Ramblings From The Editor

Ideas, idle gossip, and occasionally important odds ’n’ ends... by Jack Wright

his community lost one of the great ones when Dot Burton passed away last Tuesday, one day short of her 89th birthday. I only met Dot in passing through the years, but I know plenty of people who have been inspired by her friendship, and just her mere presence, over the decades. And even if you didn’t get to meet her, maybe you tasted her remarkable Southernfried chicken at the Chalfonte Hotel’s Magnolia restaurant. Eating there, then sipping a drink on the rocking chairs on the veranda is a classic Cape May experience. If you have never done it, go this summer — the kitchen at the Chalfonte will still be tended by Dot’s sister, Lucille Thompson (a sprightly 86), and Dot’s daughter, Tina Bowser. Dot’s son Jimmy Burton will be working his magic at the Rusty Nail restaurant on Beach Avenue. So even though Dot has left us, her legacy lives on in many ways. On pages 23-26, Debra Donahue has written a fitting tribute to her old Chalfonte colleague and friend. Thank you, Debra. There was more sad news with the death of Dave Thomas in a car acci-

dent on Fishing Creek Road on Monday morning of this week. Dave, an employee of Lower Township’s Public Works department, was only 28 and left behind his pregnant wife and their two young children. As we went to press, nearly $11,000 had been raised by 150 people in only 17 hours, which is wonderful to see. Speaking of the community rallying around, I was so glad to see a great turnout for Chris South’s beef and beer ben-

efit at the VFW on February 28 (see pages 12-28 of this issue). Chris suffered a heart attack the day after Christmas and had to be taken by helicopter to hospital. With horrible timing, health insurance from his employer did not become effective until January 1. Thankfully, family and friends donated generously to help defray the costs of the substantial medical bills. It’s particularly heartwarming for me because Chris is also a journalist (he’s worked for the Star and Wave and Gazette), and us guys don’t always get to feel the love! So Cape May, take a bow. You really do know how to help your own. I’m not done with local personalities. One of the best-known faces in Congress Hall will be leaving us soon. John Chirila has been standing outside the doors of that magnificent hotel for 12 years, welcoming guests and valeting their cars. Sadly, he is leaving us, to return to his native Romania to take over the family farm and ease his parents into retirement. He’s due to leave around March 15, so try and stop by to bid adieu to this great guy. ’Til next week... stop and smell the roses.

Farewell Dot Burton, Legend Of The Chalfonte

D

Tribute to a Cape May icon, and the maker of America’s best fried chicken... by Debra Donahue

arlin’, run some more water on that chicken.” “Darlin’, bring me a box of bacon from the walk-in.” “Darlin’, get me a pound of butter from the Frigidaire.” These were just a few of the requests made of you by Chalfonte chef Dot Burton if you walked through the kitchen. Chicken, butter and bacon — absolute staples in that kitchen, tended to for decades by this feisty, devoted legend of a woman. We lost Dot last week, just one day before her 89th birthday. The truth is, you couldn’t just walk through the Chalfonte kitchen. You had to stop and check out what Dot and her sister Lucille were preparing, pick some crab, snag a biscuit, or watch a few minutes of Guiding Light. The unwritten rule for me was to tell them a story; something a little ribald. This got their giggle, and when you got Dot’s giggle, she’d go limp, head resting down on her arm, dissolved in laughter. During my 13 years of walking through that kitchen, I also stopped to massage their side-by-side sets of powerful shoulders.

