To our dear Eumundi community and region, It is with great regret that we inform you, our committed and loyal readership, that this will indeed be our last issue of the Green. As you know from previous Chair reports, the Green has been sustaining losses for several years now and the team have tried to do everything possible to keep it going but the ‘writing has been on the wall’ for some time. With our nation and our world being devastatingly impacted by the recent pandemic events brought on by COVID-19, this has brought with it radical changes to our community and our way of life including the temporary closing of the markets and therefore the ECCO Ltd carpark which is ECCO Ltd’s predominant source of income. Over the past 6 years, our team at the Green including Sacha, our editor, Lil, our designer and Phil our distributor have been such an incredible asset to our community in sharing important messages of connection and support over the years - we extend our deep gratitude to them. We also wish Tracey our advertising manager all the best and we are thankful for all her hard work over the past few months. We also take this opportunity to thank all our amazing volunteers in the editing, insert inclusions and distribution as well as thanking all the amazing contributors out there who have filled the Green’s pages over the years with amazing content, information and stories. Stretching the larder

Over the past century there have been countless communities that have dealt with the possibility of restricted access to desired foods. Commonly, remote communities plan for long periods between deliveries. Gluts and then scarcity of produce and seasonal growing conditions have been dealt with by producing locally, preserving and storing. Then there have been the sudden restrictions to supply through extreme weather events and fuel crisis. These often take populations by surprise and can lead to scarcity and hoarding. Our unique challenge, currently, can be addressed by learning from a combination of responses to real shortages in the past. It is most likely that any shortage is merely perceived and is a distribution problem caused by panic buying. Nevertheless, it is a good opportunity to practice ideas that can make our households and community more resilient and reduce trips to the shops. Here are a few tried and true ways to stretch resources during tough times from the Country Women’s Association (CWA).

G R OW YO U R OW N Planting a quick pick greens’ garden will have food at the back door in a few weeks. We can grow most European vegetables in the cooler season here, while the Asian greens are best in the hotter months. Use old jars to preserve fruit and veggies when plentiful. CWA
Busy Chicks had fun with this at last month’s workshop. There are community groups that will help you up skill. Visit the Cooroy/ Noosa Community Garden, Yandina Community Garden and Veggie Village at Peregian for guidance or join the Eumundi Community Garden to learn how to set up the garden beds as Eumundi District Community Association develops a garden for the Eumundi community. Consider getting a couple of chooks to turn scraps to eggs. You can also go fishing! R E D U C E F O O D WA S T E There are some good old favourites that turn leftovers,

or close to out of date food, into delicious dishes. Bread and butter pudding utilises milk and bread that is not so fresh, while comforting winter stews use anything on hand. Add spices to the taste of your family. This slow cooked dish can be meat based or based on vegetables, mushrooms and lentils. Turn left-over lamb into a Shepherd’s Pie, left over bolognaise or savoury mince makes lovely pies or jaffles. CLEAN OUT T H E N R E S TO C K This is a good time to do a pantry clean out, especially if you have recently restocked. Digging into the back of the pantry will often uncover some
CO M M U N I T Y useful dried pulses and grains. Check the date of staples and use any older flour first to make damper and scones that don’t need yeast. Restack the pantry with the more recent foods behind older purchases. S T E R I L I S I N G JA R S Properly handled sterilized equipment will keep canned foods in good condition for years. Sterilizing jars is the first step of preserving foods. Jars should be made from glass and free of any chips or cracks. Preserving or canning jars are topped with a glass, plastic or metal lid, which has a rubber seal. Two-piece lids are best for canning, as they vacuum-seal when processed.

To sterilise jars before filling with jams, pickles or preserves, wash jars and lids with hot, soapy water. Rinse well and arrange jars and lids open sides up, without touching, on a tray. Boil the jars and lids in a large saucepan, covered with water for 15 mins.

