Contributed by Laura Jaeger of Southern Wine & Spirits The holidays are a favorite time of year for many people. This cheery season is filled with parties and events that bring the spirit of the season out in everyone. As a part of these festivities there are some wonderful drinks that you can serve that fit the holiday theme perfectly. Many of these drinks, and most particular, egg nog and hot buttered rum, are tied to customs that date back more than a thousand years. They were meant to warm the body on the coldest, darkest time of the year. In the Colonial Days with the sanitary standards of water questionable, sterile liquor was a popular beverage. People came up with creative ways
to prepare their drinks using, herbs, beer, cider, and spices to make it more palletable. Thus came Grogs, Toddys and Hot Buttered Rum. Egg nog is another holiday favorite that has its roots in British aristocracy. In winter months, the wealthy would drink warm milk and egg beverages seasoned with pricey spices and expensive liquor such as brandy and sherry to keep the drink from spoiling. When the drink was found in America, rum was used. Colonists referred to rum as grog and served the rum in small wooden carved mugs called noggins. The drink eventually became egg-n-grog and over time eggnog. The first recorded eggnog recipe
dates back to 1775 made with a rum base. These days we can find the drink conveniently stocked in our supermarkets and in a variety of other forms. Originally these drinks were associated with secular holidays due to the Puritan belief of abstaining during the religious holidays. As restrictions mellowed, these drinks became a staple holiday beverage. Here’s to bringing people together to celebrate life at the coldest and darkest time of year. Let’s hope it never goes out of style.

Fresh Egg Nog 4 egg yolks 1/3 cup sugar, plus 1 tablespoon 1 C heavy cream 3 ounces Evan Williams Bourbon 1 teaspoon freshly grated nutmeg 4 egg whites In a bowl, beat egg yolks until they lighten in color. Gradually add 1/3 C sugar and continue to beat until it is completely dissolved. Add the milk, cream, spirit and nutmeg. Stir to combine.
Place the egg whites in the bowl of a stand mixer and beat to soft peaks. With the mixer still running gradually add the 1 tablespoon of sugar and beat until stiff peaks form. Whisk the egg whites into the mixture. Chill and serve. Cook's Note: For cooked eggnog, follow procedure below. In the bowl of a stand mixer, beat the egg yolks until they lighten in color. Gradually add the 1/3 cup sugar and continue to beat until it is completely dissolved. Set aside. In a medium saucepan, over high heat, combine the milk, heavy cream and nutmeg and bring
just to a boil, stirring occasionally. Remove from the heat and gradually temper the hot mixture into the egg and sugar mixture. Then return everything to the pot and cook until the mixture reaches 160 degrees F. Remove from the heat, stir in the bourbon, pour into a medium mixing bowl, and set in the refrigerator to chill. In a medium mixing bowl, beat the egg whites to soft peaks. With the mixer running gradually add the 1 tablespoon of sugar and beat until stiff peaks form. Whisk the egg whites into the chilled mixture.
Healthy Eggnog (Single-serving and high in protein!) 1 cup milk of choice (Use a thicker milk for best taste. Silk almond milk works well. Coconut milk (the full-fat kind that comes in a can) works well too. Or you can do 1/2 milk and 1/2 Silk creamer for a deliciously-rich shake, 1/2 cup silken-firm tofu.
1/2 tsp lemon juice (omit if desired)
1/2 tsp pure vanilla extract
1/8 tsp salt
1/2 tsp cinnamon
2 tsp raw sugar
1/4 tsp each nutmeg and ginger
1 1 tbsp sugar (or evaporated cane juice, coconut sugar, etc.)
1/16 tsp (tiny dash) cloves
Desired amount of Captain Morgan Rum or Evan Williams Bourbon! Combine all ingredients and blend until smooth. (If you don’t have a blender, perhaps you can use silken tofu and just stir by hand.) Drink cold, or heat if desired. Recipe is single-serving and can be sugar-free, dairy-free, vegan, cholesterol-free, low-fat, and gluten-free.

