e’re truly in an age of firsts. The new normal has shifted our perspectives in quite profound ways. The way we socialise, the way we work and the way we regard the world are now significantly different to any preceding era. I feel part of these shifting social sands. This is my first edition as the editor of FACT Magazine, and my first
opportunity to helm a lifestyle magazine here in Qatar. It is a distinct privilege to be part of something rather special. Editing FACT Magazine gives me the opportunity to share some of

my cultural influences and personal insights with you, as we take this new journey together. I am excited by the prospect. We begin this month with FACT Magazine’s fresh approach to making the most of the summer holiday season. With life seemingly stuck on the proverbial pause button, we are doing things remotely more and more often. For fine dining, travel experiences, business meetings and family reunions, remote is the abiding currency. Our May cover story, 'We Know What You’re Doing This Summer’ reflects this reality with some virtual experiences that take you to far-flung and intriguing places. We would like you to immerse yourself in an unforgettable music festival, and put you in the frame of old masters and modern renegades of the art world. Our mantra this month is ‘creativity begins at home’ and we have spiced up the edition with a traditional South African braai blueprint. We have also brought Ayurvedic therapy spa treatments to your home-base, with our ‘Passage to India’ segment. ALOHA TO NATURAL BEAUTY Say aloha to environmentally friendly and organic beauty remedies to bring out your natural shine.
T
he word aloha is an essence of being: love, peace, compassion, and a mutual understanding of respect. Qualities we should show each other, our environment, and ourselves, as presented by Aloha with its elements from planet Earth. Aloha is a local start-up by Dana Khalid Alawad, which provides organic and homemade beauty regimens. This venture started as a 10th-grade personal project as she took inspiration from her family’s weekly routine of creating natural home remedies for their skin and hair. This family passion project inspired Dana to share their products with her class, and then with a few clients, after the overwhelmingly positive response she received from her peers. Fast forward a couple of Canva designs and her first batch of products, Aloha now provides customers with a range of items encompassing face serums, marble facial rollers, and hair oils amongst others. The company’s hair products throughout the brand are homemade with fresh local produce secured from local markets or the founder's backyard. The creator extracts oils from coconut flakes in her kitchen, while growing aloe vera and curry leaves, to keep the process as organic and sustainable as possible. These ingredients are all available in the best-selling Hair Amla Oil, which is an ancient Indian treatment that is an infusion of curry leaves in amla and 8

coconut oil; leaving your hair feeling soft, hydrated, and supple. Traditionally, the concoction is used to make hair grow faster as well as strengthen hair follicles, reduce hair fall, prevent dandruff and hydrate your scalp. Furthermore, curry leaf oil is a rich source of beta-carotene and proteins, which can reduce hair loss and increase growth. As for the skincare line, Dana carefully selects and imports oils to create her serums. Sold in two variations for dry as well as combination skin types, these oils are absorbed deep into the tissue to leave skin feeling brighter, hydrated, and toned. Formulated through personal experience and testing, the serums are unique and unlike anything else available in the market. Even though all products are homemade, the recipes and formulas are tested, verified, and licensed in Qatar. Dana herself is a certified organic skincare formulator and is currently adding more courses and specialisations to her resume as she comes out with new items. EYE CARE. DO YOU? Self-love is healthy. And since eyes are the mirrors of the soul, we’re suggesting some special treatments. First up, some mask home treatments. For eyestrain, apply rosewater-soaked cotton pads (for its cooling effect) on the eyelids for 10 minutes. For dark circles, place a slice of apple on each eyelid for 10 minutes. Apples are rich in assimilable minerals such as, vitamins B and C, potassium and tannin, all of which assist in eliminating dark circles. For puffy eyes, apply a compress made with a mild solution of sea salt and water for several minutes. Keeping the eyes closed, rinse them with cool water to wash away the salt before it stings. The salt draws water away from the tissues and leaves the eyes looking fresh. For wrinkles, apply a light coating of almond or olive oil 20 minutes before bedtime to soften the skin. S
alwa Sadek is an Egyptian-Australian poet and spoken word artist. Her passion for storytelling came about when studying journalism sparked her interest in telling her own stories in poetic form. Her verse is heavily faith-based as a means to understand the way we live life and to share the beauty of her faith (Islam), which has been greatly misrepresented in today’s world. Her first self-published poetry book Carry Me With You is based on the importance of faith and religion that stems from the teachings the author's parents ingrained in her of values and morals. This is a compilation describing the result of rediscovering that lost connection with God, which she hopes to portray to her readers as they find their own way back. The perfect way to end Ramadan and begin anew as the months pass by. The process to write Carry Me With You began in a little notebook, given to her by her mother, for brainstorming ideas and goals for the future. Those ideas transitioned into emotions and further transformed into beautiful and heartwarming stanzas. “I remember being on holiday sometime in 2018, and I started writing my thoughts on paper, I started writing poems. I even began planning possible book names of my future to-be poetry book one day,” says Salwa. Words have a way to engage our senses along with our emotions, making the art form experiential and hugely effective in connecting with our minds. Salwa emphasised that poetry
makes her feel seen when she feels invisible. “Most of my life I’ve felt misunderstood, and when no one truly understands what it's like to be you, I've found that poetry fills that gap for me. It says what I'm feeling in a way that I feel understood. It's sort of my coping mechanism now for all the sadness and wonder that enters and leaves me regularly,” she adds. “Poetry can be so beautiful, because it's a form of art that truly has the ability to reflect the intricacies of one’s mind, soul, and thoughts. While we’re all so different, our emotions are universal and so you’ll find that we have more in common than we think or assume to have. I think that in itself is sublime, that we can share that sense of belonging purely based on emotional or spiritual connections.” Salwa’s words convey her emotions and thoughts in a way that sends chills down your spine and makes you wonder about your life and purpose. Her words make you question your actions, as well as the ramifications those actions might have. She tackles everything from her political, moral and religious beliefs, making us want to read more as we venture into the depths of those lines between the words and her mind. It is a collection of poems separated into three themes: faith, love, and death - which the author has found herself struggling with throughout her life. A book of faith and spirituality. When asked about the power of words for her, she said: “While some would think that words are limiting. I find so much power and beauty through language that I can piece together to fact magazine

