And, just like that, the Holy Month of Ramadan is upon us. In Qatar, this is a time not just for fasting and reflection but also when people from diverse backgrounds come together as one. In our cover story, residents of different nationalities and occupational backgrounds share their unique views of Ramadan in the city. We also take a look at the dos and don’ts of fasting and, conversely, we’ve put together a great list of some of the special Iftar and Ghabga offers across Qatar to help you choose the best place to break your fast or just get together with friends for a fabulous feast. Pre-Ramadan, there’s much to see and do with the return of the Qatar International Food Festival and a whole raft of happenings from Qatar Creates – I’m definitely looking forward to the chef masterclasses and workshops taking place at Lusail. Maybe I’ll see you there.

I’m slightly envious of the fab food my colleagues have been sampling this month but the one I’m really jealous of is lovely Luke, who got to spend the day at the hip, new hangout, Fuwairit Kite Beach. I doubt I have the fitness for flying across sand or waves attached to a kite these days but a girl can dream, right? Specially when you see the pics of this funky, fun, venue.

The exciting new restaurant is located in the Sheraton Grand Doha Resort & Convention Hotel and marks 7Management’s second franchise, owned by Gourmet Premium, an up-and-coming hospitality group in Qatar.

Lucia’s Doha will be able to host a total of 638 guests and boasts both indoor and outdoor seating.

Having made its mark in Dubai with its Capri aesthetic that amassed a legion of fans, Lucia’s Doha looks to bring a similar burst of sharp colours and a playful style with plenty of greenery that will instantly transport guests to the magical Mediterranean. The restaurant’s menu consists of sophisticated yet authentic selections that will leave diners thoroughly satiated. Guests can expect an exciting selection of Mediterranean delights including a plentiful Crudo Bar, the freshest salads and antipasti faves such as Italian Burrata with Mixed Tomatoes and Olives, Arancini Sicilliani and Bresaola.

The menu also boasts delectable pasta dishes, including Lobster Linguine, Tagliatelle Alla Bolognese Di Wagyu and Mushroom and Truffle Risotto. Uniquely, pizzas will feature on the Doha menu, with guests treated to mouth-watering creations like Pizza Al Tartufo, that combines mozzarella, parmesan cream and shaved black truffle.

In celebration of Italian cuisine, the freshest seafood and grilled meats will feature, boasting showstoppers such as a 1.2kg whole, salt-crusted sea bass that is filleted at the table and Grilled Wagyu Beef Tenderloin served with Black Pepper Sauce. There’re further treats in store with the Lucia’s Dessert Platter and Tiramisu Classico, amongst their amazing sweets selection.

Food lovers rejoice! The much-loved Qatar International Food Festival is back.

The Qatar International Food Festival is a Qatar Tourism initiative celebrating the country's diverse food, beverage and hospitality offerings.

This multicultural culinary event is the country's biggest gastronomic celebration, which also includes various workshops, live cooking classes by award-winning chefs as well as exciting daily entertainment for the entire family. The 12th edition of the Qatar International Food Festival is set to be held from March 11 to 21 at Lusail Boulevard, a diverse and unique shopping, commercial and residential destination. The timings are from 2pm to 11pm on weekdays and from 2pm to 1am on weekends.

Foodies from Qatar and around the world look forward to attending this celebration of wonderful cuisines and experiencing the numerous delicious preparations be it fancy fine dining or amazing street food. All while enjoying a picturesque outdoor venue that sets the scene for a memorable and mouth-watering experience. During the 11-day festival attendees can indulge in

a large variety of exciting food options be it from numerous international cuisines to popular and muchloved Qatari specialities.

Along with the fantastic food, visitors will also be treated to amazing family entertainment that includes live music from local traditional folk bands and others, DJs, carnival games, a live cooking stage, various food-related workshops, a thrilling firework show and much more. Qatar Creates is organising a host of exciting events encompassing art, culture and creativity to be held in March.

Qatar Creates, the year-round cultural movement and a platform for arts and culture in the country, has announced its upcoming spring and summer public programme of art exhibitions, film screenings and creativity workshops. The various events highlighting art, culture and creativity will be held from March 10 to 18, as follows:

The 2023 Tasweer Photo Festival Qatar runs from March 15 to May 20. Tasweer is a biennial programme comprising exhibitions, awards and discussions between photographers both from Qatar and other parts of the world. On March 15, it will debut two prominent exhibitions – A Chance To Breathe and Doha Fashion Fridays.

Opening on March 17 at the Mathaf: Arab Museum of Modern Art is the exhibition Beirut and the Golden Sixties: A Manifesto of Fragility which revisits a turbulent chapter in the development of modernism in Beirut and features more than 230 artworks and 300 archival documents from nearly 40 collections worldwide.

Also, on March 17 at the Mathaf: Arab Museum of Modern Art is the exhibition I Am The Traveler And Also The Road featuring recipients of the 2021 and 2022 Tasweer Sheikh Saoud Al Thani Project Award grants.

Opening on March 19, Olafur Eliasson’s first solo exhibition

in the Gulf region titled Curious Desert will be showcased at the National Museum of Qatar. The outdoor installation consists of 12 temporary pavilions that the artist considers an artistic laboratory in the desert. Taking place from March 19 to 21 is Qumra. The start of the ninth edition of Doha Film Institute’s (DFI) annual industry incubator event, Qumra 2023 is crucial to the success of first- and second-time filmmakers from the Arab world and beyond. It is an initiative that seeks to provide mentorship, nurturing and hands-on development for filmmakers from Qatar and around the world and this year’s event returns with a hybrid format of in-person and virtual sessions.

Qatar Creates has also partnered with Clown Skateboard x Paris Saint-Germain on the release of an exclusive capsule collection that combines skateboarding, apparel, and digital art. The launch event will be held on March 15, at Doha Fire Station. ✤ GO:

Qatar Airways is to become the Global Partner and Official Airline of motor racing’s worldwide flagship, Formula 1.

Leading global airline Qatar Airways and F1, the pinnacle of motorsport and the world’s most technologically advanced racing series, will be partners through the 2027 season. Qatar Airways announced the expansion of its sports partnership portfolio at an event held at Lusail Boulevard in Doha.

In addition to the global partnership, Qatar Airways will also be the Title Sponsor of three Grands Prix during the 2023 season: The Qatar Airways Emilia Romagna Grand Prix, Italy (May 19 to 21), the Qatar Airways Hungarian Grand Prix (July 21 to 23), and the Qatar Airways Qatar Grand Prix (October 6 to 8). The Formula 1 boasts its most global racing calendar to date with 23 races across 21 countries and five continents being held this season, mirroring the motorsport’s rapidly growing footprint worldwide and the extensive global connectivity offered by Qatar Airways as part of the Oneworld Alliance, which serves more than 150 countries.

ARTISTICALLY MINDFUL

An interesting art exhibition highlighted the influence local art has on raising environmental awareness.

The Burooq: Art and Environment Exhibition which looked to make a serious effort in merging the Qatari environment with art was held at Zekreet Desert.

The event was organised by Al Hosh Gallery and took place on February 26, which coincided with the Qatar Environment Day. The Minister of Environment and Climate Change HE Sheikh Dr Faleh bin Nasser bin Ahmed bin Ali Al Thani opened the exhibition.