"While visions of sugarplums danced in their heads"
This often quoted phrase conjures up many nostalgic images of the season -- children, dancing, and anticipation. But have you ever wondered what a sugarplum is? Popular in the Victorian era, sugarplums are a sweet delicacy of dried fruits, nuts, and wonderful spices. Finely chopped, the ingredients from a stiff paste, perfect for rolling and molding into tiny plum-like shapes. A coating in sanding sugar adds a touch of holiday glitter and a whole clove "stem" completes the charming little morsels. There are countless recipes for sugarplums, and understandably so, for they have been around since the Middle Ages. This version is loaded with spices and dried fruit, shaped to resemble frosty little plums with clove "stems." I don't know how the Victorians managed to make sugarplums, but I think a food processor is definitely a must of modern-day sugarplum projects. Depending on the size of the processor, it may be necessary to grind the sugarplum mixture in separate batches.
Pistachio Sugarplums 4 cups (about 16 ounces) chopped pitted dates 2-1/3 cups coarsely chopped pistachio nuts 1 cup coarsely chopped dried apricots 1 cup coarsely chopped dried figs 1/3 cup brandy 4 tablespoons apricot preserves 3 tablespoons dried orange peel 2 teaspoons ground ginger 1 teaspoon ground cloves 2 teaspoons ground mace 1-1/2 teaspoons ground cinnamon 100 whole cloves for the"stems" 1-1/2 cups sanding sugar

1. Place all the ingredients except the whole cloves and the sanding sugar in a food processor and rapidly pulse the machine on and off for 1 to 2 minutes, or until the mixture is every ground into a doughy paste and begins to pull away from the sides of the work bowl. Empty the mixture onto a clean work surface and knead it by hand for 2 minutes to completely blend all the ingredients. Wrap the sugarplum mixture tightly in plastic wrap and refrigerate it for 2 hours or overnight.

Place teaspoon-sized scoops of the chilled sugarplum mixture between your palms. Roll the scoops into smooth ovoid shapes (to resemble small plums). Use a wooden skewer or the back of a dinner knife to impress a cleft along the length of each plum shape. Roll the plums in the sanding sugar and insert a whole clove into the fatter end of each sugarplum for a "stem."
3. Lay the sugarplums out on a baking sheet lined with parchment and allow them to firm up in a cool, dry place overnight. Add a ribbon and the gift doubles as a hanging ornament. 1. P rint out the pattern, preferably on heavier paper such as cardstock. 2. Trace the pattern onto fancy paper, or cover cardstock with wrapping paper. 3 S core the box on the indicated lines with the blunt edge of a kitchen knife for neat folding. 4. F old and tack the bottom flaps with sticky tape or glue; leave one side free for opening. 5. I nsert and tack a hanging loop with a knotted narrow ribbon. 6. I nsert your treat into the box. Tuck the short, fifth side inside. Tack the bottom securely.
Easy No Dip Chocolate Truffles: Makes approximately 36 truffles. Chocolate is always a perfect gift. Transform your favorite chocolate into melt-in-your-mouth truffles with these easy steps:
1. WARM 1 C of heavy cream to just simmering point. 2. ADD 16 oz. of your favorite dark chocolate that has been broken into small pieces.
3. STIR and mix well. The mixture should be glossy and smooth.
4. POUR into a small dish that allows the mixture to be about 3/4 - 1" in thickness.
5. CHILL in the refrigerator until firm; about 1 hour. 6. CUT the truffle mixture into even sized cubes and roll into balls, or form balls with a small scoop.
7. WHILE still warm from the heat of your hands, roll in sanding sugar, cocoa powder, cacao nibs, or a favorite coating of your own.
8. PLACE in mini-paper liners, and chill until ready to assemble for giving.

Fancy Strap PACKAGING These crackers present an opportunity to package with easy‚ "straps." Package short stacks of crackers in cellphophane or other clear wrap. Using heavier decorative paper or cardstock, cut 3/4-inch strips. Wrap around the stacks and tack at one end of the stack.

Butter toffee pecans 2 cups pecan halves 4 Tbsp. unsalted butter, melted 1 large egg white 1/2 cup brown sugar, packed 1/2 tsp. salt INSTRUCTIONS: 1. Melt 4 Tbsp. butter and allow to cool. 2. Whip the egg white with a whisk until foamy. 3. Add the brown sugar and salt to the melted butter. 4. Add the sugar and butter mixture to the foamy egg white. Mix well. 5. Add the pecans and stir to coat. 6. Spread the coated pecans on a parchment-lined baking sheet in a single layer. 7. Place in a preheated 250ºF oven for 60 minutes, stirring every 10 minutes. 8. Remove from the oven and allow to cool. The nuts will crisp further as they cool. 9. Package in an airtight container.