• ARTS & CULTURE formulate a line/poem that can resonate with myself and others. It’s sort of like a puzzle. I’ve always hated puzzles and had no patience for them, but when it comes to the puzzle of piecing words together, I am so patient with myself, I feel like I’m made to do this.” Following creatives like Mustafa on Instagram, better known as Mustafa The Poet, for a couple of years now, has allowed her to be inspired as she witnessed the beauty of how words could transform a person's mental state of mind. She admired the delicacy in his craft and how it was all so beautifully articulate and personal to his life. She then wanted her poems to carry that same emotion that allowed readers to resonate with her journey. Further inspiration came from the questions that her own life poses. “Last year was the year that I had my focal moment of realisation of my purpose and the urgency to fulfil that in some way. I realised how we get so carried away in this life that we worry about everything else other than our ultimate purpose and the reason we’re here. We forget that this isn’t the end, there’s another life waiting for us. Having this mindset helped inspire me to write even more about my struggles with faith growing up because I was doing it for the sake of God,” she says. “To be able to use language to help people see the beauty of God and Islam, which has been greatly misrepresented in our world today, makes me feel like I’m living with purpose which I’ve tried to find all my life.” The book is a collection of the experiences of someone that has gone through emotional and spiritual challenges her whole life; a raw and personal reflection. The biggest thing that this book offers is a sense of hope and comfort in the sense that we can always improve the person we are, no matter how far off track we feel. No one becomes pious overnight and all pious people were once off track. We all start somewhere, it's taking the steps and the intention towards improving for the sake of God that matters. Salwa’s book hopes to make people feel understood in a world where so much compassion and empathy is lacking. She hopes to bridge a connection and a sense of belonging between herself and the reader, and help them realise that they are not alone. ✤

or many years we at FACT magazine have had the privilege of thoroughly inspecting and test driving a large array of motor vehicles from a diverse range of brands. We have not, however, had the opportunity to get behind the wheel of a Mitsubishi model, that is until now. The Japanese manufacturer dates its motor car origins as far back as 1917 with the introduction of the Mitsubishi Model A. This hand-built, seven-seater sedan was the company’s first series-production automobile and now, over 100 years later, FACT gets to test drive the latest seven-seater compact SUV, the Xpander, compliments of the great team at Qatar Automobiles Company – Mitsubishi Motors Qatar. The Xpander has a striking and unique look to its exterior. In order to accomplish this bold concept, the designers at Mitsubishi have styled this moderately sized, multi-purpose vehicle (MPV) to look more like a sports utility vehicle (SUV) by giving it a rugged finish and high ground clearance. Staring at it head on, this car has a futuristic look to it with its chrome upper grille, swept-back headlights and daytime running lights that sit low down on the bumper. The LED lamps sit in crystal-like blocks and have been situated in a higher position for increased visibility. At the flanks, well designed side bumpers, side panels and rear quarters complete the sturdy and chiselled look, whilst 16-inch diamond-cut alloy wheels in a two-tone finish add a touch of class. At the rear, the L-shaped LED combination lamps extend onto the tailgate and emphasise the vehicle’s sturdy posture. It is also possible for the exterior of the Xpander to be customised through the use of body kits and different wheel options. Once Inside, we were immediately impressed by the sporty and spacious Interior as well as the high-quality materials used throughout the vehicle. The supportive front seats are set in a very upright position and give you a commanding view of the road ahead. The steering wheel sports both tilt and telescopic adjustability, allowing you to find the perfect driving position. The second and third rows of seating are also spacious with plenty of head and leg room, allowing the Xpander to be called a true seven-seater. When the rear seating is in the upright position, the boot can hold an item or two of luggage. However, the rear seats can be folded down completely flat which expands the storage capacity to the largest in its class. There is plenty of other storage space on offer throughout the vehicle, including the glove box, drink holders, door bins, seatback pockets, a floor console box, a passenger seat under-tray and an underfloor luggage area. Each of the three rows of seating has its own 12V power supply adjacent to a convenient storage space. Entertainment and hands-free operation are provided by the responsive and clear 7-inch Smartphone-link Display Audio (SDA) which is compatible with both Android Auto and Apple CarPlay. Performance-wise, the Xpander houses a 1.5-litre, 16-valve dual overhead camshaft engine with advanced Mitsubishi Innovative Valve timing Electric Control system (MIVEC), allowing the car to carry seven adults uphill with relative ease. With reinforced suspension, high-performance shock absorbers and a lightweight body, we found this car to be very comfortable to drive as well as responsive and easy to handle. An added bonus is the quietness of the ride, as all noise and vibration is absorbed 38