The Minister toured the exhibition and was informed about the paintings and other artworks on display. He noted that the event is a new type of modern art that aims to promote the local environment and plays a significant part in contributing to the public and visitors’ knowledge of the great biodiversity that’s part of Qatar’s environment. The exhibition highlighted the importance of creating artistic conditions that contribute towards caring about

art and the environment and developing different creative ideas that raise awareness on the importance of Qatar’s local biodiversity.

Part of the exhibition was The Coming by Sheikh Hassan Al-Thani. In his work, the photographer presented the state of anticipation experienced by Qatari and Gulf people. The exhibition also included artwork presented by a group of young ambassadors that highlighted sustainable development goals. The group comprised youth aged from five to 18 years who work towards spreading community awareness on sustainable development issues. ✤

An exciting and interactive Pup-Tacular event is in store for everybody at the PAW Patrol Festival.

PAW Patrol, the computer-animated children's television series, will be hosting the first ever PAW Patrol Festival, a one-of-a-kind event offering hours of interactive and family-friendly fun, in Lusail, Qatar.

Organised by EventBox in partnership with Qatar Tourism and Nickelodeon, the PAW Patrol Festival will be held from March 2 to 18, at Place Vendôme over a purpose-built 3,000sq/m space.

This unique and interactive family event celebrates the globally loved PAW Patrol franchise, created by Spin Master Entertainment.

Staged for the first time in a fully immersive manner, the PAW Patrol Festival invites festival-goers to unleash their inner hero and step into Adventure Bay with this all-new experience.

The spectacular event combines all the best that PAW Patrol has to offer, from stage shows, to various fun kids’ and family activities, to meet and greets with the pups, photo opportunities and much more.

The event will take place in three sessions daily on weekdays (Sunday to Thursday) at 3.15pm, 4.45pm and 6.15pm. On weekends (Friday and Saturday) there will be four sessions, with an extra one at 1.15pm.

The hit animated preschool series, PAW Patrol, stars seven heroic rescue pups - Chase, Marshall, Rocky, Rubble, Zuma, Skye and Everest - who are led by a tech-savvy boy named Ryder. Together, they work hard to protect the Adventure Bay community believing no job is too big, no pup is too small! The series features a curriculum that focuses on citizenship, social skills and problem-solving. At the exciting event there will be numerous interactive and educational games for attendees, such as learning the rules of road safety with Chase, helping Zuma to rescue animals, fighting the fire with Marshall, flying like Skye, recycling with Rocky or seeing drawings come to life on a screen in the augmented reality colouring workshop.

There will be various themed play areas, including the Pup Park for the little ones. They will also have the opportunity to meet PAW Patrol’s Chase and Marshall after each show and take photos.

FASTING

Although deeply spiritual in nature, Ramadan is mostly recognised (to non-Muslims) for its requirement of fasting from sunrise to sunset – this means no food or fluids even water, though for youngsters just beginning to fast and those who have recognised medical conditions, the restrictions may be eased.

It’s important to recognise the impact this abstention can have on the body and take precautions to protect your health. When the calories from your last meal are used up, the body will seek energy from carbohydrates stored in the muscles and liver.

When you don’t eat for long periods of time and the calories from your most recent meal have been used up, your body will start to use the carbohydrates and fat it has stored in your liver and muscles.

Hunger pangs are likely as you begin your fast and many Muslims actually start going without food for shorter periods before Ramadan to prepare themselves. The hunger should lessen after around a week as your body acclimatises to your new routine but you may experience constipation, mitigate this with healthy food choices during Iftar and Suhour and drinking plenty of water.

IFTAR

Prophet Muhammad (PBUH) traditionally ate dates to signal the start of the Iftar meal and this is something many Muslims still do, particularly in our part of the world. The fruits are packed with fibre, which helps digestion, and rich in fructose to replenish blood sugar levels. Foods like rice with fish and meat are popular but remember it’s also important to eat a variety of vegetables to maintain balance and slow-releasing carbs like beans to quell hunger during the fasting hours. There’s often a temptation to tuck into lots of high sugar, high fat foods for a quick energy hit at the end of your fast but resist. Save the treats for Eid!

SUHOUR

The meal before sunrise is crucial for those who are fasting – even if it means waking up really early, this is the food that sustains during the hungry hours and skipping it can affect the ability to fast.

Oats, eggs, cereals, yoghurt, wholegrain bread, fruit and nuts are all great foods to eat at Suhour. They’re healthy and fibrous, but they’re also slow-releasing and filling, giving the nutrients necessary to last throughout the day. It’s a good idea to avoid caffeine as this can be dehydrating.

Top Tips

● Don’t overeat at Iftar – eat slowly.

● Eat foods rich in water, for example soup and yoghurt.

● Avoid salty foods – they will make you thirsty throughout the day.

● Limit the amount of unhealthy/junk food you eat.

● Drink plenty of water.

● Eat colourful fruit and vegetables.

● Go for a light walk after Iftar to aid digestion.

I have a three-year-old son. Since he was a newborn, we have tried to do Ramadan decorations and lighting, as well as bring him gifts such as lanterns. We also learn about the Ramadan Crescent, praying and the vibes and we participate in food sharing with our neighbours. In his nursery, they do activities to help him remember Ramadan and Islamic concepts.

We are Egyptians and Ramadan is completely different in our country. But we love Ramadan in Qatar because it is a little quieter at work than in Egypt, and there are many nice vibes for things like Garangao and Ghabga, as well as many different buffets everywhere.

There are many new customs and traditions that children are learning, especially with the advancement of technology and social media platforms. It's difficult to fast with the kids, but most of the morning my son is in nursery and I'm trying to keep him hydrated and feed him because many fasting parents forget to feed their children while fasting!

I would advise parents to avoid being nervous while fasting, to be careful with hydration for their small children and to feed them in the morning. As young children should not fast before the age of seven, we are the only ones who can teach them about fasting.

I have been in Qatar nine months. It is particularly nice to speak about Ramadan because Muslim Americans find it harder to celebrate and enjoy the Holy Month. I am expecting this Ramadan to be more fulfilling and not as lonely! For instance, working hours in the USA are not adjusted and I really did not know anyone apart from my immediate family who would be fasting. Here my hours will be adjusted and shorter than normal and my colleagues who are Muslim will be fasting . In Qatar, I will be able to hear the call to prayer and go to my local mosque for Taraweeh prayer. During the Holy Month, I like to organise boxes of food for poor people with my family and distribute them. Other times we gather collections and purchase meat for those less fortunate. I hope to continue the same traditions in Qatar with friends.”

I manage a healthy food restaurant and our timings in Ramadan are from evening until the early hours of the morning. We have both locals and expat customers. I recommend people try salads and healthy main courses for Iftar as they will give you the energy required after a full day of fasting but with fewer calories.

To keep myself healthy while working the long Ramadan hours, I take proper sleep, eat a balanced diet and I drink more water during the night so I can manage my hydration in the daylight hours.

Exhibiting confident body forms, the new Venue is based on Hyundai Motor Company’s Global Design Language of ‘Sensuous Sportiness’, delivering a perfect match of a sporty, dynamic, and powerful design.

The dark chrome front grille with a unique design encapsulates the new Venue’s powerful and imposing look, while the bodycoloured bumpers and front skid plate design enhance the sporty quotient.

Prominent bonnet lines express a bold character, while innovatively designed LED projector headlamps retain a distinctive charm.

The profile lends a bold appeal with bridge-type roof rails adding sportiness while the dual-tone finish adds flare. The latest INFINITI QX80 is available in three grade levels –Sensory, ProActive and Black Edition – each of which comes with standard INFINITI All-Mode Four-Wheel Drive.

