Jalboot Ferry Discover more of Abu Dhabi with FACT Finds. Every month we’ll bring you a new hotspot, our favourite happening, eatery, activity or interesting find from around the city.
Residents and tourists alike have praised the brand new Jalboot Ferry service, the emirate’s only private scheduled passenger service, which covers 100kms of scenic waterway around Abu Dhabi. Currently running daily from 2pm until 9.30pm, the service, which calls at, and can be boarded from, four destinations – Abu Dhabi Mall, Yas Marina, Fairmont Bab Al Bahr and Etihad Towers, with each leg taking less than an hour – presents a great alternative to road transport. Visitors can use it to get a waterborne perspective of the capital and its surroundings, and to reach specific tourist destinations with ease. The company did a soft trial using its flagship Al Dana launch ferry, Jalboot Marine Network LLC ( Jalboot), which operates the service on behalf of its 8

Jalboot offers a range of ticket types for adults, children and families with group tickets also available. Tickets are priced from AED40 and can be bought at sales kiosks in Abu Dhabi Mall, Al Wahda Mall and Mushrif Mall. Passengers can also buy tickets via the Jalboot website: www. jalboot.ae while booking and card payment is possible through Jalboot’s 24-hour call centre on 600 57 57 56. Private bookings are also available upon request and pre-booking is encouraged to guarantee availability of seats.

“My grandMother is a big influence behind My artistic journey; she always supported and nurtured the creative force that lived inside Me froM a young age.” BUDOUR AL ALI, an Emirati artist who is known for her portraits of the Abu Dhabi royal family, is to have her work on display at Jannah Burj Al Sarab. The artist’s year-long exhibition will be based in the lobby of the hotel located in the Al Zahiya/Mina area. The exclusive art display will showcase the spirit of the UAE through four collections, updated in each quarter over the year. This is a rare opportunity for guests, residents and tourists to discover the rich culture, heritage and folklore of the UAE through her artwork. The collection includes different elements of desert life, including falcons, Oryx and gazelles. The works will also give visitors a glimpse of cultural buildings and local handicraft. Additionally, three sketches of the Abu Dhabi royal family, which have been specially commissioned by Jannah Burj Al Sarab management, will be housed permanently in the hotel’s lobby. Here, Budour tells us more about her artistic tools, techniques and inspirations… Tell us about your journey into art… Before this path with canvas, colours and brushes began, I had jumbo crayons and scrap sheets of newspaper that my grandmother would collect for me to release my creative expression. My grandmother is a big influence behind my artistic journey; she always supported and nurtured the creative force that lived inside me from a young age. It was later on that my family and friends mentioned that I viewed the world around me with a different perspective – that of an artist. Being creative and painting came natural to me.

Describe your artistic style for someone who views your work for the first time… I develop my style throughout my journey as an artist; it is ever-evolving. In addition to realist movements, I fell in love with the idea of naturalism and realism as a depiction of ordinary, everyday subjects. I have an identifiable and unique style which distinguishes my paintings from those of others, regardless of the subject of the painting. I’ve been told that this distinctive factor is the positive energy that my paintings exude. This can be immediately sensed in the colours I use, as well as the simplicity in my work. Tell us about some of the tools and techniques that you use in your work and why? I work with different mediums; I’ve even tried sculpting! Although I love it, I found it a bit difficult to continuously work on sculptures in the long term. I’m more comfortable with canvas, brushes and paint, preferably oil and watercolours. I can also work with other mediums like acrylic, ink and pencil. What are some of your favourite pieces that you’ve produced and why are they particularly special to you? Every painting has a piece of me, a part of my soul, whether it has a sweet thought,
feeling or memory behind it. My all-time favourites are the polo paintings as I admire the sport and horses. As one of the only artists in the UAE to have specialised in painting oryx and gazelles, those paintings are quite important to me as well.