by materials incorporated into the interior design. This combined with a great air-conditioning system and four rear roof vents ensures a pleasant experience for all occupants. As far as safety features are concerned, the Xpander boasts a Reinforced Impact Safety body (RISE) that efficiently absorbs energy and maintains high cabin integrity in the event of a collision. All four doors are also equipped with a support beam to reduce door deformation in the event of a side collision. Additional safety features include Emergency Stop Signal System (ESS), Anti-lock Braking System (ABS), Active Stability Control (ASC) and Hill Start Assist (HAS). All of this, combined with very few blind spots, ensures a safe journey for you and your loved ones. ✤

In Conversation with… Etienne-Charles Gailliez We chat with the GM of Hilton Salwa Beach Resort & Villas to discover the man behind the luxury resort. How did your career in hospitality start? I always knew I wanted to be a hotelier or restaurateur from an early age. My father and grandfather were passionate about food and took me around Europe to experience new products from traditional to Michelin-starred restaurants. My first stint in hospitality was at the age of 17. I worked as a room service waiter at Sheraton in Brussels and moved on to Sea Grill which was managed by Le Divellec. I joined Hilton subsequently, and worked in several food and beverage (F&B) roles across three continents. I worked as a Banquet Manager, Food and Beverage Manager, Director of Operations in Egypt, General Manager in Madagascar, Regional Director of Food and Beverage in Dubai and Country Manager in Nigeria. Did the recent restrictions and decrease in travel help you discover parts of Qatar that you had never explored previously? With the travel restrictions, everyone has focused more on local tourism, discovering museums and cultural sites. Myself and my family went on a deep dive and visited some cultural sites up to three times, based on our desire to learn more about the Qatari culture. I really enjoyed visiting the Fire Station and loved their Picasso exhibition. I visited for the first time with my wife and went back a second time with my children. We also visited the Museum of Islamic Arts twice, particularly to see the astronaut collection. During all our visits, it was interesting to see that Qatar is deeply rooted in culture, customs and tradition. What wisdom do you believe has helped you navigate your business during the pandemic? We are navigating through this pandemic with a lot of agility and resilience. Our focus remains to spread the light and warmth of hospitality to our key stakeholders. We ensure we are always a step ahead of the competition by innovating and adding guest touch points that help us retain our position as Qatar’s leading destination hub. Another important factor that has helped us during this period is flexibility. The Government’s policies change frequently based on new Covid-19 discoveries. As such, we remain on alert to ensure we continually reimagine our product offerings and the way we interact with our guests. Additionally, we have implemented Hilton CleanStay – Hilton’s industry-leading standard of cleanliness and disinfection – to provide our guests with assurance and peace of mind. 44

As the GM, what is the most important thing you will do to ensure the hotel is a success? Guests are at the heart of everything we do. My focus is to ensure that we think differently, adapt to the changing business environment and enhance the way we interact with guests by curating new touch points. It is important that we ask ourselves key questions around streamlining processes that are timeconsuming and error-prone due to manual ways of doing things. There is a need to develop talents that help us retain our position as the leading employer within the region. I reiterate to my team the importance of prioritising our key stakeholders – the guests and owners. For our guests, we explore and implement innovative, industry-leading concepts to drive guest satisfaction in these changing times. For our owners, my goal is to deliver solutions that drive bottom-line results, increase guest stays and create improved hotel operations for an unrivalled competitive advantage. I also want to reduce costs and ensure we are as optimised as we possibly can be so that we get better returns. In addition, my focus for Hilton Salwa Beach Resort & Villas is to track waste, ensure more accurate forecasts, leverage data and apply analytics effectively to reach our target audience. What made you decide to pursue a career in the hospitality industry? I have always had a passion for hospitality since i was young. I enjoy interacting with guests and putting a smile on their faces. Every day in this industry is memorable, fast-paced and ever changing. One of my fondest memories was when I worked on a special project as a Food and Beverage Director for Yas Island
and Yas Central Markets in Abu Dhabi. I opened 32 restaurants in the space of 24 months, which was challenging but worth it. Working with a brand like Hilton that encourages young people to take on big projects like this, makes it worthwhile. When i worked as the General Manager for Transcorp Hilton in Abuja also, we had several heads of state from across the world visit. It was interesting to see that world leaders’ preference was to convene at Hilton. If i had to choose another career path, it would still be hospitality. ✤ fact magazine

PANINDIAN DELIGHT Chef Debdash Balaga from Jamavar, Sheraton Grand Doha Resort & Convention Hotel, brings us royal Indian coastal cuisine. We sat down with him and got behind the force in the kitchen.

