f you’re a frequent user of twitter or instagram, you’ll be familiar with #ThrowbackThursday – well, we took some inspiration from this popular hashtag and decided to give one last throwback to the year gone by. Let us take you down memory lane starting p19 as we pick all our favourite

features from 2015 – from food to arts and culture, fashion, motoring and more

– this is a big shout out to all our amazing friends in various industries who have supported FACT over the last 12 months. We hope to continue supporting you into 2016 as well!

Back for another year of great cultural activities is Qasr Al Hosn Festival, set to take place from February 3 to 13. Held under the patronage of His Highness Sheikh Mohamed Bin Zayed Al Nahyan, Crown Prince of Abu Dhabi and Deputy Supreme Commander of the UAE Armed Forces, the annual festival celebrates the symbolic birthplace of the Emirate and home to Abu Dhabi’s ruling Al Nahyan family, Qasr Al Hosn. The area continues to undergo a comprehensive process of preservation, restoration and rehabilitation. The 2016 festival will celebrate the Fort’s status as a historic monument and community hub, and honour the UAE’s founders and their visionary leadership. Organised by the 8

Abu Dhabi Tourism & Culture Authority (TCA Abu Dhabi), the festival narrates the ongoing conservation of the Fort, and reinstates the Qasr Al Hosn site as the cultural heart of Abu Dhabi. This fourth edition of the Qasr Al Hosn Festival will present ongoing conservation works and archaeological activities at the Fort, particularly the reinstatement of the 1940’s façade of the outer palace. Festival visitors will be able to embark on an integrated Fort experience accompanied by a comprehensive narrative chronicling the Fort’s ongoing conservation process. The experience will conclude at the Qasr Al Hosn Centre where visitors can tour the Qasr Al Hosn Exhibition, which will provide insight on those who dwelled in

the Fort and explain the significance of the buildings, outlining how the historical context of Qasr Al Hosn is now shaping the area’s future master plan. The festival’s popular Desert, Oasis, Marine and Abu Dhabi Island zones return, with a full range of interactive activations, re-enactments and workshops. An Arena Zone will house a series of performances and family oriented activities dedicated to themes which reflect the cultural significance of the site on the development of the Emirate and its people. ✤

Culture Celebrated

An exceptional line-up of worldrenowned artists has been announced for Abu Dhabi Festival 2016 (ADF16). Under the patronage of His Highness Sheikh Abdullah Bin Zayed Al Nahyan, UAE Minister of Foreign Affairs, the 13th edition of the Abu Dhabi Festival will run from April 3 to 30, with a series of nationwide events celebrating 20 years since the launch of the Abu Dhabi Music & Arts Foundation (ADMAF). ADMAF has an exciting line-up of classical artists including superstar pianist Lang Lang and ballet dancer extraordinaire Carlos Acosta, both of whom will grace the stage of Abu Dhabi Festival 2016 alongside a number of other big names. Celebrating the artistic excellence of its country of honour 10

France - ADF16 will also feature a stunning headline performance by world-renowned French singers Natalie Dessay and Laurent Naouri, as well as two exceptional evenings with France’s premiere symphony orchestra, Orchestre de Paris. Champions of Tomorrow

Get Electric Running Electric Run is the World ’s Brightest 5K night run, combining lights, music and exercise all in one unique experience. As the world’s best golfers prepare to tee off at this month’s Abu Dhabi HSBC Golf Championship, Abu Dhabi Sports Council (ADSC) and HSBC Bank Middle East Limited have launched a ground-breaking grassroots programme - the largest in the emirate - to introduce more than 2,000 local school children to the game. The Champions of Tomorrow programme aims to educate, engage and inspire Emirati and expatriate youngsters in a bid to unearth the next generation of UAE talent. Students from eight local schools will receive more than 400 hours of coaching at world-class facilities in the emirate’s leading clubs including: Abu Dhabi Golf Club, Abu Dhabi City Golf Club, Saadiyat Beach Golf Club and Yas Links Golf Club. New On TV Quest Arabiya

A brand new Arabic-language channel has been launched by Abu Dhabi-based production company Image Nation, providing a platform for regionally produced content from the Arab world to be showcased across millions of homes.

Quest Arabiya, a partnership between Image Nation Abu Dhabi and Discovery Communications, fills a gap in the Arabic TV market by providing factual entertainment content of a quality and breadth that has never been seen before in the region. It focuses on six key genres: Extreme Outdoor, Turbo, Engineering, Nature & Wildlife, Science & Space and People & Places. Other content areas include themed weekends, such as Big Cats and Shark Weekend. The first Saturday of each month will feature Saturday Night Specials, during which documentaries of regional interest will be screened. FACT talks to Image Nation’s CEO Michael Garin to learn more… When conceptualising Quest Arabiya, did you see a gap in the market, or was it part of a broader strategy to promote the region? We’re not a tourist authority, so we’re not really here to promote the region. What we’re here to do is to promote the development of talented young individuals to reach their potential. The stories that we tell are stories of great integrity, and hopefully of strong dramatic effect, but they’re definitely not intended as promotional vehicles. This is actually I think one of the biggest challenges that exists in the UAE; most countries that are developing economies have an overabundance of population, and a scarcity of financial resources. We’re blessed with an abundance of resources, but the scarcest resource is human capital, and if we don’t create opportunities for our most talented young people to pursue their passions here, we’re going to lose them, they’re going move to LA, or New York or London and this country can’t afford to lose that talent. And that’s why Image Nation exists. The world doesn’t need another company to make movies – we need to

create opportunities for people to grow and develop here at home.

