Put the snap peas in the boiling water and cook until they’re bright green and just slightly softened, about 2 minutes. Drain on towels and let cool. 2. Season both the tomatoes and the mozzarella with a pinch or two of salt. Put them in a large mixing bowl and add the wax beans, snap peas, and 3/4 tsp. salt. In a small bowl, whisk together the pesto, vinegar, 1/2 tsp. lemon juice, and olive oil. Pour over the vegetables and mix and toss well. Add the pine nuts and basil and season with several grinds of fresh pepper. Toss well and let the vegetables sit for 5 to 10 minutes. Toss again and taste, adding more salt, pepper, or lemon juice as needed.

Colorful Chinese Kick-Slaw Serves 4 or 5 I call this kick-slaw because it’s got kicky flavors – ginger, garlic, lime, and sesame. It’s not only refreshing but colorful, too, with the red cabbage, orange carrots, and green snow peas. The flavors hold up well, so it could be made ahead. But I think the texture suffers some, so I recommend assembling it pretty close to serving time. Put this out for any summer buffet, or use it as a bed for grilled flank steak or swordfish.
Ingredients: 1/2 small head red cabbage (about 9 oz/255 g)cored and thinly sliced 5 oz./140 g snow peas, tails trimmed, each cut sharply on a diagonal into 3 pieces 4 oz./115 g carrots, shredded (use the large holes of a box grater) 1/2 tsp. kosher salt 2 tsp. minced garlic 1 Tbsp. finely chopped fresh ginger 1 Tbsp. fresh lime juice 2 Tbsp. orange juice 2-1/2 Tbsp. hoisin sauce 1 Tbsp. soy sauce 1/2 tsp. sesame oil 1-1/2 Tbsp. peanut oil 1/4 cup/15 g chopped fresh cilantro 1. In a large mixing bowl, combine the cabbage, snow peas, and carrots. Sprinkle with the salt and mix well. 2. In a small bowl, combine the garlic, ginger, lime juice, orange juice, hoisin sauce, soy sauce, sesame oil, and peanut oil. Mix well and pour over the cabbage mixture. Mix thoroughly, add the cilantro, and mix again. Serve at room temperature.

Ruby Mountains Ranger District in
This is the second article on wilderness within Elko County and highlights the East Humboldt and Ruby Mountains Wildernesses. Both were set aside as wilderness in 1989 with the passage of the Nevada Wilderness Protection Act.

Park along Highway 229, and hike 4 miles north on the trail; this part of the trail is spread across private land and then transitions to the forest’s wilderness boundary. Please stay on the trail through this stretch. The trail continuing into the Boulder Creek drainages and to Boulder Lake is two-to-four miles longer.
The East Humboldt Wilderness, comprising 36,000 acres, sits astride the East Humboldt mountain range, a high ridgeline of mountains running south from Wells, Nevada. Towering 5,000 feet above the sagebrush flats of eastern Nevada, the mountains are desert islands alive with alpine scenery, lake basins, streams, wildflowers, meadows, stands of aspen and conifer, and abundant wildlife. The highest point is Hole-in-the-Mountain Peak at 11,306 feet, which forms a large opening on the skyline. This is a setting of heavily glaciated peaks, cliffs, talus slopes and U-shaped canyons with groves of limber pines and aspens and high meadows carpeted with wildflowers. The northeast area provides the best wilderness access. State Road 231, a 13-mile paved road, starts at Wells and leads to Winchell Lake and Grey's Lake Trailheads. From the south, State Road 229 provides

The Ruby Mountains Wilderness, comprising 93,090 acres, is characterized by high, multifaceted, granite-like peaks soaring above lush green meadows and sparkling sapphire-blue lakes. It covers the high country from Secret Pass south to Harrison Pass. Ruby Dome, is the highest point in the wilderness and tops out at 11,387 feet. The "rubies" of the mountains' name are actually garnets, red semiprecious stones that are found in certain metamorphic rocks. Nowhere else in Nevada is there such a spectacular landscape, with hanging valleys, clusters of lakes and snow-fed streams flowing down the U-shaped glacial valleys on the west side of the range. Because they were so heavily glaciated and have such abundant water, the Rubies represent the classic mountain wilderness.