Tell us about yourself and your experience. I was born and brought up in a traditional Telugu family out of Hyderabad. After hotel school I got a fantastic opportunity to join ITC hotels in Hyderabad. I also had a chance to work with celebrity chef Imtiaz Qureshi, who was at the helm in the capacity of Master Chef of Indian cuisine. In the past two decades I have worked in multiple cities in India and introduced Chettinadu and Hyderabadi cuisines for the first time at Taj Rambagh Palace, Jaipur. How did you decide to go to culinary school and pursue cooking as a career? I discovered my passion towards cooking at a very young age. My love for food and cooking runs in my heart, my father was a chef as well and he introduced me to authentic cooking with fresh and local ingredients. I was quite mesmerised by his recipes and my love for cooking was developed. Hence, I pursued cooking as a career and followed my passion. What are you inspired by? My father has been my biggest inspiration since childhood, he always encouraged me to follow my love for cooking, taught me to stick to my roots and promote authentic Indian cooking. Is there anything that you won’t cook with? I believe in cooking traditional Indian food without altering the authentic taste and recipes, whilst keeping the healthy aspect of food alive. I ensure to present the food in a contemporary way so as to keep the cuisine progressive yet authentic. What’s your favourite dish to create? I love to work with fresh seafood, I get to amalgamate all my favourites – homemade spice blends, seafood and tandoor cooking to create an exceptional dish. My favourite from the Jamavar menu is Dakshini Jhinga (king prawns with southern Indian spices cooked in the tandoor). Favourite kitchen equipment or gadget? The tandoor (clay oven) remains my favourite equipment to work with, it’s the most traditional cooking method in India, food prepared in a tandoor retains all the natural juices and gives a smoky taste which is second to none. What do you like to do outside of the kitchen? I love to explore new places in search of new ingredients and food preparation, especially street food. What would you want to have as your last meal? Traditionally cooked Dalcha Gosht made by my mother is the best in the world; it’s lamb and lentil cooked together with a hand-blended spice mix. Where do you draw your creative inspiration from? India’s diversity in cooking methods, cuisines and ingredients have always inspired me creatively; India’s cuisine diversifies after every 100 kilometres when you travel, and the menu that fact magazine

my team and I put together at the Jamavar Doha represents that – the menu ranges from royal cuisines of the north to the shores of the south. Some ingredients have been sourced from the west part of India as well. What have you learned during your time here in Qatar? It has been a wonderful time for me in Qatar working with different nationalities from all around the globe, understanding the local culture and food cooking methods has all the more added to my skill set and broadened my learning horizon. ✤

t first view of the spectacular hand-painted glass-dome ceiling, like Alice with her looking glass, I was intrigued by Mondrian’s bold visual statements. On immersion, I realised that the choices are focused on making guests feel part of a story – a fairy tale – far removed from utilitarian functionality and fully embracing fantasy fulfilment, whether for one amazing meal or for a one-week stay. From the immersive nature of the hotel, to the food choices that transport you to that space, it’s about make-believe, made real. Reviewing it is akin to reading Alice in Wonderland for the first time and taking that adventure together with her. There are many layers of engagement and delight, each revealed as the journey unfolds. But, before the fairy tale begins, let's look at the big picture. The interior décor incorporates bespoke design features with classic literary references and regional influences, merging the beauty of local patterns and weaving an intricate tapestry of ornate Arabic writing and historic souks into the aesthetic. I was drawn into Mondrian's world - a place where the expected and unexpected merge. I observed multiple themes collectively layered throughout the hotel. It's clear that each individual space aims to create a fresh fable. When you visit, you experience your own tale and write your collection of stories. Wanders’ deft hand is clearly evident in the unique guest rooms and sumptuous suites. You can choose from five distinctive room categories that range from standard guest rooms and studio suites with their own unmistakable style, to elegant one- and two-bedroom suites imbued with luxury and fantasy, culminating in breathtaking penthouse options, all of which share the universal design details of Swarovski crystal chandeliers and bespoke furniture, dressed in hues to mirror the desert.

• DINING HOTSPOT beforehand what I would receive. You have to embrace the experience. Morimoto graced me with a package that included a sensational Robata Teriyaki Salmon. Packed with irresistible flavour, the crispy salmon skin rocked my world. With a reputation that preceded it, I ordered the freshly baked cheesecake as the pièce de résistance and it proved to be as remarkable as anticipated. It was a perfect mix of lightness and richness. I would describe it as a playground for the taste buds. Next, courtesy of EllaMia, I was invited to a hedonistic confectionary experience befitting the Queen of Hearts at The Mad Hatters Tea Party. EllaMia at Mondrian, is a stylish and subtle contemporary take on artisanal coffee blends and teas. But, on this occasion, I was tempted by their more indulgent offerings. I tried a Pistachio Baklava and Mixed Nuts Baklava in lethal combination. They proved to be an irresistible duo. Pâte à Choux or Choux pastry, is a delicate expression of confectionary delight. I revelled in a range of mini choux buns that pleased my palate. To round of my culinary adventure, I sampled some of the EllaMia Mamool – a delectable Levantine dessert comprised of a semolina shortbread cookie filled with dates. All in all, a wonderful experience that left me with a grin like the Cheshire Cat. In next month’s edition we descend further down the rabbit hole and into the living spaces and unique features of the hotel. ✤