The 2023 QX80 seamlessly blends aesthetics and functionality. The vehicle’s appearance is angular, athletic and bold. Acer has unveiled an innovative bike desk that charges your laptop while you pedal and work.

Acer has launched the eKinekt BD 3 bike desk that allows users to simultaneously work and exercise while also generating their own clean electricity.

The eKinekt BD 3 converts the kinetic energy from the rider’s pedalling into an electric charge that powers the machine. One hour of constant cycling at 60 revolutions per minute (RPM) on the bike desk can generate 75 watts of power which can then be utilised to charge laptops and other devices.

The desk can be used in two modes – in Working Mode, the desk surface moves closer to the chair to let riders sit in an upright position while typing and pedalling. While in Sports Mode, the desk top sits further forward, giving users more room to lean in, similar to the position on a standard bike or trainer.

Technology company Dyson marks its first step into the wearable technology market with the futuristic-looking Dyson Zone – a set of noise-cancelling, high-fidelity over-ear headphones with a detachable visor for on-the-go air purification.

Born from Dyson’s 30 years of expertise in airflow, filtration and motor technologies, the Dyson Zone headphones are engineered to tackle the dual challenges of city noise and air pollution. They’re capable of simultaneously delivering immersive sound to the ears and purified airflow to the nose and mouth.

The compressors in each earcup draw air through the duallayer filters and project two streams of purified air to the wearer’s nose and mouth, channelled through the non-contact detachable visor. Electrostatic filters capture 99% of particle pollution as small as 0.1 microns, whilst K-Carbon, potassiumenriched carbon filters target prevalent acidic gases most associated with city pollution.

The noise-cancelling headphones provide ultra-low distortion audio, advanced noise cancellation (ANC) and faithful, fullspectrum audio reproduction. The ANC system uses eight microphones to reduce the sound of the city by up to 38dB and monitor surrounding sounds 384,000 times a second. A unique EQ setting optimises the frequency curve for clear, pure audio across the full audible frequency range.

The device is powered by advanced lithium-ion batteries and uses USB-C charging. The headphones offer 50 hours of audioonly run-time or four hours of combined purification and audio run-time. They charge to 100% in three hours. ✤

Reencle changes food waste into organic gardening superfood using a high-tech composter.

The Reencle Prime food waste composter transforms the way we handle our food waste and helps convert it into useful compost that’s highly beneficial for the garden.

The composter uses ReencleMicrobe – a microorganism that reproduces itself when cultivated and fed well. It is naturebased and converts food waste into effective fertiliser. ReencleMicrobe is derived from food and is harmless to the human body and the environment.

Regardless of the type of food leftovers, the organic ReencleMicrobe is extremely halotolerant and acidophilic, and works uninterrupted when tasked with breaking down food waste even with high levels of salt or acidity.

The compost is ready to be used in a matter of hours (depending on the type of food waste) and can then be spread on top of the soil in gardens, on lawns or on indoor potted plants, releasing rich nutrients into the soil.

Samsung Electronics has launched its latest premium android smartphone the Samsung Galaxy S23 Ultra. The new model showcases its ultra-level of capabilities in numerous categories starting with the 6.8-inch Dynamic AMOLED 2X display with a resolution of 3,088 x 1,440 and features a slight curve. In Conversation with… Ammar Samad

Moving from managing one hotel to overseeing four must have been a huge change. How many rooms, outlets and staff are you responsible for across the properties?

As the Multi-Property General Manager, I look after four hotels across three brands. The cluster has a total of 870 rooms, 11 dining venues including restaurants, bars and cafes, four spa venues, and a total of 490 associates all well-experienced and trained to provide the highest level of service.

How do you manage to keep on top of everything? Do you have a specific system for addressing operations, staff etc?

I always say that I am as good as the people that I work with. Surround yourself with the best talent and lead the team in building a culture of putting people first – which is our Marriott Philosophy. But the most important thing is caring about the people and caring is about actions, not just words. It’s how our people will know that I have their back and will stand by them.

Caring creates trust and trust creates loyalty. Loyalty is what makes good people stay and take care of the business. I make sure that there is open communication among the team and the leadership because when people have good relationships with their leaders, they’re more motivated, they perform better and they’re more likely to go the extra mile to support the team.

What were the challenges in preparing the properties and associates to open in the run up to the world’s biggest sporting event – the World Cup?

The biggest challenge was the very short timeline to accomplish a lot of tasks. The team had to accomplish six months’ worth of preparation in 30 days for each hotel and ensure that we would open on brand and ready to deliver exceptional service to exceed guests’ expectations.

It was a lot of hard work but in the end, truly rewarding. We successfully hosted two football teams and fans and we have received great feedback on their stays in our hotels and the service of the team.

And, now that the World Cup is over, how will you position and market the properties for the future – what are their individual USPs?

All our brands – Delta Hotels by Marriott, Element by Westin, and Autograph Collection – are new in the Doha market and what is exciting is that each brand caters to a different target market from short stays to long stays, business, groups and leisure. Delta Hotels provides seamless service that allows guests

to focus on what’s really important – and that is to get their work done. Centrally located in West Bay and just in front of the B12 beach, the hotel is the best place for both leisure and business travels.

Element by Westin has a casual and vibrant atmosphere together with its ergonomic design, quiet nooks, sun-filled spaces and family amenities which evoke the feeling of home. This is the perfect place for long and short stays.

Al Samriya Hotel, Doha, Autograph Collection is a truly unique property. It is a collage of treasures that brings together lively stories, historic cultures and natural wonders. It is a reflection of the Qatari culture and hospitality. Located on the Al Samriya estate, this is the childhood home of Sheikh Faisal bin Qassim Al Thani, an abode that’s evolved through affection and devotion – a place that celebrates stories and the activities of his upbringing. Guests can drive out of Doha and be transported to a sanctuary providing rest and relaxation with the many activities on the estate such as horse riding, visiting the oryx reserve, a trip to the FBQ Museum and connection to nature.

On a more personal note, how do you like to spend your time when you get away from work? Do you have a secret talent that would surprise our readers?

When I am away from work, I always make time to be with my family and friends. I still find time to watch documentaries, especially historical ones, and enjoy reading. Another of my hobbies is playing basketball – where I get to really relax my mind and unwind. ✤

FRENCH FLAIR IN THE HEART OF DOHA

The renowned Chef Alain Ducasse recently visited Qatar for the launch of the new menu at his restaurant IDAM and FACT got the chance to quiz the culinary hero on what’s in store and more.

IDAM has been operating since 2013. Why did you choose Qatar for your first venture in the Middle East?

Opening a new venture is always the result of many considerations – competition, opportunities, feasibility, among others. The most decisive factor rests on the identity of our partner. To work with Qatar Museums and its commercial arm, IN-Q Enterprises, immediately appeared as a unique opportunity. With the Museum of Islamic Art as the venue, I found it absolutely gorgeous from all points of view –architecture, exhibition and scenery. I value cultural sites as they are an incredible source of inspiration for me.

IDAM is said to be French cuisine with a Mediterranean twist and local flavour – how do you imbue these Mediterranean and local flavours?