What is the ratio of international vs. regional content? In one sense, all of the content will be original, because it’s not just going to be a re-dubbed, repurposed channel, we’re actually changing the graphics, we’re making these programmes unique and relevant to our audience. But in another sense, to be perfectly fair, some of the content IS repurposed, and already existed, so I would say probably a little less than half of the programmes will be completely unique to the region. That’s not day one, we’re working towards that, which is why we’ve created these short programmes, some complete content before we go on air. fact magazine

#Unboxed #at #BoxPark #Celebrating #All #Things #Box Talented dancers, free runners, acrobats and kids activities stunned crowds at BoxPark’s official launch in Dubai. BoxPark, the offbeat outdoor destination by Meraas was “UnBoxed” with a three-day launch event packaging a host of youthful and edgy activities. Exhilarating overhead acrobatic performances complemented by drummers and dancers delighted visitors at various locations across the hip outdoor concept. Multi-disciplinary performances including break-dancers, street dancers, BMX acrobats, beatboxers and contortionists had crowds wonderstruck with tricks and stunts. Samir Al Sayegh, considered as one of the most avant-garde Arab master calligraphers of his generation, seeks to liberate Arabic letters from the restrictions imposed by language and meaning. As an artist, poet, writer, art critic and historian, Samir is more than well equipped with the expertise and experience to do this. He has dedicated himself completely to the art of Arabic calligraphy, focusing on the purely aesthetic properties of the written word, over literal meaning, in order to create a universal visual language. His interest in traditional calligraphy as well as art and design led him to create new calligraphic typefaces and collaborations with numerous publications and fashion designers in Paris and Beirut. Samir’s drive to show calligraphy as not just a heritage art, but also a modern one, is something that began in his early childhood after his first encounter with a writing tool. “I remember the first time I discovered the pen in my father’s office,” he recalls. “I was amazed but also scared. When I tried to write, I was bewitched. I felt wings growing

on my body and the white papers were the wide blue sky.” Samir isn’t sure what it was, exactly, about poetry, prose or calligraphy that stopped him in his tracks from such a young age, but as life went on, his journey and relationship with these creative forms only grew stronger. Now, Samir believes that art, in its many forms, does not always hold a meaning of its own that we can name or describe. Instead, its meaning is complete when contemplated by the viewer. “Art is not taught or learned, and there are art styles as much as there are artists,” he says. “We must not learn art but contemplate art, watch it, read it, listen to it, analyse it, discuss it, and have a conversation with it. “It is not a set of rules or techniques and does not have fixed styles to apply. Art is life. It is also a vision, a language, knowledge, truth and a science,” Samir adds. Often uniting ornamentation with calligraphic script, Samir has developed a distinctive practice. Through the formal elements of line and space, he abstracts Arabic letters and words into dynamic geometric compositions, which often cover the entire surface of the artwork. Visually engaged with the modern art movement and geometric minimalism, Samir’s works bridge two artistic traditions to forge a unique contribution to the history of modernism.

T h e s u b j e c t is n ot imp o rta n t, b u t h o w yo u a p p r oa c h it.” So, what is it about calligraphy that has such a hold on Samir? “I like that it first existed on pages of the book but did not transfer into a sacred art,” he says. “I like that it grew, developed and shined in palaces but did not contribute in favour of rulers. I also like that it is an absolute art that is present in every time and place without being associated to a specific time and place. “And I, finally, like it because it is the way to the eye and the mirror to the soul. What I love about practicing calligraphy is this new horizon where it seems like it is the art of the future,” Samir explains. The exhibition, Aleph in Many Letters is based on Samir’s book of the same name. The texts and the artworks both strive to free the art of Arabic calligraphy from Arabic language in order to transcend it to its highest spheres as an art to read what cannot be read, and hear what cannot be heard, and see what cannot be seen. The exhibition presents a selection of recent artworks on canvas and paper. “What is important is not what you as an audience see, but how you see it,” he says. “The subject is not important, but how you approach it. I wish the viewer stands in front of my work as if standing in front of a tree, or as if listening to the wind. ➻ fact magazine