What’s the best and worst thing about being an artist? I think the best and worst are the same in my case. As an established artist in the region, people always want to talk to me about my works, which takes up a lot of time. The best thing about being an artist is how I get to make a difference in people’s lives. I’ve helped people bring a trail of optimism in the way they think. Influencing people in a positive way has to be my favourite part of being who I am. What’s your advice for young budding artists? Practice, practice, practice! Get out of your comfort zones and trust your intuition. Take every opportunity that comes your way; make the best out of it. Your hard work will pay off, even if it may be after several years. Don’t be shy to ask questions. To develop your skill and to grow as an artist, you need to explore, experiment and experience. ✤

EMIRATI ExPRESSIONS IV: Conventions of Arts The fourth edition of Emirati Expressions is currently exhibiting works by 15 Emirati artists at Manarat Al Saadiyat and throughout Abu Dhabi, alongside an exciting public programme of talks, workshops and publications.
The 2015 edition of the annual exhibition, Emirati Expressions explores the functionality and usability of art. The exhibition, which will be on display until March 31, 2016, will feature the work of Emirati artists whose projects oscillate naturally between design and fine art, combining languages of form, used to produce a communal, cultural art practice that is embedded in the social fabric of the UAE. Artworks will include wearable textiles, photography, furniture design, interactive video installations, paintings, illustrations, large-scale sculptures, and a live studio where artists will be working throughout the exhibition. Alongside the main exhibition at Manarat Al Saadiyat, artists have been invited to produce site-specific works inspired by Abu Dhabi’s diverse and historic social clubs, including the Emirates Writers Union, Armed Forces Officers’ Club, Abu Dhabi Theatre, the Sudanese Club and the Yacht and Sailing Club. Emirati Expressions IV: Conventions of Arts will present specially commissioned artworks inspired by the dynamic archives of these interactive spaces for community engagement, interpreting them as precursors to modern cultural institutions. Throughout the exhibition, Emirati Expressions IV: Conventions of Arts will also present a series of public events, artists’ talks and workshops that engage with the UAE’s arts community and 52

ZinZana Rattle the Cage FACT ABu DhABI’S TOnY SIDGWICk ChATS TO eMIRATI DIReCTOR MAjID Al AnSARI AFTeR We GeT An exCluSIve ADvAnCe SCReenInG OF hIS FIRST FeATuRe FIlM, ZInZAnA, AheAD OF ITS ReGIOnAl ReleASe AT DuBAI InTeRnATIOnAl FIlM FeSTIvAl (DIFF) ThIS MOnTh… We were first introduced to Zinzana during a trip to Al Wahda cinema, when we saw the movie’s trailer during the pre-feature ads. We were instantly gripped by the strong character performances and stylistic direction, and were curious to know more. So, we reached out to director Majid Al Ansari’s people to talk to the young filmmaker and possibly get a screening of the movie. We weren’t to be disappointed. Catching up with Majid, we were instantly struck by his obvious passion for movies, which radiates out of him as he talks effusively and knowledgably on genres and styles ranging from Hollywood to Japanese and Korean. A rising star of Middle Eastern cinema, Majid worked his way up through the ranks of the UAE’s fledgling but well-supported film industry, largely through Abu Dhabibased production company Image Nation. Majid interned on a couple of Image Nation productions, namely Emirati 54

coming-of-age movie Sea Shadow, and Emirati horror Djinn. Through Image Nation’s international projects, Majid was also able to intern with a couple of Hollywood productions, thriller Contagion and The Help, starring Emma Stone, where he was able to really broaden his experience of movie production. “When I came back, I made my first short movie, and I had learned a lot about filmmaking, so at that point Michael Garin, the CEO of Image Nation, came to me and suggested I come and join Image Nation to learn about the business side of the process, as opposed to the artistic side,” recalls Majid. “So, for two-and-a-half years I was under Michael’s guidance, as well as the chairman Mohamed al Mubarak and Head of Narrative Ben Ross. My job was basically to read scripts, and find the next big Emirati film. So when I saw the script for Zinzana, which was originally in English, by writers Ruckus and Lane Skye, it really spoke to me.

