There is no admission charge, and the proceeds benefit the Lamoille Women's Club's community service projects, scholarships, and activities. In addition to parking within Lamoille, there will be a Park N' Ride option at Lamoille Canyon Road that includes a wagon service and van . Pizzas - and Calzones

Pizza, Pizza, Pizza Pizza has its origins as peasant food – simple dough mixed and rolled into a canvas for leftovers or seasonal foods. Some variation of bread with toppings and spices has existed in all cultures as a food staple.

Thick or thin, New York or Chicago, pizza rules! Everybody loves pizza. As everyday food or a special occasion feast, it always satisfies everyone at the table. We all have a favorite pizza joint on speed dial, but you may discover the best pizzeria of all is right in your own kitchen.

The modern, Italian-inspired pizza in the States claims two seminal moments. The tomato and cheese combo is to Naples in 1889 where she was served a special pizza made of tomatoes, basil, and fresh mozzarella. The dish was a hit. The second pivotal pizza popularity point occurred in 1905 when Gennaro Lombardi opened the first commercial pizzeria in New York. Lombardi’s Pizzeria Napoletana. The rest is history – when something works, it works!

Thick Crust If a thicker, substantial crust is your preference, this recipe is the perfect starting place for your own explorations. The dough mixes up quickly and handles easily. Because this pizza is so loaded with toppings, the crust and sauce are first partially baked. Just as the crust has set its form, the pizza is removed from the oven for the addition of cheese and toppings, then the baking is finished. Personalize the toppings to your own liking.

Classic Pan Pizza with the Works
 Makes 1 large rectangular pizza. Serves 6-8 “Pizza with the works” traditionally refers to pizza with the combination of cheese, pepperoni, onion, mushrooms, and green peppers. Try some of our variations for tasty extras. 1 recipe basic pan pizza crust (below)
1 recipe basic pizza sauce (below)
2 cups shredded mozzarella
8 oz. pepperoni, thinly sliced
8 oz. white or button mushrooms, sliced
1/2 large yellow onion, thinly sliced
1 large green pepper, seeded and thinly sliced crosswise Follow the instructions for making a rectangular pizza crust. Preheat oven to 550°F (300°C). Spread sauce evenly over the pizza crust, leaving a 1/2-inch (1-cm.) border around the edge. Place on bottom rack in oven and bake for 8 minutes. Remove from oven and spread shredded mozzarella evenly over sauce. Arrange pepperoni, onion, mushroom, and pepper slices on top. Return to oven and bake for another 5 to 6 minutes, until cheese has melted and crust is golden brown. Remove from oven and let stand for 5 minutes. Slice into 12 squares and serve immediately.

Four-Cheese Pizza Bianca

Thin is in with this pizza – thin crust that is.

Makes 3 12-in. (30 cm.) pizzas. Serves 6

We must say that this thin crust recipe is one of the easiest we’ve come across. It mixed up in a jiffy, and was super easy to handle. It baked up into a crispy, crack-like base. Most importantly, it tasted delicious with the collage of spinach and cheese just browned and bubbly. A mix of ricotta and fresh basil formed the atypical sauce layer, wilted baby spinach the next, and four different cheeses intertwined in melted fashion for the top layer. Delicioso!

This twist on the classic white pizza hides wilted spinach between two sumptuous layers of cheese. 1 recipe basic thin pizza crust (below)
2 cups ricotta
2 tbsp. finely chopped fresh basil
Salt and freshly ground black pepper
Pinch of nutmeg
1 cup wilted and chopped spinach
3/4 cup shredded mozzarella
3/4 cup grated fontina
1/4 cup finely grated Parmesan
1/4 cup grated Romano Preheat oven to 500°F (250°C). Place pizza stone or unglazed clay tiles on bottom of gas oven or lowest rack of electric oven. Following instructions, make three 12-in. (30-cm.) discs of pizza dough.