“I wish they would listen to what the straight lines are saying and what it feels like when they incline. What happens when lines meet or intersect and how connection and parallelism happen, and how the lines embrace one another,” Samir adds. To create the huge artworks of calligraphy, Samir makes and uses giant pens where the biggest one is 35cm wide, and which allows him to have wide lines with acrylic or ink on paper or fabric. In doing so, Samir is able to give the art of calligraphy strength, dynamic, speed and big shapes that can compete with fine art paintings. This means having equal participation in galleries and museums, too. For Samir, art also presents hope and promise, especially in a region that has become strife with war. “Exhibitions and art events are not only a positive phenomenon but rather a miracle that excites the mind and heart,” he tells us. “How can art exist in the heart of war, distraction, death, pain and this general deterioration that surrounds all our cities? “Logic and art critics say there cannot be art when there is no stability or normal life; there cannot be art activities when the daily social and cultural life is broken,” Samir continues. 38

Personally, in a moment of peace, I look at such events and I see a light, hope, and a promise.” Indeed, there is still hope that art could very well be one of the ways to salvation. #Star #Wars #Middle #East #Premiere The highly anticipated Star Wars: The Force Awakens had its second worldwide premiere in Abu Dhabi. The event was brought to the UAE capital by twofour54 in partnership with Etihad Airways and Abu Dhabi Tourism & Culture Authority. Held at Emirates Palace, the Middle East premiere was an invitation-only red carpet event where guests mingled with Stormtroopers from the UAE, UK and German garrisons of 501st Legion. Members of the Jedi order armed with lightsabers also took to the red carpet. The screening of the film was then followed by a world exclusive immersion experience of the film’s creatures, props and set pieces. The one-off Jakku experience featured the set piece of the Jakku market place; models of the Jakku speeder truck and the Jakku landspeeder; and the AT-AT foot.

The Revenant What’s it about: We’re in the 1820s when frontiersman Hugh Glass faces the almost unimaginable ordeal of being mauled by a bear and left for dead by his men in the frozen American wilderness. Glass survives the attack and is out to seek revenge against those who left him to die.

Inspired by true events and Michael Punke’s novel of the same name, The Revenant is Oscar winner Alejandro G. Iñárritu’s follow-up to Birdman, and chronicles a revenge saga starring Leonardo DiCaprio as the real-life 19th century fur trapper Hugh Glass. Audiences are taken on a long, gripping journey through an arduous and unforgiving landscape, as this story of brutal survival is brought to the big screen. It’s Glass’ gruff character and his vengeance-filled mission to kick some serious butt, as well as the incredible cinematography, which won’t require you to put on 3D glasses, that will drop film fans into the cold and bloody thick of the action. There will be moments that will leave you clenched into a whimpering ball, and THAT is the effect of the brilliant moviemaking of Alejandro G. Iñárritu. Considering that the plotline is one of power, fear, rage and human duplicity, the film itself is a beautiful western thriller with extraordinary scenes and, in case you hadn’t noticed, a MEGA cast!

Unlike the popcorn movies of his past (Transformers, Bad Boys etc) Michael Bay tackles a more serious theme; the 2012 attack on two U.S. compounds in Benghazi that led to the deaths of four Americans, including Ambassador Christopher Stevens. Critics are divided – either you’ll come out the cinema thinking this was a neat and emotionally-satisfying narrative, or you’ll actually see beyond the narrative to recognise the painful events of this historical day.

He recently declared to Rolling Stone magazine: “I’m not in no lane. I’m music and I just want people to know me as music. Not some R&B guy.” Well, we’ve got news for you Kells, that just isn’t true. Everyone who was into R&B in the singer’s 90s heyday has a story about an R.Kelly song *cough Bump’n’Grind cough* - so, why would he want to stray from that? The Buffet, apart from being one of the laughably worst titles ever (much like 2013’s Black Panties) is R.Kelly’s 14th studio album, for which he penned 462 songs, and spent over two years recording in Chicago. Kells’ new musical offering is simply an 18-track record with plenty of R&B-esque themes and sensual food-based metaphors. In The Poem, the singer promises to “toast” lady listeners “juices all night” and indulge his “bad eating habits” before making a five-second long slurping noise – classy. Then there’s the slinky slow jams and acrobatic vocals of Marching Band; and the emotional apex of the album, Be There, a duet with his once-estranged teenage daughter, who goes by Arriraye. If Kells is looking to step away from his reign as the king of R&B, The Buffet doesn’t really help. Sometimes, it’s just better for everyone if you do stay in your lane.