Our trip through the looking-glass starts with a tale of the taste buds. The food options, by their nature, demand that you follow their instruction to ‘eat me’. Luckily, it’s easy to do so. During lockdown the hotel brings the magic of Mondrian to patrons as a conduit to the complete experience, delivering beloved dishes from its signature restaurants Morimoto, CUT by Wolfgang Puck, Walima and EllaMia, as well as the more relaxed Hudson Tavern. When I ordered in from two of these restaurants, it felt less like a delivery from the hotel and more like a transportation to their eclectic theatre of the imagination. First on my plate was a mystery combination from Morimoto. Like the celebrated movie Spirited Away by Japanese director Hayao Miyazaki, the combination took me from my apartment to a dream-like world. Morimoto is the first Middle Eastern iteration of this famed Japanese restaurant by celebrity chef Masaharu Morimoto. He is the mastermind behind the fantastic culinary experiences. The physical space offers an opulent tribute to its cultural heritage, adorned with vibrant and graceful artworks by Japanese painter, Hiroshi Senju. The ambience is an ode to luxury with the 16-seat sushi bar and main dining area surrounded by rose-gold-studded columns. It’s a rich and textured sensory activation, and the food unquestionably mirrors that experience. Part of the Morimoto ‘spirit’ is a heady mix of intrigue and surprise. When I ordered a Sushi Combination it was not revealed 54

I
decided I needed a little panache in my takeaways, so I was thrilled when Nozomi delivered a consignment of their best cuisine recently. It lifted the lockdown blues and pleased my palate no end. I started by getting my chopsticks stuck into the raw sushi and sashimi platter and was delighted by the quality and freshness of the fish – most important if you are going to eat it raw. An assortment of 15 mixed pieces of the best seafood cuts was presented on a platter proudly entitled the Nozomi Collection and, for me, the highlights were the Salmon and Eel Nigiri and the Tuna Sashimi. There were also appetisers in the box. Who doesn’t love some spicy edamame? And spicy it sure was with a large bowl of the popular Japanese snack served warm in dashi stock, miso, tofu, spring onion and wakame. The accompanying Beetroot Carpaccio was a rather unique pleasure and extremely fresh and well cured. Possibly my favourite item was the Arabian Gulf Prawn Tempura Maki which is definitely worthy of sharing by virtue of its generous portion size. It was spicy and I couldn’t get enough. Each piece is coated in tempura and glazed with a sweet soy sauce and spicy mayonnaise, offering different flavour pops as you bite into the crispy exterior. Something new to me was the Nikuman. When I looked at it in the container, I thought it could be a dessert. But on the contrary, Nikuman is the Japanese name for the Chinese baozi, made from flour dough and filled with cooked ground meat. These fact magazine

were steamed buns filled with sweet marinated Waygu beef. It was both filling and something a little different that I shall note for when things open up again. Shellfish fans should enjoy the Spider Roll which is a fantastic treat. The soft-shell crab is deep fried and paired with cucumber and avocado rolled with tobiko (fish roe) and chilli mayonnaise. The texture of the avocado and mayo give a deceptively smooth initial impression, but it has a slightly sharp and satisfying hit. The black cod was highly commendable. It was neither fried nor grilled but, rather, beautifully baked and served with just a little miso. I thought it was one of the best things on offer. I enjoyed it with some Mushroom Takikomi-Gohan (mushroom rice). The rice is cooked in a clay pot with small finely-cut Japanese mushrooms and it’s both delicious and very filling. Not all Nozomi’s desserts travel well as some can only truly be served straight after preparation in the restaurant itself. But I was happy to receive a couple that worked perfectly. I put the chocolate fondant in the oven ever so briefly to lightly warm it and that helped to get that gorgeously gooey melting of the chocolate when I tapped the spoon in, I hardly needed the side cream that was provided. The pistachio cheesecake was very light and enjoyable also. All in all, a satisfying at-home dining experience. Nozomi is doing a special Ramadan offer where they will deliver a whole set menu to your door in time for Iftar, but they are also offering deliveries for those who want to order any items from the à la carte menu throughout the latest phase of lockdown restrictions. ✤ 58

ykonos, at InterContinental Doha is a Mediterranean cuisine landmark. The restaurant, overlooking a private beach, is enticing. Meals are served in a convivial atmosphere befitting Greek culture. Add to the sun and sea some seductive flavours and live Greek music, and it’s an intoxicating sensory combination. But this time, my Mykonos experience was a little different. Due to lockdown it was a dine-at-home version. Greek food is best when shared, so I invited my flatmates to join me. Mykonos happens to be, collectively, one of our favourite restaurants. Three cosmopolitan girls with fine-tuned palates were eager to try home delivery. Sticking to a game plan, we ordered starters, main courses and dessert in a trifecta of traditional treats. In our bid to re-create an authentic Mykonos-style experience, we decided to really make a night of it and set the scene with a crisp white table cloth, blue and white glass candle holders and traditional Greek music to accompany our meal. The food arrived on time and in stylish Mykonos-liveried packaging. Our starter selection included a particularly generous portion of fresh, delicious Tzatziki. You can’t get enough of a good thing. Next was a stunning Choriatiki Salata – a traditional Greek salad, with olives, feta and dressing and an accent on crispness. Our mezze platter included my favourite ensemble piece, Spanakopita. The Mykonos rendition didn’t disappoint me. The pastry-puff girls in my party group took full advantage of this light delight, savouring the flavourful spinach filling that burst from a fluffy and crisp phyllo pastry sleeve.

