f you’re a frequent user of twitter or instagram, you’ll be familiar with #ThrowbackThursday – well, we took some inspiration from this popular hashtag and decided to give one last throwback to the year gone by. Let us take you down memory lane starting p21 as we pick all our favourite features from 2015 – from food to arts and culture, fashion, motoring and more – this is a big shout out to all our amazing friends in various industries who have supported FACT over the last 12 months. We hope to continue supporting you into 2016 as well! Arts enthusiasts, this issue is packed with local and regional talent. We caught up with Doha-based Venezuelan artist Johnatan Machado to talk tools, technique and artistic inspiration (p33). Paintings from Palestine is a brand new exhibition at Katara Arts Centre (p40); and we also have an exclusive sit down with Lebanese master calligrapher Samir Al Sayegh on p43. THE EVENT, ORGANISED BY THE QATAR GOLF ASSOCIATION (QGA), THE QATAR OLYMPIC COMMITTEE (QOC), DOHA GOLF CLUB AND LONG-TERM TITLE SPONSOR COMMERCIAL BANK, SITS AT THE HEART OF THE EUROPEAN TOUR’S DESERT SWING. Hi Theo! What’s your earliest memory of food as a child? My earliest memories in the kitchen were helping my mother bake. She is a great cook and I would always help her make bread. My mother’s fresh bread from the oven with butter on top is one of my favourite things. I was very lucky as I grew up with great food, so it’s not that surprising I became a chef. Your favourite places to eat in the world are all in Italy - what exactly is it about Italian cuisine that appeals to you? I love Italian food because it’s so varied but always relies on great ingredients. All the recipes make the most of an ingredient without over complicating it. Define your style of cooking... I would say my style of cooking is seasonal Italian-inspired food that uses the best quality ingredients and is served in a relaxed unpretentious way. Tell us more about your involvement in the 2016 Commercial Bank Qatar Masters – what can we expect from the menu? I will be hosting and preparing the food during a live cooking session in the Winner’s Enclosure hospitality at the Commercial Bank Qatar Masters 2016. My signature dishes will be served 18

in both the Commercial Bank Qatar Masters’ Winner’s Enclosure and at the Albatross View hospitality pavilions. As for the menu there will be a few classic dishes from my menu in London and also a few dishes that we are creating for this very prestigious event. The food will be using top quality ingredients and it will be beautifully presented. What are you most looking forward to about the event and do you anticipate facing any challenges? I love golf so I am looking forward to getting a few tips on my grip and swing. Outside catering always has challenges but I feel confident as I will be working with a great team from the InterContinental Doha.

What matters more – taste or presentation? For me it is both but taste is first. What inspires you to keep cooking after so many years in the industry? I love to cook and, for me, seeing my team grow and develop is very inspiring. I get so much enjoyment from being in the kitchen. I feel very fortunate that I love what I do and always will. What’s your guilty food pleasure? Chocolate. I love 70% dark chocolate. What’s the perfect day off like in the life of Theo Randall? A long walk on Hampstead Heath with my children and our two Labradors, followed by brunch at our favourite cafe. The rest of the day would involve food shopping and cooking for a big dinner with all the family, then watching a good film.

H

i Johnatan! Tell us about your journey into art… I began my career as a photographer, specialising in low light photography, and focused on theatre pictures, especially ballet and contemporary dance. I was always inclined to take artistic photography, and this is where it all started. I have been an artist for over 12 years. My first serious painting was done for the admission test in the university where I studied and graduated in arts (painting). I was 22 years old when I started to take pictures and realised that a conventional job was not for me. Being an artist is a profession that requires perseverance and self-trust, it has its ups and downs, but the most important thing is that I use creativity every day, creating things that weren’t there before and best of all, having people enjoy your work. 34

the largest woven canvas he’s ever done, and he truly likes the result. The dimension is 170cm x 170cm, and was produced for a special project. The important thing about this piece is that it led Johnatan to challenge himself as he wasn’t sure if he would be able to achieve good results.


