The process began with the emergence of home chefs throughout the globe and slowly made its way to home organisation. If you’re going to spend most of your time at home, it needs to feel homely, doesn’t it?

And then there’s our new work-from-home reality, making us realise the importance of a dedicated workspace at home and how that affects our productivity. So, we got to work and tapped a feng shui expert for some tips and tricks on how to feng shui our workspace in our cover story (p20). Her easy and very practical suggestions are bound to get your creative juices flowing. Promise. Elsewhere in the issue, we outline a few must-see cultural exhibitions in the city (p30) and experience a staycation packed with food and fun as life slowly returns to normal(ish). SKY’S THE LIMIT Qatar Airways is making travel easier and friendlier in these trying times! Here’s how. The world of travel has undergone sweeping changes during these past months, from fare surges and closed borders to a widespread fear of travel itself. The uncertainty of travel is still a longstanding obstacle as destinations begin to open their doors to tourists, residents, and locals. Qatar Airways focused on such obstacles and is catering to passenger needs to make sure their travel experiences are both safe and seamless. To ensure your travel plans remain flexible, Qatar Airways is extending its commitment to offering passengers flexible booking options, available for all tickets issued before December 31. This allows the passenger to hold their ticket value for two years, benefit from unlimited date changes, and exchange their ticket for a future travel voucher with 10 percent extra value. Passengers may also change their destination, swap their ticket for Qmiles, or refund their ticket with no fees applied if uncontrollable factors occur. Qatar Airways Group Chief Executive HE Akbar Al Baker said, “We are proud to be the global airline passengers trust to take them where they want to go safely and reliably. The newly crafted vegan dishes are available to all Business Class passengers flying from the airline’s hub in Doha, Hamad International Airport, and select flights into Doha. Passengers can request a special meal up to 24 hours before their flight. DREAM BIGGER Rolls-Royce reveals Dream Commission finalists.

The notion of art is powerful, and used to influence culture, politics, and even the economy. It can become the driving force of change and is constantly present from the developmental domains in child development to playing a huge role in defining one’s identity. Rolls-Royce understood the impact of art and is now pushing the limits of art and moving images through its latest initiative. Entitled Muse, the Rolls-Royce Art Programme announced four shortlisted artists for its inaugural flagship initiative, the Dream Commission. The Dream Commission is a biennial prize awarded to inspire greatness and foster creativity in the media of moving-image art. Artists Sondra Perry (USA), Beatriz Santiago Muñoz (Puerto Rico), Martine Syms (USA) and Zhou Tao (China) were selected by an international jury of leading art world individuals, having been nominated by a panel of industry figureheads over the course of 2020. Torsten Müller-Ötvös, Chief Executive of Rolls-Royce Motor Cars, commented, “It gives me great pleasure that Muse, the Rolls-Royce Art Programme, is able to support the world of moving-image art at this critical time for the industry. Never more so than today have we needed the escapism of art with its ability to inspire greatness and foster creativity. As the Dream Commission moves into the next stage of the commissioning journey, we would like to thank the jurors and nominators for their time, expertise, and commitment.” The Dream Commission’s jury, which consists of leading figures of the international art scene, selected these four emerging and mid-career artists to contend for the prestigious moving-image commission. The selected artists have been requested to create a short-form moving-image piece detailing their concept for consideration by the jury. Following this, one artist will be awarded the honour of creating a full-length digital artwork in 2021. After five years of supporting international artists in creating new works, the Rolls-Royce Art Programme relaunched in 2019 to become Muse¸ a platform with two biennial initiatives, the Dream Commission, and the Spirit of Ecstasy Challenge. The work produced for the Dream Commission will investigate a particular aesthetic territory – “Dreams” – that aims to conjure an alternative sensory universe and take viewers on a journey into the world of the subconscious. Rolls-Royce’s ambition for the Dream Commission is to establish the marque as a relevant platform for advancing the medium of moving images. Luxury is becoming ever-so complex, individuals are constantly looking for excitement, and such experiential factors can only provide positive notions moving forward.✤