“I thought it would be a really great movie in Arabic, and something very unique in the region’s cinema. So, I pitched for it to Image Nation’s management, and they approved it. Being a genre movie, the transition from English to Arabic was a relatively simple one,” explains Majid. “The world that Ruckus and Lane created was a genre thriller world, so the rules and principles of the characters are for that genre. So if we go and dissect where this film is from, it’s from the genre world, so it can really translate to any language.” We were treated to a preview of Zinzana ahead of its release this month. In what will undoubtedly be the breakout movie for Majid, main character Talal (played by Saleh Bakri) wakes to find himself locked in a cell in a remote police outpost of unspecified location. Upon arrival of the sinister and manipulative villain, Dabaan, brilliantly played by Ali Suliman, things escalate quickly, as a dangerous game of psychological cat-and-mouse ensues, and Talal must anticipate what it is that Dabaan wants, and how he can come out of it all and ensure the safety of himself and his family. As Zinzana is set entirely in one room, Majid was able to give a lot of time and thought to how his scenes were shot. There is an almost fanatical attention to detail to his shooting, with one 30 second clip being shot from about ten different angles, from close ups to the sinister twitching moustache of Dabaan, to his feet as he dances around a wireless radio. “I think I did about four to five months of shot listing, and I would just revise and revise, so for example if we were in one side of the room, and we were at a high angle in scene two, in the same space I would go low in scene ten to it feels different. That’s the attitude I took from it, every time we entered a scene, it was a different perspective, a different angle, you can really go into a lot of detail with what you’re doing.” While the quiet and tragic intensity of protagonist Talal draws you in and forces you to sympathise with the poor character’s plight, it is undoubtedly the sinister, nay borderline-criminally-insane Dabaan that puts you on the edge of your
seat, breathlessly waiting to see what he will do next. Tension is built masterfully by Majid, who turns the screws with increasing intensity as the movie draws on, and you truly get the feeling that he is revelling in every last turn! There’s a definite playfulness to the movie despite the thrilling pretence. “Usually a onelocation film is a very performance driven film, and I love that,” explains Majid. “The actors could really run with it, and bring stuff to the table, and just have fun with it.” Our first impression of Zinzana is that it’s distinctly Tarantino-esque. Whilst Majid admits to there being a touch of Tarantino in there, he cites many other influences on his style as well.

BeInG A GenRe MOvIe, The TRAnSITIOn FROM enGlISh TO ARABIC WAS A RelATIvelY SIMPle One. “It’s a mixture of filmmakers, a lot are there, but as far as a reference we can comfortably say that Tarantino is there, but Robert Rodrigues is part of it, and there’s some of the craziness of Baz Luhrmann,” he says. “However, Asian cinema is actually the biggest influence on this move, Park JungWoo, Junji Sakamoto, so those are the guys that I really kind of looked to when we were in planning and preproduction.” Zinzana is a truly enjoyable experience, and a superb directorial debut for Majid Al Ansari. It premieres at the Dubai International Film Festival this month, and is released region-wide in cinemas directly afterwards. It’s an absolute must-see! ✤ fact magazine

WHY IT’S WORTH WATCHING? Quentin Tarantino has hardly ever (in our humble opinion, never) been accused of making a bad film, because, let’s face it, he’s pretty darn amazing at the whole movie-making thing. As Tarantino has grown throughout his career, so have the length of the films he’s directed, and The Hateful Eight is set to run over the three-hour mark. Though this might polarise some audiences, it also gives Tarantino breathing room to execute some awesome dialogue scenes, which is perfect for a film that is centred around eight strangers taking shelter in a single cabin. Stuck together, it’s likely that the characters won’t venture far from each other, meaning the majority of the film will take place in a single location. Tarantino described it as the “funniest snow Western ever made,” of course, with bloody implications. The trailer’s intense music really highlights the dark comedic moments between the characters, now, all you have to decide is are you a true cinephile who can tolerate such a lengthy running time, or are you a casual movie-goer who merely wants to see an entertaining film?