Mix together the sesame oil, soy sauce, ground ginger, garlic powder, cayenne pepper, and salt in a small bowl. 2. Pour the mixture over the almonds and stir to coat well. 3. 1 teaspoon cognac 1 teaspoon baking soda 1. Using 3 tablespoons of the butter, heavily coat the bottom of a standard sheet pan (11 x 17 inches) and set it aside. 2. Combine the nuts, sugar, corn syrup, and salt in a microwave-safe bowl. Microwave the mixture on High for 3 minutes, pause the oven to stir the mixture well, and microwave on High for 3 minutes more. Pause the oven again, stir the mixture once more, and microwave on High for another minute. 3. Add the remaining 1 tablespoon butter to the brittle mixture without stirring and microwave on High for 2-1/2 minutes more. Remove the bowl from the microwave and gently stir in the cognac and baking soda, taking care because the boiling mixture may foam and sputter when you add these ingredients. Quickly pour the hot brittle onto the buttered sheet pan. Working very quickly, pick up the sheet pan with oven mitts and tilt the pan back and forth and side-to-side to spread the molten brittle into as thin a layer as possible over the sheet pan before it cools and hardens. 4. Cool the pan on a rack for at least 1 hour. Break the brittle by hand into generous bite-sized pieces. Store in an airtight container until the pillow box wrapping is completed and you are ready to assemble the gift.

Get some rest. After a long drive and a big meal, you may be tired. Getting up early to hit the stores could be more than your body can handle.
Holiday season brings with it increased vehicle break-ins especially at shopping malls around the country. To make yours a positive holiday shopping experience, remember to:
Look more than once when backing out of parking spaces. It's also a good idea to have someone act as a lookout for you, especially if you're parked next to an SUV or van.
Keep all receipts in your wallet or purse. Leaving the receipt in the bag makes it difficult for you to prove your purchase, and easy for thieves to return the items for cash.
Be on the lookout for vehicles suddenly backing out of spaces. Remember to keep a watch on your children and be on the lookout for small children running behind your car as you leave your space. Thieves target vehicles with out-of-state plates. Remove your navigation systems, CDs and other valuables from the car or put them out-of-sight. These are prime items for a smash-and-grab opportunity.
Move your vehicle to another spot in the lot if you opt to drop off purchases to your vehicle at a midpoint in your shopping trip. Onlookers will think that you have left the mall, and your vehicle will be less of a target. Make sure your purchases are out of sight. Keep them in your trunk or covered in the front or back seats. Spread your shopping over several days. You are away from your vehicle for a shorter period of time each day, and shopping becomes less stressful.

Healthy Holidays It is that time of year when we are enjoying the holidays with friends, family, co-workers, AND FOOD. The good news is the holiday foods that are so prevalent in the office and at home can be worked into a healthy meal plan. For starters, this is not the time of year to shed those extra pounds. Research has shown that the average American gains 1-2# during the holidays, which accumulates from year to year. It is more realistic to get through the holidays with the goal of maintaining your weight rather than gaining weight. Avoid the extremes this holiday season. The more restrictive we are with our food choices the more likely we are to overindulge later on. This overindulgence leads to feelings of guilt, which then leads to more restriction. Instead, try the strategies below to enjoy your holiday traditions and treats!
• D o not skip meals . This will lead to overeating later in the day. Instead try having
lighter meals with snacks in between. It is especially important not to skip breakfast! Those that eat breakfast tend to eat fewer calories overall throughout the day. • C ontribute a healthy dish to your gathering . Consider a veggie
tray with hummus, a fruit platter with yogurt, or a pasta salad with whole grain pasta. Not only will you be helping yourself, but you will be helping others. • E njoy the company. Rather than standing next to the food table, distance
yourself and enjoy your conversation with your friends and family. Remember that conversation is calorie-free! • T o avoid overeating at your gathering try using a smaller plate . This will encourage more appropriate portion sizes. Also try filling your plate up first with vegetables and fruits before going for the entrees and desserts. Chew your food well, put your fork down between bites, and before you go back for seconds, wait 10 minutes to see if you are really hungry. • B alance calories in with calories out. Enjoy more physical activity
this holiday season. Try taking the stairs instead of the elevator, take a walk after dinner, and use your own body weight for push-ups, sit-ups, squats or lunges. Remember your goal is to maintain and not gain this holiday season!