ith things still quite uncertain, everyone’s trying to live their lives as normally as possible in a pandemicstruck world. And this normalisation begins at home. As the majority of us began to work from home earlier this year, many of us struggled to get into a work routine. This could be partly due to the lack of proper workspaces, distractions at home – or both. And despite lifted restrictions and virtual schooling, work-from-home professions are still a reality for many around the world. This also brings about a renewed focus on tools, services, and forms of entertainment to make your workspace livelier, more organised, and more productive. Home organisation became the obsession du jour around the world with a Japanese consultant graced our screens by way of Netflix show Tidying Up with Marie Kondo in early 2019. This made way for similar viewing, especially during those work-from-home days. With a new home organisation show popping up on our screens every other week, like The Home Edit and Dream Home Makeover to name a few, everyone has become a Marie-Kondo-in-training. By now, we know the process well – you start with a few house plants, organise your pantry in containers, and pretty soon you’re boxing up and labelling every inch of your home. Taking control of your surroundings can also serve as a form of escapism. Think about it: the global economy has shrunk, the future remains uncertain, and a sense of fear lingers in the air. And through it all, we want to feel like we have control over at least one aspect of our life, right? But organising a whole house is one thing, so for now, we’ll focus on the home office. Working from home shouldn’t mean working from your bed or dining table. It’s important to have a designated space focused and committed to one use, so your mind knows that you’re there to work. It’s not just about having an office desk, it’s also about organising your desk in a way that is most productive and supportive of your working process, giving you a clear mind to work with. With the rise of these organisational trends, we wanted to bring feng shui, the ancient Chinese art of home organisation, back into the spotlight. This practice shows us how to arrange items for maximum energy flow so that both you and your workspace can perform optimally. We caught up with feng shui expert Simone Osswald of SO Feng Shui Design, who combines her expertise and passion for the ancient practice with interior design and wellness to bring harmony and prosperity into your home. “Blockages such as overwhelmingly cluttered spaces and unsuitable furniture placements can be simply remedied by decluttering and rearranging furniture pieces in a way that supports the positive energy flow throughout the entire home,” she says, emphasising on the vital role that feng shui plays in improving our mental health. “Feng shui for the home can be compared to the practice of acupuncture for the body. Once the blockages are removed, positive energy can flow again and bring us back to balance and harmony.”

Working from home brings its own set of challenges; separating business and home life as well as the lack of stimulating social interaction to keep you motivated throughout the day. Therefore, your surroundings have a deep impact on your emotional, mental, physical, and spiritual well-being, and feng shui acts as a visual reminder of the balance you can maintain in your life. “The year 2020 has indeed made people more conscious of their home surroundings. Being forced to stay at home and spending more time inside their four walls has changed the operations of their daily lives and shifted their attention

towards arranging their homes to their new operational needs. People decluttered their rooms, redecorated their homes, and set up home offices,” continues Simone. And in her experience, the dire circumstances of the past few months have led to people being more mindful of their homes. “Even those unfamiliar with the concept of feng shui have unconsciously and naturally applied this ancient technique for themselves. Feng shui is about creating a feel-good home with positive energies,” she adds. Our conversation led to a handful of very practical tips to make sure you’re as productive at home as you are at work – or more! Listen in.

Splendours of the Ancient East: Antiquities from The al-Sabah Collection National Museum of Qatar October 3, 2020 – January 3, 2021 In celebration of the deep-rooted and unique relationship that Qatar shares with Kuwait, Qatar Museums features a selection of artefacts made to celebrate the ingenious creativity of artists from the Ancient Near East. A continuity of certain themes can be observed from the artefacts within the region, including the stylisation of animal motifs, a taste for carved hardstones and the influence of the nomadic tribes from central Asia. A Falcon’s Eye Exhibition Museum of Islamic Art August 2, 2020 - January 2, 2021 A tribute to Sheikh Saoud Al-Thani, this exhibition will run at The Museum of Islamic Arts until January 2021. Sheikh Saoud is considered one of Qatar’s greatest collectors, largely responsible for laying the foundation for the world-class collections at Qatar Museums. Chairperson of Qatar Museums, HE Sheikha Al Mayassa bint Hamad Al-Thani once said that Sheikh Saoud’s love for arts was limitless, adding that he was also committed to developing the country’s cultural and educational resources in order to serve society. t might be smaller than other hotels, but Holiday Inn Doha - The Business Park more than makes up with its big personality – it’s colourful, it’s quirky, it’s full of life. It’s fun-sized done right! Located in the centre of the city at Business Park and the financial district of Doha, this property is bustling with life inside and out. The hotel’s 307 well-appointed guestrooms all feature flat-screen televisions, satellite channels, and complimentary high-speed internet access so you can stay connected throughout your stay. And we got to stay high above the busy streets on the top floor. What a treat!

