are currently being photographed again as part of this project. The exhibition will include a selection of the 1998 photos with photos of the houses and business houses as they are today. Also included will be information, memories, locations, ownership details and old photos of Eumundi houses from the heritage collection at DE and also the public.

40 under 40 exhibition opening A crowded Butter Factory Arts Centre in Cooroy packed 450 people into the venue for the 40 Under 40 exhibition opening. Showcasing art by 40 locals, the five-piece Cooroy band SuperYacht and funk DJ Brett Riley kept the crowd entertained. Butter Factory coordinator and cocurator Alicia Sharples said most of the art lovers were a younger crowd of first-time visitors.

The project was the brainchild of co-curator and artist, Amanda Bennetts who shared, “I really think when you add good art, music, poetry, live art demos and fuse that with good food and locally brewed beer, you create an event that is accessible to all, with people attending who may not usually venture out to art exhibitions.”

New fitness habits for 2020!

K E E P I T S I M PL E B U T I N T E R E S T I N G Start with a simple exercise regime that will inspire you. Walking in nature is great for this by encouraging you to move through different terrains, landscapes and see new things. Add some hills for a little heart rate elevation! Vary your walking routes to avoid it becoming mundane. The beach, trails, footpaths.

If time is an issue try short exercise sessions and mix each session up with a combination of cardio, strength, balance and mobility to keep it varied - diversity prevents adversity. Start small and build momentum. Group fitness classes or walking groups are both stimulating and motivating because it’s social and we are social creatures! You’re then less likely to lose interest if you struggle with self motivation.

M = Measurable - your goal needs to be quantifiable to track progress. Set benchmarks and consistently challenge them to know if you are on track. You don’t want to plateau.

A = Attainable - your goal should be realistic. There is no point setting yourself a task that is not achievable. Rapid weight loss is not healthy weight loss.

R = Relevant - the goal aligns with your mission: the right type of training for your desired outcome T = Timely - your goal has a deadline. For example: if weight loss is your goal instead of saying that you want to lose weight give yourself a timeframe to work to. Make sure it is realistic!

KEEP IT REAL Have you heard of S.M.A.R.T goals? This is a simple tool used to set an actionable plan for results.

S = Specific: being specific about what you want to achieve keeps you focused and less likely to lose interest and motivation. If your goal is too vague you simply won’t do it.

With exercise it will take a good 2-3 weeks for the body to start to adapt to your program.

BE ORGANISED Make new habits and plan ahead. They say it takes three weeks for something to become habitual. Schedule in your time every day to work on you. Make an appointment with yourself

and don’t miss it. If you write your task down and tick it off or book yourself into a class you are more likely to stick to it. With exercise it will take a good two to three weeks for the body to start to adapt to your program.

It’s worth sticking at it for at least this long to allow the mind and body to create a pattern and adjust. Aim for consistency and sustainability.

Active kids for healthy life

It’s the start of the year, start of the school term and start of many team sports. Choosing a sport to keep your kids active after school and on the weekend is a great way to keep children fit and healthy, as well as teach them how to work with a team and network with friends outside of school. And it’s never been more important to establish a healthy lifestyle of exercise and nutrition early in life.

The Australian Institute of Health and Welfare reported an alarming rise in childhood

obesity in 2019, with one in four Australian children (aged two-17) overweight and global estimates

currently at 340 million for children and adolescents (aged five-19).

Investing in a sport for your kids also gives children the opportunity to develop social skills they will apply to work and friendships throughout their lives, as well as the opportunity to advance sport’s skills they can take into competitive sports in high school and continue to enjoy throughout their life.

But there’s plenty of different

codes so how do you choose what’s right for your children?

Plus, when you sign your kids up for a sport, you’re also signing up the family to a commitment of driving to and from training and games that can take you all over the Sunshine Coast and eat up the better part of your weekends.

Breakfast grows healthy kids

As school returns for 2020 it’s a good time to be reminded of why healthy breakfasts are important and why cereals really are just puffed up nothing.

We have all heard the saying “Breakfast is the most important meal of the day” and why is this? All meals are important, it’s just that breakfast it is the first meal of the day after the body has rested, digested and rejuvenated itself during the night. Breakfast is the first opportunity to nourish the body with essential micro-nutrients for healthy brain and body development, focus and concentration and enough energy for physical activity.