N E W B US S TO P There’s a new bus stop on the way for Eumundi. Translink recently announced a number of new bus stops across the region, including one on Memorial Dr, opposite Fullager Dr. I’ve since confirmed with Council that it’s due for design and installation by 30 June. The lack of public transport across our region is well documented, and something I regularly receive complaints about, so it’s good to see some positive action. B O R E D AT H O M E? Discover Australia’s natural history collections - from your couch. Since 2011, the DigiVol Project, started by the Australian Museum, has been digitising vast natural history collections with the help of volunteers. From transcribing museum and herbarium collection labels to the field notebooks of early explorers, ecologists and surveyors. volunteer.ala.org.au
I also note that one of the upgrades highlighted in the results of the Eumundi Noosa Rd planning study also mentioned new bus stop facilities along that road, so I hope to receive some further details soon. S TAT E B U D G E T PR I O R I T I E S In my column last month, I mentioned one of my biggest priorities in the upcoming State Budget is to secure funding for a new pedestrian access across the North Maroochy Bridge. Months of negotiations with Council and TMR saw Council commit to a joint venture with the State Government last year, and since then, I’ve also met with TMR’s new Regional Manager, and I am

confident this funding will be announced as part of the State Budget, if not earlier. Thank you to all those residents who have kept up the fight for this integral infrastructure to keep our community safe. It’s been a long (20 years) campaign, but we’ve never been closer. I’m 100% fine and have absolutely no symptoms or signs of having the Coronavirus. I was contacted by Qld Health on Saturday afternoon who advised that contact tracing had shown I’d been in contact with a confirmed coronavirus case. My isolation is purely precautionary. No one who had contact with me prior to Saturday afternoon needs to worry or take any further steps as I have had no symptoms. Best foot forward
Craig Taplin (thong size 42/9) started Aussie Soles in Eumundi 16 and a half years ago at Parkside Markets, so opening his shop on Memorial Dr in town recently was a real milestone for the businessman. Over the last two decades Craig has grown his brand of orthotic thongs and sandals into a very successful brand. “We are now widely supported by podiatrists around the world from the UK, Spain, South Korea, and the USA and to the 600 pharmacies and other selected stores stocking us
within Australia,” Craig shared.
“From an idea [a thong without plugs] to sourcing and contracting factories to manufacture the Aussie Soles range, it has been a bumpy ride with floods, droughts and recessions to challenge our growth; even today as we are faced with the COVID-19, borders closed and the eminent recession, we stay true to our core of support and being kind to those around us,” he explained.
Craig shared he has now sold a few million thongs and his goal is to now sell a million in one year so he can give a million away. So far Craig has donated over 180,000 pairs of footwear to charities who share his vision of putting shoes on the feet of people in need.
Craig explained he grew up wearing sandals and jandals as a kid and got a True-Blue pair of thongs a little later in his teens. “My first blow out was down on camp in Anglesea when I was about 16 and the sole got stuck
in the mud pool,” he shared. “You have to walk into the mud up to your waist and swim through a lake to wash it off. Great experience - but busted my thong!” Craig and his fiancé and big tribe of girls (six daughters) three horses, six chickens, two dogs and two cats have recently moved to Eumundi as well. “We are now officially locals – we love the country and all that this gorgeous little village has to offer,” he enthused.

Jewellery for generations
Jewellery has been in Corrine Sause’s family for generations. Her grandfather passed down his jewellery business to her mother who owned stores in Melbourne. “My love of pearls and jewels was inspired by them from a very young age,” Corrine shared.
I had an opportunity to buy a large amount of pearls from a friend who didn’t know what to do with them,” Corrine explained.
“Pearls had always been my passion, so I decided to use my purchase to start Pearls for Girls.”

pearls like Audrey Hepburn in Breakfast at Tiffany’s.” But Corrine shared Eumundi customers have a special fondness for the semi-precious stones amber and turquoise. “Larimar, a semi-precious stone which is a similar look to turquoise, has also become very popular due to its healing properties for emotional and mental well-being,” she said. Corrine started Pearls for Girls 20 years ago at the Eumundi Markets. “Over the years we’ve had many businesses across the Sunshine Coast, but when we opened our Eumundi store in 2010 we also moved here - now many of our family [have] joined us, living out in the surrounding areas too – we love it here!”