What do you love most about being an artist? The chance to work anywhere in the world, doing what I love to do. This is one of the things I love the most about being an artist. Being able to go anywhere in the world, enter museums and galleries and work with their people. This gives me immense joy. Art is infinite and it has no borders. Describe your artistic style for someone who is viewing your work for the first time… Although I consider myself a painter, during the past few years I also have to consider myself a weaver, a weaver of

concepts and materials, not collage, not painting, but both at the same time. My intention has always been to mix concepts through non-conventional materials. And so, my work lives in the gap between collage and painting. Social issues have also become a part of my artistic proposal. I touch common ground in which we can all feel identified using the symbols of the materials I use and their meaning for any community. Tradition intertwines with contemporary craftsmanship and is woven with industry. Topics are mostly on the transformation of everyday life in a piece of art. Social issues lie between technique

and aesthetics, I talk about processes of change, of unifying differences, and engaging my surroundings into one piece of work. Tell us about some of the materials, tools and techniques that you use… I have “knitted” 35mm film, canvases, and now my latest series with Sedu, the traditional Bedouin fabric. I’ve put my energy into transforming the main use of materials, loading them with a different meaning. It is a work that talks about the process, the systematic accumulation and repetition of the elements in the piece. fact magazine

JOHNATAN KNOWS FROM

the beginning what his end piece will look like, from the moment of his first brushstroke, he calculates and plans each step. He is always anxious for the piece to start breathing, during the process, but always keeps the end in mind. The weave gives birth to kinetism. In the “35mm Weaves” I conceptualise the death of the analogue era and the overwhelming arrival of the digital era. A few years ago film was sacred, now we throw it out as garbage. As for my “Woven Canvas” I wanted to play with kinetics with a technique that would transcend painting. In this case, I transform the meaning of classical painting into a contemporary hybrid. My last series is made with Qatari traditional fabrics. Here, I transform traditional materials into contemporary pieces of art with a social meaning that people can relate to. 38

Describe the art scene in Doha… It is a very active scene. Many cultural things happen here in Doha. There are many events focused on the development of the Qatari identity. As a contemporary artist, I perceive it as very focused on traditional art. There are only a few galleries where you can find contemporary art. Katara has many spaces in which most of the art that is presented is from the region, but they also open their doors to international artists, as does the Anima Gallery.As for museums, you have the Mathaf, for me the pillar of the Qatar Museum Authority on contemporary art. They are connected with the international contemporary movement and in the museum you can see exhibitions of the world’s top artists. Thanks to these expositions, the domestic art movement has been enriched. Who or what inspires you to continue producing art? What inspires me to continue is the

feeling of being unique, of making others happy and interested in what they see. As an artist I am the king in a castle of creativity, I create my world, I transform my surroundings into something that only I can see. I am my boss and my own server. Art is a daily challenge, it is a continued transformation, and the responsibility falls on me alone. Sometimes I fear making mistakes, but I’m able to overcome this fear every day. The feeling of success in the creative realm leads you to states of happiness that only an artist can understand. Everything is beyond what is seen, being an artist fills me with fear and happiness at the same time. What’s your advice for budding artists? Work, work, work. Only you really know your work, but to do so you have to work a lot. It is not just a matter of techniques and skills; it is about what you want to say through your work. The most important thing is intention, and to truly know your intention, you need to work and work.