These sisters, The Ladies as everyone knew them, worked hard and seamlessly, touching more people than imaginable. Every one of us got hugs and kisses with telltale fuchsia lipstick tattoos planted on grateful cheeks. There are throngs of guests, staff, friends and family all enriched by knowing Dot, ands they responded with funny, sweet stories filled with impressions and lessons that imprinted on us all. Randall Segal met The Ladies in 1991 after he was hired as The Chalfonte’s Food and Beverage Manager. His summers at the hotel were illuminated in unexpected ways. “My first morning, Dot came running into the kitchen wearing her crossing guard uniform. Her first words to me were, ‘Oh, hi! I had to get my kids across the street to school.’ Thus began my hearing about the things Dorothy did for this little island community: crossing guard, christmas parade organizer, church supporter, laundress, makeup artist for the deceased. And always, there were biscuits and fried chicken,” says Randall. Dot Burton and that famous fried chicken pan

You should never go into the Frigidaire without permission. Many treasures and poisons were in there and only The Ladies knew how to navigate it. Family was more than blood, and visitors never left hungry or without something wrapped in tinfoil. “Dorothy could have a temper,” says Randall, “but she was never mean-spirited. She always gave from her huge heart. At night’s end she would sit, spent,

at the big table in the kitchen, like a warrior after battle, nursing her scotch. The next morning, there she was making biscuits. ‘Good Mornin’’ she would say, and you knew all was right with the world.” Kathleen Miles Stewart began waitressing at the Chalfonte in 1992. By 1996 she was coordinating weddings. The Ladies nicknamed her Little Bits because of her diminutive size. “In the kitchen, Dot would say, ‘Little Bits, bring me that frying pan.’ It was the really big one she used for frying chicken,” says Kathleen. “It was so heavy that I’d have to drag it across the floor to get it to her. She would then pick it up with one hand placing it effortlessly on the stove. “Dot loved babies, and she held and kissed all three of my sons. I can’t believe we won’t be getting her kisses this summer, but I’d like to imagine her sitting

She’d prep her biscuits for the next morning, measuring ingredients then settling in to mix it. She’d look up, smile and wave clumpy white dough hands waiting for a smile back, which she got. She never really looked at the bowl, paying more attention to General Hospital. She stopped when the consistency felt right, sometimes adding flour, or more shortening. You could always

tell if someone else rolled out the biscuits in her absence. They were never the right thickness, or not as soft. “There was a presence in what and how she cooked. Someone asked her if she knew how many pieces of chicken she had cooked, she laughed and said ‘Millions.’ I bet she wasn’t far off. Nancy Granick [Chalfonte’s General Manager] and I tried to get the frying technique down with Dot a few years ago when she was under the weather. Dot could tell you exactly when to put the onions in, showing you the hot oil on the sides of the pan, or when to turn the pieces. She’d eyeball it and point to this one or that one, or she’d grab the serving fork and pick up the breast or leg and fling it up and into the pan. Sometime it missed and fell behind the stove and she’d let out her signature chuckle.” Linda McCrary, longtime staffer, artist and wearer of many hats, says, “I’m one of Dot’s oldest biscuit cutters and it was my pleasure to roll out that dough and cut the petite little circles. In the last few years, I served to save Dot time on her feet. I have known Dot for over 30 years and will truly miss my friend.” We will all miss her and everything she meant to each of us and all of us. Darlin’ Dot...

The Old Fogey

have consulted the legendary D’Catur Almanac And Prophesies (started by my great grandmama 10 times removed, and updated by every matriarch of the D’Catur clan since) and there are several things I feel compelled to pass on. First, there will be a plague of locusts. Or perhaps lobsters ­— there is a stain on the Alamac that may be some of the late Mrs D’s famed gooseberry jam, or possible venom from her equally famed but less commercially successful Rattlesnake Tincture (“one drop will cure all that ails you”). Either way, May will see a plague — or now I think about it, it might say “plaque” — it is equally possible that you will be fleeing in terror with insects devouring the city, or reading a decorative wall plate with fascinating information about edible crustaceans. That’s the thing with Alamanacs: they can be cryptic. Why, one short “trust not the Wildwooder, for he will devour your children” entry back in 1800 and we’ve had two centuries of fear and loathing: it was only in 2012 we realized it should have read

“chickens”! How we laughed! But the Almanac was very clear that this coming summer will be scorching hot, and will break every record. “The very Sand will burst into Fire” it says, which can’t be good for cabana rentals, but has reminded me to dig out those ten cases of asbestos deck shoes Ma D’Catur stockpiled in the 50s, when she feared nuclear war and reasoned that after the atomic armageddon, the sidewalks would be too hot to walk on comfortably. Her lead parasols were equally logical but less handy due to their weight.