Both rooms had large wall-to-wall windows, bringing an abundance of sunlight throughout the day. Our favourite, however, was the vast bathroom. This luxurious room was fitted with a large mirror, a spacious shower complete with rain features and various showerheads, and a beautiful free-standing porcelain tub. Who needs a spa when you have the luxury of lingering in a bubble bath in your hotel bathroom? This room brought with it enough peace to get some work done in the morning, but also plenty of entertainment options when we were ready for them – think: an outdoor swimming pool and lounge, a fitness centre, and an array of dining options .

Chef’s Kiss

When we say fun, we mean fun. Guests here are greeted with large smiles, a larger lobby, and artistic red couches as they enter the hotel. The couches are more comfortable than they look, trust us. That pop of colour should set the tone for the pop of fun you’ll have at this location. Our suite was located on the 7th floor and gave the liveliest view of life in Doha, but don’t worry – these city sights come without those awful city sounds. The room consisted of a small living area, a bedroom, and a massive bathroom. The living room hosted comfortable chairs in the statement Holiday Inn blue, complemented nicely by the bed’s electric blue headboard and giving the right amount of life to each space.

Nothing beats ordering room service when you’re at any hotel in the world. The luxury of having a meal of your choice delivered to your room at the touch of a button will never get old – especially when the food exceeds your expectations. We ordered the delicious Tom Ka Khai soup (and devoured it until the last drop), but the Salt & Pepper Calamari stole the show. We’re pretty picky when it comes to the perfect calamari, and this was it – not too chewy with the perfect snap. For our mains, we got the Beef Tagliata and Kung Pao Chicken. The chicken was doused in a sweet and savoury sauce with peanuts, bell peppers, and onions. The beef striploin in the fact magazine

tagliata, meanwhile, was tender and was served with a garnish of balsamic-garlic glaze, arugula leaves, and parmesan flakes. We would book a room for this menu alone!

Burger Bliss Stock Burger Co. is a longstanding favourite in Doha for its burgers, which is why we are thrilled to be back. But it’s not just specialty burgers on the menu of this sports hub. There’s also on-trend flatbreads, freshly crafted salads, and a wide selection of amazing appetisers. We started off our dinner with the Crispy Jalapeno Cheese Poppers that were oozing with cheddar cheese and a hit of spice. Just thinking about them makes our mouths water. Served with a light and freshly made salsa, these poppers are a must for any cheat day – or all days for that matter. In keeping with the restaurant’s theme, we indulged in the signature Stock Burger and Jalapeno Chicken Burger. Both arrived in the softest potato buns that ensured the structural integrity of all the layers, thereby keeping the mess at bay – well, sort of. The Stock Burger is cooked to perfection,

keeping the bona fide carnivore in mind. The Jalapeno Chicken, meanwhile, is just as juicy and carries the perfect blend of spice from the jalapeño and chipotle mayonnaise. If you ask us to choose, we can’t pick just one, so it depends on your choice of meat. We paired our meal with a basket of sweet potato fries to soften the blow of the spices from all those jalapeños. They were perfectly crispy from the outside, and soft and sweet on the inside. Leaving the city isn’t exactly an easy option when cabin fever strikes, but Holiday Inn Doha - The Business Park is the perfect way to momentarily escape its hustle and bustle. It’s also just a few minutes away from Doha’s main attractions (Souq Waqif, Doha Corniche, and the Museum of Islamic Art included), making it the ideal address for everything from hectic business trips to carefree staycations – and everything in between. ✤

1. Yosemite National Park, USA Crowned the most picturesque natural wonder in the world, Yosemite National Park has racked up roughly five million hashtags on Instagram – and for good reason. Representing both peace and power, the national park is home to hundreds of square metres of natural wonders ranging from gracious waterfalls and stunning meadows to deep valleys and towering granite monoliths. Not only is Yosemite National Park a popular spot for marriage proposals and the occasional engagement, but it's also one of the few places in America that boasts moonbows. Accumulating a whopping 4,607,444 hashtags, Niagara Falls is a close second on this list. Considering the multitude of tourist attractions in the vicinity – arcade games, gokarting, and a butterfly conservatory included – thousands flock to the Canadian landmark to strike a pose in front of this truly majestic waterfall on a daily basis. And while many other falls are 'taller', what makes Niagara Falls so special is its combined height and volume. Over 168,000 cubic metres of water go over the crestline of the falls every minute during peak tourist viewing hours. Oh, and in case you're curious, that’s about a million bathtubs worth of water every second.

