Yet, these visual gems are simple to assemble; they turn any kitchen into a fancy pâtisserie this time of year. It Starts with the Crust

� The secret to a good-looking and a good-tasting tart lies in its three parts: the crust, the filling, and the topping. Try the Fresh Raspberry Tart recipe, and you'll find out just how easy it is to make an outstanding tart
with a pie, (although it's pretty important there, too). The tart crust may be more cookie-like in sweet tarts, and more like a flavorful shortbread in savory tarts. Match the tart's main message with a complementary crust choice. Types of Crusts - There are many different types of crusts all based on the basics: flour, salt, butter, (or other fat), and water. Variations come in the form of differing proportions, or enrichments of sugar, egg, and flavorings.

Pâte Brisée - This traditional French crust version is enriched with egg yolks and has a greater proportion of butter than a shortcrust pastry.
Pâte Sucrée - Similar to pâte brisée, this crust has the addition of powdered sugar for added sweetness along with a bit of vanilla. Flaunt your Crust- From a basic crust recipe, additions such as, lemon zest, herbs, ground almonds, and so on, add nice dimension to a tart. Leave your guests curious and asking, 'What's in that crust?' Making Great Crusts -- Good crusts are all about creating pockets of air betwixt and between layers of flour. Butter seems to be the fat of choice for tarts. The flour and butter are blended together with the flour encasing the bits of butter. Achieving a "breadcrumb"
� consistency is crucial; avoid mixing the flour and butter too much. When the crust bakes, the small particles of butter melt creating the desired air pockets and layers. The Ultimate Finishing Secret - The secret to gorgeous fresh fruit tarts is the glaze that enrobes the final fresh fruit layer. The simplest glaze is melted jelly or preserves. Gently heat 1 cup of preserves. Just as it melts, thin slightly with a tablespoon or two of water. Strain to remove any fruit pieces or seeds. Brush and dab the melted preserves on top of the fresh fruit taking care to also cover any spaces between fruits. Chill for at least 20 minutes to set the glaze. Apricot preserves are often our glaze of choice because of its slightly tart taste, (no pun intended), and because its subtle coloring allows the fruits' natural coloring to predominant. Red currant jelly is another favorite that we like to pair with red fruits.

fresh raspberry tart
�
(Serves 6 - 8)
A tart that celebrates the perfect marriage of raspberries and cream. This is simplicity itself to make, but must be assembled at the last moment to keep the freshness and crispness of the crust. I like to sweeten the cream with a little strained homemade raspberry jam and I add a dash of framboise (raspberry liqueur) if I have it. ** Variation: I sometimes lightly toss the raspberries in the jelly (you may need a bit extra jelly to do this), coating them completely without breaking them. I then spoon them over the surface in higgledy-piggledy fashion. * Note: You may like to brush the inside of the pie crust with melted white chocolate before filling -- this will keep the crust crisp, and make the tart even more of a special treat! You could also decorate the top with white chocolate curls (use a chocolate with a low cocoa solid content, bring it to room temperature, and shave with a potato peeler.
1 recipe Pâte Brisée (see below) 2 - 3 tablespoons homemade raspberry jam 2-3/4 cups heavy cream, or 1-1/4 cups heavy cream mixed with 1-1/4 cups crème fraîche or sour cream 2 tablespoons framboise, (optional) 1-1/2 lb. fresh raspberries (5 cups) 1-1/4 cups raspberry or red currant jelly (any berry preserves will do) a falsebottom fluted tart pan, 8 inches in diameter foil or parchment paper and baking beans
the base, chill or freeze for 15 minutes, then bake blind [see newsletter instructions]. Let cool.
Bring the dough to room temperature. Preheat the oven to 400°F.
Put the raspberry or red currant jelly into a small saucepan and warm it gently until liquid. Brush over the raspberries to glaze. ** Put into the refrigerator to chill and set for 10 minutes only before serving (no longer or the tart will go soggy).
Roll out the dough thinly on a lightly floured work surface, and use to line the tart pan. Prick