IDAM’s cuisine offers mixed and various influences. The Mediterranean slant is mainly illustrated by the seasonings such as marjoram, tarragon, fennel and chives which bring a unique flavour. You'll also find pistachio or lollo rosso (red lettuce) or citrus (lemon, orange, grapefruit) in our cuisine, which are popular in Italy and widely used throughout the Mediterranean region. We are also inspired by the culinary heritage of the region. As a tribute to the Arabic world, we use laban, loomi and dates in some of our recipes. However, I would also mention another influence: India, with its

spices. Let us not forget that the Arabian Gulf has long been one of the routes through which spices were transported from Asia to Europe. Countries’ and regions' preferences for tastes and flavours were then greatly influenced.

All of these influences were combined harmoniously and creatively using French culinary techniques to define the IDAM flavours.

How do you choose the chefs who will represent your brand?

My teams are a mix of professionals who have been working with me for many years and others, such as Chef Fabrice Rosso, who is a recent addition to the team. I choose them according to their experience and, more importantly, their personality. I wish all of them can express his or her distinct talent.

The design concept for IDAM comes from another iconic Frenchman, Philippe Starck. In your opinion, how big a part does a restaurant’s design play in people’s enjoyment of the food? The client's experience is truly holistic. Everything is important. Every little detail matters. There is the tangible aspect, which refers to the food and beverage quality. There is also the intangible, which includes the service style, the beauty of the tableware and the harmony of lighting and music. Architecture makes an important contribution. It establishes the tone even before the client takes a seat at the table.

Qatar has many brands associated with Michelin-starred chefs but, thus far, no Michelin stars. Could the revamped IDAM be in the running? And how important is the Michelin opinion?

Michelin ranking is very important. However, doing our best to offer the clients a great experience, a cuisine with a soul, in harmony with who we are and where we are is of equal importance. All the best if the awards, accolades and stars come along.

ON A PERSONAL NOTE

How and why did you first become involved in the culinary world?

To cut a long story short, I knew from a young age that I wanted to be a chef. Where did that come from? Probably because I grew up on a farm, where I was exposed to nature and ate delicious meals prepared by my grandmother. Then, I had the good fortune to work with great professionals like Michel Guérard, Roger Vergé, Gaston Lenôtre and, the most important influence for me, Alain Chapel.

How do you like to spend your time outside of the kitchen?

One of the greatest pleasures of my life is to walk around in openair markets. Wherever I travel, I always allot time for these visits. I enjoy learning about local food resources and producers. I love to discover the local food resources and the producers. My other passion is to explore flea-markets. I collect antiques related to culinary arts, such as tableware or cake moulds, and I use many of them in my restaurants to create a unique ambiance.

Do you have any secret/hidden talents?

Certainly not! The secret of success is very simple: work more, quicker and better. ✤

Vivek Singh, Executive Chef and in-charge of Food & Beverage at Centara West Bay Hotel & Residences Doha talks a sky-high culinary journey and progressive cuisine.

You have spent the past 10 years as head chef with two of the region’s biggest airlines. What prompted you to come back down to Earth with a hotel position and how do the two styles of catering differ?

Starting my career with hotels was like love at first sight, I never felt I could fit in at any other place. Then, out of nowhere, in 2013 I received an opportunity to fly with Etihad Airways as chef onboard, hence my journey in aviation started. I was blessed in true terms to visit places, try authentic food and interact with masters of cuisine in different corners of the world while getting paid. Cooking at 40,000 feet was an experience which cannot be explained, interacting with celebrities, presidents, business owners while preparing meals for them in the first-class cabin of the A380 helped me to develop interpersonal skills and learn to be a true ambassador of hospitality. I oversaw the Expo 2020 operation with Emirates airline and later the first and business class lounges of the world’s biggest airline; Emirates lounge was my last adventure. I have been away from hotels for almost a decade and Centara West Bay Hotel & Residences Doha is the perfect place to start another decade-long journey in hospitality to make memories and friendship. In my experience hotels and aviation are very similar in terms of hospitality, passion and service.

Who has been the biggest influence on your culinary career?

All of my mentors and the amazing chefs I have worked with for the last 16 years. Everyone has had a big influence on me. There are endless names, too many to count.

You’ve recently launched a new menu at Dalchini. Please talk us through the process of how a new menu is created. Dalchini is a hidden gem which I recommend everyone to try if Indian cuisine makes you curious. It takes the most innovative and progressive approach to one of the oldest cuisines in the world. Dalchini Social Brunch is the best; we have to surprise you! New menus are created by listening to your guests – it’s as simple as that.

What is your favourite item on the new menu and why?

Patta Chaat – we’ve taken the most humble street food and converted it into a theatrical display of the most progressive Indian cuisine. It consists of dehydrated kale leaves served on chickpeas with tamarind and mint. It’s a flavourful starter prepared live next to your table with NO2 for effect. Do not miss this experience when you next visit Dalchini for Brunch. ✤

FOOD, MUSIC, THE PERFECT MIX

Soulful entertainment, relaxed surroundings and a fine dining feast were on the menu for Ailsa Whyatt at Sax.

It is a truth universally acknowledged that striking a balance between dining and entertainment is hard. If you are trying to eat then music can be too loud, if you are trying to party then fine diners can seem out of place. Not so for the new Sax at St Regis, Doha, which opened in November 2022. Finally, we have a place to go where the two combine in perfect harmony in this low-lit, intimate setting, radiating with comfort and opulence. Here you will find low marble tables, large chairs, gold-leaf lamps and tubular panelled walls from which you can watch the daily live music (9.30pm), and then watch in astonishment as the DJ booth rises out of the stage on a scissor jack, for the set at 11pm. We are sitting inside tonight, in prime place to see the band, but don’t miss out on trying the outside terrace – complete with the coolest retractable roof I have ever seen, and that includes Wimbledon – for the chic, leafy environs, live music and the famous Sax A-Go-Go offer of unlimited selected beverages and nibbles from 6pm to 8.30pm Monday to Thursday and Saturday and 4pm to 8pm on Fridays, you can even get behind the bar and serve your own drinks, should you fancy!

The lovely Nadine welcomes us and shows us our table, after which we are greeted by General Manager Saleem who expertly guides us through our evening. Mixologist Lara treats us to two of her new creations – an Orquidea (think piña colada but with a twist), and a Misaki (lemon and cucumber freshness with a wasabi kick to wake you up for the evening’s entertainment!). Served in a smoking cloche and beautifully crafted with hand-carved clear ice cubes, the Misaki is garnished with a curled cucumber roll, upon which sits a redcurrant with gold-leaf as its final touch…

A warm bread basket is placed in front of us – a brioche bun containing cheese and walnut, and another with figs in, as well as

some mini baguettes. All have the right amount of crunch on the outside and soft doughiness within. A selection of starters is brought forth: there is so much to choose from on this menu, where sharing is the approved modus operandi, that you could come here many times over and have completely different meals each time. A refreshing and colourful Beetroot Artichoke Salad, adorned with a purple tuile that perfectly matches the colour of the beetroot, containing hints of lemon, mustard seed and tarragon, and some hidden plump raisins goes well with the Guacamole in Cones, which are served standing up in what looks like a bed of mini coffee beans, salmon caviar sprinkled on top.