This is Adele all grownup; she’s married, she’s a mother, and she’s not afraid to show the romanticism of her new life. The production on 25 is immaculate, and the vocal delivery is absolutely stunning. We love the high belts in Sweetest Devotion and the rich lower notes in River Lea, not to mention the piercing sounds of All I Ask and Million Years Ago. This is classic Adele with a more mature flair for lyrics, and though there’s little challenge in 25, her listeners will find the familiarity and comfort that is so associated with Adele.
Cupid’s Rage is the third book by Bahraini author Laala Kashef Alghata. Her first two books, Friendship in Knots (2003) and Behind the Mask: A Folded Heart (2006) were a children’s novel and a poetry collection respectively. Cupid’s Rage is collection of poetry on life and love, the shields we create to battle Cupid’s furious arsenal of arrows and finding ways to heal when our cracks are discovered. The collection is on life and love, written over a time span of three years between Bahrain and the UK. The publication of Friendship in Knots made Laala the first Bahraini to publish a book in English and the youngest author at the time.

IT’S NOT EASY TO FIND A GOOD RESORT HOTEL IN THE CITY CENTRE; ONE WHICH HAS GREAT ACCOMMODATION, EXCELLENT DINING OPTIONS AND IS WITHIN REACH OF ALL THE MAIN CITY HOTSPOTS, HOWEVER, THERE’S ONE PLACE THAT POTENTIALLY TICKS ALL THESE BOXES. WE WENT TO STAY AT LE MERIDIEN ABU DHABI AND HERE’S THE VERDICT….
W
hen we arrived at le Meridien Abu Dhabi, it was noon, three hours prior to check in, and though our room wasn’t ready, we were welcomed by friendly front desk and concierge staff who went out of their way to make us comfortable. Our luggage was stored safely and we decided to head out for a few hours before returning to find our suitcase waiting in a cosy deluxe room. now, let’s get one thing straight, le Meridien Abu Dhabi is not about luxury and decadence, and it’s not trying to be either. It’s a family-friendly resort hotel with super clean and comfortable rooms (the beds are some of the best we’ve ever slept on!), and fantastic facilities for all, the kind you’d expect to find at a beautiful european beach resort. For a 4-star hotel, we’re impressed.
DELUXE LIVING The room types at le Meridien Abu Dhabi are plenty – from Standard Deluxe, to Royal Club, and a numbe¬¬r of suite options, all decorated 62

in contemporary furnishings and modern colours, there’s accommodation to suit every kind of traveller – solo, couples, families, friends – whether visiting on a business or leisure trip. We were staying in a twin room which had a lovely balcony overlooking the pool area and across onto Al Maryah Island
– the views were fabulous. For us, though we faced a few problems with the electricals in the room, it was how the staff dealt with our queries and their efficient response that really had us praising this place. In no time, a hotel technician was sent to our room and sorted out the problem, which we never faced

again during our stay – big tick for customer service. We also loved the paintings on the wall, all done by local artists, which added a local, homely touch to the room. now, for those who appreciate the finer things at hotels, there’s the linen – now, this IS luxury. We had some of the best night’s sleep during our stay!
DINING DONE RIGHT Anyone who is familiar with le Meridien Abu Dhabi will know that the hotel is extremely popular with the local expatriate community, because of the le Meridien village set within the resort grounds. This area is home to a great array of restaurants and bars,
representing cuisines from all over the world, including Greek, Italian, International, South east Asian, and more. Particularly busy was the hotel’s english Pub, The Captain’s Arms; as well as Wakatua Terrace, where visitors flock to enjoy shisha; and nRG Sports Café, where live sports coverage is displayed on large screens. But, our favourite part of the dining experiences here had to be breakfast, and the popular Seafood night, both at latest Recipe. The restaurant itself is beautiful, the staff incredibly helpful, and the food, simply delicious. At breakfast, you’ll find a huge variety of foods to start your day. From healthy yogurt, granola, and fruit concoctions, to heartier dishes like eggs cooked your way, sausages, hash browns, a pastry selection and much much more. If you love sushi, shrimps and all things seafood, we highly recommend the Seafood night, which already draws in a regular crowd of diners. Try the Indian-style shrimp curry, or the freshly-prepared sushi, and there’s even a mega grill station with all kinds of fish, meat and chicken, ready to be cooked to your preference. fact magazine