WINNEMUCCA RECREATION/BOYS & GIRLS CLUB COMPLEX PHASE III In October 2013, a group of local citizens came together to bring a new Winnemucca Boys & Girls Club/Recreation Complex to Winnemucca. The stage is set and efforts are underway to secure the resources to make this vision become a reality. PHASE II Recreation Center - $5,074,750 PHASE I Land Acquisition & The proposed Recreation Center will consist of a Development - $3,020,000 gymnasium with suspended walking track, fitness The first step of this process was to secure a center, youth facilities, administration space, location. The premier STEM Center will be used by the high school during the day for their technology advancement classes and the Boys & Girls Club children after school. The Technology Center comes complete with computer lab, recording studio, media lab, photography, science & mathematics, engineering, and movie productions. This new center will also be the headquarters for the Boys & Girls Clubs education program. The Boys & Girls Club recognizes that quality recreation is essential to overall happiness and will have high energy game room to entertain Winnemucca’s youth for generations to come. The Fine Arts Center is a state-of-the-art facility with top-level equipment necessary to provide arts for Winnemucca’s youth. The new Boys & Girls Club will commit to helping every child graduate on time with a plan for the future, live a healthy lifestyle, and have character and civic responsibility.
FUTURE EXPANSIONS It is our long-term goal to develop a centrally located sport complex in the future that offers soccer, baseball, softball, tennis, football, and other sport activities that can utilize multi-purpose fields all at one location. This goal can’t be achieved overnight and is part of a long-term vision for our community. However, securing a large site at this time makes it possible to expand throughout the years to meet our communities sport and recreation needs for generations to come. It is also our vision to bring a state-of-the-art aquatic center to Winnemucca. This proposed center would be a competition pool with premier recreational swimming amenities. It is important to understand the $6.0 million cost to construct the aquatic center has put this facility out of our reach at this time. However, the high need for this center has placed this addition on Winnemucca’s master site plan.

Micronesia is home to the bluest water on earth, and one of those places you visit and you don't want to go back home! So be warned if you vacation in one of the many islands of Micronesia you may suffer from the “I don't want to go home” blues! We will go over just a little of what Micronesia has to offer. Now let’s talk about the perfect place to think about a vacation in magnificent Micronesia. Micronesia is a sub-region of Oceania, comprising of thousands of small islands in the Western Pacific Ocean. Guam is the largest of the islands in Micronesia. From the

busy beaches and shopping of Guam to the sport fishing mecca of the Marshall Islands, this is where memories are made. We will start out in Guam, an organized, unincorporated territory of the United States in the Western Pacific Ocean that offers a low key alternative to Hawaii. Guam offers the traveler some of the best vacation adventures and best accommodation prices from moderate to high end. You will find a ton of things to do when you visit Guam. One of the best places to just getaway, is a beach named Ritidian Point. This beach is remote and part of the wildlife refuge, so that being said that means NO SERVICES. I want to make that clear because if you’re looking for a place to go crazy and booze it up then is not the place for you. In fact, it is a little bit of a pain to get to. It's about a 30 minute

drive from the towns of Tumon Bay or Agana Bay. So you will need to rent a car or SUV, the road or highway if that's what you would like to call it, is not in the best of shape. So take care when traveling in that area - No pain, no gain is what I always say. Maybe this road has been repaired but, don't hold your breath.
This part of the world is very tropical and as a traveler you need to understand where you are heading so you can be a better traveler. A lot of the world has some very cool places to go and see and you will need to adjust to the weather. I guarantee you the islands of Micronesia are a place of warm, very teal blue waters! Now that we have said warm, teal blue water, it is safe to tell you they have some very cool snorkeling and diving areas. There are several other areas in the Federated States of Micronesia for diving and relaxing as well.
A lot of the beautiful destinations worldwide, lack funds for roadways and the repairs are very limited. We have amazing roads and freeways here in America compared to other parts of the world. You will find in most of the beautiful island areas, roads and highways are on the bottom of the list (lol). Pam and I try to go to as many islands as we can and have found this to be a normal practice (very small roads with potholes). Remember, you are there to relax - so slow down and take it easy.
Let's cover a very cool place to go diving! We are heading over to Chuuk Micronesia, aka Truk Islands or Hogoleu Islands. What kind of cool diving - wreck diving, it is a wreck divers paradise. Here you will find a lagoon

Humidity runs high in this part of the world, and in Yap humidity of 85% is the average year around.