Arancini Mushrooms Truffle come mushroom-y and oozing with cheese from within, and Saleem is careful to ensure we try it both without and then with the delicate heat of the tomato sauce and truffle oil. My guest and I are divided in our opinions, statistically proving that there is no wrong answer to the question, ‘To sauce, or not to sauce?’. Next we dive into Beef Tataki, which is tender and peppery, with nutty sesame flavours on the nose. It has a kicky sweetness from the maple soy ponzu sauce and glorious fiery red from the togarashi sprinkled around the edges of the plate. Also favouring our table are Salmon Tartare and Brie in Filo Dough, but for me the real star of the show is the Shrimp Macaroni. Decadent, creamy truffle with al dente morsels of prawn. In short, homely cheesy, goodness: pasta, cheese, truffle, crustaceans and live music; life is pretty good…

Saleem brings out Chicken Roulade and Seared Salmon –both beautifully presented on sultry earthenware. The chicken rolls are stuffed with colour (sundried tomatoes, spinach and mushrooms), each on a bed of mashed potato and surrounding

some roasted garden vegetables, served with a voronoff sauce made with onions, garlic, Dijon mustard, cream and just a hint of beetroot. Our salmon is tenderly presented ‘mi-cuit’, with perfectly sautéed spinach (cooked in lemon, garlic, olive oil, salt and pepper), alongside some crunchy, herby potato fondue cylinders. A lemon oil and Grenobloise sauce lifts the flavours, adding a citrusy lightness.

Desserts replace our savouries, and we are wondering where we will find space for the Mini Tarte Trio and the Tiramisu. The Trio is a vanilla cheesecake drizzled with berry compote, sitting inside a thick biscuit cup (my guest actually does a little dance when she tries it, she loves it so much!); a lemon meringue cup, where zesty lemon sits beneath fluffy Italian meringue, in a sweet pastry cup; and a milk and dark chocolate tart, which is solid, dark and rich – a chocolate purist’s delight. The Tiramisu is light, creamy and served with coffee caviar and gold leaf on the top, and we are relieved to take some time to listen to the wonderful band (Latino tonight, but pop, soul and jazz are also regularly on the menu), and then the DJ whilst we endeavour to digest at least enough to move from our chairs.

As Sax themselves put it, “the music acts as a conversation starter, not a conversation killer,” and tonight we have talked, listened and sated our appetites. We have been well fed and watered, entertained and the elements have combined into an evening as balanced as the scissor jack-rising DJ booth! ✤

A NIKKEI TRIUMPH

Ailsa Whyatt discovers the wonders of Nikkei food, experiencing Japanese and Peruvian fusion at its absolute best.

Have you ever been to Japan and Peru in the same night? Not to brag, but I have. St Regis Marsa Arabia Island, The Pearl plays host to Chotto Matte; famed for its Nikkei food, where the worlds of Peru and Japan collide in an explosion of flavour.

From the moment we step out of our vehicle we have people politely and unobtrusively assisting us. The service in both hotel and restaurant are top notch, and we are immediately drawn in to the ‘urban jungle’, where greenery is nestled amongst lava stone features, shou sugi ban wood, Japanese-inspired art walls and neon lights, not to mention the live sushi counter and flaming robata grill stations.

An extraordinarily talented DJ serves us a mixture of commercial and Latino music to accompany our evening, whilst Riza our server talks us through the history of Chotto Matte, Japanese for ‘wait a moment’. Luckily for us, there is little waiting. Executive Chef Juan David Ocampo, a Colombian who has studied under many of the greats, is the steady hand who guides his chefs through the fusion of flavours.

We have Shishito Peppers to start – think padron peppers, glazed with ‘old school’ Japanese den miso (ground fermented soya beans, for a touch of glorious sweetness) and two ceviches; the Chotto Ceviche and the Lychee Ceviche (a vegan version, where fish is replaced by lychees). The sea bass sashimi in the Chotto is chunky and meaty, and both ceviches have leche de tigre made using yellow chilli and yellow tomatoes, rather than the more traditional fish juices, then served with nutty, crunchy Peruvian corn, sweet potatoes, chive oil and coriander. Fancy something with decadence? Go for Yellowtail Nikkei Sashimi. I rather eloquently wrote ‘OMG’ in my notes, but fully stand by this. The yellowtail comes with juliennes of cherry tomatoes, jalapeños and onions, and is then drizzled in yuzu and black truffle soy (which is where my initial articulate comment originates from). If that wasn’t enough, there are shavings of crunchy purple potatoes scattered on top. The whole thing is divine and I’d frankly like to eat it every day for the rest of my life, please.

We have a selection of nigiri and sashimi. Each nigiri is served with its own burst of flavour on top – do try the Hotategai; scallop on rice crowned with sweet and rich nori jam. A little bite of heaven. O-Toro is also stunning and packed full of flavour; decadent fatty tuna upon which kizami wasabi salsa sits alongside an edible flower. From sushi rolls we have the superb Prawn Tempura. Perfectly balanced crispy prawn, snuggled against some al dente asparagus and Peruvian chilli. All come with Chotto Matte’s signature soy sauce, which is infused with bonito flakes – delicious, absent in cloying salt that is so often the mainstay of soy sauce and ever-so-slightly sweet.

Next is the Robata Grill. I could mention the gentle fruitiness of the apricot on the Nasu Miso, the perfectly chargrilled flavour and beautiful contrast of green with red in the BBQ Huacatay Broccolini, the succulent chicken thighs set upon dairy-free soy and coconut yoghurt in the Pollo Den Miso, but I really want to talk about the King Oyster Mushroom Tostadas. If you are a fan of pulled ribs, or indeed anything pulled, then order the Toastadas. I know, it’s a vegetarian dish. Try it and then let’s talk… A gentle,

smoky heat curls around the mushrooms, cooled by guacamole and lime and just a hint of coriander. I can’t even. Also perfection was the Asado De Tira – beef braised for three hours, shrouded in a rich, teriyaki jus and resting on a purple potato purée, into which hickory-smoked cream has been infused. It is hearty, warming and thoroughly scrumptious.

Before we move to desserts, I must tell you about the sips. Bar and Lounge leader Roman Tanasiev is a creator and mixologist extraordinaire. Try something from the Tokyo to Lima list: my personal favourite is La Chakana – an outstanding smoky, smooth and earthy creation, served with a lava stone containing wood chips on the top, and then blow-torched in front of you. From the Marsa Arabia list, I loved the Fuji – light and full of apple and cucumber freshness, served with a bubble of smoke, which pops a few seconds later. These drinks are balanced, delicious and unique. I love the creativity and imagination that has gone into them, and I shall certainly be back to sample more!

Now desserts – Passion Fruit Crème Brûlée, Hazelnut Yuzu Bun and Magic Chocolate Ball. The crème brûlée is served with chunks of pineapple soaked in non-alcoholic sake, complementing the all-important crunchiness of the passion fruit brûlée. Edible flowers and touches of mint lift this dish to a perfect blend of sweetness and tart. The Yuzu Bun is a lemony crema, sitting inside a choux bun, with matcha cream and tiny shards of matcha biscuit sprinkled on the top. It is a delightful way to round off any meal. If you fancy a bit of flare, go for Magic Chocolate Ball – on arrival, molten chocolate is poured over the ball to reveal a warm treacle cake and dulce de leche ice cream. Pure indulgence!

A SONG OF ICE AND FIRE

Ice-cool precision meets fiery innovation at Provok restaurant and lounge. Ailsa Whyatt visited the new hot-spot at Fairmont Doha.