Less than a two-hour flight from Dubai, and yet far removed from the over-the-top glitz and soaring skyscrapers, Salalah is the perfect weekend destination when you need a break from the fake. FACT’s Chelsea Copenhaver went to experience this beautiful destination…

I

’m sure by now that most of us living in the Gulf have more than a passing familiarity with the charms of nearby Oman – whose rich and vibrant history is only surpassed by its natural treasures. Whether you desire picture perfect white sandy beaches, arid mountains, golden dunes, or wadis dotted with crystal clear pools, you won’t have to go far, to find one all to yourself in this country that has been deemed the Jewel of Arabia. Indeed, Oman has been much touted as of late as an up-and-coming tourist destination, and the effects can certainly start to be seen in the capital city, Muscat. However, getting off the beaten tourist trail is, as always, highly rewarding in Oman, and nowhere more so than in the Southern Dhofar region. Well known for its annual khareef (a colloquial Arabic term for monsoon), Dhofar and its chief port city, Salalah, is the only place in the Gulf that experiences an annual monsoon season, and its mist shrouded hills tend to be a big draw for heat stricken GCC residents between the months of July and September. However, Salalah enjoys a pleasant climate year round and the residual effects of the khareef create a dazzling pocket of green in a sea of dust. fact magazine

Salalah itself was a prosperous trading port of frankincense in the 4th century BCE and is the traditional seat of Oman’s Sultan, as well as being the second largest city in Oman. With all of this in mind as I boarded my Oman Air flight to Salalah, I must admit that I was more than excited to spend a weekend away from the gruelling traffic, bright lights, and hectic pace of the city. During the comfortable and well serviced journey, I amused myself with visions of swaying palm trees, waves gently crashing on endless beaches, and a sky-full of glittering stars. My visions of unspoilt nature turned out to be quite precise, however I didn’t need to sacrifice any creature comforts to enjoy it as I was spending my weekend at Salalah’s newest and grandest resort – the Salalah Rotana Resort. The Salalah Rotana Resort was opened in March 2014 and boasts 400 rooms and suites spread around manmade Venetian waterways. Set on a stunning 8.2 kilometre beach that is the highlight of the property, the resort is built in traditional Omani architecture tastefully accentuated with elements of the surrounding rugged beauty. I arrived late in the evening and was warmly greeted and whisked off to get acquainted with my Premium Ocean Front Suite, my home for the next two days. The Suite was truly a slice of paradise, decorated in a minimalist Omani style, with a large bedroom, a living area, kitchen, two bathrooms, and an ocean-facing furnished veranda. The bedroom was impressive but warmly inviting, with a vaulted clay ceiling and a bed carved from desert rock. Carved wooden windows opened to the beach and I promptly fell asleep to the sound of the waves, practically at my doorstep. This is certainly a unique sensation in the GCC, despite the many beaches. After the kind of deep restorative sleep that can only be had in that special silence found in a natural setting, I started my morning early with breakfast on the veranda, ordered from the extensive room service menu, 54

and ate with an unhindered view of the white sand beach. After a leisurely stroll, I set out to explore some of what Salalah has to offer to the traveller. Highlights included the Sultan’s marbled Palace, the traditional souk in old Salalah, Mughsail Beach and Marneef Cave, famous for its blowholes. However, simply driving around Salalah is half the pleasure, as everywhere you look provides a new experience for the senses. There are palm tree-lined roads with open air shops selling fresh young coconuts, and spectacular viewpoints over untouched white beaches lapped by the strikingly turquoise Indian Ocean. One can gape at rugged peaks with twisted, yet noble frankincense trees growing improbably out of the rock, whose peeling bark fills the air with a nostalgically ancient smell. Venture to sweeping beaches whose only sunbathers are camels, who, keeping in line with the famous Omani hospitality, are very friendly and approachable. There is wonder to be found everywhere you go in Salalah, and all of this with hardly another tourist in sight. Further inland one can explore the many wadis and green mountains so iconic of Salalah, and around the khareef, waterfalls as well. It is a trekker’s paradise and also well appreciated for the variety and scope of wildlife and bird viewing. After a day of such adventure, I was happy to return to the hotel for some pampering at Zen the Spa, a Rotana concept that focuses on holistic healing with a touch of luxury. I was treated to the signature massage and after a thorough consultation with the therapist; she went to work easing out the knots and tension of modern day living. Although quite a massage enthusiast and someone who believes religiously in spoiling myself, I can honestly say that this was one of the best massages I have ever experienced. I left feeling my tension spots relieved, however not weighed down or groggy, but rather refreshed and energetic. So energetic in fact, that I elected to go for a swim in the sea, which was not your average Arabian Gulf floating session. fact magazine

The beach at the Salalah Rotana Resort, much to my delight has waves, and somewhat large ones at that, and getting out past the break is no easy feat. However, there is nothing like bobbing in a gently rolling sea and until I had to swim back, I enjoyed watching a stunning orange sunset from the water. Dinner was served at Silk Road, Salalah Rotana resort’s signature dining concept, with a perched view over the resort and an extensive menu incorporating cuisine from along the traditional Silk Road. Luckily, the servers are well educated about what is on offer, as after perusing the large menu, I couldn’t make up my mind and asked for recommendations, which I was very satisfied with. After another peaceful night under the stars, the next day brought with it another essential Salalah adventure: Dolphin watching. Around the ocean, a company specialising in dolphin sighting tours, as well as fishing and other marine activities, was to be my host for today, and we set off to observe these spectacular mammals enjoying their natural habitat. Around the ocean has the utmost respect for the dolphins and is careful not to disturb or lure them. Even so, the fun loving creatures are far from shy and we spend hours watching them swimming and playing. We were even given the chance to swim in the ocean, and while the dolphins won’t come closer than several meters, it was still an exhilarating experience and a highlight of my trip to be swimming so close to them. I was pleased to see that Salalah had certainly lived up to its fabled natural beauty and of course, was not lacking in the hospitality that is so characteristic and has been recognised for hundreds of years of the Omanis, well captured by the scenic resort. Indeed, Dhofar may yet be one of the last places to capture the Arabia of the romantic imagining – a place where you can feel transported in time, at peace with nature, and yet completely at ease in the knowledge that you are in complete safety.