Access to the Ruby Mountain Wilderness is numerous with several trailheads located on its perimeter. Soldier Canyon, Lamoille Canyon, and Harrison Pass provide good access on the west side of the range. Overland Lake, Colonel Moore Creek, and Krenka Creek are good access points on the east side. Wildlife is abundant in both areas. Mule deer, mountain goats, bighorn sheep, coyotes, mountain lions, and small animals are common residents.
Streams and lakes support brook, rainbow, and the threatened Lahontan Cutthroat trout. Himalayan snow cocks and Hungarian partridges have been introduced and are doing well. Whether for a day or a week, the Humboldt-Toiyabe National Forest invites you to explore these two wildernesses this summer and enjoy a unique and scenic experience. This is rugged remote country, so plan ahead for a safe and fun trip.

Lamoille canyon is located only 20 miles southeast from the city of Elko and is the perfect escape from the heat of summer. Twelve miles of paved road travel up the glacial valley from the National Forest Boundary (6,200 ft.) to the Road’s End recreation site (8,800 ft.). Lamoille Canyon is filled with a great variety of plant species that can be seen in the moist habitats found in the springs, streams, lakes and high-elevation basins.

Jill and Llee are the perfect example of a good neighbor… they work hard, they give back, and they believe in our community 110% When Brianne nominated Jill she stated “Jill works tirelessly for this community and her dedication never ends. She supports every worthy cause, dedicates her time and resources, and is always there to lend a helping hand. Time and time again, I have seen Jill extend an act of kindness, large or small, to those around her. Through her example, I have learned so much, and have been inspired to do more for my community. I can truly say that Elko is blessed to have Jill as a neighbor!” We were all excited to get the story on Jill and Llee, and when called Jill was very pleased and expressed everything she does is a team effort with her husband Llee. To name a few of the amazing things they’ve done; Jill and Llee headed the campaign for the new Boys and Girls Clubs of Elko building raising approximately $4M. They donated money for Hospice House that Barrick graciously matched and were named Persons of the Year by Hospice. Llee is an auctioneer and has donated his skill at no cost to many fundraisers, and when the Boys and Girls Clubs of Elko executive director left, Jill volunteered to take over the position in the interim for 3 months because “It was the right thing to do.” When we spoke with Brianne she had stated “There is so much more they do for the community that I don’t even know about!” No truer statement could have been made on behalf of the Chapman’s. They are always giving what they can to whatever cause they encounter. They love supporting the local schools, wildlife groups, Young life, Ronald McDonald House, Hospice, Friends for Life and many other local charities. “We believe in this community” Words you don’t