Paintings from Palestine Currently on display at Katara Art Centre (KAC) in association with Al Markhiya Gallery, is an exhibition showcasing the work of renowned Palestinian artist Mohammed Al-Hawajri. As a, predominantly, self-taught artist, Mohammed’s work speaks volumes about the realities of Gaza… ohammed Al-Hawajri has a keen interest in modern art, which comes from his belief that technology has a great and influential role in creativity, in particular in the field of visual arts. “The circumstances I live in, which have been turned into works of modern art, are inspirational and its subjects plentiful,” Mohammed says. “Painting, video, photography and techniques of modern art are used in the manner I want to address and present to my viewers.” Mohammed’s subject matter is allusions to the circumstances he lives in, and to the way in which the people of Gaza are living, daily, being subjected to fluctuating political, and economic and social conditions. These changes are reflected in Mohammed’s artworks, which you can see at KAC. Born in 1976, at Al Bureji refugee camp, Mohammed lives and works in Gaza, and he’s also one of the founders of Eltiqa group, which focuses on the convergence of contemporary art by helping to organise exhibitions and workshops showcasing modern art. Mohammed’s work has been displayed in solo and group exhibitions both locally and internationally, and in his work you’ll see a distinct approach to human expression, characters and behaviour “I am always searching for new possibilities, dialogue and techniques to build my thoughts, which emerge from an, often, bitter reality,” Mohammed says. “It is my wish to transform those circumstances into critical and sometimes sarcastic interventions. “I intend the critical sarcasm to be a tool to draw people closer to my reality and thereby allow my viewers a vantage point from which to relate and deal with important human concerns,” he adds. SAMIR AL SAYEGH, considered as one of the most avant-garde Arab master calligraphers of his generation, seeks to liberate Arabic letters from the restrictions imposed by language and meaning. As an artist, poet, writer, art critic and historian, Samir is more than well equipped with the expertise and experience to do this. He has dedicated himself completely to the art of Arabic calligraphy, focusing on the purely aesthetic properties of the written word, over literal meaning, in order to create a universal visual language. His interest in traditional calligraphy as well as art and design led him to create new calligraphic typefaces and collaborations with numerous publications and fashion designers in Paris and Beirut. Samir’s drive to show calligraphy as not just a heritage art, but also a modern one, is something that began in his early childhood after his first encounter with a writing tool. “I remember the first time I discovered the pen in my father’s office,” he recalls. “I was amazed but also scared. When I tried to write, I was bewitched. I felt wings growing

on my body and the white papers were the wide blue sky.” Samir isn’t sure what it was, exactly, about poetry, prose or calligraphy that stopped him in his tracks from such a young age, but as life went on, his journey and relationship with these creative forms only grew stronger. Now, Samir believes that art, in its many forms, does not always hold a meaning of its own that we can name or describe. Instead, its meaning is complete when contemplated by the viewer. “Art is not taught or learned, and there are art styles as much as there are artists,” he says. “We must not learn art but contemplate art, watch it, read it, listen to it, analyse it, discuss it, and have a conversation with it. “It is not a set of rules or techniques and does not have fixed styles to apply. Art is life. It is also a vision, a language, knowledge, truth and a science,” Samir adds. Often uniting ornamentation with calligraphic script, Samir has developed a distinctive practice. Through the formal elements of line and space, he abstracts Arabic letters and words into dynamic geometric compositions, which often cover the entire surface of the artwork. Visually engaged with the modern art movement and geometric minimalism, Samir’s works bridge two artistic traditions to forge a unique contribution to the history of modernism.

T H E S U B J E C T I S N OT IMP O RTA N T, B U T H OW YOU AP P R OAC H IT.” So, what is it about calligraphy that has such a hold on Samir? “I like that it first existed on pages of the book but did not transfer into a sacred art,” he says. “I like that it grew, developed and shined in palaces but did not contribute in favour of rulers. I also like that it is an absolute art that is present in every time and place without being associated to a specific time and place. “And I, finally, like it because it is the way to the eye and the mirror to the soul. What I love about practicing calligraphy is this new horizon where it seems like it is the art of the future,” Samir explains. The exhibition, Aleph in Many Letters is based on Samir’s book of the same name. The texts and the artworks both strive to free the art of Arabic calligraphy from Arabic language in order to transcend it to its highest spheres as an art to read what cannot be read, and hear what cannot be heard, and see what cannot be seen. The exhibition presents a selection of recent artworks on canvas and paper. “What is important is not what you as an audience see, but how you see it,” he says. “The subject is not important, but how you approach it. I wish the viewer stands in front of my work as if standing in front of a tree, or as if listening to the wind. fact magazine