FACT TAKES A DRIVE IN THE SUCCESSOR TO THE GALLARDO – THE NEW LAMBORGHINI V10 OFFERING, THE MIGHTY HURACÁN LP 610-4.
L
amborghini like to keep things simple with their product range, offering two base models in the line up at any given time, one boasting a naturally-aspirated V12 engine, and one a naturallyaspirated V10, with several editions derived from each one during the course of its life. The Lamborghini Huracán, named after a famous Spanish fighting bull in keeping with Lamborghini tradition, replaces the outgoing Gallardo as the marque’s V10 offering. As a result, it obviously has to up the game over its predecessor. Therefore, Lamborghini have made quite a few changes to the exterior, interior and performance figures. The Huracán still features the same 5.2l V10 as the Gallardo, but this time round it has been uprated to produce 610PS (602hp) to the Gallardo’s 560PS (552hp). This means a 0-100km/h time of 3.2 seconds, and a top speed of 325km/h. It also features a raft of new technology, such as Stop & Start fuel saving, and MagneRide electromagnetic damper control. Inside, the Italian sense of drama comes courtesy of the 3-mode switch on the steering wheel for Strada (Street), Sport, and Corsa (Track), and the bright red fighter jet-style cover over the ignition, which you’ll have to flip up to fire up that big V10. It all just appeals to the man-child inside! We collected the car from the Lamborghini showroom in Deira, and familiarised ourselves with the car’s immense power, blistering speed and unforgettable V10 bellow on the long drive home to Abu Dhabi. We were somewhat nervous about navigating Deira’s extremely busy streets in a Lamborghini, but needn’t have been. Despite being a V10 supercar, the Huracán is manageable and easy to manoeuvre, and feels positively sedate at low speeds in Strada mode. Some rear visibility is obviously sacrificed to that low seating position and the mid-engine layout that places the big V10 right behind you, but it’s a small price to pay for such a rousing symphony The Huracán is just as comfortable cruising on a highway as it is on city streets with a smooth ride in Strada mode. 68

THE HURACÁN BOASTS A HIGHLY INTELLIGENT ALL-WHEEL-DRIVE TRANSMISSION WITH A 70/30 FRONT-REAR TORQUE RATIO, BUT CAN SEND 100% OF THE POWER TO THE REAR AND 50% TO THE FRONT DEPENDING ON REQUIREMENTS. Cruise control is optional in the Huracán, but unfortunately our model didn’t have that option, so the biggest challenge was avoiding a speeding ticket. 70

However, a highway isn’t where you want to be in a Lamborghini, so the next day we went to find a more challenging route for some entertainment. Switching to Sport mode tightens up the car overall, opening up the exhaust for a more aggressive note and more power, improving throttle and steering response, and stiffening the chassis for better grip. The Huracán boasts a highly intelligent all-wheel-drive transmission with a 70/30 front-rear torque ratio, but can send 100% of the power to the rear and 50% to the front depending on requirements. It works together with the Pattaforma Inerziale, which is an array of motion sensors that adjust the ESP and gearbox to suit driving conditions. It’s a marked difference over the Gallardo, and results in a car that makes the immense power of the car’s 602hp V10 very manageable, and insane amounts of fun to drive! Overall, the Huracán is absolutely superb, offering Italian supercar exotica and performance figures in a highly usable package. We’re completely sold! ✤

This year there were plenty of awesome afterparties and celebrity-packed events for visitors to enjoy. Throughout the Abu Dhabi Grand Prix weekend, racing fans from more than 170 countries were entertained in an electric atmosphere, both in the grandstands and away from the track. The final after-race concert, featuring British indie giants Blur, brought the curtain down on a world-beating programme of entertainment. 72

