THE EDITOR

Ramadan Kareem “Ramadan is, in its essence, a month of humanist spirituality.” – Tariq Ramadan

I

t has been two years since I moved to the GCC, and when I arrived, preparations for Ramadan were in full swing. Beautiful tents, lavish Iftar spreads, Sohour events, and, in Bahrain, the popular Ghabgas – I was blown away. This excitement and celebration of the Holy

Month really helped me to get through the fasting with a positive attitude (like most, I was worried about it being too difficult in the Middle East

heat). Now, two Ramadan’s down, I feel completely adjusted and ready for the spiritual 30 days ahead.

We’re helping you to make the most of this year’s Ramadan offerings

with our rundown of all the top spots for Iftar and Sohour in Doha. The

city’s hotels, restaurants and lounges have gone all out to make Ramadan 2015 a memorable one. And what’s great is that everyone can join in the

special celebrations. Check out all that awaits us starting p96. Those of you planning to play host to family and friends during the Holy Month, we’ve got some great tips for creating an at-home Majlis to get you started on

p102 – there’s never been a more perfect time to transform space in your home into a cosy gathering area.

We’ve a lot to celebrate this month too, with the much-awaited

results of the FACT Dining Awards 2015. I have to give a BIG shout

out and thank you to all of you who voted for your favourite venues. We had an astonishing amount of support on social media and through the

online voting. In true foodie style, we celebrated with the who’s who of the hospitality industry at the Doha Marriott Hotel. You can check out all the results and photos from the evening on p17 onwards.

Foodies Unite: P.F. Chang’s Arrives in Doha Discover more of Doha with FACT Finds. Every month we’ll bring you a new hotspot, our favourite happening, eatery, activity, or interesting find from around Doha.

If you’ve visited most of our neighbouring nations you might have stopped by for the famous Dynamite Shrimp at P.F. Chang’s restaurant – it’s fiercely good! And, now, you needn’t look further than our very own doorstep as the award-winning Asian bistro has opened its doors at Villagio Mall. P.F. Chang’s is a casual restaurant offering full service Asian-inspired dining that is innovative, attentive and fresh. The restaurant offers flavours from different regions of China like Hunan, Sichuan, Mongolia, Peking and Canton, as well as cuisine from Southeast Asia. Doha’s new P.F. Chang’s expresses a perfect balance between the Asian tradition and modern American style. The trendy and upscale restaurant maintains its focus on guest comfort, warm hospitality and thoughtful, personable service. The à-lacarte menu offers a variety of signature dishes, all prepared-to-order using only the freshest ingredients. Most dishes at P.F. Chang’s are cooked in a Northern-style Chinese wok at 900-degrees Fahrenheit, creating a “wok hay” or “breath of wok” which results in a mix of unique smoky, caramelised flavours and crispy textures that can only be achieved using this ancient traditional technique. Genaro Perez, Vice President of global marketing for P.F. Chang’s Inc, says: “We are very excited to share the P.F. Chang’s heritage with such a beautiful city, and feel proud to have joined the list of impressive restaurants that are already open in Doha. Our guests to P.F. Chang’s will be able to enjoy not only delicious food but also a sophisticated atmosphere and personalised service.” The restaurant’s lovely opening welcomed numerous guests who enjoyed 8

the delectable menu, eye-catching décor, lively ambiance, and warm hospitality, which are synonymous with P.F. Chang’s in all its worldwide branches. The selection featured some delicious signature items including Dynamite Shrimp, Chicken Lettuce Wraps, Mongolian Beef and Great Wall of Chocolate. Philip Chiang, co-founder of P.F. Chang’s says: “We are confident that our diverse, delicious and fresh menu, combined with our stylish yet laidback ambiance, is a perfect match to the selective taste and lifestyle of the Doha community.” P.F. Chang’s is renowned for its delicious food, so we’ve no doubt that Doha’s diners are going to be impressed! GO: P.F. Chang’s Doha is located on the ground floor of Villagio Mall. RAMADAN

The Gift of Giving With the Holy Month upon us, being charitable becomes evermore important. But whether you’re fasting or not there are some fantastic people doing great things in Qatar and you can quite easily be one of them. Here are just some of the great charities you can contribute to, in Ramadan and beyond…

ReACH ouT To AsiA

If there’s one organisation in Qatar that does great things for humanity, it has to be Reach Out To Asia. Under the banner of Qatar Foundation, and guided by chairman HE Sheikha Mayassa bint Hamad Al Thani, ROTA is constantly coming up with projects to enhance education and training throughout the whole of Asia. They have a pretty extensive volunteer programme as well that encourages Qatar-based citizens to make positive impacts on the less fortunate across Asia. Whether you have time, money or skills, ROTA welcomes anyone to help and on some occasions you may be asked to actually travel to help out where you’re needed. GO: Fill out the online application form at www.reachouttoasia.org or call 4454 1603 for more information.