Entering Provok is like walking into an ice palace. The mirrored walls, picked out with blue and green glassware, seem built from great blocks of crystal or diamonds. A flock of glass swallows flies overhead between crystal chandeliers. Outside, the building is wrapped around by a spectacular sky balcony with views right across the city and out to sea. At night you will feel like you are being suspended in the starry sky. Our attention is caught by movement to our right. Inside a temperature-sealed chamber, an artist is creating original ice sculptures before our very eyes. We dare to step inside for just a moment, breath misting, to watch him chip, cut and shape the ice into an undersea landscape.

As the DJ turns up the beat, we climb a glowing glass staircase from the aquamarine tones of the 33rd floor to the 34th, where instead of ice it’s all about fire. Pale blue, green and silver are replaced by glowing copper and orange. But the two contrasting spaces are bound together, manager Emilio Moscati explains, by both style and substance, elevating the culinary arts to a precise science. Alongside Fairmont Executive Chef Andre Kaiser, Provok’s Head Chef Taimoo Sun has curated a gastronomic experience like no other, remixing flavours from his native Korea and across Asia drawing on deep technical knowledge and an irresistible sense of fun.

The bar is set impressively high with our entree: Qatarifornia. This reimagination of the California roll sushi with fresh Alaskan crab is topped with a delicate petal of gold leaf and, inside, gilded again with an original aioli that uses golden Arabic coffee to create an umami explosion with every mouthful. own blend, fermenting the better-known Japanese and Korean soys together with a sweeter Indonesian for unique balance. Chef Taimoo is the only chef in Qatar to have secured a contract to import Miyazakigyu. This most sought-after of Japanese Kobe Wagyu beef comes from 100% Tajima black cattle of the Miyazaki province and is known for its snowflake marbling. He serves it precision-cooked and sliced, basted with a yuzu beurre blanc with shavings of black truffle. The texture is extraordinary, like butter, and its richness is lifted by the accompaniment of purple carrots and broccolini fermented using the Korean kimchi method. We are tempted to devour every last bite.

Next comes a deep purple curl of octopus, braised low and slow for hours with niban dashi, a softer second fermentation of the traditional Japanese stock. It’s sweet and meaty, the flavour ignited by the heat of aji amarillo sauce, the spice precisely calibrated for a satisfyingly long, slow burn.

As the spice factor rises, the mixologists step in. Their creations are visually breathtaking. The Red Wave is topped with a rubyred print of Hokusai’s iconic painting, rendered on top of the foam, while Japanese Mist exudes bitter orange and chicory woodsmoke. The Fairmont’s mixology lab is unmatched, with a dedicated team devising ambitious flavour combinations including their own cutting-edge non-alcoholic spirits. Mixologist Matias Radici and his team suggest choosing something with a slight sweetness to balance the heat, so we pick Suppai, blending cooling aloe vera with pomegranate, yuzu and egg white for a virgin sour, and Shiokarai, which adds depth to the floral sharpness of pink grapefruit and orange blossom with their own artisanal zero-alcohol salted-caramel distillation. These cooling concoctions complement the next volley from the kitchen. Seafood Tteok-Bboki is inspired by the cult Korean street food of chewy rice cakes spiced with gochujang chilli paste. This iteration is elevated by slicing the tteok-bboki delicately thin and turning fiery sambal into an elegant velouté, enrobing lobster, shrimp and scallops in a generous riot of complementary textures. Hot on its heels arrives another Korean classic, chimaek crispyfried chicken. Served as bite-sized lollipops, these crunchysweet mouthfuls are served with sour daikon kimchi before being plunged into the cool fires of green-chilli aioli. To complete the

trilogy comes Hongkong Night fried fish. Fine powdered potato starch gives the outside the lightest crunch while preserving all the flavour of the flaky, fragrant flesh within. Fermented black bean and garlic sauce over mushrooms provides a sweet maltiness while fermented lemon zest grated like golden snow over the top adds brightness through the deep umami finish. The flavours are diverse and stimulating, but there are throughlines that lead us to the heart of Chef Taimoo’s culinary mission. For him, the secret to creating unforgettable dishes is all about umami. Identified a little over a century ago in Japan, umami is one of the five basic tastes alongside sweet, salt, sour and spice. It’s the one that makes your mouth water and crave one more bite. And at Provok, the pursuit of umami is a precise science. There are many ways to increase the umami impact of a dish: through the ingredients, like mushrooms, ripe tomatoes and meats; through heat by smoking or roasting; through curing with salt or sugar. But for Chef Taimoo, and increasing numbers of the most ambitious and creative chefs around the world, there’s one weapon that beats all and that’s fermentation, used for millennia to add uniquely satisfying depth and complexity of flavour right from the off. In the kitchen we have the rare privilege of seeing the ‘mother system’, the fermentation station where the magic happens. Its results are the star performers in all Provok’s most spectacular dishes. The proof is quite literally in the pudding. The chocolate lid of what looks like a classic opera cake melts under hot caramel to reveal layers of miso cream, alternating striped white shiro, tan shinsu and dark aka miso, deeply satisfying savouriness tempered with coffee and chocolate. To wash this down, steaming tea poured from a beautiful bamboo-handled pot stirs up a spoonful of cultured kumkwat compote hiding in the bottom of our cups, turning our black tea into an aromatic citrus journey. Sated and inspired, we sip our tea as beneath our feet Doha glitters like a carpet of diamonds below the palace of fire and ice that is Provok. ✤

Luke Bennett sampled the delights of Qatar’s newest hip hangout.

Situated within a natural lagoon in Northern Qatar is the ultra-trendy Fuwairit Kite Beach Resort (FKB), part of the Tapestry Collection by Hilton. Having newly opened in October 2022, this energetic establishment has a whole lot more to offer than just a kite surfing experience. Upon arrival, you’ll instantly acknowledge this is not another glamorous resort to add to Doha’s hotel scene; instead, FKB is a riot of vivid colour and exudes a relaxed atmosphere that resonates throughout the buildings, team and guests alike. Walking into the spacious central hub, which is a hive of activity, your eyes are immediately drawn to the vibrant, contemporary street art and scattering of quirky décor that reflects the surfer lifestyle of West Coast USA/Hawaii. This funky theme reverberates throughout the whole resort and is cleverly fused with iconic Arabic images to pay homage to their Middle Eastern roots. The main restaurant is located in the bustling central hub, with the option to dine indoors or take a seat on the outdoor decking that overlooks the scenic beach. Neighbouring the restaurant is the chilled Hang Loose bar that offers a variety of snacks and beverages to enjoy whilst casually swaying on wooden swings or comfortably reclining on longue-like seating. Still rejoicing in the casual ambience, we took our seat for lunch, and had the pleasure of meeting the Head Chef, Christian, who enthusiastically explained their upcoming launch of a new menu.