Artisan jeweller Melissa Stannard takes great pride in her Indigenous heritage and her love of art and her close connection to the bush. Her exhibition is called ngarra-li, which translates to look/see/watch, explores the intricate life cycles of new growth, to full bloom and the beauty in decay. Melissa has a particular interest in the overlooked life in the undergrowth and the macro and microcosms that surround

Greg Rogerson has secured support to consider the allocation of aprox. $500, 000 in the 2020/21 budget for a roundabout at the intersection of streets; Caplick Way, Napier Rd and Cook St, Eumundi (near Eumundi State School).This will allow the Formosa family to moved forward with their approved plans to redevelop the ‘Top of Town’ site into a boutique retail precinct with potential for residential development of the Old Butter Factory site. Council would pay 50% of the total round-about cost with the Formosa family to pay for the other 50%.
Sunspace café shines again! After what seems like an eternity Tom and Wakako Cochrane are back with Sunspace Café in a new space at 50 Nyell Rd, Doonan, next to Noosa Pengari Steiner School (NPSS). Tom shared it’s now a mini version of the bigger space and are “finding our feet all over again.” To celebrate the popular organic, vegetarian café’s return, The NPSS string orchestra and choir played, along with craft stalls and school principal Francis Klugman gave a welcome speech to a large crowd. The Cochran’s are also NPSS parents, so this new café space tucked away in the bush, suits them well. The café is also open to the wider community and will be open: Tues, Wed, Thurs 8 - 11am & Fri 8am - 5pm during school term. The new Sunspace also offers the Treasure House craft shop, as well as a health and wellbeing therapy centre.

Pickling vegetables

Pickled vegetables are simple to make and taste totally delicious. Much nicer than turning up with a bottle of wine. Once you’ve had success with them, have a go at your own variations. You can use one large jar or lots of smaller ones. I prefer smaller ones because once a jar’s been opened it will only last for a week or so in the refrigerator. The vegetables can be used in casseroles or stir fries. The vinegar burns off and leaves no taste. You use them as if they were fresh or frozen. The eggs are boiled before pickling and do take on the flavour of the herbs and chillies or garlic that they are stored with. They are served cold.
Slice up your chosen vegetables any way you like. If it’s a larger vegetable aim for around 1.5 cm thick. This way, the flavours and pickling liquid will penetrate sufficiently. Smaller vegetables, like mushrooms or very small onions, can be left whole. Place sliced vegetables into boiling pickling liquid. Leave for around 3 mins - they’ll probably rise to the surface, so keep pushing them down to ensure they are all immersed. Lift pieces out with a slotted spoon and place them into your bowl of pickling marinade. Toss together - it will smell fantastic.

• 1 kg fennel bulbs with the herby tops

Pretty much straightaway, put
• 1 kg small onions with 4 bay leaves • 1 kg red and yellow peppers with a few sprigs of fresh thyme
5 cloves garlic, peeled & sliced 1 fresh red chili, deseeded & chopped (I add sugar & ginger for bamboo) Choose one of the vegetable & herb combinations • 1 kg mixed mushrooms with a few sprigs of fresh thyme, rosemary & sage • 1 kg firm eggplant with 2 Tblsp dried oregano
D I R EC T I O N S Make sure you have sterilized jars ready to go. Bring pickling liquid to the boil in a big pan. Put pickling marinade ingredients into a large bowl with your chosen herbs and mix well. 20

hot vegetables and pickling marinade into your sterilized jars, filling them to the very top. Cover vegetables completely with marinade and put lids on tightly. Put jars aside until cool. Clean jars then attach labels with the date and contents on them. Store jars somewhere cool and dark - it’s best to leave them for about two weeks before opening so the vegetables really get to marinate well, but if you absolutely cannot wait, you can eat them sooner. They’ll keep for about three months.