HoPe QATAR

Everybody needs a bit of hope and even more people need Help, Opportunity, Participation and Education, which is exactly what HOPE Qatar stands for. This private, non-profit training centre kicked off its activities here in 2005 and ever since then has been offering affordable guidance to any and all children with special needs. They are always in need of extra pairs of hands as well so if you have the time, any particular skills or resources that you can spare, the team at HOPE would be more than happy to hear from you. All you have to do is become a member of their online forum, Friends of HOPE. GO: Visit www.hope-qatar.org for more information.

If you’re looking to make a serious mark on the world and change it one country at a time then the Qatar Red Crescent Society may be the organisation for you. The international Red Cross and Red Crescent Societies are world-famous and we’re lucky to have our very own branch here in Qatar. They work in fields 10

fact magazine

like health, development, migration, disaster management, recovery and many more. There are many ways you can get involved whether it’s donating money, or helping out with admin, or putting your technical or medical skills to good use. GO: Visit www.qrcs.org.qa and fill out a volunteer form.

Cats in Qatar second Chance Rescue and Qatar Animal Welfare society

Dogs in DoHA

It’s all good to donate time and money to our fellow humans but don’t forget the furry friends among us either! The team at Dogs in Doha certainly don’t, as they are all volunteers who have set this non-profit organisation up to re-home abandoned or injured dogs and puppies. As a volunteer yourself you can get involved by becoming a foster family or a flight buddy, to take the poor pups out of the country. You can fundraise, or help them with their administration needs. It’s all just a matter of what time you can spare and what skills you can share! GO: Call 6618 4924 or email dogsindoha@gmail.com for more information.

Katrin Scholz-Barth leads Qatar’s eco-warriors

in the battle to go green. She does this by presiding over an independent, volunteerbased organisation called SustainableQatar. It was first started in 2008 by a group of dedicated scholars who shared an interest and it has since grown to become one of the leading environmental committees in the country. There are many ways you can help out the team at SQ and it most of them don’t even take any time and effort; like living a more ecofriendly life, or following them on social media. But if you want to dedicate more of your time then they’re always looking for people to attend their monthly meetings and/or volunteer! GO: Call Katrin on 5516 2764 or email her on katrin@scholz-barth.com.

Displaying an entire body of work that was created exclusively for this exhibition, Ismail Azzam, one of Iraq’s most famous artists, is sharing a selection of striking and emotive charcoal portraits, celebrating and honouring the work of 15 past masters. Ismail Azzam knew many of those featured in the exhibition personally and created artistic and creative contributions, believing many did not receive the critical recognition or popular appreciation they deserved whilst they were alive. The exhibition features portraits of artists drawn from across the Middle East including Egypt, Lebanon, Yemen, Kuwait and Iraq. Amongst these is a portrait of the late Qatari artist Jassim Zaini. Throughout paintings captured key moments in Qatar’s recent history and documented the country’s development from humble beginnings, as well as its social and and the sixties after the discovery of oil. “I am hugely honoured to present my work at QM Gallery,” Ismail says. “With this exhibition, I hope both to raise awareness of these great Arab artists and their stories, but also to continue to educate Qatar’s growing artistic community to understand the meaning behind the art. “I invite everyone to enjoy this exhibition and honour the huge and important

FRENCH PHOTOGRAPHER ISABELLE AVENARIUS’ WORK WILL BE SHOWCASED IN THE “MOSAIQUES – ABU DHABI” SERIES AT FAIRMONT BAB AL BAHR STARTING MID-APRIL. INSPIRED BY THE SKYLINES ACROSS ABU DHABI, ISABELLE’S WORK IS A UNIQUE GEOMETRIC COMPOSITION WHICH INCLUDES SYMMETRIC PATTERNS, AND PAYS TRIBUTE TO NON FIGURATIVE ARABIAN ART. Photography is not just about taking pictures anymore. Images taken on a camera are now manipulated in a variety of ways and play a key and unique role in modern art. Take Isabelle Avenarius for example, her creations for this exhibition include 10 photography mosaic art works that use landmarks and skylines across Abu Dhabi including, Sheikh Zayed Grand Mosque, the Corniche, the Marina, and Khalidiya Palace, among others. To the naked eye the pieces on display appear as traditional mosaics, but upon closer inspection, guests will see some very familiar buildings and cityscapes. Nils Axing, General Manager at Fairmont Bab Al Bahr, says: “Art that encapsulates the wonderful architecture of the UAE always resonates with guests at Fairmont Bab Al Bahr. Isabelle’s photography series takes the monumental buildings around Abu Dhabi and turns them on their heads - literally - to create further works of art. One key element that will intrigue visitors to the exhibition is how Isabelle manipulates scale and size. Her technique involves shrinking the skyline and the landmarks of Abu Dhabi, placing these images into tiles and creating these uniquely themed mosaics.