“I wish they would listen to what the straight lines are saying and what it feels like when they incline. What happens when lines meet or intersect and how connection and parallelism happen, and how the lines embrace one another,” Samir adds. To create the huge artworks of calligraphy, Samir makes and uses giant pens where the biggest one is 35cm wide, and which allows him to have wide lines with acrylic or ink on paper or fabric. In doing so, Samir is able to give the art of calligraphy strength, dynamic, speed and big shapes that can compete with fine art paintings. This means having equal participation in galleries and museums, too. For Samir, art also presents hope and promise, especially in a region that has become strife with war. “Exhibitions and art events are not only a positive phenomenon but rather a miracle that excites the mind and heart,” he tells us. “How can art exist in the heart of war, distraction, death, pain and this general deterioration that surrounds all our cities? “Logic and art critics say there cannot be art when there is no stability or normal life; there cannot be art activities when the daily social and cultural life is broken,” Samir continues. 48

Personally, in a moment of peace, I look at such events and I see a light, hope, and a promise.” Indeed, there is still hope that art could very well be one of the ways to salvation. Audiences are taken on a long, gripping journey through an arduous and unforgiving landscape, as this story of brutal survival is brought to the big screen. Critics are divided – either you’ll come out the cinema thinking this was a neat and emotionally-satisfying narrative, or you’ll actually see beyond the narrative to recognise the painful events of this historical day.

The Buffet By R. Kelly

He recently declared to Rolling Stone magazine: “I’m not in no lane. I’m music and I just want people to know me as music. Not some R&B guy.” Well, we’ve got news for you Kells, that just isn’t true. Everyone who was into R&B in the singer’s 90s heyday has a story about an R.Kelly song *cough Bump’n’Grind cough* - so, why would he want to stray from that? The Buffet, apart from being one of the laughably worst titles ever (much like 2013’s Black Panties) is R.Kelly’s 14th studio album, for which he penned 462 songs, and spent over two years recording in Chicago. Kells’ new musical offering is simply an 18-track record with plenty of R&B-esque themes and sensual food-based metaphors. In The Poem, the singer promises to “toast” lady listeners “juices all night” and indulge his “bad eating habits” before making a five-second long slurping noise – classy. Then there’s the slinky slow jams and acrobatic vocals of Marching Band; and the emotional apex of the album, Be There, a duet with his once-estranged teenage daughter, who goes by Arriraye. If Kells is looking to step away from his reign as the king of R&B, The Buffet doesn’t really help. Sometimes, it’s just better for everyone if you do stay in your lane.

Hi guys! What can the audience expect from your gig at Commercial Bank Qatar Masters? We hope to deliver an amazing gig, and we look forward to playing all our classic hits. The crowd can expect a great energetic show. What’s the song that tends to go down best with the crowd? There are probably two or three songs that usually get the crowds roaring. You know those energetic songs like Alive and Kicking and Don’t You Forget About Me and such. Songs that people can sing along to are usually the most popular and in demand at live shows. I mean, of course, the opening song always is a big deal and the end song is a big deal to ensure an energetic performance. But one of the things I’d say that completes the experience is the energy between Simple Minds and the crowds. There is a connection there and that’s always something we look forward to. What is your motivation to keep making and playing music? It’s who we are. It’s what we do. It’s how we were born and raised; we’ve been creative since we were kids. It’s not something you get to a level where you’re like “right, I’m going to do five more.” I was up this morning at 5am working on a piece of music that was running through my mind. 52