It’s amazing what you can do with just two pennies! The Penny Power® method was designed by Dr. George Manilla to help people with Dyslexia and struggling readers to see words more clearly. When the words become clear, fluency increases almost instantaneously. Initial results show an average of a year’s growth in the first 3 months! What began as an eye relaxation technique for Dr. George Manilla has become a life altering experience for some students in Northern Nevada. Over the past few decades, Dr. Manilla has worked with students who demonstrate reading problems such as Dyslexia, and has refined a two-step process for helping these students “see” the words more clearly. He uses a daily eye exercise called “Penny Power®” along with a reading method that shows students how to focus on words to make them clear while reading. Dr. Manilla has provided services in the past through word-of-mouth, but has now decided to expand his services to schools and students everywhere. He enlisted the services of Joe de Braga, former Director of Secondary Programs for the Elko County School District in Elko Nevada, and Linda Lindsey, former reading specialist from Gillette, Wyoming. Together they have created the company, “Reading Vision LLC”.

In September of the 2012-13 school-year, teachers in Winnemucca, Nevada were trained in Penny Power® and the reading method. During the first semester the teachers trained 15 students in the system, and continued with their normal instructional
practice. Most of these students were already on an Individualized Education Plan (IEP). Three 2nd grade, five 3rd grade, and seven 4th grade students participated in the program. The students were tested during the last two weeks of September using the Developmental Reading Assessment (DRA). Their combined average DRA level was a 13.2, and when tested again during the 2nd week of December their DRA level was 18.4. That is almost an entire year’s growth in 3 months! Their reading words per minute (WPM) accelerated from 52.33 WPM at 95% accuracy in September to 80.07 WPM at 98% accuracy in December. Their reading grade level equivalent through Accelerated Reader (AR) increased from a 1.5 grade level to a 2.4 grade level. This type of growth gained in only three months would be considered significant even for a student of average ability. Keep in mind that these students have shown little or no growth in the past. Many of them had become frustrated and demonstrated emotional and discipline problems. The teachers and principal reported that these students’ self-esteem has greatly improved. We will be providing information through on-line webinars on November 5th and 7th, and will be conducting a class via Interactive Video through Great Basin College Continuing Education on February 5th and 12th. History will come alive this month at the California Trail Interpretive Center with presentations every Saturday and Sunday at 2 p.m. for visitors and local residents. Interpreters will present programs about the California Trail and why the emigrants went west, life on the Trail, “seeing the elephant,” native lifeways and other topics. Trail Center is open Wednesday through Sunday, 9-5 closed Monday and Tuesday. Admission is free. Recent arrivals in the Trail Center’s store for Christmas and beyond celebrate Nevada’s upcoming 150 years of statehood. Trail Center commemorative Christmas ornaments are great presents for those hard to gift people. Many other western themed items are available in the store as well. AND… Everybody loves books. All of the volumes - for big and little kids- have Trail, western history and Nevada subjects. The California Trail commemorates important aspects of American history in the 19th century. While the trail helped open the West to settlement, inspiring romantic movements in art, literature, and cinema that have had a tremendous impact on American culture, it also dramatically affected and impacted Native American cultures, changing their way of life.
December Events at the California Trail Center Owned and operated by the BLM, the California Trail Interpretive Center is on property donated by Maggie Creek ranch established in 1870. The location looks toward the canyon where infamous Hastings Cut-Off joins the main portion of the California Trail. Additional partners in the venture are the City of Elko, Elko County, the state of Nevada and the Southern Nevada Conservancy. This facility is the result of the hard work and dedication of a number of Elko groups and residents who lobbied for, and were successful, in getting the “California Trail Interpretive Act of 2000” passed through Congress. The stated purpose of this act is “…to provide the public with an interpretive facility devoted to the vital role of trails in the West in the development of the United States.” Come visit our booth in downtown Elko during the Snowflake Festival. Have company over the holidays? Bring them out to the Trail Center! Celebrate the holidays at the California Trail Interpretive Center. Experience some of what the pioneers and natives encountered. Understanding the past leads to an understanding of oneself, and a stronger sense of belonging to a community.