Rounding off the starters were the Kolokithokeftedes (fried zucchini patties). This delicacy went down a treat with my two vegetarian guests. They had never tried these magical little zucchini patties served with a cheeky spicy feta cheese dip, so you can imagine their surprise and delight. Now I can’t stop them talking about it. The main course selection included a full serving of Kotopoulo Souvlaki. The chicken was cooked to perfection, tender and juicy with a hint of smoke from an open flame. I had never tried a dish called Biftekia Yemista (a beef patty stuffed with Kefalotyri cheese and topped with caramelized onions) before and was pleasantly surprised by the comforting Kefalotyri cheese filling combined with the yoghurt sauce. Our mains we completed by Kritharoto Thalassinon, a paella-like dish of Saffron Orzo Pasta with shrimps, muscles and calamari, which my flatmates devoured. For dessert we took on Galaktoboureko, the night’s showstopper. Picture a delicate and dreamy creme caramel topped off with the cheeky texture of crunchy phyllo pastry. One curious guest sneaked a taste before official dessert time and that was that. She finished dessert before the main meal. Mykonos at home was a real treat. The portions were generous and could easily have served another two guests. The ingredients, composition, presentation and flavours delighted us all, and while I’m a little bias I admit, the night was memorable for all the right reasons. My love affair with Greek food continues, by Zeus. ✤ 62

iyasat refers to a province, territory or estates of the Maharajas or Kings dating back to the 19th century in India. And it’s with that theme in mind that one of the most impressive new restaurants on Qatar’s culinary scene has now opened. It’s been a long time in the planning and the launch was heavily delayed due to the pandemic. But it’s finally here and well worth the wait. Situated in the new complex of fine-dining outlets that was previously the Al Gassar ballroom, there is something very modern and trendy about turning up here. There is no need to walk through a hotel lobby but instead there’s a large atrium from which you access a variety of restaurants. Riyasat is straight ahead and the place is vast. I was immediately taken by the array of artworks that all evoke memories of the royal era but also tell stunning stories of the people associated with the food. The starters were distinctive. I particularly enjoyed their version of a pani puri, fit for the royal palace. We were given a round plate of flaky pastry pyramids stuffed with royal cumin, green chilli for the kick, ginger tempered potatoes, roasted cashew nuts and ginger chutney. I discovered the best way to eat this was all in one bite, straight in the mouth and let the flavours explode in there! This would actually be a plate I could reorder multiple times as a snack during drinks with friends but it was also a great appetiser fact magazine

• NEW IN TOWN to our evening. The tiger prawns we also tried did not disappoint and were sizzling in heat and flavour thanks to the roasted garlic, Kashmiri chillies and cream cheese they were cooked in. The Mardana Murgh was a butter chicken with a difference, as it was described to us. The tandoor roasted chicken came in a sundried-fenugreek specked, smoked tomato-saffron-cream sauce. I’d definitely recommend that. There are many vegetarian options in this restaurant that aren’t just there to tick a box but which offer genuine choice and stand tall on their own. The charcoal smoked eggplant mash with green peas and garlic green chillies was outstanding and only a top chef could manifest it. Riyasati Gosht Dum is a biryani to beat all others and Head Chef Grenal Godinho told me that some diners are shocked to see it because it redefines what a biryani is to them. It’s an aromatic lamb shank in a saffron basmati rice and Persian-influenced garlic-yoghurt, cooked in the dum style in a steamed seal so that all the flavours are intact when the lid is lifted. The desserts were picture perfect for the Gram. Jamun e Khaas was my personal favourite. It’s a bowl of milk-cake dumplings, vanilla bean ice cream and, upon presentation, the waiter poured hot cardamom-nutmeg Callebaut chocolate sauce all over it, cracking the structure into a perfect gooey debris. I also tried a delicious baked yoghurt that gave it a cheesecake-like look but resulted in a very light finish for the palate. We were treated to some warm and soothing, sweet Indian tea served in glasses, before leaving. Staff are a league above those in most places quite simply because of their passion and commitment to Chef Grenal and his work. The head chef is in regular Zoom meetings with Chef Jolly in London, who established the restaurants and curated the

menu. The Doha team perfect the recipes and the delivery of them. The waiters know the story behind them, the ingredients in them and what dishes suit which people’s tastes. Based on that, they even know which drink to pair it with and liaise with the inhouse mixologist to make the magic happen. Riyasat is one of the most impressive new additions to the food scene. The combination of the warmly-lit setting, gorgeously designed dining room and the exquisite food make for a magnificent experience. And if you are looking to stay in the comfort of your home, Riyasat delivers straight to your doorstep. ✤

hile we are essentially confined to our homes again during this latest phase of the pandemic in Qatar, there are reasons to be cheerful, as I’ve recently discovered. With disposable income that we aren’t spending in cafes, restaurants, bars and spas, we owe it ourselves to enjoy the time we spend at home. I recently decided to spare myself the chore of cooking and washing up, and instead veg out in front of the TV. I did just that with a delivery of food from the Marriott Marquis City Center Doha Hotel. They sent over two boxes of tasty goodness for me to sample some of the greatest hits from Crossroads Kitchen. I’ve been there in person a few times to try out their theme nights, which include an Asian Street Food day, though I’ve never gone when that was on, so I was eager to see what was in store. The box was packed with goodies accompanied by an instruction guide for reheating, as most dishes were best served warm. I thought this was a very clever idea! The Tom Kha Gai soup was a lovely start to my evening and the sheet suggested placing it in a pot on the stove for six minutes and stirring continuously. I put some of the other items in the oven to warm up and enjoyed the Honey Glazed Ginger Chicken which got the taste buds singing. The spring rolls were great for sharing with my housemates and the Singapore Chilli Crab was excellent, because it was exactly the sort of thing I miss and couldn’t easily source or cook myself at home. The Nasi Goreng is an everyday dish but isn’t universally well done. Luckily the one I received hit the spot and only needed