Quick pickled vegetables with bamboo Ingredients 1 medium daikon 1 bunch carrots 1/2 lb bamboo shoots 1/2 lb sea beans
Mix vegetables in a bowl with 2 Tbsp sea salt. Set aside for one hour. Drain and rinse the vegetables and transfer to a large bowl. Mix in sugar, vinegar, hot pepper flakes, and warm water. Refrigerate for at least one hour, then enjoy.
2 Tbsp sea salt 1/4 cup sugar 1 cup white vinegar 1 cup warm water 1/4 tsp hot pepper flakes Method Peel and cut daikon and carrots into matchsticks (slices would work fine as well). Slice bamboo shoots in half lengthwise and peel off the outer several layers.
Notes: You’ll want enough vinegar, water, and sugar to cover vegetables. For every 1 cup of vinegar, add 1 cup of water, 1/4 cup of sugar, and 1/4 tsp of hot pepper flakes. The actual amounts of your pickling ingredients will depend on how large your daikon and carrots are and how many you use. *Bamboo shoots are sourced from Bamboo Australia, Belli Park. Ring ahead for purchase as they are seasonal, 547 0299.
Boil bamboo shoots in water for 5-7 mins to soften, then transfer to a bowl of cold water until chilled.
Busy Chicks In the QCWA Hall at 7pm on Tuesday 28th April. In February a very successful event was held in the Eumundi School of Arts Hall for a project to support the health and welfare of new mothers and their carers in a remote community in Papua New Guinea. Over 90 people enjoyed kaikai, dancing from the Milne Bay Social Group, authentic artefacts from PNG and high quality artworks from local artists in auctions and raffles. Over $4000 was raised. Many thanks to the major prize donations from Tina Cooper Art Gallery Montville, The Imperial Hotel Eumundi, Sala Thai Restaurant Eumundi, Lysanne Dr Graff Massage and Kilagi Nielsen. Thank you also to Eumundi Guest House and B&B, Berkelouw Books, Discover Eumundi, Eumundi Historical Assn, and many others who donated art works, ceramics, time and skills. Our next PNG Fundraiser event will be in Eumundi on 14 November to raise funds for the redevelopment of Dogura Hospital buildings in Milne Bay Province. Tapioca pancakes

Brazilian Tapioca is a like a crepe-like pancake, or a flat bread, but made from water and tapioca starch nothing else. It has a much lighter texture than wheat or corn. Once cooked, we add savoury or sweet fillings and it’s ready to eat. Tapioca represents all the things we value the most: our Brazilian roots, nutritious, plant-based food as well as a healthy and simple lifestyle. Made from cassava (also known as yuca or manioc), the tapioca has been part of the Brazilian indigenous diet for thousands of years. More specifically, the Tupi-Guarani people, who occupied the eastern coastal strip of Brazil. Later on Tapioca was considered the new bread by the Portuguese settlers in Brazil. They soon realized tapioca was a more nutritious and easier food to prepare than their usual wheat bread. Cassava is free of; gluten, grains, dairy, sugar and cholesterol. It’s vegetarian, vegan, low in fat and sodium and non-GMO. We source our cassava flour from quality suppliers in Southeast Asia and the Pacific Islands. Sharing our culture and food with our Aussie friends is what makes us smile every day. TA PI O C A FL AT B R E A D Ingredients 100g Hydrated Tapioca Starch (at our stall at Eumundi Markets) 1 Banana Peanut Butter
Cook until the edges start to curl - the longer you leave the crispier it’s get. Once cooked take out of the pan. Spread peanut butter and add 1 banana sliced.
Method Heat a nonstick frypan over medium heat for at least 1 minute. Take a hand full of hydrated Tapioca and sift over a frypan equally until covering the bottom.