Choosing the right karate school is an important decision. Not only will the right school insure your child's success and satisfactions with classes but will also give you the peace of mind knowing that your child is in good hands. Here are 6 questions every parent should ask when choosing a karate school:

1 What type of karate do you offer? There are many types of martial arts that are generically lumped together as karate. Be sure you know the specific type of karate your child will be studying and whether the style is full contact. At Academy of the Arts, we currently offer American Kyokushin karate which is a Japanese full-contact style karate for ages 5+.
2 What size are your classes? The size of a class can impact your child's learning. The fewer kids in a class, the more personalized attention your child will receive. Our small class sizes of 12-15 guarantee personal attention as well as proper skill development, progression, and execution. Beware of schools that offer classes with no size limitations as your child may be overlooked in too large a class.
3 What will my child do in class? The study of karate requires discipline, strength, flexibility, and focus as well as respect for self and others. Our students spend time on each of these important areas each class. Through strength and core training, developing flexibility in kicks as well as agility, and learning specific skills such as punches and kicks, our students are learning powerful lessons in each class.
4 What type of facility do you have? A professional karate floor made of high density foam is the most ideal surface for martial arts. This ensures that your child is protected from impact injuries such as falls, rolls, and take downs. The foam cushions these the body during these higher impact activities and protects joints during contact. At the minimum, you’ll want to look for a school that offers floors designed specifically for movement such as dance. The surface should be smooth, resilient, and safe for the practice of karate. If floors are not cushioned, instructors should ensure safety by using mats designed for activities such as tumbling.
Surfaces such as concrete, carpet, or unfinished wood are not sufficient for karate and may eventually lead to injury. Calling and visiting karate schools is the best way to find out what type of flooring is used. You’ll also want to find out if your child will need any protective equipment such as mouth guards for personal use during these classes.
5 Who teaches your classes? We believe in consistency, especially when it comes to teachers. While having substitute teachers may become a necessity during the year, having a consistent teacher ensures that your child will continue to advance. Having a different teacher every week is less than ideal. Being comfortable and supported by a primary teacher and

understanding the expectations of a class is crucial to learning. The qualifications of the teacher are just as important as consistency of teaching. Knowing that my child's teacher has attained the highest belt ranking possible in the style of karate they are teaching goes a long way in assuring me that the quality of the class is what it should be.
For example, our students often travel to Utah to compete in karate tournaments as local ones are few and far between. Attending tournaments as well as observing students in class help our teachers gauge when a student is ready for advancement. Well, there you have it! Christmas Bird Count
In 1989 members of the Northeastern Nevada Naturalists (NNN) worked to establish a Christmas Bird Count in the Elko/Spring Creek area. This 15 mile diameter circle includes parts of Elko, Spring Creek and a portion of South Fork Reservoir. The center of the circle was strategically designed to allow for as many habitat types as possible. The Elko Christmas Bird Count was first conducted in 1990. That year 2548 individual birds of 54 different species were counted. The highest species year was 2001 with 72 species. The highest number of individual birds was 10,298 in 2010. The data collected by the citizen scientists in Elko and Spring Creek contributes to the knowledge of birds in Northeastern Nevada. Even after NNN was disbanded, the CBC continued to be held each year. With the formation of the Bristlecone Audubon Chapter, this group has assumed the sponsorship of this count. We welcome birders of all skill levels to participate. New participants will be partnered with an experienced birder. Count volunteers follow specified routes within the designated 15-mile diameter circle or can arrange in advance to count the birds at home feeders inside the circle and submit the results to Lois Ports. There is no fee charged to participate in this event. Audubon CBC data not only helps identify birds in most urgent need of conservation action; it reveals success stories. The Christmas Bird Count helped document the comeback of the previously endangered bald eagle, and significant increases in waterfowl populations, both the result of conservation efforts. The 24th Elko Christmas Bird Count will be held on Saturday, December 14, 2013. Participants meet at 7:00 a.m. and are assigned their routes. The count runs all day and ends with a potluck dinner where the data is tallied. 'Tis the Season' to vamp up our homes for the holidays and Christmas Decorations are in full swing. If you want a "custom Christmas Piece" I suggest you DO IT YOURSELF, I found a pretty simple craft on Pinterest.

Step one: First paint the base and the tip of the cone so when it is displayed you can't see the parchment color. Step two: Start punching out your scrapbook paper. Step three: After you have punched all the paper, take a pencil and roll the paper up slightly ( this gives your tree some depth). Step four: Start gluing your paper starting at the bottom of the cone and work your way to the top. Step five: Top off the tree with a star cut out of paper, or leave the painted point showing. This craft was pretty easy so I give this an A- , I love the texture of the Tree, and I believe a handful of these in all different colors and sizes would make a beautiful Christmas Mantle display!!!!