Farewell to Another GP! As we wave goodbye to another successful Abu Dhabi GP, which coincided with the UAE’s 44th National Day, we look back at the race weekend… Once again, a great atmosphere and sell-out crowd is what awaited visitors to the Etihad Airways Abu Dhabi Formula 1 Grand Prix. The events and parties surrounding the race were bigger and better than ever, with celebrities such as 50 Cent, Akon, Damon Albarn of Blur, Trey Songz, and actor Liam Cunningham of Game of Thrones spotted by our team wandering the paddock. For the race itself, after qualifying, as expected, the two Mercedes lined up on the front row, with Nico Rosberg taking pole for an impressive sixth time in a row, and having won the two last races, Lewis Hamilton alongside him. Kimi Raikkonen and Sergio Perez took up the third and fourth spots on the grid respectively. Some drama was provided early on when surprisingly Alonso crashed into Maldonado at the start of the race causing both drivers to spin out. Alonso was given a drive-through penalty and two points on his licence for causing a collision. Some more drama came during the first round of pit stops, when an unsafe release of Valtteri Bottas by the Williams F1 team saw him clip the McLaren of Jenson Button as he swung into the pits ahead of him, which meant Bottas first had to pit again to replace the front wing, and then received a fivesecond time penalty. At the front of the pack, strange strategy decisions meant that when Nico Rosberg pitted for fresh tyres, Hamilton was kept out for much longer, another ten laps, on his worn tyres. So, while he led the race briefly after Rosberg pitted, his teammate’s fresh tyres saw him close the gap significantly on Hamilton before he was brought in. In the end, it was enough to ensure the German victory, as he took his third consecutive victory, in what was his best winning streak to date, and ending the season on a high note that will see him hungry to bring the fight to Hamilton at the start of the season in March 2016. Incidentally, Nico denied Hamilton his 44th win, which would have coincided nicely with the UAE’s 44th National Day, but as the sport often teaches us, things definitely don’t always go according to plan. The important thing is that the Abu Dhabi GP was another success, the National Day celebrations added to the atmosphere, and a great time was had by all! 74

#A #Vanishing #World #at #rira #Gallery “A Vanishing World,” a powerful photography exhibition of predators in their natural habitat by wildlife photographer Michel C. Zoghzoghi was held at the RIRA Gallery in DIFC’s Gate Village District in early November. The opening night unveiled a collection of images bringing to vivid life the magnificence of predators, and also their inherent vulnerability. The reception, attended by Zoghzoghi, attracted a crowd of 380 plus enthusiasts. Zoghzoghi has received an award from The Hamdan Bin Mohammed Bin Rashid Al Maktoum International Photography Awards (HIPA) in 2012. His exclusive collection of shooting wildlife animals in their home environment is displayed in his true work of art over the past few years. 90

e’ve already visited Iris on these pages, and we enjoyed the experience. The venue itself is fantastic, with a stylish, mood-lit interior lounge and a glitzy and spacious outdoor terrace that is hugely popular in the cooler months. Add to this a tempting menu of food and cocktails, and you have a social hotspot that bustles most nights of the week, but most especially on its Wednesday Ladies Night and the weekends. Fans of the old menu will be glad to hear that all the favourites are still to be found on the new one. Iris has merely made a few additions, mainly in the form of some new tartines (a long, thin and crispy slice of bread with a topping), a

selection of hand rolls, and some new tartars and ceviche dishes. Our first choice was the tartine sampler, an obvious option for those who like to try a bit of everything. It is basically one tartine chopped into
eight pieces – two pieces each of the Creamy Burrata, Smoked Salmon, Siciliana, and Gorgonzola & Ricotta tartines. They were all delicious, but our clear favourite, and one that we’ve admittedly had a couple of times before,

the taste buds, and a nice combination with the crispy potato base. The next dish was unfortunately a bit of a let down. The Shrimp Ceviche was chunks of shrimp mixed with mango, avocado, grapefruit, orange and parsley.