To prepare topping, combine ricotta and basil in a medium bowl. Season with salt, pepper, and nutmeg. Lightly dust pizza peel with flour or cornmeal. Place one disc of pizza dough on peel and spread 2/3 cup ricotta mixture over the dough, leaving 1/2–in. (1-cm.) border around the edge. Arrange 1/3 of the spinach over ricotta and top with the four cheeses. Gently shake pizza from the peel to the stone or tiles. Bake 4 to 6 minutes, until cheese is melting and crust is puffy around edges and crispy on the bottom. Slide the peel back under the pizza to remove from oven. Repeat with remaining 2 pizzas.

Baking differences HOME vs. a PIZZERIA Pizzerias have the advantage of pizza ovens or wood-fired ovens with temperatures in the 900 F +/- range. Pizzas bake in 1-2 minutes in that environment. Most home ovens max out at 500-550F. To compensate for the lower temperatures keep in mind these two tricks: 1: Use a baking stone: Baking stones are invaluable for the home pizzeria. Place the stone on the lowest rack of a cold oven. Allow the stone to heat during the preheating. Place the pizza directly on the baking stone for maximum heat transfer. The hot stone quickly bakes the crust. Use a pizza peel to transfer the pizza to and from the stone. 2: Partially bake thicker crusts: For thick crusts, the lower heat and weighty toppings may thwart optimal results. Prebake the crust (with the tomato sauce added) for 5-6 minutes. Remove from the oven to add the desired toppings, and return to the baking stone to finish the baking.

Loaded Pizzas: If you like a lot of toppings, consider pre-cooking some of them – We found that some vegetables benefitted from a stint in the microwave on absorbent paper towels to begin the cooking and to drain some of the water away. The lower temperatures of the home oven don’t evaporate water from the toppings as quickly as a commercial oven.

What is a Calzone? Think of a calzone as a folded pizza. The calzone crust is quite similar to a pizza crust, and the same flavorful fillings are tucked inside. Calzones are served individually, though some are so large, they’re easily shared. A nice variation to pizza night. If you’ve never tried making calzones at home, you need to try this recipe. Once again, the dough recipe was a gem! Quickly mixed and easily rolled, the dough sealed up reliably, and browned evenly to picture perfection. The balance between crust and filling was just right. These folded, individual pizzas are fun to serve and eat. The pocket pie nature of calzones implies a transportability and “out-of-hand” eating that translates well to picnics and “eating-onthe-go” situations.

Sausage & Mushroom Calzones
 Makes 4 calzones With its combination of spicy and earthy flavors, this calzone is pure comfort food on a winter’s evening. 1 recipe basic calzone crust (below)

Follow the instructions for rolling the dough into 4 equal circles. Using a pastry brush, glaze the top edge of the circles with water. Spoon 1/4 of the filling onto the lower half of each circle. Sprinkle with 1/4 cup mozzarella. Fold the top over so that the edge of the top sits 1/2 in. (1 cm.) away from the bottom half. Lightly glaze the edge of the top piece and fold the bottom over to seal tightly. Make a 1/2-in. (1-cm.) slit in the top to allow steam to escape. Place the calzones on a preheated baking stone or on a cookie sheet lined with parchment paper and bake on the middle rack for 15 to 20 minutes, or until the filling is hot and the crust is golden brown.

A Chicago DeepDish version is next on our to-do list. But pizza comprises only half the book! The other half focuses on all types of flatbreads – focaccia, chapatii, papadum, pita, arepas, pupusa, and many more. The book is a great introduction to the rich global traditions of baking flatbreads and embellishing them with toppings of all kinds.

Hobby enthusiasts, including gardeners/growers, often use terms that get bantered about which may be unfamiliar to those just getting started. This is a short list of some of those frequently used terms that may help clarify some questions most often asked by people stopping by the greenhouse and nursery.