No, we are not the Color Run; Color me Rad or Run or Dye! What we are is “Color the Mucc”, the largest single color run in the middle of nowhere. You heard right—some people think it’s the middle of nowhere, but its certainly going to be a very bright spot in the middle of nowhere, come October 4th. “That’s what we want to be known for,” says Alicia Cramer who sits on the board of directors for the Humboldt County Chamber of Commerce, “a bright spot, a colorful place to be. This will be a fun run/walk for the whole family—a great community event and something good for you. Get up, get moving, and come have a good time.”

The Chamber of Commerce and Humboldt General Hospital are sponsoring “Color the Mucc” a 3k-5k fun run on Saturday, October 4th, 2014. Registration is now open on-line at winnemuccachamber.blogspot.com or at the Chamber office, 30 W. Winnemucca Blvd. There are no winners or losers at this event, not even official time is kept, (although there will be a time clock at the end for serious runners to note) but rather individuals and teams and families out to support their community, get doused with color at each kilometer, to have fun, and get a little exercise at the same time. “Participants must wear white” says Cramer, “and that’s about the only requirement.” The race begins at 9:00 a.m. at the Winnemucca Community Garden and ends at Vesco City Park, where the Winners Hotel and Casino will be hosting the “Winners Circle” and handing out water, fruit, energy bars and the swag bags for those who cross the finish line. Inside the swag bags, which will be provided by Humboldt General Hospital, are lots of goodies from various businesses around town as well as a cool pair of sunglasses. The Lowry High School Year Book Club will be taking photos, and there will be music, that unofficial time clock, cheerleaders to cheer you across the finish line, and more. Check List Autumn is finally here! Pumpkins are ready to be picked, we have shorter days and cool, crisp mornings. That’s the signal of winters approach. Use this time to conquer some deep-cleaning chores for a clean and comfortable winter home. This Fall Cleaning Checklist will help prepare your home for the upcoming winter:

•C lean and store patio furniture, umbrellas, children’s summer toys
• Focus on public rooms: living room, family room, entryway, guest bath.
• Touch up paint on trim, railings and decks. Use a wire brush to remove flaking paint; prime bare wood first.
• Wash interior windows.
•C heck caulk around windows and doors. Follow manufacturer’s recommendations to recaulk if needed.
• Schedule professional carpet cleaning. Warm September afternoons speed carpet drying.
• I nspect external doors and garage doors. Do they close tightly? Install weatherstripping if needed. • Wash exterior windows. •D rain and store garden hoses. Install insulating covers on exterior spigots. In our area, it is hard freeze zone. That means you should have the sprinkler system blown free of water. •C heck gutters and downspouts. Clear them of debris. Consider installing heating cable to prevent ice buildup. •H ave chimneys and flues inspected and cleaned if necessary.
• Turn mattresses front to back and end to end to equalize wear.
• Pull refrigerator away from the wall and vacuum condenser coils. For bottom mounted coils, use a long, narrow brush to clean coils of dust and debris. • Clean or replace humidifier elements. • Inspect washer hoses for bulges, cracks or splits. Replace them every other year. • Check dryer exhaust tube and vent for built-up lint, debris and birds’ nests. • Schedule fall furnace inspections now. Don’t wait until it’s too cold. • Buy a winter’s supply of furnace filters. Change filters monthly for maximum energy savings and indoor comfort. • Drain sediment from hot water heaters.