When asked what ignited their drive to donate so much of their time and finances to all these programs Jill said “We both grew up in large families and grew up on the mid to lower income side. We have been so fortunate in our lives and in our professional careers, we believe in sharing that. We believe in our community, our youth and others” Jill and Llee are the people that go on walks and take a bag with them so they can pick up garbage because “Someone needs to” Everyone has a reason to keep going, to keep pushing, and to stay dedicated…Jill and Llee’s is that they love to see the successors of our community thrive and to be able to be a part of it. John Quincy Adams once said “If your actions inspire others to dream more, learn more, do more and become more, you are a leader.” Jill and Llee are truly leaders, they are the reminder that there is always good to be done whether it be small or big. Jill said that Llee and herself plan on moving in the next year or so but plan on staying West. Jill and Llee have 3 sons, Clint Chapman, Chris Chapman, and Dylan Rantapaa and two Granddaughters, Billi and Leighton. “We see that giving spirit in all our children as well and that makes us very proud” We feel here at Shabonya Dutton State Farm as though we can say on behalf of our community that you will be greatly missed, and we thank you for all of the wonderful things you’ve done.
Corrections to the July Good Neighbor Article. Stephanie said, “I would like to nominate Angela Miller from Mach 4 Construction and Divine Expression. Angela is always doing something for someone else, from hosting volleyball tournaments for Lizzy to helping Kody Beach's family. Not only these things but she does a lot that most people don't know about. This last week I had the privilege of helping the Layton’s with the services for their beautiful little Hailey. The family told me that they went to Divine Expression to order flowers for the funeral. I wish I knew of half of the things that Angela does and of all the people that she has helped in our community. (Angela only charged the wholesale cost of the flowers and a friend of the family covered that, Angela donated all the decorations, ribbon, the travel to get the flowers in Salt Lake City, and 12 hours of labor and the help of 3 other volunteers who were more than happy to help! Although Angela would have gladly taken care of the cost of flowers she graciously stated “I would have just taken care of it but once again our community shined and came together to help so it was a joint effort all the way around!”) Elko is an amazing place to live and it has a lot to do with amazing people like Angela.” Duncan and Angela also have three children: Cody 22, Allyson, 17 and Hunter 14. They have a strong family foundation, are always together and are a racing family. Angela said “A family that plays together stays together.”

Health and fitness motivation can be in short supply in August. The days are hot and long, swimsuit season is almost over, and a lot of us spend the month taking vacations or gearing up to go back to school. It’s easy to put exercise and eating right on the back burner. However, setting aside our fitness goals for a whole month can have a huge impact on our health. Use these tips to help keep your motivation on track during this long, hot month.

Come up with a reward system. Tell yourself that if you eat right and exercise for 5 days straight, you can have delicious frozen yogurt at the end of it, or buy yourself a new pair of shoes. Attaching our goals to a physical object makes them more concrete and makes us more likely to stick to them. Find a fitness challenge to keep yourself moving. Sign up for a fall 5k, train with the goal of hiking to Lamoille Lake before the snow hits, or decide to take an evening bike ride while the sun is still setting late. Having goals to work toward makes you significantly less likely to skip out on a workout or splurge on an unnecessary treat.
Try something new. The same old routine gets boring after a while, so try a new fitness class or cook a new healthy recipe. If you’re doing something new and fun, you won’t be looking for an excuse to skip it. And as a bonus, you’ll work your muscles in new and different ways, resulting in higher calorie burn and a greater chance of seeing results.

Ruby's Treats Pink Lemonade Bars Crust: 3⁄4 C. butter, softened 1 1/2 C. all-purpose flour 1/2 C. confectioners’ sugar Topping: 4 large eggs, at room temperature 2 C. granulated sugar 1 Tbsp. freshly grated lemon zest 1/2 C. fresh lemon juice 1/4 C. all-purpose flour 1 tsp. baking powder Red liquid food color

Directions: Heat oven to 350°F. Line a 13 x 9-in. baking pan with foil, letting foil extend above pan at both ends. Coat foil with nonstick spray. Crust: Beat butter, flour and confectioners' sugar in a large bowl with mixer until blended (mixture will be crumbly). Press over bottom of pan. Bake crust for 15 minutes, or until light golden. Leave oven on. Meanwhile, make the topping: In a large bowl, beat eggs, sugar, lemon zest and juice, flour and baking powder with mixer to combine. Add about 5 drops food color and beat until topping is pink. Pour over the hot crust. Refrigerate and enjoy!