A cclimate ; Acclimating plants is the process of allowing plants time to become accustomed to their new growing environment prior to planting. Plants from the greenhouse have no experience with wind, direct sun, high daytime temps or low nighttime temps, so their tender growth needs time to toughen up, literally, to the conditions they will face once planted. We suggest at least 3-4 days and nights. G enus ; Along with variety, cultivar, and species are words that are often used interchangeably in reference to the botanical name of a plant. We usually opt for genus since most plants that reach the mainstream trade via growers are from, but not the same as, plants found in the wild. Example: Echinacea purpurea 'Ruby Star' is the genus, species, and cultivar of the Purple Coneflower we offer. Echinacea purpurea 'Cheyenne Spirit', same genus and species, different cultivar. There are also plants that are patented or branded, for example Proven Winners. Some series of plants are registered names, for example, Wave速 Petunias. A mendment ; A broad term which can include organic matter such as composted manures, wood mulch, peat moss, or kitchen compost that can be incorporated into the soil. I think of incorporating amendments as feeding both the soil and the plants. By improving/amending the soil, plantings are better able to develop a vigorous root system. This applies to intended lawn areas, beds, borders, hedges, and vegetable gardens. When you are ready to amend the soil prior to planting the area, the tiller's tines need to be brought up since amendments do their best work when limited to the top 4-6 inches of soil. Organic amendments break down as they are used and need to be replaced seasonally.

M ulch ; Literally defined, means a protective covering spread on the ground to reduce evaporation and suppress weeds. Mulches include, chipped or shredded bark, clean gravel, ground fabrics, rubber (yuck!), and given the creative forces behind gardening, the list goes on. We don't use ground fabric in the gardens, but we do use it under the washed gravel in the outdoor retail areas and under bark in the gazebo area. Gravel as mulch in the gardens is preferred by xeric plants and designs that include rock gardens. I include small bark chips in my "mix" and use it between perennials and shrubs in the gardens after cutting back the perennials in late fall. So, you might be asking yourself, "What's the difference between adding an amendment, and using mulch?", short answer, not much. Typically, amendments are incorporated before planting, and mulch is used after. W ater - wise ; A term that refers to the plants, not the people who water them. It's a favorite listing because there's such a wide variety of plants available to choose from and because, let's face it...we live in a high desert and water-wise plants are a smart choice. I believe that most mortalities in the landscape can be directed to the amount of water a plant needs vs. the amount of water a plant gets. Water-wise plants have adapted over many years to hold the water they need in their roots and foliage. Pubescent foliage with its fine hairs, traps moisture, narrow leaves also tend to require less water. An example of a xeric (zir-ik) plant with both characteristics is Cerastium 'Snow in Summer'. X eriscape ; Landscape principles that make a lowmaintenance, water-wise landscape both attractive and attainable: Thoughtful planning, Improving soil conditions, Limiting turf areas, Mulching, Grouping


plants with similar water needs, Efficient irrigation, and Maintenance including weeding, pruning, and scheduled fertilizing. Consider this, whether to water depends on the weather. A eration ; Via aerators for lawn areas and via incorporating coarse materials including sand, bark chips, perlite, etc. into the soil to allow for water and nutrients to flow evenly through the root profile and to reduce soil compaction. F ertilizer ; N-P-K: Percentage of NitrogenPhosphorous-Potassium. A balanced fertilizer is suitable for most plants. Water-soluble fertilizers dissolve easily in warm water and can be applied through a sprayer for foliar feeding or a nozzle applied directly to the roots. Slow-release fertilizers have prills with small amounts of water-soluble fertilizer that release small increments of fertilizer each time the plant is watered. The more often you water, the more often fertilizer is released.

There are lots of great books out there on gardening. Two I recommend include: Taylor's Master Guide to Landscaping by Rita Buchanan. This is a great book. The pictures and text are so well done with easy and practical advice on adding new gardens and hardscapes along with "makeovers" for problem solving. Backyard Design, Making the Most of the Space Around Your House by Jean Spiro Breskend. I leave this book outside through the summer and look at it whenever I have a chance to sit and relax under the gazebo. The pictures give me ideas on how to balance time:energy:space:design in my own backyard.