A Short History of

Herbalist, herbal medicine practitioners, traditional medicine practitioners, and Ayurvedic, homeopathic, and naturopathic healers all use herbal remedies in their practices. Seeds, leaves, stems, bark, roots, flowers, and extracts have been used in herbal medicine over the millennia of their use. These supplemental treatments have been delivered raw, in teas and tinctures, as topical applications, in liquid forms, and in pills and capsules. In the beginning the plants were consumed raw or combined with hot water as a soup or tea. Later, the plants were dried and crushed for other uses. The plants were found in the wild and uses were often based on superstitious or visual cues. Plants were often used to treat body systems because they were shaped like that body part or because they grew in a particular area. As science began to take a closer look at herbal remedies, their use became more refined. Herbs, and other plants, are actually the precursors to many of today’s medicinal drugs. Some of the pharmaceutical medications on the market are extracts of some of these traditional herbs. Today, many modern, and Western, medicine practitioners are once again looking to herbal remedies for some common, and not-so common, disorders. The lower cost, and often safer use, has attracted many medical professionals. Some physicians use herbs to off-set the side effects of pharmaceuticals.
Timeline of the History of Herbal Medicine No one knows, for sure, when humans began using herbs for medicinal purposes. The first written record of herbal medicine use showed up in 2800 B.C. in China. Since then the use of herbs has gained, and fallen out of, favor many times in the medical field. The timeline that follows shows some of the key dates and major points in the history of herbal medicine.

2800 B.C. - The first written record of herbal medicine use showed up. (Titled the Pen Ts’ao by Shen Nung) 400 B.C. - The Greeks joined the herbal medicine game. Hippocrates stressed the ideas that diet, exercise and overall happiness formed the foundation of wellness. 50 A.D. - The Roman Empire spread herbal medicine around the Empire, and with it the commerce of cultivating herbs. 200 A.D. - The first classification system that paired common illnesses with their herbal remedy appeared. This was prepared by the herbal practitioner Galen. 800 A.D. - Monks took over the herbal field with herbal gardens at most monasteries and infirmaries for the sick and injured. 1100 A.D. - The Arab world became a center of medicinal influence. Physician Avicenna wrote the Canon of Medicine, which gave mention to herbal medicines. 1200 A.D. - Black Death spread across Europe and herbal medicines were used alongside “modern” methods such as bleeding, purging, arsenic and mercury with equal, or better, results. 1500 A.D. - Herbal medicine and herbalists were promoted and supported by Henry VII and the Parliament, due to the large number of untrained apothecaries giving substandard care.

Herbal Medicine Today Herbal medicines are still in use today. In some respects they have gained a new momentum in the medical field. As many people seek alternative treatments and begin to check out traditional, and Eastern, medicine, herbs are becoming more popular. As physicians seek new treatments for many common illnesses they are beginning to revisit the traditional remedies, using herbal medicines. The history of herbal medicine has been both long and colorful. From the early Chinese Empires to modern physicians’ offices, herbal medicines have continued to be a part of the medical field. Herbal treatments have matured throughout history, along with the methods of delivering them. In the beginning, the herbs were used in a hit or miss method and required major events to change their use. Research and clinical trials have helped to shape the field of medicine, and the future for herbal medicine looks bright.
1600 A.D. - Herbs were used in treating the poor, while extracts of plant, minerals, and animals (the “drugs”), were used for the rich. The English Physician was published at this time which outlined herbs and their use for medicinal purposes. 1700 A.D. - Herbal medicine got another high profile endorsement from Preacher Charles Wesley. He advocated for sensible eating, good hygiene and herbal treatments for healthy living. 1800 A.D. - Pharmaceuticals began to hit the scene and herbal treatments took a back seat. As side effects from the drugs began to be documented, herbal remedies came into favor again. The National Association of Medical Herbalists was formed, and later renamed the National Institute of Medical Herbalists (NIMH.) 1900 A.D. - lack of availability of drugs during World War I increased the use of herbal medicines again. After the war pharmaceutical production increased and penicillin was discovered. Herbal practitioners had their rights to dispense their medications taken away and then reinstated. The British Herbal Medicine Association was founded and produced the British Herbal Pharmacopoeia. People began to express the concern over the large number of side effects and environmental impact of the drugs of the 1950s. 2000 A.D. - EU took action on regulation and testing of herbal medicines similar to those used for pharmaceuticals. Herbal medicines have been documented for almost 4000 years. These medicines have survived real world testing and thousands of years of human testing. Some medicines have