She states that these works of art are inspired by the modern architecture in Abu Dhabi and its contrasting natural environment. Another unique component is the shape of the art itself. Each mosaic is printed on circular acrylic, 100cm in diameter, which naturally makes them distinctive and adds to their appeal. “Mosaiques – Abu Dhabi” is Isabelle’s latest photography series and follows her “Street” series where she took photographs on the streets of Abu Dhabi, and caught the spirit of the Capital using vibrant colours, long exposure and motion to enhance the dynamism of the fast developing city. Isabelle has been living in Abu Dhabi since 2012 where she has found a new source of inspiration for her artistic work. Using her camera as a pencil, playing with light and movement, she first used canvas as a medium. Her inspiration in various places such as Giverny, Scandinavia and Peru has led to three photo series entitled Natural Impressions I and II and Between Land and Sea. GO: Mosaiques – Abu Dhabi is on display from April 15 to June 30 at Fairmont Bab Al Bahr. Call (0)2 654 3333. fact magazine

The Wolfpack

Highlights

DIRECTOR: Crystal Moselle CAST: Bhagavan Angulo, Govinda Angulo, Jagadisa Angulo

“Our problem is not the subjects – they’re very very intriguing. The issue here is that the documentary seems to only scratch the surface.”

WHY IT’S WORTH WATCHING?

The Wolfpack.

What’s it about? Seven siblings (six brothers and one sister) have grown up in near isolation, locked away from society in an apartment on the Lower East Side of Manhattan. The Angulo brothers have spent their childhood learning about the world through the films. When they venture outside without parental supervision for the first time, everything changes.

We remember when The Wolfpack made its Sundance premiere; it was the talk of the town. This documentary introduces a gang of siblings who have been raised in seclusion in the heart of New York City. They’ve been home schooled and much of their views on the outside world come from a well-stocked DVD and VHS library, which has prompted them to take refuge in play-acting of their favourite films – weird? A little. Our problem is not the subjects – they’re very very intriguing. The issue here is that the documentary seems to only scratch the surface; there are dark suggestions not pursued, mostly centering on Oscar, the father, a Peruvian follower of Hare Krishna who appears to be controlling every aspect of family life. There are also the scenes where it’s more than hinted that the wife, Susanne, may be a victim of domestic abuse. There is more than one elephant in the room here; the fact that social services is aware of this dysfunctional family is swept under the rug, and one of the boys reveals that there was a whole year when none of them left the apartment. It’s the strange yet fascinating, and mysterious, factors at the heart of The Wolfpack that make it so compelling to watch.

“The comedy factor is kept to a consistent, generous and pleasurable level, that doesn’t spoof the espionagethriller genre – in fact; Spy makes it all the more exciting.” Spy.

Spy What’s it about? A CIA analyst working a desk job is reminded that she once had dreams of being a spy. Lucky for her, a new mission requires someone unrecognisable to infiltrate the world of a deadly arms dealer and stop a diabolical global disaster, and so, she volunteers for the task.

DIRECTOR: Paul Feig CAST: Melissa McCarthy, Jason Statham, Rose Byrne, Jude Law WHY IT’S WORTH WATCHING? How amazing is Melissa McCarthy? This woman was made for comedy – she’s hilarious! Along with Paul Feig (director of The Heat and Bridesmaids), everything about Spy is amazing. The writing, the screenplay, and all the laugh out loud, witty one-liners, plus, who knew Jason Statham could do funny so well? The comedy factor is kept to a consistent, generous and pleasurable level, that doesn’t spoof the espionage-thriller genre – in fact; Spy makes it all the more exciting. Both Melissa McCarthy and Paul Feig have a commitment to comedy, and from their proven track record, everything they touch, turns to comedy gold (excuse the cliché). Spy is brimming with gigglestuffed scenes, hitting the zeitgeist, hard! fact magazine