Painting the Desert During the spring and summer the beautiful colors of the Indian Paintbrush brighten our high desert landscape. There are over 200 Indian Paintbrush species belonging to the genus Castilleja. They are found in the western Americas from Alaska to the Andes and into Northeast Asia. The colors of this annual are not due to its flowers. The plant has brilliant scarlet bracts, specialized leaflike parts that surround and hide the red and yellow flowers. These somewhat jagged, colorful bracts can also be in various shades of orange, purple, yellow and sometimes white. The bracts on the lower portion of the plant are often green. You rarely see this plant on its own, it is usually scattered through an area with other plants. Indian Paintbrushes are semi-parasitic. The plant has green foliage and it can photosynthesize on its own but by using the surrounding plants it increase its productivity and chances of survival. Specialized roots drill into the roots of other plants for the purpose of stealing water and other essential minerals. Paintbrushes have a tendency to absorb and concentrate selenium in their tissues from the soils in which they grow, and can be potentially very toxic if the roots or green parts of the plant are consumed. Highly alkaline soils increase the selenium levels in the plants. In our area, sagebrush and lupine are common host plants. The root system of sagebrush is a combination of a long taproot and smaller shallow roots. At night, the tap root of the sagebrush pulls moisture from deep in the soil up to shallow branching roots that grow near the surface. During the day, the shallow roots use this water to keep the shrub alive. Indian Paintbrushes connect into this system of roots and benefit from its water resources. Lupines have nodules on their roots which contain nitrogen fixing bacteria which supply nitrogen which is essential to a healthy plant. Because of this close relationship with their host plants, Indian Paintbrushes do not usually survive being transplanted.

The Checkerspot Butterfly is dependent on the Indian Paintbrush as a host plant for its caterpillars. In this way they are responsible for the survival of these beautiful butterflies. In early June Soldier Creek Canyon often has large numbers of freshly emerged adult Checkerspot butterflies along the stream and any recent rain puddles.

Elko Motorcycle Jamboree The Elko Motorcycle Jamboree is Elko County’s largest motorcycle rally and one of the largest events of its kind in the Western United States. Motorcycle enthusiasts from all over the country join locals for a one of a kind Rumble in the Rubies schedule for June 13-15. As a reminder to the community, road closures will begin on Thursday, June 12th, 2014. Please remember there is a minor curfew in effect for the event, all minors need to be off of the venue by 10PM. The EMJ will also be asking the public to refrain from bringing pets to the Jamboree as this has posed a health and safety hazard in the past with the many food vendors on site. A couple other key things to remember is that Elko does have a NO GLASS ordinance for the downtown corridor so please make sure you are using plastic containers when walking around. Sunscreen is also a must even in Elko, please make sure to protect yourself from the sun.

Ready! Set! Shoes! 1. Let's go Nude! Nude shoes are not just trending currently they are forever trending. A nude shoe can make and well......make your outfit. One must not bedazzle, however a touch of gold can go far when paired with nude. From formal to casual a nude shoe will fit with anything you have in your closet.

4. The future so bright I gotta wear shades...or is it because I'm wearing NEON? Whenever something 80's is trending I feel like I'm walking on sunshine. This trend comes with rules however. Rule #1. The best way to do anything neon is in small doses. Rule#2. Please wear only one color of neon at a time. What is the perfect outfit for neon? Believe it or not it's sophisticated style. Let's say you have a neon yellow sandal. You should wear a crisp blue denim shirt with white shorts. Accessorize with gold or silver bangles and small hoop earrings and a classic luggage brown cross body bag. This outfit will take you from having lunch with the gals to soccer practice to drinks with the hubby. And let me assure you, compliments will be coming your way.

5. Gladiators When in Rome do as the Romans do. As far back as the Roman times or the "sword and sandal" genre the gladiator sandal has stood out in both costume design and on designer runway shows. When partaking upon this trend you have to ask yourself "how bold am I"? Gladiators can be flat and come up to just above the ankle, or stilettos with straps going all the way to your knee. In both cases I prefer the sandal to be a neutral color with minimal adornments. This shoe will stand out and make if not take over any outfit. It's best to keep your clothes and additional accessories simple. A black summer dress or shorts that are above the knee will pair nicely with a statement shoe like the gladiator.