A Yoga Experience Back to School
Now that summer is drawing to a rapid close and the kids are back in school, parents and grandparents can begin to think about themselves a little bit. There might be a few more hours in a day, while the children are out of the house, happily immersed in the activities of our school system. I can’t think of a healthier undertaking than enrolling in an exercise class which attends to body, mind and breath. Something that is enjoyable as well as challenging, energizing as well as relaxing. There are many types of exercise programs that are beneficial to our health and well-being. It’s important to pick one which you can relate to and will stick with. The practice that has spoken to me is Hatha Yoga. Hatha is a Sanskrit word. ‘Ha’ means ‘sun’, and ‘tha’, means ‘moon’. Yoga means ‘to bring together’, so Hatha Yoga means to bring into balance the ‘opposites’: male/female, hot/cold, active/receptive. By practicing Hatha yoga, we bring our opposites into balance with each other. This results in a sense of well-being and a heightened awareness and appreciation of our place in the world. I seem to have been born with a lot of nervous energy and even at a ‘mature’ age, I haven’t spent it all. My nature is also to

be a bit competitive. We’ll, okay, I’m ‘a lot’ competitive. These two traits have worked against me in my effort to find peace within, and to reach my physical goals. Yoga has taught me how to spend and regulate my nervous energy in a positive way. It has also addressed my competitiveness. I’ve learned simply to be what and who I am in any moment. When I am present with myself I can still challenge my body, but progress in a more relaxed, lasting and effective way. Since my theme today is about achieving balance, I would like to share two poses in this article, the Warrior and the Triangle. The Warrior brings out our fire. It’s challenging to hold for a full minute. It brings us into a place of strength and stillness. The Triangle is a more calming, feminine pose, with a soft moonlike quality. It provides a wonderful stretch while allowing us to cool down the fire within. Both of these poses are done with focused breath (pranayama).
Warrior II (Virabhadrasana II): This pose emphasizes grounding and heating and awakens the elements of earth and fire. It brings into alignment our shoulders, legs, pelvis and hips. With practice we learn to hold the pose longer and this teaches us to remain calm in the middle of ‘seeming’ chaos. Begin by standing with legs wide apart. Turn the right foot to the right. Lift the left heel up and place it down at a 45 degree angle. The arch of the left foot and the heel of the right foot are in alignment. With the arms relaxed down by your side, bend your right knee 90 degrees. Press into the outside of your back foot from the hip all the way down to the foot. Engage the thighs and glut muscles as you lift up through the spine all the way to the base of the skull. The spine is perpendicular to the floor and the chin is parallel to the floor. Now lift your arms up to shoulder height, stretching them is opposite directions. Your right arm is lifted above your right foot and your left arm is above your left foot. Your gaze is gentle and focused beyond your right hand. Hold the pose for 10 breaths to a full minute. Each breath is full and deep as the rib cage expands on the inhale and contracts on the exhale. Repeat on the other side. Triangle (Trikonasana): This pose emphasizes the elements of water and air, while maintaining a deep connection with the earth. Triangle opens and aligns the legs, hips and arms. It opens the spine with a gentle rotation and works the respiration muscles to create fuller breathing. Begin by standing with the legs wide apart. Turn the right foot to the right. Lift the left heel up and place it down at a 45 degree angle. The arch of the left foot and the heel of the right foot are in alignment. Hug your femur bones (upper thigh)
with your thigh muscles to activate. The front knee is in line with the front ankle. Gently lift your arms up to shoulder height and stretching them away from each other. The right arm is above the right leg and the left arm is above the left leg. Then stretch the right arm over the right foot and beyond as if you were reaching for something. Lengthen the spine as you stretch, then place your right hand on your right knee and rotating your torso, look up towards the left hand which is pointing skyward. Drop the torso down and allow your right hand to rest on your shin, foot, or the floor, depending on your flexibility. Press down into the outside of your back foot as you stretch in the opposite direction and lengthen and rotate the spine. Hold this pose for 10 breaths to a full minute. Let each breath be full and deep as the rib cage expands on the inhale and contracts on the exhale. Repeat on the other side. Be sure to relax a few moments on your yoga mat after completing a sequence of poses to integrate the positive effects the pose has on your body, mind and spirit. Do not attempt these or any other poses if you are in pain or if the pose creates pain or discomfort. It is always best to consult a qualified yoga instructor or therapist before practicing yoga poses. There are modifications for each pose which should be discussed with an instructor. This article is meant to introduce readers to the benefits of yoga. It is not meant to be a complete set of instructions. Always consult your physician before beginning any new exercise program. With fall sports underway, now is a good time to consider the eye-related risks associated with athletic activities. The following is important information from Liberty Sport’s website (www. libertysport.com): The Risks • More than 600,000 eye injuries related to sports and recreation occur each year. 42,000 of these injuries are of a severity that requires Emergency Room attention. • More than 90% of all eye injuries can be prevented with the use of appropriate protective eyewear • Sports participants using "street wear" (corrective eyewear or sunwear that does not conform to ASTM standard F803) are at a far more severe risk of eye injury than participants using no eye protection at all.