Pineapple Coconut Oil Banana Bread Ingredients: 2 large eggs 1/2 C. coconut oil, melted 1/3 C. buttermilk 1 1/4 C. granulated sugar 1/4 C. light brown sugar, packed 1 Tbsp. vanilla extract 2 C. all-purpose flour 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. nutmeg, optional 1 C. pineapple, diced Pinch salt 2 large or 3 small ripe bananas mashed ripe bananas Directions: Preheat oven to 350F. Spray two 8-by-4-inch loaf pans with floured cooking spray; set aside. In a large bowl combine the eggs, coconut oil, buttermilk, sugars, vanilla, and whisk to combine. Add the flour, baking powder, baking soda, nutmeg, optional salt, and stir to just incorporate; don't over mix. Stir in bananas. Stir in pineapple (if using frozen, just add it frozen, no need to thaw it first. If using fresh or canned, make sure it's well-drained or it could waterdown the batter). Pour batter into prepared pans and bake for about 45 minutes, or until top is golden and set, a toothpick inserted in the center comes out mostly clean (banana bread is gooey and it may not come out perfectly clean). Allow bread to cool in pan for about 15 minutes before removing and transferring to a wire rack to finish cooling.

Small Town Girl Takes on the

Born and raised in Elko, Madison “Maddie” James is the definition of a small town girl. With faith, values and a big heart, her friends and family couldn’t be more proud of the young woman she has become. Graduating from Elko High School in 2011, Maddie was very involved with her school and her community. Her many accomplishments and contributions included: • 4-year member of the Elko High School Varsity Golf Team • 4-year member and Alto Section Leader for the Choraliers • 3-year member of the Student Council • 2010-2011 Student Body President • 2010 Homecoming Queen In addition to her many high school accomplishments in 2012, Maddie was also crowned Miss Elko County, running on a platform promoting healthy choices and a substance-free life for youth. In 2013, Maddie found her calling when she made the decision to attend the Aveda Institute Provo. For the first time, this 21-year old packed up her belongings to make the big move to Provo, Utah, leaving the only place she’s known, loved and will always call HOME, in her rear view mirror, Elko.
In the short 6 months that Maddie has attended the Aveda Institute Provo, she has really excelled and discovered something she truly loves. She has learned an incredible amount about cosmetology, made some great friends and, in her words, “loves every second of it!” Last month, Maddie was selected to represent her school at New York Fashion Week, the largest fashion show in the United States. In September, Maddie will make the trip to the “Big Apple” to style the fashion models that will be on the runway! Her journey will begin with a styling class where she will learn what is trending on the runway so she can create the right look for the designers. She will also be working with and learning from some of the best stylists from all over the country. The new looks that appear on the runway will be photographed by some of the nation’s top photographers and the models will be featured in a variety of national publications, so we may get to see some of Maddie’s work! As the local affiliate of the nation’s largest and most effective dropout prevention program, Communities In Schools of Northeastern Nevada provides students in Elko County with whatever they need to stay in school and graduate. The Second Annual Nite at the Races will be held at the Great Basin College Amphitheater, with doors opening at 7:00pm and a post time of 7:30pm. The races are professionally filmed horse races shown on the big screen, allowing attendees to take in all the action and cheer for their favorites. Executive Director of CIS of Northeastern Nevada, Melissa Aguirre, says, “For those anticipating the live horse races at the Elko County Fairgrounds, A Nite at the Races is a great warm up. It’s a wonderful opportunity for race fans to gather with friends and have a fun evening with food, games and dancing.” Aguirre explains that attendees can purchase tickets and select favorites for each of the 8 races throughout the evening. “Race winners have the opportunity to walk away with some great prizes,” says Aguirre. “Several local businesses who are supporters of CIS have donated gift baskets and gift certificates to be given away at the event. In addition, the event will feature a silent auction with some exciting destination packages, sports collectibles and jewelry.