Now a nutrient dense breakfast doesn’t come in a packet. Never has and never will! Nutrients are best absorbed in their natural state so highly processed, puffed, cracked, flaked cereals with added sugars just do not cut it. They’ve been fortified with nutrients and yes they are easy and quick, but they just do not provide enough wholesome goodness. When you think about the fact that breakfast is usually eaten at 6

or 7am and a morning tea break or school recess might not be until 10.30-11am; then breakfast needs to have fats, proteins and carbohydrates to provide sustained energy release, otherwise energy levels and learning can suffer. If breakfast is nutrient packed it reduces the energy slumps, cravings and low blood sugar issues often present in those who don’t eat breakfast or do not eat enough of the right breakfasts.

Ingredients for base

Method

1 cup almond

To make base

1 cup coconut shredded

Pulverise almonds and coconut until fine meal

4 dates

Add salt and dates

Good pinch salt

Add coconut oil if required to bring it together. Press into spring form or tart dish

coconut oil

To make filling Blend cashews (with most of water drained)

Ingredients for filling

Add remaining ingredients except berries until smooth and creamy

1/2 cup cacao buttons melted

Pour 1/3 mixture into base and then add berries to remaining mixture and blend again.

3/4 bag frozen berries of choice 1/2 cup honey or maple syrup

Pour on top of previous mixture making swirling pattern and put in freezer for 3-4 hours or overnight

Pinch salt 1 can coconut cream

Either let it defrost for a good hour or overnight when you want to eat. It tastes best when it’s smooth and creamy. I take the whole cake out, slice it up and return it to freezer in portions I can get out a slice at a time as needed.

• Leftover rice with seasonal greens and herbs from the garden. Fry garlic, ginger, onion or shallots in some sesame oil, throw in the greens & rice, then serve with Tamari and toasted sesame seeds.

Ingredients 5-8 slices bread of choice 3 eggs 1/2 cup milk of choice Spices of choice (mixed spice, cardamom, coriander seed, salt and pepper etc.)

1 bag frozen mixed berries or frozen raspberries 1/2 cup honey or sugar of choice Mascarpone cheese or other to serve Method Place berries and sugar in bowl and let it simmer slowly on stove whilst you cook the French toast.

Place egg, milk and spices into bowl and whisk together into medium frying pan with coconut oil.

Place bread into egg mixture then cook in frying pan until golden on either side.

Repeat with remaining mixture.

Serve with dollop of mascarpone, maple syrup, berry compote, or even cream if you wish.

Method

1 onion (red or brown)

Slice onion and fry over medium heat in frying pan with oil of choice, add crushed garlic.

2 garlic cloves

Add beans and tin tomatoes

1 can beans of choice

Add spices of choice, stir well and let simmer for 10 minutes

1 tin tomatoes Toast of choice

Make 4 little holes in the mixture where you can crack an egg and then put frying pan lid over and lower heat. When eggs are to your liking remove from heat.

Spices include cumin seed, coriander, salt and pepper, curry powder optional)

To serve, toast bread and using egg flip to scoop mixture with egg onto bread.

An education in adventure

Eumundi has been home to our family for a decade, but in 2018 my wife Arzu and I made the decision to leave the everyday routines behind and set off on a backpacking adventure around the world with our two kids.

We had waited until our youngest son was able to carry his own gear. So, they emptied their little school backpacks of library bags and lunch boxes and loaded them up instead with the wares of world travellers.

We had been keen travellers in our youth, but our backpacking years were not only BC (Before Children) but also in another world that was pre internet. There was no Trip Advisor or mobile phones, instead you were relying solely on Lonely Planets and conversations. It was amazing to see how much travel has changed. We had to learn a lot as we went; both how to backpack in the modern world and how to do it with children.

incredible months in India. By the time we hit Delhi we were in the groove of life on the road so nothing India could throw our way fazed us. In fact, it was the unanimous highlight of the trip. We travelled via; planes, trains, automobiles - plus ‘chicken’ buses, ferries, canoes, rickshaws, motorbikes, camels - and of course lots of walking.

boys would settle back into the Eumundi routines and school. Our norm had become long adventurous journeys, snow-capped mountains, elephants, howling monkeys, naked holy men, crazy tuk-tuks, haggling for food, hanging off trains, yaks in altitude, jostling venders and NOISE!! Would Eumundi seem a little boring and quiet?

It was epic and life changing and we returned in good health – bar the odd mishap… There was that one raccoon bite, a knocked-out tooth from a friendly soccer match in Guatemala and a broken foot from a high altitude run in the Himalayas!

We love where we’ve been and we love where we get to call home; beaches, amazing wildlife, friendly people, fresh food, safe water, clean air, so much space - and nature!

We returned interested to see how the