Next came the delicious Peruvian Spicy Tuna Tartar, which is finely chopped tuna mixed with a spicy sauce and placed on a bed of Aji Amarillo potato. We’re big fans of ceviche, which is supposed to be a tart, citrusy and slightly spicy dish. However, in this case the mango and orange made the dish too sweet, so it ended up tasting more like a fruit cocktail with some shrimp in it! On the plus side, the hand rolls that came next more than made up for it. We went for the Crispy Salmon hand rolls and the Iris Special rolls, both of which were excellent, especially the Iris Specials, with a generous range of ingredients from shrimp and crab to salmon, tuna and avocado – a must for Maki lovers! Many people only go to Iris for the late-night partying, but those people are missing a beat – turn up early and have dinner there before the night gets underway. I
f you love to cook and entertain, but find yourself lumbered with whopping bills after a trip to the supermarket for a dinner party, then this is just the experience you’re looking for. In the Market to Kitchen Masterclass, which takes place every Saturday at Le Royal Meridien Abu Dhabi, you join the Market Kitchen’s talented Head Chef Jordan Annabi for a morning trip to Abu Dhabi’s fish and vegetable markets down in the Al Mina port area. There, Chef Jordan guides you round the various stalls, offering advice and tips on selecting the freshest fish and vegetables for the best value. We purchased a selection including Omani prawns, tuna, sheari and bream, and some eggplant, mango, bok choy, avocado and herbs from the vegetable market. We all seemed dubious at the amount of food we had bought, especially as we’d only spent around AED60 between us, but Chef Jordan assured us that when combined with the ingredients back in the kitchen that anyone would have in their home, we had plenty. So, back to the Market Kitchen, where we sat at the restaurant’s food bar for our masterclass. Chef Jordan started by throwing the eggplants whole onto a gas hob to flame grill them. “As the skin burns it smokes the flesh inside as it cooks, so you get a lovely smoky-cooked filling,” explains Chef Jordan. Interestingly, this is a technique he learned from a kebab shop in London, when stopping for a post-pub snack many years ago! You scrape out the filling and mix with salt and olive oil for 96

FOODIE CORNER a delicious aubergine paste, and it’s a great technique for both indoor dinners and BBQs. While this was cooking, he prepared the first meal, which was tuna tartare on fried rice cubes. He finely chopped the tuna, and mixed with chilli, shallot, olive oil and salt, and placed on top of avocado mashed with a little bit of salt and lemon which was spread on fried cubes of rice. The rice cubes were something entirely new to us, very tasty, and so very easy to make. You simply press rice into cubes and then fry on all sides. Next up was the pan-fried bream on a bed of sour cream mixed with lime juice, lime zest and garlic, accompanied by the aubergine filling, also delicious. Then came an excellent dish using the mango and prawns. The mango was peeled and cooked in a pot with butter and chilli. The prawns were oven-baked in olive oil and salt, with the heads on. Place the prawns on the mango, and then drizzle the juices from the pan the prawns were cooked in over the top. Chef Jordan finished with a very interesting technique that he had developed himself – Sheari en papillote. This is a technique in which a dish is traditionally sealed in a grease paper parcel to seal in the flavours, and takes around 12 to 15 minutes to cook. Where Chef Jordan makes it interesting is that he seals it in aluminium foil instead, and it now cooks in just 3-4 minutes! You simply place the fish on a bed of your own selection of vegetables and sauce, in this case asparagus, bok choi, spring onions, garlic and ginger, and drizzle generously with honey soy sauce (the liquid is essential to steam the ingredients), and seal very thoroughly into a pocket to make sure no air escapes as it cooks. Place in a pan on high heat for around four minutes, and then VERY carefully open. It was superb! The Market to Kitchen experience is excellent, as you get some truly great tips for cooking, and the best part is that Chef Jordan keeps it very simple, so that you can really take the recipes home and prepare them yourself. We have guests from a range of different ages, so I believe in reading my public, feeling their energy and playing accordingly. However, you will not find any R&B or commercial pop at Li Jiang Lounge. You will find a very elegant and positive atmosphere with styles of music that range from Funk to New Disco House.

It is also a very laid back way of life, especially in Abu Dhabi. It is a vibrant city that offers everything you wish, from beaches and culture to dining and nightlife, and you can enjoy a very high quality of life.