6. Bejeweled sandals "Jaime bijoux"! French for "I love jewelry"! I especially love jewelry on my shoes. Bling it on! Bedazzled, encrusted, bejeweled and adorned the more the better. Anything shiny plus the sun is going to be exciting to look at and even more exciting to wear. For this shoe I say, "viens jover dehors"! Or, "come out and play"! Bejeweled sandals are going to work for any outfit and any occasion. This is also a good shoe to invest in. Buy one that will last forever because they will be in style forever. "Merci".

Reality tells us there are very few people in the world that are not confined by constraints of money matters when it comes to decorating and furnishing a home. Knowing the limits of the determined budget is the easy part. The biggest hurdle is applying or sticking to it. That is the first step…setting a realistic budget. Throw the urge for impulse purchases over the cliff.

Determine the style, mood, motif, or statement that will endure for several years; one that is comfortable, easy care, well-constructed, and meets the needs of form and function. A lot depends on the space available. For instance, if the living room is small in proportion, avoid purchasing a large sofa with a love seat. Instead, order two love seats and a chair or two. Chances are, this choice will offer more than a single way of arranging pieces in the same room. Consulting a professional before you buy can easily save money and allows the budget to go further. The same holds true for window coverings. Window treatments are a very strong element in the creative process of setting the style of the room. In addition, whether fabrics or blinds…they insulate afford privacy, room darkening qualities and control the UV rays that damage all fabrics and floor coverings. Custom window treatments should be included in the overall plan as a furnishing element. Choices are limited only by the persons’ mind.

Furnishing is completely separate from decorating a room. Although, the two elements go hand in hand. It’s rather like a good marriage. The personalities of both elements work together to form a perfect union. Furnishing a home is foremost as part of the overall plan. The idea is to choose furnishings that enable a change when the room appears “dated”. Avoid purchasing for just the trend today…which can be gone tomorrow and replaced! A much wider variety of design and color choices are available to the discerning homemaker than the big box or mass market stores offer. Manufacturers for these retailers focus on rapid sales for a quick turnover while offering few choices to maintain a lower price point and in most cases, made in China. Thus, home interiors have a cookie-cutter appearance and feel. Just imagine how many living rooms look the same in your town!

Decorating includes selecting the color, pattern, and accessories. In other words adding the finishing touches. This offers the chance to really shine and set the stage to individualize the home.

Home fashion is not as dictatorial or rigid as clothing fashion. There are many more choices, including custom furnishings. Custom is not necessarily more expensive. It is possible to purchase a sofa in the style the customer envisions opposed to what is on the showroom floor; by choosing the style of the back, outside back, arms, skirt, what fabric or leather should be placed here or there, cushions boxed and welted or knife edge, back cushions tight or loose, leather on the inside and fabric outside, down or polyester fill, and in most cases length to accommodate the size in the room. The main factor and importantly, quality is built into the product. Expect this sofa or chair to still be around 15 years or more! Follow this plan and it is possible there will be fewer sofas to haul into the house in a lifetime.

There are a multitude of “classic-color” schemes that will transition from the home’s current trend to the next up and coming direction. The same holds true for the style of furnishings. Have a professional show you how to determine what color is compatible with another color and which colors coordinates with others. This simplifies choices that will be made during the planning stage. The theme behind the style that was chosen plays an important element when choosing colors. By keep upholstery fabrics in the “classic-color” realm, it leaves the door open for more choices of paint colors and accessories. Presently, “classic” cobalt and navy blue are popular. Embrace cobalt blue as is a strong possibility for tile color choice. It is always in style. A coordinating color is terra cotta/orange!

Wall color is so important. Depending on the style of the furnishings, color choice will compliment and set the scene for the resulting theme. The goal is to achieve the desired effect. Also, the room can easily be painted again to update to the next trend while the upholstery and furnishings stick around.

By simply replacing throw pillows with updated designs and/ or changing the wall color, the room will now speak a different language! Picture a soft Persian blue on the walls and a Suzani design in grass green or salmon/peach on throw pillows. Add an abacus accessory and gothic shaped camel-bone framed mirror and the room will speak Middle Eastern. Or change the pillows to western Ikat pattern and add some western art, plus a pair of rusty spurs and the decor will talk with a twang.