Like a kid working on a puzzle, I wanted to get into it and that’s how I’ve been since I can remember and I don’t think that’ll ever change. How has your music changed and developed over the years? My God! I mean 40 years, and in that time our music has developed immensely. I don’t really know how it’s changed. But the thing about Simple Minds is we started as a nice rock band then we became a big pop band that some people will call it stadium. We also have some electro people who are influenced by the band and a bit of Celtic music and yet, intrinsically, through it all we are still Simple Minds. We are a fusion of everything and that is what makes us sound like ourselves, Simple Minds. How do you decide which songs to release? What we do is look for things that would work live; it would be focused and have all the main ingredients to make an amazing song. As well, as I mentioned before, we have a great team that helps us make decisions. 54

WITH THE NEW MAXIMA, NISSAN BUILDS ON AN ALREADY EXCELLENT MODEL WITH EVEN HIGHER LEVELS OF LUXURY, FEATURES AND PERFORMANCE. WHEN THE PREVIOUS generation Maxima, the seventh overall, was unveiled back in 2008, it blew everyone away with its style, performance, luxury and sheer presence. The Gulf hadn’t seen a new Maxima in around a decade, as the sixth generation Maxima was simply an Altima rebadged as a Maxima for the US markets. 68

The seventh gen Maxima was such a leap forward for the brand’s flagship sedan that it was going to take some beating. However, for the 2016, eighth generation Maxima, Nissan have pulled out all the stops and come up with the goods. Externally, the design of the Maxima has undergone a significant overhaul, making it look more futuristic and bold than its predecessor. However, the biggest change has come from within. The model we drove was the Maxima SR, one step below the top end Platinum spec, and yet still absolutely packed with options. For example, you have keyless entry and start, heated AND air-conditioned seats, a big touchscreen that can be controlled either by touch or by the rotating dial on the centre console, adaptive cruise control, advance collision warning, flappy paddle gear shifters, to name but a few. Little touches, like the seats moving back when you turn the car off to make

getting out easier, are what make the Maxima punch above its weight in the segment. It’s the design, though, that really stands out with the interior. It’s stylish and modern, with a distinctly premium feel to everything thanks to lots of padded black leather surfaces with white stitching, and white leather seats with quilted stitching on the seat backs really adding a classy touch. The centre console, which is angled slightly towards the driver for that nice cockpit feel, is well laid out and looks great. The interface on the touchscreen, while not the most eye catching we’ve seen, is intuitive and easy to use. The highly competent adaptive cruise control works extremely well, with smooth braking when approaching a car ahead, and it’s much less ham fisted with the braking as versions of the technology we’ve seen in other brands. Nissan’s tried and tested powertrain,

the muscular 3.5l V6 with CVT, returns in the 2016 model, only this time it has been beefed up to produce 300hp and 354Nm of torque. We love the fact that, while everyone else seems to be switching to smaller, turbo-charged four-pot engines, Nissan is sticking to its guns with its beefy V6. The CVT transmission is excellent too, with smooth and rapid shifts, and a constant and impressive power delivery right the way through the ratios. It avoids that awful drone that other CVTs can be prone to, as the acceleration struggles to keep up with the engine speed. In addition, the chassis is almost 40kg lighter, and 25% stiffer, thanks to tougher lightweight materials. All of this amounts to a car that is fast, agile and engaging to drive. Following on from the previous generation, there were big expectations with the new 2016 Maxima, but Nissan have not disappointed. It’s a superb flagship for the brand. fact magazine

Latin Love richard sandoval If you’re a true Mexican food devotee, you’ll be familiar with the name Richard Sandoval. Growing up in Mexico City, this chef-cum-restaurateur was cooking with his grandmother in the kitchen to learn all the tips and tricks for the perfect Latin spread, whilst his restaurantowner father taught him the management and service side of food. With a wealth of experience, the world-renowned chef has just opened up Z Lounge in Doha, a cool dining concept that is part of his upcoming restaurant Zengo. FACT sat down for a chat with the man himself to learn more… Hi Richard! Tell us a little bit about your visit to Doha and the new Z Lounge? Of course! Z Lounge is part of Zengo, it’s a fusion between Asia and Latin America. I’ve recently opened one in Dubai and the idea is to bring the same concept here to Qatar. We have opened the lounge first because the space was already done, but the idea is to later open Zengo and have the concept complete, just like Toro Toro: lounge and restaurant. 84