Hold Still: A Memoir With Photographs By Sally Mann

FOLK/INDIE-ROCK

Beneath The Skin By Of Monsters and Men

Who remembers that infectious single Little Talks? It was this catchy song, and the platinum-selling debut album My Head is an Animal that shot the Icelandic chamber pop group onto the international music scene. Now, with a solid fan base in all corners of the world, Of Monsters and Men (OMAM) is back with their highly anticipated 15-track follow-up. If the first single, Crystals, is any indication, it’s clear that OMAM hasn’t lost any magic. The warm-hearted band’s grand-scale, folk-pop sound is as alive and robust as ever with chanted choruses, uplifting beats, and the noise of thundering drums. Where the first album was very story-based bringing out the ‘monsters’ side, Beneath The Skin is for ‘men,’ with a heavier, darker element and more open-minded lyrics and musical sensibility. It’s just OMAM being more up front. And we love it. Iceland might be small but its music continues to outshine that of countries 10 times its size. This sophomore release is already exciting fans; and you don’t have to be a music genius to guess that this too could be a global hit.

Get To Heaven By Everything Everything

Mercury-nominated, genre-defying, highpitched, frenetic pop – there are so many cool adjectives we can use to describe the Manchester-based quartet, Everything Everything, and their sound. We were late to the party and only fell in love with this band after the release of their contagious single Cough Cough back in 2012 (thanks to Greg James on Radio 1), and it was the falsetto-voiced lead, Jonathan Higgs, who kept our attention. His natural range is rich and soulful and his tongue-twister raps, will have you trippin’. On Get To Heaven, the band’s third album, we hear more of the math-rock movement, merging guitar intricacies, complex afrobeats and electro whistles. The best thing? Everything Everything are committed to this off-kilter approach to music, and with this 11-track CD, they’ll make you embrace and believe in the genre-marauding style even more. In other words; the album is INSANELY good.

“His natural range is rich and soulful and his tongue-twister raps, will have you trippin”

Acclaimed photographer Sally Mann has crafted an original form of personal history with a unique interplay of narrative and images. Sorting through boxes of family papers and yellowed photographs she finds more than she bargained for: deceit and scandal, domestic abuse, car crashes, clandestine affairs, racial complications, vast sums of money made and lost, and maybe even bloody murder. Pick up this revealing and beautifully written memoir of Sally Hann to indulge her past-life. A pageturning and gripping novel.

The L.A. Girl Goes to Saudi By Melissa Hartwig

A story about Dina Ahmed, a girl who has lived in L.A. all her life, when one day she gets a phone call from her wealthy family back in Saudi Arabia to come back and see her ailing father. She has to leave her party girl lifestyle of all-nighters and clubbing, for the veiled world of Saudi Arabia. She develops faith that takes her away from the superficial world of L.A. and onto a spiritual journey that is Islam. We needed a suitable vehicle for our FACT Awards Road Trip, in which we would visit all 140-odd nominated venues, and we were to do it in one day – the mother of all road trips the length and breadth of Abu Dhabi with three team members, luggage and equipment. We needed something big, comfortable, and yet easy to park or manoeuvre through busy streets and hotel forecourts, that was easy on the fuel but quick enough to get us from A to B (and the rest) in a timely manner. It’s almost like this role was written for the Touareg… A quick call to VW confirmed that the new 2015 model was available, so I picked up our vehicle, the luxurious V6 SPORT. We came to know the entertainment system intimately, as we spent practically the entire journey switching from smartphone to smartphone, iPhone to Samsung and back, playing whichever mp3s or internet radio stations were being selected by the in-car DJ of the hour. Apart from slight delays updating the on-screen track info, the system handled it all without fuss, connecting to any phone we threw at it almost instantly via the USB port. Also handy was being able

to charge all of our phones at the same time via the two power outlets and the USB port. My only initial reservation about the car was the engine. Almost the entire Touareg range comes with the 280hp 3.6l V6 mated to an eight-speed auto, with the exception of a V8 in the top-spec R-Line. The V6 initially felt a bit sluggish to me, but the benefits of this engine soon became apparent. It has a claimed consumption of 9.9l per 100km/h, and I fully believe it. Unbelievably, on our endurance road trip, we only had to top up the tank once. As you can imagine, a 14-hour car journey can lead to frayed nerves and worn tempers amongst even the closestknit teams. The same goes for vehicles. After a long journey in a car, seemingly minor irritations can turn into massive annoyances by the end. However, after 14 hours there was simply nothing about the