With the new Maxima, Nissan builds on an already excellent model with even higher levels of luxury, features and performance. When the previous generation Maxima, the seventh overall, was unveiled back in 2008, it blew everyone away with its style, performance, luxury and sheer presence. The Gulf hadn’t seen a new Maxima in around a decade, as the sixth generation Maxima was simply an Altima rebadged as a Maxima for the US markets. 62

The seventh gen Maxima was such a leap forward for the brand’s flagship sedan that it was going to take some beating. However, for the 2016, eighth generation Maxima, Nissan have pulled out all the stops and come up with the goods. Externally, the design of the Maxima has undergone a significant overhaul, making it look more futuristic and bold than its predecessor. However, the biggest change has come from within. The model we drove was the Maxima SR, one step below the top end Platinum spec, and yet still absolutely packed with options. For example, you have keyless entry and start, heated AND air-conditioned seats, a big touchscreen that can be controlled either by touch or by the rotating dial on the centre console, adaptive cruise control, advance collision warning, flappy paddle gear shifters, to name but a few. Little touches, like the seats moving back when you turn the car off to make

getting out easier, are what make the Maxima punch above its weight in the segment. It’s the design, though, that really stands out with the interior. It’s stylish and modern, with a distinctly premium feel to everything thanks to lots of padded black leather surfaces with white stitching, and white leather seats with quilted stitching on the seat backs really adding a classy touch. The centre console, which is angled slightly towards the driver for that nice cockpit feel, is well laid out and looks great. The interface on the touchscreen, while not the most eye catching we’ve seen, is intuitive and easy to use. The highly competent adaptive cruise control works extremely well, with smooth braking when approaching a car ahead, and it’s much less ham fisted with the braking as versions of the technology we’ve seen in other brands. Nissan’s tried and tested powertrain,

the muscular 3.5l V6 with CVT, returns in the 2016 model, only this time it has been beefed up to produce 300hp and 354Nm of torque. We love the fact that, while everyone else seems to be switching to smaller, turbo-charged four-pot engines, Nissan is sticking to its guns with its beefy V6. The CVT transmission is excellent too, with smooth and rapid shifts, and a constant and impressive power delivery right the way through the ratios. It avoids that awful drone that other CVTs can be prone to, as the acceleration struggles to keep up with the engine speed. In addition, the chassis is almost 40kg lighter, and 25% stiffer, thanks to tougher lightweight materials. All of this amounts to a car that is fast, agile and engaging to drive. Following on from the previous generation, there were big expectations with the new 2016 Maxima, but Nissan have not disappointed. It’s a superb flagship for the brand. ✤ fact magazine

CHEF’S TABLE This month we dine at the table of Chef Shibojyoti Basak, Chef de Cuisine of Stills, at the Crowne Plaza Yas Island. The menu underwent a revamp late last year, so FACT was excited to sample some of the new delights… Stills, at the Crowne Plaza Yas Island, is one of the city’s most popular social hotspots. However, a great venue and buzzing atmosphere only goes so far, unless they’re complemented by good food as well. And the menu at Stills takes pub grub to another level, thanks to Chef de Cuisine Shibojyoti Basak. Chef Shibojyoti boasts almost 14 years of experience in fine dining restaurants around the world. He began his career at the prestigious Oberoi Group in India, before moving on to work for Michelin-starred chefs Georges Blanc in his restaurant aboard a cruise liner, and Raymond Blanc in the UK, before moving to the Middle East. In the Gulf, he spent time at the Movenpick Palm Jumeirah in Dubai, before bringing his considerable experience to this fab venue. Chef Shibojyoti revamped the menu at Stills in October, taking all the old menu’s favourites, and adding his own elements and style to it. “In developing the new menu, I wanted to develop the seafood side of things, and do more with the steaks, more cuts on the menu, as well as giving a more modern touch overall to what we were doing,” he explains. We were there to experience exactly what he was talking about with the dishes that were to come. The first was the Prawn Vampino, which is prawns prepared tempurastyle, but stuffed with crabmeat and wrapped in Nori, and served with Cholula sauce and salsa verde. “This was an inspiration that I got one day when I was in a sushi restaurant, where everybody wanted to have the sushi wrapped in the Nori,” Chef Shibojyoti recalls. “So, I thought why not have the prawns wrapped in Nori, and present it in a tempura style? We then take the taste from the American south, where we serve it with the salsa Verdi, or the Cajun Aoli. So we take 82