For those who don’t know about Zengo, tell us more about the thought process behind it? It’s a fusion between Asian and Latin American cuisine. The word is Japanese and it means: give and take, back and forth. It’s the collaboration between two cultures and two chefs. When I first opened Zengo, I brought on board a Singaporean chef and what we did is that I would prepare a Latin dish and he would deliciously “Asianise it” and he would give me an Asian dish and I would “Latinise it.” It worked, because I always believed that Asian and Latin cuisine are somehow similar with ingredients and the profile of its dishes. And the restaurant is based, just like Toro Toro, on a sharing concept. Talking about Toro Toro, how did the idea for that restaurant come to life? Toro Toro was created in Dubai and it all started when Sheikh Maktoum travelled to Brazil and visited a churrascaria (meat place) and fell in love with the concept and flavours. I got a call with the opportunity of doing a churrascaria in Dubai, but a bit more contemporary, and at that time in Dubai there was no concept of a churrascaria.

What intrigues you to do that? Two of my favourite cuisines are Asian and Latin and I enjoy exploring both of them. With Toro Toro, I wanted to expand and explore the entire Latin American cuisine

because it’s quite vast. The first thing that comes to mind when someone says Latin cuisine, you immediately think about Mexico and Spanish. Yet, we forget there are other countries in the pot that make Latin cuisine, such as Venezuela, Peru, Colombia, and more. So, it was important for me to have availability of its cuisine in the restaurant. Nowadays, if you go to a French restaurant and if you pay close attention, you will see ingredients that are not that French, restaurants are no longer ethnic they are part of the globalisation and offer dishes for everyone’s likings. Even in ‘American’ dining, you will see Italian, Greek, Spanish dishes – ready to please the crowd. You were a professional tennis player, what made you shift to becoming a chef? From a very young age, I would see my

grandmother cook for family reunions; I would always gravitate towards the kitchen without knowing that would be my career. It came to a point in my life where I had to choose, and being a tennis player was something I couldn’t sustain from, it was just not in the cards for me. I needed a backup plan, and that’s when I got into culinary school and something weird happened as I started working in the kitchen, the rush I would get was very similar to that of playing tennis! What has been the biggest lesson you’ve learned so far in this industry? I’ve learned the most in failure; it is there where you truly learn. I still get nervous when I open a new restaurant, and that is a sign that it’s truly a passion of becoming the best at my craft. fact magazine

e were pleasantly surprised as we made our way into the beautiful and charming Mamig restaurant, located in Katara Cultural Village, and offering exquisite Lebanese and Armenian cuisine; it’s a sophisticated venue that has become a favourite foodie hotspot for many locals who flock there for authentic fare and, now, as the cool weather permits, to while away the hours with good food and drinks at the outdoor terrace. Mamig has a chic and quirky charm, unlike anything we’ve seen before. Decorated in a style reminiscent of Armenian culture, with a a strong Lebanese touch, this fabulous venue does a great job of combining two divine cuisines, yet giving each equal attention. Everything is harmoniously in place and appealing to the eye. Let’s get to business. Since food is the specialty at Mamig, which offers fresh, succulent choices, we couldn’t wait to dig in! We must mention, the entire kitchen team is made up of Armenian

and Lebanese chefs, providing added authenticity to whole food experience. First out to the table was the famous Matzounov Kebab; a grilled meat dish with tasty spices, walnuts, and yoghurt with garlic. Think east meets west – this dish was popping with flavour and texture and we absolutely adored the lavish bread that came with it. Next up was the Armenian Kebbe, a perfect sharing dish, it’s a concoction of chopped onions, garlic, minced beef, walnuts, pomegranate, molasses and