CIS is expecting close to 200 supporters at the event, and Red Lion Casino is catering the evening with a delicious full barbeque dinner. The bar will be stocked by Blach Distributing, and a DJ will be ready to get the crowd out on the dance floor after the races. Attendees can also test their skills at midwaystyle games like Plinko and Toss-the-Washers. Attendees are encouraged to come dressed in their “Derby Best”, celebrating in true Kentucky Derby style. Anyone wearing a Derby style hat will be entered into the Best Derby Hat contest. “Last year’s attendees came with some real old home Kentucky style,” reports Aguirre. “There were some spectacular hats that will be hard to beat this year.” What makes this event so special is the cause that it supports. CIS of Northeastern Nevada supports children in grades K-12, connecting them with vital resources. Families in the Elko area can face challenges in finding and accessing the services they need. CIS works with community partners, businesses, safety-net providers, churches, service groups and agencies to increase access to existing services or create new ones. From food to clothing, health and wellness services, and academic supports, CIS does whatever it takes to keep children in school. In 2012-13, CIS of Northeastern Nevada served almost 80,000 breakfasts at five ECSD schools, and sent home over 6,700 backpacks of weekend food with students in need. CIS of Northeastern Nevada also reports successful student outcomes for CIS Academy participants in Elko High School, Spring Creek High School and Adobe Middle School. CIS assists students with life skills and behavioral training, tutoring and credit redemption. The year 2006 was a significant one for the Northeastern Nevada Museum. The director of the museum received a phone call from Don Frazier, an art collector in Arizona, suggesting that he had some art by the renowned western artist, Will James, and wondered if the museum would be interested in exhibiting his collection for a few months.
In 2007, it was shown for six months, and it was a big hit with the western art aficionados from around the country. It was displayed during the National Cowboy Poetry Gathering and thousands of visitors came in to admire the work. Don Frazier, who had grown up in a ranching community north of Reno, eventually donated 54 pieces of Will James’ art and an original, signed, first-edition copy of each of James’ 24 books. Most of the books are not only signed by James, but have a line drawing next to his signature. Many of these little sketches rival his larger work for humor and originality. The exhibit in the museum is the third-largest collection of Will James art in the world and the book collection is the very best anywhere. Will James was an interesting character. That was not even his name. He was born Ernest Dufault in eastern Canada, in 1892. He had a talent for drawing from an early age, and developed a love for the American cowboy. He left home at an early age, never to return, and lived out his dream working on ranches and rodeoing, mostly in Nevada. He was always drawing - horses, cowboys, or both. He spent some time in the Nevada State Penitentiary for cattle rustling. After receiving a severe head injury when bucked off a horse, he was forced to change careers and he decided to write books about cowboys and horses. He had the rare talent to be able to illustrate his own books, and they were prized for both the stories and the art. These became great favorites with children of all ages. In 1927, he won the prestigious Newberry Medal for Children’s Literature for his most famous book, Smoky. As his fame spread, he went to Hollywood and acted in several movies, and eventually bought a ranch in Montana. He died at the young age of 50, in 1942. Don Frazier praised his work by saying what many cowboys have always known about Will James art. “(He) captured the spirit of the western wild horse and also the bucking bronc as no one else ever had before or since. A very great many of Will’s sketches tell a whole story, even without any captions. You can very often tell what the horse is thinking, and the rider, too. Will James could and did draw horses from the pictures in his head. He didn’t use photos or any other crutch. He had it all in his mind. He drew with almost perfect anatomical accuracy in every position and motion….There are many authenticated stories of his making full and fine line drawings in just a
few minutes – even starting with ears at one end and a tail at the other and then filling in a properly proportioned and active horse in between!” Frazier also commented that Will James depicted the day-to-day life of a real cowboy, not the glorified gun-fighting cowboy of Hollywood. Will James ranks with Charlie Russell and Frederick Remington as one of the great western artists of all time. The Northeastern Nevada Museum is very fortunate to have such a good friend as Don Frazier, who made this valuable collection possible for all visitors to see. The Board of Directors and staff of the museum are currently planning to add more art galleries to the existing facility, for a Western Art Museum, to more appropriately display the art and books of Will James, and more western art that is being added to the collections. It is truly becoming the Great Basin Home of Western Art.