a Japanese concept, and give it a modern touch,” he says. Along with the prawns came the Pacific Crab Cakes, which are served in a crunchy golden crust with corn succotash and tarragon cream. “Again, the succotash is made with lima beans and corn and some roasted peppers, and served with salsa Verdi, so again it’s a classic dish with a modern American twist,” Chef Shibojyoti says. Next came a firm favourite, the Braised Beef Brisket, which is served with creamed sweetcorn and sweet potato fritters, and a rich delicious gravy. “We cook it for around 16 hours, because the brisket is from the front quarter, near the belly,” he explains. “The fibres of the meat are really tough, but there is also a lot of flavour in it, so the best wayto cook a brisket is slow, so that it breaks down the fibres and makes it tender, and keeps in all the flavour. It’s marinated overnight, and cooked at 100 degrees for 16 hours.”

And our final main was the Duxelle Stuffed Confit Chicken, which is stuffed with mushroom and herbs, and accompanied by braised leeks and cherry tomatoes, and topped with a wild mushroom sauce. “This is our take on a classic French dish. We take the chicken, de-bone it and stuff it with a mixture of different kinds of mushroom. Then we cook it in a steamer for 22 minutes, at 100 degrees, then take it out, and serve it in a gravy made from the juices of the chicken and the mushrooms.” Then came two desserts, the Banoffee Pie, and the Tangy Lemon Posset. “With the Banoffee Pie, it’s a traditional thing that everybody loves, but we present it in our way, in a glass, in a deconstructed style, something a little different,” Chef Shibojyoti tells us. “So, keeping the taste the same, as it should be, but giving a modern look to it, that’s how I like to approach things.” And in our opinion, it’s a highly successful approach! ✤ GO: Visit STILLS at CROWNE PLAZA YAS ISLAND. Barfly Brings Paris Chic to Abu Dhabi

As the chic Parisian venue concept opens its doors in the Ritz-Carlton Abu Dhabi’s Venetian Village, we talk to the company’s Head Mixologist, Matthias Giroud, about how it’s bringing something very new to the UAE.

Barfly is the world-famous Parisian restaurant and supper club concept that opened its doors in the French capital 20 years ago. It revolutionised nightlife worldwide when it opened as the first restaurant-cum-bar that brought in a club atmosphere. Later, it opened in Los Angeles too, and the two venues quickly became well-known celebrity haunts. The concept is the creation of restaurateur Raymond Visan, the man behind George V Entertainment, which also owns Buddha Bar in Paris and Dubai, Karma Café and Siddharta Lounge in Dubai, and Bushido in Bahrain, to name but a few. The décor of Barfly Abu Dhabi is inspired by the original venue, but offers a modern twist to the concept, creating an interesting combination of Parisian chic and Middle Eastern ambience in a luxurious and stylish setting overlooking the tranquil waters of Abu Dhabi’s Grand Canal. With a neo-baroque interior design concept that merges surprisingly with a raw industrial style, the two-story setting harmoniously brings together warm reds, gold and Aubergine tones and colours. As with the Buddha Bar concept, there is a very specific style and selection of music that will be played in Barfly that is slightly more upbeat and lively than the Buddha Bar’s chillout vibe. 84

Matthias Giroud is the company’s Chief Bar Manager, who has been with them since the opening of the original Barfly two decades ago, and now supervises the bar menus of every venue launch. For Abu Dhabi, his ambition was to create something truly unique. “I don’t want to take any influences from Buddha Bar, because they have Buddha Bar in Dubai, as well as Siddharta Lounge and Karma Café, and these are very strong concepts each with unique personalities, so I want to create something very different here for Barfly Abu Dhabi, a unique experience,” explains Matthias. Being in the Middle East, it was important to Matthias that Barfly includes

ALL of Abu Dhabi’s residents, both local and expatriate. To do so, he has made the non-alcoholic cocktails a main feature of the menu, giving as much emphasis and attention to these concoctions as the rest of the beverages. “I don’t want to treat the non-alcoholic cocktails as secondary,” he explains. “I want to put them at the same level as everything else. I want to give the same experience, the same attention to details, ingredients, textures and flavours.” We were treated to a few samples of these creations, and we can tell you that it’s quite the experience. The menu is divided into five ‘families’, with three choices per family, and one of those in each family is the non-alcoholic offering. “All of the fifteen signature cocktails for the opening of Barfly Abu Dhabi are completely new for this venue,” says Matthias. “We have five families, each with different textures, which are the liquid, the smoky, the sparkling, the foamy, and the frozen.” Barfly opens its doors this month, and looks set to be Abu Dhabi’s hottest new venue. FACT went to check out what this stylish venue, at The Holiday Inn Abu Dhabi, and its delicious menu has to offer…