Coined as "the one great sight every American should see” by Teddy Roosevelt, it's no surprise that Grand Canyon ranks as the third most Instagrammable natural wonder in the world – and grand it is. At 446 km long and 1,857 meters deep, the canyon is visited by roughly six million tourists annually, so it’s no wonder the warm ombre landscape has been hashtagged more than 4,000,000 times on Instagram to date. Interestingly enough, there's a town located at the base of Grand Canyon: Supai Village. Not only is it inaccessible by road, but it's also the only place where mail is still delivered by pack mule. True story.

The only desert on the list, the Sahara receives the title of the fourth most Instagrammable natural wonder on earth, courtesy of over 2,200,000 Instagram hashtags. Spanning an impressive 8,600,000 square kilometres, the Sahara connects to 11 African countries and comprises a third of the entire continent. It's also still renowned for its eerie silence and breathtaking tranquillity, despite those iconic dunes being home to more than 70 different mammals, Yes, it sizzles in the summer months (temperatures average between 3846°C), but what few realise is that it's third largest desert behind Antarctica and the Arctic – both of which are cold deserts.

The Danube Delta in Romania rounds off the top five most Instagrammable natural wonders, accumulating a hefty 1,638,573 hashtags. The second largest of its kind in Europe, this landform is composed from deposited sediment carried by the Danube River into surrounding oceans. Blue and vibrant, the river attracts plenty of tourists, many of whom are there to capture the wildlife that surrounds it – the delta hosts over 300 species of birds, making it a haven for birdwatchers. The Danube River also happens to be the most cosmopolitan river on the planet, running through four capitals: Vienna, Bratislava, Budapest, and Belgrade.

Falling short of the top five, the Galápagos Islands place sixth on this list, with 1,612,457 hashtags from visitors. Based in Ecuador, these fascinating islands are home to plenty of volcanic activity and famously known for their mention in Charles Darwin’s evolution theory. What’s more, the Galápagos Islands straddle the equator. Translation? An equal 12 hours of daylight and 12 hours of night throughout the year. While the islands themselves serve as stunning scenery, many of the photos on Instagram highlight their biodiversity. Our research revealed that 97 percent of the islands are deemed a national park, and half of the land species are endemic to the Galapagos.

Crowned as Instagram’s seventh most popular natural wonder, Ha Long Bay in Vietnam’s Quang Ninh province has been hashtagged a remarkable 1,243,473 times. A jawdropping collection of majestic caves, emerald waters, and jagged limestone pillars, this UNESCO World Natural Heritage site in the Gulf of Tonkin is an incredibly popular destination for kayaking, scuba diving, snorkelling, and hiking – yet remains largely unaffected by humans as most of the 1,600 islands here are uninhabited. And while the bay is surprisingly shallow – it's just over 10 metres at its deepest point – nearly 1,000 species of marine life have been recorded swimming in the area.

Aurora Borealis, Iceland Better known as the Northern Lights, the Aurora Borealis in Iceland receives the title of the eighth most Instagrammable natural wonder on earth, racking up 1,167,915 hashtags at present. Named after the Roman goddess of dawn, the Aurora Borealis graces clear night skies with a magnificent light show in the dead of winter. Admittedly, this astronomical phenomenon is unpredictable, but tourists who are fortunate enough to witness it experience a bucket list must. For the uninitiated, the ethereal (usually green) glow of the Northern Lights occurs when electrically charged particles released from the sun enter the earth’s atmosphere and collide with gases such as oxygen and nitrogen. 44

Mount Everest, China/ Nepal Humans have been obsessed with the idea of conquering Mount Everest since 1921, when the first summit attempt took place, so it's hardly surprising to see it on this list. With 1,125,527 Instagram hashtags overall, the world's tallest mountain is named the ninth most Instagrammable natural wonder in the world. Standing at a commanding elevation of 8,850 metres, Mount Everest is one of the most popular tourist destinations on earth. Eager to capture its handsome heights, visitors frequently take to Instagram to share the spectacular views, but the mountain is not without tragedy. Over 300 climbers have died due to avalanches and altitude sickness, most of them while descending.