Touareg that had gotten on our nerves. Quite the opposite – we’d all developed quite an affection for the car. It had been a comfy living space that had made a potentially awful journey that much less unpleasant, with comfy seats, a good stereo, a panoramic sunroof, and plenty of pockets and cubby holes to stash junk in. It had been a pleasure to drive, with a smooth, comfortable ride, and very easy to pilot through the streets thanks to a great all-round field of vision, assisted by the 360 degree parking cameras. So the verdict is thus: The Touareg is the perfect white-collar workhorse. Whether you’re a crew of media types with equipment, a beleaguered parent hopping from school to shops to sports fields, or a civil engineer visiting remote sites in rugged terrain, the 2015 Touareg will deliver everything you need and more from a vehicle, and do so with a smile and a comforting pat on the back. fact magazine

PLUGGED-IN

Virtual reality (VR) has a chequered history. Those of you old enough to remember the virtual reality gaming machines that sprung up in arcades in the early nineties will also remember how incredibly crap the graphics and gameplay were! At the time, gaming giant Sega attempted to develop a VR project for home use, but poor feedback and limited processing power of the console put paid to the idea. As a result, initial excitement over ‘the future of gaming’ gave way to apathy and it just sort of faded away. And for many years it stayed that way, with development instead pouring into the 3D industry for cinemas, and then home entertainment systems. Some of these home entertainment systems even supported 3D for certain gaming platforms, as long as the game was compatible. However, it’s not until recently, with the significant advances in processing power of the PCs available for personal use (for a cost, that is), that a VR headset like the Rift has become viable. The units use an inertial measurement unit to detect the movement of the head, and dual displays positioned directly over the eyes to give a fully immersive experience. With most games these days offering a full interactive 3D world in which you can look all around you using the game controller, adapting that for a headset was simply the next step. The Oculus Rift is by no means the first, or the only VR headset currently in development out there – there are similar headsets being developed by HTC, Sony and other lesser-known developers. For something truly unique, check out the Google Cardboard, a free-to-download design for a headset that you cut out of cardboard, and stick together, with two eyeholes, that works with an app to create a VR headset through your very own smartphone! However, the Rift is most likely the only one you’ve heard of. This is because the developers have been extremely smart in their strategy, beginning the Oculus Rift project by raising funds as a Kickstarter. Anyone who

donated a certain amount would get a ‘Developer Kit’, which was basically a prototype of the headset. These prototypes were upgraded as development continued, but this meant that software developers, gamers and others could get their hands on the headset and participate in the development process. As a result, this allowed them to get a head start in the field, and combine their development and marketing strategies successfully to make the Oculus Rift the device that everyone was talking about. The plan paid off, and Facebook acquired Oculus VR in early 2014 in a deal worth well over $2billion! As a result of their successful strategy, it is the Oculus Rift that is the device being talked about, tested and used by people all over the world. We came across it recently ourselves at a Fiat event in London, where we viewed a specially developed visual presentation for the car through the Oculus Rift, and it was mind-blowing! More recently, the Yas Marina Circuit in Abu Dhabi had an Oculus Rift experience at its launch event for the 2015 Abu Dhabi F1 GP. We’re now also seeing more and more videos online of game hackers who are adapting the Rift to work with titles such as the hugely successful Grand Theft Auto V, with impressive results. It’s not perfect yet, but as new major gaming titles are released, you’ll see more and more that are compatible with the Rift, especially on PC. There is already a significant list. The uptake of people willing to develop software that is compatible with the Rift, and the apparent ease of adapting it to existing software, is what will firmly establish it as the go-to choice for VR headsets, much as the iPhone did for smartphones all those years ago. We promise you that this hardware heralds the arrival of Virtual Reality in a big way – it’s affordable, it’s adaptable, and it’s playable. It’s the future!

“One of my main inspirations is using natural raw ingredients in its natural form, I use and portray ingredients in what it’s supposed to be, I don’t try to alter its taste.” – Chef Alford

hef Alford recalls his interest in cooking and how it all started at a young age: “I used to spend a lot of time with my grandmother as a child,” he says. “So, I was bound to help her with cooking and dessert making and I really enjoyed it. She said I was a natural, and I believed her.” Now, Chef Alford is at the helm of the beautiful new restaurant in Doha, The French Olive. The venue is stunning with a large open space stylishly adorned with small and large tables (catering for both intimate dinners and groups of diners) and trendy light fixtures hanging from the ceiling. The interior has brick walls, wooden panels, plant pots for décor and simple yet pretty tableware. According to the venue’s website, it is a fashionable and hip eatery (that, we agree!). It’s stylish, from the eclectic interior design and divine cuisine to the uniforms and service style; everything is very ‘Now’, very chic, and very cool. There is an air of creativity and excitement here; the atmosphere is vibrant, the menu intriguing and the perception on healthy eating is refreshing. Much of the use of ingredients and the innovative menu comes from Chef Alford having a particular interest in food trends. “I am interested in healthy cooking, and 84