T

his isn’t our first visit to the Lemon Tree at the Holiday Inn Abu Dhabi – we stopped in to sample the food and interview Executive Chef Carl Moore last year, and we were impressed. So much so that when they called us and offered us a sneak preview of next year’s new menu, we didn’t hesitate! Located on the lobby level, Lemon Tree is a contemporary Mediterranean Brasserie, serving lunch and dinner with a menu that has everything from delicious appetisers, pizzas, pastas, yummy desserts and everything in between. Guests are invited to indulge in Italian, French and Spanish cuisines, and the venue’s themed Greek night has become somewhat of a foodie favourite with diners. First off were two starters from the new menu, the Burratta and Sundried Tomato, and Scallops with Tortelloni and Beetroot Puree. The burratta was soft, creamy and delicious, as one would expect, but the real treat came from the tomato. Rather than being fully sun dried, they’re only partially dried in a ‘hot box’, prepared in-house by Chef Carl. This means that they’re not shrivelled and oily as with those from a jar, but still juicy, though with 88

the sweetness and flavour concentrated by the drying process. It makes for a delicious combination. The scallops were tasty and tender, and perfectly accompanied by the beetroot flavour – a failsafe tasty dish that we would definitely order again. Next came a deliciously creamy Chicken

and Asparagus Risotto, which is actually one of the existing menu’s favourites, and will be kept on for next year; with good reason too – it’s simply excellent. The chicken and asparagus is cooked well and the different flavour and textures in every bite make this main a crowd pleaser. And the last of our mains was the

equally excellent Seafood Spaghetti, which comes in a tangy tomato sauce with generous portions of prawn and just the right amount of garlic and chilli. If you’re a seafood lover through and through, this dish will not disappoint. We particularly loved the freshness of the ingredients and the tasty touch of the garlic and chilli. A filling choice! We rounded off with a rich Cheesecake with Berry Compote and lovely crunchy base. Infusing the classic creaminess with the biscuit-style base, this was the sweetest (pun intended!) end to a pretty perfect meal. Perhaps the best thing about the whole dining experience was the price. Despite being excellent food, the dishes at the Lemon Tree won’t break the bank, being very reasonable for the quality on offer. And it gets even better for their business lunch during the week from 12pm to 3pm, where you can get a salad and one delicious pasta dishes, for just AED55. This express lunch is known for its quick service (you’ll get your whole meal in 45 minutes!). We thoroughly recommend you drop by and check it out! ✤

The Sweet Tastes of Arabia Arabic sweets are a staple of Middle Eastern culture, but their influence remains mostly confined to the region. We talk to one of the Gulf’s biggest sweet producers about the industry and where it’s going.

issam El Cheikh’s business, Al Dar Sweets, was started by his grandfather in Abu Dhabi, in 1975. Originally a restaurant and sweet shop, it eventually moved exclusively into sweets. “Food in general plays has a very important cultural role, and I think the most important would be sweets,” says Wissam. “Just look at the impact that sweets have on language, emotions and words of endearment such as sweetie, sugar, honeybun and the like. I mean, nobody calls their loved one after a salad!” (We’re in total agreement. It would be a very foolish man who called his wife Fatoush or Tabbouleh…) The foundation of Wissam’s business at the moment is in bulk sales and catering. “We have three branches, and a factory in Mussaffah that can produce up to three tonnes of sweets a day. For the past two years we’ve been focusing on the catering side of the business, but that is now on hard ground, so I want to turn my attention to retail.” This itself brings its own challenges. Whilst certain confectionery concepts such as cupcakes and cookies, or Mars Bars and M&Ms, have a global reach, the popularity of Arabic sweets has usually been limited to the Middle East. According to Wissam, this is largely due to cultural and economic conditions prevalent in the world today, rather than the appeal of the product itself. One of Wissam’s key product lines is Baklava, a hugely popular treat in the region consisting of baked sweets made from pastry and nuts soaked in sugar syrup. “Historically, Baklava was invented in Turkey but then spread across the region 92

I want to create that bridge with flavours...” thanks to the Ottoman Empire, changing slightly from country to country,” explains Wissam. “Parts of Eastern Europe also have Baklava, and you see similar products throughout Europe. However, there has been a downwards trend in the popularity of it. It’s not fashionable any more, and this is part of the globalisation process, where big international names in confectionary

are seen as more attractive.” Wissam aims to increase the appeal of his products by blending the traditional offerings with new concepts and recipes that bridge the cultural divide between the West and the East, and introducing flavours that are more globally recognised. “I want to evolve and promote the product to compete with international products. I want to create that bridge with flavours like Macadamia nuts and Mochaflavoured Baklava that connects West and Middle East. The Macadamia nut sweet