10. Pamukkale, Turkey Narrowly placing in the top 10 with 900,429 hashtags, Pamukkale in Turkey is the tenth most Instagrammed natural wonder in the world, drawing this list to a close. Here, the white travertine cascades resembling frozen waterfalls and terraces of shallow pools are created by the waters of thermal springs reacting with the air. This surreal natural wonder has also earned bragging rights due to the proximity of Hierapolis, an ancient GreekRoman city rife with incredibly well-preserved ruins. Culture shock ensues as the ambitious millennial navigates working and dating in the City of Lights. Not only does she speak zero French upon her arrival, but she’s also a budding influencer who constantly commits faux pas, making the show the pop culture equivalent of comfort food. It’s frivolous, devoid of any real conflict, accented with colourful supporting characters (like nanny and fellow expat Mindy Chen), and rife with wonderfully OTT outfits. Oh, and on that note: Patricia Field, who famously dressed the four leading ladies of Sex and the City, is the Costume Designer for the show. Translation: all 10 episodes are brimming with memorable fashion moments.

Why is It Worth Watching?

Look around. The world can use a little mindless, light-hearted entertainment and Bert Kreischer is bringing it. The beloved comedian is known for his standup specials, but this time around, he’s headed for the great outdoors – and we’re invited. The Cabin with Bert Kreischer, another Netflix original, is a five-episode docuseries that chronicles Bert’s attempts to recharge his batteries and cleanse his body, mind, and soul. But don’t expect his purifying retreat to look anything like the Goop universe. Instead, you’ll see him accompanied by the likes of Caitlyn Jenner, Kaley Cuoco, and Anthony Anderson as they throw axes, smoke cigars in a hot tub, milk goats, and even experiment with bizarre therapy techniques – all in the name of wellness, of course. 46

The Rarities By Mariah Carey

It took a couple of months longer than expected – 2020 was initially set for release in May – but the 15th studio album by American rock band Bon Jovi is here. Its simple name is an apt one, as it is a musical reflection of our times and its many challenges. "American Reckoning", for example, mourns the tragic death of George Floyd through lyrics like, "When did a judge and a jury become a badge and a knee on these streets?" Other songs, meanwhile, are more personal in nature. Frontman Jon Bon Jovi was inspired to write the twangy "Do What You Can" after volunteering at the soup kitchen of his charity organisation, Jon Bon Jovi Soul Foundation. The song, rife with messages of hope and resilience, examines life during the pandemic – cancelled graduations, closed borders, and all. Fans have been quick to point out that Richie Sambora's absence means Bon Jovi will never produce the type of classic rock hits that put it on the map, but the events of the past few months have certainly paved the way for a more earnest, grown-up version of Jon Bon Jovi in 2020, and that's okay too.

B-sides, fan favourites, rare songs, unreleased gems – they're all here and they're all hand-picked by Mariah Carey herself. The 8th compilation album by the singer-songwriter forms part of the celebrations marking the 30th anniversary of her self-titled debut studio album – Mariah Carey (1990) – and coincides with the release of her memoir, The Meaning of Mariah Carey. Unfortunately, there's no material from the alternative rock album she recorded in 1995, but a real treat awaits in the second disc that contains the never-before-released full length audio from Mariah's first concert performance in Japan in support of her Daydream World Tour in 1996. Not only is The Rarities a closer look at the popstar's evolution from syrupy to sophisticated, but it's primarily a nostalgic trip down memory lane for her devotees, especially when live renditions of her hits like "Hero", "One Sweet Day", and "All I Want For Christmas Is You" kick in. Bonus: there’s an extensive booklet that contains 24 pages with lyrics and photos, some of which have never been seen before.

errari has unveiled the F8 Spider, the new generation drop-top sports car equipped with the most successful mid-rear-mounted V8 in history. The F8 Spider excels in merging handling dynamics with surprising in-car comfort, setting a new benchmark in terms of usable performance and exceptional handling. The V8 engine is a development of the V8 that won the International Engine of the Year Award for four consecutive years and was selected as the best engine of the last two decades. The F8 Spider’s greatest achievement is that it unleashes its power instantaneously with zero turbo lag, whilst retaining this V8’s unique soundtrack.

ENGINE The 3902 cc V8 unleashes 720 cv at 8,000 rpm and has an impressive specific power output of 185 cv/l. Its maximum torque peaks at 770 Nm at 3,250 rpm. The new Spider offers instantaneously accessible power that is matched by exceptional handling thanks to advanced vehicle dynamics solutions, which includes a new version of the Ferrari Dynamic Enhancer (FDE+). The air intakes of the F8 have been moved to the rear, now located on either side of the blown spoiler and directly connected to the intake plenums. This reduces losses and ensures greater air flow to the engine, thereby increasing power output.