other tangy spices. This is then fried and the end result is a hearty and flavoursome dish that is sure to please all meat lovers. With our bellies battling to make space for more (everything was just that good!) we later tried the famous Mante. Served hot with an intriguing presentation, this dish is all about the combination of beef, lamb, onion, spices, tomato sauce, yogurt and dough. This impressive dish is polished off with glee, and we’re left with a new favourite on the menu. For those who love the traditional kebab, Mamig also offers a mouthwatering Fishne Kebab, which is a mix of minced lamb, cinnamon and spices, all grilled to perfection, it’s just divine. We are almost ready to pop, but to round off the fantastic meal a sweet dish is a must. Out comes the Sari Boorma with a delectable filling of walnuts, cinnamon, and sugar, which is presented in a roll. This is truly heaven on a plate for dessert lovers! Trying not to count the calories, and with our tummies full, on the way home we were already planning our next visit to this epicurean hotspot… we’ll see you there! A

s you all may know, I’m quite frightened of the pastry kitchen. It’s completely out of my comfort zone, but always proves to be an exciting and learning experience. The cold kitchen in Grand Hyatt Doha is huge. Its daily pastry production is mighty, especially now with a new pastry boutique opened up on the lower lobby of the hotel. You’ll find some pretty delicious sweet treats here, available from 12noon to 11.30pm! Today, I’ll be helping to make some macaroons from scratch, specifically Banana Caramel Macaroons. Let me start by telling you the ingredients; 200g ground almond powder (flour), 200g icing sugar, 50ml water, 200g sugar, two large egg whites, yellow food colouring, and cocoa powder. We start off by blending the ground almond powder and icing sugar to form the perfect fine mix. It is important to make sure that the mixture doesn’t have any lumps; this is to ensure smooth piping later on. Set the mixture aside. The second step is adding sugar to boiling water, and once this starts cooking, add cream to it; this will be the mix for the caramel. Let this concoction turn a nice golden brown colour (it smells pretty awesome too). Just a word of warning, this process involves a lot of hot bubbles so use a deep pot and make sure your hands are safely protected. When the mixture runs smoothly down a spoon, that’s when you know it’s ready. In a kitchen aid, add half the egg whites and the sugary caramel mixture and whisk together. This, as Chef Annemarie explains, is an Italian-style meringue. “I prefer

Italian Meringue,” she says. “It makes all the desserts light, as the pastry, mousse or cream will not come out heavy.” The other half egg white is now added to the dry mixture we set aside earlier, to make a smooth paste. This is the process where the macaroon got its name – in Italian maccarone – meaning paste. Once it’s all mixed well, the Italian

meringue is folded into the mixture, to lighten it up. “The air you fold under in the mixture makes the macaroon rise in the oven when it’s exposed to the heat,” Chef Annemarie says. Now we add the food colouring, starting off with just a little (you can add more later if necessary!) We prepare a baking tray with a baking paper. Then, Chef Annemarie

takes a pen and draws circles – so the macaroons will all be the same size (it’s an intricate task!). We fill our mixture in a piping bag with a round nozzle and follow the drawn circles on the baking sheet. At the end we dust the cocoa powder over the individual macaroon fillings and put the baking tray in the oven. The temperature setting is 170c. Let it cook for 10 to 12 minutes and put aside to cool. In the meantime, we prepare the Banana Cream filling. Put some sugar to boil and let it caramelise to a golden brown colour. Once the sugar has caramelised, we add liquid cream and banana puree to it. Blend this mixture with butter and voila, you’re done! After letting the filling chill for an hour in the fridge, we fill our macaroons and begin tasting – SO good! The filling is deliciously smooth and the macaroons are a perfect texture – winner!