I’m already doing, and it’s very popular.” Wissam also plans to focus on presentation to improve the appeal. “I think if you package it right, position it right, and try new things to refresh the product, you can sell. As far as the presentation goes, we’re going through a whole rebranding of our shops, revising how the products look, and how they’re displayed. The shop is going to have a much more upmarket presentation, very elegant, with a wider selection on smaller trays.” With these plans in mind, Wissam sees great potential in the product. “The potential in the industry is there, the sweets are rich and need craftsmanship to prepare, it is isn’t something someone can do out of their own home, not like a cookie or a cup cake, it is intricate and needs balance and care.” It’s this kind of passion that underpins the success of any product. One of Abu Dhabi’s favourite Italian restaurants recently opened an extension of their venue with a new concept in dining and leisure – The Cellar by Spaccanapoli, at the Crowne Plaza Abu Dhabi. The cosy venue, styled after an Italian grapes cellar, is the ideal concept for all lovers of the grape, occupying what was formerly an unused reception area below the Spaccanapoli lounge area, with a direct access from Hamdan Bin Mohammed Street. Chef Piero Nogaro has developed a special tapas menu especially for the venues opening, which boasts a selection of hot and cold Italian appetisers. We’ve been to try it out, and highly recommend a visit!

The various venues at the Venetian Village dining promenade at the Ritz Carlton Abu Dhabi Grand Canal have rolled out special lunch promotions for the New Year. At Inakaya, the business lunch specials include a selection of quick to serve dishes. In addition, the bento boxes are available in two options offering a mix of tempura, sashimi, california maki and sushi, and are accompanied with miso soup and dessert. For lunch-goers who relish Italian cuisine and Mediterranean flavours, Todd English’s Olives restaurant offers a two-course menu for AED 80 and a three-course menu for AED 100, both inclusive of tea or coffee. so if you decide to go into catering, you have to make a choice, either you’re a chef, or a Boulanger (baker), or you’re a pastry chef, and I made the choice when I was five years old, that I was going to be a pastry chef, and I stuck to it. I went into an apprenticeship when I was 18. Even if you ask me today, what else I would do if I wasn’t a pastry chef, I wouldn’t have an answer for you, because it never crossed my mind, to do anything else. Hi Eric! Is this your first trip to the Gulf? No, I’ve been to Abu Dhabi before, I came last year to Taste of Abu Dhabi, and I’ve visited for pleasure, and I attended Taste of Abu Dhabi this year too. It was nice, I really enjoyed it. You can see that people are passionate about food here. I did the main theatre, and I did the cooking classes as well, and people really love it, to get their hands dirty. Do you just specialise in pastries, or other genres too? I’ve always been in pastries. I’m from France, where the training is very specific, 96

But pastry doesn’t necessarily mean just sweet things, does it? No, I create savoury dishes as well, and I’m lucky to work alongside some great chefs, and from my own imagination as well, to come up with new creations. I love pies, I love savoury tarts. I just finished writing a new book at the moment, called Eric’s Afternoon Teas, because I seem to be doing those everywhere right now! There’s a chapter on savoury macaroons. Other things I’ve made are savoury eclairs, because choux pastry is very versatile, it can be used for savoury and sweet, so you can make it happen together.

What’s your approach to creating recipes? I’m always looking for new ingredients, and new sensations. I like my food to be exciting, to the last bite. Finally, describe the ideal Afternoon Tea… For me, Afternoon Tea is the new lunch. In the UK and Asia everybody is looking for the ‘next big’ afternoon tea, though for me it still needs to look like an afternoon tea. So, you need the three components: you need the savoury, the sweets, and the scones, because without that it’s not a traditional afternoon tea. I don’t want it to be too gimmicky, I want it to taste nice, and I want people to go away thinking “wow, that was a sensation,” and definitely an Instagram feast! And at the same time, you feel full, and satisfied. city insider What’s life like being resident DJ at McGettigan’s? It’s pretty sweet, it’s one of the most popular bars in Abu Dhabi so there’s never a dull moment. I’ve been there over a year now and the relationship I have with the crowd is fantastic. It’s the same faces that keep coming back week in week out and they are always up for a good time; jumping up and down with their hands in the air, cheering and screaming right in front of you. From a DJ’s point of view it’s such an amazing feeling, sometimes I feel like Calvin Harris when I’m on the decks!

WHEN YOU’RE NOT AT MCGETTIGAN’S, Where do you like to hang out in Abu Dhabi? If I’m not at McGettigan’s (which is very unlikely) I like to hang out at The Yacht Club at the InterContinental or Iris at Yas Marina because they play house music all night, which I’m a big fan of. After playing mainstream music all week it’s nice to hear something different and I find the Yacht Club offers that. The Yacht Club also has a cool set up overlooking the marina so it’s nice to chill out outside when the weather is bearable. Similar to Iris, they have a cool bar outside and

being at Yas Marina you just get the great views of the 200ft yachts parked outside and the Viceroy Hotel.

What is your favourite thing about life in the UAE? My favourite thing about life in the UAE is the endless opportunities. I’ve been fortunate enough to DJ on megayacht parties, beach parties, pool parties, fivestar hotels and some of the best bars in the UAE. Now I wouldn’t get that back home in Wales, that’s for sure!