Wildlife monitoring program

In the Noosa Hinterland we are passionate about flora and fauna. It is a large part of why we live in this beautiful region. As local ecologists from Wildwise Environmental Services, we wanted to engage the local community in conservation and make people more aware of who they share their ‘back yard’ with. So last December with the help of Eumundi & District Community Assoc. (EDCA) we applied for and were successful in receiving grant funding through the Ted O’Brien Fairfax Communities Environment Program. We then sought an expression of interest from the community who were keen for their properties to
be surveyed using motion-sensor cameras to detect wildlife in their backyards. Previous articles published in The Green (see Issue 289 & Issue 308), described the use of motion-sensor cameras as a non-invasive means of detecting fauna and highlighted some of the results -including capturing threatened species that

can be cryptic and elusive. A total of 17 property owners expressed interest in the program and nominated their property to be surveyed. The surveys will be conducted monthly within the locality of Eumundi, Doonan and Verrierdale. Each property will be visited and assessed for habitat values, including a desktop search for fauna

records, regional ecosystem mapping, and the installation of at least two motion-sensor cameras, located in strategic locations on each property for a period of at least two weeks. The data will be analysed and a list of species generated. In consultation with the property owner, the findings are then published in The Green for the Cont’d overleaf

The positive outcomes of this program include, an increased understanding and awareness of fauna species occurring in the local area, and aims to highlight the importance of looking after the environment, starting with property management for habitat enhancement/ restoration, weeds, land care, and which plants to grow to help aid fauna. SU R V E Y: FE B R UA RY M A R C H 2020 Property One - owner: This property backs onto an adjoining property on Tallgum Ave, Verrierdale. The first properties surveyed in February and March 2020, are owned by an enthusiastic wildlife lover and local business owner Christine. Her two properties are located at Lot 25 Greenacre Rd, and 13 Tallgum Ave, Verrierdale. These adjoining properties combine to make about four acres of bush. Christine’s properties are unfenced, contain a predominantly wet eucalypt (sclerophyll) forest that is transitioning to rainforest, which creates a structurally complex vegetation community. The Tallgum property has a creek running through it, and both properties are within a corridor for wildlife that are free to roam. There is evidence of a history of burning (charred stumps) and logging, and there are no large over-mature trees with significant hollow formation. The footprint of manmade structures and cleared areas (including mown lawn) is minimal. Both properties contain valuable habitat features such as fallen logs, leaf-litter, rocks, and diverse vegetation layers, all providing wildlife habitat and a variety of food sources. Despite the very wet conditions during the survey period, the cameras revealed some interesting finds. Two cameras
were deployed on each property, with some submerged by the creek during a flood event. The cameras revealed the ‘usual suspects.’ The cameras captured short-eared (mountain) brushtail possums, native bush rats, and a brush turkeys. A nice surprise were some great pictures of an eastern water dragon, and an eastern yellow robin. The cameras also detected some feral predators, including a red fox and ginger cat without a collar (likely feral). Despite the presence of these predators, a long-nosed bandicoot, swamp wallaby with joey, and antechinus were also detected. These finds are a little surprising considering the surrounding landscape also contains domestic dogs and roads with relatively high-volume traffic. These finds indicate that Christine’s properties provide valuable habitat, connectivity and a healthy forested ecosystem supporting local wildlife. Red Foxes have been observed in the area previously, and are known to roam the neighbourhood, so if you keep chickens in the Tallgum/ Greenacre area – beware!

The recommendations for this property were enhancing habitat features by keeping any fallen timber and the installation of nest boxes – a common shortcoming of disturbed environments is an absence of old hollow-bearing trees. This property is well-suited to the planting of endangered Richmond birdwing butterfly vines, a large number need to be planted to support these butterflies which are present in pockets in the Eumundi area. If sufficient vines are planted in an area, the butterflies will find them. 24