We can and must market the prospect of flaming sands: people will come from far and wide to toast marshmallows, and to cautiously tiptoe out on to the cooling crust at dusk. We will do rather well from the sale of XXL fireproof tees and Factor 10,000 sunblock, not to mention steady employment for those muscular Eastern European boys who mysteriously arrive every summer and glower unhappily from every shop and lifeguard station: they will be employed running back and forth extinguishing tourists with buckets of water (at only $10 a time/$30 for artisanal organic water from a secret Cape May Spring) and brushing away the ashes of those foolhardy souls who don’t take the “sunbathe here at risk of immolation” signs seriously.

nce upon a time, you were a curious little kid who loved to learn. You read ahead in school and experimented with kitchen products and idolized Bill Nye. Then you became a teenager, and hiding your intelligence became as important as hiding a zit in your yearbook photo. But now you’re a grown up. It’s time to embrace your inner nerd, just in time for Historic Cold Spring Village’s 12th Annual Spring Lecture Series. Lectures can satisfy your curiosity and entertain you at the same time. There’s a reason retirees flock to communities with colleges, and Virgin Atlantic added lectures to their in-flight entertainment. Lectures are interesting, and the curious people who go to lectures are interesting, too. During the nineteenth century Lyceum movement, American adults routinely attended lectures for fun, listening to speakers like Elizabeth Cady Stanton and Mark Twain. The Chautauqua movement carried lectures into the twentieth century, with speakers in tents holding forth on prison conditions, politics,

and the moral imperative to become rich so you could do good things. Sometimes there were comedians and musicians, but Williams Jennings Bryan, who often spoke about temperance, was one of the most popular speakers. Though radio and movies get the blame for the end of the lecture circuit, the automobile also played a role. Once rural learners could drive to a nearby city for a lecture, there was no need to bring the lecture to them. The HCSV lectures hearken back to pre-car time. On March 18, author Russell Roberts

“examines fascinating but little-known facts from our state’s past in his newly-published book Rediscover the Hidden New Jersey.” On March 25, Tim McGrath discusses Give Me a Fast Ship: The Continental Navy and America’s Revolution at Sea. The April 1 lecture is still to be determined, and the April 8 lecture features historian Joseph Grabas and his book Owning New Jersey: Historic Tales of War, Property Disputes and the Pursuit of Happiness. The lectures are held in the Welcome Center at 7pm. Admission is free but donations are welcome, and the speakers will be available for book signings. If the lectures are your first introduction to Historic Cold Spring Village, you are likely to fall in love with this 30-acre living history museum. Ask about their gala fundraiser, Feasting on History, scheduled for May 5. This giant event is held in a hangar at Naval Air Station Wildwood, and features wine tastings and sample dishes from local restaurants. Next week: Celebrate St. Patrick’s Day

I feel so strongly that this is wrong. I have two small children which the bride-to-be often babysits. Her three sisters each have children. This is so inhospitable that I feel like declining the invitation. Don’t you agree, Answer Lady? — Offended Dear Offended The Answer Lady dislikes these drama-ramas which always seem to occur with large weddings. Think of it like the scene from the The Godfather: “It’s not personal, Sonny. It’s strictly business.” Your cousin has a right to determine the perimeters of her own wedding, as I am sure you

A hearing appointment is a far better option than the one she usually employs which entails standing dead center in front of the television, refusing to move until a reaction, other than, “Could you move your walrus butt out of the way,” is issued from the sofa. In case, you hadn’t noticed, men are different. The Answer Lady is absolutely awed by their ability to tune the female voice completely out. How about this? Try talking to your hubby in the morning before the TV goes on or while brushing his teeth at night or JUST as you are about to serve dinner. Do not talk to him right before or during sex or any major sports events. You’ll get nowhere.