If a buyer avoids the mass market selections and spends time searching for unique furnishings the cookie-cutter appearance will not be present. An easy way to find an individual style is to look through the shelter magazines (home decorating editions) and tear out the pages of something you like…keep the sources page…file the clippings and discard the magazine. When there is sufficient information to select the points with possibilities and qualities that are lasting and will not require “updating” for several years, start your project. Lasting designs take time and planning. Stick to the design that was chosen. Stay focused. Consider visiting a “historic” home. Spend a night in a quaint hotel or bed and breakfast…especially in Europe. They are a testament to lasting décor and design. Charming and colorful! Kitchens and bathrooms are the only rooms that truly require “updating”. Correct?

Elko we started a special three-part series on revitalizing your entire well being by working on all six aspects of your health over the course of 1 month. In the first post we talked about mental and social health and the second post we discussed spiritual and environmental health. Today, it’s time to finish the series with ways to enhance your emotional and physical health. Let’s go!

Taking Care of Your Emotional Health Emotional health is being in control of how you feel, how you behave and your thoughts. It’s about happiness, letting go of the little things in life, and enjoying all of your blessings. So, let’s make time for appreciation, love and the beauty in life. Talk to someone about open wounds you may need support with. Are there things in your life or past you haven’t fully dealt with? Talk to someone so you can heal and come back even stronger than before. It will make the rest of your life even better.

Let the worry go! Trust that things happen for a reason and some things are out of your control. Negative thoughts like this waste your time and drain your energy. Get in touch with your feelings. Nominate a Good Neighbor

Terri and Janet Pescio in Boston Our office would like your help in finding and acknowledging members of our community for some of the wonderful things they do! We are looking for a special deed, a random act of kindness, someone who made a difference in your life. Maybe even someone who is constantly volunteering; no limits, it just needs to be something that stood out to you. Help us shine a spotlight on a Good Neighbor! Each month they will be featured in Everything Elko magazine and the Chamber of Commerce newsletter. This month our Good Neighbor is Terri Sirotek nominated by her daughter Melissa Duke owner of Graffiti Salon. When we asked Melissa why she nominated her mom she said that her mom is an inspiration to her in every way. Over the years she has watched her mom endure many injuries, extreme heat, blisters and much more. Melissa completed one of the walks with her mom and said it was very hard and she would never do it again. She is Terri’s cheerleader and supports her every step of the way. Terri Sirotek is someone you could say is driven, dedicated, and inspirational! Terri has done Avon’s breast cancer awareness walk in every city they host one in. Her first walk started in Denver then to San Francisco, New York City, Rocky Mountains (columbine area), Chicago, Boston, Santa Barbara, Washington D.C., Houston and her final walk will be in Charlotte, North Carolina. In October she will have done 10 walks total in the past 8 years. Each walk is 40 miles and is split into two days. The first day they walk 26 ½ miles and the second, 13 ½ miles. That is a total of 400 miles and she isn’t even finished yet! Many of the walks she has experienced record high heat and has endured everything from losing toenails, heat rash, blisters on her legs from the heat of the asphalt, and walking with an injured calf but still completed the walk all in an effort to raise money for breast cancer awareness. It all started with a friend asking if Terri would do the walk with her and a clip she watched for

Avon’s breast cancer awareness walks that helped ignite the spark. From then on there was no stopping her. When we asked Terri what motivates her to keep going she started by telling us how people around her kept encountering this disease and after doing so many walks she figured “Well, I better keep going.” This disease has also closely affected Terri’s family as her Grandmother had cancer and 3 years ago they found out her aunt had breast cancer and battled it but sadly passed in January of this year. Terri said it seems since she has started walking friends and relatives have all been affected by cancer and her list of people she walks for grows and grows sadly. Terri has a backpack that has buttons with photos of friends and family members affected by breast cancer and also people who have donated that have someone who is being affected by it. She asks for a photo and Melissa McNutt owner of Images makes the buttons. Terri says 3 people she works with are now buttons on her back pack.