Camp Solace 2014 Camp Solace 2014 was an amazing experience for all those whom attended this year’s camp as we had 6 volunteers and 6 youth from Winnemucca who were able to attend. The camp was held at the Boys & Girls Club of North Lake Tahoe in Kings beach, CA August 1-3! The camp held every year is for youth ages 5-17 years old that are grieving the death of a family member or friend and this year Camp Solace had 51 youth attend camp. All volunteers began their weekend Friday morning by checking in with Monica Gonzalez the coordinator and organizer of the camp, whom is also from Winnemucca. Monica explained the schedule and the roles of the volunteers as camp counselors for the weekend and we prepared for the campers to arrive. As the campers arrived, they were checked in, introduced to their counselors, and once all had arrived, Monica brought us all together to introduce ourselves to the group as a whole. Guidelines of the camp were reviewed with all participants and the first activity began where each participant was given a jar for a nature walk, we all went out into nature and enjoyed the beautiful weather in Lake Tahoe while picking up items of meaning to each of us. Once we finished our nature walk we shared within our groups the meaning of our items we picked up in relation to the loved ones we have lost and honoring their memory. We have just begun our getting to know one another yet the power of connections in relating to the grief we all have experienced at one time or another in our lives is remarkable. Each group then had the task to come up with a group name for the weekend, which definitely brought out the personalities of the campers and counselors. It was then time for lunch, moving into the rooms each group would be sleeping in, and after lunch, beach time! We all dressed for swimming, kayaking, building sand castles, and again appreciating the beauty of Lake Tahoe as the water was surprisingly warm. After a couple hours of enjoying the beach and a snack it was time to head back to the camp for dinner. On that note we had some really great volunteers putting together some outstanding nutritional meals. Once everyone is finished with dinner we all get ready for our first healing circle which entails a camp fire, sharing, caring, and s’mores. Our first day together and the blending of traditional camp activities with the moments to honor and remember our family and friends have proven to be successful.
The next morning begins with everyone getting up and dressed for the day and breakfast. The day is then full of different activities the youth can choose from including making leather pouches, writing a song, outdoor games, and cooking taffy. Each of the youth has the choice to participate in three out of four of the activities with lunch served in between. Then again it is time for the beach and one of the favorite activities for all of the youth and counselors. Saturday night is skit night where each group does a skit with the props their counselors have brought and again we are all laughing and having fun as the youth put their acting skills to use, what a great day and night, and again it’s time for a healing circle. This time we all head back to the beach where a circle has been made with candles which we will light once the wind calms down as in the moment we all take the time to reflect on our weekend and the gorgeous sunset taking place as we wait for the kayaks with our luminaries to make it to the beach. Again we share with one another our memories of our loved ones, we are able to light the candles, and we support one another through hugs, pats, and words of encouragement. Saturday night is wrapped up by all heading back to camp where we take the time to check in with the youth on how they are doing and if there is anything they need before lights out. Sunday morning it’s time to clean up the space we have used, pack our bags, and prepare for our trips back home. Everyone is given time to sign one another’s shirts and offer their thoughts on the most positive experience they have had over the weekend. The time has come for all of the parents and guardians able to pick up their youth to join the group for lunch, awards given from counselors to the youth in giving each of them something special to remember the weekend, and the uniqueness each of them brought to the group. A fantastic weekend is closed with a healing circle with all youth, counselors, and guardians. Those from Winnemucca are inspired with more tools to offer to our local group here in Winnemucca called the Hope Tree where we meet every third Tuesday of each month at the Winnemucca United Methodist Church open to all children, teens, and families where age appropriate activities and groups are planned in guiding each through their own process of grief.