Throughout our visit, we sampled a selection of FKB’s artisan burgers that combined chuck and brisket beef to form juicy, fresh patties. Firstly, the Mushroom Swiss Burger, as the name suggests, celebrates the flavour and texture of mushrooms partnered with the flavoursome beef patty that was blanketed with an enjoyable amount of Swiss cheese – all housed within a light potato bun that pleasingly held its shape after each delicious bite. The Surfer Cheese Burger utilised the distinctive flavours of cheddar cheese and the clever addition of pickles balanced out the richness of the velvety cheddar. Without doubt, the standout for us was The Cowboy Burger! A mouth-watering stack of salty, crispy beef bacon shards; a substantial coating of smoky barbecue sauce; a bed of sweet,

caramelised onions; and the meaty beef patty oozing flavour all made for a memorable and outstanding burger. If burgers are not for you, do not fear! You can select from an assortment of sandwiches, pizzas, poke bowls or local dishes. I would highly recommend the Beef Steak Sando. A perfectly toasted baguette brushed with a punchy mustard sauce encasing tasty strips of tender rib-eye beef combined with Swiss cheese and slightly sweet, crunchy onions. The pizzas served up at FKB are simple yet effective. Thinly based with lightly charcoaled crusts made for a pleasurable texture and a selection of toppings, from turkey and mushroom to pepperoni or grilled vegetables, all deliver on the taste front. Having previously worked at Curio Al Rayyan, Christian utilised his experience of cooking local cuisine to serve up a delectable mound of Chicken Majbous. Each generous piece of chicken thigh offered a delicious, crispy exterior yet the fibres of meat remained satisfyingly succulent. To add a slight twist to this well-known dish, the chicken thighs are skilfully prepared with a combination of cardamon and loumi, which provides a hint of zest to complement the rich tomato flavour that runs throughout the rice. A lavish scattering of crispy, dried onions added a desirable ‘crunch’, and the accompanying cucumber yoghurt mixed with cumin gifted a freshness that completed this flavoursome, moreish dish. For the sweeter-toothed diners, I would definitely suggest ordering the decadent Molten Lava Cake. Carving my fork through the perfectly crunchy exterior of the chocolate fondant resulted in a gratifying explosion of a warm, gooey interior, enhanced with the addition of a cooling quenelle of vanilla ice cream. Another equally impressive dessert was the Blueberry Cheesecake that combined the classic crumbly base with a smooth wedge of cream cheese lavishly topped with a fresh blueberry compote. Both dishes are great options to end your meal and leave you smiling and satiated. As previously mentioned, Fuwairit Kite Beach Resort is not just for kite surfers; they have a vast range of outstanding facilities to ensure that non-surfers enjoy their stay too. An egg-shaped outdoor pool surrounded by ample seating will please any sun worshippers or catch a movie in the evening at their open-air cinema. A keen footballer or more of a volleyball fan? You’re in luck as you can enjoy both with separate beach volleyball and beach football courts or, if you’re more comfortable with a racket in hand, then check out the padel courts serenely situated at the far end of the beach. If that wasn’t already enough to excite you, guests can flex their muscles at the state-of-the-art, expansive gym with floor-to-ceiling windows ensuring a modern and well-lite space, or hold their lotus pose within an idyllic yoga pavilion that overlooks the picturesque beach.

Throughout our stay, we were highly impressed with the friendly, attentive and relaxed service from all the FKB crew throughout the resort, and we will certainly be making the trip back up north. Boasting 40 pristine, modern, beach-facing rooms and 10 which are resort facing, Fuwairit Kite Beach Resort has filled a gap in Qatar’s hotel offerings with a unique experience that truly evokes the sense that you are on holiday. ✤

Positioned Southwest of Sri Lanka and India, about 750 kilometres from mainland Asia, The Maldives is an archipelagic country formed by 26 natural atolls consisting of 1,192 islands.

Kandima Maldives is located in one of the most remote atolls in the Maldives, namely the Dhaalu Atoll. This farflung location is, however, accessible via a short 35-minute domestic flight from Male International Airport to the airport in Dhaalu Atoll itself.

From there, it’s a quick, yet staggeringly beautiful, 20-minute boat ride to the tropical island. Alternatively, you can take a 45-minute seaplane flight, skimming low over the reefs and lagoons of the Indian Ocean, straight to the island’s arrival jetty.

As we approached our destination, we were taken aback by the large natural lagoon and lush tropical surroundings. Stepping onto the overwater wooden jetty and warmly welcomed by the resort staff, we knew we had just landed in paradise.

OCEAN POOL VILLA

We were housed in the Ocean Pool Villa for the first two nights. These ultra-stylish villas offer the best of both worlds. With their semi-beach, semi-overwater positioning, we enjoyed both easy access to the beach and uninterrupted views of the Indian Ocean.

The overwater private deck and pool were the ultimate spot to cool off and take in the flawless nature of our surroundings. These comfortable and stylish villas have everything one could need for a relaxing holiday. Room highlights include free wi-fi, a mini bar, an in-room entertainment system complete with 40-inch LED TV and a freestanding bathtub with an ocean view.

SUNRISE BEACH VILLA WITH SWIRL POOL

For our last two nights, we got to experience the Sunrise Beach Villa with Swirl Pool. Set right on the main beachfront, these spacious villas are perfectly situated on the eastern side of the island with instant access to the white sandy beach.

In each villa of this kind, a private deck extends towards a swirl pool that offers endless views of the surrounding turquoise waters. As well as the above, there is also a semi-outdoor bathroom with a tub, a rainfall shower and comfortable day bed, ideal for simply lounging.

SMOKED BEACH

On our first night, we were treated to an upmarket dining experience at Smoked. This modern grill house is well known for its open-concept kitchen with a custom-made Parilla grill and giant homemade smoker. A wide range of dishes, including succulent steaks, smoked ribs, fresh fish and an assortment of delicious vegetarian options, are all on offer. Our orders were prepared to perfection and served to us al-fresco style at our beachside dining table. Partaking in this sumptuous cuisine under a starry night sky and listening to the waves lapping on the beach, was an occasion we will remember for many years.

SEA DRAGON

One of our favourite foodie locations on the island was the Sea Dragon. This venue offers Far Eastern fine dining at its very best. Providing a modern take on authentic Asian cuisine, including fresh sea fish and shellfish dishes, guests can select their meal from giant display tanks at the front of the restaurant. The exceptional chefs then prepare your dish to perfection, ensuring a memorable culinary experience.

BREEZE POOL BAR

We found Breeze Bar to be a great location to relax, unwind, dance and watch sunsets, as well as to socialise with other guests. A live band provides uplifting entertainment, whilst DJs ensure the party continues into the night. Cold drinks, specially crafted beverages and hookah are all available at this lively venue.

AQUAHOLICS

Aquaholics is the resort’s water sports and dive centre. It offers an array of exciting activities to suit all tastes. These must-try activities include parasailing, sunset cruises, windsurfing, big game fishing, glass canoe adventures and much more. We were lucky enough to experience both the Turtle and Dolphin Quest Adventures. These expeditions involved tranquil boat rides out into open water to locate dolphins and sea turtles. Fortunate enough to spot both species, we were grateful to the resort for providing such close encounters with these magnificent creatures. Eager for some snorkelling, we also joined the Seabob experience. This is a super-quick underwater scooter that allowed us to explore greater distances, dive deeper and experience more marine life. A truly exceptional way to witness the underwater wonders of the Maldives.

ESKAPE SPA

Our relaxing and pampered holiday would not have felt complete without a visit to the peaceful Eskape Spa. This beautiful venue, with its tropical surroundings, provides the perfect place to unwind. With a range of treatments on offer, from exfoliation to healing therapies, along with excellent facilities, including an onsite steam room and a plunge pool, guests are in for a real treat. Opting for the Maldivian Ocean Dream Massage, we can certify this spa as a must-experience location that revitalises both the body and the senses.

Why Is It Worth Watching?