vegetarian dishes because people are becoming more ‘health conscious.’ It’s important for me to give the people what they prefer.” We were ready to tuck into Chef Alford’s tasting menu that he had prepared for us. Up first was appetisers; Arancini, Bruschetta, Polpette Di carne, and Caprese Salad. Presentation was delightful and we finished each dish with zest. Everything was light and fresh, and we loved that the ingredients had not been manipulated in any way. “A tomato has to taste like a tomato,” Chef Alford says. “I like to keep things simple and not make it all fancy. In addition to that, I prefer to give the guest something that they expect to taste; presenting the dish the way it’s supposed to be, not doing too much improvisation to it.” We love it! For mains it was pizzas; Quatro Formaggi, Sorrentina, Diavola; Pastas: All’arrabbiata, and Fusilli al Pollo; Mini-Hamburgers, and Osobucco Alla Milanese. The pizza was a standout – not too heavy at all and just delicious to taste! The pasta dishes were packed with wholesome flavours that had us wanting more. Everything so far was more

than palate pleasing. Chef Alford tells us that he prefers desserts to savoury food, so we were excited to try a selection of assorted mini desserts by a man who has a sweet tooth himself. Simply exquisite! Who knew how yummy bitesized red velvet cakes would taste? They’re scrumptiously good. We love that Chef Alford spent many years in Italy working with renowned chef Gualtiero Marchesi, as well as being an Italian food aficionado at home when cooking for his family too – this means that diners are getting the real deal. Of course, there’s always an added touch of modern cooking trends. As the foodie lovers that we are, we didn’t hesitate and jumped into the tasting with gusto. A must-try appetiser has to be the Bresaola with warm smoked buffalo mozzarella wrapped in crispy pastry; the perfect starter for an all-authentic Italian culinary journey. For those who crave to eat with a smashing view, this place offers a dazzling one of Qanat Quartier and the Arabian Gulf with choices of dining inside, or on the outside terrace. Next up was a divine pasta dish; Spaghettoni with Roman Pecorino cheese and black pepper. Yum! Also, we couldn’t say no to some succulent roast potatoes

to accompany this mouthwatering main. As for any sea lovers out there, we suggest sea bass fillet with Sicilian couscous and gremolata mix herbs. The fish is cooked just perfectly and we love its flavourpacked taste. Last, but by no means the least, dolce! For the coffee devotees, Tiramisù is the choice for you. We also devoured Pannacotta di riso (we just couldn’t get enough of these delicious desserts). The dining experience at Antica Pesa is made all the more great with the welcoming and efficient Italian staff. We fell head over heels for this new restaurant which adds a new magic to the Marsa Malaz Kempinski family. Now, it’s your turn.

CUCINA DE BADIR For this month, Cucina De Badir is featuring one of Doha’s most extraordinary chefs in town: chef Zarmig. This incredible woman has brought her very own blend of authentic recipes to the all Armenian and Lebanese restaurant, Mamig, at the Katara Cultural Village.

CUCINA DE BADIR

“Your eyes should eat before your mouth” is the motto that chef Zarmig lives by in the cooking industry. ‘Mamig’ meaning grandmother in Armenian, gives its customers nothing short a warm cultural experience. The beautiful scenic terrace, which is designed to create an Armenian and Lebanese infused atmosphere, was the perfect place for a cosy chat with the vibrant chef Zarmig. With her catalogue of scrumptious (and secret) recipes, this unstoppable chef promises all guests will leave the restaurant with a delicious taste of the perfect fusion of Armenian and Lebanese cuisine. The Mamig kitchen, where all the action takes place, is designed to represent the unique mix of flavours – despite the dynamic and hurried pace, the FACT team and I were welcomed with enthusiasm. So, needless to say: a mesh of coats, hats and recipes awaited me! As chef Zarmig made her way through her natural habitat (the kitchen!) her attention to detail and perfectionist work ethic was entirely visible from the onset and something to admire. “Your eyes should eat before your mouth” is the motto that chef Zarmig lives by in the cooking industry. With that in mind, surrounded by the colourful ingredients and spotless work space, I didn’t need any more motivation to start blending and cooking. We started off with one of the famous Armenian salads: Haygagan Aghtsan. This salad included finely chopped parsley, tomatoes, onions and cucumbers that were cut into small cubes in a strict geometric manner! These ingredients were later drowned in a delicious sauce - a mixture of olive oil, lemon juice and dried mint. Hopping onto the next delectable salad, we decided to make the Kilisi Aghstan, also known 92