DESIGN For many years, Ferrari has been adopting a hard top because of the comfort it provides. As a result, the design of the F8 Spider’s lines was crafted around its RHT (Retractable Hard Top). The key to the whole design was shifting the separation line between the car’s body and roof from its conventional position at the belt-line to above the B-pillar. The top itself is thus more compact and two-dimensional, allowing it to be divided into two parts and stowed on top of the engine.

EXTERIOR The front view of the car is characterised by the S-Duct around which the entire front end has been redesigned to highlight the extensive aerodynamic modifications made to this area. The clearest example is the new horizontal LED headlights. The rear spoiler has been entirely redesigned. It is now larger and wraps around the tail lights, lowering the car’s centre of gravity and allowing a return to the classic twin light cluster and body-coloured tail. The manta-like look of the engine cover is one of the F8 Spider’s most distinctive characteristics and created by a central spine that starts from the rear screen and disappears under the wing of the blown spoiler. The two wings that emerge from the central volume meld harmoniously with the bodywork, lending a sense of visual continuity. These wing elements are suspended, creating an air vent below them, which helps improve dissipation of heat coming off the engine. The crests that emerge from the prominent volumes of the tonneau cover fins flow sinuously rearwards, which in turn enhances the car’s already powerfully sporty personality. 52

COCKPIT The F8 Spider’s cockpit retains the classic, driver-oriented look typical of Ferrari’s mid-rear-engined berlinettas, a concept that creates a symbiotic relationship between driver and car, with all controls mounted on the new generation steering wheel. The dash incorporates an aluminium sail panel supporting the central satellite. A sliver of carbon fibre divides the upper and lower parts, streamlining the whole look. This section also incorporates the optional seven-inch touchscreen passenger-side display, whilst the dash is completed by the classic instrument cluster. The tunnel is clearly separated from the dash and set beneath it to enhance the sensation of the lightness of the car. It features a new bridge, a sculptural creation that seems to float and streamlines the cabin.

AERODYNAMICS The F8 Spider has taken state-of-the-art aerodynamic solutions and innovations from Ferrari’s GT and moulded them into the production mid-rear-engined drop-top, making the highest level of performance accessible to drivers of all abilities. In the F8 Spider, the position of the front radiators are rearward-angled, which is beneficial in cooling terms but simultaneously shrinks the underbody surface area that can be used to generate downforce.

VEHICLE DYNAMICS Overall performance levels are significantly higher than those of the 488 Spider, thanks to the increase in power, weight reduction, and improved aerodynamic coefficient. That performance is now accessible to a larger number of drivers thanks to vehicle dynamics systems that make driving on the limit an easier, more confidence-inspiring experience. The FDE is a lateral dynamics control system that uses Ferrari software to adjust the brake pressure at the callipers. This technology is now being used on the F8 Spider.

7 YEARS MAINTENANCE Ferrari now offers a seven-year maintenance programme with all models, including the F8 Spider. This special service covers all regular maintenance for the first seven years of the car’s life, and is also available to owners buying pre-owned Ferraris. ✤ 54

France is synonymous with food and romance, and we found both during our trip down culinary lane at The Ritz-Carlton, Doha. fact magazine

el & Miel is the first authentic French brasserie as well as the epitome of authentic French cuisine in Doha – in our books, at least. So, we were thrilled to head over and make our way through its upcoming menu. (Hint: It’s divine!) Parisian architecture is stunning, to say the least, and the restaurant’s décor is reminiscent of something you’d accidentally discover while walking the cobblestone streets of the French capital. Hues of gold and white are complemented by the most beautiful mosaic along the main wall, as well as mirrored room separators. As for the finishing touches? Think: cane chairs, wooden tables, and sounds of French melodies. A meal here may just be your ticket to an Emily in Paris moment! Each dish on the new menu is a simple blend of flavours from authentic Parisian cuisine. We started off our food affair with the Calamars Frits and Soupe à L’Oignon. The calamari was covered in a subtle spiced crumb that perfectly balanced the texture of the meat and the creaminess of the dipping sauce. The classic onion soup came with a little surprise as well. A toasted bread doused in cheese was floating within the bowl, giving us a whole new perspective on alternative bread bowls. Each dish was a simple combination of flavours put together with passion and respect for each ingredient used. For the mains, we highly recommend the Bouillabaisse,