Martin McDonagh has a short but highly regarded list of movies under his belt, Three Billboards Outside Ebbing, Missouri and Seven Psychopaths to name two. Prior to these, in 2008 he put out In Bruges, a black comedydrama crime film, that was his feature-length debut and starred Farrell and Gleeson as the unexpected duo driving the story. The two of them didn't just perfectly suit their own roles in that outing but complemented each other impeccably throughout whenever they shared screentime together, almost like a cynic’s Batman and Robin if you will. Over a decade since then, The Banshees of Inisherin sees McDonagh reunite the pair on screen once again, this time in a tragi-comedy scenario. The events are set in the 1920s and follow two lifelong friends Pádraic (Farrell) and Colm (Gleeson) who find themselves at an impasse when Colm unexpectedly puts an end to their friendship. A distressed and confused Pádraic then tries his best to figure out and repair their relationship, only to be turned down at every attempt. Pádraic's repeated efforts then lead Colm to give him a unexpected ultimatum and events soon escalate, with shocking consequences.

Why Is It Worth Watching?

Taking place in 2023, the show is set 20 years into a global pandemic caused by a mass fungal infection that transforms its hosts into zombie-like creatures and leads to the collapse of society and life as we know it.

The story may initially seem to be based around this major plot point as the obvious antagonist and centre of events. Instead, it chooses to focus on the people who are left occupying what remains of the world and their ways of persevering, which is at times surprising or downright shocking as the human race stares at its looming and eventual end.

In the midst of all this, the show draws our attention to a love story, not the usual romantic kind that we’re all too familiar with but something few may consider, a far more potent one – the love a parent has for their child.

Staying true to the multiple-award-winning game, the series manages to capture the astonishing depth around this dark, violent and melancholic story that highlights the best and worst parts of humanity as everything around them is falling apart or, in this case, attempting to infect and kill them. After all, despite the impending doom and death at every turn, the film is truly about the last of us.

ALTERNATIVE/INDIE

The WAEVE

This is The WAEVE’s eponymous debut album, released via Transgressive Records. It’s a collection of 10 tracks from two unique musical voices and songwriters Graham Coxon and Rose Elinor Dougall. A couple of songs in, it’s clear that the mood of the album is sombre, dark even, as seen in the first single Can I Call You – “I'm tired of being in love, I'm sick of being in pain”. The track starts as a ballad and Graham’s guitar solo transforms it to a rock song with electronic elements. Drowning begins with a piano intro, which is reminiscent of ripples on a lake. Whether it’s deliberate or not can’t be said. However, it offers artistic imagery. Someone Up There has a different sound from most other songs in the album. It’s fast paced, for one, the successive drumbeats creating this sense of urgency. On it, Graham insists, “I don't care what you say man/I’m being watched by someone up there”. All Along stands out, with Rose’s velvety voice complementing Graham on cittern, a medieval folk lute.

Both, Graham and Rose are known for their individual styles and talent. Together, they make a promising duo and it will be interesting to see what they create in the time to come.

My 21st Century Blues

Released via Human Re Source, My 21st Century Blues is essentially a club anthem further elevated by British singer and songwriter Raye’s enigmatic vocals. A feminine voice that’s irresistible and at the same time fierce works brilliantly for the theme explored in the album –overcoming heartbreak.

On Hard Out Here , Raye resigns to the fact: “See for girls like me from the bottom of the tier/Believe that it's always been hard out here”. But she immediately follows it with: “Baby, I bounce, baby, I bounce, baby, I bounce back”. Escapism sucker punches you when you realise that it’s the ridiculously popular TikTok sound – “The man that I love sat me down last night/And he told me that it's over, dumb decision”.

Black Mascara, a guaranteed dance floor hit, combines a sombre theme with upbeat music, creating an irony that’s hard to resist. Symbolising an undefeated spirit, it’s one of those on-loop numbers.

Flip A Switch comes as a warning to anyone daring to cross a line. Raye knows that “You can't just let your guard down and fall for someone anymore/ That's what stupid girls do” and Raye’s “been a stupid girl”. The music on this one’s groovy, with the “Ooh, oh no, oh no, no, no, no, no” making you want to play it just one more time.

Sam Montgomery is anticipating a long weekend spent with her beloved mum enjoying girly nights watching TV mysteries and chatting. POINT, LINE AND PLANE

Accomplished Qatari artist Noor Abuissa tells Amal Sarhan about her artistic process, the pleasure and calm of Islamic geometrical designs and the significance of artistic endeavour.

Noor strives to highlight the importance of Arab designs and the versatility of colour in her work. In September last year, her work was exhibited at the Fire Station under the title Abstraction: Subverting Reality, other works were shown in Mathaf as part of a group exhibition and, more recently, her pieces have been installed at The Ned, Raffles Doha and the Waldorf Astoria Lusail Doha. She was also among the artists who designed custom water bottles for the World Cup.

Taking inspiration from Islamic geometry, Noor creates sharp abstract shapes filled with evocative colours that add life and dimension to her work, which has spanned across the artboard (so to speak), from paintings to wall and floor sculptures, paper collage and design objects, sometimes using different mediums in the same pieces.

“What I love most about abstract geometry is the way it makes you feel grounded, as if quieting the chaos of everyday life and allowing you to be inspired by the simplicity of point, line, and plane,” she explains.

“Through my practice I’ve been working on bringing this form of art into the contemporary sphere, injecting it with colour and deconstructing the shapes, allowing it to be appreciated from so many different aspects.”

Even as a teenager, Noor was interested in art practising still-life drawing and plein-air painting of architecture and landscapes. She was drawn to topics such as the history of art and the origins of different art forms and was especially fascinated by the vigour of colour and its grounding quality. “I remember always getting lost in the process of art, using it as a way to get into my own thoughts, inducing a time when the world stands still and I have space to focus my mind,” she says. “On the other hand, I also vividly remember the times when I would find art challenging and would feel frustrated, only to realise that I had gone through a transformative experience by stepping outside of my comfort zone and had learned something new in the process.”

Though she was only interested in art as a personal practice, when the time came for college, she chose to study the craft and find a way to express her identity as a Middle Eastern woman, investing in further practice with Islamic geometrical designs, something that is “uniquely true to our region”. She graduated in 2012 from Central Saint Martins College of Art and Design in London and, after returning to Qatar, found herself working with Qatar Museums to establish the first Fire Station Artists in Residence programme.

“I learned so much about the museums and how the art world operates from a bird’s eye view,” she says. “It was also a great team and I was so lucky to meet likeminded people.” She began to realise she could learn from her own work and challenge herself further saying: “In the end, they say that ‘art does not exist unless it is shared, it requires both artist and audience'."

She describes her proudest moment when she was approached by the Ministry of Foreign Affairs to design the inaugural Doha Forum Award. “Not only was it an honour to create such an important award, but it was also somehow a monumental moment for me as a multidisciplinary artist, to witness my work transcend the boundaries of traditional gallery spaces and gain recognition for having its own identity, adaptable in different settings.”

Most of Noor’s work now comes from commissions and requests, which pose new challenges to her creativity and encourage her to push her boundaries. “The brief would depend on what space the artwork would live in and it’s a process of responding to the space and at the same time pushing it to bring out the best in the artwork,” she explains. She believes art is ‘integral’ to human existence and contends that it is not limited to artists but should be encouraged as a wider practice and a ‘way of documenting life’.

Citing her family as her biggest supporters Noor says she feels “incredibly fortunate to always have them cheering me on, pushing my boundaries and looking at my work with a critical eye, propelling my development further.” Having exhibited around the world, including in Qatar, Russia and Germany, she is working on new avenues including experimenting with ceramics and marble. ✤