as the Granular Groats Salad. The sauce alone was enough to awaken your taste buds in the best way, but as ever, you have to work hard to hold back your tears as you chop two onions! Next you chop two tomatoes into small cubes and fry them with some yummy olive oil. After doing that, you add chili paste (not more than two tbsp) to your tomatoes before you finally add cumin, a half a cup of lemon juice and two cups of Groats/Burghul. With a little bit of mixing and blending you’ve got yourself one mouthwatering oriental style salad! Next came the appetiser, Cheese roses with Basterma/ Vart Boereg Bastermayov, which was definitely one of the most delicious appetisers I’ve tasted in a while. We got our hands ‘dirty’ on this one, by starting off with making the dough. We mixed five eggs and a cup of vegetable oil and added as much flour as we needed to get its consistency right. The stuffing was a mix of cheese and Basterma where we divided the dough into four pieces and made them into a couple of layers covered with melted butter which we then cut into square shapes and filled them. And then fried

and done! Last, but certainly not least, it was time to get stuck into making the famous Armenian dish, Fishné Kebab. We used one kilogram of minced lamb meat mixed with around 200 grams of lamb fat and cinnamon (add spices if preferred, we used seven). After the mix the Fishne (two cups of wild cherry) one tbsp of each of the followin:, sugar, salt, cinnamon, lemon, salt, and two cups of water. Cook it for no more than 10 minutes. Decorate the plate

with lavash bread then add the meat over it, and sprinkle some parsley over your work of art. Ending this fantastic experience of delicious food, amazing company and fabulous service, my belly was filled with happiness! Nos vemos en la próxima Cucina De Badir. S

ince its opening in 2007 Pier 12 has earned a deserved reputation for excellent food and unbeatable service. Complimented by friendly staff decked out in snappy sailor uniforms, not hard to commandeer at all, classical wooden ship wheel and fish net draping along the walls, the ambience inside is inviting and sophisticated catering to couples and groups of friends, in the evening. With the sole intention of bringing you all some delicious easy-to-make seafood starters for your next party, Mr Cucina De Badir headed to Pier 12 at Radisson Blu Hotel to check out the venue, cook some food, and try the tantalising flavours of this popular seafood eatery. been a pleasure to work with and learn from this charismatic and humble chef, so I was eager to get started. The restaurant provides only the freshest and most mouthwatering fish. Take the salmon, for example, it comes directly from Norway. I was all set for this culinary journey with my chef ’s hat on! First up was an extremely popular dish - Kilawin; a Filipino-inspired menu item. If a fan of fresh salmon and ceviche, this dish is the perfect appetiser for you. So, we start off by cutting small salmon pieces, and mixing these with a bit of salt, garlic, onion, jalapeño, lemon juice, and green and red pepper (add a good amount of vinegar to the mix). Let it sit in the fridge for about 40 minutes to one hour. With the mix already marinated, we drain the fish and add some coconut cream and spring onions to it. My friends, if you’re looking for an Asian twist, this dish will sweep you off your feet; and it did, because I couldn’t stop eating. Every last bite was packed with a punch of flavour, yet the dish was surprisingly light.

If you’re nuts about crab you might want to try the Alaskan Crab Cake; a super easy dish to prepare. So, while we kept on eating our tasty Kilawin we started prepping for this next dish. To a bowl with shredded crab inside, add oil, pepper, parsley, garlic, mustard, salt, egg and mayonnaise. Later with the help of Chef Luca, we mixed the ingredients all together to get a solid mixture. As soon as you have the desired consistency, prepare to shape the miniature cakes then dip a crab cake into some flour, then into the egg yolk, finally into some breadcrumbs, and fry away - delicioso! For that final touch of flavour add tartar sauce; a mix of mayonnaise and chili, and for that extra exotic taste we added some mango with

The dish was simply delightful and I tucked right in, polishing off the crab cake with gusto! Pier 12 is best known for its Bouillabaisse, a classic hearty dish of vegetables and seafood, garlic mayonnaise and fresh bread. There’s everything from tenderloin

and lobster to a variety of non-seafood options too. Appetisers hint at delights to come and range from fresh ahi tuna tartare, grilled scallop salad and grilled Portobello mushroom crab. All main dishes come with seasonal potatoes and vegetables and as a complement; exotic sauces like Thai green curry, lemon butter, soy-sake, and lobster butter or white vino enhance the distinctive flavors. We know that Badir had a fabulous time getting to see behind the scenes of this fantastic foodie favourite and trying some its delicacies. Now it’s your turn! a Majlis is...