a delectable seafood selection in a slow-cooked broth. It felt like a hug in a bowl and was accompanied by warm bread and a cheese spread. This is what French comfort food must taste like. We also indulged the Pâtes au Boeuf, a scrumptious beef rigatoni pasta full of intense flavour. We thought we were stuffed and satiated at this point – then came dessert (and the moment we fell in love). Sel & Miel brings the famous tarte tatin to Doha, only the version here is a spin on the beloved upside-down tart, replacing caramelised apples with soft, juicy baked peaches. We suggest you indulge in this dessert on the outdoor terrace that is perfect for basking in the Doha sun as you sit across the blue waters of the Persian Gulf. But regardless of where you end up, you’ll be back for this one. Promise.✤

erfectly hidden away at South Gate 2 in Mall of Qatar, Sazeli is a steakhouse and delicatessen that perfectly captures the quintessential elements of Turkish cuisine. For starters, there’s the open kitchen, displaying everything from cheese and meat to the chefs studiously slicing away with knives bigger than your arm. The brick-paved floor, black street lights, and sounds of sizzling meat have us harking back to our trips to Turkey . It’s certainly a sensory experience – complete with sights, sounds, smells, and flavours – that manages to ease our wanderlust momentarily. We begin our feast with an array of Sazeli’s mezze selections and, soon, small but flavourful plates slowly take over the whole table. Each starter is better than the next, but our absolute favourite is the yoghurt with blueberry. It’s simultaneously tangy, sweet, and creamy, and definitely comes as a surprise. The stuffed grape leaves, meanwhile, explode with flavour while our plate of ultra-creamy hummus with meat is wiped clean in no time. Paired with the warm, homemade bread we’re served, we’d happily eat this all night. Another surprise comes courtesy of the onion flower. This crusty appetiser isn’t like anything we’ve seen before. Fried to perfection and garnished with dollops of sour cream, it’s quickly dubbed a crowd-pleaser! Sazeli is known for always bringing something new to the table, and it’s definitely brought the heat with its beef sushi. It’s torched on a trolley in front of our eyes, and has heads turning everywhere. It’s the first time we give beef sushi a try, but it definitely won’t be the last. The star of the night, however, is definitely the array of meat. We try everything from the Beef Lokum to the Rib-Eye with Mustard and, just when we think we’re done, something equally mouth-watering comes along. Each order comes with a side of theatrics, the waiters carefully garnishing the dishes and making the final touches right at your table. Our meat picks at Sazeli are definitely the rib-eye steak, Lamb Backs, and the Kofte with Kashari Cheese. The chefs here have mastered the art of infusing meat with just the right amount of spices to make sure that the delectable flavour and tender texture shines through – a carnivore’s dream. For dessert, we devour the delectable Turkish Baklava with Ice Cream, the latter making for the perfect accompaniment to this classic flaky dessert. We end our night with the most beautiful presentation of Turkish coffee we’ve ever seen. Our coffee, water, and a small tray of Lokum (popularly known as Turkish delight) are served to us on a silver platter. It’s fit for royalty, and we relish the moment before returning to the real world. ✤ 68

ight, bright, airy – three qualities we instantly love at the newly opened Tawle Eatery. This contemporary Lebanese eatery is perfect for a sidewalk meal in the concrete jungle of Lusail (without the harsh rays of the Doha sun, of

course). Located at Staybridge Suites Doha Lusail, this quaint restaurant is accessible from both the hotel and the street. The wallto-wall sliding windows stand to blur the threshold between indoors and outdoors, giving us the sense of sitting outdoors while inside. They say good things come in small packages, and this remains true for Tawle. It may be small, but a big personality comes courtesy of a bustling open kitchen and seven-metre concrete communal table. The latter aims to mimic the Mediterranean experience of people coming together over a meal. And we agree. Nothing brings people closer together than a love of good food, right? We sit at the far end, making sure to occupy the cute swinging chair in our quest for the best seats in the house. The variation of chairs encourages all types of gatherings from eating and co-working to studying and community meetings. Even though Tawle highly encourages social interactions between its guests, the restaurant ensures a few empty chairs between groups of people for safety measures. We begin our Lebanese feast with the juicy vine leaves topped 72