Tom Sims, Executive Director of Cape May Film Festival, reviews “Boyhood”

ure, the Oscars were over two weeks ago, but what can we say? For us movie buffs, the conversation continues. For me, one film was worthy of Best Picture this year, and if you read my column last week you’ll know it wasn’t the one that won. For me, the most deserving film was Boyhood. It tells the story of one family over the course of 12 actual years. The boy in the film (a character named Mason wonderfully played by Ellar Coltrane) started out at 5 years old and by the end he is 18. This film is long at two and a half hours with moments that drag, but it is mostly very compelling. It isn’t a slice of life — it is life. Follow a fictional story of a boy as he deals with the divorce of his parents, his mom’s not-so-wise remarriage, and all of the common struggles of growing up told uncommonly well. Every line, every glance, every character in this film is genuine. And for more than 12 years staying in character, each actor gets an outstanding grade from me! As enjoyable as it was to watch the aging

“It’s not a slice of life; it is life,” says our guy Tom about Boyhood of Mason and his sister (played by the Lorelei Linklater, director Richard Linklater’s daughter), it was also fascinating to see the aging of Mason’s mother, played by Patricia Arquette, and his part-time father, played by Ethan Hawke. For those two, the performances gained them supporting actor nominations this year — Arquette’s first and Hawke’s fourth. Arquette won the Oscar for Best Supporting Actress, and her speech was a

crowd-pleaser you can find online. She has the most moving scene in the film as she breaks down seeing her boy off to college. And this after you’ve watched her lifetime of pain—some stemming from her struggle for professional success, some from her struggle with personal fulfillment. And Mason. You love this kid in the end. Whenever someone tries to hurt him, you’re all like “Don’t you hurt my little man, Mason!” Boyhood isn’t a film you’ll see over and over again — like life, you’ll give it one screening and that will have to do. It was a feat in filmmaking. Now a special word of tribute for Leonard Nimoy. Although known more as an actor for TV than film (with the exception of the Star Trek film series), Nimoy directed a brief string of movies, none of which were outstanding (although in 1987 she had a hit with the comedy 3 Men and a Baby). Still, he lived long and prospered, and will be missed. Next week, Kingsman: The Secret Service is the movie under review.

Dispatches from the nation’s birdwatching capital… by Seymore Thanu

ey. Slow down. You’re killing birds. When snow covers the landscape many bird species are squeezed to the icy rim. Many ground foraging species like robin, white-throated sparrow, American woodcock and hermit thrush forage on roadsides where the snow plow has over stepped the pavement. You drive by. Birds panic and f lush and disappear in a ball of feathers. It’s not always safe to slow down suddenly on icy roads. The birds best defense is for you to simply drive according to conditions and give them a fighting chance. Birds have quick ref lexes but they are no match for cars going 50-60 mph. Isn’t getting to your destination a couple minutes later worth the life of a robin? A couple of days ago I counted 14 dead robins on Rt 47 between Green Creek and Dennisville. These just include the birds that landed on the road. The real death toll measured in birds pinged back into the woods or lodged in the grill is higher.

So do your part to be part of a kinder, gentler planet. Give birds a break by reducing your speed when you navigate by woodlands or find stretches of roadway where numbers of birds are clustered along roadsides. Some altercations are unavoidable. I was responsible for the death of a Whitethroated Sparrow on Sunday. I saw the bird in plenty of time but the road was icy and sue enough some moron was hugging my bumper. Safety first.

Birds have a lot to deal with these days. Wind turbines, glass windows, utility lines, feral, cats and cars. Every little bit done to reduce the threats, helps. We in Cape May have a special obligation because Cape May not only concentrates birds during migration, it is a winter a stronghold for many species. This past weekend I was leading a Break into Birding Workshop. In two days we tallied 66 species. Not bad for late February when populations have been attrited by starvation, predation and assorted accidents. Actually the number of bird species that spend the winter in Cape May is equal to the number that are found here during the summer. So, give our winter resident birds a break. Somewhere in n. Quebec there is a family eagerly anticipating the return of the Hermit Thrush that nests in the woods beside their house. On behalf op the woodcock feeding along Sunset Boulevard, I thank you.