fInd a spaCE A Majlis doesn’t have to take up a whole room. A corner of a large living room or the empty space in an entrance hall will do. You can either buy yourself some of the comfortable patterned Arabic couches or take existing furniture you already have and decorate it with accessories and cushions to give it that Arabian feel. Floor cushions are also a very popular and traditional alternative, and make for very relaxed seating. Check out the homewares section on www.littlemajlis. com for everything from soft furnishings, to tea towels, lighting and so much more.

HospItaLIty A very strong aspect of Arabian culture is hospitality, and this is especially relevant in a Majlis. You will be expected to serve traditional tea, coffee, and delicacies when you receive guests, and many families use this as an opportunity to demonstrate their hospitality prowess! It is all about being unique and memorable. A sure winner is serving some authentic Moroccan tea in ornate teapots. And, from what we’ve heard, the drink Vimto plays a big part – if you’ve got Vimto on tap all evening, then you’re really celebrating Ramadan! Or how about setting up your own shisha at home? This will surely impress your guests!

CuLtuRaL aCtIvItIEs If the gathering is one with close family and friends, why not take it in turns to tell some fables and stories? Put a modernday twist on the pastimes at your Majlis with a good supply of fun board games. Everything from Monopoly to Guess

Who? and Operation! Go old-school and get everyone involved for a game of Dawama (spinners!) or Kairam (wooden game board with four corner pockets), the options are plenty. A deck of cards to hand is always good to keep boredom at bay.

aCCEssoRIsE It’s important to set the mood and ambience with all the little touches expected at a Majlis. It can be as simple as having some candles with calligraphy, decorating your shelves with ceramic plates and cups, or even dotting the area with handcrafted ornaments like Arabianstyle lamps and lanterns or mosaicdecorated show pieces. Incense is key to getting the aroma of the setting right. Oud is the most popular and can really help to create an oriental atmosphere.

tasty tREats Tajines are Moroccan cooking implements that are already popular as household ornaments around the world. Colourful and pretty to look at, they make great decorations for tables and unused corner arrangements. However, they can be functional too – fill them with different sweets and arrange them artfully around your Majlis. Serve up a good variety of traditional desserts like basbousa, kunafa, baklava, maamool, halva, Luqaimat, and dates with various fillings, and even a mix of nuts. Try your hand at makig Umm Ali, a favourite in Ramadan, and serve it in separate bowls or pots, like desserts at a buffet. This way, guests can pick and choose what they like. Savoury food options can also be served.

TELL US YOUR FAVOURITE CULTURAL HOTSPOTS IN DOHA...

THREE DINING VENUES YOU WOULD RECOMMEND IN DOHA AND WHY...

WHAT DO YOU LOVE MOST ABOUT LIFE IN QATAR?

I most certainly enjoy every visit to The Museum of Islamic Art (MIA) and I think it’s exceptional. I remember the first time I visited MIA and I was in a rush and to be honest I thought it’s ‘just’ interesting. The second time I went and we used those devices that brief you about the pieces they have. And to my surprise, I was fascinated with the history behind each piece at the museum. MIA is not just a hotspot it’s a destination; you can spend an entire Saturday there and will not get bored. You can start with the Museum itself then a cup of coffee or lunch with a view.

I guess I will start with Isaan, Grand Hyatt Doha. Thai food is definitely one of my favorite cuisines, and if in Doha, I would only eat Thai at Isaan. The staff, the food, and the CURRIES! I can eat those curries every day. The second venue would be Mykonos, Intercontinental Doha. Being Alexandrian, I favour Mediterranean cuisine and I love this restaurant because it reminds me of a Greek eatery back home. Hakkasan is internationally known for exceptional Chinese cuisine, but for me it’s more than just food. I feel like a princess every time I visit that restaurant.

I always thought life is very simple and it’s what you make out of it. Doha is the perfect example of that. It has a bit of everything; it’s where east meets west. People are relaxed, friendly and intriguing. I met many nationalities that I never thought I would meet in my life, I made many friends and I really enjoy living here. A hidden gem, for me, is definitely Souq Waqif. Of course, many know it but as a shopaholic it’s great, and it’s a lovely place for coffee or dinner. The things you can find here are unbelievable, you just need to be patient and dig carefully.