with laban, which surprisingly acts as the perfect neutraliser for the burst of flavours brought about by the filling. This is followed by the freshly made lemonade that packs a punch – it wakes us right up. For our mains, we indulge in the signature Cauliflower Tacos Style, the Tawook Sandwich, and Mix Grill Platter. The Cauliflower Tacos Style is a must-try, a vegetarian-friendly dish that hosts soft cauliflower, tahini sauce, and those renowned Lebanese pickles to give it a kick of flavour. The mixed grill is consistently tender throughout, each mouth-watering item on the platter better than the last. We’re rapidly reminded why we’ll never tire of perfectly seasoned grilled chicken, kebabs, and koftas. The assortment arrives with a side of creamy hummus, tangy pickles, and delicious fries – and it’s the definitive crowd-pleaser on our table. We’re stuffed, we’re satiated, but we can’t resist ordering the surprisingly light shish tawook sandwich that is cut into the most adorable rolls. It’s perfect for sharing! We end our meal with another signature, the Cherry Cheese Cake, which turns out to be the cherry on top of our lunch (pun intended). Every bite is creamy, cheesy, and oozing with cherry goodness. Tawle’s stand-out packaging makes it a great option for home delivery, but this deconstructed, upside-down delicacy alone is reason enough to return. And we will. ✤

What inspired you to become a chef? Can you tell us about your journey? I would say my mom’s cooking skills definitely fascinated me when I was a young kid. Later, during my high school years, I started working part-time in a restaurant – that’s where the hospitality virus caught me. You’ve worked with Michelin-star restaurants around the world. What type of pressure did you experience working in those environments and what did you learn? It was like playing in the Champions League final… twice a day. It was a healthy pressure, and there was great camaraderie amongst the team that was consistently focused on delivering great food and service experience. Most chefs have a specialty, be that in terms of dishes or kitchen skills. What’s yours? I’m very proud that here at The Business Park, we have something to offer for everyone, whether it is Rodizio (our Brazilian Churrascaria), Arguelina with Levantine cuisine, Meesh Café with great coffee and light bites, or Stock Burger Co., which offers more than just burgers. What is the one thing you can’t live without? Tool? My chef’s knives – and coffee. What five ingredients would you take with you on a deserted island, and what would you make? Garlic, olive oil, salt, pepper, and lemon can be useful for all the fish that I can hopefully catch and grill on a campfire. We’ve noticed that chefs tend to cook simple meals at home. What’s your go-to dinner? Just a simple spaghetti aglio e olio with shrimp. Sourcing ingredients can be a challenge in this part of the world due to climate factors and our dependence on imports. How do you tackle this problem? Yes, it can be quite challenging sometimes, but also manageable 76

with the right planning and logistics from the suppliers’ end. However, as a chef, I do often miss the cold autumn/winter morning harvesting of my own vegetables from a local farmer. More and more people are going vegan or opting for glutenfree options. Has accommodating dietary preferences presented a challenge? I strongly believe that a healthy and well-balanced diet is beneficial for everyone’s interest in the short term as well as long term. At The Business Park, we do have and offer lighter and healthier options to our guests in our restaurants. What is your go-to guilty pleasure when it comes to food? Doughnuts and ice cream. You can wake me up in the middle of the night for either one of these – or both! Cooking at home became a hobby for many over the course of 2020. How did your relationship with food evolve? I believe it gave not just me, but everyone a chance to pause, catch up, and reconnect with each other as a family. After all, “Happiness is a small house, with a big kitchen.” ✤

When Mariah Carey and Hussain Al Jassmi led the 1 Year to Go celebrations back in October 2019, who could've predicted that "the world's greatest show" would have to be postponed by a year as a result of a virus not visible to the naked eye? Not us. Now, as Dubai gears up to host Expo 2020 from October 1, 2021 to March 31, 2022, the one-year countdown has commenced (again). Over 190 countries are expected to participate at the rescheduled fair, with the Connecting Minds, Creating the Future theme based around mobility, sustainability, and opportunity. Recently revealed images

But did you know the seven-hour sightseeing flight by Qantas on October 10 sold out in exactly 10 minutes? And what exactly is a flight to nowhere? This new vernacular, courtesy of 2020, refers to a flight that is not bound for an international destination – or even a regional destination for that matter. Instead, it lands exactly where it took off, with some claiming it's a winwin situation. Qantas, for example, was able to generate at least some revenue at

The accounts of everyone from Joe Biden and Kim Kardashian to Bill Gates and Barack Obama were hacked, resulting in a total of 130 high-profile accounts targeted as part of a bitcoin scam. One by one, tweets by prominent celebrities, politicians, and tech bigwigs appeared, all promising to "give back" to the community by doubling any bitcoin sent to their address.