three minutes in the microwave. Meat and seafood were provided in equal abundance which is just as well in my household because we’re evenly split! I tucked into a Stir-fried Beef and Broccoli which had a bit of a kick and was generous in size. The Kung Pao Shrimp went down a treat at the other end of the table. In a separate box, was an array of dishes from their vegan feast. Any vegans should take a look at this because it’s literally the delivery version of their themed night in the restaurant and there is so much good food that is healthy, nutritious and vegan-friendly. There was wholesome Penne Bolognese and a ginger carrot soup to enrich the soul. The smoky carrot dogs and barbecue jackfruit sliders were my favourite and showed flair and fun. The Thai Vegetable Curry and the Sweet and Sour Cauliflower were very yummy and again the instructions for reheating, along with the generous portion sizes, made for a perfect evening at home. Plastic was limited and cardboard and tin foil were used to transport the food and keep it warm, so plenty of sustainable and reusable materials which wins environmental points from me. Amazingly, little was leftover , there was no washing up required and I was impressed by the portion sizes. ✤

I
f you think a staycation is no longer an option during the new restrictions, think again. If you figured your favourite restaurants would be closed inside the Radisson Blu Hotel, you figured wrong. And, if you’re missing something familiar and feeling a tad nostalgic at this time of year, then you’re not alone. The right answers and the perfect solution to your lost summer vacation blues lie at the door of The Radisson Blu Hotel, Doha. When Radisson Blu invited us to experience one of their staycations, we were there like a bear. Radisson Blu is turning 42 in July this year. As luck would have it, one of my closest friends was turning 40 at the time of this review. The timing was serendipitous and I invited her to join me for the two-day staycation. A good reputation is earned through time and commitment. After 41 years of delivering consistent quality experiences to Qatar residents and foreign visitors alike, the Radisson Blu’s track-record is impeccable, and that sense of history permeates throughout our stay. From door-front greeting, to seamless check-in and entering your personal suite, the overriding sense is friendliness. On arrival, we are greeted graciously and escorted to our superb suite with lounge access. As we open the door a bouquet of
coloured balloons escapes from the room! Courtesy of the very cool staff, a surprise festive scene has been set up in the suite’s dining area, with all the celebratory dressings: a birthday cake, mini-cupcakes, flowers and a ‘Happy Birthday’ bunting draped across the curtains. We are set to see in this landmark birthday in true Radisson Blu style. My friend can’t contain her delight at this gesture. Due to Covid restrictions she had not been able to arrange anything for her milestone birthday. The hotel and its people had changed all that and she was over the moon. Now to the suite life. The layout of the room is cleverly planned. As you enter, the dining room sits neatly on the left and a centre bookshelf separates the room’s two television screens, each installed on opposite sides to keep you in the picture at all times. The layout allows you to get your media fix while eating at the dining table or leisurely lounging on the opposite side of the L-Shape suite. The bed is adorned with a cuddly little teddy bear to warm even the coldest of hearts, and an adorable yellow rubber ducky is waiting to waddle straight into the bathtub with you. It’s these little personal touches that make the stay feel like a home from home, just with a lot more pampering. With smiles all round, it dawns on us that we have worked up fact magazine

quite an appetite. Just as well, since this first night features a scheduled stop at a landmark eatery in the Radisson Blu – or at least for its delicious menu offerings to be served in our suite, as required by the current restrictions. This evening our hosts are planning a heist on our taste buds and we are willing players. We’re sampling from the famed restaurant, The Italian Job. Named after the seriously cool British movie classic of the late ‘60s, when it comes to getting an Italian food fix nothing much can match. A firm favourite for food lovers in Qatar, it’s a rustic space, offering genuine Italian cuisine just like mama would make back in Old Napoli. And yes, that’s amore. For this occasion we’re trying a selection of the restaurant’s spread. As one of 21 outlets in the hotel, The Italian Job offers variety and it’s tough to choose our indulgence. After much deliberation the order is in and we relax on massive three-seater couches. Before we know it, the food arrives, and we take our seats at the beautifully prepared table. My fondness for pears is satiated with a salad comprised of baby rocket, radicchio, pears and provolone cheese. I can’t remember when last I had a salad with pears as one of the ingredients. We both tuck into the much-anticipated rack of lamb with the perfumed fricassee sauce filling the air like a herby dream. I enjoy pineapple on my pizza (don’t judge), so The Italian Job pizza was right up my lane. The fresh, quality ingredients are definitely the secret behind this flavour sensation. Portion sizes are more than generous and there is plenty left over. In the movie they were “only supposed to blow the doors off” but, in this case, The Italian Job blew our minds. 76

In my opinion there are very few good bath experiences in Qatar, and this is something I usually focus on. It’s time to indulge in my opulent bathroom and my critical eye is pleased to discover it stocked with a wide selection of toiletries. In addition, the tub is massive. The little rubber ducky joins me, adding to the ambience. As a perfect celebration concludes, and filled as we are with La Dolce Vita, we retire to rest in our comfortable beds. The mattress is just the right firmness and these two party princesses drift to dreamland on cloudlike pillows. The next morning breakfast is served, and we are spoiled with a wide range of options. After a morning walk in the garden, I catch up with one of the friendly staff members. I am told that they started their career in hospitality with Radisson Blu Hotel, Doha and have been working there for many years. With a low staff turnover, guests love seeing familiar faces, even when they have not visited the property in some time. I can easily understand where this warm homely atmosphere is borne from. The hotel can also proudly say that they retained all their staff right through the pandemic. It’s not common word on the street, but it’s good to know that this hotel boasts themed rooms in the East Wing, with options including Japanese, Chinese, Arabic and Indian concepts. They even have an English Country Garden, Scottish Baronial and a James Bond-themed room! This night's dinner is ordered from the Chinese outlet, Ruby Wu’s. I usually go for the Dim Sum and once again I am not disappointed by this delicious dish. Alongside that, the tender Roast Duck is cooked to perfection. Everything is so good

that you don’t even need to dip into the irresistible sauces on offer. After dinner, duty calls, in the form of some review notes. It’s time to capitalise on the spacious office setup. Feeling a little like The Wolf of Wall Street, I fully enjoy this executive setting with the coffee machine getting my back and the television in plain view. It’s a pleasure to work in this productive space. After two nights of restful sleep and round-theclock service, it’s unfortunately time to leave this 40-something city icon, for now. They say life begins at 40, and that is definitely the case with this special property. When the hotel is in full operation, the fitness centre offers tennis and ballet lessons as well as yoga, hip hop and salsa dancing to stretch your imagination, keep you on your toes and help you stay in the swing of things. The Radisson Blu Hotel, Doha continues to capture hearts with the above-and-beyond level of service and the quality of the outlets and amenities. I will most certainly return and would highly recommend this staycation to all ages and particularly to families.✤

Why Is It Worth Watching?
Even though it’s based on a true story and you can discover the details with a quick Google search, this is still edge-of-the-seat stuff. The Serpent was the nickname given to Charles Sobhraj, a prolific thief and conman turned killer, who seemingly could not be caught. A master of escape and disguise, he would drug, rob and kill unsuspecting young travellers, using their passports to roam the globe as a gem dealer, leaving burnt and battered bodies in his wake. A charismatic character, he seemed to have no trouble convincing his sidekicks to do his bidding with his ‘wife’, and later co-accused, confessing that she felt powerless to deny his demands. His downfall came at the hands of a dogged, Dutch diplomat, Herman Knippenberg, affectionately known as Cloggy, who started out searching for a missing Dutch couple and ended up virtually leading an Interpol manhunt across Europe and Asia. For the record, Knippenberg still updates his files on the case to this day.

In response to the Covid pandemic, and a nearly concert-free 2020, Nora Jones has released her first ever full-length live album. Till We Meet Again was released on April 16, by Blue Note Records and can be streamed via Spotify. We are eased into the album with the brilliantly introspective Cold Cold Heart. This is followed by the first single It Was You – which was recorded at the 2018 Ohana Festival in Dana Point, California with Pete Remm on organ, Christopher Thomas on bass and Brian Blade on drums. Additional musicians featured on the album include bassist Jesse Murphy, guitarist Jesse Harris, flautist Jorge Continentino and percussionist Marcelo Costa. Further track listings include her Grammy-nominated collaboration with Mavis Staples in I’ll Be Gone and new original songs from 2020’s Pick Me Up Off The Floor. This whole album feels very deep and haunting and concludes with her almost ghostly cover of Soundgarden's Black Hole Sun.
Although not yet a household name, you would recognise the musician Jon Batiste for his musical contribution to the Oscar-nominated movie Soul. Batiste was born into the New Orleans backdrop, but famously credits his early musical influences as being from video game scores. This album is a representation of what that lineage is all about, him just kind of showing people that genres do not truly exist. The combination of having music that is tied to a narrative, with characters and themes, is highlighted in his new album We Are, which was released in April. In this album he explores a lot of different genres and sounds. There is also a very definite duality to the themes running through this album, with the song Adulthood balancing out Boyhood. ashion, from the catwalk to the high street, has a habit of harking back to years gone by. And, let’s face it, who doesn’t remember their youthful days with a touch of nostalgia and perhaps just a hint of a feeling that things were better then? Designers regularly pick up on our yearning for those, seemingly, idyllic days and give us just what we want. In 2014, the ’70s were everywhere; in 2017, it was the '60s. And, thankfully skipping the ‘80s, the decade that style forgot (or perhaps ran screaming from!), this year it’s time for the ’90s to make a reappearance! High-fashion brands such as Dior and Balenciaga have been digging into their buried treasure troves. While high-street veterans have also been hard at work looking back to their own inspiration to take us forward. Admittedly, with fashion in a constant state of flux, some brands have been less than assiduous when it comes to keeping track of their company histories. But the heritage movement has excited an impetus to better chronicle and curate those personal stories. Case in point: Gant. The company, which was founded in New Haven in 1949 and is currently owned by a Swiss firm, has been slowly rebuilding its clothing archives under the direction of designer Christopher Bastin. Today that archive holds numerous examples of classic stripes and Madras shirts, checks and other original fabrics. It is a reminder of GANT’s true heritage and serves as a never-ending
